Welcome to the official start of summer at Oxbow! While May did not provide us the best weather for golfing, June has started out with great weather so you can enjoy all the amenities that Oxbow has to offer in the summer months. The pool opened on schedule, and we had a fun first day! There are still a few items to complete in and around the pool area, but none will interfere with member use.

Looking forward to June, we have a ton of fun in store for everyone! Member Appreciation Weekend will be June 10th and 11th, followed by the annual member guest tournament the following weekend, ending with the Pool Party Grand Opening on Father’s Day. League is in full swing, Jr. Golf camp will start next week, plus many more fun ways to enjoy your membership! I hope everyone is able to find lots of time this summer to come and have fun at your club! Just a reminder, we are still looking for new members to join us here at Oxbow. Our members are our best ambassadors when it comes to recruiting new families to join the fun your club. Also, members who refer a new golf members to us receive a $250 credit in the Golf shop or food and beverage, and a $100 credit for a social member referral. Any current member who would like to bring out a prospective member for golf or use of any of our other amenities is always welcome to do so, and we will happily comp the round of golf or pool guest fee. Simply contact me and let me know when you will be bringing your prospective member, and I will ensure everything is taken care of. And just so everyone is aware, membership information can be found on the public side of oxbowcc.com by clicking on the membership tab. Or you can always contact me, and I will supply whatever information you need, either to you, or directly to a prospective member. Weather permitting, we will be allowing carts to be driven on the new holes starting Saturday, June 3rd. We appreciate everyone’s patience as we have kept working to improve the condition of the new nine. We ask that all members be cognizant of directional signage on the course, as well as keep carts away from tee boxes and greens. We want to ensure that the new side is able to keep growing and maturing without doing damage with golf carts. There will still be some days where we play cart path only due to rain or other factors. Please ensure you check in with the golf shop to know the cart rules of the day. As we get in to June, we will have outside golf events on many Mondays and Tuesdays throughout the month and the summer. Some of these events take up the course for the entire afternoon, but others are smaller in size and only take a couple of hours to get through the first tee. Please watch your Clubster App, as we will let you know when the course will be available for member play on these days, especially when we have smaller events. You can also view the events calendar and tee sheet on the member website to get an idea of when the course will be available for member play. You can also always call the Golf Shop to check as well. Just because we have an outside event does not always mean that the course will be closed the entire day. It's shaping up to be an amazing summer here at Oxbow, as we start the most fun three months of the year! See you soon at YOUR club! Sedi 2

Food & BEVERAGE FOOD Beverage UPDATE Update SCOTT MOTSCHENBACHER Executive chef Hello, Oxbow! This month I am talking about grilling tips, seasoning, and marinades. Now that June is finally here and the weather is starting to improve, we can finally dust off those grills. Whether you use gas or charcoal, grilling is all about comradery— that part has itself figured out. Now, it’s time to think about what to grill! For steaks, I think the ribeye is king on the grill. Ribeyes typically have a very nice amount of marbling, which helps keep that steak nice and juicy, even if it is cooked well done. The same goes for fish. Nice fatty fish are the best for grilling, especially at high temps. Now, let’s talk about proper grilling technique. Your grill will have a few different heat points. If you’re using charcoal, that’s going to be right above the highest point where the charcoal is. If you’re using gas, you are in charge of your grill’s destiny. You have the ability to make it really hot or cool it down. First, sear your meat on the hot spot. Then, move your meat depending on how you like it cooked. If you’re a rare to medium rare person, just leave it on the hot spot. Chef Scott’s Steak Marinade For medium to medium well, move a fair distance away from the searing point. Cooking it on the colder part of the grill will help the meat to retain as much moisture as possible. 1 cup olive oil One pointer on searing—more often than not, people get way too impatient. Meats 1 cup apple cider vinegar needs a little time searing before getting moved around. The meat needs time to build ¼ cup chopped garlic up Maillard. Maillard is that yummy grill flavor we all love so much. This is when the 1tblsp black pepper meat’s natural sugars caramelize. If your meat is sticking to the grill, it is telling you it’s 1tblsp crushed red pepper not ready to be moved. Seasoning your meat can be quite the ordeal. Try and stay away from pre-made seasonings. Most of these are just bottles of salt with little to no substance. Try making your own! Think about the flavors you like most and hit the spice aisle. It might not be a home run the first go around, but you’ll slowly start to learn what works and what doesn’t. To the right, you’ll find a recipe for my favorite steak marinade. This is a quick marinade, based on the high level of acid. Enjoy! See you around the club!

We are still looking to fill a few open lifeguard spots. Please contact me if you know anyone who would be interested. We have brought on an intern this summer, Cole Jungberg, to oversee the pool service, as well as get to know the inner working of a Country Club. Cole grew up in the Bakke Addition and graduated from Kindred High School. He will be starting his senior year at NDSU in the Hospitality program this fall. Cole helped open up the Clubhouse Hotel in Fargo last year and now is excited to contribute to the opening season of Oxbow in the new facility. He will get the opportunity to spend some time in every department. Please welcome Cole Jungberg to the team! The Grand Opening pool party will be held Sunday, June 18th, and will be the biggest pool party of the year. There will be games from Games Galore, Tiki Bar Service, a Live DJ, Grill Out, and fun for all ages. Please mark your calendar for June 18th from 12 PM – 4 PM and enjoy a beautiful day at your new pool! 4
Golf COURSE News Golf Shop Peggy sola June is here, summer’s coming. . . . and hopefully great golf weather! The Opener was a great tournament on May 6th. It was a beautiful day! Congratulations to Tyler Schlotfeldt, Hunter Thorsen, and Charlie Erickson for winning gross with a score of 56. Also, congratulations to our net division winners of Tom Spellman, Chad Bergan, and Pat Bresnahan with a net score of 53.33. The Memorial Day Mixer wasn’t a beautiful day, but even with the rain, Ryan French, Ryan Schulz, Tyler Nelson, and Eric Wall finished in first. June events start Friday, June 2nd at 6:00 with Couples’ Golf. Call the Golf Shop to sign-up. It’s a lot of fun and you don’t have to be a great golfer to come have a good time and meet other couples at your club. Our men’s member-guest tournament, The Battle at the Bow, will be June 15-17. The course will be closed for this tournament starting at 2:30 PM on Thursday, June 15th through Saturday, June 17th. Ladies’ Night has started on Wednesdays. Come out at 5:30 PM for a clinic with John and plan to play 9 holes after that. Junior Golf Camp is June 5th through 9th. It’s a wonderful opportunity for great golf instruction and a fun week for the young golfers. Call the Golf Shop to register: 701.588.4669. Junior Golf Mornings will start the following Tuesday, June 13th, at 8:30 AM with a clinic, followed by 9 holes of golf. John Dahl’s annual bus trip is June 26-27th to Dakotah Ridge. There are only a couples spots left—call the Golf Shop to get on the list! Thank You to everyone who completed the merchandise survey for the Golf Shop. It will be so helpful in getting the things you want to see. Please let us know if there is something you would like us to special order for you. We are here to help in any way that we can.

GOLF COURSE News (con.) LADIES’ NIGHT Wednesdays 5:30 PM Join us on Wednesday evenings for a half-hour ladies’ golf clinic starting at 5:30 PM, followed by reserved Ladies’ tee times at 6 PM. Clinic topics will vary each week and are sure to help improve your golf game. Cost is just $10 to attend and includes a free cocktail..
LADIES’ BUS TRIP TO MYSTIC LAKE CASINO Sunday, August 6th —Monday, August 7th Relax and enjoy a one night stay at Mystic Lake Casino Hotel and play one or two rounds of golf. NEWS FROM THE FAIRWAY DAVID WOOD, SUPERINTENDENT Summer officially arrived for our department when we began to walk mow the greens last week. The quality of cut and the appearance of the greens improves dramatically once our staffing levels support their use. We have started brushing and vertical cutting the greens to start thinning the surfaces to increase green speed and consistency. Topdressing the greens with sand will begin next Monday morning when the course is closed. Our goal is a light layer of sand every two weeks to help smooth the putting surfaces. Seeding of winter-damaged areas continues on the tees and fairways. Soil conditions did not allow us to use the tractor seeder due to rutting in these areas. We were forced to aerate damaged spots and seed into the aeration holes. It’s an effective method, just not as efficient. Several applications of fertilizer have been applied to accelerate growth from the existing turf to fill-in bad areas. Good news is we are seeing germination of seed and expecting a quick recovery with the warmer temperatures.
Golf carts will be allowed to drive off the cart paths and into the fairways on Saturday, June 3 rd. We will be restricting carts from driving in areas that are still recovering or growing-in by roping and/or painting to help disburse traffic. PLEASE follow the ropes or painted directions. Phase two golf course construction is underway, and Landscapes Unlimited is back onsite with a limited crew. They have resumed excavation of the lake on the old driving range and using that material to build mounding on new holes 5 and 6. Drainage work has also begun on several holes. More of their staff will be arriving in June and work on features (greens, tees, and bunkers) and irrigation will start to be more of a focus. We will keep you posted as this construction continues throughout the summer. Lastly, with all the house moving and construction happening along Riverbend Road this summer please be aware of the construction equipment with your golf cart use. This will be an inconvenience for the entire summer. See you on the course. 6
