GENERAL MANAGER’S MESSAGE

SEDI HALVORSON GENERAL MANAGER

Welcome to the official start of summer at Oxbow! Memorial Day weekend wasn’t perfect for weather, but we opened the pool up all three days anyway, and now we are having fantastic weather! It is always great seeing a golf course, pool, and restaurant filled with members enjoying a warm, sunny day! Looking forward to June, we have a ton of fun in store for everyone! We have great member events all throughout the month, for all ages. Also, we only have a few outside golf events this month, so I encourage everyone to get out and enjoy Mondays and Tuesdays in June. As we get in to July and August, we will have more frequent outside events. However, 2019 is the last year we will be allowing all Tuesdays in a month to be booked for outside golf events. Starting in 2020, we will allow outside events on all Mondays, and only one non-Monday per month. This change was made for a few reasons. Most notably, so that we can open up your course even more throughout the season. It will also be beneficial for our holes not to have as much heavy traffic on them, especially our new north holes. A quick THANK YOU to members who have referred new members to us this spring. We are just shy of 40 new members in 2019, and we hope that number continues to grow! As always, please contact Alison or myself if we can assist in helping you get a friend or colleague to join us at Oxbow! As a reminder, we are happy to comp a day at the pool or a round of golf for a prospective member any time, just please notify Alison or me to arrange this for you.

JUNE 2019

A couple of housekeeping items as we get in to the swing of the season. A reminder that local guests (residing within 50 miles of the club) are welcome once per month at both the pool and golf course. This applies to any guest, no matter which member brings them out. If you have any questions on this policy, please contact me. Also, proper golf attire is required on both the practice facility and the course at all times for anyone over the age of 12. If you are planning to visit both the pool and the golf facilities in one day, please bring a proper change of clothes. Remember that the pool locker rooms have plenty of free lockers for you to use to store a change of clothes.

GENERAL MANAGER’S MESSAGE

SEDI HALVORSON (con.) GENERAL MANAGER

Coming out shortly will be the dues structure for the membership year, which begins on July 1st, 2019. Please watch for this email coming out next week. We hope that everyone will be joining us again for the 2019 – 2020 year. We have so many things to look forward to as a club, including seeing the opening of our full new course this year! If you are ending your membership on June 30th, you need to notify Alison or me in writing. If you will be enjoying another great year at the club, you do not need to do anything—your membership will automatically renew on July 1st. It's shaping up to be an amazing summer here at Oxbow. We are excited that the club continues to grow, and our current members are the driving force behind our growth. And while it was unfortunate to have flooding in our final year of using the old holes, it was also nice to know that we should never have to deal with it again. I hope you are all as excited as the team is here at Oxbow! We will see you soon, at YOUR club! Sedi

My name is Addie Long and I am the new Catering Manager! I am a North Fargo native and have spent the majority of my life working events. I graduated from North Dakota State University in May of 2018 with a degree in Strategic Communications and I am a die-hard Bison fan! While in college I worked at the Spectrum, NDSU’s student run newspaper, for three years in advertising. I was also heavily involved in Fraternity/ Sorority Life and served as the Chapter President for my sorority, Alpha Gamma Delta. For the past year I traveled on behalf of Alpha Gamma planning events for some of our largest chapters at UCLA, USC, and Florida State University. Through this role I had the opportunity to live in 23 states and moved about every 6 days. Prior to that I worked for Mosaic Catering for about seven years and gained many experiences with catering events. In addition, my parents own their own business, which includes Santa and Easter Bunny operations, as well as being professional clowns! I am also no stranger to the golf course, having played competitively until I was 18 years old! My life has truly prepared me for many situations from making balloon animals to sorority knowledge to catering events. I am excited to join the team at Oxbow Country Club and can’t wait to help you plan your next event with us! Best, Addie

JAKE HUGHES

ASSISTANT GENERAL MANAGER The pool is now open and we hope the warm temperatures are here to stay. We are excited to offer new menu offerings in the pool this season: pizza by the slice, handdipped corn dogs, and a larger menu for everyone to enjoy. We also have a great list of featured pool cocktails (alcoholic and non-alcoholic) to choose from. Who needs to go to the Caribbean for a Rum Punch when you have the Oxbow Rum Punch minutes away? Our main priority is the safety of our members. Please take note of our pool policies to ensure that everyone has a safe, fun, and relaxing pool experience! FOOD AND BEVERAGE

SCOTT MOTSCHENBACHER EXECUTIVE CHEF

JUNE 2019

Hello, Oxbow!! Here we finally are—the sun is shining and the pool is open!! We just recently released the spring/summer menu and it seems to be a hit thus far. I am really excited for this golf season. We have a ton of events planned and I can finally say that I have a great crew ready to tackle anything. I recently hired a new Sous Chef (2nd in command) who has some great experience. One of the more notable positions he had prior was the Sous Chef at the Hodo downtown. This time of year gets a little tough for me to put together weekly/daily specials. That’s where he comes in! I really want to make sure that we can continue to give everyone a one-of-a-kind experience here at Oxbow. With that, we have also expanded our pool menu to give everyone some more options sitting pool side. I’m sure if you have read any of my newsletter articles in the past couple of months, you probably read about the garden. I am very pleased to tell you that we are planted!! Our garden is located on the old driving range. This is something that I have been wanting since I started. The garden is going to help me and the rest of the staff give you the freshest product possible. It will also give me a chance to tell a story or two. Along with the garden, I am hoping to start working with a local rancher to bring you locally raised beef. I am sure you have all noticed the trend of farm-to-table, and Oxbow will soon be exactly that. Again…I am always seeking volunteers to help with the garden. Most of it would just be watering. If you want to volunteer, just stop me at the club or email me at chef@oxbowcc.com. That is about all the news I have this month. Check back next month for some gardening tips! Until then, I’ll see you around the club!!

FOOD AND BEVERAGE

Recipe of the Month

BY CHEF SCOTT

Summer Vinaigrette For this month’s recipe, I want to share a very simple vinaigrette for you to toss all of your fresh garden veggies in. This recipe is quite simple, but you can add all sorts of things to it to make it your own. Ingredients: 1 clove of garlic minced 1 tablespoon Dijon mustard 1 teaspoon honey ¼ cup red wine vinegar 1 teaspoon kosher salt 1 teaspoon fresh cracked black pepper 2 sprigs fresh parsley ¾ cup olive oil

SATURDAYS

7 AM—11 AM SUNDAYS

7 AM—2 PM

1/2 Price Bottles of Wine WEDNESDAYS

4 PM—9 PM

JUNE 2019

Procedure: In a blender. add all of your ingredients except the olive oil. Blend these all together and slowly drizzle in your olive oil. The mixture will get thicker as you add your oil. This is a good sign; it means your emulsification has taken place. Pour into a squeeze bottle and store in your refrigerator for up to 2 weeks. To change this up a little bit, you can use balsamic vinegar instead of red wine vinegar. You can add different things such as roasted shallots, or make it a little spicy with some fresh jalapenos or canned chipotles. You just need to play around a bit. That is the best part of cooking. If you make something new you absolutely love then GREAT!! If it’s absolute garbage…you have just leaned a valuable life lesson. Enjoy!!

NEWS FROM THE FAIRWAY

DAVID WOOD SUPERINTENDENT

We have seen a lot of changes in the last 30 days. Several flooded fairways that I thought would survive were damaged extensively. Recovery has started and will take some time to fill in and support a golf ball. We have begun seeding and additional fertility applications to accelerate the healing process. Please replace or fill all your divots in these areas. I anticipate at this rate of recovery we should see the fairways in good condition by July 4th.

PLEASE FIX YOUR BALL MARKS!

Phase two grow-in has started, but has not been helped by the cool weather pattern. Soil temperature finally reached 50 degrees several weeks ago and that has helped. The dormant seeding that was done in October has started to germinate and will need some time to mature. We continue to incorporate seed as conditions allow. I am asking that everyone do their part in regard to golf course etiquette. Oxbow received a letter from a member who has played here for over 15 years, expressing his disappointment in our members’ neglect to repair ball marks. The letter states, I normally do not complain about

FUTURE 8 FAIRWAY BUNKERS

the little things at this club. But tonight, I went out by myself to play a few holes and was surprised by the lack of effort by the membership to fix ball marks on our course. On hole #2, I fixed 15 ball marks alone. Please repair your markers, remind your playing partners, and most importantly, teach new golfers how to do the little things. Leave the golf course better than you found it.

JUNE 2019

See you on the course,

David Wood FUTURE 4 GREEN PAGE 15
