GREG KELSEY GENERAL MANAGER

Welcome to the official start of summer at Oxbow! Memorial Day weekend started the pool season, and it went off without a hitch. It now appears we are going to have fantastic weather going forward. It is finally great seeing a golf course, pool, and restaurant busy with members enjoying a warm, sunny day!

A couple reminders as we get in to the season. Local guests (residing within 50 miles of the club) are welcome once per month at both the pool and golf course. This applies to any guest, no matter which member brings them out. If you have any questions on this policy, please contact me. Also, proper golf attire is required on both the practice facility and the course at all times for anyone over the age of 12. If you are planning to visit both the pool and the golf facilities in one day, please bring a proper change of clothes. Remember that the pool locker rooms have plenty of free lockers for you to use to store a change of clothes.

Looking forward, we hope to start planning some events for July and the rest of the summer. Golf events are already in full swing, and hopefully social gatherings will become a thing again and we can initiate some parties. The Bar and Dining Room and Patios are open! Please join us for lunch or dinner every day. Of course you may still order to-go and curbside. A quick THANK YOU to members who have referred new members to us. Apprehension this spring slowed member growth, but as confidence grows, I assume so will our membership. As a reminder, we are happy to comp a day at the pool or a round of golf for a prospective member any time. Please notify Corey or me to arrange this for you. 3

HEATHER HEYERMAN EVENT COORDINATOR

Hello Everyone! I hope everyone had a great month of May with the warmer weather and with seeing the North Dakota area come back to life. I sure did miss seeing everyone at the club and all the events. I am happy to be back working and starting up events again. We had our first wedding at the end of May and even though it was different with all the new guidelines that have been put out, the Oxbow team did a great job working together to put on a great wedding! I am excited for more events and weddings to come this summer. If you or anyone you know is looking for space to hold an event, please feel free to reach out to me at heather@oxbowcc.com. I would love to help out with some great summer events!

I am also excited to announce that I have brought on an Event Coordinator Intern to help out with events this summer! Her name is Jaclyn Hoy and we are so excited to have her with us! Below, Jaclyn has written some words for everyone to get to know her better. Please welcome her to our awesome team! “Hey everyone! I’m Jaclyn. I’m so excited to be a part of the Oxbow team this summer! I grew up in Fargo and have since ventured out to a few different places, only to find myself back in the Midwest. I have spent most of my professional career in the retail industry, but found a passion for hospitality during my time in Salt Lake City. It only made sense to pursue it here! When I am not at work, you can find me reading, spending time with my husband, and hanging out with our dog, Kato. I look forward to learning more about the event coordinating process and getting to know everyone!”

DAVID WOOD SUPERINTENDENT

As the weather has warmed up, we are seeing the golf course grasses finally begin to start actively growing in a consistent pattern. Areas in the fairways and roughs damaged by voles or snow mold are beginning to heal and will soon be back to normal. In early May, our staff over-seeded holes 3 and 4, and we are starting to see some germination. We will continue to improve any thin areas as the summer progresses. One of my top priorities this spring has been an aggressive weed control program in our native areas. Grassy weeds have been a problem from the start. We have begun using several different herbicides with multiple applications in an attempt to eradicate this problem. The control of these weeds is a little more challenging, as most are perennial in nature and have extensive rhizome/stolon growth. Control measures will continue until we have success. The maintenance facility construction is very close to being completed. Concrete work around the perimeter has been completed. Exterior siding will be finished by the end of May. Our goal was to replicate the 8

appearance of the new snack buildings on the course. A new concrete fuel containment area has been finished. Storage for both the gas and diesel tanks are enclosed in a curbed area and will contain any potential leaks. This is a safety upgrade that was not at the previous facility. Painting and flooring have begun on the interior of the building. Our anticipated occupancy date is mid-June. We will be hosting an open house once everything is completed. We have placed bunker rakes out at all the sand bunkers and divot boxes on the tees. The use of these items is optional at this time. The Club continues to be concerned with everyone’s wellbeing. If you are teeing off on holes 1 and 10, please be aware of players on the opposite forward (silver) tee. There have been several incidences of wayward shots flying over players. Please allow the forward tee to proceed and leave the area before hitting.

See you on the course, David Wood

SCOTT MOTSCHENBACHER EXECUTIVE CHEF

Hello, Oxbow!! We are off to the races! With everything being back to mostly normal. It has been GREAT seeing all your smiling faces! I am sure everyone had a fair amount of stress and anxiety the past couple of months. I, for one, had my fair share. Doing everything I can to ensure the health and safety of our staff and myself takes a toll. Thankfully, we have been healthy the whole time! Now that we are back to somewhat normal does not mean we can relax on our sanitation. The staff and I continue to keep everything clean and sanitary. If it sometimes seems like your food or drinks are taking a little longer to get to you than normal, please know that keeping everything clean takes time and energy. We want nothing more than to provide prompt service, but we also want to do it the right way to ensure everyone’s safety. Thank you all for understanding.

Now for the kitchen update: we have started the new summer menu, as most of you all know. So far, it’s been a huge hit! The beef bulgogi has absolutely been on fire! Thank you all for the feedback. I have not heard anything negative yet. If you have any concerns, please feel free to bring them up to me. I am incredibly open to suggestions. Another fun update I want to share is about the garden. I have received a ton of help this year. The membership has really gotten behind it this year by offering hours of their time, as well as equipment. Thank you to all involved! The garden is going to be substantially bigger this year. This thing is going to offer up a ton of sustainability for the club. Staffing has been a bit of a struggle the last couple of months. Fortunately, I have turned the corner on that! My position has morphed into something a little different than the previous years. I have taken on a few more responsibilities that lie outside the kitchen. I enjoy it quite a bit. It gives me the opportunity to work a little closer with the membership. It has been a wild couple of months, but we are more than motivated to save our Oxbow summer!!

SCOTT MOTSCHENBACHER EXECUTIVE CHEF

For this month’s recipe, I want to share our Beef Bulgogi Marinade. This has been one of our biggest hits on the new menu. INGREDIENTS:  1 cup soy sauce  ½ cup brown sugar  2 garlic cloves, minced  3 tablespoons sesame oil  1 tablespoon crushed red pepper flake  1 teaspoon ground ginger  2 pounds flank steak PROCEDURE: Add all ingredients into a saucepan. Bring to a boil on medium-high heat. Once it has come to a boil, remove from the heat and cool it down to room temperature. Slice your flank steak against the grain. For reference: if you have wood floors, the grain of the floor runs the length. You will see this in the flank steak as well. The idea is to shorten the length as much as possible. This makes what would be a tough cut of beef into a very tender cut. After you have cut the steak up, marinate for 4-24 hours. Cook on high heat with a bit of vegetable oil. Serve with whatever you want! You are your own person and don’t need some nosey chef telling you how to live your life!
