JULY 2020
MANAGER’S MESSAGE 1975
SEDI HALVORSON INTERIM GENERAL MANAGER
It has been great to see so many of you again! Thank you for all of the kind words. It has truly been fun to be able to come up and assist for a few weeks. Seeing so many friendly faces, both members and our associates, has been uplifting in many ways. As I depart, thank you again for welcoming me back for a few weeks. Hopefully, I was able to help the club in many ways. My favorite member events are coming up in July: our Fourth of July celebration and Derby Weekend! While our 4th of July celebration is a little smaller this year, we will still have all day pool and golf fun, great food from Chef Scott, and the famous Oxbow fireworks display at dusk! We are still doing our best to manage the COVID19 situation. We rely heavily on our members to police themselves as far as social distancing. As more cases have been occurring in Cass County,
we have continued to do things like sanitize menus, temperature checks for employees, and restricting some areas to associates only. If you or your family have possibly been exposed to COVID, or have ANY symptoms, please do not come to the club until it is safe to do so. Other businesses, restaurants, and clubs have had to close due to COVID breakouts amongst associates. We would hate to have that happen at Oxbow. As I’m sure you have noticed, we have had fewer outside golf events due to COVID-19. Hopefully, this has allowed you to play more golf at your club. We do have three outside events scheduled in July, so please make sure to check the tee sheet before coming out to play on a Monday or Tuesday. Coming up, we will be introducing some Monday incentives to bring guests to golf. Please watch your emails from Corey for details. We now have 40 new members that have joined Oxbow in 2020! THANK YOU to all of our members for referring their friends, family, and colleagues. We always rely heavily on referrals for new member recruitment - even more so this year. It is certainly not too late to enjoy so much of the upcoming season at Oxbow. Keep sending referrals our way! The golf course is in amazing shape. David and his team continue to show why they are the best in the area! The development since we opened the course back in September has been fantastic, and it will only keep getting better. Thank you again for welcoming me back for a short time. It has been my pleasure to be able to assist the club, and all of you. Until next time, stay safe while enjoying this wonderful time of year at YOUR club! Sedi 3

EVENT COORDINATOR UPDATE 1975
HEATHER HEYERMAN EVENT COORDINATOR
Hello everyone! It is so crazy that it is already July - the summer is going by so fast. It has been a lot of fun watching all the interactions at the club, from the pool to golf to the restaurant. Now I know why everyone says the club is so much fun in the summer! In the club event world, we are starting to pick up with more social gatherings. We are taking all the precautions with distancing and sanitizing to keep everyone safe. If you are looking to hold a social gathering, please feel free to reach out to me at heather@oxbowcc.com. I would be happy to set something up for you and explain the precautions we are taking to keep all the guests of the club safe and healthy!
weddings. I am also getting married myself in August so I can relate to all the brides and grooms out there with the stress of trying to plan a wedding in 2020. I am always here for words of encouragement! For all our couples out there that are getting married this year, I have some helpful pointers that will help the day go very smoothly: Assign certain duties to people included in the wedding. Make a “day of” timeline. Write a sweet note to your partner. Purchase gifts for your bridal party and parents. Relax and enjoy your big day!
We have had a few weddings so far and our team has worked great together to put on a fun and safe environment for everyone. I am looking forward to the coming months as we pick up a lot more 6

NEWS FROM THE FAIRWAY 1975
DAVID WOOD SUPERINTENDENT
Our herbicide applications on fairways for weed control have started. Our goal is to remove bent grass and poa contamination. The control process is a series of five spray applications spread over a fourteen day period. Multiple applications at low rates are needed to not damage the Kentucky bluegrass. Last year, we sprayed the North golf holes prior to opening, and had approximately 70% control of the poa and 100% control of the bent grass. The bent grass will bleach out as the product starts its control and poa will slowly yellow out. Some areas that have a high population of weeds will need to be overseeded. We may sod small areas as needed. This will be an ongoing practice to keep the course as intended.
operating at capacity. The engineering firm that designed the pumping system is looking at the issue and will hopefully have a solution soon. Once this situation is resolved, we will fill the three lakes on the North golf holes. We have moved into the new maintenance facility and are finalizing a few details to get operations moving as planned. We have several small items yet to do, including landscaping and finishing aggregate storage bins. We look forward to hosting an open house to show our facility soon. See you on the course, David Wood
This past month, we have had an issue of keeping the lake levels up to normal operating level. The course has a water transfer pump from the river to the main lake below the Clubhouse that is not 7
GOLF SHOP UPDATE 1975
COREY HERLICKSON HEAD GOLF PROFESSIONAL
We had a successful junior camp with 92 juniors attending. Nobody got hurt and everyone had a great time! Battle at the Bow was a success with the help of our entire golf operations team. It is a blessing to have so many dedicated and talented teammates. Congratulations to Ryan Schulz and his guest Tyler Schlotfeldt on their win! We have had a very busy golf season this year and that has made the time fly by in the Golf Shop. As a reminder, we need every golfer to check in before they play. We track who plays and the total number of rounds. We have had to work really hard to get an accurate count this year due to most golfers not checking in before they play. Please make our job a little easier and stop into the Golf Shop for a quick second before you tee off, or have one person from your group come in and make us aware of who is playing. 8
Merchandise is finally coming in. We appreciate everybody’s patience on the delay. Unfortunately, we have no way to control the situation other than to wait it out. We are seeing Buy 3 Get 1 Free orders coming in fast and furious. The manufacturers are starting to catch up on the old orders, and are lessening turn around times week by week. Thank you for all of your support by purchasing your golf items from the Golf Shop. We have plenty of tournaments remaining. This month, we have the 4th of July Best Ball, the 4th of July Family Scramble, and the Derby (don’t forget Derby Couples the night before)! You can sign up for any of these events in the Golf Shop.

FOOD & BEVERAGE UPDATE 1975
KARA SCHLIEMAN FOOD & BEVERAGE MANAGER
It’s July - the month of heat and ice cream! We have had a great first month of the pool being open. We finally are able to have all of the chairs out at the pool. Of course, we are still actively sanitizing the chairs and high touch areas so that we can continue having the best summer possible!
Be sure to check out our featured cocktails of the week! The week of the 4th, we have a beautiful drink that we have concocted. It is a white sangria with ice cubes that have raspberries and blueberries in them to give the drink that festive American flair! We are looking forward to the 4th of July out here! It is always a blast. We’re hoping for a hot and sunny day so we can enjoy the pool and the beautiful fireworks show that night! If you don’t have any plans, be sure to join us! The Derby is coming up on the 18th. We are only offering our pool menu that day, so please be sure to plan ahead!

KITCHEN UPDATE 1975
SCOTT MOTSCHENBACHER EXECUTIVE CHEF
Hello, Oxbow!! What an absolute crazy start to our summer! It seems like we were just under statewide lockdown yesterday. Now the pool is busy, and we just finished up Battle weekend. I want to take this chance to thank everyone who was involved in the Battle at the Bow surprise for Corey and me. We were completely shocked! I would be lying if I said that this is a thankless job. (In my past prior to Oxbow, it was just that...a very thankless job.) YOU, the members, are what keep me motivated to go above and beyond. You all genuinely care about the staff and myself. It is truly a blessing to be working for you and your families. So, a big THANK YOU to everyone! Another big thank you goes to our savior for what has been a busy stretch of summer Mr. Sedi Halvorson!! He has been an absolute godsend. If you get the chance before he packs up for Iowa, give him a handshake and a thank you. He is a big reason this club is as great as it is.

For us in the culinary department, it has been a wild couple of months. We had what I thought was going to be a really great crew going into the season. I could not have been more wrong. We have had some serious staffing issues. I apologize for that. However, I have recently hired some people that are going to do some serious work!! One of my biggest and latest hires is the new Sous Chef. He has a great resume. With him, my Banquet Chef Pete, Tim, Ed, and Suzy, we are poised to do some fantastic work for you. Once I get everyone trained in, you will start to see a lot more of me in the dining room. Not only am I a chef, but I also won best cocktail in 2013, 2014, and 2015. I am going to be helping the staff make a new cocktail menu - one that is more of a show than just a drink. I am also going to put together a kid’s cocktail menu. Virgin drinks only, of course. We are not that kind of club. That is about all the news from the culinary department. There will be some menu changes coming soon. As always, I am all ears for ideas. Email me at chef@oxbowcc.com if you have any ideas!! I’ll see you around the club!

RECIPE OF THE MONTH 1975
SCOTT MOTSCHENBACHER EXECUTIVE CHEF
Oxbow Pesto This month, I want to share our pesto recipe. I want to share this because I will be doing a major basil/herb harvest in the garden this week!! INGREDIENTS: 2 bunches fresh basil (the packets you can find at the grocery store) ½ cup toasted pine nuts 1 cup shredded parmesan cheese 2 cloves fresh garlic 1 cup olive oil 1 tablespoon each salt and pepper PROCEDURE In a food processor, add all the ingredients except for the olive oil. This is an emulsified sauce, just like a vinaigrette. Start the food processor and blend everything up. Once everything is a nice paste consistency, slowly drizzle in the olive oil. After the olive oil is combined, you have pesto!! Use it as a sandwich spread, a pasta sauce, or a dip for vegetables. You can also combine it with a bit of cream cheese for a yummy spread for chips and crackers. Enjoy!!
