Well, that month went fast! July is one of the most fun months here at Oxbow. It was great to see so many of you enjoy the pool area, golf events, and of course, Derby weekend! We had a great turnout this year, and another amazing finish to the event! Congratulations to Kim Kappes and Briena Goldsmith on their win this year! Thank you to all who participated in Derby Couples and the Derby itself. It was truly a great weekend! We also have had wonderful weekly turnout for Couple’s Golf— probably the most participation I have seen in my three years here at Oxbow! Please keep coming out for these fun Friday nights. It’s a great chance to have fun with other Oxbow couples, and meet some members you maybe haven’t had the chance to meet yet. We also had the very distinct honor of hosting the kickoff to Carson Wentz’s AO1 charity, which was a tremendous showcase for Oxbow. The team here did an incredible job! As we move in to August, we have many more fun ways to use your club! August provides another full month of pool activities, and wonderful days and evenings for golf. Some of the more notable August events include Couples’ Vegas Night and our annual August pool party. Hopefully, we will finally get one perfect pool party day this season. On the golf side of things, we have the Oxbow Open coming up the first weekend of August, the Ladies’ Bus Trip to Mystic Lake Casino, and League playoffs beginning on the 29th. There are a lot of things happening at your club this month, so come out and enjoy the final full month of summer! As most of you may know, Eric Wenaas has decided to leave Oxbow in pursuit of his MBA from NSDU. When Eric first arrived at Oxbow last year, his goal was to work here and also start work on his advanced degree. With the time commitments involved with being the PGA Professional here at the club, he realized that he could not do both. We wish Eric nothing but the best as he continues his education, and we thank him for the many hours he gave the club. Eric did many things during this transition time that get taken for granted, including getting the course re-rated, setting up the new Golf Shop, and so many other things that helped us get to where we are today. We will look to replace his position in the fall/winter time so that our next Pro can get ready for the upcoming 2018 season. Until that time, you can always reach out to me, Peggy, John, or Jordan Caspers to help you with whatever you might need. In some golf course construction news, we should begin to see levy work start on the south end of the north nine in the next couple of weeks. As most of you know, this is a huge step in getting the north nine finished and keeping us on schedule. We will be sending out correspondence to the members regarding route changes and areas that non-construction workers are not allowed. We want the contractors to finish the levy work as quickly as possible and for everyone to stay safe. There will be lots of activity with home moves and levy construction, and it is extremely important that you follow the prescribed routes and instructions during this time. Levy work should finish around the end of September. Finally, we are still looking for more families to join us as members here at Oxbow. We are rolling out a new promotion starting this month for prospective members to try out membership for August and September. We are very excited about this program, and hope that you will help us continue to recruit great families to our wonderful club. More information is in on Page 10 of this newsletter. We are limiting this promotion to the first 25 who sign up, so spread the word amongst your friends and colleagues. In closing, thank you for a wonderful month of July! EVENT UPDATE Alison Molony Director of Member Engagement & EventS Holiday Parties— It’s never too early to start thinking about the holiday season! We are already taking bookings for holiday parties. Show off your club with an elegant event featuring festive décor, delicious food, and cheery beverages. We also accept party bookings from non-members—please spread the word. Contact me for more information and availability! August Pool Party— Our last pool party of the year will be Sunday, August 27th. Though we haven’t had the best luck with pool party weather this summer, we are hoping for sunny skies and warm temperatures to wrap up the pool party season! In addition to normal pool fun, we are bringing in inflatable games from Games Galore, a live DJ, and having contests and activities throughout the afternoon. Guests are welcome as well. Mark your calendar and join in the fun! Goodbye!— The original Clubhouse from 1975 was torn down this last week. It was definitely bittersweet to watch the red barn come down. I know a lot of our members have many fond memories of the original Clubhouse. It was such a pleasure to begin my Oxbow career in this charming building. Its character and unique architecture will truly be missed!

Food FOOD & Beverage & BEVERAGE Update UPDATE SCOTT MOTSCHENBACHER Executive chef Hello, Oxbow! Wow!! July was one crazy month for myself and my crew. After going through the Carson Wentz AO1 dinner and the Derby, I’m not sure there is much that we cannot do in this kitchen. Myself and my new Sous Chef have already been working on the fall menu. I am really excited for it to come out. Fall is my favorite season by far when it comes to everything culinary. That being said, please let me know if you have any suggestions. For this month’s recipe, I want to share the dish I recently made on North Dakota Today. This dish turned out way better than anticipated. It is pan seared scallops with a citrus vinaigrette, crispy prosciutto, and a salad of jalapeño, cucumber, radish, and cilantro. I really like the balance of the dish. You get the citrus vinegar flavor cut with a little honey. The sweetness of the scallop balances the saltiness of the prosciutto. You also get a little spice and freshness from the salad. Yummo!!

PAN-SEARED SCALLOPS WITH CITRUS VINAIGRETTE, CRISPY PROSCIUTTO, AND SUMMER SALAD Vinaigrette Ingredients: • • • • •

Juice of ½ lime, ½ orange, and ½ lemon 2 tblsp honey 1 tsp fresh chopped garlic Salt & pepper to taste ¾ cup extra virgin olive oil

Cooking procedure: Bring a sauté pan up to high heat with vegetable oil. Chop 2 slices of prosciutto and add to the pan. You will be rendering the fat and flavoring the oil. Remove prosciutto and keep on high heat.

Pad your scallops dry with paper towels. This is an important step. If you do not remove the excess liquid, your scallops will sit and boil in their own liquid. This *Mix all vinaigrette ingredients together and slowly whisk way, you get a proper sear to caramelize the natural sugars in the scallop—that is where all the flavor is! Sear the scallops in the pan. Do not mess with them in olive oil. for a good 3-4 minutes. They need their time—just leave ‘em alone! Once you Salad Ingredients: have seared on one side, flip over and sear the other side. Add about a ¼ cup of • ½ of a jalapeño sliced thin good white wine to help them finish a bit. • 2 radishes sliced thin and julienned Then, assemble the scallops, crispy prosciutto, salad, and vinaigrette as you see • ½ of a cucumber sliced thin and julienned fit. Grab a fork and enjoy!! *Mix everything together!

Jake hughes ASSISTANT GENERAL MANAGER Wow, can you believe it’s already August?! This summer is flying by. I want to give a shout out to all of our seasonal employees who will soon be heading back to school. They did wonderful work for us, and I couldn’t be happier with their performance this year. With staff leaving for school, we will be short lifeguards in the pool at the end of the month. We are only affected a few days, but we will keep you updated on the days we will be shorthanded in the mornings. The last day the pool will be open this season is Monday, September 4th. In restaurant news, we have an excellent new drink menu for you to choose from. We have some great Moscow Mules, the Pomegranate Sunrise, and the Perfect Gin & Tonic for a nice sunny day on our patio. Ask your server for details. Another refresh on the menu is soon to come. If there is anything you would like to see on the menu, please let Steph, Chef, or myself know and we will see if we can incorporate it into the menu. I hope everyone has enjoyed the summer so far. Golf News July flew by and it was a blast! We had some beautiful weather and some amazing golf! The 4th of July Best Ball was a great tournament with Jim Tallakson and Taylor Cavanagh winning the gross division and Taylor and Bob Fontaine winning the net division and a spot in the Derby shootout. The Derby was a party as usual with some great golf and plenty of entertainment. Kim Kappes and Briena Goldsmith went out with a bang (literally) as fireworks went off after they won the Shoot-Out on hole seven. Thank you to everyone who came out to enjoy the day and for making it such a fun tournament!

COUPLES’ NIGHT Fridays 6 PM— Tee off

Our Junior PGA League ended up winning their division and put four golfers on the All-Star Team that will go on to compete a few more times this fall! Congratulations to Hunter Graff, Porter Siedel, Tommy Baumgartner, and Lindsey Astrup. Every Friday night is Couples’ Night at 6:00! Come out for a great time with other members and some fun golf. Don’t forget to mark your calendar on August 18th for Vegas Night! Ladies’ Night continues every Wednesday through August 16th with a lesson from John at 5:30 and reserved tee times to follow. Call the Golf Shop to sign yourself up and maybe bring some guests out with you for a great girls night with your friends! With the end of July comes the beginning of August and new events! The Oxbow Open will be held on Saturday and Sunday, August 5th and 6th. There will be a gross and net division for $75 per player. Call the Golf Shop to make your own tee time for Saturday.

The Parent-Child Tournament will be held on Sunday, August 20th. Call the Golf Shop to make a tee time before 2:00. Ages 12 and under play 9 holes and ages 13-18 play 18 holes. The format will be alternate shot and should be a ton of fun! Don’t miss out! The S&L Computer/El Zagal Pro Am is August 23rd. This tournament benefits the Shrine Hospital. It is a team event with a pro on each team. This is the first event of the ND Open Tournament at FCC. We have new FootJoy men’s and women’s styles. Men’s adiPure will be here in early August. Be sure to stop in and check it out. Hoping for a wonderful August of great weather with no wind!!

DAVID WOOD, SUPERINTENDENT Bruce Charlton, golf course architect, just completed his second site visit of 2017 to review phase two of golf course construction. During these visits he is approving and/or adjusting construction of greens, tee locations, and shaping of bunkers. During this visit, Bruce reviewed the entire project, but concentrated on holes 6, 7, 8, and 13. The construction of the green sub grade at this stage is the most critical for the architect. Bruce is checking for usable pin placements, percentage of slope, and green to bunker placement. These things need to be finished correctly before the interior drainage and sand are placed into the green and seeding can begin. Sand bunker placement and sizing are considered at this time to determine the strategy of the golf hole. Appropriate golf club and prevailing winds are several factors that determine the location and size of these hazards. The location in relation to the green are also considered for maintenance of the green complex. Irrigation has been connected to phase one and working on Hole 8. Sprinklers have been installed on 8 and 7. The irrigation follows the top soil and grading process, so Holes 2, 6, and 13 will be installed next. We will keep you updated as the construction progresses. In our capital equipment request for 2017, the Grounds Department was in need of a new topdresser and utility cart. The new topdresser replaces one purchased in 1998. This is a long term investment for the care of our putting greens. Thank you. Please repair all divots and ball marks on greens. Sand bunker raking is not done on a daily basis if staffing is not available, so please rake all of your foot prints out. See you on the course, David Wood
