GENERAL MANAGER’S MESSAGE

SEDI HALVORSON GENERAL MANAGER

It is hard to believe it is already September. No better way to start the month than the opening of our full 18! We had a great ceremony on the new first tee on Friday, August 30th, and we were thrilled to see so many of you out to celebrate the occasion. It truly has been a monumental project for Oxbow, and the future of this club is extremely bright! Building Updates Work still continues on our restroom and snack shack facilities on both sides of the course. We do not plan to open the actual service portion of the shacks this year. We will continue to utilize beverage carts throughout the fall. We do plan to have the south restrooms open yet this season, hopefully by mid-September. The north shack will take a bit more time due to the underground trenching needed to get utilities there. We should have all of that completed before the course closes for the season, and ready to use when we open up in 2020. As we sent out in an email earlier, the Oxbow Board of Directors has authorized the demolition of our old maintenance facility, and the construction of a new building. This will begin late fall of this year, and will be ready for use in March of 2020. This is being done in cooperation with the City of Oxbow, who will utilize some of the new space for city maintenance equipment. The maintenance facilities we currently have are outdated, and many upgrades are needed. By participating in this joint venture with the City of Oxbow, both the Club and the City benefit financially by building a shared space.

September Hours With the later sunrise and earlier sunsets, our golf course and clubhouse opening times move back just a bit during the month of September. The golf course tee sheet now begins at 9 AM during the week (noon on Mondays), and 8 AM on weekends. The clubhouse and golf shop will open at 8:30 AM during the week (11 AM on Mondays), and 7:30am on weekends. We will be serving breakfast through the month of September. These hours will remain in effect until October. PAGE 2

Your Oxbow Team This is the time of year when we say goodbye to many of our teammates for the season, as many go back to school, whether it be attending high school or college, or teaching. I want to thank all of our teammates for doing such a tremendous job this summer. For those who have departed for the year, we wish them much success, and hope to see many again next summer.

GENERAL MANAGER’S MESSAGE

SEDI HALVORSON (con.) GENERAL MANAGER

Goodbye Lastly, as many of you are aware, I will be departing Oxbow soon, and my wife and I are relocating to my hometown of Des Moines, IA. I can’t thank all of the members enough for their support and friendship over the years. I have had the privilege of serving as your General Manager since January of 2015, as we have gone through this transformation. Managing the club, as well as the clubhouse and golf course projects has been extremely challenging and rewarding. Opening the full course has been the culmination of work by so many, including the board members who serve you, as well as the operational team here at the club. We have a great team of leaders here at Oxbow, who will continue to serve you day in and day out. I am excited to see Oxbow’s continued growth in to the future. It is with a heavy heart I leave the place and people I have loved to come to work with for almost five years. I know that the best is still yet to come for all of you. I hope to say goodbye to many of you in person over the next week or so.

MARK YOUR CALENDARS!

Thank you again for letting me be a part of your lives, and I hope to see many of you during return trips to the area. As the members, you make the club, and it is only going to get better. I am excited to see the future of Oxbow, even from a distance.

SPETEMBER 2019

I hope to see you at least one more time, at YOUR club, Sedi

MEMBERSHIP & EVENTS UPDATE

ALISON MOLONY

DIRECTOR OF MEMBERSHIP & EVENTS WE’VE COME A LONG WAY, BABY! With the completion of the golf course renovation, I can’t help but look back on the last five years in awe of how far Oxbow Country Club has come. I have had the privilege to witness every phase of this massive construction project, and I know that it wasn’t easy. I commend the membership for the dedication and patience that it has taken to see this project through to the end. We could not have made it through this process without the guidance of our Board of Directors. THANK YOU to all the members who served on the Board during this challenging part of Oxbow’s history, especially the four Board presidents: Chris Holland, Dave Campbell, Bill Short, and Scott Differding.

JOIN OUR PRIVATE FACEBOOK GROUP!

Finally, I want to recognize Sedi for everything he did for Oxbow during his time as General Manager. When he came on board almost five years ago, I don’t think anyone knew the magnitude of the role he would play in the completion of the Clubhouse and Golf Course. It has been long, bumpy road, and Sedi remained focused and diligent throughout the entire process. I wish Sedi the best of luck as he enters his new phase in life. He will be missed!

I can’t write this without acknowledging the work that David Wood put into this project. I have never met a person who cares more deeply about his job than David. Honestly, he treats the golf course as if it’s his own child! I can’t even begin to guess the amount of hours David dedicated to making sure the end product was perfect. On top of having a full plate, David has never hesitated to help me out when I come to him with requests like helping decorate the Club for Christmas or blowing up balloons for the Daddy-Daughter Dance. David is a class act, and I am very fortunate to work alongside him.

JAKE HUGHES

ASSISTANT GENERAL MANAGER Thank you to all who came out to the pool this season. It was our busiest summer yet! We are putting the pool to bed for the winter, but there are plenty of things to do at the club for families to enjoy. Sunday family meals are starting up again September 8th. Some food options from last year were fried chicken, spaghetti and meatballs, chicken pot pie, and more. Our family-style meal specials were very popular last year, and we are excited to bring them back for fall/winter. Also, for all NDSU and Vikings football games, we will be having 2-for-1 drinks for adults (restaurant only) and food specials. Join us September 8th at 2:30 PM as NDSU and UND face off. Don't forget - we still have 1/2 off bottles of wine on Wednesdays! I look forward to seeing you at your club and hope you're enjoying our completed course, Jake Hughes

FOOD AND BEVERAGE

SCOTT MOTSCHENBACHER EXECUTIVE CHEF

Hello, Oxbow!! Wow!! Just like that, the pool is closed and the kids are back in school. It has been a wonderful summer—all thanks to you. The membership is what really makes the club, from the golfers to the kids at the pool. I couldn’t imagine working anywhere else. On that note, September 1st marks my 3 year anniversary with Oxbow. I have been through some really fun times out here and made a lot of friends. Thank you all for that!

SEPTEMBER 2019

As you all know, we are losing our General Manager. It’s a tough pill to swallow, but I wish him well. Sedi has taught me a lot over the last 3 years and I cannot thank him enough. He really helped to mold all of the management. He taught me how to be a successful club chef. So if you see him before he leaves, be sure to give him thanks. Myself, my staff, and the rest of the Oxbow crew will continue to give the membership what it deserves—great food, great service and great golf! This is my favorite time of year because it’s new fall menu time!! We have been kicking a few ideas around for what we want to do. One idea I have is moving towards a steakhousestyle menu with great cuts of beef, some different fish options, and all the favorites. As always, if you have any ideas let me know! I am always available.

Recipe of the Month

BY CHEF SCOTT

Maple Aioli

For this month’s recipe, I want to share my Maple Aioli recipe. This goes on Sedi’s favorite Oxbow burger, the Over Easy. INGREDIENTS: 1 egg yolk Juice of one lemon 1 tablespoon white vinegar 1 sprig thyme leaves 1 teaspoon each salt and pepper 3 tablespoons maple syrup 1 cup vegetable oil

SEPTEMBER 2019

Procedure: In a food processor, add all the ingredients except the vegetable oil. Start blending and slowly add your vegetable oil. As it blends, it will begin to emulsify. If it gets too thick, you can thin it out by slowly adding water until you get the consistency of ketchup. Add this to a burger with some bacon, American cheese, and an over easy egg. Enjoy!!

NEWS FROM THE FAIRWAY

DAVID WOOD SUPERINTENDENT

With the new golf holes opening, we are happy to finally present the new course to all who have waited patiently throughout this process. Working with the Robert Trent Jones group and Gary Killebrew, I believe we have finished a long project that our members will be proud of for many years to come. The initial consultations with the RTJ group began in 2013 with their team working diligently the first part of 2014 to have a plan ready for the initial levee construction to begin mid-summer of 2014. By the end of 2014, there were nine holes of golf course rough-shaped and approximately a mile of levee constructed. The spring of 2015 construction of phase one began with the goal of having everything seeded and growing by that fall. All nine holes were seeded, but only three had grass growing before winter arrived. The grow-in completed and the first of nine new holes opened in September of 2016. A minor delay in north levee construction slowed the start of the second nine holes, but work began in the fall of 2017 for phase two of the project. Construction of the second nine continued throughout 2018 with the last holes seeded in September of that year. Grow-in continued throughout most of the 2019 season, bringing us to opening day on Friday, August 30th, 2019.

SEPTEMBER 2019

I hope everyone was able to play the original holes one last time in August. There were many beautiful holes that can never be re-created and will be missed. I am honored to have had privilege of overseeing the maintenance of the original golf course. See you the course, David Wood

With the new course finally open, we have some points of emphasis for you in this month’s article.

SIGN UP FOR COUPLES GLOW BALL! Friday, September 6th

We expect a busy September with the opening of the new holes, which will be great! In the golf shop, things slow down in the fall and seeing the members more often is something we look forward to each day. Don’t forget—you can continue to improve by taking lessons this fall and into the winter now that we have the Trackman Simulator. You have spent the entire spring and summer trying to play better, so don’t stop now! Use the fall and winter as an opportunity to continue on the growth that you have seen over the summer. We hopefully will be rolling out some new programs this winter that will help you improve in the offseason. The golf professional team is ready to help you become the golfer you want to be. It only takes YOU to make the choice and us to come up with the plan! If you could use your golf shop credit this fall, it would really help us when it comes to buying for the 2020 season. We try to do our best to bring in the best lines and newest trends each year. Please assist us in turning the inventory over by using your golf shop merchandise credit. PAGE 14

1. We want you to turn in a scorecard with every 9-hole or 18-hole round that you play. We want them so we can enter the scores into a spreadsheet and analyze the data for next year when it comes to allocating the handicap holes on the scorecard. 2. We will be playing the new holes as lift, clean, and place for the remainder of the year. Although most of the new holes are in great shape, it is simply easier to play the new holes all with the same rule rather than have a caveat on a few holes. 3. We need you to adhere to any driving restrictions that are set. The quickest way to set the grass back is to drive in areas that are restricted from driving. Golf carts have an immediate impact on turf conditions.
