It is hard to believe it is already September. August was a great month at the club, with member golf rounds and dining continuing the trend of increases over last year. School has started, many high school sports are back, and fall will be here before we know it. While many associate September with the end of summer, September actually provides some of the best golfing weather of the year! We hope you have the opportunity to keep golfing and enjoying the club! Also, we have many of our traditional favorite fall events coming up. There are still so many great reasons for everyone to enjoy Oxbow!

work to provide these experiences while still being responsible and following state and local guidelines. However, we are not going to shelf all of the fun events we used to have. We just need to adjust how we do them, as well as come up with new and different ways to engage our membership, especially in the off-season. We will have more coming on this through the month of September. I thank you in advance for your patience as we continue through this process.

As many of you are aware, we have had some transition at the club over this past year. My goal in coming back is to stabilize that transition, and build a strong leadership team once again, so that you experience the finest service and amenities at your club. We have great leaders already in our golf shop, course maintenance, and culinary operations. I will be working to fill in the openings in food and beverage and membership to accomplish these goals. Although COVID has impacted many of the events and activities we could do early this summer, I anticipate that we will operate in a similar fashion in our new “normal”. That means providing you and your family with experiences throughout the entire year that you cannot get anywhere else. We will

Please look through all of the fun events coming up in September, and be sure to RSVP if you plan on attending. The season is a long way from over, and we hope to see you often, at YOUR club!

September Hours With the later sunrise and earlier sunsets, our golf course and clubhouse opening times move up just a bit during the month of September. Starting Tuesday, September 8th, the golf course tee sheet begins at 9 AM during the week (noon on Mondays), and 8 AM on weekends. The clubhouse and golf shop will open at 8:30 AM during the week (11:30 AM Mondays), and 7:30 AM on weekends. These hours will remain in effect until September 29th.

Hello everyone! Happy September! I hope everyone had a great month of August with all of the sunshine! I am hoping that September will be the same way!

I hope everyone has a great month staying healthy! One exciting message I want to share is that I got married this past month. Now when you see me around the club, I am the new Mrs. Heather Nelson!

We are still in our busy season of weddings. We have weddings all the way up until November for the rest of the year, which is very exciting! I am excited for the upcoming fall weddings; fall is one of my favorite seasons and I always think that fall weddings are so beautiful! I am excited to see all of the fall wedding decorations. One of the best parts of my position is seeing how each couple brings their wedding to life. Since fall is approaching, that does mean we are closer to the winter season and that means holiday parties! We had a ton of fun gatherings last year and we are excited for that again this winter! If you are interested in hosting a holiday celebration out here at the club for a company, or even just a family and friends holiday gathering, please reach out to me at heather@oxbowcc.com. I would love to help organize a great holiday celebration!

NEWS FROM THE FAIRWAY 1975

As I wrote last month, we have begun to eradicate the bentgrass infestation in the tee boxes. We have seen mixed results. Some of the tees have the majority of the contaminants eliminated and others we will continue to apply herbicides to achieve our desired grass species. This contamination occurred during construction by wind moving the seed or improper cleaning of the seeders by the contractor. Either way, our goal is achieve a 100% bluegrass stand for the tees as specified. Staffing is always a concern this time of the year when school resumes. We have to make some changes to our daily maintenance routines. We will no longer be walk mowing greens during the week and bunker raking will be done less frequently. Please take this into consideration when playing, if you see some foot prints that are not yours, please rake them also. July and August have been very busy on the golf course, which has led to many ball marks on the greens. I am asking for your assistance in fixing your mark PLUS ONE

MORE on the greens. The recovery time for a ball mark that is properly repaired will be cut in half if done immediately. Remember to gently pry in from the outside with the mark. Do not lift up, as this will tear the crown of the plant and the roots out. Tap down with a putter to smooth the surface. Our friendly staff in the Golf Shop has repair tools, if needed. The City of Oxbow and the Country Club will be working together to improve the compost/ employee parking area by the Maintenance Facility. A new fence will be installed along the north and east edge of the parking area to screen the view from the golf course and protect the cars from errant shots. A parking pad will be poured for the vehicles. The dumpster area pad will be re-oriented for the contractor to load and unload the containers without driving on private property. GOLF SHOP UPDATE 1975

We have had a busy year so far and we hope it continues into September. September typically finds the golf course in the best shape of the year. So, come on out and enjoy the course while the weather is still good. We have a busy schedule in September for you. On Labor Day, we have Patriot Golf Day. This is a two-person better ball event that is played using tee times. You can play any time of the day. $5 of each entry fee will be sent to the Fold of Honor, which is a charity that gives scholarships to soldiers who have served in war or their children, if the parent died while serving. It is a worthy cause started by a PGA Member and a Captain in the US Army. On the 9th, we host our Ladies’ Invitational, which is an open tournament that any female can play in. On the 11th, we have our Couples’ Glow Ball Tournament. It is always well attended and ends the Couples’ Year with a bang! On the 12th, we have our Hot Ball Tournament, which is a three-person scramble with a Hot Ball score thrown in as well. We have a new 2nd Assistant Golf Professional in the Golf Shop. His name is Ben Walker. Ben moved here from Idaho, where he and his family lived. He and his wife are teachers in the West

Fargo school district. He will be working a few shifts a week in the fall and spring. In the summer, he will be full time and will take over our Junior Golf Programming as well as other duties. Stop by the Golf Shop and see when he is working next. Let’s give him a big Oxbow welcome! If you could use your Golf Shop credit this fall, it would really help us when it comes to buying for the 2021 season. We try to do our best to bring in the best lines and newest trends each year. A part of that is making sure we turn over our inventory each year. Please assist us in turning the inventory over by using your Golf Shop merchandise credit.

KITCHEN UPDATE 1975

Hello, Oxbow!! I can hardly believe it is already September. It seems like it was just a few weeks ago that we were doing curbside take-out during the shutdown. Yet, here we are, making preparations to shut the pool down, and watching staff head off to college. Hopefully, we’ll have a lot of returners next Spring! September 1st marks my four year anniversary with Oxbow. I have worked/ owned a few different restaurants in my career. I can honestly say that Oxbow has by far been the best part of my career. This is all due to the membership. It is not just another Executive Chef job. It is soooo much more than that. Oxbow has given me the chance to be part of people’s lives - from planning birthday parties, weddings, and unfortunately, even life celebrations. I have gotten to know so many of you personally, and you do not get that anywhere else. I have seen your kids get older. I have seen them graduate from high school and move on to college. So, a big THANK YOU to everyone for making me a part of your lives. 10

News in the culinary department was rather bleak a week ago. Last month, I told you all that I had filled the Sous Chef position. I had high hopes, only to be disappointed when the person I hired left with no notice. Thankfully, we have continued to meet demand without him. With that, I am excited to announce that I have decided to promote from within our team. Tim Ramsdell started with us three and a half years ago. Prior to working at Oxbow, his only cooking background was making donuts at Sandy’s Donuts. He barely knew how to hold a knife! Tim has been a very quick learner. He is mostly responsible for the soups that everyone loves so much. He is a very driven individual with a passion for cooking. Prior to Oxbow and Sandy’s Donuts, he was with the United States Army. He spent time in Afghanistan and served our country well. I am going to be pushing Tim to come out of the kitchen and meet all of you. If you get the chance to meet him, thank him for his service and his yummy soups.

RECIPE OF THE MONTH 1975

SCOTT MOTSCHENBACHER EXECUTIVE CHEF

Beer Cheese Soup For this month’s recipe, I want to share our Beer Cheese Soup. This has been a huge hit in our list of soups. With fall fast approaching, soup will be on everyone’s radar. INGREDIENTS  1/2 pound butter (1stick)  3 tablespoons all purpose flour  2 tablespoons olive oil  1 carrot small, diced  1 rib celery, diced  1/2 yellow onion, diced  2 cans of skunky beer (Old Mill, Hamms, Budweiser)

    

1 quart heavy whipping cream 1 cup sharp cheddar cheese ½ cup shredded parmesan cheese ¼ cup bleu cheese 5 dashes hot sauce (tabasco)

PROCEDURE In a large stock pot, add your butter and olive oil on medium-high heat. Melt that down and add your carrots, celery, and onions. Sauté them for about 5-7 minutes. Add your flour and cook for 35 minutes, constantly stirring. Add your beer and cream. Drop your heat to medium. Once it starts to simmer, add your cheeses. You will want to constantly whisk until the cheese is incorporated. Garnish with croutons, popcorn, and a spoon. Enjoy! 11
