FROM THE GENERAL MANAGER It’s hard to believe February is here, and we are probably around close to two months from teeing it up again. We had a great January at the club, and a thank you to all who came out to join us for member events and dining. We were able to get a lot of cleaning and preventative maintenance tasks done during the first part of the month as well, I hope some have noticed at least the things you can see in member areas. February again offers many opportunities to experience some fun and unique events, only offered to our members. More details are inside this edition of your newsletter. Many of our events fill up quickly, so please ensure you are signing up for events that have limited capacity! Food & Beverage Minimums As we sent out in December, please note that food and beverage minimums for January, February, and March are quarterly, not monthly. With the club closure in the beginning of January, as well as the fun of winter weather this time of year, we hope this makes it easier for you to enjoy dining and events at Oxbow, without having to come out once per month if it doesn’t fit in to your family schedule. With a full calendar of events, as well as great food and beverage, we hope that you and your family find many ways to enjoy coming out to the club. However, we also know that schedules can be hectic. Please contact me if you have any questions about this. Membership Although we are nearing the end of January, we are already seeing numerous membership inquires. In 2021, we saw a net gain in membership of 72 member families. Of those, 61 were golf memberships, 11 social/dining memberships. We do anticipate another year of strong growth in our membership, to the point where we are discussing our membership capacity. Above all, we want to ensure our members are able to utilize their course, pool, member dining and events, and clubhouse facilities with relative ease, that’s why you join a club! It’s all about finding the balance. Some clubs take on too many memberships, which can look good financially in the short term, but can and almost always does end up costing a club in the long term due to member frustration at not being able to use their amenities as often, or when they want. At that point, the value of being a member erodes, and many end up leaving. 4

MANAGER'S MESSAGE Sedi Halvorson General Manager sedi@oxbowcc.com In our club’s history, we have had the opposite problem. While our members were able to use the amenities on their schedule (on certain days), we did not have enough overall members to cover the overhead. This led us to having many outside golf events, and other non-member activities to supplement the shortage. While this helped bridge the gap, it also devalued membership, as the usage of facilities and amenities by non-member activities left little time for the member experience. This in turn made it difficult to grow membership, and was an ever-repeating circle.Again, it is a balance. Having the correct number of member families allows all to enjoy the club has to offer, and allows us to keep enhancing the member experience. In closing, please keep recruiting friends and colleagues to join us here at Oxbow. While Aja and I always work to bring in new members to your club, there is nothing like being invited by a friend or colleague. As a membership and staff, working together, we can get to where we want to be, and we should all be excited about that! Lastly, I want to say THANK YOU to Kyle Millar, our Clubhouse Manager. Kyle will be leaving us at the end of the month to pursue another opportunity.Kyle was here for a little under two years, and worked extremely hard for you. I wish him nothing but the best moving forward, and he will be missed by all of us here. I hope everyone has a wonderful February, and that some warmer weather is (eventually) on the way.I hope to see you soon, at your club! Sedi

CLUBHOUSE UPDATE Kyle Millar Clubhouse Manager kyle@oxbowcc.com

I am sure word has spread through most of the club, but for those of you who didn’t know, my time with Oxbow CC is coming to an end. I have accepted a position with Halberstadt’s in the West Acres Mall. Life has a funny way of changing your priorities at odd times in your life and apparently this is one of my times. Working at a club is so different from any restaurant I have every been at. The members here aren’t just regulars that you see week to week at a restaurant, they are family. I was only here for a year and five months, but I have learned so much about everyone. I will miss the excitement that comes with a busy Friday night, the craziness and planning of the member events like Battle, Glow Ball, and Stag, but most of all I will miss the staff. The management staff is amazing! Everyone pulls together and helps where they can even if it’s not their area of expertise. There weren’t many events that didn’t have someone extra from the management team lending an extra hand or a few hours of their own time to make sure the events were successful. I will definitely miss the kitchen staff. While they can be rough around the edges and quick with a joke at my expense, I can always count on them when the going gets tough. I will miss our daily banter. And that takes me to the front of house staff. It has been my utmost pleasure to work side by side with these individuals. No two are exactly the same, but that is what makes them great. No one at Oxbow CC wants a robot waiting on their tables, which is fantastic because we have so many different personalities. I have done my best to teach and pass on my knowledge when it comes to serving, and I think you can see that when you come out for one of the best meals in town. Continue to support this amazing staff as they do their best to make your club what it is. This club has become a part of me and will forever have a place in my heart. All the best, Kyle 6

MEMBERSHIP & MARKETING UPDATE Aja Nyquist Director of Membership & Marketing aja@oxbowcc.com

Happy February! I don't know about you but I am glad that January is in the rear view mirror. Winter is my absolute least favorite season so I am hoping February flies by and brings us warmer temps and less snow than January. Member Event Survey I want to say a big thank you to everyone who filled out the member event survey for 2021! It truly does help us with our programming for 2022. We as a staff and with the board have went through the results and are already starting to implement some of the suggestions. Some key takeaways from the survey include: Most of you enjoyed the 2021 added events of music on the patio, tailgating, 5k and comedy nights. We will continue and expand these events in 2022. There is a want for more pre-teen/teen events. This is one that I would love to ask for your suggestions on. If you have any ideas as to events your kids who are of this age would enjoy please email me at aja@oxbowcc.com. I would love to be able to plan more events for this age range! There is a want for a big ladies night event like the men's STAG event. I have already begun work developing a committee for this and this is something that we will be doing in May. There are some communication things I will work on including more timely delivery of the newsletter, more information on who each event is for, registration for events open earlier, etc. Upcoming Events I want to take a little time to point out some events coming up now-April that you are definitely going to want to put in your calendar and be sure to get signed up! Please see the next page for all the events we currently have on the schedule for February- April, keep in mind that some events may change and we may add more too! I just want to make sure you get some exciting dates on your calendar including our member socials, comedy night, dueling pianos, daddy/daughter dance, game show night and more! We are excited to bring you new events as well as some fan favorites! So please check out the following page so you can put the dates in your calendar for the events you want to attend.

As always if you have any ideas for new events you would like or if you have anyone you would like me to reach out to in regards to membership simply email me at aja@oxbowcc.com! -Aja 8

ACCOUNTANT'S AVENUE Stacey Fett Controller accounting@oxbowcc.com

Wow, it is February already! Hope you have all kept warm in these frigid temps we have been having. Below are the most common questions I receive during the month. How do I see my most recent charges? To keep an eye on your account, you can go to the app and click on current statement. This will take you to your account. On the top left, there is a ‘recent’ tab, this will show you all of your recent charges. If there are any discrepancies, please let me know and we can get it fixed. If you do not have the app or do not know how to run it, please let me know, I can look up your recent spending or can help you get acquainted with the app. When will I receive my monthly statement? Statements are processed by the 5th of the month. If you are not receiving your statement, please let me know so we can get your email and/or address updated in the system. When is payment due? Can I set up auto-pay? Payment for your account is due by the end of the month. If you are not already set up on auto-pay, please contact me for an ACH or Credit Card authorization form. Please note, there is a 3% fee to use your credit card. Auto-pay is completed on the 10th of the month. If the 10th falls on a weekend, I will process auto-pay on the next business day. Stay warm and enjoy your club! -Stacey

CATERING MANAGER UPDATE Theresa Keimig Catering Manager theresa@oxbowcc.com

Hello, I’d like to share a few facts about the month of February. Did you know that "February" is one of the most misspelled words in the English language? February is mostly recognized for Valentine’s Day, flowers, and depending on where you are, being incredibly cold! Even though it’s just another month, there’s a lot of history behind this month of romance and love! February fluctuates between having 28 and 29 days per year. The 29th day only occurs every 4 years during leap years. The length of February was finalized when Julius Caesar remade the Roman calendar and assigned the month 28 days and 29 days. In 713 B.C., February was officially added to the Roman calendar. If you were born in February, your birthstone is an amethyst and your flower is a primrose. Over time, the length of February kept changing. At one point, it had as little as 23 days. In the Northern Hemisphere, February is the third month of winter. Meanwhile, in the Southern Hemisphere, February is the last month of summer. Between the North and South Hemispheres, February is the equivalent of August. February was named after a purification ritual which was like an early Roman spring-cleaning festival. In Welsh, February is sometimes known as “y mis bach” which means “little month.” The Saxons called February “Sol-monath” which means “cake month” because they would offer cakes to the gods during February. Suzy you might be busy baking😊 February is the only month where it’s possible to go the entire month without having a full moon. February has been Black History Month for over 40 years. The odds of being born on February 29th are about 1 in 1,461. Those born on a leap day can be called a “leaper” or “leapling.” February, March and November always start on the same day of the week unless it is a leap year. It was in February 1964 when The Beatles made their first American television appearance on the “Ed Sullivan Show.” Over 73 million Americans watched!

So now you know, February isn’t all about Valentine’s Day. It’s a month to prepare for spring: bringing the promise of longer days and an early golf season to North Dakota. Theresa 14

CHEF'S CORNER Scott Motschenbacher Executive Chef chef@oxbowcc.com

Hello Oxbow! I hope everyone has had a wonderful new year so far. January flew by! That means we are one month closer to summer! In January we launched the new menu and it seems to be a hit so far. This month we are going to start running some fun specials. I have finally been able to track down some tomahawk steaks. I am going to try and run those every Thursday. If you had the chance to come out last year for one, you know how big of a show they are. I have also found a good source for fresh fish that will be sent overnight to us from Honolulu HI. Keep an eye out for weekly fish specials! I can finally say that I am out of the woods with staffing shortages! It was a long few months with my skeleton crew. But my guys that were here performed magnificently! Our crew now has 2 interns from the culinary school in Wahpeton. I also picked up a couple more people that have great resumes. Now I can get back to what matters. That is being a chef, finding new ingredients, and having more one on one time with the membership. For this month’s recipe I have 2 recipes. These are both recipes that have been requested by multiple people. Tomato basil soup and chicken dumpling soup.

16

TOMATO BASIL SOUP Ingredients: 2 tablespoons butter 2 tablespoons olive oil 1 yellow onion diced 2 tablespoons fresh chopped garlic (I like to chop my own. The stuff in the jars leaves a bad taste IMO) 1 sprig fresh thyme 2 sprigs fresh parsley 10-12 basil leaves ½ cup red wine 1 28oz can crushed tomatoes 4oz heavy whipping cream 2 tablespoons honey Procedure: In a large stock pot on medium-high heat add your butter and olive oil. Heat until butter is melted and add your onion and garlic. Cook until soft then add your fresh herbs. Continue to cook for 2-3 minutes. De-glaze with red wine and cook for another 2-3 minutes. Now add your crushed tomatoes, heavy whipping cream, and honey. Remove from heat and blend with either a blender or immersion blender. Place soup back on heat and bring to a simmer. Enjoy with a spoon and a grilled cheese!

17

CHICKEN DUMPLING SOUP Ingredients for dumplings:

Procedure for dumplings:

1-2 large baking potatoes

IBake your potatoes. When they come out of the oven remove the skins (potatoes

3 eggs

will be very hot. Wear two pairs of gloves on each hand. I will keep a bowl of ice

1-2 cups of flour

water close to cool my hands quick). Now you will need to either rice your potatoes

1 teaspoon fresh dill chopped

or put them through a cheese grater. Place the processed potatoes into a large

1 teaspoon fresh thyme chopped

mixing bowl and add herbs and spices. I put a small portion of my flour onto the

1 teaspoon granulated garlic

potatoes next. Now crack your eggs. Use 2 egg yolks and 1 whole egg. Add more

1 teaspoon onion powder

flour and start mixing by hand. There is no perfect measurement I can give you for the flour. What you want is the consistency of play-do. Remove the mixture from the bowl and roll it out into a long snake. Cut the snake into ½ inch pieces. That is

Ingredients for broth:

the recipe for the dumplings.

2 tablespoons olive oil 1 yellow onion small dice

Procedure for broth:

1 rib celery small dice

In a large stock pot on medium-high heat add butter and olive oil. Once heated add

1 large carrot small dice

your carrot, celery, onion, and garlic. Cook until soft then add the fresh herbs and

1 tablespoon chopped garlic

cook for 2-3 minutes. Now add your chicken stock and bring to a boil. Once it is

1 sprig fresh sage chopped

boiling you can add the dumplings. When the dumplings are floating they are done.

1 sprig fresh thyme chopped

Turn your heat down to a simmer and add your chicken. Simmer for 5 minutes to

2 sprigs parsley chopped

heat the chicken through. Enjoy!

½ gallon chicken stock 1 roasted chicken (meat pulled)

FOOD & BEVERAGE MANAGER UPDATE Logan Winters-Helmbrecht Food and Beverage Manager logan@oxbowcc.com

Hello everyone, I hope everyone has been keeping warm with all this cold, snow, and wind we’ve been getting, gotta love these North Dakota winters! Once we get through this cold bit, it won’t be long and Spring will be upon us! Looking back over the past month, I don’t know if you’ve noticed that nice new clean sparkle the club has! Myself, and the rest of the team were hard at work cleaning, polishing, and organizing! We appreciate your patience while we were shut down. We were all looking forward to seeing all of you for the reopen. We were especially excited for the roll out of our new menu, and updated wine list! Scott and his team have worked very hard, and put a lot of thought into what to add to the new dinner and lunch menus, if you haven’t had the chance to check it out, come on in and grab a table. Ask to see our wine list and check out some of the new wines we’ve brought in. I am personally excited about the roll out of the new menus, I’ve received a couple questions asking what my favorite thing on the new menu is, and I would have to say the Meatloaf Entre! If you haven’t had the chance to check it out the menu, it is online and on the mobile app! Stay tuned to the Facebook Member Page, as I will continue to keep posting the daily specials, family meals, fresh pasta, and the soup of the day. I hope everyone is having a good winter, and is looking forward to spring! I look forward to seeing you enjoy your club! Cheers! -Logan

GOLF SHOP UPDATE Corey Herlickson Head Golf Professional corey@oxbowcc.com

With the cold weather we have had all winter we hope that you all have either taken a trip south or have one planned so you can warm up. Don’t forget that our TrackMan Simulator is a great place to get the rust of before you hop on your flight! Most members have been using the TrackMan for hitting balls on the range and playing on the golf course. Most of you are not aware that it has several other activities you can utilize it for in order to improve you game over the winter. The first option is the TrackMan Combine. It is a skills competition that golfers all over the world play against one another based on your handicap. At the end of the yearly competition, they give away prizes for those who perform well! The second resource is a practice regiment were we put together yadrages based on areas that you want to improve. One that has been very successful is a short game practice for shots 20-60 yards to hone in your feel. The third option is a target range that allows you to hit a greens from various distances you can pick on your own. The last option is a few games such as Drive It!, Closest to the Pin, Capture the Flag, etc. Next time you come in give them a try. The resources for your trip are our partnership with ClubCorp, Thompson Golf Group and OpenRounds. We know we sound like a broken record about these, but we want to make sure you take full advantage of the benefits your membership offers you while you are on vacation. To review, the ClubCorp partnership allows you to play their golf courses are a reduced fee based. You can get the standard rate reduction just for being an Oxbow member and your get an even greater reduction by joining the ClubCorp XLife Benefits Membership. The Thompson Golf Group is a group based out of Alexandria that is offering discounted rated to our membership to drive traffic to their golf course in Phoenix. OpenRounds is an organization that partners with private courses across the US to allow access to other private club members. We have sent several emails about both so check your email for details on both or call the golf shop for more details. 20

GOLF SHOP UPDATE We are in the process of putting together our golf guide, which will inform you of all of the tournaments and programming we have planned for the golf season. This is something we will email out multiple times for you to print out or keep in an email folder so you can refer to it whenever you wish to review. Our plan is to have it ready and distributed on March 1st. We have had many inquires as to the dates of our biggest golf tournaments. We will add them to the Golf Shop Weekly Update in early February. If you haven’t checked out the update, it has pertinent information about events, sales, etc. so check it out each week because we add new information each week. We will continue to have those tournament dates remain on the update until the beginning of April. By then we hope that all of you will have reviewed our golf guide and event guide for the summer, which will then be your reference for golf tournaments. Be safe in your travels and have fun in the sun!!! -Corey

NEWS FROM THE FAIRWAY David Wood Superintendent david@oxbowcc.com

A quick update as to what is happening in the Grounds Department. Our main focus in February is sharpening all the mowers and making necessary repairs to keep everything running smoothly in the summer months. Oxbow’s Maintenance Mechanic, Bryce Fenske, is concentrating on the long-term care of the mowers and carts. This would include oil changes, greasing bearings, hydraulic issues and all safety equipment on the machines. Not including the golf carts, Bryce will service over 40 mowers and utility vehicles Jesse Lunde, Assistant Superintendent, is responsible for cleaning and sharpening all the green, tee and fairway reel mowers. There are over 80 cutting reels and bed knives that are disassembled, sharpened and height of cut set, before the mower is ready for use. When done properly the mower will remain sharp throughout the upcoming golf season. This year Oxbow has purchased a new reel grinder for sharpening the cutting reels. This is an investment for both the equipment quality of cut and employee safety. The new grinder has a built-in vacuum system to control dust and enclosed to reduce noise. The grinder is replacing a model purchased in 2001. With the fair amount of snow on the ground I would like to remind everyone that the use of snowmobiles and atv’s is prohibited on the golf course. Exploring the original golf holes in the winter is an enjoyable walk for a great workout. The peacefulness of this secluded area and the chance to see wildlife is very relaxing. See you on the course. David Wood
