Hello and Happy New Year! In my first article, I just want to tell you all how excited I am to be a member of the Oxbow Country Club team! I am thrilled to have the opportunity to help guide this club through the many changes that will be taking place over the next few years and beyond. It is truly an honor to join such a great team here at the club. I look forward to meeting all of you that I do not know in the near future. I want to thank all of you who have been kind enough to send welcome messages and congratulations over the past couple of weeks. During the next few weeks, I will be focusing on getting up to speed on the many aspects of our golf course and clubhouse changes, getting to know all of the teammates here at the Club, and learning as much as I possibly can. Oxbow will be going through many great changes, as well as many challenges associated with those changes in the coming years. The great part about this project is we have so many members who are active in shaping the future of Oxbow CC through our clubhouse committees. Please let me know if you are interested in being a part of one of the three committees. The committees are facilities planning, interiors, and construction. In closing, I want to thank my predecessor and friend Joel Livingood for the amazing job he did here at Oxbow in his three years, and for his assistance during this transition. I also want to thank Mike Reek for his work as interim GM over the past month and half, as well as his assistance in the future. I also want to thank the Board of Directors for this opportunity to serve all of you at YOUR club.

Happy 2015, everyone! Though the ground has frozen and temperatures are dipping below zero, we are still very busy at Oxbow. Planning for the 2015 summer season is underway...get ready for another exciting year ahead! Here are a couple of reminders for the off-season: Remember that you are responsible for a $50/month food and beverage minimum. I encourage you to attend one of our events in order to achieve this amount! We put on 2-3 events each month during the winter. They can be a great way to spend your minimum, as well as enjoy a fun outing at your club! During the off-season, the restaurant is open limited hours: Thursday from 4 PM - 9 PM, Friday from 4 PM - 9 PM, Saturday from 11 AM - 9 PM, and Sunday from 11 AM - 8 PM. Plan ahead to come out and try selections from our delicious winter menu, and enjoy the fireplace and winter scenery!

December was a great month! Thanks to everyone who came out for Brunch With Santa--it was a great day. Keep your eyes open for the great things we have in store in the upcoming months!

Asparagus Base (1 pound asparagus and 3 quarts water: boiled, pureed, and strained) Chopped Onion

Ground Black Pepper

Cream

Sour Cream

Fresh Lemon Juice

Pinch
Nutmeg

Cayenne
1. In a large saucepan, combine asparagus, chopped onion, and chicken stock. Cover and bring to a boil over high heat. Reduce heat and simmer, about 12 minutes. 2. In the same saucepan, melt the butter over mediumlow heat. Stir in the flour, salt, and pepper. Cook, stirring constantly, for two minutes. Stir in the asparagus puree and the cream. 3. Put the sour cream in a small bowl and stir in a ladleful of hot soup. Add the sour cream mixture and the lemon juice to the soup. Stir while heating the soup to serving temperature, but don’t allow it to boil.
