FROM THE GENERAL MANAGER I hope everyone had a wonderful Christmas and a happy New Year! It was an extremely busy month here at your club, culminating with an extremely fun New Years Eve night! As we look forward to 2022, we have a lot of great things coming up in January, and the first quarter of the new year. Club Closure in January As we did last year, we will once again close the club from Monday, January 3rd through Thursday, January 13th for deep cleaning and preventative maintenance tasks. We keep this time frame fairly short, but we have a lot to accomplish during this week and a half. Painting, carpet and tile cleaning, all kitchen equipment pulled and cleaned, and much more. You may not see all the differences when we re-open, but much of what we do is to extend the life of the assets of the club, so that we do not have to spend capital dollars earlier than necessary. And of course, anyone that wants to join us is always welcome… 😊 Food and Beverage Minimums Due to the closing of the club for a couple of weeks, we have decided to roll minimums into one quarterly amount of $270, instead of the monthly $90. Hopefully this makes it easier on you to decide when to come to the club, especially with the sometimes-crazy winter weather. Please know that we will still be having great events and activities for everyone each month, and I would encourage everyone to not wait until the last week of March to come out to the club. I am particularly excited for our monthly member socials, which start in January. More info to come later in the month. Ice Rink and Cross-Country Skiing It has been great to see skaters out in December, enjoying the rink! David and his team maintain this all winter long, and completed the flooding process a couple of weeks before Christmas. The rink is lit in the evening, and there are two hockey goals as well. Also, Zach Schnitzler is going to try grooming our cross-country trails again this year, something that has been difficult to do the last few winters. We hope this is ready to go shortly after the new year. We will send out a notification when it is ready. Thank you Zach for volunteering to do this! 4

MANAGER'S MESSAGE Sedi Halvorson General Manager sedi@oxbowcc.com COVID Lastly, although I hate to keep talking about this, COVID has started to accelerate throughout the country again, which is not a surprise in the winter. Please be courteous to other members, as well as the team here if you have any possible symptoms or exposure, please stay home until you are able to get tested. I can speak from personal experience, as I tested positive on December 29th. We rely on many great associates each day to open up your club, and we want to make sure we can do that without interruption. It's cold outside now, but it will start warming up soon! We are going to do some cleaning, and we will see you on the 14th! Sedi

CLUBHOUSE UPDATE Kyle Millar Clubhouse Manager kyle@oxbowcc.com

Happy New Year everyone! I hope you have a wonderful time over the holidays filled with family and fun. I know that I thoroughly enjoyed myself this Christmas. For the first time in years I got to just relax and enjoy my time with my family. It was great! We enjoyed some fantastic food and a few excellent bottles of wine. This month was an extremely busy one for the club. We hosted a ton of Christmas parties, a few fun family events, a December wedding, Stag, Santa Brunch, and of course New Years Eve. Each week we had at least two Christmas parties, it was a lot of work but tons of fun! The Frozen Frostival was a great family event this last month! Anna, Elsa, and Olaf were all in attendance to help the kids decorate cookies and play fun games. We also snuck in a wedding at the beginning of December too. Thankfully it was a smaller wedding because we had to flip the entire event center that evening for Stag the following night. The staff put in a lot of long hours that weekend. Then halfway through the month we hosted our Santa Brunch. Santa and Mrs. Claus made the long journey from the North Pole to join us and take some pictures with all the families. As always, the food on the buffet was incredible and the timing for all the reservations couldn’t have been better. We finished the year off with our New Years Eve celebration. The kids had all of the ballroom to themselves, and as usual got pretty crazy with all the fun games and activities that Aja set up for them. If you haven’t already, make sure to thank Aja and Theresa for watching your kids that night, 34 kids can be quite a handful. For everyone else that evening, Chef and his crew had some amazing specials to satisfy anyone’s palate! The drinks were flowing that evening, I should know, I spent most of the evening behind the bar helping barback. Thankful it started to quiet down around 9:30 and I was able to make it home before midnight for my New Years kiss. I hope you all got to share yours with someone special too. Looking ahead to January, we have a couple things to look forwards to. First, we will be starting the new Winter menu once we open the club back up on the 14th. I know you have all been waiting for this to come out, and you will definitely be rewarded for your patients. Some old favorites and some new exciting dishes are coming your way. The last item to look forwards to is our new wine list! Once again Sedi and myself have been hunting for some great to wines to add to our already fantastic list and I believe that we have once again done just that. Make sure to inquire about the new offerings once we open. 6

CATERING MANAGER UPDATE Theresa Keimig Catering Manager theresa@oxbowcc.com

Happy New Year!! Did the holiday season get away from you? Don’t worry if you still need to make plans for your office or family gatherings, January is also a great time for a party and it’s very common for those events to extend into the new year. I would love to have the opportunity to plan your events at Oxbow. During the holiday season we also see a lot of engagements, we are currently booking into 2023 (I know, sounds crazy right?) Please let me know if you have any events that we need to save a date for. As we wrapped up the wedding season in the past few weeks, I had time to think about all the member events that I have been honored to be a part of, weddings, anniversaries, birthday parties, showers etc. I’m looking forward to an even busier season in 2022. Thank you for celebrating all of these special events at Oxbow. Happy New Year to you and your family!!

CHEF'S CORNER Scott Motschenbacher Executive Chef chef@oxbowcc.com

Hello Oxbow! Time sure does fly out here. It seems like we just shut the course down. Now we are already into 2022. You all may have noticed that the new dining menu has not yet come out. I apologize for that. I am not the kind of person to offer excuses very often. However, my biggest problem has been staffing. The Oxbow kitchen has been hit pretty hard with labor shortages. I am very happy to say that I am starting to see the light at the end of the tunnel. I have been able to hire 2 new people that have some pretty great experience. We anticipate having the new menu ready for you when we open up January 14th. In the meantime, during the closure we will be tearing apart the kitchen and doing our annual deep clean of everything not only in the kitchen but in the entire clubouse. It is an undertaking but definitely worth it. I hope everyone had a great holiday season! At the club we did a record breaking 162 pies for Thanksgiving. That is a little over 30 more than last year. Let’s give it up to Suzy, Michael, Karolyn, Sarah, And Sam for making it all happen. We then went straight into Christmas season and were very busy with holiday parties and family gatherings. Thanks to everyone who came out for those and for those who joined us for our New Years Eve dinner. I am excited to unveil the new menu to everyone this month, until then stay warm!

RECIPE OF THE MONTH: COMPOUND BUTTER

For this month’s recipe I want to share our compound butter that is a steak topper on our current filet. Ingredients: 1lb unsalted butter 4 slices bacon (crispy) ¼ cup gorgonzola cheese crumbles ¼ cup horse radish 1 tablespoon fresh cracked black pepper 1 tablespoon fresh thyme leaves Procedure: Let your butter sit out at room temperature until soft. In a mixing bowl add all ingredients and mix. Don’t mix too aggressively you still want decent chunks of the gorgonzola in the mix. Take a large piece of plastic wrap and lay on a counter. Place the butter on the wrap in a large snake shape. Cove the butter with the wrap and twist the ends like a tootsie roll. Place in your refrigerator to harden up. Cut coins off as needed. It will last in your fridge for 2 weeks. Or you can freeze and it will last up to 2 months. Enjoy!

FOOD & BEVERAGE MANAGER UPDATE Logan Winters-Helmbrecht Food and Beverage Manager logan@oxbowcc.com

Hello everyone, for those of you who don’t know me, my name is Logan, and I am your new Food and Beverage Manager! I have been at Oxbow for a year and a half now, and loving every minute! I hail from the small town of Henning, in Minnesota, the gateway to lakes as we call it. After leaving my hometown, I attending college at MSTATE/MSUM. I have worked at country clubs for almost all of my adult life, some places you may even be familiar with. I got my start at Detroit Lakes Country Club, then off to Thumper Pond in Ottertail, and then Mendakota Country Club in Mendota Heights, and then I found myself here, at Oxbow! As I mentioned, I have been fortunate enough to have worked here for the last year and a half, getting to know the staff and all of the members, and I have to say I was welcomed with open arms, great opportunities, and a whole lot of fun! I hope everyone has had a great holiday season; this has always been my favorite time of year, spending time with loved ones, seeing all the holiday decorations, and spreading holiday cheer! Looking back over the month, all of us here at the club have been busy little elves! From Stag, to Santa Brunch, Christmas, New Years, and even a wedding! The first couple months of the arcade has been a big hit, whether you’re looking to shoot some hoops, play some one-on-one air hockey, get your own trophy buck, or all the coloring you can imagine, we have something for the whole family to enjoy, so if you haven’t checked it out, come on in! Make sure to keep an eye on the Facebook page, as I will be posting the specials, as well as the family meals on a weekly basis. I am very excited to serve you in my new role, and am very grateful for the opportunity. I hope everyone has had a great holiday season, after all it is the most wonderful time of the year! Can’t wait to see you, cheers! -Logan

GOLF SHOP UPDATE Corey Herlickson Head Golf Professional corey@oxbowcc.com

December ended with a chill in the air so let’s see if we can relive the golf season and dream of some warmer weather. We came into this 2021 off of a record number of rounds in 2020. I didn’t think that we would beat the record year we had in 2020 but somehow, we did. We tracked the rounds on a month-by-month basis and starting right away in April we were ahead. Every month thereafter was an increase over last year! Below are the numbers: Rounds of Golf thru 10/26/21 2020 – 14,617 2021 – 16,142 In November we began our TrackMan Cup in the simulator. This is a nine-hole round of golf played on one golf course and you have two weeks to play the event. The entry fee is $10.00 and is paid out in golf shop credit after the end of the two-week competition. At the end of the year, we take the top five golfers from the first half and the second half for the TrackMan Cup Playoffs. All you need to do is book a simulator tee time like normal and make the golf shop team aware that you are going to play in the TrackMan Cup. TrackMan Simulator Hours after as of New Year’s Day: Tuesday - Friday Saturday – Sunday

12:00 – 8:00 10:00 – 6:00

If you want to keep your game sharp through the winter don’t hesitate to contact the golf professionals to set up lessons!

GOLF SHOP UPDATE As many of you are aware, we had a really difficult time getting clubs, shafts, bags, etc. in 2021. We expect that to occur through most of 2022, therefore we have taken steps to alleviate some issues such as purchasing more bags for next year in the golf shop. Clubs we cannot control because we do a lot of custom fitting here at Oxbow. To help get ahead of things, we are suggesting you get fit as early as possible if you are looking at buying new equipment. This will ensure we have it in hand before the season begins. Once a month we will be hosting a fitting day. I will be on a Tuesday and we will advertise it to make you aware. The only thing that we do not have to fit you into is Taylormade and Callaway drivers, fairways and hybrids. Those will come closer to the new year. As many of you begin to travel to warmer weather for sunshine and golf, don’t forget we have partnerships with ClubCorp, OpenRounds and the Thompson Golf Group. These groups will help you get tee times across the country at their respective golf courses! See the Golf Shop Weekly Updates for more information! -Corey

NEWS FROM THE FAIRWAY David Wood Superintendent david@oxbowcc.com

Winter preparations of the golf course went as planned. Green covers and snow fences have been installed to prevent desiccation of the greens. Hopefully we will receive a covering of snow on the course to further insulate the turf for the winter. Just a reminder to keep snowmobiles and atv’s off the golf course this winter. We will again have the skating rink on the pond in front of the Pro Shop when the ice conditions are safe to support skaters. Lights will be installed and running from sunset to 10:00 p.m., the ice will be conditioned to smooth out the rough areas as needed. This time of the year we are still working on a few outdoor projects as weather conditions allow. We have started removing dead or dying trees from the left side of hole 5/old driving range. The dead material in the tops of the trees became a safety concern with the proximity to the cart path. These trees are mostly cottonwood trees and have reached their life expectancy. I hope you had a joyous Holiday Season. David Wood
