FROM THE GENERAL MANAGER Happy November! We made it to the final day in October for golf, which is fantastic! I hope everyone who wanted got their last Oxbow rounds in last week. Now we focus on ensuring the course is buttoned up correctly for the winter months. David and his team are out working on snow fence, final chemical and fertilizer applications, etc… so that our course comes to life as quickly as possible in the spring. In the meantime, we have much happening at your club in the coming months. Please check out all that is coming up in the following pages of the newsletter, as well as your October – April event guide. Winter Hours of Operation Starting last week, the club went to winter hours for the season. Please be aware that the schedule is as follows for the clubhouse and dining: Monday – Tuesday Member Dining closed; administration open 10AM to 4PM

clubhouse

Wednesday – Saturday: Member dining from 11AM to 9PM Sunday: Member dining from 10AM to 8PM, Brunch served from 10AM to 2PM

Corey sent out the simulator schedule in a separate email a couple weeks ago, and it is covered again in this newsletter. As a reminder, the golf shop is open throughout the off-season. Corey and Peggy have been receiving some great fall and winter apparel, as well as glassware, perfect for holiday gifts! Membership Although we are really never “done” with membership, typically at this point realize that most new members are going to join us in the spring of next year. With that, we still welcomed five new member families to Oxbow in October! Concerning overall membership, your club had its best year, most likely ever! Aja has some great information later in the newsletter regarding membership numbers and demographics that hopefully you find interesting. We are truly excited by the growth in our membership, and look forward to a full membership in 2022! Stag A reminder that our annual Oxbow Stag Party and Auction will be Friday, December 3rd. We are excited this year to be back on our normal date (the 2020 Stag was in March of 2021), and hope that all of our “guy” members join us for a fun night! 4

MANAGER'S MESSAGE Sedi Halvorson General Manager sedi@oxbowcc.com

As a reminder, guests are welcome, and each guest has a chance to be the lucky winner of an Oxbow membership for the 2022 year. The Stag committee and board of directors are finalizing what we are raising money for this year, and we will send out before the event. For new members to Oxbow, the Stag was the driving force behind our purchase of the Trackman, and the year following, the accompanying simulator. We use these funds to purchase things that add value to your membership at Oxbow, so if anyone has anything they would like to donate to the auction this year, we sincerely appreciate it! Please reach out to me at any time with questions or donation items. We hope to see you there! You can sign up on the website or mobile app any time. Thanksgiving The club will be closed on Thanksgiving Day, as normal. Suzy will be baking pies that whole week, so please ensure to get your pie orders in ASAP. Aja has created a link on our website where you can place your orders easily. We will be right back open again on the 26th, so stop up and join us to get out of the house, or if you need a break from shopping! More information can be found in the following pages of the newsletter, and as always, we will send out more details as we get closer to the holiday. Arcade We will once again have the arcade set up in the ballroom this off-season. Not everything will be fully set up when we open it up on November 3rd, so please have patience as more games and activities show up throughout the month. We are excited to offer this to members of all ages, and hope that some of our new additions this year give everyone opportunity to enjoy some fun! We are excited for a great off-season of fun at your club, and hope that you are as well. We have new menus coming out soon in member dining, and many more new events this winter. We hope to see you frequently over the next five months, at your club! Sedi

CLUBHOUSE UPDATE Kyle Millar Clubhouse Manager kyle@oxbowcc.com

Well, another terrific golf season has wrapped up. We held on for as long as we could and I don’t think the members could be happier! I know that the weather seems to be cooperating, almost begging us to get back out on the course, but this only helps us in the long run. The extra time David and his crew have to properly weatherize the course is what makes this the best course in the state. Your small sacrifice of a few days will have a large return with the conditions of the course. It has been a surprisingly busy October. From start to finish it seemed like we always had things going on. We started the month off with a bang! On Friday the 1st of October we had a kids night, which are always a little crazy, and then our Tailgating Event on Saturday morning. Tons of people showed up for the Tailgating Event! We had free drinks, great food, and inflatable games for the kids. It was a ton of fun and I think everyone had a great time! We were also able to have a few golf tourneys as well. Two non-member events early in the month and the Jack O’Lantern in the middle of the month. Of course, the middle of the month had our biggest event, Chef’s wedding! It was a beautiful wedding and went off without a hitch. Both the front of house and back of house staffs really came together to make sure it was a great day. We kept the ball rolling towards the end of the month, bringing in some very funny people for our Comedy Night. I was thinking that we would see about 50 members for this event, but by the night of the event we were close to 100. They definitely kept the members entertained that night. Then we finished off October with Oxboo. A lot of planning and hard work went into this production. Aja and myself were tasked with the construction of the haunted house. This was no easy task, we weren’t really sure what to do with it to be honest. Then we started putting some things together and the ideas just kept flowing. In the end we had a lot of fun putting it together, and once we saw how much the kids enjoyed it, we knew that we killed it! There were great snacks to be enjoyed compliments of Suzy and the rest of the back of house staff and a DJ that got everyone involved. It was a really fun afternoon. It was a very interesting and busy month, but I’m happy to say that my staff was excellent through it all though and I’m very thankful to each and every one of them. Here’s hoping for a fantastic November! 6

WEEKLY SPECIALS

MEMBERSHIP & MARKETING UPDATE Aja Nyquist Director of Membership & Marketing aja@oxbowcc.com

Wow, I can't believe it's already November, I am holding off hope that the dreaded "s" word will hold off for sometime. I am already missing the heat and humidity of summer! I don't complain all summer about the weather as I know that all my complaining will come with the cold and the "s" word. Let's hope I don't have to start complaining about either of those things until much later this year!

1) It's not available for private rental for parties. You are certainly able to have parties in the arcade, but just know we can't reserve it for your party only. 2) On Kids Nights the arcade will be closed for kids night participants only, so please keep that in mind. I will make sure I get notice out about this before our kids night events.

Membership Growth I want to first off say thank you so much to everyone who has referred new members to us this year! Since January we have signed up 89 new members and that is in large part to our member referrals! Make sure you take a look at the membership numbers on the next page as it gives great insight into our growth. As always, if you have someone you want us to reach out to please let me know! And remember that each new golf member referral will get you $500 in food & beverage credit or pro shop credit.

Holiday Vendor Show We have a lot of great events coming up in November including our holiday vendor show which will feature local crafters, artists and more.

Arcade The arcade is back this fall/winter. We are bringing back some of your favorite games along with some new ones, including skeeball! A couple things I want to note with the arcade:

I hope everyone is able to make it out for some events this November and I look forward to the holiday season, even if it does mean we are closer to the appearance of the "s" word. -Aja

We will also have the opportunity to try some wines and will be doing a presale for the holiday season. Chef will be showcasing some great holiday appetizers and fun is sure to be had. Tickets are $10 and you will automatically be entered into door prize drawings!

OCTOBER HAPPENINGS A LOOK BACK AT WHAT HAPPENED LAST MONTH

CATERING MANAGER UPDATE Theresa Keimig Catering Manager theresa@oxbowcc.com

Hello everyone! November is here and there is definitely a chill in the air, it won’t be long until we see some flurries in the air. October has been amazing at Oxbow; we hosted our final wedding of the season and were honored for it to be for our very own Chef Scott and his lovely bride Erica. It was a beautiful day for the couple and their guests. Congratulations to both Scott and Erica!! Now that we’re moving into the winter months it’s time to start thinking about all the great reasons to get together with family and friends. Should it be a small group of friends for cocktails in the bar or a larger family group in family dining there’s always a good reason to get out of the house. Just think about all the great winter holidays to celebrate. Also don’t forget that the arcade is coming soon to the ballroom, fun for the children and adults alike. If you’re looking to book a larger party and prefer a more private setting we can accommodate your group in the other half of the ballroom, your guests will enjoy the winter views of the golf course while enjoying the culinary delights prepared by chef Scott. I hope everyone has a great November and the opportunity to enjoy the upcoming holidays with family and friends, take care!

CHEF'S CORNER Scott Motschenbacher Executive Chef chef@oxbowcc.com

Hello Oxbow! What a great golf season. I don’t think we have had that long of a season since I started in 2016. With golf season coming to an end that means new menu time is here! We recently had our house committee meeting to talk about what is going on the menu and what is coming off. We had one person mention that there are a lot of really good things coming off the menu. Yes, there are a few Oxbow favorites coming off the menu (they’ll be back in the spring) we also have a lot of Oxbow favorites coming back. Just a couple of those things include fried pickles, meatloaf, and the hot turkey. You will notice that our Lunch Box menu is getting bigger as well. I wanted to expand this in an effort to try and draw more people out for lunch. Who doesn’t like a pastrami sandwich and a lively round of skee ball?? This month my back might be up against the wall with staffing and food shortages. One of my main guys is going in for hip surgery in the middle of the month. Recovery can take a while with that kind of procedure. Another guy that has been with me for 5 years is moving into a different line of work. Being in winter hours helps a bit but, still leaves me short staffed. We are also experiencing more issues in the supply chain. You may or may not have noticed that our waffle fry isn’t the same. Our to-go boxes are different. Our plastic cups have been a little different. Our chicken strips are not the same. Some weeks we can get our regular products some we can’t find any of it. Unfortunately, what I have been hearing is this is going to continue through the holidays. Beef prices continue to climb along with everything else. If you’ve been grocery shopping lately you probably notice things are a bit more spendy. I will continue to do whatever I can to make sure we have everything stocked and at the best price possible without compromising quality.

RECIPE OF THE MONTH: TUNA TATAKI

For this month’s recipe I want to share our new tuna tataki appetizer. Ingredients:

For the sauce:

For the garnish:

1lb ahi tuna (cut into 1-inch-thick steaks)

1 cup soy sauce

½ red onion (sliced thin and put

1 cup sesame seeds

Juice of 2 limes

into ice water)

2 tablespoons black pepper

1 tablespoon chopped garlic

6 chives diced

1 tablespoon fresh grated ginger

1 avocado diced

1 teaspoon sesame oil

Procedure: Heat a sauté pan on high heat with 2 tablespoons of vegetable oil. Sprinkle sesame seeds and black pepper onto your tuna steaks. When the pan begins to smoke a little bit very carefully place your tuna steaks in. Cook for 2 minutes and flip (be very careful. Always flip away from yourself) cook for another minutes. Remove and rest for 35 minutes. In a mixing bowl add your soy sauce, lime juice, garlic, ginger, and sesame oil. Mix well. Slice your tuna as thin as possible and drizzle sauce over the top. Garnish with the onion, chives, and avocado. Enjoy with a chilled sake or Japanese beer!

NEWS FROM THE FAIRWAY David Wood Superintendent david@oxbowcc.com

With the season coming to a close some of our most important work has happened and is still happening this time of the year. Back in September we began prepping the course for the upcoming dormancy by applying an additional fertilizer to the heavy traffic areas. Our goal with this fertilizer application is to assist in the recovery of any thin areas and build up the plants root system for the winter months. In October, we reduced our mowing frequency and raised the height of cut to better protect the crown of the grass plants during the winter. The end of October and start of November we began monitoring soil moisture levels before the ground freezes. The areas of most concern are greens and tees since they are grown on a sand rootzone mix. Plant hydration is a worry during the winter months since the irrigation system has been purged. Plant protectants have been applied to all the greens, tees and fairways to protect against snow mold infection that can cause plant mortality. This fall our weather conditions have been favorable in that the plants are transitioning into dormancy before the first snow cover. Mold infections can be more severe with an activity growing plant under snow. A heavy application of sand will be applied to the greens to help insulate the crown of the plant prior to the greens cover being installed. The goal is to have all this completed before the ground freezes. Then we will install snow fencing around greens and some sand bunkers to help capture some snow for additional winter cover on the greens and bunkers. Thank you to all the volunteers that came in October to help with a few miscellaneous maintenance tasks. Eighteen people showed up and helped with divot filling, sprinkler edging and trimming the greens liners. I believe this is the fourth year we have done it and hope to see this annual get together continue. See you on the course. David Wood
