The golf BRITTON MATTSON season isn’t over; keep those clubs handy and take advantage of all the beauty fall golf provides! We are celJOE TALLEY ebrating National Golf Day Saturday, October 4th with half-price guest fees, cart fees, and 16 oz. beers. BRITTANY BOEDDEKER
As many of you have heard, we are saying goodbye to three talented members of our food and beverage team this month. Greta Zietz, Jayme Sorenson, and Brittany Boeddeker are starting the next chapter in their lives with new jobs. I want to thank each of them for their hard work and dedication to our club. Brittany was the first person I hired when I returned to Oxbow as the general manager. She has been a key person in helping us build the club I envisioned and she will be missed by our leadership team. Although I am sad to say goodbye, I am proud of what they have accomplished and look forward to watching their success in the future.
Changes such as these are not uncommon in the hospitality industry. I have spent a lot of time recently evaluating our organizational chart and the direction our club is going in the future. It is important we are prepared to handle turnover like this, as well as increase the outside event and banquet business, AND handle the upcoming golf course and clubhouse construction projects without impacting the service we provide to you all as members. I have begun a regional search for an Asst. General Manager/Director of Food & Beverage and I look forward to what this expanded position will bring to our club.

ALISON MOLONY Director of Member Engagement & Events I am thrilled to announce the addition of three new events to the Oxbow calendar: The Oxbow Halloween Bash, the OxBOO Family Halloween Party, and the Fall Ladies’ Night Out! Our Halloween Bash on Saturday, November 1st, will feature a Live DJ, a special Witch’s Brew, and Spooky Appetizer Buffet created by Chef James (don’t Bat Wings & Mangled Ears sound delicious?!) Costumes are not required...but let’s face it, how often do you get to dress up as an adult? PLUS, we will be awarding prizes for the best costumes! On Sunday, November 2nd, we are throwing a family OxBOO Halloween Party! We are busy creating an afternoon filled with not-so-scary activities that the whole family can enjoy. Give your children a second chance to wear their Halloween costumes and have a fun afternoon at your club! Finally, due to the success of our Spring Ladies’ Night Out, we are adding a second Ladies’ Night Out to our fall calendar on Wednesday, November 12th. This holiday-focused event will feature delicious food and cocktails, great vendors so you can get a jumpstart on your gift shopping, and holiday hacks to get you through the most wonderful time of the year. If you sell a product or own a business, contact me to get set up with a vendor table at this first-time event! As always, guests are more than welcome to attend any of our events. Feel free to invite your non-member friends and show them what being a member at Oxbow is all about!

Chef James’
It’s October already and fall is almost in full-effect. The culinary staff and I would like to thank everyone for making glow ball an awesome evening. I know we really enjoyed it and hope you all did as well. Looking forward to the Halloween party the first weekend of November. I have some really spook-tacular appetizers planned for both the adult party and for the children. It should be a great time so make sure to come out! This month’s recipe is a fall favorite of mine. There is nothing better than a nice bowl of hot soup when you need warming up. I wrote this recipe about 8 years ago when I worked for a casino in Oregon, and it became an instant hit. It’s rich and warming with a nice soothing finish, but light at the same time.
Ingredients 2
Cups
Chopped Green Onion
2
Tbsp
Olive Oil
2
Tbsp
Unsalted Butter Celery Rib with Extra Leaves, Coarsely Chopped
2
Tbsp
Finely Minced Garlic
2
Tsp
Curry Powder
2
Tsp
Ground Ginger
6
Cups
Chicken Stock
1
Juice of half a Lemon 1 1
Bag of Cauliflower Cup
Heavy Cream Salt and Ground Pepper, to taste
INSTRUCTIONS
1. Heat the oil with the butter in a heavy pot over low heat. Wilt the green onion and celery with leaves until softened, 10 minutes; add garlic during the last 5 minutes. 2. Stir in the curry powder and ginger, and cook over very low heat to permeate the vegetables, 1 minute. 3. Add the stock, lemon juice, and cauliflower florets. Raise the heat to high and bring to a boil; reduce the heat and simmer, partially covered, until the cauliflower is very tender, 15 minutes. Cool slightly. 4. Purée in a food processor until very smooth, adding half-and-half through the feed tube. Add extra stock for desired consistency. Season with salt and pepper.
Brittany’s
As many of you may have heard, this is my last week at the club. It wasn't an easy decision to leave and I will miss you all! Thank you for making my time at Oxbow so memorable. Stop in and visit me at Beans!
See you soon, Brittany

David Wood Superintendent With staffing levels low this time of the year, our focus will be removing and mulching the falling leaves. This can be a threeperson job daily, depending on the wind conditions. Our goal is to move all the leaf debris into the rough to keep the pace of play moving and prevent lost golf balls.
Winter preparations for the course will also begin soon. At the end of the month, irrigation lines will be purged to prevent any ice damage from occurring over the winter. This process normally takes two days for a thorough job to be done. After the irrigation system is winterized, plant protectants will be applied to the greens, tees, and the fairways to help prevent snow mold fungus from causing damage during the snow cover.
This past month, our golf course construction project was awarded to Landscapes Unlimited (LU) from Lincoln, Nebraska. Landscapes Unlimited is a 37-year-old company and has been involved in over 1,300 projects worldwide. They have extensive experience in golf construction, irrigation installation, course grow-in, and management. Some local golf courses they have worked on are Windsong Farms GC, Spring Hill GC, and Sutton Bay GC.
With awarding the contract to LU this late in the year, the scope of work that can be performed is limited. Rough grading and contouring will be started; the irrigation wet well can be installed also. Some drainage lines will be cut in to allow the site to dry faster in the spring. We are excited to have them starting on our project and will keep you updated as the construction progresses.
The upcoming Men’s Stag Night is always a great event for the club. Again, this year, a portion of the proceeds will be allocated towards new maintenance equipment. Please help by donating to the auction and/or purchasing one of the many great items.
We still have some great days for golf; hope to see you out here.

JOHN DAHL HEAD GOLF PRO
Fall is officially here and what a great September it has been for golfing! We have had many fun and successful events here at Oxbow throughout the summer, but September may have been the finest...despite a poor start to the month weather-wise. After being postponed for a week, we had a wonderful turnout for the Ladies’ Invitational with groups of members and guests showing up for a nice morning of golf. Barb Johnson and Jane Grove placed first in the gross division with LeeAnn Townsend and Sue Kenney finishing second. In the Net division, Marie Talley and Ronda Menze took home first place while Mae Tonsfeldt and Kerry Brothers finished second. Congratulations, ladies, and big thanks to everyone who made it a great day! Sticking with the ladies, we crowned some Co-Champions of the season-long Women’s League earlier this month. The Golf Bags and Par-Tee Birdies were unable to break the deadlock match after 10 holes. With darkness setting in, in a great showing of sportsmanship, they decided to split the title of League Champions. Congratulations and thanks for a great season of League play! Men’s day came to an unofficial close on September 25th with the year-end Stag Derby taking place, featuring the top ten season-long earners competing. Paul Benson prevailed over Jon Vikander for first place with Cliff Mattson finishing third. As always, it was a fun year of games and a great finish. Thanks to everyone who supported their club every Thursday. We will continue to run Stag games the rest of the year, so continue to come on out and get in the games! On September 27th, we were able to hold the Hot Ball Tournament on a beautiful Saturday afternoon with a great turnout of members and guests. The team of Paul Hilt, Scott Differding, Chris Knapp, and Lance Barton placed first while Rich Menze, Jim Tallakson, Zach Schnitzler, and Jake Whiting finished second. Bill Short, Taylor Cavanagh, Paul Benson, and Nick Lakoduk finished third in the fun-filled day. Thanks to everyone for making it a great day. Remember to catch Fargo native and my longtime student, Tom Hoge, making his PGA tour debut on Oct. 6-12 at the Frys.com open. Congratulations to Tom for making it to the big show! Just a few reminders: as the season slowly comes to a close, make sure to stop by the Pro Shop to check out the new fall lineup of Travis Matthew and Ping apparel. While doing so, make sure to sign up for the two-person alternate drive scramble Jack-O-Lantern Tournament on October 25th. It will be a 10:00 AM shotgun; cost is $35 for members and $50 for guests with lunch included. Please schedule your Summer Long Best Ball matches if you have not already. The golf shop will be open from 9:00 AM-6:00 PM, Monday - Friday, and 8:00 AM - 6:00 PM on the weekends throughout October. Thanks everyone and happy fall golfing!
