EVENT CALENDAR

From the General Manager What a great September! We had terrific weather for most of the month, and even had a few rain days for the benefit of the course! This time of year is always difficult for me, as many of you know I am not a cold weather fan, and I know what’s on the way…However, I love football, nice fall weather, and the gradual wind-down of the golf season. Some of the best golf days are in September and early October, and the team and I enjoy planning for the upcoming off-season, to see what fun we can create! I hope all of you have had a chance to check out the October – April event guide, just published earlier this week! We have so much fun in-store for you this upcoming off-season! As we transition in to October, it appears we have a couple of very good golf weeks coming up, especially for this time of year. We have a couple of fun golf events in October, including the Backbreaker, and the Jack-O-Lantern on October 16th. Also, we are working on some great social events and activities to give all of our members fun ways to spend your fall days. I hope many of you can join us for our first tailgating event, coming up quickly! And we welcome the return of our annual favorite, Oxboo! Currently, I am working with our department heads, and then our finance committee and board of directors on our 2022 operating and capital budgets. This is a lengthy process, and an extremely important one, as all of you in business know. In my upcoming off-season newsletter articles, I will go into more detail on these topics, to give you some insight as to how your club, as well as private clubs in general, operate. 4

MANAGER'S MESSAGE Sedi Halvorson Sedi@oxbowcc.com

As we get closer to the off-season, Chef, Kyle, and the rest of our food and beverage team will begin looking toward menu changes for the change in seasons. They will meet with our house committee to review food and beverage thoughts, and we hope to have everything set to go in November. I am excited to see what they come up with, as always! Not that we want to start thinking about it, but the end of the golf season is approaching.Hopefully we will have a better fall than last year, and will be open well in to November. As always, we will begin watching the weather forecasts and patterns toward the middle of October to see what the first part of November is shaping up to look like temperature wise, and begin to plan from there. We will keep you updated as we get to that time. Please remember that we have to install greens covers, so we have to leave a couple of days at the end so that David and his team can get them on before the snow and consistent below freezing temps arrive. Just a quick note, the golf course conditions are AMAZING right now! Just wanted to say that. The golf season is beginning to wind down, but there are still many golfing days left this year.On top of that, we have many fun events and activities planned for everyone! Please read all about what we have in store for you in the pages to follow. We have a great October in store for you, at your club! Sedi

CLUBHOUSE UPDATE Kyle Millar Clubhouse Manager kyle@oxbowcc.com

Well, fall is officially here! The hot summer days of laying by the pool are no more. Now I am sure that some are resentful for this change in weather. NOT ME! I love the fall! Brisk mornings, perfect afternoons, and cool evenings. The beginning of September saw started with the closing of the pool. According to the rest of the staff, we haven’t seen such a perfect closing day in years! Apparently, when you combine near 90 degree weather in September with free ice cream, you get one of the busiest days of the pool season. It was crazy!! The day started out a little quiet, but then by 11:30 you were lucky to find a seat out at the pool. I have never scooped so much ice cream in my life. It didn’t matter the flavor, if it was cold it was gone. Scott even made a quick trip to the store to pick up as much ice cream as he could. By the end of the day, we were left with a few small containers of ice cream and a very tired staff. But, it was all worth it in the end as we had so many happy members thankful for one last day in the sun. The rest of the month seemed to just coast on by. One minute we are closing the pool and the next minute we are adjusting the start of tee times to account for daylight we are left with as September comes to a close. We did get a couple more golf tournaments in during September though. Smaller events, but still a lot of fun! I even saw a friend of mine chip a ball into the floating kiddy pool to win a signed Carson Wentz jersey.

6

My favorite event from September has to be the Farm to Fairway Dinner that took place at the end of the month. I was quite proud of the table set up for this event, as it was all on me. I unfortunately didn’t have Aja’s keen eye to help with decorating as she was out for a couple days, but she gave me the thumbs up for the few pictures I sent her. It was a smaller group than usual, but that didn’t take away from the night at all. Sparkling conversation paired with delicious food and excellent wine usually makes for a wonderful evening. It was a busy evening for us in the restaurant, but Chef Scott and his team were on their A game and everything came out beautifully both in the restaurant and the wine dinner. It was a tremendous team effort from everyone on my staff and I couldn’t have been happier with how it went. Winter will soon be upon us, but I am very much looking forwards to the change in menu and atmosphere that comes along with these colder months. With that said, here’s hoping that October can stave off the snow just a bit longer and allow us to enjoy the course for a few more weeks. -Kyle

NEWS FROM THE FAIRWAY David Wood Superintendant david@oxbowcc.com

The south tees are now five years old and have developed a small layer of thatch about a half inch thick. Thatch is the dead plant material (stolons, rhizomes and clippings) that develop between the soil and the crown of the grass plants. We have started core aerating in an effort to minimize this buildup. Excessive thatch can lead to several problems, water repellency being our biggest concern. Water will not infiltrate the soil profile evenly which leads to over-watering areas. Golfers should not notice this process once the soil is watered into the turf canopy and the excess organic matter is cleanup. At the current rate of thatch development aerification will need to be done annually on fairways and approaches as soon as next year. We have noticed a reduction in the growth rate of all the grasses with the change in the temperatures and reduction in daylight hours. These seasonal changes affect the grass plant’s ability to tolerate wear and recover from injury. Replace divots if the grass remains in one piece or fill with the sand/seed from the divot bottles. Please vary cart traffic wear patterns around green and tee paths. See you on the course. David Wood

Chef's Corner SCOTT MOTSCHENBACHER EXECUTIVE CHEF CHEF@OXBOWCC.COM

Hello, Oxbow!! What a great September! The amount of 80+ degree days we had was OUTSTANDING! I hope this trends into October. This is the time of year that myself and the rest of management gets to reflect on the season. Things that worked, didn’t work, and what we can improve on. One big thing I want to work on is pool service and food options. We tried a couple of different grab n go options that worked, but not exactly as we hoped. Next year we will have hopefully ironed out all the wrinkles. October is new menu time! I will be meeting with my staff for new ideas. We plan to have a house committee meeting at the end of the month to finalize everything. I want to get as many opinions as possible. Please sign up for the house committee by emailing me chef@oxbowcc.com or kyle@oxbowcc.com The word of the year is MEMBERSHIP. In my five years with Oxbow I have never seen the kind of growth in membership. It has always been a big jump in May and June. When I see full golf memberships joining in late September my jaw kinda drops. It is certainly a team effort to help grow membership. However, one person is owed a lot more credit than the rest of us. That person is Aja. She has taken what was a pretty terrible year (2020) and turned it upside down in 2021. She has led the charge in member events. I am so impressed with what she has done. If you’ve been a member with Oxbow for any length of time, be sure to tell her thank you. She has taken her position and ran with it. I’m getting MARRIED!! After many years of hoping for that right someone I finally get to tie the knot! I was finally able to meet someone that understands my life. My life as a chef. My passion as a chef. She understands that my first marriage is my work. She understands the hours and the stress I go through. She just gets it. So, on October 16th I will have a misses and I couldn’t be more excited!!

Recipe of the Month: Chicken Chili For this month’s recipe I want to share my chicken chili recipe. I have been bombarded by people asking for the recipe. So, I figured this would be the easiest way to get it out to the masses. Ingredients: 1 red bell pepper 1 green bell pepper 2 jalapenos 1 yellow onion 2 tablespoons fresh garlic ¼ pound butter ¼ pound flour 2 tablespoons chili powder 1 tablespoon oregano (dried) 1 tablespoon crushed red pepper flake 1 teaspoon cayenne pepper 1 pulled chicken (rotisserie chicken) 1 can pinto beans 2 quarts chicken stock 1 quart heavy whipping cream Procedure: Dice your peppers, jalapenos, and onion. Sauté in a large pot with butter on medium-high heat. Once the peppers and onions are soft add your spices and garlic. Continue to sauté for another 3-4 minutes. Add your flour and keep cooking for another 3-4 minutes. Add your chicken stock, cream, chicken, and beans. Bring to a slight boil. Season to taste. This is a great chili for a cold night. Have diced onions, jalapenos, fresh cilantro, sour cream and whatever else you like for a topper. Enjoy! Email me chef@oxbowcc.com with any questions. 19

GOLF SHOP UPDATE Corey Herlickson Head Golf Professional corey@oxbowcc.com

As if you needed more reasons to golf this season, we have some offerings for you coming in October: On Thursday, October 7th we are hosting our annual Back Breaker Tournament. This three-person scramble includes difficult pins, playing the tees from way back and potential cold weather make this tournament a favorite. You can sign up simply when you play that day. We will be playing in sixsomes due to demand and lack of sunlight. Come on out and challenge yourself! On Saturday, October 16th we are hosting the Jack O’Lantern (well at least crossing our fingers for nice weather this year so we can host it!) It is a two-person alternating tee shot scramble format that tees off at 10:00 AM. Sign up on www.golfgenius.com and use the GGID: OCCJOL2021 We will be taking a trip south once the weather gets colder in either late October or in November. Last year we went to the CC of Sioux Falls. We don’t want to encourage the cold weather to come too soon, but we do want to make you aware of our plans. We will send out announcements when we get closer. 2021 Ladies Ringer Board Results Most Improved

As we near the end of the season we want to stress how important that fixing your ball mark is for the health of the turf over the winter. If we can all do our best to fix several ball marks on each hole, the course will be put to bed in great shape which will help when we re-open in the spring. -Corey
