It is hard to believe it is already September. School has started, college football is back, and fall will be here before we know it. It has certainly been a busy summer here at Oxbow! With September rolling in, now is a great time to come out on Mondays and Tuesdays and enjoy the course. We have a couple of outside events this month, but the course is mostly wide open for the next couple of months. We hope you have the opportunity to keep golfing and enjoying the club! Also, we have many of our traditional favorite fall events coming up--the Harvest Dinner, League Play-Offs, the annual Hot Ball Tournament, as well as Couples’ Glow Ball. There are still so many great events for everyone to enjoy! I want to let everyone know some key dates in September. The pool will be closing on Labor Day, September 7th for the season. Until then, the forecast looks to be great for getting out to the pool, and bringing the kids after school to enjoy the last of pool season. Also, our last weekend breakfast service will conclude Labor Day weekend on Monday. Additionally, the course and clubhouse will be closed on Tuesday and Wednesday, September 8th and 9th for aerification and deep cleaning. Our clubhouse continues to take shape, and the new south holes are starting to look green! Below, please find a couple of renderings of the clubhouse. One is of the bar and grill, the other is of the banquet space. These renderings really bring to life the interior of the project. I have been walking the site on a weekly basis, and it is great to see the progress on both fronts. I also want to thank everyone for being respectful of the job site, which is extremely active. It is important that the contractors be allowed to work at full-speed. A couple of members have asked for tours of the site from our team, and we have been happy to oblige! I am looking forward to a great September here at Oxbow; I hope everyone gets a chance to enjoy the beautiful weather this time of year, enjoying your club! Sedi

- Director of Member Engagement & Events As we head into Fall, the golf and social calendar at Oxbow remains busy! We have several fantastic events throughout September to fill what we hope to be a month full of beautiful weather and sunshine! The 2nd Annual HARVEST DINNER is scheduled for next Friday, September 11th. The beautiful photo on the cover of this newsletter is from last year’s event. This AL Fresco four -course dinner features an excellent special menu prepared by Chef James, along with wine pairings for each course. More details can be found on Page 8! The last Friday of the month will be our Date/Movie Night. Weather permitting, we will be showing the movie outside and making s’mores. If the weather does not cooperate, we will move all activities in the Grill while the adults dine upstairs in The Bend. NOW is the time to book your Holiday Gathering at Oxbow! We’ve already been getting inquiries about available dates. As a member, you enjoy waived room rental fees and food & beverage minimums. Treat your group to a fantastic event at Oxbow in one of the most picturesque holiday settings around! Also, this will be the last year you can host your group at our current location--make sure you utilize our unique indoor event space while you have the chance! August has come and gone--it’s hard to believe it’s already September! The culinary staff and I are looking forward to a fun September and the Harvest Dinner. If you haven’t had a chance to sign up for the Harvest Dinner (September 11th), please contact Alison (alison@oxbowcc.com) to make your reservations. This month’s recipe is a great appetizer and is one of my personal favorites.
1. Slice all vegetables lengthwise into 1/8 inch slices. 2. Combine all the marinade ingredients and add to the vegetables. 3. Line sheet pan with sprayed parchment paper and lay vegetables in a single layer. 4. Dry in oven for one hour at 200F, or until dry but not brittle. Remove from oven and cool. 5. Mix goat cheese with egg to make custard. 6. Line bread pan with plastic wrap, leaving an overhang, and assemble the terrine by alternating layers of vegetables and cheese custard mixture until the mold is full. Fold over the overhang. 7. Cover the terrine and bake in a 170F water bath in a 300F oven to an internal temperature of 145F about 60 minutes. 8. Remove the terrine from the water bath and allow it to cool slightly Refrigerate the terrine overnight and up to 3 days , weighted with a 2lbs press.
August was a great month here at Oxbow CC! We had many fun events. It was awesome to see so many of you participate and have a good time. There is even more fun to follow in September. We have the Harvest Dinner on Friday, September 11th, and Couples’ Glow Ball on Friday, September 18th. We are going to be running different beverage specials this month, including signature cocktails of the night and wine pairings. If you haven’t already signed up for “Clubster” on your smartphone or tablet, now is the time to do so as to not miss out on these exciting specials! I am also proud to announce that Oxbow is now carrying “Not Your Father’s Root Beer”! This was a BIG hit at the ladies scramble beer tasting in late August. Believe me folks, “Not Your Father’s Root Beer” is a must try! On behalf of the entire service staff, I hope to see you out enjoying your club this month. Alex
Our seasonal staff has returned to school for the fall, so our maintenance practices will be adjusted to staffing levels. Walk mowing of the greens is finished for the year and mowing all 18 fairways is only completed on Thursdays. Sand bunker maintenance and trim mowing are now scaled back to several times a week. Fall aerification of greens and tees will be the second week of September. This year we will be core aerating with the 3 inch depth hole and removing the aeration cores versus our traditional method of deep tine aeration. My reason for changing aeration methods is to reduce the organic matter buildup in the top layer of the root zone. With the deep tine method, there is no soil removed: just sand added. Attached is a link to USGA video explaining the aerification process: http://usga.org/ turf/articles/video/aerate_greens.html. Progress on the new golf construction continues at brisk pace. I am happy to say that grassing has begun on holes 12 and 11. Several strips of sod are being installed around the greens, tees, and bunker edges to help establish turf in the vulnerable areas to prevent erosion. Grass New 11th Green seed is planted in the fairways and roughs and hydromulch is applied for erosion control and moisture management. Finish grade construction has begun on Hole 16 and will move onto Hole 17 next. Irrigation has been installed on Holes 16, 17, and 10. We are awaiting approval from the architect on the grading, to begin installing irrigation on Holes 1, 9, 10, and 18. There is a lot of work to do yet this year, so we are hoping for dry conditions to complete it. I would like to remind everyone to keep replacing your 12 Green Complex divots and repairing ball marks. The amount of play this time of the year slows down and doing these small things will help the course heal up from a busy August.

August is in the books and it was another great month for golfing! Some of the highlights included the Oxbow Best Ball, the Parent Child, and the Oxbow Championship. The Oxbow Best Ball was a great event with Jeff Lamp and Rick Kuhn bringing home the victory in the gross division. In the net division, we had a tie for first between the team of Nick Lakoduk and Brandon Hallquist and the team of Terry Barnhard and Dutch Eyeman. The Parent Child was a great event and thank you to all who participated. In the 12 and under division, it was Ken and Dylan Stone finishing on top. In the 13-18 year old division, Leo and Jackson Worner took the victory. August also played host to the final Ladies’ Scramble and Poker Night. Congratulations to the winning scramble team of Dawn Zook, Ronda Menze, Shelley Kappes, and Briena Goldsmith. With the best poker hand of the night we had the team of Kristina Mattson, Jane Mattson, Sarah Mattson, and Cassie Huesman. Well played, ladies! The Oxbow Club Championship completed the August golf season. Congratulations to our new Club Champion, Perry Piatz, who sealed the victory by shooting a 150 in a play-off over Paul Benson. Another highlight for the ladies was the completion of the ringer board. There was great improvement by all players throughout the year. Ronda Menze finished the season with lowest overall net score while Cindy Fisher and Tami Henke finished first and second for most improved. Keep up the great work! September is going to offer a few fun events for everyone to participate in. League Play-Offs run until September 22nd. Wednesday, September 16th will be the Ladies’ Invitational. This is a 2-Person Best Ball and sure to be a great event. Don’t miss out! Call the golf shop and reserve your spot today! On Friday, September 18th, we will have the Couples’ Glow Ball event. This is a 6-Person Scramble and guaranteed to be a blast! To finish out the month will be the Hot Ball on Saturday, the 26th. This is a 4-Person team event so grab some friends and sign up! As always stop in the pro shop to check out the new line up of Dunning Golf apparel and many other great items!

LadiesGolf August was another busy month for Ladies’ Golf! The Oxbow Ladies won the 2015 Interclub annual competition with Edgewood, Fargo CC, and Moorhead CC. Oxbow edged out Moorhead by 6 points and the traveling trophy will be placed in the bar & grill until next August!

The Ringer Board is completed for the summer and honors go to Cindy Fisher by improving her score by 41%. Tami Henke came in 2nd with a 33% improvement. Ronda Menze recorded the lowest net score with a 41. The last Ladies’ Scramble is on the books with Dawn Zook, Shelley Kappes, Ronda Menze, and Briena Goldsmith winning lowest net score. The Mattson team, consisting of Jane, Sarah, Kristina, and Cassie won the infamous Poker Game. Congratulations, ladies! League Play-Offs start this month and Wednesday Ladies nights continue throughout the fall. There is still plenty of time to socialize with other Oxbow ladies on Wednesday evenings and golf your beautiful course! Congrats to Sheri Champ who carded a hole-in-one on #15 at Edgewood Golf course! (See photo on right.)
