From the General Manager Welcome to the official start of summer at Oxbow! The Memorial Day weekend started off with a dud of a day Saturday, but since then it has been great pool and golf weather! Looking to June, we have many great events here at the club, including live music on the patio, our first pool party, our annual member guest golf tournament, and much more! In the following pages, we have great info on all upcoming events, and I also encourage everyone to make sure they have a copy of the May – September event guide that Aja has put together for the season. Annual Meeting: A reminder our Annual Meeting will be on Monday, June 7th. We will discuss last year, as well as 2021 and beyond. All members are invited to attend. Hosted beer and wine will be available, as well as light appetizers starting at 6PM, with the meeting kicking off at 6:30. We hope to see you there!

MANAGER'S MESSAGE Sedi Halvorson Sedi@oxbowcc.com

Staffing: As many of you are aware, nationwide there are challenges filling job openings, especially in the food and beverage industry. Your club has not been immune to these challenges, especially in our culinary department. We are working hard to try and fill our open positions here at the club. Member usage of the club has never been higher, and we don’t anticipate that to change. With that, our need for employees, especially in the summer months has increased significantly over the past couple of years. The management team is doing all that we can to ensure we have enough teammates to serve you, and we ask for your patience and understanding as we continue to build our teams. Membership: We are up to 49 new member families that have joined us at Oxbow this year. We are excited by the growth we have seen thus far, and are anticipating even more as we head in to June. For reference, we welcomed 38 new member families all of last year. Please keep referring your friends and colleagues to join your club. If we can ever assist you in recruiting a new member, please reach out to Aja or me at any time. As all of you hopefully know, we are always happy to comp a prospective guest round at the club if you feel they are a great prospective member family. Misc: A couple of housekeeping items as we get in to the swing of the season. A reminder that local guests (reside within 50 miles of the club) are welcome once per month at both the pool and golf course. This applies to any guest, no matter which member brings them out. If you have any questions on this policy, you can contact me at any time. Also, proper golf attire is required on both the practice facility and the course at all times for anyone over the age of 12. If you are planning a day at the pool and to also use the golf facilities, please bring proper change of clothes. Remember that the pool locker rooms have plenty of free lockers for you to use to store a change of clothes. It's shaping up to be an amazing summer here at Oxbow, and an amazing year at your club! We are excited that the club continues to grow, and our current members are the driving force behind our growth. I hope you enjoy the upcoming warm weather, and we hope to see you soon, at your club! -Sedi

Hello everyone! Happy June! I hope everyone is starting to enjoy all the sunshine and is getting ready for a great summer! This past May we kicked off with our first two weddings of the season and It is so great to see events getting back to normal. We have a busy upcoming summer with weddings, golf events and so much more! If you are looking for some event space for any kind of event this summer, please reach out and we would love to accommodate you and your guests! We have a great ballroom that can accommodate up to 300 guests and we also have our pool that many of our members like to book space for parties at in the summer. I do have some sad news to share, my husband and I have moved and I will be moving to a new position that is closer to home. I have loved every second being apart of the Oxbow family. I will be here throughout the month of June to help out at the club. It has been so nice getting to know so many of the members out at the club and I will miss everyone but I am excited for the opportunities to come!

I hope everyone has a great month of June and has a great rest of your summer 😊 Thank you, Heather Nelson Please help us welcome our new Catering and Events Manager, Theresa Keimig. CLUBHOUSE UPDATE Kyle Millar Clubhouse Manager kyle@oxbowcc.com

Welcome back to the days of summer everyone! The month of May, like every month it seems, had its fair share of events and busy nights. It has been so fun to watch all the changes going on out at the club. The course has gone from a dusty brown to a vibrant green. The once empty pool is finally full and ready to be enjoyed. There are also so many new faces, both member and staff, each day. Pet Painting and a Friday Kid’s Night started the month out with a bang! Everyone really seemed to enjoy the pet painting event, we have some great artists out here! Kid’s Night, as usual, was a mixture of chaos and fun. We then followed that up with our Mother’s Day. It was fantastic to see so many families out celebrating the amazing women in their lives. Later on that week we saw a very busy weekend. Ladies Night Out on Friday was a complete success! Great fashion, food, and drinks made for a very eventful evening. The next night was our Comedy Night. A beautiful day out on the course made for a busy night in the restaurant. Thankfully we were able to get everyone fed and into the comedy show on time. The month of May also saw the start of Ladies Night on Wednesday and League on Tuesday! Sixteen teams joined us for League opener on the 18th and it turned out to be a wonderful evening. Ladies Night on the 26th wasn’t so fortunate with the weather but I am sure that will change soon enough! Wedding season is finally here! With two in the books for the month of May, things are really starting to come together. Each wedding is a change for my staff to learn something new and work in a different area. This is just helping us become a more complete staff that can roll with all the changes that can come with working at a country club. Did I mention the pool is opening too? All winter long I was thinking about the pool. How many people will we see each day? How many lifeguards and servers are we going to need? What happens with the ever changing weather?? Thankfully I have some great returning staff for the summer and I am sure they will be able to get everyone up to speed in no time. This is be a huge learning experience for myself. There are so many moving parts, this will definitely be a work in progress for me, but I am excited for the challenge. Here’s to a fun pool season!

Kyle

Chef's Corner SCOTT MOTSCHENBACHER EXECUTIVE CHEF CHEF@OXBOWCC.COM

Hello, Oxbow! Here we go, golf and pool season is finally upon us. With that comes a new menu. I will be rolling out the new menu on Wednesday the 16th. It’s a little later than usual, I apologize for that. We will have a lot more shareable options (thanks to covid being a thing of the past). We will have a bunch of the favorites from previous summers as well. This summer should prove to be one of the best we’ve ever had. Many of you, if not all of you, are aware of the labor shortages. We are certainly not an exception to the ongoing problem. It WAS a problem for the Oxbow Kitchen. I can now happily say that little problem is in the rear-view mirror. I have been able to find some truly amazing chefs. Both hold a very nice pedigree. One in particular worked at the Hazeltine National Golf Club during the Ryder Cup in 2016. Having another chef that understands country clubs make my life that much easier. With these new hires a giant weight has been lifted off my shoulders. I was very concerned about how summer would work out with the labor shortages. That problem is solved!! I am looking forward to an amazing season with an amazing staff! PIZZA! Early this year I made it my mission to not only improve our pizzas, but to make them exceptional. Boy oh boy did I screw up! When I plan menus, I always try to keep in mind what things will be like in the summer months. I missed the bus on pizza. Now that I have made the pizza what some call “elite” we go through them like crazy. Here is the thing about pizza… they take a lot of prep space, oven space, and most importantly, time. During times of high volume it’s hard to execute a pizza. I know that sounds strange “it’s just a pizza”. Well, true as that may be… I also have weddings to cook for, golf tournaments, a busy pool, a busy restaurant, stocking the beverage shacks, and feeding employees. So, please, understand that sometimes we just cannot make pizzas. As much as we wish we could we just simply cannot. I appreciate everyone’s patience while we work through this growing pain.

Recipe of the Month: Pizza Dough For this month’s recipe I want to share my pizza dough recipe! If you can’t get it from us maybe you can try it at home! Ingredients: 2.5 cups high gluten flour (bread flour) 1 cup warm water 1 tablespoon yeast 1.5 tablespoons kosher salt ¼ cup granulated sugar ¼ cup quality olive oil Procedure: In a large mixing bowl add all of your dry ingredients (flour, salt, sugar). Mix well. In a small vessel add your yeast and water and let bloom for 10-15 minutes. Add this mix to the dry mix and mix until incorporated. Remove from mixing bowl and kneed for 5 minutes. Cut mix in half and roll into a ball, coat with olive oil and let it proof over night in your refrigerator. Roll out on a surface covered in flour. Top with sauce, cheese, and your favorite toppings!

NEWS FROM THE FAIRWAY David Wood Superintendant david@oxbowcc.com

Our seasonal staffing has arrived and ready for the season. The new staff is becoming acclimated with the golf course layout and maintenance routines. Several of the new staff members have no experience working in the industry so our coaching is more intensive in the first month. With the turnover in staff, some of our returning members are provided the opportunity to do more advanced assignments in our practices. It is rewarding to see them succeed as they are provided new responsibilities in our department. Regular schedules of mowing have begun on all the different golf areas. Greens are mowed every day except on Mondays. Walk mowing of the greens will start in June during the week. Tees, approaches and fairways are mowed three times per week. Rough areas are mowed throughout the week, with Monday being the day where there are two mowers out. We follow this schedule very close unless there is a weather event or a tournament that would alter our schedule. This time of year, our detail work of edging and trimming is done to compliment the course design and playing experience. These jobs will require many man-hours and are not the favorite of assignments of staff sometimes. But the finished look is when done properly is worth the investment. Despite the dry weather we are seeing the native grass areas starting to produce the seed head as it matures. These grasses are there to accent the design of the course and require lower maintenance through out the year. PLEASE do not drive your golf carts through them. See you on the course. David Wood Native area in seed. Please do not drive in native grasses
