March is finally here! It is exciting for most of us to put January and February in the rearview mirror, as we look forward to warmer weather and hopefully get close to opening up the course. After a few very long winters, we hope for a return back to openings in early April, around the Masters. In the meantime, we have much going on at your club, as you will see in the following pages of the newsletter.

New Bylaws Our bylaws committee and board of directors has approved the first set of revisions to our bylaws since 2014. These bylaws will be sent to all members this week. I encourage all members to read through them, as there have been many changes, especially for certificate holding members. If you have any questions on the bylaws, please contact me directly.

Stag Guys, as a reminder, our annual Stag Party and Auction will be held on Friday, March 19th. Doors will open at 5:30pm. You can register on the website, mobile app, or by emailing rsvp@oxbowcc.com. Ticket prices this year are $150, and includes all the usual all you can eat and drink, and also includes entry into most raffles/boards. We have over 100 items already lined up, and don’t forget to bring your guests for a chance for one of them to win a free membership at Oxbow for 2021! It’s one of the most fun nights of the year, we hope to see you there! Mobile App The Oxbow CC mobile app will switch over to a newer version on March 1st. We are excited for this change, as it will enable our members to do much more on the app, as well as allow us to communicate better with you. You won’t need to do anything on your end for this change to take place, other than you will have to re-login again at some point. When you do, you will see a new layout, that is much more user friendly. A new feature we are excited about is the feed, which is similar to Facebook in layout and use. There you can see emails the club has sent, view events and sign up information, all based on your profile and what you want to see. We will also be able to send real time notifications to you as necessary. If you are not using the app, or are having trouble logging in, please reach out to myself or Aja. Membership As we get closer to spring, it is once again that time where we start receiving more membership inquiries, from non-members, and from members who are looking to refer their friends. We have had more membership inquires in February than I can ever remember. As I state each year, we advertise in publications and mediums, but by far the majority of our new members come from referrals from current members. We believe Oxbow to be the best value in club membership, especially with all that is included in your dues. Coming off of a strange year to say the least, we are looking forward to bringing back many of our traditional events, as well as creating new ones. Please reach out to Aja or me if we can assist in helping you recruit a new member to the club. Aja has created some wonderful pieces that do a terrific job of giving prospective members all the reasons in the world to join Oxbow. I hope everyone is excited for March, as we get closer to more time outdoors and fun in the sun. I hope to see you soon, at your club! Sedi

Membership & Marketing Update AJA NYQUIST

Wow it's already March, it's going to be summer before we know it and I, for one, cannot wait! I would like to start off by thanking everyone for filling out our event/activity survey that we sent out in February. It gave us great insight into what events and activities you want to be done at the club and we are excited to implement them! We have already begun incorporating your thoughts and ideas into the upcoming spring and summer month activity calendars and we look forward to being able to do even more of them this next off-season as well. Some things you can expect to see soon are bands on the patio on select Friday evenings this summer, continued fitness classes, a weekly day camp for kids in July & August (see page 10) and more! If you ever have any thoughts or ideas on events that you would like to see at the club you can always shoot me an email at aja@oxbowcc.com as well! Looking into the Month of March, we have some great events coming up including cooking class, kids night, a beer dinner, mini golf tournament, Stag and more. At the end of the month we are going to have our spring EGGSTRAVAGANZA carnival that will be filled with games and activities for the kids, the Easter Bunny may even make an appearance! Looking even further ahead into April/May, we have the return of Ladies Night Out and we are moving it to a Friday (TBD), so that we can all have a little bit more fun :) I am looking for vendors to bring in for the event, so if you would like to be a vendor or have any suggestions for vendors you would like me to reach out to, please shoot me an email at aja@oxbowcc.com and I can get that taken care of! We have had a big number of membership inquiries this last month which is great and many of them are from member referrals so keep it up! On that note, I would like to welcome our newest members, Dan & Mariko Dahl and their 3 children: Vivian, Madeline and Elliana. It's going to be a busy month full of events and excitement as we get closer to opening up the golf course for the season. If I haven't met you yet please stop by my desk and say hi!

OXBOW COUNTRY CLUB ANNOUNCES HEALTH PARTNERSHIP WITH SANFORD PROFILE Who is Sanford Profile: As a health and wellness organization, Profile offers personalized health, wellness, and weight loss coaching. As a business partner, we help to support the health and wellness of the member base at the country club. We work alongside the country club to provide wellness initiatives that are fun, encouraging, and member focused! We will provide onsite and virtual health and wellness education, develop healthy menu options and healthy snack options, bring in fitness personnel to the club and encourage overall wellness for the club member base! That’s just the beginning! As we work together and develop a relationship with the country club member base, we can add on more events and opportunities to suit your needs as club members. The best part, you don't have to be a Profile member to take part in all we have to offer through OCC. Being an Oxbow member gives you access to all the fun events, healthy options, and wellness support we offer through this partnership! The goal of the partnership is simple: to support and encourage a healthy environment at OCC and to offer members another great benefit to their membership.

Hello everyone! Happy March! I hope that everyone had a great month besides the cold weather we had. I am glad that it is getting nicer out now and that means we are getting even closer to wedding and golf season!! The arcade will be coming to an end this month since we are getting closer to summer and starting to plan more events for all the members at the club. We do still have a few weeks left of the arcade, please feel free to reach out if you have been hoping to host a party or social gathering in the arcade before it is gone! I am very happy with how the arcade turned out this year, we had tons of members having parties with us and I am excited that we will be bringing it back next year for everyone to enjoy again! I am getting very excited for wedding season. I have gotten the chance to meet and start planning with a lot of my brides and grooms. I love the planning process because everyone is always so excited and it is fun to share that with them. Please reach out if you are looking for a venue or if you know someone that is looking for a venue. We have some 2021 dates still open and we are already booking for 2022! CLUBHOUSE UPDATE Kyle Millar Clubhouse Manager kyle@oxbowcc.com

Brrrrrrrr!!!!! February was so cold! Thankfully there was a lot of fun to be had at the club this month to help us push through. We finished the month of January with a Kids Night, and boy was that a fun and crazy night. The kids got to cut loose and the parents got to relax for the evening. I think that was a win-win for both sides that night. We followed that one up with another on the 12th of February during the start of the cold snap but still saw a great crowd of members! Our Super Bowl Party was a great time as well. Tom Brady and the Patriots did it again! Oh wait, it was the Bucs, new team, same Tom. Chef put out a delicious spread that evening and members enjoyed seconds, thirds, fourths and even a few fifths. Even though the game wasn’t that exciting, tasty food, cold drinks and good friends made for a terrific night. The last week of February brought on our Wine Dinner. It was a French themed dinner and Chef provided some excellent cuisine. Thomas Thiel, from Republic National Distributing Company, was nice enough to join us for the evening. He provided the wine pairings for the meal and entertained our members with stories of the wine they were enjoying. It was a lovely evening. Looking ahead to March, there are a few things that excite me. First is this wonderful uptick in the weather we are enjoying after so many cold days in February. Second is our Beer Dinner on the 16th of March. Icewind Brewing from Mapleton will be providing the beer for the evening and Chef is already hard at work figuring out the menu. It should be a great time to come out and enjoy some new beers! The third is obviously Stag. The entire time that I have been here it has always been on my mind. Getting to see and be a part of everything that goes into the evening has been really fun. It's amazing to see the amount of time and energy that gets put into this event, not only by our staff but the members on the Stag committee. Its going to be a great evening! -Kyle

Chef's Corner SCOTT MOTSCHENBACHER EXECUTIVE CHEF CHEF@OXBOWCC.COM

Hello, Oxbow!! We are getting closer and closer to golf season! I am super pumped for this season! I have been working on some new grab n go options. One I am really excited about is Chinese steam buns. These are soft, and delicate little buns that are filled with grilled pork belly, fresh vegetables and a variety of sauces. I think these are going to beat out the grab n go tacos. Another thing I will be adding is a variety of bratwursts, sausages, and hot dogs. I am going to be working with the NDSU meat lab on this one. I also want to expand on our rice bowl and poke bowl. These have been a huge hit even in the off season. I am also happy to announce our partnering with Profile by Sanford. Our spring/summer menu will have options from Profile’s diet program. Several of the members are already enrolled in the plan. This will be the first partnership of its kind in the entire nation!! This month we will have some fun events planned. Stag being one of the most fun events of the year. We will also be hosting a beer dinner. We are partnering with Icewind Brewing for this one. They have so nicely given me lots of beer samples to pair the food. This should be one of the best dinners we have hosted. The biggest change as of late is our pizza. I have struggled with getting the best possible pizza at Oxbow for 4.5 years. I can safely say I feel really good about the newest version. I completely scrapped what we were doing previously. We have a brand new sauce, cheese, crust, sausage, even our pepperonis! If you have not yet tried the new pizza, please do! I would stack this pizza up against some of the best in the area. That’s just me though. Come find out for yourself! 16


Recipe of the Month: Whipped Potatoes For this month’s recipe I want to share my whipped potato recipe. I know it sounds weird to just do a whipped potato recipe. This came from our last wine dinner. I had one of the guests ask me to explain how we do it. As I was explaining I noticed not just one guest was listening,

rather

ALL

of

the

guests

were

listening. Which got me thinking… do people really

not

know

the

proper

way

to

make

whipped potatoes?? So here it is… Ingredients 2lbs Russet Burbank potatoes (the brown ones you use for baking) 1/4lb unsalted butter 1 cup heavy whipping cream Salt to taste

Procedure: Peel your potatoes all the way. Any dark spots or blemishes need to go!! Do not skip the dark spots. To me there is nothing worse than getting a scoop of potatoes and there is a dark spot in them. Ruins the whole thing for me. Automatically losing my appetite. A very crucial step is cutting the potatoes. You want uniform cuts. You want all the potatoes to cook the same and finish at the same time. Place your potatoes in a large pot and cover with cold water. The water should be at least and inch over the top of the potatoes. Start them on a medium high heat. Bring them to a boil and let simmer until they become fork tender. Remove the potatoes from the water and place back into the pot you boiled them in. Place the pot back on the heat. You want to cook the moisture out of the potatoes. While on the heat stir them gently. Once the steam starts to dissipate add them to your mixer with the whisk attachment. In a separate pan melt your butter on the stove. Add the butter to the potatoes and begin whisking. Slowly add your cream until they have reached your desired consistency. Add some salt and taste. Once you have added enough salt and you like the way they taste turn your mixer on high. This is where we will begin to really whip the potatoes. After whipping for 2-3 minutes turn off the mixer and serve. Top these with a little extra butter and enjoy! 17

GOLF SHOP UPDATE Corey Herlickson Head Golf Professional corey@oxbowcc.com

We are starting to look like the golf course is ready to be open with the forecast for the next 14 days. However, I always say that we need to make it thru the March 21-28 stretch. Typically, that is when the last snow storm comes that gives us a significant amount of snow. If it the snow comes heavy it will delay the opening. This 7 day stretch is what makes the difference for opening early or a normal opening. Stay tuned! Since we are talking about the golf course getting closer to opening, we want to make you aware of the resource we have spent a lot of time on, which will help you schedule all of your golf plans for the summer. We have created a golf guide to give you all of the information you will need to know for the golf season. It covers all of the programming as far a lessons, juniors, etc. It also has descriptions of all of the leagues we offer at the club over the golf season. Every tournament is described in the golf guide as well, so you can see what tournaments tickle your fancy. The golf guide is like the event guide but on steroids. We will be sending it out via email in early March. Please save the guide and refer to it as often as you would like. It is pretty substantial so we will have some copies you can look at but we will not be printing a ton of them out. Director of Instruction, Ben Walker, has already begun some golf programming in hopes of increases swing speeds of our members. The program is SuperSpeed Overspeed Training. We have two sessions that are working with Ben. We will be keeping track of the progress of the students in the class and we will be putting the results out for you to review. We think this class will be one that many more will participate in and we will come out with more classes in April or May. Registration for our Member-Guest, the Battle at the Bow, will be coming up soon. We will send an email out to all eligible golfers for this event. You will have almost a month to register and we will host a lottery drawing on Thursday night of the first round of The Masters! -Corey 20

NEWS FROM THE FAIRWAY David Wood Superintendant david@oxbowcc.com

As we approach the upcoming golf season, we are working on finalizing a few details for a busy 2021 season. Equipment maintenance is in its final stage, all the cutting equipment has been sharpened and checked over. Supplies are all ordered and ready for delivery. Staff hiring is underway and will continue until all our positions are filled. The snow fences installed last fall around the greens and bunkers will be removed so not to accumulate additional snow. Our snow fall total for the season is 23”, this is about 14” below average. We will look at all the fence locations and note what has worked and where they need to be added in the future. Our winter preparations, completed last fall, went as planned, so we are confident that everything survived the winter. With the recent warm temperatures, I know everyone is excited to be outside and is ready to enjoy the early spring. Please do not take your golf carts out onto the golf course. Frost will be coming out of the top soil making the turf extremely vulnerable to damage. Drain lines are froze and not allowing water to escape the collection areas. The frozen drains in the cart paths can hold water making them impassible. Taking golf carts off the paths will cause damage to the grass and our newly seeded areas. We are monitoring the course and will keep everyone informed as to possible opening the range or golf holes as soon as conditions allow. Please be patient and enjoy a nice walk instead of a drive.
