08 publishers note Hello and welcome to the 48th edition of PakMag, our very special 4th birthday edition. Wow, I can’t believe it’s been four years. Creating PakMag has been one of the most challenging and yet rewarding things I have ever done. Thanks so much to all our readers, businesses, and community groups who have supported us and made it such a vital and popular resource for local families, we couldn’t have done it without you. The biggest thank you must go to my team and of course, my wonderful, patient, supportive husband Trent as well as all those other friends and family who’ve helped keep me sane (almost!). By the time you read this it’ll be only 4 weeks until baby no. 2 arrives so I’d really better start getting myself organised! This second pregnancy has certainly not been as easy as the first and it’s funny how much more nonchalant you are with the second when so much time is still taken up doting on the first. We really hope you enjoy this edition, and hope to see you at one of our many events this month. Until then, happy reading, and don’t forget to tell everyone - you read it in PakMag.

Special BBQ Chicken

• 1 cup rolled oats

• 1kg of chicken thighs (cut into palm size portions)

• 1 cup brown sugar

• 1 tblsp of fresh ginger

• 3/4 cup coconut

• 1 tblsp of fresh garlic

• 1/2 cup plain flour

• 1 tblsp of seeded mustard

• 125g butter

• 1 tablespoon of tumeric

• 2 tblsp golden syrup

• A good dollop of fresh natural yoghurt

• 1/4 cup shredded coconut

Method

Method

Preheat oven to 180°C. Lightly grease an 18cm x 28cm slice pan. In a large bowl, combine oats, sugar, coconut and sifted flours. Heat butter and golden syrup in a small saucepan on low heat for 1-2 minutes, until butter has melted and mixture is well combined. Make a well in centre of dry ingredients. Add butter mixture and combine well. Press firmly into prepared pan using base of a glass. Sprinkle with coconut. Bake for 20-25 minutes, until golden. Sprinkle with coconut. Cool completly in pan. Cut into squares to serve.

[2] Put all ingredients into the bag the chicken came in for easy storage and better coverage of the marinade. Let the mix sit for a minimum of 1 hour in the fridge. [3] When ready, cook on a hot BBQ. Serve with a fresh green salad.

Being a parent changes everything. But being a parent also changes with each baby. Here are some of the ways having a second and third child is different from having your first.

Diapering

1st Baby: If the pacifier falls on the floor, you put it away until you can go home and wash and boil it.

1st Baby: You change your baby’s diapers every hour, whether they need it or not.

2nd Baby: When the pacifier falls on the floor, you squirt it off with some juice from the baby’s bottle.
