Welcome to the first issue of Dunbar Life in 2025!
Winter is flying by! February is already half over, Valentine’s Day has passed, and the Family Day long weekend is here. The days are noticeably longer, and daylight saving time is only three weeks away.
Spring break (March 16–28) is just around the corner, and the first day of spring is March 20. The Easter long weekend (April 18) promises celebrations with family brunches or dinners, Easter egg hunts, church services, and plenty of sweet treats.
On February 1, the Vancouver Business Improvement Association (BIA) Partnership— representing 22 BIAs—launched the LOVE YOUR CITY campaign. This initiative aims to showcase Vancouver’s diverse neighbourhoods and businesses through press, installations, and social media.
This year, the Partnership encourages everyone to visit Love Your City activations across Vancouver and write a love letter to their favourite neighbourhood, a cherished business, or even the City of Vancouver itself!
Be on the lookout for Dunbar’s five heartshaped sweetheart candy installations and take a moment to show some love for your favourite local spots. New Businesses in Dunbar
This issue of Dunbar Life features two new businesses in the neighbourhood! We look
forward to introducing more in future editions.
On the cover are Sunny and Thomas Park, the owners of Bread Culture at 5525 Dunbar Street. Their bustling bakery and café, which opened in August 2024, offers a delightful selection of sourdough bread, baguettes, focaccia, Viennoiserie, croissants, brioche, and an array of sandwiches and pastries, including Danish and choux varieties.
Another new addition to Dunbar’s restaurant scene is Shamrock Storehouse at 4497 Dunbar Street. This Irish-themed pub opened in December 2024 and serves a hearty menu of Irish favourites, a great selection of draft beers, live music, and a patio with outdoor heaters open year-round.

The Dunbar Village Business Association (DVBA) Board is preparing for its Annual General Meeting (AGM), where business members will vote to renew the BIA.
As part of the preparation, the Board is surveying business owners and property owners to identify their top priorities and the types of support they value most from the DVBA. These results will help shape a budget for members to review. At the AGM, members will vote on how property tax funds are allocated to support the BIA’s initiatives over the next three to five years.

Graffiti
Every spring, the City of Vancouver provides a graffiti abatement grant to each BIA in the city. These funds help eliminate unwanted graffiti and support mural projects that beautify business districts.
Dunbar is eager to identify new mural locations to enhance the neighbourhood’s visual appeal. Importantly, these grant funds do not come from business property taxes but are a direct result of the Vancouver BIA Partnership’s advocacy efforts.
Business Property Tax Win
This year, the BIA Partnership successfully advocated to lower the City of Vancouver’s planned 2025 business property tax increase to 3.9%, down from the originally proposed 5.5%.
This 1.6% reduction aligns with the Partnership’s request to keep the increase below 4%. It’s just one example of how the Partnership fights for local businesses, ensuring that even smaller BIAs like Dunbar benefit from strong representation.

BREAD CULTURE: A French-Inspired Artisan Bakery

Vancouverites have been saying “merci” since Bread Culture, a French-inspired bakery, opened in August 2024. Owners Sunny and Thomas Park relocated it from Calgary, bringing their exquisite croissants, artisan breads, and pastries to Dunbar.
The couple is originally from South Korea; they arrived in Toronto in 2014 to study data analysis. While Sunny studied, Thomas worked part-time at a doughnut shop. He realized his love for baking and moved on to other bakeries to gain more experience. With Thomas’ encouragement, Sunny also pursued the profession. Although she did not have a background in baking, a French chef offered her an opportunity to work with him.
Sunny says, “He thought personal attitude was more valuable than experience. Thanks to
him, I began to work as his apprentice. At the bakery, I met another French chef. From them, I learnt various techniques in French pastry baking.”
The couple visited many well-known bakeries in North America and South Korea. Sunny mentions that their vacations were like bakery tours. She estimates they visited over 100 bakeries where they tasted assorted breads and pastries and learned their preferences. They pursued more training in Korea and France and met more supportive mentors.
“We felt that every past work experience was connected and made a meaningful path. Due to our backgrounds in business management, marketing, and baking experiences, we might easily prepare for our own bakery.”
The original Bread Culture operated
in Calgary for three years.
Their business was very successful, and it was hard for them to close it and move.
Sunny says, “We still love Calgary; we had so many great experiences and customers. We will never forget that time. Despite this, living there was tough. We had no friends or family to rely on. We felt it was time to pause our current life and make a change. We thought about Vancouver, a place we often visited during vacations, and decided to move here to start anew.”
Although they did not plan to open another bakery, they eventually realized it was what they loved most and decided to reopen their business. Thomas’ best friend lives in the area and recommended Dunbar. She felt the community needed a bakery like Bread Culture.
“When we visited to conduct market research, we knew Dunbar was what we were looking for.”
The baking duo and their staff take pride in their naturally leavened, hand-crafted, smallbatch bread. They provide customers with


bread made daily from scratch without any additives.
Brioche contains a high percentage of butter and eggs, which significantly impacts the taste; therefore, only premium butter and free-range eggs are used. Likewise, quality butter is used for croissants.
Bread Culture sells a variety of breads, including traditional and savoury baguettes, an assortment of sourdough breads (traditional, seeded, walnut/cranberry and whole wheat), focaccia and bretzels (only on Sundays).


“Our goal is to create pastries that look and taste good.”
An assortment of tempting Viennoiserie is baked daily. You will find beautiful butter croissants, pain au chocolat, almond croissants, raspberry almond chocolate, apricot Danishes with custard cream, blueberry Danishes with almond cream, croque monsieur, triple cheese croissants and pain Suisse (tiramisu croissant).
They also sell brioche tarts, cinnamon twists, pistachio maritozzi and brioche loaf. Three types of sandwiches are served on baguettes. Choux stuffed with various fillings can be purchased individually or in a box of six.
Sunny says, “It makes us happy when we hear, "This bread tastes like it's from France," or "It's really delicious.”


“We see familiar faces every day. One couple comes in early every morning for scones and coffee, a young lady buys three baguettes once a week, and a gentleman regularly brings friends to have sandwiches, a pastry and coffee.”
A baker’s day involves long hours, and Sunny and Thomas often joke that it feels like living in the most delicious jail. They usually arrive at the shop before sunrise and leave well after sunset, rarely catching a glimpse of daylight.
“More than any money or fame, we want to create good memories for our customers. When someone recognizes our efforts and appreciates our intentions, it feels like a true reward for our hard work,” says Sunny.

SHAMROCK STOREHOUSE: Your Local Irish Pub

Shamrock Storehouse is the newest arrival on Dunbar’s restaurant scene. The Irish-themed pub opened in December 2024 and is proving to be a lively addition to the neighbourhood.
The pub underwent a major renovation, and the transformation is remarkable. The dark green interior features plenty of Irish décor. The long bar is a great vantage point for watching sporting events on the large-screen TVs. An assortment of other seating areas is also available, and the outdoor patio is open year-round thanks to outdoor heaters. It will certainly be a popular spot when the weather warms up!
Owners Laura and William Donnellan are originally from Co. Galway, Ireland. In 2019, they opened The Shamrock Bar & Grill on Denman Street, which was subsequently renamed Shamrock Storehouse. The two locations share many similarities, including live music, a hearty menu featuring Irish favourites,
a good selection of draft beers and of course, Guinness, Ireland’s most famous stout.
In 2009, in pursuit of a new adventure, Laura and William travelled to Vancouver on a oneyear work visa. They knew they were in for a challenge as they had no contacts in the city. Sixteen years later, they established themselves as successful entrepreneurs with multiple companies within their thriving IRL Group, which is comprised of seven food and beverage bars and some mobile bars for special events.
The couple loves Dunbar and lives close by. Another of their businesses’, Hynes’ Irish Pub, is located in Kitsilano.
William says, “Dunbar’s Shamrock Storehouse will play a crucial role in fostering community spirit, preserving cultural traditions, and supporting local organizations. It will be a gathering place where all are welcome to socialize and connect.”
“We are trying to keep this experience as authentic as possible for our customers.”
He adds, “You can expect to feel at home with friendly locals chatting, music playing, and a relaxed setting perfect to enjoy a pint of Guinness, a whiskey, or a hearty Irish dish. So far, the feedback has been extremely positive, and our customers feel like they are in an Irish bar back in Ireland. We love hearing this.”

The menus at the two locations differ because they have different kitchens and equipment. At the Dunbar pub, they want to avoid methods like deep fat frying to provide healthier food choices.

Irish Stew, Beef and Guinness Pie, and Stuffed Yorkies are some of their most popular dishes.
William’s personal favourite is curry fries, an Irish curry staple that is only available at Shamrock Storehouse locations.


The pub typically hosts a wide range of local musicians who perform traditional Irish and folk music, including songs by Irish legends like Van Morrison, The Cranberries, and The Waterboys. Performances normally start at 7:00 p.m. on weekend nights. On days that live music is not scheduled, they also feature a wonderful Irish playlist.
St. Patrick’s Day is the biggest celebration of the year at Irish pubs.
William says, “It will be a ‘great craic,’ meaning fun, as we say in Ireland. There will be entertainment all week long, and people will be talking about it for a long time afterwards.”

Community is at the forefront of everything William and Laura do, from sponsoring sports teams to donating to charities and creating inviting pubs that feel like a home away from home. They plan to be very involved in Dunbar’s community and events. IRL Group has won awards in B.C. for its community impact, which they are passionate about. The company donates a large percentage of its profits to charities and organizations each year and will continue to do so.
