The Culinary Corner: Buffalos

Beverage Director, Gene Castillino, shared the wine list selection process at Buffalo’s. Gene selected wines from seven different countries, with an emphasis on making sure that customers can taste the authenticity of every option. Gene shared, “The joy at Buffalos is that each wine compliments the food. There is something eclectic and diverse for each dish but also popular options that people want too.” With each type of wine comes multiple options to cater to every taste. Gene is involved in the whole process and tastes and approves every wine before adding it to the list. In addition, when a new wine joins a restaurant list, he will introduce the staff to the wine, so that each person can speak individually to the notes and flavors.
The Buffalos’ menu boasts a variety of coastal cuisine. As the menu changes, the wine list will shift to suit each dish. In the colder months, lighter menu options are replace heavier, more filling options, thus adding more red wines to the list. Buffalos’ also purchased a new wine cooler to store older and more expensive wines. Gene expressed that his favorite older wine on the list is a 2005 Bordeaux. The new wine cooler allows a more extensive wine list as there is now proper storage for each option.
“Anyone who comes to Buffalos’ and looks at the wine list would be impressed. It has everything that I would want to see when going to a restaurant,” Gene stated. Whether one is looking for an option to complement their chosen dish or would rather have the wine be the star of the show the new extensive list has it covered.
