e currently have SICK CARE, not HEALTH CARE Last year Americans spent $2.8 trillion on healthcare. That is around $8,000 per person. So does this mean that we are all healthy and living well? Absolutely NOT! In fact, we lead the world in heart disease, obesity, and cancer. Astonishingly, 5 out of 6 Americans will be diagnosed with either heart disease or cancer. If we were spending the most money in healthcare and had the healthiest people, maybe it would be worth it. But we are spending the most money AND have the unhealthiest people. In a study by the Journal of the American Medical Association, of 37 different developed countries the United States ranked 37th (dead last) in terms of overall health of the population. Americans take up 5% of the world’s population, yet we consume 85% of the world’s medications. HEALTHY WEIGHT HELPS IN THE FIGHT AGAINST BREAST CANCER DR. CESAR LARA

O

ctober is Breast Cancer Awareness Month, and in this article I want to discuss the relationship between healthy weight, obesity, and breast cancer. Breast cancer has a massive impact on women (and to a much lesser extent, men) in this country. Statistics show that approximately 12% of U.S. women, that’s 1 out of every 8, will develop breast cancer at some point in their lives. Many of those same women have made dedicated efforts to raise money to study breast cancer, its causes, and treatment options. As we come to more thoroughly understand this disease, and as our treatments improve to provide better and better outcomes for patients, we have been able to shift some emphasis onto breast cancer prevention. One strong connection that has been discovered is the link between a woman’s weight and her risk for developing breast cancer. The American Cancer Society reports that compared to women at healthy weight, overweight women are 1.5 times as likely to develop post-menopausal breast cancer, and obese women are 2 times as likely to have post-menopausal breast cancer during their lifetimes. The increased risk can begin with as little as 20 pounds of excess weight, and the greater likelihood of developing breast cancer for women who are overweight or obese is significant. Scientists suspect that the reason excess weight increases the risk of postmenopausal breast cancer is that the extra fat tissue stores large amounts of estrogen. High levels of estrogen in the body are likely a contributing factor to the develop-

ment of breast cancer. Therapies and treatments for breast cancer are more effective and have much better outcomes for patients who are at a healthy weight rather than overweight or obese. This also applies for patients who lose weight before or during treatment. There is also evidence that women who are overweight or obese have a higher incidence of recurrence of the disease, as compared to women who maintain a healthy weight. These facts and figures may sound scary, and it is true that the increased risks for women who are overweight or obese are serious and very real. However, let’s look at this data from another perspective. Women who are able to reach and maintain their healthy weight can cut their risk of developing breast cancer in half. Women who lose weight during therapy have a better chance at effective treatment that produces a great outcome. Women who stay at their healthy weight are less likely to have recurrence of their breast cancer. Achieving and maintaining your healthy weight is one of the most valuable steps you can take in breast cancer prevention. There are many factors that may contribute to developing breast cancer, being at risk does not necessarily mean that you are guaranteed to have the disease. There are factors based on genetic predisposition, age, environmental factors, and of course promptly recognizing and treating cancerous or precancerous tissue. Maintaining a healthy weight should be supported by regular visits to your doctor and mammograms as your physician deems appropriate. As I was reflecting about this piece, the link between breast cancer and weight really drove home for me what an important time this is to be a weight management physician. We as a society have started to move beyond the notion that “healthy” is just a euphemism for “thin.” The idea that eating well and exercising are only for people who have to “work hard” at “looking good” is outdated. Frankly, I am glad to see that my patients are far more conscious about feeling healthy just as much as looking attractive. Every year more research comes out linking excess weight to heart disease, cancer, stroke, diabetes, mental illness, and a host of other concerns. We consistently hear that one of the best ways to pre-

vent disease is by releasing excess weight and moving toward an all-around healthy lifestyle. or many former eyeglass wearers, contact lenses are the most wondrous of spectacles. But they also know that their use requires care. According to the Centers for Disease Control, 20 percent of eye infections are caused by contacts that result in eye damage, including scarred corneas, reduced vision and even the need for a corneal transplant. But before you blindly run for your old frames, the CDC also notes you can take steps to reduce eye infection risk, such as taking your contacts out at night when you sleep and always storing them in fresh solution. GREENHOUSE Air pollution doesn't stop at your door. It occurs inside homes as well. One natural way to reduce or prevent it may be sprucing up rooms with houseplants. New research shows that certain plants are particularly good at scrubbing volatile organic compounds (VOC) from the air. VOCs are chemicals found in paints and cleaning products. They have been linked to a variety of ailments. The most effective plants tested were bromeliads, a diverse family of mostly tropical species that were found to clear the air of more than 80 percent of six VOCs. EXERCISE FOR YOUR BRAIN HEALTH BY CHARLYN FARGO

I

t may take more than a simple walk around the block, but a new study finds that vigorous physical activity in midlife can help reduce the risk of cognitive decline. A long-term study of twins reveals physical activity may reduce the risk of cognitive decline later in life. Following up with more than 3,000 twins 25 years after they provided information on their exercise habits shows physical activity in midlife leads to better cognition later in life, report researchers in Finland in a new

study published in the Journal of Alzheimer's Disease. Several studies in recent years have shown physical activity can slow or prevent cognitive decline associated with aging, including one earlier this year suggesting exercise can slow mental decline by as much as 10 years. For the new study, researchers followed up with 3,050 twins in Finland with a mean age of 49 who had assessed their physical activity on questionnaires in 1975 and 1981, assessing their cognition during telephone interviews a mean of 25.1 years after they took part in the original study. The researchers used vigorous physical activity and volume of physical activity as predictors of cognitive impairment. Although the study did not show levels of activity linked to specific cognitive performance, the researchers found those involved with the vigorous physical activity during midlife tended to have a reduced

risk of cognitive decline compared to the most sedentary participants in the study. "Overall, the study shows that moderately vigorous physical activity, meaning more strenuous than walking, is associated with better cognition after an average of 25 years," Professor Urho Kujala said in a press release. "This finding is in accordance with earlier animal model studies, which have shown that physical activity increases the amount of growth factors in the brain and improves synaptic plasticity." The bottom line? It's never too late to join the gym and get pumping muscle. You'll be thinking clearer for years to come. Q AND A Q: What are wheat berries? Are they healthier than other wheat products? A: Wheat berries are simply the whole kernels -- technically one-seeded


fruits -- of the wheat plant. Because they are the whole grain, they contain all the vitamins, minerals, fiber and other potentially beneficial compounds of the grain. They are nutritionally similar to bulgur and cracked wheat and more nutritious than highly processed wheat products, such as refined white flour. You can find wheat berries in supermarkets, packaged or in bulk bins. They take about an hour to cook -- less if you presoak them. The longer they cook, the softer they get. Overcooked berries lose their shape. For crunchier berries, cook them for a shorter time. Wheat berries have a nutty taste and chewy texture. Mix them with other grains, vegetables, nuts, dried fruit and herbs; add them to soups, stuffing and casseroles, or sprinkle them on salads. Keep uncooked wheat berries in the refrigerator or freezer to slow spoilage. Once cooked, wheat berries last about one week refrigerated. -- University of

HAWAIIAN STEAK FAJITAS WITH GRILLED PINEAPPLE SALSA • 1 pound strip steak, trimmed • 4 cups presliced fresh peppers and onions • 2 tablespoons extra virgin olive oil • 1/4 teaspoon salt • 1/4 teaspoon ground pepper • 2 slices prepeeled fresh pineapple (about 4 ounces) • 3 tablespoons reduced sodium teriyaki sauce • 1/4 cup pico de gallo or other fresh tomato salsa • 8 corn tortillas, warmed

Place a grill basket on half of grill; preheat the grill to high. Cut steak crosswise into 1/4-inch-thick strips. Toss in a medium bowl with peppers and onions, oil, salt and pepper. Place the steak and vegetables in the grill basket; grill, stirring once or twice, until the vegetables are soft and charred, 8 to 10 minutes. Oil the other side of the grill rack; place pineapple on the rack and grill, turning once, until slightly charred, about 2 minutes per side. Transfer the steak and vegetables to a large bowl and toss with teriyaki sauce. Dice the pineapple and combine in a small bowl with pico de gallo (or salsa). Serve the steak and vegetables on tortillas with the salsa. Serves 4: 2 tortillas, 1 cup fajita mix and 3 tablespoons pineapple salsa each. Per serving: 378 calories, 27 g protein, 37 g carbohydrate, 14 g fat, 61 mg cholesterol, 5 g fiber, 532 mg sodium.

With the '90s retro influence inspiring many designers this fall, the choker is making a big comeback. From chunky gold link cords to Victorian velvet ribbons, this jewelry trend is one of the best ways to show off a bare neckline thanks to the popularity of the off-theshoulder tops that continue to be a fashion favorite. Layer your pendants with a new choker for even more charm. --Oversized earrings. Another result of the open necklines and bare shoulders that many designers favor for fall, the larger than life earrings are perfect complements just like the choker necklaces. The newest earrings dangle in sculptural geometric shapes and linear designs that are long on style. Ear cuffs add a punkish note, and single statement earrings are still popping up on the runways. Top them off with a sleek topknot.

--Bold rings. The statement cocktail ring has been a stunning addition to our accessory wardrobes for the last few years, but as the clothes become more dramatic in silhouette, so does the jewelry, and the rings are no exception. These rocks rock! --Wide belts. Since the clothes may be a little bit on the big and bolder side this fall, cinching in the waist is the focus of many of the season's jackets and dresses. Think corset styles that lace up to tame these extra wide belts are definitely a focal point that may or may not provide much comfort. But if the thick belts just make you feel stuffed, don't worry. There are lots of skinny wrap belts out there too. Just be sure to try them on for size first. --Jeweled pins. The brooch is back, bejeweled with colorful stones and pearls. Whether you have an art-deco treasure from your grandmother or you buy a glittering new costume piece, these pins are lapel ready and a personality piece you'll wear for years. --Silk scarves. The longer pashmina scarf has been a classic accessory for years now, but this fall is a great time to make a switch to smaller silk squares or "neckerchiefs" that twist around the neck in a bold, colorful print. Tuck them into sweaters or jackets, and wear them as an alternative to a necklace. Another twist on the silk scarf: long, skinny scarves tied into bows. --Furry extras. Whether it's a fur collar, a fur stole or a scarf with furry tails, the plush stuff is an elegant addition to coats, jackets and sweaters. In jewel-tone colors like burgundy and emerald or cobalt blue, these lush accessories provide a touch of glamour to any outfit. --Savvy socks. Tights have always been a winter warm-up for legs, but this fall, the socks are stepping out on designer runways. Cozy ankle-length socks are paired with Mary Janes and pumps giving high heels a youthful appeal. --Statement gloves. Get ready. The latest gloves are much more than winter must-haves. They are making statements all on their own -- true arm candy with bold artistic adornments in stand-out colors. Stack cuff bracelets over them and enjoy the cold weather ahead.

THE JUNIOR LEAGUE’S 53RD ANNUAL ART HARVEST

T

he Junior League of Dunedin Clearwater-Dunedin will be hosting their 53rd Annual Art Harvest Festival on November 5th and 6th at Highlander Park in Dunedin. The Art Harvest Festival is a juried fine art show that attracts over 200 artists from around the country. This year’s featured artist is Linda Heath, a self-taught, local artist with a passion for the art of Gyotaku Fish Rubbing. Gyotaku is the traditional Japanese

method of printing fish. The natural imprinting technique began as a practical way for fisherman to chart their catches and since has evolved into a beautiful art form. Linda discovered the art of Gyotaku when traveling through Asia. Being an avid angler, she was drawn to the technique. She charts and creates with fish she catches in the Gulf of Mexico. Linda commented, "I have attempted to capture the essence and shape of each fish and I hope my Gyotaku fish rubs will give you a greater appreciation of our underwater nature and all its beauty." You can meet Linda and over 200 other artists the first weekend of November at Highlander Park in Dunedin. All proceeds from this annual event benefit the community work of the Junior League of Clearwater Dunedin. In the last 68 years, JLCD has raised more than 1.8 million dollars and contributed more than 1 mil-

lion volunteer hours to the community. They have funded many notable projects including the Dunedin Fine Arts Center, UPARC Foundation and The Rick Pitino High Point Center. DÉCOR Universal design is the buzz phrase in the design world and now entering into the mainstream to describe design that takes into consideration those with disabilities and issues common with aging, such as diminished sight, restricted movement and loss of hearing. Gadgets and designs to support these issues have come a long way, so they visually aren't less appealing nor have to give the visual clues that they are specialized products. Designers throughout the nation are incorporating Universal Design standards throughout their work. Many have adopted the design philosophy of creating "lifetime designs", which gives homes the chance to be a forever home rather than just a first or family home. The upside of this new design approach is that they do not carry the "gray haze" of the 55+ communities.

had heard about this day from friends. And so just like that, one day in my 49th year, on an otherwise unremarkable day, it arrived: the dreaded AARP envelope with my name on it. I started hyperventilating. An immediate coating of nervous sweat appeared on my forehead as I opened the unwanted envelope with the red card. This can't be

happening to me. Hold on, hold on, I'm not even thinking of retiring, how dare you send me such a thing? It happens to every one of us, even though in my mind I am and will always be 27, we start to get to the age where you have to start planning for the golden years. Of course, this doesn't mean necessarily moving to a 55+ community, not that there is anything wrong with that. However, most folks would prefer not to think of any change. We would like to believe that life will remain pretty much the same. While there are many who will embrace the empty nest and trade up to that coveted condo, others will prefer to remain exactly where they are,

I’m not sure, but let’s think about bringing some color into your bathroom. We just recently finished up a Beach Home in St. Augustine, Florida where the

client chose her colors on how she wants to enjoy life in a beachy, refreshing kind of way. She chose the countertop material from Avonite Surfaces called Cozumel, which has blue, Sea glass Green, and Frosted Glass colors in a white base with integrated sinks. The cabinet she had us make was painted a Teal-ish color called Raindrop from Benjamin Moore. The combination was stunning. We also made her shower surround walls with Avonite white with bead lines in it to give a hint of Cape Cod and of course look more stylish. One of the shower walls that separates the tub from the shower was made to look like a glacier of ice with a chiseled edge. The before and after pictures clearly show how this bathroom has been refreshed. Ask yourself, how do you

CREATING HARMONY IN YOUR HOME JOSEPH PUBILLONES

Why is it sometimes you walk into a room and you feel instantly at ease? The sensation is akin to feeling a warm embrace, it's almost as if the room is telling you that you belong there. Yet in other spaces, sometimes you feel uncomfortable and unrest. Is there such a thing as designing to provoke certain emotions or

affect the moods of the occupants? The answer is... an uncertain maybe. I am not sure there is a scientific test to determine the success, failure or intention of the design room. Every designer and homeowner strives for their home or project to be the best it can be. Yes, of course polite company will always oooh and aaah when visiting a friend or acquaintance's home, and yet there are times when you feel that special something when you enter a well-designed room that leaves you speechless. Certain factors affect a room's livability and aura. Color, light, flow, furniture layout and the actual physical items such as the furniture, lighting fixtures, accesso-

ries and art are all determining factors. Creating harmony in a home sounds easy enough, but in reality it is quite a challenge, even when in the hands of professional designers. A balance of concepts and elements is needed in each room and in the house as a whole to make a successful project. All the rooms of your home shouldn't necessarily be designed or decorated in the same manner or style, but they should complement each other and create an engaging link between each room to reinforce the concept of harmony or wholeness. Visual harmony, as in musical harmony, is the combination of elements -- some which are the same and others which are different -- that create a pleasing effect, in their own right, but also by their interweaving. Your ideas and concepts must be clear, in order to marry all the rooms of your home into a harmonious whole. It is important to determine which space or room in the home is the heart. This important room often is a public room such as living room or family room, and is the center of life and activity. Some homeowners often choose the living room as the one that defines the character, tone and style of your home, and design from this room outwards to engage others. This design approach is dependent on the hierarchy given by the homeowner to each room. Of course, the importance given to each room may vary from one designer or homeowner to the next. Another tried and true method or approach to achieving a harmonious design is to take consider the rooms in sequential order and organization of the floor plan from foyer or entry through to the bedrooms. Transitioning a design from room to room in this manner makes sense for those which prefer structure and order. Color is a very important element in creating harmony in a home. There should be one or two colors to serve as links between rooms. Although the most obvious place for colors are walls, there are subtler ways to weave colors that create harmony in accessories, area rugs, decorative pillows and art.

MEET LOUIS BY JOSEPH PUBILLONES

T

here has never been a monarch more keenly focused on art and design than France's King Louis XIV, the Sun King. As he took the throne at age 5 for 72 years, his impact was felt in almost every aspect of daily life. His most ambitious project was the transformation of a hunting lodge into the Palace of Versailles. There, he had at his disposal the very best artist and craftsmen from France, Italy and Germany to help him create the perfect formal background for his absolute rule. All surfaces were to shine and show off his commanding authority especially at night under the flickering of candlelight, a genuine spectacle. The Hall of Mirrors, entire suites of solid sterling furniture and gilding were his signature trademark. The architecture with the enfilade of doorways and suites had a formality and rigidity, similarly emulated in the furniture of the Louis XIV period (16601720). The furniture style from this period was throne-like and over the top with intricate floral carvings, copious amounts of inlaid woods and ornate gilded bronze fitting known as ormolu. All details, including sunbursts were to highlight the power of his Royal Highness. Politically, Louis XV's reign was not about absolute power, and he was seen by many as a benevolent monarch, but a weak one. The furniture during this period saw a softening of lines akin to the Rococo style very popular in Germany and Austria. From this period, the well known upholstered chair known as a Bergere emerged. With a slightly pitched back and a wider seat, the bergere was a less formal chair in which one could relax. Louis XV furniture (1700-1750) donned cabriolet or "s" curved legs and was decorated with scrolls and shells. Bergeres have been a favorite of decorators to pair in seating arrangements, because they are quite comfortable and can mix with a variety of other styles.

Louis XVI was the last of the French monarchs. The first part of his reign was known as a period of enlightenment with the abolition of serfdom, displeasing the nobility. No amount of reforms could keep the French content and King Louis XV from a tragic death by guillotine. Louis XVI furniture (1750-1800) favored Neoclassicism. Simple architectural lines were implemented in furniture design, and produced some of the most influential pieces of furniture namely the Louis XVI chair. Surely you've seen these chairs in fancy restaurants, ballrooms, condo lobbies and perhaps even in the dining

room in your home. These formal upright chairs have been used forever as a chair for short-term use. Their clean architectural lines make them fit in even in today's decor. The design incorporates an exposed wood-framed, rounded or square backrest, with a pillowed bottom seat and column-like legs, sometimes fluted sometimes not. The chair style is fascinating because of its enduring simplicity and elegance. Numerous furniture styles have explored this classic design, and it has been produced in almost every kind of material from plastic to iron to plexiglass. This chair is sure to be around another 300 years.

SHOULD YOU GO GLUTEN-FREE? BY CHARLYN FARGO

W

e seem to fear gluten these days like we used to fear fat and carbs. At a recent women's conference I attended, the buffet line included four large signs declaring the salad, vegetables and chicken were all gluten-free. The people standing in line next to me wondered if that was a good thing? Gluten-free diets seem to be the latest fad, yet new research shows the number of people being diagnosed with celiac disease hasn't increased. Celiac disease is an autoimmune disorder, in which foods containing gluten trigger the immune system to attack and damage the small intestine, according to the Celiac Disease Foundation. Gluten is a protein found naturally in grains like wheat, barley and rye. People with celiac disease have no choice but to avoid gluten in their diet. If they don't, their small intestine is damaged every time they eat something with gluten. And that can be serious. But for most of us,

gluten isn't a bad thing. Foods with gluten typically have fiber, which we all need to increase our daily consumption. Yet, gluten-free diets appear to have become a trendy way to address any sort of gastrointestinal problem, said lead author of the study, Dr. Hyun-Seok Kim, an internal medicine resident at the Rutgers New Jersey Medical School in Newark, N.J. "People may have a gluten sensitivity or non-specific gastrointestinal symptoms, and simply assume that a gluten-free diet will help their symptoms," Kim wrote in the study papers. The number of Americans following a gluten-free diet tripled between 2009 and 2014, but diagnoses of celiac disease remained stable during that same period, the researchers found. The study was published as a research letter in the Sept. 6 online edition of JAMA Internal Medicine. For their study, Kim and his colleagues reviewed data from the U.S. National Health and Nutrition Examination Surveys, a regular survey of American health and diet conducted by the U.S. Centers for Disease Control and Prevention. The team identified more than 22,000 survey participants -- aged 6 and older -- who had blood tests for celiac disease. The survey volunteers were asked whether

they had been diagnosed with celiac disease or were following a gluten-free diet. Based on their analysis, the researchers estimated there are around 1.76 million people with celiac disease in the United States. About 2.7 million more people adhere to a gluten-free diet even though they don't have celiac disease, the findings showed. Around a half percent of survey participants reported being on a gluten-free diet in 2009-2010. By 2013-2014, that number was closing in on 2 percent, the investigators found. The results suggest that the gluten-free diet has become something of a fad, Kim said. He suggested that people may be adopting a gluten-free diet because they suffer from non-celiac gluten sensitivity, with gastrointestinal symptoms that improve when they lay off the gluten. However, people choosing a gluten-free diet often haven't consulted with a digestive specialist or dietitian, and may not be following the stict diet required by those diagnosed with celiac disease. The bottom line is a gluten-free diet can be difficult and expensive. Choosing to go gluten-free, if you don't need to, may make your life more challenging.


Q AND A Q: What is brewer's yeast, and are supplements worth taking? A: Like baker's yeast, it is a strain of Saccharomyces cerevisiae. As its name suggests, brewer's yeast is used in beer production. It is sold in deactivated form as a nutritional supplement (flakes or powder), supplying protein, B vitamins, and trace minerals, such as chromium and manganese. "Nutritional yeast" is usually also a strain of Saccharomyces cerevisiae. Like brewer's yeast supplements, nutritional yeast supplements are inactive. Yeast supplements vary nutritionally, depending on the medium on which the yeast is grown, how they are processed, and whether they are fortified. Some are much higher in chromium or selenium, for example, and many, but not all, are rich in folic acid. Most contain little vitamin B12. There's no evidence that yeast supplements will boost energy, improve athletic performance, or have other health benefits, as sometimes claimed. Chromium-rich yeast is often touted for controlling blood cholesterol and diabetes, but the evidence that chromium has such effects is inconsistent. Use yeast supplements if you like the way they taste. Nutritional yeast has a nutty, cheesy flavor; brewer's yeast tends to be more bitter, though de-

bittered products are available. Compare labels for nutrients, especially if you are vegan and are looking for extra B12. It's always best to get nutrients from a healthy diet. But if you do need supplemental nutrients -- for instance, if you are a woman of childbearing age and are trying to get extra folic acid, as recommended - a more reliable way to get them is with a basic multivitamin/mineral pill. -- University of California, Berkeley Wellness Letter, August 2016. RECIPE Fall often is the time to break out the loaf pans and get busy making homemade bread. Eating Well magazine offers a Seeded Whole-Grain Quick Bread that has three times the protein and fiber than regular bread. SEEDED WHOLE-GRAIN QUICK BREAD • 1/3 cup unsalted sunflower seeds • 1/3 cup unsalted pumpkin seeds • 3 tablespoons flaxseed • 3 tablespoons sesame seeds • 2 cups white whole-wheat flour • 1 tablespoon baking powder • 1/2 teaspoon baking soda • 1/2 teaspoon salt • 3 large eggs

• 1 1/2 cups buttermilk • 1 cup rolled oats • 1/2 cup avocado oil or extra-virgin olive oil • 2 tablespoons honey or pure maple syrup Preheat oven to 350 degrees. Coat a 9 by 5 inch loaf pan with cooking spray. Combine sunflower seeds, pumpkin seeds, flaxseed and sesame seeds in a dry, medium skillet; toast over medium heat, stirring, until lightly brown and starting to pop, 5 to 7 minutes. Reserve 2 tablespoons of the seed mixture in a small bowl; transfer the remaining seeds to a large bowl. Add flour, baking powder, baking soda and salt to the large bowl; whisk to combine. Whisk eggs in a medium bowl, then stir in buttermilk, oats, oil and honey. Pour the wet ingredients in the dry ingredients; stir and fold together until combine. Scrape the batter into the prepared pan. Sprinkle with reserved seeds. Bake until golden brown, 45 to 55 minutes. Let cool in the pan for about 30 minutes before turning out onto a wire rack to cool completely. Makes 1 loaf; 10 slices. Per slice: 340 calories, 10 g protein, 32 g carbohydrate, 6 g total sugars, 20 g fat, 57 mg cholesterol, 5 g fiber, 418 mg sodium.

THE TRUTH ABOUT CARBS BY CHARLYN FARGO

M

ost of the time, carbs get a bad rap. Some people claim carbs are fattening and others claim carbs trigger cravings. But lumping all carbs together -- like doughnuts and oatmeal -- simply isn't right. The carbs in bread, cereal, pasta, potatoes, sweets and soda are considered "bad" while carbs in legumes, fruits, vegetables and dairy products are "good." The truth is rather than avoiding carbs, which can mean missing out on vitamins, minerals, fiber and phytonutrients that are important in preventing chronic diseases, we need to make smarter carb choices. All carbs contain 4 calories per gram, but research shows the quality of carbo-

hydrate can make a difference when you step on the scale. In a June 2015 American Journal of Clinical Nutrition study, scientists examined 16 to 24 years of data from more than 120,000 adults from three large, long-term studies. Sugar-sweetened foods and refined grains, such as white bread and white rice, were equally associated with increased weight gain. However, other research shows consuming high-quality carbs, including whole grains, dairy, fruits and non-starchy vegetables is linked to weight loss. In the September 2015 issue of PLOS Medicine, a study of more than 133,000 adults followed for 24 years showed that increased intake of starchy vegetables, including corn, peas and potatoes was associated with weight gain. In addition, carbohydrate quality impacts the risk of type 2 diabetes. In a December 2015 study in the American Journal of Clinical Nutrition, scientists looked at data from more than 70,000 women in the Nurses' Health Study over 24 years.

The more total fiber, cereal (grain) fiber and fruit fiber people ate, the lower their risk of type 2 diabetes. The study also found eating a lot of starchy carbs, such as white bread, refined crackers, white potatoes and corn, was associated with a 23 percent increased risk of type 2 diabetes. The message isn't to avoid starchy carbs, but to choose them in moderation, according to a summary in Environmental Nutrition, September 2016. Here's the bottom line: Don't avoid carbs. Eat whole foods -- whole grains, whole fruits and whole vegetables - which are digested more slowly and contain more water and fiber to fill you up. Q AND A Q: Are dairy foods the best source of calcium to fight osteoporosis, or are supplements better? It can be difficult to meet the calcium requirement without dairy foods, but it can be done for those who do not tolerate dairy. Non-dairy sources of calcium include fortified almond, soy and cashew "milk," fortified breakfast cereals, canned fish, spinach and other dark leafy greens, soybeans and other beans, and okra.

TURKEY & VEGETABLE MEATLOAF

2 tablespoons extra-virgin olive oil 3/4 cup finely diced sweet potato 1/3 cup minced shallots 1/2 cup finely diced red bell pepper 1/2 cup finely diced zucchini 3/4 cup corn, fresh or frozen 3/4 cup peas, fresh or frozen 1 clove garlic, minced 3/4 teaspoon salt 1/2 teaspoon ground pepper 2 large eggs 1/2 cup low-fat milk 3/4 cup whole-wheat panko breadcrumbs 1/4 cup minced fresh parsley 2 tablespoons Worcestershire sauce 1 teaspoon chopped fresh thyme Pinch of cayenne pepper 2 pounds 85 percent-lean ground turkey 1/4 cup ketchup

Preheat oven to 350 degrees. Coat a rimmed baking sheet with nonstick cooking spray. Heat oil in a large skillet over

medium-high heat. Add sweet potato and shallots and cook, stirring occasionally, for 3 minutes. Add bell pepper and zucchini; cook, stirring, until the vegetables are starting to soften, 2 to 3 minutes. Add corn, peas and garlic; cook, stirring, for 2 minutes more. Stir in salt and pepper. Turn the mixture onto a plate and cool for 10 minutes. Whisk eggs in a large bowl; whisk in milk, breadcrumbs, parsley, Worcestershire, thyme and cayenne. Stir in the cooled vegetables. Add turkey and gently but thoroughly mix to combine. Shape the mixture into two loaves on the prepared baking sheet. Brush the top of each loaf with half the ketchup. Bake until a thermometer reads 160 degrees, about 40 minutes. Let stand for 15 minutes before slicing. Serves 8:4 (1 1/2 inch-thick) slices per meatloaf. Per slice: 342 calories, 24 g protein, 19 g carbohydrate, 20 g fat, 136 mg cholesterol, 3 g fiber, 455 mg sodium.

FIBER TO THE RESCUE BY CHARLYN FARGO

F

or those of use trying to maintain or lose weight (and that covers most of us), there may be a simple answer that many of us overlook: getting more fiber in our diets. The average American gets about 17 grams of fiber a day, but we need much more -- women need 25 grams a day and men need 38 grams. If getting more fiber is the only dietary change you make, you'll lose weight, according to a study in the Annals of Internal Medicine. In the study, dieters who were told to get at least 30 grams of fiber a day, but given no other dietary parameters, lost

a significant amount of weight. They lost nearly as much as a group put on a much more complex diet that required limiting calories, fat, sugar and salt and upping fruit, veggie and whole-grain consumption. The reason? Fiber-rich foods not only fill you up faster and keep you satisfied longer, but they also prevent the body from absorbing some of the calories in the other foods you eat. Canadian researchers collected data from 21 clinical studies and 940 adults. When individuals incorporated one serving of pulses (beans, lentils or chickpeas) into their daily diet -- without making any other dietary changes -- they lost an average of .75 pounds over six weeks. The findings, printed in the American Journal of Clinical Nutrition suggest that simply adding pulses to your diet can help with weight loss.

A second study, reported in Cooking Light magazine, found that people who doubled their fiber intake to the recommended amount ate 90 to 130 calories less. A study at the Medical University of South Carolina found that fiber can also help avoid putting pounds back on. The study found people who got more fiber tendered to be learner overall while those who were obese got an average of almost 1 gram a day less fiber than normal-weight participants. Research at Georgia State University found that mice put on diets lacking in fiber, specifically soluble fiber, the kind found in oatmeal, gained weight and had more body fat compared to those who weren't deficient in soluble fiber. And the mice given adequate soluble fiber resisted fat gain, even when put on a high-fat diet. Another reason to increase your fiber intake? An analysis of 19 studies found


that people who ate more fiber -- at least 26 grams a day -- lowered their odds of getting diabetes by 18 percent, compared to those who consumed less than 19 grams a day. So what are some good sources of fiber? Oatmeal, bran flakes, blackberries, raspberries, whole wheat bread, pasta and tortillas, avocadoes, black beans, dried figs, peanuts, quinoa, chia, broccoli, baked and sweet potatoes. A note of caution -- start slowly on this path to more fiber -- or you may experience stomach cramps. Start by increasing fiber by about 5 grams per day and drink plenty of water. Q and A Q: Can carb cycling help me lose weight? A: Carb cycling's roots are in bodybuilding. But it's easy enough for any

average Joe, which is perhaps why it's gone mainstream. When you cycle your carb intake, you vary how many carbs you eat throughout the week, which some days being low-carb (2 1/2 to 5 servings) and others high carb (10 to 20 servings). The thinking is that your low-carb days put you in a fat-burning state and eating high-carb boosts your metabolism. Unfortunately, the research on intermittently restricting carbs is almost nil. The bottom line is any diet that cuts calories to these targets usually leads to weight loss. If you want to slim down by cutting carbs, carb cycling may be an easier regime to follow than going low-carb for the long haul. More research is needed, though, to see fi carb cycling is more effective longterm than other calorie-restricted styles of eating. If you decide to try, opt for goodquality carbs (whole-wheat bread, whole grains) and keep your "feast" days sen-

BREAKFAST-TO-GO-SMOOTHIE • 1 1/2 cups frozen grapes • 1 banana, sliced • 1/2 cup vanilla or honey-flavored low-fat Greek yogurt • 1/2 cup grape juice • 1/4 cup wheat flake cereal Combine all the ingredients in a blender and blend for 1 minute. Serve immediately. Makes 2 servings. Per serving: 251 calories, 6 g protein, 57 g carbohydrate, 1.5 g fat, 3 g fiber, 47 mg sodium.

LUXURIOUS RESORTS TELL HISTORY OF AMERICA'S EAST COAST BY VICTOR BLOCK

L

et's take a walk through history. In 1740, a Native American chieftain helped lay out a much-needed eastto-west route through Great Britain's Maryland and Pennsylvania colonies. Later, if America's Founding Fathers had sought a retreat to celebrate victory over England, they could have partied at the Homestead, a humble 18-room lodge in what then was the Virginia colony. Two years after the Declaration of Independence was adopted, the first guests traveled to White Sulphur Springs in present-day West Virginia to restore their health by "taking the waters." These historic episodes are associated with three of the most outstanding resorts in the country. My personal favorite is revealed below. The Omni Homestead Resort is nes-

tled in rolling hills around Hot Springs, Virginia. The Greenbrier resides among dense forests that blanket West Virginia's Allegheny Mountains. Nemacolin Woodlands Resort, which is named for the Native American trailblazer, lies in Pennsylvania's Laurel Highlands, not far from where that early path was marked. Each of these venerable vacation venues offers the extensive array of facilities and choice of activities that guests expect at upscale resorts. At the same time they keep one foot firmly planted in their storied past. Many attractions show up at all three. They include accommodations fit for a president, king and luminaries from other walks of life. A number of presidents and other dignitaries have graced the resorts' premises. When feeding royalty, a president or member of high society, the goal is to satisfy palates that are used to the finest in cuisine. This challenge is met and exceeded in both formal dining rooms and casual eateries. For example, Nemacolin offers food options ranging from an oldfashioned ice cream and snack bar to the luxurious Lautrec, one of only 25 restaurants in the world to have simultaneous Forbes Five Star and AAA Five Diamond rankings. The list of other common offerings shared by these esteemed destination

resorts continues well beyond food and board. Outstanding facilities for golf and tennis? Check. Indoor and outdoor swimming pools? Of course. Archery and fishing? Natch. But that list is just for starters. There also are unique activities and attributes that help each resort stand out not only from one other, but also in comparison with many other top-notch vacation properties around the country. The setting at the Omni Homestead, which is celebrating its 250th anniversary this year, is very different from what greeted guests in the past. The complex now sprawls across some 2,300 acres, and its year-round offerings range from snow-skiing, snow-tubing and ice-skating to warm-weather hiking and biking, fishing, swimming, canoeing and horseback-riding. An expansive fitness center and spa appeal to those seeking to enhance themselves both inside and outside. There also are some welcome surprises. The Homestead, like the Greenbrier, has a falconry facility where guests may learn to interact with trained falcons, hawks and other birds of prey. Resort tours are available by Segway, hayride and horse-drawn carriage. Then there are "the waters." Native Americans discovered natural warm springs in the area hundreds of years ago.


The Jefferson Pools in which guests soak today were so named after Tom spent three weeks enjoying the relaxing atmosphere of the Homestead and its mineral baths. Were he to visit today, Jefferson also would find other appeals to his liking. Given his fondness for haute cuisine, which prompted one biographer to call him "America's first foodie," the country's third president doubtless would find much to enjoy in the elegant Main Dining Room, which features multicourse continental fare "with regional influences." He also would be pleased that an alternative eatery that focuses on farm-to-table ingredients is named Jefferson's Restaurant. While the Homestead continues to offer guests the relaxing and restorative properties of its mineral spring waters, the Greenbrier has taken that feature a step further. The Greenbrier Clinic has been practicing diagnostic medicine since 1948 and in 2014 was expanded to include a fullservice MedSpa and Plastic Surgery Center. The facility offers a range of beauty, dermatological and other services. However, don't let that lead you to conclude that the Greenbrier is anything except a full-service, top-of-the-line resort. Some guests seek to challenge their skills behind a steering wheel headed for the offroad driving course, while huntsmen take advantage of the fall-to-winter bird-hunting season.

When Old Man Winter blows in, activities such as ice-skating and snowmobiling are added to the mix. Wannabe chefs may attend culinary demonstrations to learn step-by-step preparation of dishes they can serve up at home. Like the Homestead, the Greenbrier has a long history of attracting guests who seek a soothing soak in natural sulphur mineral waters. In addition, its story includes interesting historical tidbits. In 1942 the hotel was transformed into an Army hospital that operated throughout World War II. And for 30 years beginning in the 1950s, the Greenbrier was the site of a secret underground bunker that would be occupied by the U.S. Congress in case the nation were attacked. Resort-goers today may tour this once off-limits facility. More than most resorts, Nemacolin reflects the whims and wishes of one man. Established in 1970 as a 12-room inn, the property was purchased at auction in 1987 by Joseph A. Hardy III, the owner of a profitable lumber company who immediately set about upgrading and expanding it. Since then it has evolved into a first-class full-service resort and then some -- and ranks No. 1 with me. At the same time the usual -- and some unusual -- features have been added, the property has continued to present Hardy's whimsical sense of humor and, recently, of his daughter Maggie, who has taken over

as owner. One example is a world-class collection of art, consisting of about 1,000 pieces valued at $45 million. The works have been gathered over three decades as Hardy purchased items that struck his fancy. As a result, the buildings and grounds resemble a gallery and sculpture garden, with something beautiful or humorous, sophisticated or sassy around every turn, down every hall and sprinkled throughout the grounds. The treasures also include original Tiffany lamps and Baccarat chandeliers, an extensive seashell and fossil collection, and displays of antique automobiles and airplanes. So varied and extensive is the hoard that the resort recently hired a fulltime curator who, among other things, leads art tours. Another unusual collection is a virtual zoo's worth of animals that make their home at Nemacolin's Wildlife Academy. Close to 100 species of wildlife reside in large natural settings on the resort grounds. The menagerie ranges from such species as sheep, donkeys and miniature longhorn cattle to more exotic residents that include the African lion, Bengal and white tigers, and endangered Iranian red sheep. Along with viewing wildlife, guests may opt for a wild and wet off-road driving experience. After a hands-on tutorial in a specially built Jeep Rubicon, my wife and I steered the vehicle along rugged trails, over massive rocks that tilted us to near-tipping angles and through mud holes so deep that sludge oozed in through the doors. Our instructor was not exaggerating when he said, "At times you may be going only five miles an hour, but they'll be the most exciting five miles you'll ever drive." That comment also related to our entire stay at Nemacolin, one of three of the most exceptionally inviting and delighting resorts anywhere.
