Lemony Cream Cheese Pancakes With Blueberries (6 Servings)
Peach Brandied Coffee And Ice Cream (2 Servings)

1 ½ cups flour 1 TB sugar 1 TB baking powder ½ tsp. baking soda 1 pinch salt 2 large eggs, separated 1-cup buttermilk 6 oz. cream cheese, cut up 3 tsp. melted butter 1 tsp. vanilla 2 TB lemon juice Zest of one large lemon 1 ½ cup fresh or frozen blueberries Honey, maple syrup or jam to serve
In a medium bowl, mix together flour, sugar, baking powder, baking soda and salt. In a separate bowl, whisk together egg yolks and buttermilk; add cream cheese and mix until cream cheese has separated into uniformly small lumps. Stir in melted butter, vanilla, lemon juice and lemon zest. Add dry ingredients to wet, then stir to combine. Whisk two egg whites until stiff but not dry; fold gently into batter. Heat griddle over medium high heat. Then, lower heat to medium and butter or oil pan. Drop batter onto pan by 1/3 cupful’s. Once batter has spread, drop in the berries. You may want to drizzle some batter to cover the berries. These pancakes need to be cooked a bit longer than you might expect; they won’t bubble as quickly as plain pancakes. Turn down the heat if necessary to keep them from overbrowning and let them puff up to their full extent after you turn them over, which will take 2 to 3 minutes. Serve with honey, maple syrup or jam.
4 heaping tsp. instant coffee 2 cups ice cold water 2 TB peach brandy 2 large scoops peach ice cream Whipped Cream Nutmeg, cinnamon or chocolate shavings for garnish Maraschino cherries
Divide the coffee and water into two tall chilled glasses. Stir until completely mixed. Add peach brandy and ice cream, dividing between each glass and stir a few more times. Top each glass with whipped cream sprinkled with nutmeg, cinnamon or chocolate shavings. Top with a maraschino cherry.
