As we launch into the busiest social season since the advent of the pandemic, we’re bound to see more and more parties. Be it because of the impending holidays, the desire to gather and celebrate, or the return of our seasonal residents, entertaining has never been more front of mind. This month, we toast a new spirit that will likely figure prominently in a lot of home gatherings. Star polo player Nic Roldan has teamed up with spirits guru Matti Anttila and Diego Urrutia to introduce a gin brand that has become the darling of many mixologists. If you haven’t tried their High Goal Gin, I recommend you mix a killer G&T on a hot afternoon—or try one of the concoctions shown in “The High Life” on page 40. Since we’re all eagerly anticipating the Fort Lauderdale International Boat Show, this year on October 27 through 31, we take a look at some trends in yacht design on page 20. Patrick Knowles, who specializes in custom mega yachts, super yachts, and aircraft interiors, gives us the scoop on the features, colors, and configurations everyone is talking about now. Head up to the roof of the Las Olas Parking Garage to enjoy 360-degree views of the Intracoastal, beach, and city while perusing 30 rarely seen, iconic automobiles. Live music will set the scene for edgy pop culture lifestyle curations—like a high-end sneaker display that matches select cars. FORT LAUDERDALE’S MONIQUE RICHTER BEAUTIFIES WATERCRAFT USING BOTH BYGONE AND MODERN ARTISTIC TECHNIQUES
The road to Monique Richter’s career handpainting the backs of sportfishing boats is not a linear one. Growing up in Fort Lauderdale, she attended American Heritage on a fastpitch softball scholarship. She also turned pro in wakeboarding in eleventh grade, traveling to destinations like Australia, Europe, and the Philippines for nearly a decade. But, during a night out with friends days before a tour overseas, someone stepped on her toe and broke it, effectively ending her wakeboarding career. “I had to figure out another career path that was still something I wanted to do,” recalls Richter. So, she started running boats in St. Thomas, working her way up to captain. While figuring out her new career, her early love of art kept calling her back. 18
Her mom taught her how to draw at age 3. In school, she couldn’t take art classes until senior year, during which time Richter says her teacher allowed her to create her own syllabus and project list. She went on to win tons of awards at art shows in Broward County and later began selling fine art at events on Las Olas. While working on a boat in Atlantis, Bahamas, Richter remembers walking around one of the docks and seeing a boat’s transom painted faux teak. “I wasn’t impressed at all,” she says. “I left the Bahamas [knowing] I could do this way better.”
She now combines her love of art and water by working on 20 to 30 boats a month, hand-painting names, faux teakwood, and sportfish onto watercraft ranging from 65 to 550 feet long. Since 2016, she’s worked on 896 boats and counting, with a client list that includes Johnny Depp, Jimmy Buffett, Alan Jackson, and the who’s who across international borders. Aside from highprofile clientele, she also works for 54 boatbuilders. What sets her apart is her style of airbrushing names, use of platinum leaf, and the age-old technique of gold leaf that master John Teeto taught her. The “godfather” of boatbuilding, Rory Merritt, gave her a chance to paint faux teak on his boats and helped her to understand how to capture the look of real teak. In addition to the marine industry, Richter gets commissions for side projects such as this month’s large-scale mural for a waterfront home and painting the tail and wings of a Gulfstream plane. She’s also making time to focus on another passion: horses. She’ll soon turn 10 acres of land in Jupiter Farms into Blue Ridge Farms, a facility for kids with disabilities to come for therapy. “I paint, I work, and then I go to my horses,” says Richter. Andrew Cotton is turning heads with JUXTAPOSE ART—and more
Growing up in North London in the ’80s, Andrew Cotton says he was always drawn to art, animation, and cartoons, which led to an interest in drawing and painting. At 18, he began studying at the world-renowned Central Saint Martins’ School of Art and Design, known for attracting thousands of applicants and only accepting a handful each year. “When I got into there, I thought, ‘Hey, there could be an opportunity here,’” shares the now 41-year-old artist. He moved to New York in 2004, where he remembers watching people sell art on the street. “That was unbelievable to me, that you could go to one of the best locations in Manhattan and show your art,” he says. At that time, Cotton was already incorporating graffiti and street culture influences from London into his fine art. He ingeniously converted an old food truck into a mobile gallery to sell art with other artists to buyers living in Brooklyn to the Upper West Side. The hard work paid off. He soon started meeting influential people who landed 22

him on the map; he’s now represented at a handful of galleries around the world such as Stella Flame Gallery in the Hamptons. Two years ago, Cotton moved to Fort Lauderdale with his wife and two kids. He’s currently signed with New River Fine Art and
works out of a studio at Flagler Framing. It’s an ideal situation: He gets to use the space as a showroom and churn out pieces that owner Beverly Worley then frames and sends to galleries and buyers internationally. His exclusive work in partnership with New River Fine Art on Las Olas is thanks to its president, Lisa Burgess. “I gave her 15 pieces, and she sold everything,” shares Cotton. “She’s keeping me super busy, and it’s fun.” At New River Fine Art, his contemporary artwork is on display, including his series titled Split Portraits. The juxtapose art features the likeness of an icon—those who influenced the culture and Cotton’s career—in black and white. “On the other side, depending on who the artist or the icon is, I then paint that in a dimension of how they see and view the world and explore that side,” says Cotton. To date, he’s created originals of Frida Kahlo, Pablo Picasso, Keith Haring, Abraham Lincoln, and Jean-Michel Basquiat, who’s known for his influence on street art and hiphop. “I think the work speaks for itself,” he says. “I’m happy the art is selling.” Besides Split Portraits, Cotton delves into other realms, such as abstract, text-based art, and soon wants to explore NFTs and the digital market. eep in the pine forests of Montana, about a halfhour’s drive from Missoula, a new resort is changing the game for sophisticated travelers with a passion for the great outdoors. The Green O—a riff on Greenough, the town closest to the property—is a gated enclave of 12 exclusive, adults-only wilderness retreats within a 37,000-acre cattle and bison ranch that also houses the sprawling Resort at Paws Up. Literally, The Green O is situated about 450 yards from the closest point of contact with Paws Up; figuratively, it is miles apart. Because Paws Up, with its glamping tents and timber cabins, is geared toward families, the owners created this private sanctuary for couples and solo travelers seeking a refined experience with the biggest luxury of all: peace and quiet. By day, Green O guests can participate in all the wilderness adventures of the greater resort, including ATV exploration, horseback riding, hiking, fly-fishing, and clay shooting, but they can return to the tranquility of a secluded treehouse, the intimacy of cocktails by the fire, and the culinary theater of a nine-course tasting menu by a master chef. The best part? Privacy. The Green O is maxed out at 12 homes, or 24 guests, says Laurence Lipson, who co-founded Paws Up and The Green O with his late father, Dave, and his father’s wife, Nadine. “It was really critical to keep it small and intimate. It enables us to offer a more personalized level of service.” Elevated design was a top priority. The Lipsons envisioned freestanding houses with innovative forms and a

modern spin on Montana’s architectural vernacular. While native materials like Douglas fir and local stone ground each “haus” in sustainability, the biggest driving point of the design is glass. Floor-to-ceiling glass walls that blur boundaries act as a transparent skin between interior spaces and the timberland of Big Sky Country. The feeling is one of living outdoors. Of the four original designs, the Tree Haus is the most eye-popping. Lipson calls it “an architectural gem in the forest,” pointing to its surprising modern architecture based on hexagonal shapes and an inner cylindrical core around which spaces are oriented. Climbing a spiral staircase to the third level, like a child in a secret clubhouse, you arrive at a spacious bedroom suite with a bird’s-eye view of the ponderosas and larches. Clad in Douglas fir and stone, the Round Haus offers curved openings into the wilderness and a panoramic view. Its footprint is inspired by the infinity sign, with two interrelating loops that form living and sleeping quarters. The Green Haus is the model of sustainability, with a live roof that acts as insulation and camouflage within nature—and ups the wow factor of its rooftop deck. The Green Haus’ coolest feature is a bedroom skylight, roughly the dimensions of a king-size bed, that makes you feel like you’re sleeping under the stars. The Light Haus is the largest of the four plans and is designed as a house within a house. The greenhouse-like bedroom, with glass on three sides, pushes out of the main structure into the woods for consummate forest bathing. Throughout The Green O, sensitivity to the environment is key. Woods are stained to match the coloration of the tree bark, so buildings can disappear into the woodland. The top-

You’ll pay $38,900 for a 2022 JCW convertible, but you’ll want to add the $6,000 Iconic trim package to get upgraded navigation and the head-up display, along with dynamic damper control and a booming Harman/ Kardon stereo. All totaled, you’re looking at around $46,000 very nicely loaded. As for putting the fun back in driving and a huge smile on your face? Priceless. Absolutely priceless. «

Italian boatbuilder Tecnomar has partnered with Lamborghini to create a 4,000-horsepower, supercar-inspired speed demon By Howard Walker
T
hey call the shimmering shade of metallic green Verde Gea. It’s the same dark olive hue Lamborghini uses on its outrageous, $2.6-million Sián supercar, the most powerful road-going Lambo ever built, and the company’s first-ever hybrid. Look closely and you’ll spy a multitude of Lamborghini-esque design cues and features. The steering wheel is modeled after the one on the Aventador supercar, minus the airbag and paddle shifters, naturally. As for those high-back, carbon-fiber helm seats, they’re just like those in Lamborghini’s hard-core Huracán Evo, even down to the yellow racing seatbelts. What you have here with this all-new, $3.5-million Tecnomar for Lamborghini 63 is nothing less than a true Lamborghini for the sea. While plenty of luxury carmakers have partnered with boatbuilders to attach their badge to a yacht—Aston Martin, Porsche, Bugatti, and Lexus, to name a few—none of the efforts has been as convincing or as authentic as this. Lamborghini’s Centro Stile designers worked closely with Tuscany-based Tecnomar (part of the Italian Sea Group) to

come up with the jaw-dropping lines of this bold 63-footer. And this is the height of visual drama. From its needle-nosed bow to its angled hull windows, its open transom to its swept-back, carbon-fiber hardtop, this superboat screams performance. One interesting omission is the source of the 63’s awesome power. Even though Lamborghini has a marine division that builds 900-horsepower marine V-12 gas engines for use in World Offshore Series race boats, it seems they weren’t quite potent enough for the waterborne Lambo. Instead, the 63 features twin Germanbuilt MAN V-12 turbo diesels cranking out 2,000 horsepower a piece. Mated to dragreducing surface drives, they punch this 24-ton rocket ship to a top speed of almost 70 mph, while throwing up massive rooster tails out the back. Throttle back to a more sedate 45 mph, and the 63 should be able to run for more than 240 miles between fillups of its 950-gallon tank. That’s Miami to Nassau with fuel to spare. The big Lamborghini will have no trouble tackling washing machine seas if the weather takes a turn for the worse. The hull

hen Diego and Kristin Urrutia throw a dinner party in their waterfront Palm Beach home, they leave nothing to chance. Sharing the stage with Diego’s business partners, Matti Anttila (accompanied by his interior designer wife, Jennifer) and Nic Roldan (with his equestrian girlfriend, Hannah Selleck) to introduce their High Goal Gin brand to friends, the couple rely on the entertaining panache they learned from their parents. Diego, who now works as a banker and wealth manager at Merrill Lynch in Palm Beach, was born in Lima, Peru, and raised in Argentina, Singapore, and London. He fondly describes his mother’s attention to detail and her ability to please each guest. “With my mom, [it is] the more the merrier at her parties—and there are never too many Champagne glasses,” says Diego. “I learned that being a good host is to make guests feel special.”
Kristin, who was born in Philadelphia and raised in South Florida and Aspen, recalls elegant dinner parties, with her mother hosting soirees in honor of holidays such as St. Patrick’s Day and around themes like Italian night. “My mom loved to entertain and did the florals herself,” says Kristin, a TV and documentary producer and development executive who works regularly for ABC-TV, including the news magazine show 20/20, in New York. “Now I love hosting our own theme parties. Even when I lived in New York, I did tennis and back-to-school-type bashes for 200 guests.” Since meeting on the street in New York a dozen years ago, Diego and Kristin have taken to sharing the hosting duties. Kristin creates the table settings and makes the salads and sides when the party is small. Diego is a “master griller” who also greets guests and offers appetizers and drinks. This particular soiree, however, was different, because Diego was joined by Matti and Nic, who are equally interested in party preparation, including experimenting with various pairings of their new gin with chef-driven cuisine. Before embarking upon their shared business venture, the trio initially bonded over their love of polo and its lifestyle. Together they launched High Goal to give the American market a novel choice of gin. The beverage is produced in Charleston, South Carolina, where Matti is based and owns Grain & Barrel Spirits, a beverage company that also makes Dixie Southern Vodka, Chicken Cock Whiskey, Cabana Rum, Endless Summer Spirits, and Virgil Kane Whiskey. High Goal Gin, which comes in a custom, 42
Italian-designed and -manufactured sea spray green bottle, is infused with mint and citrus botanicals to create a lighter, more refreshing taste. Matti, who calls himself a gin man, previously owned the high-end Boodles Gin brand. “I had a noncompete after I sold Boodles and could not wait to start High Goal, where I have held the trademark,” he explains. Raised playing polo in Santa Barbara, California, Matti was happy to meet Nic through Diego, who was his neighbor in Palm Beach before he relocated his family to Charleston. “Nic, Diego, and I talked about the profile and packaging for High Goal Gin; then the pandemic hit, and we were lucky to have had the time to refine the marketing,” Matti says. “We source everything in

the Southeast and produce the gin in 3,000-bottle batches to tightly control the botanicals, like mint, juniper, coriander, lemon, and cardamom.” Nic, an active eight-goal polo superstar who turned pro at age 15 and is a co-founder of High Goal Gin, discovered his passion for the drink while playing tournaments in the United Kingdom, including the Queen’s Cup and Gold Cup. For several years, he was looking for a way to create his own premium gin brand stateside. “I have always liked gin,” says Nic, who lives in Wellington and continues to play polo around the world. “I follow the gin culture in Europe when I play polo there, and I am so happy that we have created a light and reimagined version for the U.S. We wanted a more modern-style flavor that is citrus-forward. We see gin as a rising trend.” Gin was certainly the featured player at their recent dinner party. As guests entered the living area of Kristin and Diego’s residence—which features a Louis Vuitton chest Diego restored—Kristin offered the evening’s signature cocktail: High Goal Gin on the rocks with a twist of lemon and
fresh mint, presented in contemporary Orrefors bulb glasses. Joey Leuze from Palm Beach Catering & Luxury Events paired the cocktail with a variety of passed appetizers, such as ahi tuna tacos with avocado mousse and micro cilantro, wild mushroom bonbons with black truffle aioli, and crispy potatoes with sour cream and salmon roe. While enjoying the food and drinks, guests raved about the smashing view of the Intracoastal Waterway. “The sight of the sun setting on the balcony is fantastic,” said guest Nick McClelland, a private equity and investment specialist. Kristin and Diego, with a little help from their 5-year-old daughter, Allegra, set the tone for the evening with the addition of background music by Norwegian DJ Kygo. “They are such gracious and lovely hosts,” said Matti’s wife, Jennifer, who admired the white orchids that seemed to bloom about the living space. “Everywhere I look I see elegance.” “I love being with people, especially in our home environment,” adds Diego. “We like to mix and match our different friends as it expands our intellect, curiosity, and chemistry. It’s great fun to talk and show them around our home.” Just off the living room, the dining table was nestled in a space defined by silk kelly green Schumacher wallpaper and punctuated by a bold Kelly Reemtsen painting of an empowered woman carrying a chainsaw. “This room is a novel take on ‘green with envy,’” observed Hannah Selleck, daughter of actor Tom Selleck. Set for 10, the table appointments and Kristin’s antique peacock wicker chairs helped transform the area into a notable scene that could have stepped out of a proper English novel. Atop a D’Ascoli tablecloth were Kelly green napkins that matched the wallpaper and highlighted the pretty blues and greens in the home’s decor. The setting also included Kristin’s favorite Mottahedeh Imperial Blue china, green Vista Alegra water goblets, Christofle silver flatware, and assorted green votives mixed and matched with white candles in crystal holders and natural centerpieces of white orchids. “We wanted to add a sophisticated pattern to the table since the kelly green wallpaper is a solid,” says Emily Painter, co-founder of Freshly

Set, a tablescape linen rental company, who helped the hostess design the table decor. “Kristin loves place cards and conversation-starter cards, which added to the mix.” For the meal, chef Leuze planned the food and drink pairings to create a luxe and light dining experience, starting with the fresh Tommy Hitchcock gin cocktail with a Thai basil garnish and a first course bursting with bright flavors: scallop carpaccio with pickled celery, watermelon radish, and an apple and basil vinaigrette. The Saint-Tropez cocktail—gin and Champagne with lemon juice and peel, edible flowers, and passion fruit seeds— ushered in the second course of Maine lobster tail with pea risotto, lobster jam, and pea tendrils. “This was a light entree, with the elegance of the lobster matching the light and lovely gin creation,” explains Leuze. “The gin is not dominant in these cocktails. The drink is luxurious, mild, and easy to pair with this menu.” For dessert, the chef matched a lemon tart with The Roldan, a cocktail combining gin, basil, and muddled strawberries served in low Reed & Barton glasses. The chef added a rhubarb compote to the lemon tart to complement the strawberries in the cocktail. “The food was fresh and delicious, and the night was a lot of fun,” says Nic. “It was wonderful seeing close friends and enjoying their company.” As the evening came to a close, guest Ali Solimine Kampsen raved about the vibe, the hosts, and the guests. “Kristin and Diego know how to bring together a good group of people,” said Ali, a real estate professional. “The hosts were so welcoming, and their home is beautiful. They made us feel relaxed and comfortable, like we were part of the family.” The partygoers agreed that the hosts gave new meaning to “gin with a twist.” «

Sun-on-your-nose convertibles don’t have to be sexy European two-seaters. The hottest convertible on the planet right now is the tough-as-nails 2021 Ford Bronco sport-ute. The key to its wantone-now appeal, also known as Broncomania, comes down to one word: adventure. Regardless of whether you ever take a new Bronco off-road, it’s the promise that you can strap a kayak or surfboard to the top, hang a mountain bike off the back, throw in hiking boats, and go off into the great unknown. You can do it all with the roof down— and the doors off. Ford has hit gold with this all-new version of its original 1966 4x4 icon. It’s as capable as, if not more so than, Jeep’s legendary Wrangler. It looks terrific, is ultracomfortable, and is quite refined. You can spend days going through its options, with the choice of six models, two- or fourdoor bodies, hardtop or soft, 2.3 turbo 4 or 2.7 turbo 6, manual or auto, and a million add-ons. Prices range from the $28,500 two-door base model to the $49,475 Wildtrak four-door—the 7,000 flagship First Edition models sold out instantly. My top pick would be the more luxury-focused Outer Banks four-door with the 2.7 for around $45,000. But good luck finding one.

Grey Poupon Included The $28-Million Rolls-Royce Boat Tail Twenty-eight million dollars. That was the price tag for this bespoke, nautically imbued Rolls-Royce Boat Tail convertible, giving it the esteemed accolade of being the most expensive new car ever offered. Inspired by those custom, taperedbodied drop-tops of the Roaring Twenties, this exquisitely designed, Windex-blue Rolls is one of the British carmaker’s finest creations. Rumor has it that it was commissioned by billionaire power couple Jay-Z and Beyoncé. Based on the elegant V-12-engined RollsRoyce Dawn convertible, its sleek aluminum body has been resculpted to feature a rear
deck that opens like butterfly wings to reveal what Rolls calls a “hosting suite.” Here, one side is dedicated to beverages—perhaps Jay-Z’s preferred Armand de Brignac Champagne—while the other houses a Christofle crockery and cutlery picnic set. There’s even a stainless-steel and carbon-fiber parasol for shade. Want a break from the sun? The car comes with a detachable carbon-fiber top that transforms the Boat Tail into a stunning coupe. Rolls-Royce plans to build just three Boat Tails. No word on whether the other two are sold, but now would be the time to ask.

Porsche 911 Carrera S Cabriolet Look up “iconic” in any thesaurus, and chances are one of the options will be Porsche 911. Since its debut in 1964, the quirky two-door has been continually honed and enhanced to become the dailydriving rocket ship it is today. I’d argue that today’s “base” droptop, the $114,000 911 Carrera cabriolet, with its 3.0-liter twin-turbo 6, will give you all the thrills you’d ever crave. But it’s hard to resist stepping up to the even more dynamic $129,000 Carrera S with 443 hp. Or the upcoming $149,400 Carrera GTS with 473 hp. Or the bigdaddy $219,800 Turbo S cab with a supercar-like 640 hp. Each edition boasts heartpounding yet usable performance, racecar-like handling, and true versatility. Still, the beauty of the 911 is that it is so easy to live with. I adore its smooth ride, interior space, and terrific outward visibility. It remains the gold standard.
Thrill of the Grille Oh, that grille. Kidneys this swollen typically require a trip to the emergency room. But this is BMW telling the world to go big or go home. And in BMW’s new 4 Series convertible, that frontal ornamentation is part of the car’s brash, headspinning persona. The last-generation convertible came with a three-piece folding metal roof that was heavy, too complex, and messed with trunk space. This version opts for a lighter cloth roof. Now the big, densely insulated roof descends in just 18 seconds and stows neatly in a well behind the rear seats. Speaking of seats, this new 4 Series is still a four-seater, adding to its already significant

appeal. Though sitting in the back with the top down at speed can get a little blustery. Power-wise, this drop-top 4 comes in a trio of flavors, from the entry 2.0-liter turbocharged 430i, to the snorting 503-hp M4. My fave is the mid-range M440i with its 3.0-liter turbocharged in-line 6 with BMW’s eBoost 48-volt mild hybrid assistance. Combined, it punches out an impressive 382 horseys coupled with more silkysmoothness than a jar of warm molasses. And as you’d expect from the makers of the Ultimate Driving Machines, the M440i is a joy to drive. It’s fast, refined, a rocket through the curves, and just plain fun.

If such a thing as a “starter” Ferrari exists— and by that, I don’t mean a used version of the 1984 308 Tom Selleck drove in Magnum P.I.—it would be the prancing Portofino M. That's “M” as in “Modificata,” though it should really be “M” for “Magnifico.” With stickers starting at around $226,000 (a nicely optioned version will likely set you back more than $300,000) it’s hardly “starter.” But this is the important first rung on the Ferrari ownership ladder. As is so often the case, the entry model can be one of the best. For starters, it’s a hardtop

Ferrari Portofino M convertible with a top that glides back in just 14 seconds. That means coupe-like security and style with drop-top, wind-in-the-hair, look-up-at-the-stars joy. Think of it as two cars in one. You need only start it up to confirm that this is still a hot-blooded, finger-tingling Ferrari. Under the hood sits a 3.8-liter twin-turbo 612hp V-8 hooked up to an 8-speed dual clutch automatic. Ask it nicely and it’ll catapult you from standstill to 60 mph in 3.1 seconds, accompanied by a soundtrack surely composed by Pavarotti in his prime. Magnifico indeed.
It’s no secret that Jaguar is on a glide path to going all-electric by 2025. That probably means curtains for its sexy F-Type coupe and convertible two-seaters. But as a last hurrah, Jaguar is simplifying its lineup by ditching the limp 4-cylinder and forgettable in-line 6 engines and offering only supercharged V-8 models. While the thundering—read: obnoxiously loud—575-hp supercharged F-Type R continues as the performance flagship, much more appealing is the still exhilarating but more sophisticated F-Type P450 with its 444-hp 5.0-liter V-8. Couple this with the recent design makeover (think: wafer-thin LED lights, a host of suspension changes, and a new grille), and the F-Type has never been more desirable. Every so often, a unique dining concept comes along and makes you question how you could have gone so long without it. Such is the case with TRP Taste in downtown Fort Lauderdale. Somewhat of a hidden gem for many, the intimate 26-seat venue (located under Rooftop at WLO) by The Restaurant People centers on a rotating, everevolving schedule of multicourse culinary experiences. Guests can take part in a pop-up dinner with wine pairings or rent out the whole space for a special event. Inside awaits a wraparound counter for 12, where you can watch and converse with local and visiting chefs as they prepare dishes one by one. There’s also a communal table, welcoming a convivial atmosphere. Events have ranged from a “Tour of Asia” to “Summer in the South.” During a past visit, chefs whipped up a trio of ocean crisps (think: shrimp toast, salmon belly tacos, and tuna tartar) as well as butter-poached king crab leg, Chilean sea bass with miso cauliflower, and a delicate ube cheesecake with coconut Chantilly cream and macadamia brittle. Pan-Latin cuisine and tequila steal the spotlight at TORO LATIN KITCHEN Inside the Le Méridian hotel lies Dania Beach’s latest culinary crown jewel: Toro Latin Kitchen. You might think twice about making dinner plans at a hotel’s lobby restaurant, but this pan-Latin and Asian concept by restaurateur Richard Sandoval hits all the right notes. Chef de cuisine James Rogers helms the menu, which features dishes intended to be shared family-style. Whatever you do, start by ordering the Mercado Margarita, an addicting concoction of Tanteo Habanero Tequila, passionfruit puree, and a house serrano mix, all topped with a rosemary-hibiscus foam. To pair, sample sweet corn empanadas stuffed with three kinds of cheeses and served with a creamy avocado yuzu, or the classic ceviche amarillo with fresh hamachi, aji amarillo, and leche de tigre along with mango, cucumber, red onion, and radish. While you might skim over the lomo saltado on the menu, chef Rogers remixes this popular Peruvian dish Asian-style, with slices of seared prime beef tenderloin bathed in a sweet ginger soy glaze and served with creamy Bomba rice and crispy potato strings, making it a must-try. Newly opened on Sistrunk Marketplace’s first anniversary in August is the rum lounge and neighborhood speakeasy Lost & Found. The space is tucked away behind The Flower Shop and features more than 75 varieties of rum in addition to a full-service bar. The idea behind the concept is to introduce guests to new spirits and a one-of-a-kind rum experience, says Tania Duprey, head mixologist. While many locals were sad to see Vinos move from its hidden alley locale on Las Olas, its new location on the boulevard makes it that much easier to enjoy a smooth pour of your favorite vino. Reopened this past February, the reimagined space is roomier than its former location and offers all the favorites—and more. You’ll still get to sample from an extensive wine list, order a craft cocktail like the Pineapple Amaro Manhattan, and nibble on meats and cheeses off the tapas menu. One thing’s for sure: The new speakeasy dubbed Sidecar II is one secret you’ll want in on. It’s accessible through an unmarked door off Las Olas. Secretive Sips
Many may imbibe but few can make these elusive LIQUEURS and bitters
By Mark Spivak It may be a precarious business model, but some of the world’s greatest spirits are made using formulas known only to a handful of people. While these four examples are common behind bars, their recipes remain closely guarded secrets. CHARTREUSE For the Carthusian monks isolated in the western French Alps, life hasn’t changed since the founding of the order in 1084. The monastery is bathed in silence, and the monks have meals delivered to their cells through a small cubbyhole. In 1605, the order received a recipe for a potion composed of 130 herbs and plants. It evolved into three distinct liqueurs: the original Elixir Végétal ($180), at a whopping 138 proof or 69 percent alcohol, as well as Green ($65, 110 proof) and Yellow ($65, 80 proof). The Green and Yellow versions have gained fame as an ingredient in craft cocktails, while the “Elixir of Long Life” is reputed to have healing properties. Chartreuse is also popular in liqueur-based desserts, and a dish of peaches in Chartreuse jelly was planned for the final night of the Titanic sailing—until the iceberg intervened. Although 1.5 million bottles of Chartreuse are reportedly sold each year and royalties revert to the order, only two monks are privy to the full formula. BÉNÉDICTINE On the surface, the story of this famous liqueur sounds similar to Chartreuse. A monk named Friar Bernardo Vincelli supposedly produced Bénédictine at the Abbey of Fécamp in Normandy for centuries prior to the French Revolution, when the building was destroyed. In 1863, the wine merchant Alexandre Le Grand discovered an ancient manuscript and successfully reconstructed the recipe. In reality, there’s no evidence that Friar Bernardo 86

actually existed, much less that he concocted Bénédictine. It’s a good story, though, and Le Grand’s blend of 27 spices and herbs proved to have considerable commercial appeal. Today only three people know the formula for the liqueur at any given time. CAMPARI Turin, Italy, was ground zero in the cocktail culture of the mid-nineteenth century, and it is where Gaspare Campari began his apprenticeship to become a maître liquoriste—not just a bartender, but someone who was qualified to create new alcoholic beverages. In 1860 he moved to Milan and began selling his creation to customers. It was a bitter infusion of 60 herbs, barks, and fruit peels into a mixture of alcohol and distilled water, and it became a sensation. With yearly sales of more than 3 million cases, Campari is now one of the most popular aperitifs in the world; it has become an
essential ingredient in classic cocktails such as the Negroni, Americano, and Boulevardier. Gaspare’s secret formula has been carefully passed down through the generations, known only to a select few within the company. It has been reported that even the CEO is unaware of the exact proportions. ANGOSTURA BITTERS It’s hard to find a bar without a bottle of Angostura, and many classic cocktails wouldn’t exist without it. A German doctor developed the formula in 1824, and it immediately became a cure-all for common ailments such as seasickness and gastric distress. The bitters have been manufactured in Trinidad since 1875, and only five people in the world are familiar with the details. They never travel together, and one of them has to be present whenever a new batch is manufactured— although the recipe is supposedly locked away in a U.S. bank in case of catastrophe. «
