In the past year, we’ve all developed an appreciation for the outdoors. Not only have the expansive spaces and fresh air made us feel safe, but we’ve also felt healthier—and worked off some stress—by embracing nature-centric activities. This month’s issue is devoted to the great outdoors and the numerous benefits it bestows upon us. To inspire you to take on a new alfresco adventure, we present “The Outside Guide,” a compendium of must-dos in the sunshine and sea breezes. From exhilarating water-based activities to calming pursuits like paddleboarding and yoga, there’s no shortage of ways to enjoy nature. I personally recommend a hike through Flamingo Gardens, where you’ll spy more than 3,000 species of flora, or Secret Woods Nature Center, with its otherworldly network of mangroves and native hammocks. Such outings have helped keep many of us sane during the challenging COVID months. Turn to page 42 and start planning your own excursions. If you prefer to view nature from an armchair, check out “Still Waters,” a visual essay of expansive Everglades imagery by Paul Marcellini. Through Paul’s lens, the simple beauty of a freshwater prairie or a star-embroidered night sky takes on a haunting dimension. See for yourself on page 60. Entertaining outside has become huge during the pandemic, as it allows us to connect with others in a safe environment. THREE ARTISTS KICK OFF THE FIRST ARTCATION RESIDENCY PROGRAM In search of new ways to showcase how the arts are intertwined into the fabric of life in Greater Fort Lauderdale, Andrew Martineau, co-founder of Fort Lauderdale Art & Design Week, partnered with Visit Lauderdale to brainstorm a new innovative idea: Artcation. “[This] concept came to life as a way to help artists be inspired by immersing themselves in our local lifestyle, and it was a way to bring positive attention to the small, boutique hotels in the region that had a very tough year due to the pandemic,” notes Martineau. In January, three artists participated in eight-day residencies, with the goal of using their experiences to inspire and guide them in creating one or more works, says Martineau. Their creations will now stay at the locations where they were hosted, including Manhattan Tower in Fort Lauderdale, Cottages by the Sea in Pompano Beach, and The Desoto Oceanview Inn in Hollywood. They were chosen through an artist database—and for their strong social media presence—and Martineau says word spread rapidly about the residency. “We received over 30 artist inquiries from around the country and from international locations including Venezuela and Italy. Most said they wouldn’t be able to participate this year but would be interested in coming next year.” Redmond, who stayed at The Desoto Oceanview Inn, loves to travel and really began to feel the itch to explore amid the pandemic. “I’ve been keeping my eye out for artist residencies, where artists are invited to a location to create for a short period of time because those are great, safe ways to travel and do your art,” she says. “I am from Palm Beach County, so I knew this would be easy and safe for me to do, and it would give me a week to concentrate on my painting away from my usual home life.”
During her stay, Redmond took inspiration from the property’s gardens (complete with three chicken huts) and set up in that space daily. She finished a 24-foot-by-30-foot painting in addition to two smaller works. The Desoto’s various cacti and ixora are depicted as well as other flowers she dreamt up. For next year’s Fort Lauderdale Art & Design Week, the organization plans to evaluate artists who would be interested in providing scheduled workshop experiences for guests during their residency, which will help the hotels attract those interested in creating art themselves as well as seeing the many exhibits taking place that week. “The ability to interact daily with an artist-in-residence at one of our small, charming boutique properties is a fun way for visitors to immerse themselves in Fort Lauderdale Art & Design Week,” says Stacy Ritter, president and CEO of Visit Lauderdale. “It’s a unique experience they won’t find anywhere else.” (ftladw.com)

Writer Campbell McGrath dishes on the POWER of poetry By Kristen Desmond LeFevre
FLI: Can you give us a peek into your writing process? Campbell McGrath: A lot of my colleagues believe that to be a real writer, you’ve got to write every day, and that’s a good goal. I’m trying to be alive to the wounds in the world every day, but that doesn’t always mean I write them down daily. I try to write in my notebook, if not every day, then at least a lot. I’m writing down ideas, images, things I’m thinking about, things that might be useful. And then it takes time to go back to that material and really explore it and say, “What do I have here?” and, “How will I turn these into a poem?” How would you describe your voice? When people say, “Oh, that’s typical Campbell McGrath,” it’s probably because the poem is about America and culture. It probably has a sense of ironic, humorous, fun-poking darkness that explores the tragic comedy of American culture. You know, the kinds of things you’d cry about if you didn’t laugh at them. I’m a big fan of American culture. I’m very attuned to its bizarreness and senselessness. So that tends to be the thing I write about, and where my style lands. Was poetry always the goal? I’ve always loved books in a very particular way. I love reading, but when it came time to write something, I liked writing poems. But did I think 22

Since April is National Poetry Month, we caught up with poet, Pulitzer-prize finalist, and FIU distinguished professor Campbell McGrath. He’s authored 15 books of poetry—most recently, Nouns & Verbs: New and Selected Poems. He’s a recipient of the MacArthur Foundation “genius grant,” and his work has appeared in The New York Times, The Paris Review, and The New Yorker. Those bona fides aside, McGrath says poetry is for everyone. All you need to do, he says, is give it a chance.
back then that writing poetry was a thing you could do with your life? No, I sure did not. Can you teach a person how to be a poet, or is it a talent a person is just born with? No one would ever say, “Can you teach someone to play basketball?” You can’t teach them to be Michael Jordan, but you can teach them to play the game to their best potential. Poetry is a craft in the same way a sport is: Anybody can learn it. You can learn to play basketball by yourself in your driveway. But if you have a coach (or in the case of poetry, a professor or a teacher) who works with you, you bring the learning curve down. I’m still learning all the time—and I feel like I’ve literally written like 5 million poems. But if I wasn’t still learning, I would be bored of it. Are the days of the starving poet over? You know, starving is not a very good strategy for a poet. You starve and then you die and then you don’t write anything. I haven’t had a student in a long time who had that kind of starving poet vision. They know it isn’t about starving; it’s about getting the poems written and finding a way to erect a scaffolding to make a sensible life that enables them to write poems.
You’re pretty prolific. What keeps you writing and getting published? I feel like part of your task as an artist is to squeeze all the juice from the lemon. Whatever amount of talent or inspiration I have, I feel I’m beholden to try to put it out in the world. Now, the world may throw it in the dustbin and say, “This was terrible. We don’t even want it!” But when I started winning prizes and stuff, I really began to feel the need to do this as seriously as possible. When you’re lucky enough to be enabled like that, I think there’s an obligation to be prolific. That said, some of our best poets are not prolific. Poetry, in particular, is really about density and condensation. One drop of it can be enough sometimes. But I’m just trying to get as many drops out there as I can. I don’t want to leave anything unsaid that I might’ve said. If I can say it well enough.

FOOD LABELS: What do they all mean? By Ivey Leidy Photography by Kent Anderson In the United States, the government regulates every food we eat to ensure its safety. The U.S. Department of Agriculture (USDA) oversees meat, poultry, and eggs, while the Food and Drug Administration (FDA) is responsible for dairy, seafood, produce, processed foods, and drugs. In the U.S., the government issues financial benefits in the form of subsidies to farmers, mainly those producing corn, wheat, soy, dairy, meat, and sugar. Essentially, our government pays farmers to grow what the government wants them to grow, in the manner in which the government wants them to grow it and at what efficiency. Unfortunately, as a means of making as much income as possible in the shortest amount of time, many farms use methods to expedite and capitalize upon this process. Antibiotics, growth hormones, pesticides, 24
and GMOs all help maximize output, while degrading our food quality. GMOs are genetically modified, living organisms, whose genetic makeup has been altered in a lab to make them resistant to disease, increasing crop yields. The end result? Our food has morphed into a distant relative of food, difficult for our bodies to recognize and harmful to our health. Here, I delve into what the labels mean, which ones to look for, and which to ignore.
MEAT AND DAIRY When it comes to beef, opt for cuts from local farms as opposed to factories, if you can find it. If not, the best choices are grassfed, AGA (American Grassfed Association) certified, or certified grass-fed by AWA (Animal Welfare Approved). Grass-fed means that the animals are only fed grass from the day they wean from their mother’s milk until the end of their life. They are also raised in open grass pastures, free to graze, and always antibiotic-free. The second-best choice is USDA-certified organic. This means the cattle are fed 100-percent organic feed consisting of corn, grain, and grass, and no antibiotics are administered. Avoid processed meats as these have chemicals, fillers, additives, and even high-fructose corn syrup.
FISH For fish, you have two options: wild or farmed. Farm-raised fish has higher fat, less protein, and fewer nutrients than wild. Farmed fish are often fed cornmeal, soy, and even canola oil. They’re also commonly given antibiotics due to their crowded conditions and risk of infection, as well as growth hormones. In addition to being lower in saturated fat and calories, wild fish is higher in heart-healthy omega-3 fatty acids, vitamins, and minerals. The best label to look for is MSC (the Marine Stewardship Council).
PRODUCE For produce, there’s either organic or conventional. Organic produce is grown on soil that has not been treated with substances like pesticides and fertilizer. All organic produce is non-GMO. Conventional produce is often subsidized, and its farming practices involve pesticides, usually GMOs, synthetic fertilizers, antibiotics, and hormones. These have been shown to cause hormonal imbalances, chronic inflammation, and chronic disease.
POULTRY AND EGGS The best choice for poultry is certified humane (see definition in sidebar). The second-best choice is certified organic. This signifies that the animals were raised on a 100-percent organic, non-GMO diet that did not contain animal by-product or antibiotics.

Whole Roasted Chicken CRISPY-SKIN WHOLE CHICKEN COOKED IN A CAST-IRON SKILLET WITH ROASTED CARROTS, MUSHROOMS, SHALLOTS, APPLE, AND FENNEL INGREDIENTS 3-5 lb. certified humane, certified organic chicken 1 lemon, sliced with seeds removed 3 sprigs of thyme 3 sprigs of rosemary 4 cloves of garlic, divided into 2 chopped and 2 crushed 4 large carrots, peeled and chopped 2 cups of sliced shitake mushrooms 3 shallots, peeled and chopped 1 fennel bulb, stems trimmed and bulb cut into quarters or wedges 1 apple (Honeycrisp or Fuji is best), cored and diced 3 tbsp. olive oil, divided
Preheat oven to 400. Combine chopped vegetables and apple in a bowl and toss with 2 chopped garlic cloves and 1 tbsp. of olive oil and set aside. Pat chicken dry, removing any giblets in the cavity and untying the legs. Stuff cavity with thyme, rosemary, lemon slices, and 2 crushed garlic cloves. Rub outer skin with 1 tbsp. olive oil and a sprinkle of sea salt. Lay chicken breast side down onto an unheated cast-iron skillet. Turn burner to medium-high heat and cook chicken for 8 minutes. (I’ve found heating from a cold cast iron yields the crispiest skin.) After 8 minutes, turn heat off, carefully flip your chicken breast side up, and retie the legs. Add in your chopped vegetables, tucking them around the chicken. Drizzle with remaining 1 tbsp. olive oil. Transfer to oven and roast for 45 minutes to an hour. Remove from oven when chicken’s internal temperature reaches 160. Let rest for 5 minutes. Transfer to a platter, arranging roasted vegetables around the chicken. Salt and pepper to taste.
COMMON LABELS DEFINED CAGE-FREE: Cattle are required to have outdoor space. Chicken and other poultry are raised in pens in “houses” and given access to 1 to 1 1/2 feet of floor space. This could be grass, gravel, or concrete. FREE-RANGE: Animals are given access to 2 feet of outdoor space.

CERTIFIED ORGANIC: Animals are fed a 100percent organic diet, free of hormones and antibiotics. All organic chicken is free-range. CERTIFIED HUMANE: Animals are never kept in pens, crates, or cages; are given plenty of outdoor access; and are not fed growth hormones or antibiotics. GRASS-FED: Animals are given only grass after
weaning off milk.
NATURAL OR ALL NATURAL: This term isn’t regu-
lated, so it holds no weight. Initially, it referred to food that didn’t contain artificial ingredients, but it’s meaningless when used to describe meat or poultry. FRESH: The meat or fish has never been frozen. NON-GMO: A law was passed in 2016 requiring manufacturers to disclose GMO ingredients. Look for this stamp when buying anything.

NAYARA TENTED CAMP Draped in lush cloud forest and punctuated by skyscraping volcanoes, Costa Rica’s mountainous interior is synonymous with dramatic natural beauty. A small walking trail leads to the coastline of Playa Chiquita, one of the country’s most famed beaches (thanks to crystalline waters and a virgin appearance). McLaren’s stunning new GT is the EVERYDAY SUPERCAR that can deliver you to the golf links at 203 mph By Howard Walker I love McLarens—with a passion. I love the rock-out-of-a-catapult acceleration, the spooked-squirrel handling, the mind-reading steering that can almost predict your intentions before you even nudge the wheel. For me, these British-built projectiles are the very definition of the mystical term “supercar.” To drive one, to feel that 600-plus twin-turbo horsepower, is like downing a quadruple espresso after a lifetime of decaf. But, they do come with the odd compromise or two. The endless drone from those monster tires at each corner is like driving with a leaf blower in the passenger seat. Hitting any kind of lump or bump is like colliding with a Florida sinkhole. As for carrying personal items aboard, if they won’t fit into a squashy gym bag, you’re going to need to call FedEx. However, the new McLaren GT is a kinder, gentler McLaren with more refinement, comfort, and civility. Oh, and did I mention there’s 38
space in the back for a golf bag? Thank McLaren for listening to its customers—or its dealers, who likely moaned about losing another sale to more accommodating rivals, such as Bentley’s grand touring Continental GT or Aston Martin’s DB11. What we have here is the first McLaren hatchback. One tap of the key fob and the huge rear tailgate pops open to reveal a long, wide luggage area. And although it is rather oddly shaped, it works. According to McLaren, it can accommodate 14.8 cubic feet of “stuff.” That total climbs to 20.8 when you factor in the small forward trunk. While this new feature does transform the versatility of the GT, it too is not without its compromises—like having a heat-blasting 4.0-liter twin-turbocharged V-8 sitting beneath it. McLaren engineers had to develop a thermal heat shield to reduce temps from 900 degrees Fahrenheit around the engine to a still toasty 100. Stow that box of Godiva back there at your peril. More worrisome is the fact that the luggage area is open to the cockpit. Yes, there are numerous tie-down rings, but that loose jar of Petrossian beluga caviar could become a high-speed projectile under heavy braking. And as with all McLarens, this GT can stop with the same immediacy as hitting a brick wall. In keeping with the slightly more mellow image of this new GT, the design has also been softened. Unlike the angry-bird McLaren 720S on which it’s based, the GT sheds the track-focused rear wing, huge wheel-arch

vents, and air-gulping rear intakes. I think it’s the best-looking McLaren in the lineup. It’s just sleeker and more stylish, enhanced by lovely forged alloys at each corner, the biggest ever fitted to a McLaren. Open the high-lifting scissor-like doors and inside, McLaren’s typical wafer-thin, butt-numbing seats have been replaced with wider, comfier, thicker-padded versions that are a delight. The cabin is now a sea of handbag-quality leather befitting the grand tourer the GT is. And boy, does this car tour grandly. There’s less snap, crackle, and pop from the exhaust compared to, say, the 720S. Less volume, too. And the suspension has been tuned to deliver a ride that is a tad smoother,
less brittle, more forgiving, and has less tire roar. But don’t for one second think McLaren has gone soft on performance. The GT’s 4.0-liter V-8 packs a 612-hp punch that can slingshot the car to 60 mph in a retina-blurring 3.1 seconds. This beast won’t call it quits until the speedo shows 203 mph. Hustle the GT along a curvy two-laner and its race-bred heritage, along with perfect poise and balance, is there to thrill. Although it was developed for the track, on ordinary roads it goes precisely where you point it. Its handling is nothing less than stellar. Pricing starts at around $213,000, though with a few options—the $6,000 electrochromic glass roof is a must-have, as is the $15,400 fourpiece set of custom luggage—reckon on closer to $260,000. But for me, all that McLaren magic more than justifies the price tag. «

RETURN of the Sundancer
Sea Ray brings back its iconic FAMILY CRUISER in the bold shape of the new 370 Outboard By Howard Walker Ever wondered how Sea Ray got its name? Maybe it’s a play on stingray or manta ray. Or, perhaps, a reference to a ray of sunshine on the sea. Good guesses—but wrong. It all goes back to Cornelius Nathaniel “Connie” Ray III. In 1959, the native Detroiter founded Ray Industries, cranking out zippy runabouts. By putting a spin on the “C” for Cornelius and looking to his last name, it was an easy evolution to Sea Ray. By 1986, when Connie had sold his company to the Brunswick Corporation powerhouse, Sea Ray had taken its place among the world’s biggest boatbuilders. One of Connie’s many strokes of genius was seeing a gap in the market for a family-focused
express cruiser. Forty-five years ago, he built the first Sea Ray Sundancer and the rest, as they say, is history. Despite a rocky few years over the past decade, during which time Brunswick even pondered selling off the Sea Ray brand, the Sundancer is now back—with a vengeance. The 370 Outboard not only marks the introduction of a next-gen Sundancer family, but also heralds the reinvention of Sea Ray itself. New from the keel up, the 370 Outboard is a masterpiece from any angle. While the hull profile has styling cues from Sundancers past, it’s that towering, glass-filled hardtop and huge windshield that are guaranteed to spin heads. Before its global unveiling earlier this year, I got to spend a fun-filled morning putting the 370 through its paces across Sarasota Bay. I came away thoroughly impressed at what it manages to pack into 37 feet. While we all remember Sundancers of old, with gas-guzzling V-8s powering through sterndrives, the 370’s designers wisely opted for outboards. They’re quieter, smoother, easier to maintain, and way more space-efficient.

The first boats to come out of Sea Ray’s Merritt Island facility will feature triple 300-hp Mercury Verados, with the option down the road of 250 Mercs. With three 300s, top speed is close to 50 mph, with easy-peasy cruising in the mid-30s. Step onto the wide swim platform and into the cockpit, and the feeling of space is terrific, with seating for eight on the U-shaped sofas. Rather than having the galley down below, there’s an electric grill, sink, fridge, and freezer right there. Cross through the port-side windshield door and into the bow. The beauty here is the height of the walkway sides, which give a great sense of safety and security. The mile-high hardtop is a true feat of design ingenuity. The sheer amount of glass is astonishing, giving superb all-around visibility from the helm. Nice touches include the power-sliding sunroof, air conditioning, and a rear sunshade that glides out of the hardtop. Up at the helm there are twin seats on either side, while the control panel could easily have come out of a fancy Mercedes. Twin 16-inch

Up in the bow there’s an L-shaped sofa that, at the touch of a button, creates a queen bed. Midship, beneath the cockpit, there’s another “L” that becomes a double. And the quality of materials is exceptional, with white onyx Corian countertops, lovely wood, and upscale fabrics. Out on Sarasota Bay, this new Sundancer leapt onto the plane and punched to 45-plus mph with ease. While there wasn’t much in
the way of wave action that day, the Sea Ray still sliced through other boats’ wake, with any rock and roll quelled by the optional Seakeeper3 gyro stabilizer. Joystick control made docking a breeze, even in a breeze. You’ll pay around $650,000 for a 370 with triple Mercury 250s, though with the triple 300s and plenty of must-have options, reckon on closer to $900K. But with this new 370 Outboard, Sea Ray definitely builds on the Sundancer legacy with a boat that’s sleek, sexy, and a lot of fun. Connie Ray would have been proud. «

Imagine strolling down zig-zagging boardwalks and footpaths through jungle-growth treetops on your way to a colorful plant garden filled with hundreds of fluttering butterflies. Or roaming under an oak canopy and spotting a burrowing gopher tortoise as you pass. It sounds like a dream, but it’s possible to experience with a visit to Tree Tops Park (broward.org) in Davie, which gives you access to more than 7 miles of designated trails. Nearby at Flamingo Gardens (flamingogardens. org), stroll through more than 3,000 species of rare, tropical, subtropical, and native plants and trees (including the largest tree in Florida) at the 60-acre botanical garden and wildlife sanctuary. For an all-day hike, pack your essentials and head to the Atlantic trail entrance of Conservation Levee Greenway (mtbproject.com) in Tamarac, a 48.4mile greenway running from Parkland to Miramar, where you will be greeted by a variety of wildlife, including sun-seeking gators and trees full of parrots. Fern Forest Nature Center showcases more than 30 fern species as you roam along marked trails, ranging from a wheelchair-accessible boardwalk that winds through a tropical hardwood forest to a dirt footpath surrounded by natural wetlands. A pet-friendly outing to Miramar Pineland offers a beautiful concrete walking path through the pines, shaded by a combination of scrubby flatwoods, as well as views of restored wetlands. At Dania Beach’s Secret Woods Nature Center, navigating the wilderness of wetlands, hammocks, and mangroves will give you new insight into the unique ecology of South Florida’s forests. Creating a private sanctuary was paramount for the family who resides in this Southwest Ranches gated property. Alene Workman (of Alene Workman Interior Design Inc. in Fort Lauderdale) was tasked with designing a space to fit the homeowners’ relaxed lifestyle. “Home entertaining was an important consideration with small groups being invited into their world, often with other close family or high-profile guests,” she says. She placed contemporary twin, double-wide chaises on discreet casters with 12-foot umbrellas for shade to “infuse a practical yet romantic element at each side of the open pool deck.” Colorful flowerpots at the end of the pool turn into round fire pits when the weather cools off. The outdoor space also features additional nooks including a covered kitchen (completed by the builder). Garden Retreat
Since 2005, Alicia Weaver and her eponymous Fort Lauderdale-based design group have churned out high-end residential interiors and commercial designs. For this Pelican Isle home, Weaver says the homeowner wanted a garden oasis paired with the feel of an Italian bistro. “In Florida, we are outside year-round, so it is important to create an extended living space,” she says. “We like to create a private oasis that is functional but fits the style of the home.” She removed the existing stone pavers and hot tub to create an outdoor sitting area, and brought in gumbo limbo trees strung with bistro lights to achieve the feel the homeowners sought. New stone pavers with faux grass created a more colorful space and helped reduce dirt and bugs, allowing for a cleaner, low-maintenance eating area. The inspiration behind this southeast point lot off of Las Olas Isles in Fort Lauderdale was a resort-style outdoor space that allows for large-scale entertaining. In fact, the area behind the pool isn’t a usual jacuzzi; it’s an entertainment platform that can hold a band or a DJ, says Katia Bates of Innovative Creations, Inc. in Fort Lauderdale. With exposure to the ocean and scenic views from every corner, this property has several design highlights, including unfinished travertine, anti-slip flooring around the pool and the surrounding decks, and Jerusalem pavers. The pool is clad in royal blue custom tiles, while the furniture is custom powder-coated in flat black and features cushions in antique gold fabrics made for the outdoors. “On the best view corner, there is a gas fireplace to sit around during the chilly winter nights and enjoy the boats passing by on the New River,” says Bates. A swimming pool with waterfront views and in-water lounge seating is the perfect place to recharge.
Waterfront Escape
Though not designers by trade, David Milus and his wife, Jenniffer dreamed up a design for their waterfront point lot in Lighthouse Point with proximity to the Hillsboro Inlet. They tore down the existing home to build something “truly unique and architecturally significant,” says David, who was senior vice president for Starwood Hotels & Resorts before retiring from a 32-year career in hospitality, and led groups that focused on operations, development, architecture, construction, and design management. “We wanted to build something different—both unique and timeless—with a contemporary and modern edge,” he says. “We didn’t want to do anything cookie-cutter or follow the coastal or Mediterranean themes typical of South Florida architecture.” So, they developed an airy retreat that connects the inside with the outdoors. The 800-square-foot space is complete with self-watering planters, a gas barbecue, a two-burner stovetop, a unique ocean blue stone feature wall, a swimming pool with in-water lounge seating, an outdoor living area that seats up to 10 people, and a summer kitchen featuring porcelain countertops. Natural decor touches outdoors complement the home’s interior design.

Known as “the multicultural designer,” Perla Lichi is the founder and CEO of her namesake design firm in Pompano Beach. “Your home is a personal sanctuary, and with today’s new way of living, the outdoor spaces provide a way to have peace and quiet, and sometimes make you feel like you’re transported into another place,” says the residential designer. Her work is on display at this West Broward County residence, which fused the home’s interior to the outdoors to keep the style consistent. To achieve this, she brought in elements of gazebos and hanging chairs that look like they’re “growing out of the ground.” Architectural elements such as columns and lighting also play a part in this design. “I prefer to work with earth tones, so it ties into all the natural outdoor elements,” says Lichi. “This way, it looks like it naturally belongs there, such as the natural stone flooring and matte finishes.” (perlalichi.com) «

orn and raised just 20 miles from Everglades National Park, Florida, landscape and nature photographer Paul Marcellini says he’s visited the subtropical wetland spanning nearly 2 million acres close to 1,000 times since he was a child. Always attracted to the outdoors, he naturally began photographing the land when he picked up a camera in 2005. He’s since won multiple international awards for his photography of Biscayne National Park, Miami International Airport, South Florida museums, and more. And in 2016, one of his Everglades images was used for a USPS stamp, celebrating 100 years of U.S. National Parks. “I am not a photographer just to be a photographer,” says Marcellini. “I love getting into unspoiled locations and then being able to show those to others.” A self-taught naturalist, Marcellini says he’s constantly finding ways to raise awareness for our delicate ecosystems. “I am most familiar with the ecosystems that are near me, as they are where I spend the most time,” he shares. “I hate to see them diminished, and through my images I hope to inspire people to take an interest and care. Coastal CHARM Steps away from Fort Lauderdale’s salt-spritzing Atlantic lies Hotel Maren’s Riviera by Fabio Viviani. Inspired by Italy’s coastlines, this new 200-seat restaurant blends the country’s seafood-inspired dishes with an innovative beverage program. Florence-born chef Fabio Viviani (of Top Chef fame) guarantees all ingredients are made fresh inhouse or purchased within a 100mile radius. “We are targeting an Italian palate with an international flair,” says Viviani. “Our food is meant to be eaten, and it also makes for a pretty picture.” Of note are specialties such as the charred octopus with crispy potatoes and the tuna poke with toasted sesame, avocado crème, and sriracha. Heartier options arrive in the form of braised lamb shanks with whipped feta, topped with charred grapes and a fregola and pistachio gremolata. Then there’s the not-to-be-missed squid ink lumache: Shell-shaped pasta mingles with frutti di mare (mussels, clams, shrimp, calamari) in a light broth of heirloom tomatoes, garlic, parsley, and polpa di ricci (sea urchin roe). Plan EASTER DINNER with inspo from area hot spots RACK OF LAMB STEAK 954, FORT LAUDERDALE (STEAK954.COM) Ingredients (serves 4) 2 racks of lamb 1 cup extra-virgin olive oil 1 bay leaf 1 sprig of rosemary 2 sprigs of thyme 5 garlic cloves, smashed 1/4 tsp. ground black pepper 1 tbsp. thyme, picked and chopped 1 tbsp. rosemary, picked and chopped 1 tsp. salt 1 tbsp. fennel, lightly toasted, then coarsely ground 1 tbsp. whole coriander, lightly toasted, then coarsely ground 1 tbsp. cumin seeds, lightly toasted, then coarsely ground
l To make the marinade, combine olive oil, bay leaf, rosemary, thyme, and garlic cloves and bring to a simmer. Allow to cool and then leave overnight before straining and adding the remaining ingredients (other than the lamb). Marinate the lamb rack in a good amount of the mixture overnight. In a hot pan, sear all sides of the lamb, then place it on a roasting rack and cook in the oven until you reach the desired doneness (for medium-rare pull out of oven at 120 degrees Fahrenheit and let it rest until it reaches 125 degrees Fahrenheit). You can use a meat thermometer to measure the temperature as you are cooking. Pull the lamb out of the oven and let it rest for 7-10 minutes before carving.
ROASTED VEGETABLES COOPER’S HAWK, MULTIPLE LOCATIONS (CHWINERY.COM) Ingredients (serves 6-8) 1 medium zucchini, 1/2-inch diced 1 medium red pepper, 1/2-inch diced 1 medium red onion, 1/2-inch diced 2 medium parsnips, 1/2-inch diced 2 large carrots, 1/2-inch diced 7 oz. cremini mushrooms, cut in half
8 oz. brussels sprouts, cut in quarters cup extra-virgin olive oil 1 tsp. salt 1/4 tsp. black pepper 3 tbsp. butter 2 tbsp. garlic, freshly chopped 1/3
Directions Preheat oven to 450 degrees Fahrenheit. Gather and transfer all of the vegetables into a large bowl and add the olive oil, salt, and pepper. Mix well so that all vegetables are coated evenly. Spread the vegetables out onto a sheet pan in a single layer. Roast for approximately 10-15 minutes, rotating the pan halfway through cooking until vegetables begin to brown nicely. If the vegetables are very cold when putting into the oven, they may need additional cooking time. When the vegetables are nicely caramelized, remove from the oven. Add butter, garlic, and herbs. Mix well and place back in the oven for about 2 minutes. Remove and sprinkle with cheese.

DRAGON’S RESOLVE Made with local-to-Florida dragon fruit and passion fruit, this tropical drink makes every attempt at mindful conservation
As we head into Earth Month and look forward to Earth Day on April 22, I was inspired to honor the occasion with a cocktail that highlights both notions of sustainability and energy conservation. But first, I wanted to bring into focus a few earth-friendly considerations to ponder while you sip your next cocktail.
Ingredients (makes 1 drink) 1 1/2 oz. gin 2 1/2 oz. dragon fruit puree 1 1/2 oz. passion fruit shrub (recipe below) 1/2 oz. simple syrup (optional)
• Think local and seasonal: By choosing local and seasonal produce, we avoid costly packaging and transport. • Avoid plastic: Say goodbye to plastic straws. Consider a reusable metal, glass, or bamboo straw instead. • Repurpose ingredients: In this recipe, the dragon fruit is used as the puree for the cocktail and the shell for the drinking vessel. The passion fruit was also used whole to create the shrub. The best way to show our appreciation for the earth is by being mindful of creating less waste and reducing our environmental impact, even when it comes to cocktails. More and more Black-owned WINERIES are beginning to appear across America By Mark Spivak
Over many centuries, the wine business has acquired a reputation as an old boys’ club—unofficially, an old white boys’ club. While more and more women are breaking the glass ceiling of America’s wineries, the same hasn’t been true for people of color. According to the Association of African American Vintners (AAAV), fewer than 100 of the nearly 11,000 U.S. wineries are Black-owned, amounting to less than 1 percent. However, things are beginning to change. There are 35 members in AAAV’s “Vintner/Grower” category and additional Black-owned
wineries are springing up all the time. Here, we highlight some of the most exciting. Vision Cellars: Mac McDonald, the son of an East Texas moonshiner, decided to become a winemaker after tasting his first Burgundy at age 12. After purchasing land in Sonoma County, he released his inaugural Pinot Noir in 1997 and became one of the industry’s pioneers in diversity. Pinot Noir remains his first love, although he also produces both white and red blends. (visioncellars.com) McBride Sisters: It’s a fairy-tale story: After growing up separately across the world in California and New Zealand, sisters Robin and Andréa McBride reunited to build the largest Black-owned wine company in the U.S. Their She Can and Black Girl Magic collections are currently shipped to 33 states. (mcbridesisters.com) Indigené Cellars: Raymond Smith established his winery in California’s upper Carmel Valley, making distinctive wines from both estate vineyards and purchased fruit. While he yields sparkling wine, Pinot Blanc, and Muscat Canelli, he’s partial to full-bodied reds such as Zinfandel and his signature deb-ru-vée, a Rhône-style blend of Grenache, Syrah, and Mourvèdre. (longevitywines.com) Maison Noir Wines: Sommelier André Hueston Mack traded the dining rooms of Per Se and The French Laundry for life as an Oregon winemaker. Originally called Mouton Noir (“black sheep”), he changed the winery name after a trademark dispute with Château Mouton Rothschild. His labels include Knock on Wood Chardonnay, Love Drunk Rosé, and Other People’s Pinot Noir. Wachira Wines: Dr. Christine Wachira, the first Kenyan-born California winemaker, fell in love with wine while working her way through college and graduate school.
