Fitz’s Bar at Kimpton Fitzroy London, located in Russell Square, introduces a world-first in cocktail innovation with its new menu, SPECTRUM.

Launching on 6th November, this groundbreaking menu features 12 expertly crafted cocktails that bring the sensory phenomenon of synaesthesia to life. With each cocktail as unique as the colour it represents, the NEW SPECTRUM menu allows guests to choose from lighter tints or darker shades, revealing how different shades of colour taste.

Inspired by synaesthesia — a rare neurological quality which causes individuals to perceive colours through taste — this menu invites guests to indulge in a visually and flavourfully immersive experience as each drink is tied to the emotions, memories, and flavours associated with its designated colour.

The introduction of SPECTRUM is led by Bar Manager, Massimiliano Bosio, who has an impressive background from top venues like Homeboy and the D&D London group. Under his direction, this menu promises to be a true exploration of flavour. Guests can choose to explore the ‘light’ or ‘dark’ side of the menu, with lighter tints offering refreshing, vibrant blends and darker shades unveiling complex, bold flavours.

For those who venture into the dark, the Black Hole cocktail draws on the mysterious allure of its namesake. Featuring a mix of Sipsmith VJOP Gin, Corte Vetusto Mezcal, banana, walnut, shiitake mushroom, and Amontillado Sherry, it’s a deep, intricate creation designed to intrigue and captivate.

Meanwhile, the King of Persia cocktail takes inspiration from the royal associations of purple, a colour historically reserved for nobility. With floral hints of pomelo, bergamot, and grape, this drink blends Fresh Monkey Grain Spirit, The Botanist Gin, kaffir lime, pine, rose petals, and Pinot Noir reduction, offering a refined balance of floral and fruity flavours.

Staying on the darker side, the Taboo cocktail delivers a perfect mix of sweet and spicy. Representing deep red’s passion and intensity, Cazcabel Tequila and Peat Monster Whisky create a strong foundation, while mandarin, chilli, pineapple, and strawberry bring a vibrant play of heat and sweetness.

On the lighter end, the Green Dragon embodies the freshness of nature, with Brugal 1888 Rum, Beefeater London Dry Gin, pandan leaf, mint, lychee, and coconut delivering a luminous taste of renewal.

The Sapsucker cocktail brings a burst of sunshine with its light yellow hue, a colour often tied to refreshing citruses and tropical fruits. Blending citrus tang with tropical notes, this eclectic cocktail—crafted with Tapatio Blanco Tequila, Canerock Spiced Rum, mandarin bitters, tepache, and grapefruit—captures the lively essence of sun-filled days.

The Morning Dip cocktail encapsulates the essence of light blue, a colour symbolising calm and healing. Inspired by the sea, this soothing blend offers subtle hints of saline flavours, evoking the peaceful feeling of a morning swim. Made with Busker Irish Whiskey, Boatyard Vodka, dry sherry, lemon, mustard, passion fruit, and brown butter, it offers a tranquil yet invigorating flavour experience.

American Express Global Business Travel’s Hotel Monitor 2025 finds rates set to stabilize amid record construction pipeline and easing inflation

Global hotel rates are forecast to continue rising in 2025, but price increases will moderate compared to the steep rises of recent years, thanks to easing leisure travel demand and a surge in new hotel construction.

These insights come from the consulting team at American Express Global Business Travel (Amex GBT), a leading software and services company for travel, expense, and meetings & events.

Amex GBT’s Hotel Monitor 2025 offers detailed predictions for more than 80 major cities worldwide, analyzing hotel transaction data and factoring in local and macroeconomic variables including International Monetary Fund (IMF) data. Forecasts for key business travel destinations include:

While price rises are mostly moderate across the globe, there are some noteworthy exceptions:

•New York continues to experience higher rate rises than the rest of North America, in part because of the continued block on the use of short-term rental accommodations.

•Cities in the Nordics are anticipated to see some of the highest room rate rises in Europe, as the region looks forward to improved economic prospects in 2025.

•India’s dynamic economy is fueling demand for domestic and international inbound travel, putting upward pressure on hotel rates.

Andrés Torres receives the Basque Culinary World Prize 2024

The Basque Culinary Center will host the Basque Culinary World Prize’s award ceremony today at 18:00 (CEST), honouring chef Andrés Torres for his work with the NGO Global Humanitaria to promote food security in 10 countries and his intervention in various global crises through gastronomy

Casanova, his restaurant, is built on sustainable practices and showcases that a novel perspective on gastronomy is possible. The Basque Culinary World Prize is a unique, global award given by the Basque Government as part of the Euskadi-Basque Country comprehensive strategy and the Basque Culinary Center, a leading academic institution in gastronomy.

The prize recognises chefs for transformative initiatives in areas such as innovation, technology, education, environment, health, the food industry, and social and economic development.

The event will be presided over by the Lehendakari, the Honorable Mr. Imanol Pradales, who will present the award to Andrés Torres, valued at €100,000. At the event, in the presence of authorities and prominent figures from the food sector of Euskadi, there will also be speeches from Amaia Barredo Martín, Minister of Food, Rural Development, Agriculture, and Fisheries of the Basque Government; Joan Roca, President of the Basque Culinary World Prize Jury; and Joxe Mari Aizega, Director of the Basque Culinary Center.

In the words of the winner, Andrés Torres, “I am very grateful to the Basque Culinary World Prize for receiving this recognition.”

Cooking, sustainability, humanitarian aid, and war journalism converge in the multifaceted figure of Andrés Torres, who leads two interconnected projects: he is the founder and president of the NGO Global Humanitaria, dedicated to fighting for food security and children’s rights in ten countries, with more than 200 school canteens, and to conducting emergency interventions in war zones and disaster areas, facilitating access to food, water, hygiene, health, shelter, and basic education; he is also the chef and owner of the restaurant Casa Nova in Penedés, which exemplifies true sustainability and self-sufficiency, earning him a Michelin Green Star.

Part of the profits go to fund Global Humanitaria, and some of his sustainable cooking practices and preparations are based on knowledge acquired in the communities where the NGO operates.

The €100,000 financial award from the Basque Culinary World Prize will be used to support the chef’s initiatives that benefit people, the environment, and society.

Andrés Torres was chosen as the winner by a jury composed of some of the most influential chefs in the world, representing the International Committee of the Basque Culinary Center. Presided over by chef Joan Roca (Spain – El Celler de Can Roca).

The Basque Culinary World Prize was launched in 2016 to provide testimonies on how gastronomy can be a transformative force, highlighting the work of entrepreneurial men and women committed to excellence; of innovative and creative people; determined, but above all, committed to their society.

More than 1,250 nominations and nearly 850 nominees from 42 countries have formed the basis for an award recognised by the press as the “Nobel of Gastronomy,” supported by esteemed academics and experts, including some of the best chefs of our time.

The fizz was flowing on 25th October 2024 as The Ivy Canterbury Brasserie celebrated its highly anticipated opening with a dazzling launch party.

The exclusive event welcomed local guests, offering them a first look inside the stunning new venue. Guests walked a luxurious green carpet, setting the tone for a night filled with exceptional food, vibrant entertainment, and the signature elegance The Ivy brand is known for.

Situated at the corner of The Parade & Rose Lane, The Ivy Canterbury Brasserie boasts a stunning interior that reflects the brand’s signature elegance. A new all-day restaurant, bar and hideaway launching this November in Mayfair

Tucked away in a Mayfair mews, SILVA is a new day-to-night restaurant set to open its doors this November.

Derived from the Latin word for “forest,” SILVA’s menu will evolve in harmony with the seasons, taking inspiration from across the Mediterranean all the way to Japan to deliver a modern restaurant for modern Londoners. Founder Daria Grebenyuk and her experienced team have created an elegant space that will focus on a convivial atmosphere and warm hospitality at the heart of Bruton Place, a location known for its independent restaurants, retailers and galleries.

Serving breakfast/brunch, lunch and dinner, SILVA boasts 91 covers across two floors and an outside terrace. On entering guests will be drawn in by the banquette seating which gently curves its way down the entirety of the space, where mixed woods and marble are offset by moss and pine green accents and muted tones to mimic the changing seasons.

The restaurant is joined on the first floor by an intimate snug bar and an impressive private dining room, ‘The Garden Room’, complete with a restored herringbone parquet floor and decorative foliage and flower castings adorning the walls.

The menus at SILVA are a manifestation of Founder Daria’s travels across various countries, savouring different foods and culinary traditions from Europe and beyond. Daria has worked closely with Head Chef, Slawomir Sawicki (Eric Chavot, Galvin at La Chapelle, Arts Club) to curate menus which bring together different influences and techniques but which at their core let the best of the seasons produce shine.

For breakfast, the options include light and healthy dishes and some signature brunch recipes. Diners can enjoy eggs of any style, from the indulgent gratinated crab and Gruyère omelette together with a selection of eggs simply poached and served alongside house-cured salmon. For those after something sweeter, there will be a selection of creative pastries, coconut and muscovado porridge with caramelised banana and blackberry jam, acai bowls and fluffy soufflé pancakes served with a white chocolate and lavender Chantilly.

The daytime menu will showcase a range of starters, raw dishes, seasonal salads, mains, and desserts. Notable offerings include the crispy fried egg served elegantly atop parmesan cream, the potato waffle topped with beef tartare and gently shaved winter truffle, and the baked Isle of Mull scallops with yuzu butter.

Come evening the menu will include dishes such as roast duck with coco beans, fennel and orange as well as seabass casserole inspired by Ristorante Pesce

Baracca in Forte dei Marmi, together with larger sharing plates such as line-caught turbot cooked on a robata grill and served with a wakame beurre blanc, or chateaubriand with wild mushrooms. Rounding off the menu is a refined selection of desserts from a creamy Basque cheesecake, chocolate pavé with coffee ice-cream to rum-roasted pineapple with coconut.

The front of house management team is led by GM Marco Piroli (The Ivy Club, St Regis Florence, Coya) and Peter Prescott (Boundary, Lutyens, Albion) is supporting Daria on all aspects of the project.

Each cocktail recipe, designed by Bacardi and the Hotel’s mixologists, reflect the essence of its namesake with every sip telling a fascinating story – from the Mercat Cross to Greyfriars Bobby and Mary Shelley’s Frankenstein – which was filmed in and around the Hotel’s neighbouring cobbled closes last month.

A tribute to Edinburgh’s most loyal dog, Greyfriars Bobby, The Loyal Greyfriars is a heartwarming cocktail that blends Scotch whisky and a touch of heather honey. This drink is a celebration of friendship and loyalty, much like the little dog who guarded his master’s grave.

The addition of heather, symbolic of Scotland’s rugged mountains and crags, adds a floral note that complements the whisky’s warmth. Serve – Rocks Glass with ice. Aberfeldy 12 YO, Heather honey syrup, Angostura bitters, orange bitters.

Five years ago at her father’s birthday party Shirley White had the spark of an idea for a new business.

I looked around and realised that in our community we make a lot of homemade food and people bring their drinks in plastic reusable bottles to parties, she says. I thought, surely there’s a better way of presenting this. Its unlikely, that my and my children’s generation are not going to do what my father’s generation and the generation before did, which is making the drinks at home.

Shirley’s background was miles away from the drinks industry. After spending time working for local government, she spied an ad in the evening standard that caught her eye and went along to a wine and cheese evening, during which she landed a customer service role in the world of market data and investment banking.

After 30 years working in the city for companies including Telerate, Deutsche Bank and HSBC, she was ready for her next challenge - so OTC Beverages was born. OTC offers sorrel, Lime juice with butterfly pea flower and nonalcoholic ginger beer in bottles and cans now available in corner shops and takeaways across London....a new flavour will soon be available.

Although it is a new industry for her, Shirley says there have been many transferable skills from her former life in banking and finance. It’s the skills you get from project management, being a Market Data Strategy Manager and juggling a number of programs within large Investment Banking organisations and market data Vendors, she explains.

From the start Shirley knew she didn’t want to be brewing up drinks in her own kitchen, but says it took some time to perfect the recipe in the factory once she had found the right manufacturer to partner with. She adopted a less is more philosophy to the drinks formulation by using only identifiable quality ingredients such as organic cane sugar instead of artificial sweeteners. She emphasises the natural health benefits of ginger and sorrel as well as their potential in an ever growing market for no and low alcoholic drinks.

Her flavours are already proving popular, with OTC Beverages being shortlisted for a number of accolades including the Great British Food Awards and Health and Wellbeing.

Shirley is now working to bring her products to more locations in London, the United Kingdom and has plans to go Global. There are a few logistical wrinkles to iron out, but she’s hoping to bring her sorrel and ginger beer to other markets including USA and Africa in 2025. Currently, it’s at the point where she is growing the brand awareness, so you want it to take on momentum and you want it to be an identifiable “brand of choice” when people go to a shop to buy a cold drink, she says.

The generation who had created the culture, food and beverages that I had grown up drinking and eating, were getting older… I felt moved to preserve their legacy, and that’s how OTC Beverages came to life.

Almost two-thirds of UK shift workers experience unstable wages and less job security

Almost two-thirds (63%) of UK shift workers face significant financial difficulties, with many struggling to cover basic living expenses or save, according to shift work management company Deputy’s 2024 State of Hourly Work report.

Within this, 15% admitted they cannot meet their living costs, while almost half (48%) can only cover essential expenses, leaving no room for savings or financial security.

Income predictability remains a pressing issue, with 9% of workers reporting that their income is unpredictable and 49% experiencing varying degrees of uncertainty, compounding their financial stress. Despite taking on multiple jobs, financial stability remains unattainable for many; almost a quarter (19%) of shift workers hold two jobs, and 4% juggle three or more roles to make ends meet.

Wages also continue to be a concern, with a third (34%) of shift workers being paid minimum wage. Although 46% earn above the minimum, it often fails to provide sufficient financial security, leaving 15% of workers unable to cover their living expenses, underscoring the wage-living costs gap that continues to affect the hourly workforce.

Beyond financial challenges, workers are increasingly worried about the future of their jobs. 33% of shift workers believe that their roles will change significantly due to artificial intelligence (AI), while 43% express enthusiasm about the potential of technology to transform their work. However, concerns persist, especially among younger generations like Gen Z, with 15% worrying about job security as automation becomes more prevalent.

Professional growth continues to be a driving factor for many workers, with 45% motivated by the opportunity to learn new skills, while their paycheck drives 43%. Despite the financial pressures, two-thirds (76%) of workers hold just one job with a single employer. For those working multiple jobs, a quarter (25%) diversify across different industries to secure more stable income streams.
