London Hilton on Park Lane appoints Julian Catzeflis as Director of Food & Drink, Venues and Partnerships

2024 WINNER OF THE S.PELLEGRINO YOUNG CHEF ACADEMY UK REGIONAL FINAL ANNOUNCED

After rounds of competitive cooking, and outstanding displays of culinary prowess by some of the most talented young chef’s in the UK, S.Pellegrino Young Chef Academy recognised Ben Miller as the winner of the competition’s Regional Final for the United Kingdom at the NoMad Hotel on Thursday.

Ben, who showcased brilliant talent throughout the competition process, beat eight other finalists, rising to the top of thousands of applicants from around the world, and will compete in the Grand Finale taking place in Milan next year. The 29-year-old from Canada, now lives in London and has been working in kitchens since he was 15 years old, beginning at a local family run catering company in Calgary, Alberta.

Ben’s love of food and creative expression has always been at the heart of his culinary journey, driving him to explore new techniques and flavours. He credits his passion for combining artistic expression with culinary innovation in helping fuel his ambition, as he constantly seeks out new challenges to refine his skills and push the boundaries of his craft.

At the competition final, which took place at Le Cordon Bleu Cookery School in London, Ben won over the renowned jury including, Santiago Lastra, Nokx Majozi, Lorna McNee and Adam Smith, with his signature dish Ode to Sam Yee, a dish he has been perfecting for years.

In addition, Ben was also the recipient of a second award on the night, the Acqua Panna Connection in Gastronomy Award, which celebrates the dish that best represents the culinary heritage of its native region and was voted for by the nine participating mentors ahead of the competition.

Ben Miller had this to say about his win:

“I have entered 13 competitions like this during my career and this is the very first I have won so I am delighted. It’s always a huge challenge to take part in these tests and coming away with a loss can be disheartening but it also makes us young chefs hungrier to succeed and today shows that with determination, you can get there.

The S.Pellegrino Young Chef Academy Competition has been such a fantastic process to be a part of and it’s been amazing to see so much talent across all of our signature dishes. I’m so happy to have won and I look forward to representing the UK at the Global Finale next year.”

Together with Ben, two other chefs were also awarded at the Regional Final event, winning the collateral awards, and will have the chance to win respective global titles, also announced at the Grand Finale next year:

EDINBURGH MARRIOTT HOTEL HOLYROOD CAPTURES THE SPIRIT OF THE CITY WITH NEW COCKTAIL MENU LAUNCH

The Edinburgh Marriott Hotel Holyrood has unveiled a new storytelling cocktail menu, Tales of the Old Town, created in collaboration with Bacardi.

Inspired by the rich history of Scotland’s capital, the menu takes guests on a captivating journey through the tales, legends, and landmarks of Edinburgh’s Old Town. ‘Tales of the Old Town’ features eight signature cocktails that pay tribute to the mysteries and legends of Edinburgh’s historic Old Town.

Each cocktail recipe, designed by Bacardi and the Hotel’s mixologists, reflect the essence of its namesake with every sip telling a fascinating story – from the Mercat Cross to Greyfriars Bobby and Mary Shelley’s Frankenstein – which was filmed in and around the Hotel’s neighbouring cobbled closes last month.

To elevate the new cocktail menu and create more of an experience for customers and guests, Edinburgh Marriott Hotel Holyrood teamed up with social enterprise Invisible Cities to design a self-guided exploration tour of the famous landmarks and points of interest inspired by each signature cocktail.

This immersive walking tour takes in the city’s most intriguing historical sites, all of which are on the doorstep of the hotel, from Canongate Kirk and the legendary Royal Mile to Edinburgh’s eerie underground vaults.

Along the way, guests will uncover the secrets of Mercat Cross, St Giles’ Cathedral, founded in 1124 by King David I, and encounter Edinburgh’s beloved Greyfriars Bobby, whilst exploring the wonders of Dynamic Earth and the majestic Arthur’s Seat.

A tribute to Edinburgh’s most loyal dog, Greyfriars Bobby, The Loyal Greyfriars is a heartwarming cocktail that blends Scotch whisky and a touch of heather honey. This drink is a celebration of friendship and loyalty, much like the little dog who guarded his master’s grave.

The addition of heather, symbolic of Scotland’s rugged mountains and crags, adds a floral note that complements the whisky’s warmth. Serve – Rocks Glass with ice. Aberfeldy 12 YO, Heather honey syrup, Angostura bitters, orange bitters.

Two further stops include Dynamic Earth, a place of exploration, where the Earth’s dramatic past comes to life with the Dynamic Earthquake cocktail a bold and explosive creation, combining the punchy flavours of tequila with sweet Scottish rhubarb, a local favourite. The result is a cocktail that evokes the Earth’s power, with layers of flavour that evolve like the forces of nature. Serve – Flute. Patron silver tequila, rhubarb liqueur, lemon, orgeat & rhubarb soda.

The final cocktail, and destination is Arthur’s Seat, Arthur’s Elevation captures the exhilarating experience of standing atop Edinburgh’s most famous hill. A refreshing blend of gin, local bramble liqueur, lemon and bursts of coconut, this cocktail’s crisp flavours evoke the sweet and breathtaking views of the city from above. Serve – Martini Glass. Bombay Sapphire, Lucky Liqueur bramble, lemon, coconut syrup, egg white.

London. 24 September. The UK’s hospitality elite gathered at JW Marriott Grosvenor House last night for the highly anticipated AA Hospitality Awards 2024, an event that has become the benchmark for excellence in the industry.

The wine list has also been extended to include whites, reds and orange and sparkling wines from all across Europe while non-alcoholic options include Saigon Lime Soda, Ô Mai Sour Plum (a traditional specialty of Hanoi, made with dried plums) and Guava Fever. The Montgomery Group announces the launch of The Bat and Ball, a charming country pub with rooms, set to open in Cuddesdon, Oxfordshire, in November.

This will be the second opening from owner Ben Moss, who successfully took over 15th-century pub The Lamb Inn in 2022, and marks the beginning of the Oxfordshire pub group, The Montgomery Group.

The Bat and Ball drives forward the group’s mission to revive the traditional British community pub experience, transforming the previously empty site into a cosy village pub that celebrates the best of the local Oxfordshire area. Open for lunch and dinner, seven days a week, the dining space will accommodate over 50 guests, with 48 seated covers and additional standing space for 10.

Additionally, The Bat and Ball will host five guest rooms, including three king suites, one king, and one double, making it a destination for visitors and locals alike.

The kitchen will be overseen by Michelin-star-trained Executive Chef Nat Berney, previously of Le Manoir aux Quat’Saisons and now Head Chef at The Lamb Inn. Diners can expect the usual pub banger of a menu, while Nat’s delicate touch elevates these familiar dishes to the next level. Ingredients will be sourced from local suppliers, with meat from thirdgeneration butcher The Calnan Brothers in Watlington, seafood from Flying Fish Seafood, organically grown vegetables from DBF Banbury; and Somerset’s famed Longman’s Cheese, all delivered daily. The wine list will focus on small growers, and they will serve local ales and a selection of Estrella beers. Sitting centrally in the Oxfordshire village of Cuddesdon, just around the corner from Little Milton where sister pub The Lamb Inn is based, the pub itself dates back to the 16th century.

It is a charming building with cosy nooks, unique bedroom spaces – each offering a distinct vibe –and beautiful views of the surrounding area from the pub garden, which will have 48 covers. Five years ago at her father’s birthday party Shirley White had the spark of an idea for a new business.

I looked around and realised that in our community we make a lot of homemade food and people bring their drinks in plastic reusable bottles to parties, she says. I thought, surely there’s a better way of presenting this. Its unlikely, that my and my children’s generation are not going to do what my father’s generation and the generation before did, which is making the drinks at home.

Shirley’s background was miles away from the drinks industry. After spending time working for local government, she spied an ad in the evening standard that caught her eye and went along to a wine and cheese evening, during which she landed a customer service role in the world of market data and investment banking.

After 30 years working in the city for companies including Telerate, Deutsche Bank and HSBC, she was ready for her next challenge - so OTC Beverages was born. OTC offers sorrel, Lime juice with butterfly pea flower and non-alcoholic ginger beer in bottles and cans now available in corner shops and takeaways across London....a new flavour will soon be available.

Although it is a new industry for her, Shirley says there have been many transferable skills from her former life in banking and finance. It’s the skills you get from project management, being a Market Data Strategy Manager and juggling a number of programs within large Investment Banking organisations and market data Vendors, she explains.

From the start Shirley knew she didn’t want to be brewing up drinks in her own kitchen, but says it took some time to perfect the recipe in the factory once she had found the right manufacturer to partner with. She adopted a less is more philosophy to the drinks formulation by using only identifiable quality ingredients such as organic cane sugar instead of artificial sweeteners. She emphasises the natural health benefits of ginger and sorrel as well as their potential in an ever growing market for no and low alcoholic drinks.

Her flavours are already proving popular, with OTC Beverages being shortlisted for a number of accolades including the Great British Food Awards and Health and Wellbeing.

Shirley is now working to bring her products to more locations in London, the United Kingdom and has plans to go Global. There are a few logistical wrinkles to iron out, but she’s hoping to bring her sorrel and ginger beer to other markets including USA and Africa in 2025. Currently, it’s at the point where she is growing the brand awareness, so you want it to take on momentum and you want it to be an identifiable “brand of choice” when people go to a shop to buy a cold drink, she says.

The generation who had created the culture, food and beverages that I had grown up drinking and eating, were getting older… I felt moved to preserve their legacy, and that’s how OTC Beverages came to life.

Almost two-thirds of UK shift workers experience unstable wages and less job security

Almost two-thirds (63%) of UK shift workers face significant financial difficulties, with many struggling to cover basic living expenses or save, according to shift work management company Deputy’s 2024 State of Hourly Work report.

Within this, 15% admitted they cannot meet their living costs, while almost half (48%) can only cover essential expenses, leaving no room for savings or financial security.

Income predictability remains a pressing issue, with 9% of workers reporting that their income is unpredictable and 49% experiencing varying degrees of uncertainty, compounding their financial stress. Despite taking on multiple jobs, financial stability remains unattainable for many; almost a quarter (19%) of shift workers hold two jobs, and 4% juggle three or more roles to make ends meet.

Wages also continue to be a concern, with a third (34%) of shift workers being paid minimum wage. Although 46% earn above the minimum, it often fails to provide sufficient financial security, leaving 15% of workers unable to cover their living expenses, underscoring the wage-living costs gap that continues to affect the hourly workforce.

Beyond financial challenges, workers are increasingly worried about the future of their jobs. 33% of shift workers believe that their roles will change significantly due to artificial intelligence (AI), while 43% express enthusiasm about the potential of technology to transform their work. However, concerns persist, especially among younger generations like Gen Z, with 15% worrying about job security as automation becomes more prevalent.

Professional growth continues to be a driving factor for many workers, with 45% motivated by the opportunity to learn new skills, while their paycheck drives 43%. Despite the financial pressures, two-thirds (76%) of workers hold just one job with a single employer. For those working multiple jobs, a quarter (25%) diversify across different industries to secure more stable income streams.

Supporting the Environment with a Bang

Hospitality businesses urged to prepare for new tipping laws

A hospitality business adviser is warning owners of pubs and restaurants not to fall foul of new rules governing workers’ tips.

Lynne Blakey, a director in the Bristol advisory consulting team at Evelyn Partners, the wealth management and professional services group, said new legislation coming into force on October 1st requires employers to distribute tips fairly and transparently.

Many hospitality businesses are unprepared for the forthcoming changes to the Employment (Allocation of Tips) Act, she added.

“Employers will have to pass on 100 per cent of service charges and tips to workers without any deductions under the new rules,” said Lynne, who has personal experience in the hospitality sector, having previously served as finance director at The Newt in Somerset for four years.

“Tips must be distributed at the place of business where they were generated within a specified timeframe. So the changes are likely to have a significant impact on employers who have held cash back in the past to cover leaner months, or pooled tips across several venues.

“Employers will need to have a written policy on tips, including how they manage and distribute them and will need to keep accurate records detailing how tips have been dealt with.”

Established in 1906 and set in 18 acres overlooking the river Thames, the exclusive Phyllis Court Members Club at Henley approached Broadview Shading Solutions for their expertise in providing outdoor covered spaces with the quality and design to match the grandeur of their Georgian style club house and surroundings. The whole area is now increased by approximately 80sqm and can be open or closed at the touch of a button. The addition of 3kw non-glow Tungsten heaters and integrated LED mood lighting provides the perfect ambience for an all year round solution that can seat 60 people.

On the outdoor riverside terrace Broadview installed 5 commercial umbrellas with integrated coloured RGB lighting, adding further seating for another 30 guests, whilst along the west elevation, Broadviews Habitat vertical sliding glass wind breakers can be slid up or down depending on the weather, with a special counterbalance design anchored into the ground for stability. The Club are delighted with the finished result.

CULINARY RESURGENCE ADVENTURES AT SOUTH LAKE TAHOE

South Lake Tahoe’s culinary scene has seen many changes this year, with new restaurants and renovations that appeal to an eclectic collection of tastes. Tahoe’s dining experiences are about the huge variety of food, the people you meet, and the locations that make it memorable.

ICONIC LAKE VIEWS AND MILESTONES

Camp Richardson Resort, celebrating 100 years, recently opened The Grove Restaurant, a nod to its rich past and original name, Copeland’s Grove Resort, (formerly the Beacon Bar & Grill). Menu highlights include a miso salmon; fried chicken and ricotta beignets and coleslaw, spicy agave, and powdered sugar; a bison BBQ bacon burger. Signature cocktail choices range from a barrel-aged Whistle Pig Maple Old Fashioned; The Kokanee made with Hendrick’s gin, house made cucumber cordial, soda, with lime garnish; and, of course, The Rum Runner.

This summer Harveys Lake Tahoe Hotel & Casino is observing 80 years and showcasing two celebrity chef restaurants: Lisa Vanderpump’s Wolf by Vanderpump which opened in April, and Gordon Ramsey’s Hell’s Kitchen that just opened an expansion with 56 additional seats, new bar, and new entry due to overwhelming popularity.

As guests enter Wolf, a magical realm unfolds, transporting diners to a surreal setting, similar to outside under trees – a scene filled with twinkle lights, straight from a romantic fantasy movie. Locally owned, Elements Eatery & Bar opened this summer, and provides Mexican-American fusion with chilaquiles, avocado toast, and sourdough pancakes for breakfast, and tacos, burgers, pastor reuben, enchiladas and Mexican hot dog (bacon-wrapped with grilled onions and home-made special sauce) for lunch and dinner. Chef Gabriela Chavez has put her years of experience and passion for food into the menu and most sauces are made in-house. Must-try items include their cold-pressed juices (add alcohol if desired) –which originated as a juice stand at the local Farmer’s Market in nearby Meyers–and the fried chicken sandwich. root-to-fruit, nose-to-tail menu focuses on traditional recipes rooted in food upcycling

Located on the South Bank, Art Yard Bar & Kitchen at design-led Bankside Hotel, Autograph Collection has announced a fresh menu ahead of the summer season, blending artistic creativity with zero waste.

Renowned for its innovative culinary concepts and commitment to sustainability, Executive Chef Sofiane Kaced has crafted the new menu placing a strong emphasis on three key elements: local produce, minimising food waste, and recycled ceramics. The new menu adopts a comprehensive eco-friendly approach, incorporating sustainability into every aspect.

Executive Chef Kaced employs a holistic cooking method, ensuring that every dish is rich in flavour, nutrients, and visual appeal, whilst creatively utilising all parts of each ingredient. He follows a root-to-fruit, nose-to-tail approach in the kitchen, reflected in his approach on each dish.

Available from May 2024, the menu emphasises upcycling and repurposing ingredients to keep waste to a minimum, whilst maintaining a refined level of gastronomy. Sofiane innovatively reinterprets traditional recipes rooted in food upcycling and names them ‘Sustainability Heroes’, offering modern twists on classics like slow-cooked beef croquettes, using offcuts of brisket beef from nearby Bermondsey’s O’Shea’s Butchers, and red mullet bouillabaisse, a recipe founded on the use of leftover ingredients from the South of France.

A number of dishes employ zero waste, such as the cherry tomato arancini and heirloom tomato, which use dehydrated tomato vines as both a garnish and edible powder. The heirloom tomato is accompanied with burrata, a by-product of cheese born out of the need to minimise food waste. Another highlight is the confit globe artichoke, dressed with an artichoke and truffle pesto and artichoke crisp, making full use of the vegetable.

Other sustainable highlights include the tiramisu marc de café, which uses repurposed coffee grounds, and the Cornish crab salad, which draws upon flavourful brown meat, often overlooked in traditional crab recipes, which encapsulates the flavours of summer. Art Yard’s commitment to sustainability also extends to its choice of crockery, using the NO.W Collection from Revol, the brand’s first collection made of recycled wastewater paste.
