A Message to the Parents Dear Peponi House Parents, I hope you are all safe and well. It has been good to note the very positive Parent Teacher Meetings that have taken place this week and great to see and hear of so much productive work taking place in these unusual and tricky circumstances. Here at school we have continued to plan for our possible reopening. When the time comes and we are given the go-ahead from the Government, we are certainly all very much look forward to seeing and meeting everyone again. We have heard it said often that the coming years will be very different from those of the past. For instance, ‘many of the jobs our children will be doing do not even currently exist’, and that sort of thing. Consequently there is a clear need for children to develop transferable skills and attitudes that will support them in facing whatever challenges their future holds. These last six months might just reap some positive outcomes for our children as they have had to adapt and learn in a very different way. Their technical and computing skills have certainly been enhanced – as have most adults’ too I expect – and everyone has had to communicate differently and work in a new way. Independent learning has been brought into focus and teachers too have learned new ways in which engage with their classes. Online learning has been a problem for us all to solve. To their credit the children have generally taken responsibility and found the solution. Hard work reaping rewards is as true online as in the classroom and in life. I have heard that when schools went back in England that very quickly it was as if everyone had never been away and understandably the joy of seeing friends again was a very real ‘feel good’ factor. So we can look forward to that. Please remember that tomorrow Peponi Schools are closed for a day of rest and catch-up. Recipe of the Week BEEF LASAGNE Ingredients: Meat sauce: 1tbs oil 1finely chopped onion 1 Carrot, diced into small cubes 4 cloves garlic 1 stick leeks 1 stick celery 1kg lean mince meat 1/2kg skinned crushed tomato 5 heaped tbs Tomato paste 4 beef stock cubes 50ml Worcestershire sauce 2tbs brown sugar 4 leaves bay leaves 1 tsp each oregano, basil, thyme Salt and pepper to taste White sauce: 4 tbs butter 1/4 cup all purpose flour 3 1/2 cups milk Cup shredded Parmesan Lasagna sheets 500g mozzarella Chopped fresh parsley
Directions: 1. Heat oil in a large pot over medium heat, then add in the onion, celery and carrots cook for 8-10min or until softened. Add garlic and sauté for a min till fragrant. 2. Add beef and cook while breaking with the cooking spoon until browned. 3. Pour the tomatoes and paste, stock cubes, herbs and mix well to combine and simmer gently, add the seasoning and sugar and cook covered for 20-30min. White sauce: 1. In a pot melt butter over medium heat. remove from hot plate ,add the flour and whisk for about 30 seconds till it blends well. 2. Place pot back onto stove and reduce heat and slowly whisk in the milk till it’s well blended with no lumps and into a creamy consistency, increase heat and cook stirring for another 7 min to a thick sauce. 3. Add in the Parmesan and remove from heat add chopped leeks and 1/2 parsley to the sauce. 4. Heat oven to 180 degrees. 5. Spoon 1cup white sauce on a base of a baking sheet then cover with lasagna sheets, layer with 2cups of meat sauce,1 cup white sauce and half mozzarella cheese, Repeat layers leaving some cheese for the top. 6. Bake for 25min or till golden brown and bubbling. 7. Garnish with the remaining parsley and rest for 10 min slice serve and Enjoy.
