Beauport Hotel & 1606 at Beauport 55 Commercial Street | Gloucester, MA 01930 CAPE ANN Cape Ann is located just north of Boston in historic Gloucester, Massachusetts. “The Other Cape” is America’s oldest seaport and art colony, and continues to be a major fishing hub and innovation leader in maritime activities to this day. The area boasts beautiful beaches, whale watching opportunities, and many museums detailing the maritime tradition of coastal New England. The area, however, lacked a full service hotel until the recent opening of the Beauport Hotel. BEAUPORT HOSPITALITY GROUP The Beauport Hotel is part of Beauport Hospitality Group. The Beauport Hospitality Group has had a tremendous influence on the hospitality industry of Gloucester in recent years while supporting and embracing Gloucester’s rich history and local culture. Sheree Zizik, owner of the group, began to realize her vision for the area by first opening Cruiseport Gloucester, a wedding and event facility, 12 years ago. The venue can hold 300 people. Beauport Hospitality Group is currently booking weddings into 2018. They soon established a restaurant, the Seaport Grille, at the facility. A few years later, a dinner cruise ship, the Beauport Princess, was added to their repertoire. The Beauport Hotel and accompanying 1606 at Beauport restaurant are the newest members of the family.

HOTEL The Beauport Hotel opened on June 13th, 2016 on the historic waterfront site of the factory where Clarence Birdseye made major advances in flashfreezing. This independent boutique hotel offers 94 classically designed rooms and suites, waterfront balconies, a rooftop pool, unique and elegant dining options, and the area’s largest meeting and special events venues. These amenities combine with sweeping views of Gloucester Harbor for the quintessential New England seaside getaway. Ray Johnston mentions that the high tide comes close to fifteen feet from the property and guests enjoying the rooftop pool are so close to the water they feel as if they are sitting on the deck of a cruise ship. Local patrons proclaim they are seeing Gloucester in a manner they have never experienced before.

The Birdseye Rooftop Pool and Bar serves cocktails and pub menu that has is a sampling of the gourmet dishes served at the full service restaurant downstairs.

T

he 1606 at Beauport is a community focused restaurant located on the second floor of the Beauport that both compliments the hotel and stands alone as its own brand. The restaurant has a 110 seat dining room, a 45 seat bar, and over 100 seats on their outdoor deck. The menu is based on contemporary New England fare and everything is made from scratch, right down to the stocks. Chef Michael Bates Walsh comes to the 1606 at Beauport from the Cohasset Harbor Resort, and before that, the Westin Portland Harborview Hotel. He specializes in seasonal dishes and local ingredients. Two sous chefs, David (DJ) DeMarco and Karen Walters, assist Chef Walsh in preparing the ingredients, including housecured bacon and artisanal charcuterie. Duck sausage is made in-house the old fashioned way for the Duck Sausage Flatbread with roasted fennel and onion. Unique for the area, the menu does not focus on seafood – but the seafood that is served is delicious and often locally sourced. Their Cape Ann Seafood Bouillabaisse features shrimp, mussels, swordfish, and lobster in a saffron broth served with herb grilled crostini. The name of the restaurant shows appreciation for the city’s tremendous history – 1606 was the year that French explorer Samuel de Champlain arrived in what he called “le beau port,” or “the beautiful harbor.” He was the first European to discover and map the port that would become Gloucester. According to Ray Johnston, the opening of the hotel created over 200 jobs in the Gloucester community. Ray Johnston, General Manager, and the rest of the management team have done very well in getting the restaurant up and running. Front-line staffing is always a challenge and the team has gotten creative with their techniques for attracting staff by attending job fairs; offering sign-on bonus and free passes for commuter rail for those who live closer to Boston. The goal is to balance out the staff at both the hotel and the restaurant and foster a family environment and a culture of kindness.

As is true for many coastal New England locations, summertime is the peak season for tourism and hospitality. Zizik emphasizes, however, that in the off season, Gloucester and surrounding area locals are very supportive of local restaurants. The Beauport Hotel has information about local events on their website, and stays in touch with the community through their Facebook page. Visitors and locals alike can experience the picturesque scenery and enjoy a seasonal gourmet meal in luxury any time of year.

ooking and seasoning with fresh herbs is a great way enhance the flavor of your favorite meal. From pasta dishes and soups to roasts and fish, fresh herbs provide the perfect flavoring and colorful presentation to any dish. Not only do fresh herbs taste great, they are also very nutritious. Many have been found to prevent or even cure certain diseases.

Preparation ● Select only fresh herbs. Examine the produce to make sure it is fresh with no evident spoilage. ● Keep fresh herbs separate from raw meat. ● Wash your hands with hot water and soap before handling any produce before meal preparation. ● Wash your fresh produce thoroughly before each use. This is very important in controlling illness. ● Remove and discard bruised or damaged portions when preparing to cook them. ● Discard herbs that has touched raw meat, poultry, seafood or their juices. ● Do not use the same cutting board for produce and for meat and poultry without cleaning it thoroughly with hot water and soap before and after food preparation.

Advantages of Fresh Over Dry When you cook with fresh herbs you never need to cover your food with oils or butter. You feel better and lighter after the meal because the herbs are not accompanied by heavy oils and fats. Once you begin to eat fresh herbs and produce regularly, your body will crave these all-natural flavors! Fresh herbs enhance flavor in your dishes. Many fresh herbs contain antioxidants to promote good health and prevent disease, while several can be used to treat or cure certain illnesses. When it comes to dried herbs, some nutrients and flavor compounds will be lost in the drying process, and more will be lost with extended storage, but that doesn’t mean that all dried herbs are nutritionally worthless. Use one and a half times the amount of fresh herbs as you would dry.

Yield: 4 oz. lamb, 2 oz. sauce Recipe Instructions: 1. For the lamb: Mix together the seasoning, olive oil, water, lime juice and garlic clove. Reserve 2 Tbsp. marinade for brushing. Place the lamb chops in a large resealable plastic bag, and pour the marinade over the meat. 2. Refrigerate for 1 hour. Remove lamb chops from marinade. Discard any remaining marinade. 3. Grill over medium-high heat 3 to 5 minutes per side or until desired doneness, brushing with reserved marinade halfway through cooking. Serve the lamb chops with the mint yogurt sauce, if desired. 4. For the mint yogurt sauce: Place the scallions, mint, dill, red pepper flakes, olive oil and lime juice in the bowl of a food processor fitted with the steel blade and puree until it is a coarse paste. Add the yogurt and seasoning, and pulse until combined. Transfer to a bowl; cover and refrigerate for a few hours. Chef’s Tip: The yogurt sauce can be served on the grilled lamb chop or on the side, if desired.

HOW TO PROPERLY THAW A FROZEN WHOLE BIRD TURKEY Safely thawing a turkey is one of the most important steps in preparing your meal. There are two recommended methods, depending on the amount of time available.

Remove pork belly from oven and let cool slightly, then dice or shred into bite sized pieces. 8. Build each taco using a small scoop of slaw as the base. Add pork belly and a drizzle of Moonshine BBQ sauce. Top with cheese and garnish with cilantro.

1. Pour total contents of No. 10 can of pears into full steam table pan (12x20x2 1/2 inches). 2. Sprinkle cranberries evenly over pears. 3. Mix muffin mix, brown sugar and cinnamon in bowl. 4. Sprinkle mixture evenly over fruit. Randomly poke several holes in mixture. DO NOT STIR. 5. Pour melted butter evenly over mixture.
