Meats & Seafood

Options for all your favorite entrées with ground beef, chicken and beef dices and strips, head on shrimp and mahi mahi and salt cod, and skirt steak. Make traditional tacos, enchiladas, burritos, mole, posole, adobo, agujas, and more.

Avocados, Salsas, and Peppers

Why worry about maintaining fresh avocados when we have frozen and fresh refrigerated varieties for all your favorite recipes? Choose from guacamole in a variety of styles and levels of spice, along with avocado pulp you can use for your own recipes. Our salsas are also available in a range of thicknesses, spice levels, and flavors. And don't forget the peppers. Choose from jalapeños in a variety of cuts, chili peppers, and chipotle peppers in adobo.

Frozen Foods

We source expertly prepared meal parts so you can focus on the main course. Choose from savory or sweet fried tostones, yucca halves, and more options coming soon.

Dry Grocery

We have authentic tortillas—flour, white or yellow corn—in your choice of sizes, along with delicious tortilla chips. We also have a full selection of canned tomatoes and beans—even tomatillos—for your favorite recipes.

Custom Cheese

Performance Foodservice's custom cheese blends are a perfect complement to our Contigo brand. We can create the right combination with the melt and flavor profile for your Latin recipes. We currently process more than 600 cheese blends at our facility in Rice, Minnesota, and can design something special just for you. Choose shredded or diced in a variety of sizes with or without herbs added. Let us know your flavor preferences and end use, and we'll work with you until we get it just right.

Allegiance® Smoky Chimichurri Pork Tenderloin

Ingredients:

1 ea Allegiance® Pork Tenderloin, cleaned

1 tbsp Contigo® chipotle peppers, pureed

1/2 cup Contigo® Chimichurri Sauce

2 tbsp West Creek® Molasses

2 tbsp Contigo Cotija Cheese, grated for garnish

4 sprigs ea Peak Fresh Produce® Cilantro, for garnish

Instructions:

1. In a blender puree chipotle, molasses, and chimichurri. Pour half of this mixture over the tenderloin and rub into the pork. Wrap and refrigerate overnight to marinate.

2. Remove marinated tenderloin from the frig and shake off excess marinade. Place on medium high heat area of your grill. Baste with marinade every 10 minutes.

3. Cook to an internal temperature of 150°. Remove from grill and let rest for 1-2 minutes then carve on the bias and against the grain. Serve a half of tenderloin per person. Ladle a little of the leftover marinade on top of sliced pork.

4. Sprinkle with cotija cheese and a couple of sprigs of cilantro then serve.

Sweet Corn Nuggets Elote Style

Ingredients:

1 ½ lb Entice Sweet Corn Nugget

5 oz Roastworks Corn and Peppers

½ cup West Creek Whole Egg Mayo

2 tsp Ascend Lime Juice

½ cup Contigo Queso Fresco

2 ea Fresh Jalapeno (sliced thin)

Preparation Instructions:

1. Deep fry corn nuggets until crisp and cooked through.

2. Reheat corn and pepper mixture.

3. Combine mayo, lime juice and half the cilantro in blender and blend until smooth, season with a little salt and pepper.

4. When corn nuggets are cooked toss in a bowl with chili powder, arrange on serving plate or basket, sprinkle with queso, drizzle with cilantro lime crema.

5. Top with sliced jalapeno and cilantro. Serve with fresh lime if desired.

Preparation Instructions:

1. Muddle mint, simple syrup and lime juice.

2. Add white rum, then add ice.

3. Finish with the Jarritos Mango soda. Lime wedge and mint sprig for garnish.

Ingredients:

- Tequila

- Island Oasis Margarita Beverage Mix (#944432)

- Simple Habanero Syrup (granulated sugar, water & chopped habanero pepper #968265)

- Lime wedge

- Habanero pepper (#968265)

Preparation Instructions:

1. Using Island Oasis frozen machine, add the margarita beverage mix, tequila to taste, and simple habanero syrup. Let machine mix items together.

2. Garnish with a lime wedge and habanero pepper.
