There is no other fruit in the world that has played such a key role in holiday culture. The cranberry’s unique health benefits and refreshing, tart taste put it in a league of its own. They add a sweet burst to quick breads like muffins, pancakes and waffles. Or, try stirring them into applesauce or tossing them into cobbler’s and crisps. FROZEN CRANBERRIES 5-MINUTE CRANBERRY-ORANGE RELISH Yield: 8 cups • 2¼ quarts Wyman’s frozen cranberries, rinsed and drained •3 cups orange marmalade •1½ cups packed light brown sugar •2 tablespoons orange zest •1½ teaspoons ground allspice In food processor, pulse all ingredients until cranberries are finely chopped. Cover and refrigerate at least 3 hours or up to 3 days. CRANBERRY SALSA • 4 cup Wyman’s frozen cranberries •1(thawed)redpepper (chopped) •1 white onion (chopped) •1 jalapeño pepper (chopped) •1 cup water •1/2c vegetable oil •1 tsp salt •1 tsp pepper Char cranberries in hot dry pan and place in food processor with all ingredients. Pork Cutlets with Sweet & Sour Apples is a simple one-skillet meal. Here we are using tender Allegiance Pork Loin (#464533) cut into ¾ “ thick chops. In a shallow pan, combine 2 TBSP all purpose flour along with 1 tsp ground coriander, 1 tsp of salt and ¾ tsp of pepper. Dredge the pork cutlets in the flour mixture and set aside. Slice 1 small Pink Lady apple (#358329) and 1 granny smith apple (#854422) and combine in a bowl. In a large skillet, heat 1 TBSP olive oil and 1 TBSP butter on medium-high heat. Sauté apples with a little salt and pepper until golden brown, remove from skillet and set aside. Using the same pan and adding a little more oil, cook the pork cutlets until golden brown and cooked through (about 3-4 minutes on each side). Transfer pork to a plate. Add ½ cup of chicken broth and 2 TBSP white wine vinegar to the pan and simmer until slightly reduced (about 5 minutes). Place some roasted butternut squash slices on a plate, top with the pork cutlets and sauteed apples and pan sauce poured over the top. Garnish with additional diced squash and chopped parsley.

Summer is always way too short, but as the transition takes place, menu ideas should follow suit with implementing items into menus from whatever the local harvest brings in for components. Hearty squashes and apples are among everyone’s’ favorites. Utilizing them in as many ways as possible helps costs stay in line. The versatility of each product is the key factor. Take butternut squash as an example. It can be sliced, diced, and roasted. It can be peeled then boiled or steamed then mashed. Add squash into other items like a ravioli or made into a soup. This first recipe is a spin on a classic… Thai Peanut Pork Loin & Noodles served with Roasted butternut squash and Rainbow Swiss Chard. Taking the dark side of the Allegiance Pork Loin (#464533), slice off ½“ sections and pan sear on both sides; season with salt, pepper and a dash of cinnamon and nutmeg. Set pork aside and let rest. In a separate bowl, place some diced butternut squash (#326482), a little olive oil, salt, pepper, and toss. Place squash on a baking sheet pan and roast @ 375 F for about 10-15 minutes. Remove from oven and set aside. Using the same pan the pork was cooked in, add 2 TBSP of olive oil and heat until it ripples. Add in the cut Rainbow Swiss chard (don’t forget to remove the stems before chopping), and sauté until wilted. Cook the angel hair pasta (#251736) until just al dente, rinse with cold water and let drain. Once drained, toss noodles with Thai Peanut Dressing (#267256) until lightly coated, then add sauteed Swiss chard. Place a portion of noodles on the plate and top with sliced pork loin. Garnish with the roasted squash; top with additional dressing (if necessary), garnish and serve.

Butternut Squash and Apple Soup Ravioli This delicious two-ingredient recipe is simple and will save you labor! Heat Butternut Squash and Apple Soup with a little cooking cream to your likened consistency, then add in cooked ravioli (in hot water until doneabout 5-6 minutes). Plate the two together and garnish with diced roasted butternut squash.

Stuffed Pork Loin with Apples, Squash, Spinach & Mushrooms looks difficult to prepare but is actually quite easy. Make a stuffing of sauteed apples, butternut squash, mushrooms, and spinach (about 1 cup of each). Cool the mixture and set aside. Using a sharp filet knife, filet a one-foot section of pork loin horizontally (like a cinnamon-roll dough). Add filling onto pork evenly. Roll back up and tie every 3 inches with butcher’s twine. Season with salt and pepper. Roast until internal temperature reaches 145 F. Let rest. The sauce is Kettle Cuisine Butternut Squash and Apple Soup (#77088) heated with a little half & half cream garnished with sliced butternut squash. The finishing piece is deep-fried stuffing scoops! Yes, make the stuffing; roll it into a ball and deep-fry for 2-3 minutes. Garnish with fried sage leaves. For the final two recipes, I am using the wonderful Butternut Squash Ravioli (#616875) under the Piancone Epicureo Pasta line. Each case has about 120 pieces and is made with freshly roasted butternut squash and pumpkin delicately sweetened with imported mostarda fruit, crushed amaretto cookies, and nutmeg, wrapped in natural yellow turmeric pasta into a small round ravioli. (Mostarda is a traditional Italian condiment made from fruit (both fresh and dried), syrup, and spices.)

Finally, dessert! Pan Seared Butternut Squash Ravioli dusted in Cinnamon Sugar atop Vanilla Ice Cream with Salted Caramel Drizzle Cook the ravioli in hot water and cool (can be done ahead of time). After it has cooled, pan sear the ravioli until heated through and toss with cinnamon sugar in a large bowl. Place ice cream in the middle, arrange the ravioli, top with salted caramel sauce and serve with a side of cold homemade apple chunks.
