A recent report by the Housing Industry Association Economics Group predicts that Australians will increase their spending on kitchen installations in new homes by $147 million to $2.7 billion in 2012/13. After a predicted fall this ﬁnancial year, the total value of bathroom installations in new homes is expected to jump by $196 million to reach $3.59 billion in 2012/13. With an ever-increasing range of new products and materials on the market and project builders creating lust-worthy kitchens and bathrooms in display homes large and small, it’s no wonder we have our sights set high. When it comes to kitchens, Leo says the increase in cooking shows on TV is also driving design decisions. “People want to create restaurant quality meals in their own homes. Homebuyers are therefore demanding restaurant quality kitchens,” he says. The look is sleek, smooth and seamless, with space enough for great storage as well as an e-nook for the iPad and a scullery-style area in lieu of the old walk-in pantry. Peter Gobetti, sales and marketing manager at Broadway Homes, says double ovens, steam ovens, integrated coffee machines and built-in

microwaves are just some of the products that are more affordable than ever. The new timber veneers are also making their mark, often in a high-gloss finish. “Kitchen designs are becoming sleek and seamless with a preference for floor-to-ceiling built-in cabinetry, concealed appliances and subtle handles or the push-to-open mechanism for handle-free doors and drawers,” Peter says. “Extended central benchtops are becoming larger to incorporate casual dining and seating.” Keeping kitchen clutter at bay has become a top priority so we’re looking for drawers for everything from pots and pans to cups and cutlery. Recycling products are also being built into modern kitchens, with stores such as Ikea selling waste-sorting systems alongside all its kitchens, as well as energy-saving LED light bulbs, water-saving taps, economical fridge/ freezers and energy efficient induction hobs. Mark Wells, managing director at Mark Wells Designs and Construction, says that homebuyers are also demanding easy-care kitchens. Stainless steel underslung sinks and shiny surfaces that are easy to wipe clean are being paired with stylish chrome flickmixer taps. In the bathroom, Mark says we’re opting

for large-format tiles and minimal grout lines that are not only easier to look after, but look fabulous, too. “A freestanding bath with full-height tiling in a spacious room makes a very comfortable retreat with plenty of wow factor,” he says. “A window with a view is also very desirable.” While natural neutrals remain popular in bathrooms, Brook Leber, design manager at Residential Attitudes, says homebuyers are starting to be more daring. “Bold new colours and textures are now being introduced to bathrooms with more and more people branching away from the popular minimalist white bathrooms of the past,” he says. John Care, display and new product design manager at Dale Alcock Homes, says homebuyers are drawing inspiration from a variety of sources to create resort-inspired bathrooms. An outdoor shower is a relatively simple and cost-effective way to add a touch of the tropics, while outdoor bathtubs and spas are popular on a bigger budget. When it comes to the ensuite, the must-have shower is a large walk-in version that has no hob or shower screen and features a recess or plinth for storage and even a tiled seat. “For vanity tops, laminate is still a very good solution,” John says. “It’s all about the design of the cabinetry.” Paula Evans

You need to be realistic about your needs and conscious about costs when planning a revamp of your kitchen, says Western Cabinets design and sales manager Simon Cox

HE kitchen is the epicentre of family life in every home. It’s where each member gathers, eats and entertains. As a result, it is probably the one area of the house where we spend the most money. Before you make any ﬁrm plans about revamping your kitchen, draw up a list of likes and dislikes about your existing layout, looking closely at the space to see what does and doesn’t work. Your lifestyle will inﬂuence how you plan your kitchen and the appliances you choose. You need to think about what you want to achieve and what you want from your kitchen.

Ask yourself questions such as: ✱ How frequently do you entertain your friends

and family? ✱ Will you need separate areas for dining? ✱ What kind of food do you like to cook and

what tools and appliances will you need? Nowadays kitchens can be built to include great features such as electric lift-up doors, clever storage solutions, LED lighting systems and curved cabinetry. These innovations can dramatically add to the cost of your kitchen. You will need to be realistic and review your budget.

A good industry rule of thumb for a kitchen renovation is that your kitchen and appliances should represent approximately 7 per cent of the value of the property. This is only a guideline as individual needs, desires and requirements vary greatly. Once you are clear about your budget and what you are looking for, it is time to look for your designer and manufacturer. It is important that you visit kitchen showrooms so you can see and touch the different manufacturer’s product, research what services they offer and meet their designers. It is a good idea to ﬁnd a kitchen company that can project-manage your kitchen’s redesign and organise your installation work. Once you have chosen your designer, discuss your budget with them. Do not be afraid to do this – they do not want to rip you off. The designer will ask you lots of questions about your lifestyle and will advise you what is available in your price range. Everyone wants to make the most of their budget. Benchtops are most prone to wear and tear in a kitchen. Choose durable and long-lasting surfaces such as granite, quartz composite, acrylic composite or stainless steel to add long-term value to your property.

Drawers maximise storage space, making it easy to access your kitchen’s darkest corners. However, drawers are more expensive than doors. If your budget is tight, you can place drawer banks in key places. For example, put your pots and pans near the cooking area and plates and cutlery near the dishwasher. Quality modern drawer systems have softclosing mechanisms and an amazing array of accessories for storage solutions. Standard modular sizing of the cabinets will allow for these items to ﬁt without modiﬁcation, so that they can be added at a later date – if your budget cannot stretch this far initially. If you’re after a kitchen where you can socialise with your family and friends, opt for an island bench that can be used as a preparation space and a spot where guests can linger with a glass of wine. Finally, choose the right layout. Every kitchen should be designed around the working triangle. This involves placing the main work areas – food storage/fridge, sink and oven/cooktop close to each other, positioned at the three points of the triangle. These activity zones should be placed no more than 3m apart, so that you can move easily between them.

ODAY’S wow-factor kitchens aren’t just demanding to be the centre of attention. They’re increasingly been placed in the centre of the home. Jeremy Muir, group sales manager at Plunkett Homes, says the concept is illustrated in the company’s Cable Beach display in Alkimos where the kitchen commands a central position overlooking all the indoor and outdoor living areas. “It means that whoever is in the kitchen isn’t excluded from what else is going on,” Jeremy says. “It means food can be distributed easily to other rooms as well.” Jeremy says the trend has also been fuelled by our love of lifestyle TV and cooking shows that put the chef centrestage. Mindful that a central kitchen is always on show, Plunkett has added a wine fridge to one end of the main stretch of worktop, creating an eye-catching feature as you walk into the main living area. At the other end of the galley-style kitchen, with its Essa Stone benchtops, tall overhead cupboards and wide stainless appliances, is a generous walk-in pantry with a glazed door. Taking its cues from the Cable Beach Club Resort and Spa in Broome, this four-bedroom, family-size display home offers some inspirational ideas for outdoor living.

The conversation pit, cabana and putting green may not be included, but the stacker doors from the dining room and the games room are and it’s easy to see just how effective they are at bringing the outdoors in. With the games room part of the open-plan living area, entertainers can instantly create a vast indoor/outdoor party space. Connecting the master suite to the alfresco via sliding doors enhances the resort styling, which Jeremy says is “classy, yet casual”. There are extra-high ceilings throughout the living areas, a coffered ceiling in the entry foyer, Essa Stone benchtops in the bathrooms as well as the kitchen and a smart elevation with sections of limestone-look render. The Cable Beach is also a design that appeals to a wide range of buyers. “This includes the whole spectrum of families, from those with little kids to those with teenagers, as the two-bedroom zones are very separate,” Jeremy says. Shannon’s tip of the week Cleaning your bathroom in just 15 minutes isn’t that difficult. What you need: You will need a

vacuum cleaner; a clean soft kitchen broom; two pairs of pantyhose; a parmesan cheese shaker filled with bicarb soda; a spray bottle filled with white vinegar; a spray bottle filled with lavender solution (one teaspoon of lavender oil in one litre of water); oil of cloves spray (quarter of a teaspoon of oil of cloves in one litre of water); paper towels; clutter bucket (a large bucket or washing basket); a toilet brush; fresh towels – and music.

The process: Put on some great music, preferably something that has a good, fast beat. Not only can you dance to the music while you clean, but it gives you

something to pace yourself against and it notifies other people in the house that you are still cleaning. Take your clutter bucket and place everything that is not washable into the bucket (such as towels, toothpaste, toothbrushes, toilet paper, shampoo bottles, etc) and place it outside the door of the bathroom. It’s much easier to clean a clear space. Vacuum the room to remove all loose dust. Don’t forget to use the brush attachment to brush down the ceiling. Clearing the dust with a vacuum cleaner rather than a broom prevents the dust forming mud with any liquid you use to clean. Stuff the head of your clean kitchen broom down the leg of a pair of pantyhose and tie the excess leg material around the handle to secure it. Place the plug in the sink and fill the sink with hot water, close the door on

the bathroom and leave the room to steam for a few minutes. This makes the walls, ceiling and all the surfaces damp and allows bicarb soda to stick to vertical surfaces. Once the walls are damp, unplug the sink and let the water drain out. Take your shaker filled with bicarb and lightly dust it on the walls, in the bath, the shower, toilet and the now empty sink. Take your spray bottle of vinegar in hand and choose one section of wall to give a light spray to. Sweep the area while it is fizzing and move along to the next area, section by section, until you have swept the entire wall, floor and ceiling (it is easier to spray the vinegar on to the broom head when you are cleaning the ceiling). Use the same process to clean the shower and bath. When it comes time to clean the toilet, the inside of the toilet should be cleaned

with a toilet brush once you have sprayed over the bicarb soda with white vinegar. Don’t forget to use pantyhose to wipe down the plumbing at the back of the toilet with the bicarb and vinegar mix (for some reason many people seem to spray this area with urine; that’s why it tends to go a bluey green colour on the chrome). For the sink, I also tend to use a rolled-up pair of pantyhose because it is easier to get around taps and into the base of the sink rather than using the broom. Put the plug in the bottom of the bath or sink and fill with a small amount of hot water. Dip your pantyhose-covered broom in the water to rinse it, shake off the excess water and sweep down over all of the surfaces to rinse them off. Use your lavender spray on a rolled-up pair of pantyhose to wipe fingermarks around switches and handles. Spray a little of the lavender spray around the clean toilet bowl. This makes the toilet smell

nice. It’s also non-stick so you won’t have to clean it as often. Spray a little white vinegar on any mirrors or glass and wipe it down with a paper towel (not newspaper – newspapers used to contain lamp black in the ink that is a good glass polish, but it hasn’t contained lamp black for nearly 50 years. Nowadays it contains latex that causes smearing and involves lots and lots of hard rubbing to remove). Use a towel or paper towel to mop up any heavy water areas. Should you have any areas of mildew in grout, etc, give it a light spray with your oil of cloves mix and simply leave it there. It will kill the spore and inhibit regrowth. Replace all of the items in the clutter bucket, put out fresh towels and you have a sparkling clean bathroom. This sounds like a lot of work but in fact it’s very fast. My bathroom takes 8½ minutes for a floor-to-ceiling clean.

I dropped an orange highlighter on my gorgeous ivory silk coverlet. Can you help me remove the stain?

He says the overall look of the master suite is reminiscent of many of our favourite holiday retreats, where the bedroom and bathroom merge together. “The ensuite is a big space and that’s quite deliberate because when you go into these resorts the bathrooms are luxurious,” he says. W&B has made extensive use of glass in the Pagoda to capture the essence of a luxury Bali villa with its open-style rooms, while remaining practical for the WA climate. As displayed, the Pagoda opens to the outdoors at three signiﬁcant points. Not only does the display feature optional bifolding doors from the master suite, but buyers can also choose to add them to the dining room and the home ofﬁce. “It helps create that Bali feel,” Rob says. “You walk out of your villa into a courtyard and there’s a plunge pool or a water feature. “The bifolds give us the ability to demonstrate that. We wanted to give the effect that the outside was in and the inside was out.” Bali may have been the overarching theme,

but the designers were mindful that the Pagoda still had to function as a four-bedroom, twobathroom home. This is especially apparent in the generously proportioned kitchen with its second prep area and adjoining laundry, which is actually hidden in the far corner. “The laundry is very much an ‘action station’, the same as the kitchen, so why not put the two together?” Rob says. “But it’s not obvious what the laundry is until you’re actually in it.” Positioned so that it overlooks the dining and living area and to the alfresco, the kitchen features cabin-style overhead cupboards with lift-up doors, wide stainless steel appliances, a double bowl under-mounted sink and long stretches of CaesarStone worktop. “Everybody talks about bench space and you can never have too much,” Rob says. By extending the kitchen into a second prep area, W&B has provided the ideal space in which to put what Rob describes as “things that you have out all the time but may not want to display”, such as the kettle and the toaster. There’s barely a handle in sight in this kitchen, while the absence of overhead cupboards either side of the range hood means buyers could add a big statement splashback in the form of full-height glass or a bold feature tile. With reality cooking programs on TV attracting youngsters to be budding chefs, Master Builders technical adviser Romina De Santis looks at kitchen design from a different angle

NCE thought not to be a place for children, our kitchens are now being invaded by our kids and teens, who have been inspired by the latest host of cooking shows, websites and cooking accessories on the market. Aspiring young cooks need a place where they can be involved in the social aspect of food preparation, or even “plate up” their own creations. And a well-planned kitchen can cater for every member of the household. Involving children in food preparation is proven to promote healthy eating habits that are carried through life, so making your kitchen more accessible for your children makes sense. There are some simple ideas that can be included in your new kitchen or renovation that won’t compromise style and design choices. Remember that kitchens are still high-risk areas for young children. Chemical storage, hot surfaces and sharp and breakable objects are just some of the potential hazards. As such, the many safety messages must not be ignored. Restricting access to kitchens with temporary gates for very young children is a good idea, as is safely positioning appliance cords and pot handles, and using guards and childproof latches to reduce the risk of accidents. This is all part of making a kitchen child-friendly. More information on child safety is available on the Kidsafe WA website, www.kidsafewa. com.au. Plan your kitchen’s design so that breakables and other hazards are placed in overhead cupboards or in spaces with childproof latches installed. Soft-closers on cabinet doors and drawers are a good idea to reduce injuries to hands

and ﬁngers. Sharp corners or edges should be rounded or shielded. Many new appliances have better safety features, including gas shut-off and safety locks. Induction cooktops are cool to touch and provide a safer choice than other electric or gas hobs. Ovens are also available with cool-to-touch doors. If the oven you have selected does not have this feature, it should be installed at over-bench height. Choose durable surfaces that are less likely to scratch, dent and stain for benchtops and cabinets. Include an area with a lower height – this is practical for food preparation for adults and children and also as a snack or breakfast bar.

Keep hotplates and other hazards away from accessible areas. With so many no-go zones, include areas with items children can use independently such as a lunch-box station so they can assemble their lunch boxes or afternoon snacks, or a baking cupboard with bowls and utensils, cutters and rolling pins so they can set up for biscuit or cake making. These might be freestanding additions to your existing kitchen. Most importantly, look for things that are easy to clean. The downside of involving children in cooking is the resulting extra mess created. Cleaning up is something even the children themselves could do.

A-Z BUILDING information Saving water is now a top priority and homeowners need to check Water Efficiency Labelling and Standards ratings when purchasing fixtures and fittings for their bathrooms

HETHER you are building a new home or undertaking a bathroom or kitchen renovation, one of your primary considerations will be selecting suitable fixtures and fittings such as tapware, toilets, basins and even dishwashers. Although we generally assess how each item will best suit the style of the room or available space, researching their efficiency should also be a priority. The Water Efficiency Labelling and Standards Scheme began in 2005. Similar to energy ratings for electrical appliances, WELS provides

ratings for bathroom fixtures and fittings, as well as washing machines and dishwashers. New homes built in WA are required to have efficient water-heating systems, pool blankets for all new pools, and showers, taps, and toilets with minimum 3-star to 4-star ratings. The Water Corporation has a new brochure (available on its website) that gives great advice about how to reduce water use. One tip is to check your home’s water pressure is optimal because high pressure contributes to poor water efficiency and contributes to pipe leakage and dripping taps. You may find that you need to install a pressure control

device to maintain your water pressure. Even if you are not considering a full renovation, the Water Corporation has two great offers to encourage efficient water use. The first is the Shower Swap Program where you can swap up to two of your old, inefficient showerheads for free water-saving showerheads. The other offer is that you can replace a single-flush toilet in your home or business with a dual-flush model at a discount up to 30 per cent (toilet and installation). My builder is retiring and says that he is closing down. How will that affect my contract to build with him? What about any maintenance and/or structural problems in the future? I will answer your question in general terms by giving you an overview of your rights and obligations if a builder is unable to complete his contract for whatever reason. In the event that a building company is sold as a going concern, there would certainly be arrangements put in place as to how work in progress or uncompleted work will be dealt with. The purchasing builder may take over these existing projects or, alternatively, the terms of sale may require that the vendor building company complete all outstanding projects commenced after a certain date. In any event, buyers should be reassured that they have some legal protection in this matter. Since February 1997, under the Home Building Contracts Act, builders have been required to arrange housing indemnity insurance on behalf of their clients. This insurance provides up to $100,000 worth of cover (including loss of deposit) in the event of death, insolvency or disappearance of the builder. This insurance also provides cover against structural damage for a period of up to six years after practical completion of the building work. Where a builder is not able to complete the work, the insurer would arrange for another builder to do so. Most building contracts have a clause relating to the assignment or transfer of a contract to a third party. Client agreement to the transfer is required, but most contracts state that this consent shall not be unreasonably withheld. In the event that your contract is transferred to another builder, there may be an issue about who has responsibility for work completed by the original builder. For example, if the house is at roof cover stage at the time of sale, the new builder may wish to absolve himself of any responsibility for defects in structural work performed by the vendor up to this stage. The new Building Act will require the original builder to complete a “Notice of Cessation”, which will clearly define each builder’s liability. You should be reassured that indemnity insurance is your “safety net” in all these circumstances. ✱ For more information on building,

IRONS IN THE FIRE Working in the US, Matt Lihou saw outdoor kitchens as a hot new thing in a country where you get snow, so they were obviously going to be a hit in his sun-drenched home town of Perth

FTER spending five years in the US working in the appliance industry and seeing many fabulous outdoor kitchens being built, Matt Lihou decided he would give up spending six months of the year in snow and move back home to Perth to enjoy the warmer climate – and also get into the outdoor kitchen business. Since registering his company, Australian Outdoor Kitchens, in October 2008, Matt has now outgrown two factories and is in his third. He and his team include elements of landscape design to build outdoor kitchens in new homes and those undergoing renovations. The company’s first showroom opened in Wangara a couple of months ago. This new space gives customers a better opportunity to “get a real feel” for what the finished product will look like. Previously, Matt says he used to arrange for new customers to be taken to a former client’s house to view their kitchens, but this took a lot of time and effort. an outdoor cooking area, guests tend to head straight outside to enjoy the space. “You’re actually enjoying the outdoors and not sitting in front of the TV,” Matt says. “Who would like to cook a roast inside on a summer’s day when you can cook outdoors?” It’s for this reason that Matt says outdoor kitchens are increasingly gaining popularity in the warmer Australian climates. “It’s almost like what home theatres were ﬁve years ago,” he says. barbecues, refrigeration options, ventilation systems, sinks and mixers. “The main thing we wanted to show was the variety and complexity with which we can build an outdoor kitchen,” Matt says. The materials used are those that can better stand up to an outdoor environment, such as galvanised and stainless steel, according to Matt. Popular choices include polished concrete and stonework rather than chipboard or melamine. “Polished concrete is the newest kid on the block,” Matt says. He works closely with his clients, visiting their homes to see the space he and the team have to work on and to better understand the clients’ personal styles and desires. The company has even started incorporating kegs and “beerators” into outdoor kitchens so that clients can have beer on tap at home. Matt says outdoor kitchens are designed and built differently to those indoors and offer the opportunity to enjoy the fresh air, cook more frequently on a barbecue and turn meal times into a more social and family-oriented event. S kitchens have changed dramatically over the past few years, so too have the appliances within them. Ovens, range hoods and cooktops bear little resemblance to the cumbersome, functional appliances of old, with modern models being designed for simplicity, style and efﬁciency. “As today’s kitchen is often integrated within an open-plan living and entertainment area, the design of major kitchen appliances plays an increasingly important role,” says Thorsten Kissel, product manager, food and beverage preparation, at Miele Australia. “Homemakers are demanding that the total kitchen ﬁt-out looks stylish, with all appliances complementing one another.” Lyndon Craig, senior design manager at Electrolux, agrees. “Open-plan living has required that we design and choose our products in different ways, because now they are always on show,” he says.

“One of the major trends really driving the design of kitchens and appliances is integration and minimalism. “Some appliances are coloured to match the kitchen cabinets so that they blend in better, while in some kitchens special cabinets are made with large sliding doors that totally hide your appliances when they are not being used. The aim is to create a harmonious, uncluttered environment.” The changes in kitchen appliances are also reﬂected in the growing tendency of Australians to eat and entertain at home. “As busy Australian families choose to meet and entertain at meal times, kitchens nationwide have transformed from a mere preparatory space into the heart of the Australian home,” says Caterina Slade, product manager cooking brand, at Whirlpool. “As a result, Aussies are opting for ergonomic kitchen designs that do away with clutter, are open and inviting and truly livable. “At the same time, consumers are also

considering more carefully how kitchen appliances ﬁt into their lives and homes, with a product’s functionality, energy efﬁciency, use of technology and design all shaping consumer spending habits and choices.” According to Thorsten, there is an everincreasing interest in home cooking and, with this interest, an increase in the sophistication of cooking appliances. Modern Australian kitchens can be expected to incorporate four major innovations practically unheard of a decade ago – pyrolytic ovens, steam ovens, induction cooktops and designer range hoods. Pyrolytic ovens have a push-button cleaning process that superheats the oven to about 500C and burns off any deposits from baking, roasting and grilling into ash, which is then simply brushed or wiped away. “Australians are time-poor, but are cooking more at home than ever before, due to both economic factors and also the proliferation of cookbooks and cooking shows,” says Vanessa

Coussias, product manager cooking appliances, at Bosch. “Building appliances that satisfy the desire of the consumer to ‘cook from scratch’ but also save time is a big area of focus.” Induction cooking provides extremely accurate temperature control at an increased speed. Induction cooktops are also recognised to be more energy efﬁcient than electric or gas cooktops because of the heat-up time and direct application of the energy. “Heat is created directly in the pan base, cutting out the intermediary step of having to heat up a hot plate to heat up the pot to then heat up the food, making it very efﬁcient,” Thorsten says. “The time to bring one litre of water to the boil using an induction cooktop is more than twice as fast as with using electric or gas cooktops. Induction cooktops use approximately half the energy of gas and 65 per cent less than electric.” Steam cooking offers an extremely healthy

approach while retaining the natural ﬂavour, nutrients and colour. “Steam cooking is proving to be increasingly popular, with more and more people enjoying this gentle way of cooking,” Thorsten says. “It operates with dry heat and moist steam separately or combined for speciﬁc cooking requirements, in a multitude of operating modes to make restaurant-quality results easy to achieve.” Finally, range hoods are becoming design pieces in their own right, many taking centrestage in the contemporary Australian kitchen. “While many appliances are becoming more minimalist and integrated, others are creating strong design statements,” Lyndon Craig says. “Choosing a range hood is one of the best opportunities to be expressive and bold in your kitchen design. They come in many shapes, colours, styles, and lighting effects. This gives you an opportunity to really show off your sense of style.” Lisa Shearon

However, he says restaurants are the last thing on his mind when he’s in Manjimup. “It’s great fun,” David says. “It’s nice just to have a bit of space and be able to ride around on motorbikes.” Getting away from it all doesn’t mean the dedicated foodie stays away from the kitchen or stops trying to source fresh produce. “I have a tendency to cook a lot more when I am down there than I do at home,” David says. “There is such great produce down there, too, so we make sure we take advantage of that.” David says he and his family – his wife, Kareen, 19-year-old Jeremiah, 17-year-old Maddie and 13-year-old Isabella of Junior MasterChef fame – have a favourite market garden in Kirup where they buy fresh vegetables. They all also love spending time as a family in their large shed kitchen. “It’s just a really nice space to cook and the dining area is not far away,” David says. “Our kids usually get quite involved.”

The kitchen features a combination of steel benchwork, mouse-proof storage and bits and pieces David has collected from his various restaurants. “It’s designed a bit like a restaurant kitchen so there is heaps of bench space, a big sink and it’s all quite easy to clean,” he says. According to David, functionality is key in the design and style of the kitchen. “We entertain a fair bit down here,” he says. “It was logical to have our kitchen in a big space that is easy to look after. The whole thing is more about functionality than aesthetics, but that suits the shed, I suppose.” A big ladder hanging from the roof, where David hangs all his pots and pans, is one of his favourite things in the space. Another special item Kareen adores is a French-style cupboard David gave her. “It sits in the kitchen and she loves that,” he says. David says a good set of knives, a vacuum pack machine to seal his biscuits and meat cuts, and a large ﬂat-top Heatlie barbecue top his list of kitchen essentials. “It’s (the barbecue) just brilliant. You can cook enough bacon and eggs on that to feed 30 people and it’s really easy to clean,” he says. The family also got a large 18-seat jarrah dining setting for Christmas, which was made by a Manjimup local. David says the new furniture is a welcome addition because he regularly hosts long-table dining events with family and friends. The Coomers spend “a day or two” in

Manjimup each week to focus on farm work, which includes looking after their trufﬂes. “I would live down there if I could,” David says. “We’ve also got marron in the dam, so we usually cook a few of those.” The family plans to build a house on the property in the future and the shed that they currently live in will revert to “just being a shed”. “Hopefully it will house a tractor,” David says. SUCCESS IS SWEET The chocolates may look as if they have come straight off a factory line, but Yuki Nakamura’s handmade works of art are produced in a tiny kitchen in her rented home in Coolbellup

VERY one of Yuki Nakamura’s handcrafted chocolates is a work of art in its own right so it is almost impossible to imagine that the exquisite treats are produced in her tiny home kitchen. Yuki, an acclaimed chocolatier, says she has been crafting her edible artwork full-time from her Coolbellup home, which she’s been renting with her husband, Marlon Schoep, for the past 18 months. Living in a rental property has limited the changes the couple can make to the small kitchen, but they’ve become adept at ﬁnding plenty of extra shelving to house Yuki’s kitchen utensils. “We needed to improvise on a lot of things,” Yuki said. “My husband’s creativity kicked in and he built some things for it. With it being a small kitchen, we are always trying to be tidy and organised.” Yuki says one of the challenges of working from home is trying to make her workspace feel comfortable. “At 5.30 in the evening I have to pack up and try and make the kitchen accessible, “ she says. Marlon has put up curtains to divide the kitchen from the living area and Yuki says

she has tried to add “homey” elements. All of her chocolate making necessities are given prime space in the kitchen with the two special temperature-control fridges filled with her delicious treats given special preference. Yuki says her melting tank is one of the most important things to have on hand. “It keeps the chocolate in perfect condition,” she says. Yuki, who is originally from Japan, says her passion for food complements Marlon’s love of design. On top of his day job teaching English at a private school, Marlon does the design and administrative work for their chocolate company, Nakamura Chocolates. Yuki credits Marlon for giving her the push she needed to get into the chocolate making business. “Chocolate had always been a passion of mine, but I didn’t have the courage to go full-time,” she says. The pair aim to create treats that are “beautiful as well as tasty” and are constantly experimenting with colours and flavours. This creative streak flows from the food they make to their home,

which features splashes of colour throughout the kitchen and dining area. “Stainless steel is very practical, but I have tried to add colour to the kitchen,” Yuki says. Brightly coloured chairs in red, green and blue line the kitchen table and an unﬁnished artwork by Marlon hangs above it. A piano, which both Yuki and Marlon play, cookbooks and a ukulele dot the open-plan living/kitchen/dining area. LAWN AND ORDER In the third of a four-part series on how a waterwise garden was built from the ground up in Kings Park, Trevor Cochrane focuses on the different types of lawn and the use of mulch

FTER building walls and structure, installing irrigation and planting the gardens, it’s time to mulch. It’s important to think of mulch as a shade cover or sunscreen because it protects the soil from the direct sun, stopping the surface drying out. Coarse, irregular-size particle mulches are recommended by the Water Corporation and I believe that using an organic version of these is essential because they do eventually break down, further improving the soil’s health. We used more than 50cu m of mulch when revamping the gardens around Mount Eliza House in Kings Park and applied a 100mmdeep layer over the entire soil area. It’s interesting to note some experts suggest just 50mm to 75mm of mulch should be applied to the gardens, but the reality of any mulch is that as soon as it’s laid and watered it settles. How many times have you laid mulch out only to see bare patches of soil within weeks of applying it and feel as if the benefits are not being delivered? The week after we finished building this garden we received a record torrent of rain at the location – some 40mm in one night. The following day I took measurements of the mulch around the site and it was just 75mm deep at the deepest level. Within two weeks of the mulch being applied, it had subsided by 25mm and as much as 50mm in some places. My policy has always been more is better and this certainly confirmed it for me. Mount Eliza House is surrounded by a show

garden so the lawn shared equal billing with the gardens. The amount of lawn allocated here was huge, which suited the purpose of the garden’s use – this is a very important message for anyone designing a garden. Don’t lay lawn for the sake of it – lay it for the use it will get and its beauty. Some may say that a large expanse of lawn is not waterwise, but through the extensive soil preparation and hi-tech irrigation system, we were able to ensure this lawn used less water than the old lawn and because of the two varieties I selected, it looked so much better. The open sunny locations required a finer leaf lawn and I chose Empire Zoysia grass, a relatively new grass to Australia that looks absolutely magnificent when well kept. It has a slightly bluish tinge to it and has the added benefit of needing less water and requiring less maintenance to look fabulous. We sourced high-quality rolls from one of the state’s best turf growers – Westland Turf. My message in highlighting the quality of the turf used is to point out that professional growers do not have weed seeds or foreign grass species invading their product and their grass is healthy and strong. You can be sure that by selecting turf from an organisation such as Westland Turf, your lawn will be free of pests and diseases – something that is vitally important to its success. To lay it, we first carefully levelled the soil. The easiest way to get an almost perfect level is to use a coarse river sand or sandy loam. A thin layer and a carefully screeded surface ensures

the turf is perfectly flat and level once rolled out and compacted. The reality attached to adding so much organic material into the soil is we will be seeing some lumps and bumps appear with time as the organics decompose and shrink in size and we will apply a thin layer of fine sand at that point to maintain the levels. There was one area where using Empire Zoysia grass just did not work because it received less than 10 hours a day of direct sunlight. The question was: “Do we bother trying to grow grass here or just leave it?” The area, which is shaded by huge overhanging moreton bay fig branches, is perfect for photos to be taken for weddings, so we decided we needed to find a turf that performs in shaded positions and looks great. It wasn’t a hard decision to make. I have used Palmetto buffalo grass in similar circumstances in my own garden, as well as having seen it used in other shady garden positions to great effect. While some other buffalo varieties have a lot of advertising behind them, Palmetto is a grass that actually performs in sun or shade and its dark green foliage made it perfect for this position. From a mowing and care point of view, you treat it differently in shady spots to the way you would in sunny locations, but it will not let you down. The trick is to allow it to grow a little longer so that it maintains its thick, lush appearance. ✱ Next week: Feeding and maintaining your garden

Marie Gasper, of Kelmscott, has about 30 hippeastrums but not all of them flower. Why? She also has tuberoses (one of my favourite plants) and wonders why they are not flowering. Hippeastrums are triggered into flowering by several factors, but the most important is the maturity of the bulb, which is why there are always variances. The tuberoses should be flowering now and again. Light and maturity will have something to do with it. The next major flowering period will be autumn and applying some potash now may be of some help. I always found that liquid feeding mine got the best flower results.

Fay Prunster, via email, has been losing citrus fruit to fruit fly attacks and has tried many remedies without success. What do I recommend? The best way to control fruit fly is using Yates Fruit Fly spray. This year has been bad and this is the best control. If you can’t bring yourself to spray, try using the old Vegemite lure with Fenthion as a poison to kill the flies. Another solution is to pop a paper bag over the fruit to stop the flies getting to it before it colours up. Trevor Cochrane

FERN-TASTIC RESULTS If you are planning on giving your bathroom a bit of a facelift with the use of plants, remember that varieties of ferns are ideally suited for the humid conditions

HE bathroom is always an interesting place to have plants. The humid conditions make a bathroom the perfect place to grow ferns such as the maidenhair fern or, even better, the giant maidenhair fern, which has large fronds that look more robust and has a few variants including a form that produces reddish newfrond foliage. Foliage plants are also good to consider. In a rainforest these plants grow at forest-floor level and produce larger, greener leaves as they fight to get a piece of the 1 per cent of light that filters down from the tree canopy above. In a poor light situation – the typical bathroom conditions – these plants will do incredibly well. Varieties to look out for include aglaonema, known as the Chinese Evergreen, dieffenbachia (Dumb Cane), Devil’s Ivy and syngoniums to name just a few. More sensitive varieties include peperomias (often referred to as the radiator plant), fittonias (known as the nerve plant) and african violets, an old-fashioned plant making a comeback internationally. If you’re a little more sculptural in your plant tastes, dwarf sanseveria (snake plants) are great in small pots in groups of three or four. They have variations in foliage colours and are almost indestructible, surviving for weeks without water. Growing plants in the bathroom requires a special kind of pot to be used.

Self-watering pots are the preferred option here because they have a small waterwell in their base, allowing for moisture to be available to the roots for long periods of time. The kinds of plants that grow in bathrooms are usually from tropical rainforests so this moisture supply is very important. There are a lot of different self-watering pots, including plastic and ceramic options. The kind that use a wick are, in my mind, always the most successful because the wick draws moisture back into the soil mass, feeding the roots. The great thing about self-watering pots for bathrooms and even balconies and patios is the plants do have a constant supply of moisture. These kinds of plants are in very visual locations and you cannot afford to let them go “off” and look bad, as you will suffer with the visual impact as much as the plant does. Another group of plants worth considering are bromeliads and there are a lot of different species but the ones I’m referring to come from the genus called tillandsia, which are compact and incredibly colourful. Some members of this family are known as air plants – apparently not requiring soil to survive. They would naturally grow in trees feeding from moisture in the organic and moist bark and taking nutrients and moisture from the atmosphere. These specially adapted plants such as Spanish moss – or old man’s whiskers as it’s

sometimes known – are ideal if you have some space because some varieties will ﬁll out and take up some room. Others such pink quill (Tillandsia cyanea) produce amazing blue ﬂowers out of large pink bracts and make a stunning display for months on end from a small compact plant. This has to be one of my favourite plants of all time and it looks fantastic indoors. A strategy for those who want plants indoors, but struggle to keep them looking good is to buy two and swap them regularly. You will need a cool, shaded spot outdoors for the replacement. Another secret to success is buying a small watering can and keeping it in the bathroom cupboard. If it’s an ornamental can, it can be a feature on a window sill, but the important issue here is using it to water your indoor plants regularly. For larger bathrooms, you can use larger plants and possibly the best of all is the Chinese happy plant (Dracaena fragrans) with long strappy leaves that cascade down a long trunk. This plant loves bathrooms and it’s believed to bring luck to the owner. Lastly, but most importantly, remember that indoor plants like to be fed regularly. To ensure they have glossy, healthy looking foliage, take your plants out for a hose down every few months. A liquid feed over the foliage will do them wonders, too. Trevor Cochrane

Weâ&#x20AC;&#x2122;ve always particularly loved it because we both work in that industry and also because it is a really beautiful study that captures the moment perfectly. MacBook Air This is my portable office and my life. It means that for travelling itâ&#x20AC;&#x2122;s very light and when going from meeting to meeting I can just put it in my handbag. This has inspired us to produce concerts such as Symphony by the Bay and the 2012 Leeuwin Concert Series. Leunig cartoon Leunig drew this cartoon for my husband when he was the fallen angel in a Leunig play at the Playhouse Theatre years ago. I had a drink with my (now) husband in the bar after the play. It was the first time we met. Backstage passes I tend to keep backstage passes from shows and concerts I have been involved in over
