n 1994, Giovanna Medina Bruzaferri (Rector and founder of ICUM) decided to offer an educational proposal, which supported the formation of professionals in culinary arts with a high educative level, which means, training world-class professionals.
ICUM has graduated thousands of chefs with a vast experience in international cuisine, trilingual and with academic training in food and beverage management.
She defined a highly structured educational model that combines not only the gastronomic field, but also some other disciplines, which let ICUM compete with the best schools in the world. This model consists of a demanding academic curriculum, modern plans, culinary arts, economic and administrative training, arts and science. All of this in a multicultural and international environment which includes certifications in English and French languages, thereby achieving a comprehensive education that highlights our graduates, both nationally and internationally.
20% of our graduates are entrepreneurs, which means, they have started their own business. 16% of students work or have worked abroad. 80% of gastronomy schools in Mexico have been positively influenced by the ideas and talent of ICUM graduates.
Instituto Culinario de MĂŠxico A.C. has been in the education sector since 1994, offering a Degree in Gastronomy, Chef and being a pioneer in this field, the first educational Institution in Mexico that has offered a specialized degree program in Culinary Arts with recognition to the SEP. After 8 years of steady growth and consolidation, in 2002 there is the opening of the Campus Monterrey, where nowadays there are more than 500 students. In 2011, ICUM reafirms the educational quality of its programs by the creation of the Continuous Education Division, offering educational programs that no other in this country owns, with more tan 60 courses and 8 diploma courses for affitionates, industry professionals and executives interested in their personal growth and the joy of living well.
The national and international recognition of the Institute is palpable. ICUM is an active member of the Panamerican Confederation of Hospitality, Tourism and Gastronomy Schools CONPEHT, the International Asociation of Hospitality Schools in Europe AEHT, The Council on Hotel, Restaurant and Institutional Education CHRIE, EUHOFA International and The World Association of Chefs Societies WACS, which has allowed the participation and distinction in competitions and international exchanges.
Our graduates are successful professionals who work in much of Latin America, France, Spain, Switzerland, Italy, Monaco, Quatar, United States, Canada, England and Chipre.
One really important aspect in our students training is the performance of their professional stages for which there are over 400 options on lodging and restaurants in and outside the country.

Another important achievement that makes ICUM above any other institution in Latin America, is the signing of an agreement with University of Wine in Suze La Rousse, France, from which our students will have the possibility to apply to obtain, in addition to their Bachelor´s Degree in Gastronomy, Chef, the Degree of “Sommelier Conseil Assistant”, endorsed by the University of Wine, thus achieving our graduates to have an international accreditation that only this institution has in Mexico.
