Ocean Reef Club Recruit Mexican Culinary Talent at ICUM
T
he Institute received a visit from the Ocean Reef Club, one of the most exclusive clubs in the United States, situated in Florida. The visit was organised by ICS with the objective to recruit Mexican culinary talents, supervised by Chef Philippe Reynaud the senior culinary director and Alexandra Rodriguez the recruitment manager at the Ocean Reef Club. It was an exclusive visit to Mexico just for the Alumnis and last two semesters students of ICUM. The tour started at ICUM Monterrey where the day started with a tour of the campus and Chef Phillipe Reynaud had the opportunity to taste several dishes prepared by one of the classes one of them was the classsic dish “Escamoles” . The Chef , then had breakfast with the Institute executives before he presented the Ocean Reef Club and his career journey to the students and candidates. After that the recruitment process started where the candidates had to cook and present their chosen dishes to the chef In English. In results to that all five candidates where selected for the opportunity in the States. The visit ICUM Puebla started off with a great Mexican breakfast with a mix of traditional cuisine by Chef Rodrigo Sosa Carrillo of which the group were fascinated with the flavors of the real Mexican dishes and the Chef learnt some certain facts of the local cuisine, the chef even found it difficult to choose his favourite. Followed by the meal we gave a presentation of the Institute with it’s facts before the Chef presented the Ocean Reef Club to the participants and a group of students which was very sourceful.

After the presentation a quick tour of the Institute was given before the main recruitment session started as Chef Philippe Reynaud then observed the Candidates through their techniques before the main presentation of the dishes. The Chef was very pleased with the initiatives of the candidates and with the assistance of Chef Monica Jiménez and Chef Oliver Ramírez who tasted and advised the candidates of ways to improve their cooking skills. Out of 15 candidates Chef Philippe and Alexandra selected right away 9 of the best profiles although they appreciated all the cookings, they chose the candidates with most English speaking techniques. Three more, were chosen but need to have another interview in order to prove their english conversation skills. In total they were 12 chosen out of 15 candidates. Chef Philippe expressed his gratitude and content of the results his visit and would definately like to come back in the future. He also recognises the talent of our students and their skills in the kitchen. He also advised students to continue to improve and respect the uniform of a chef. Congratulations to the successfull selected candidates and to the participants who represented the Institute!

Semifinal Continental Las Vegas, USA 22-25 Julio l 27 de abril de 2013 tuvo lugar la Gran Final del Concurso “Rumbo a Hans Bueschkens Young Chefs Challenge 2013” en ICUM Campus Monterrey. 3 alumnos del Campus Puebla y 3 de la ciudad sede se enfrentaron amistosamente por obtener el título de Representante Nacional que tendría el primer lugar, resultando ganadora absoluta la alumna: LORENA VALENZUELA ZAZUETA El jurado estuvo conformado por Chefs Instructores del Instituto, así como externos, como el Chef Humberto Villarreal de Restaurante Bodega 8 y Chef Daniel Valles de Restaurante Black Market. La ganadora, quién ahora representa a México, competirá en Las Vegas, Nevada, en julio de este año en la Semifinal Continental Americas, contra 14 países más de nuestro continente. ¡Éxito y Muchas Felicidades Lorena!

ous accueillions 4 élèves du Lycée d’Hôtellerie et Tourisme de Gascogne qui passeront un séjour à Puebla du 4 mai au 24 août 2013 pour un programme académique à l’ICUM suivi de stages à l’hôtel Presidente Intercontinental de cette ville. Bienvenu aussi, Chef Cristophe Cusol, répresentant du Lycée qui reste chez nous pendant 1 semaine. Marina Soumarmon, Sarah Mondon, Nadia Nahhal y Mathieu Talon commencent à connaître déjà notre gastronomie, boissons et culture. Parmi les visites prévues se
