THE SIXTH Waveney Valley Sculpture Trail organised by Waveney & Blyth Arts, the event takes place at The Raveningham Centre on a threeacre site of lawns, hidden groves, orchards and walkways. Each year the organisation hosts a programme of events that highlights the unique character of the Waveney and Blyth valleys situated in North Suffolk and South Norfolk. THE ‘Out There’ international festival of circus and street arts is returning to the streets of Great Yarmouth for the 12th year on 14th and 15th September 2019. Known to be weird, wonderful, outrageous and outstanding, the Out There Festival will bring the people of Norfolk some of the world’s finest circus and street art performers. Headline Act Nine Below Zero have developed a reputation as one of the best blues bands in the country. They have toured with the likes of Sting, Ray Davies and Brian May and worked with Chuck Berry and Jools Holland. Star-crossed Lovers One of the most emotional love stories in literary history is the inspiration for a brand new production from globally-acclaimed choreographer and director Matthew Bourne. He tells John Bultitude more.
T
he passionate and emotional
story of star cross’d lovers Romeo and Juliet has inspired the world’s creative community for years spawning multiple versions and adaptations. For Matthew Bourne, it was not so much the story but the opportunity to channel the enthusiasm and talent of young people which drove him to create his stunning production of Shakespeare’s iconic story. He said: “I avoided it for years because it was something everyone expected me to do. It had been done in many different styles and mediums and I thought it would be hard to find a new way into it, which is something I always search for. “It is a story about young people, and I thought that was a great impetus into it because it is about young people and young love. I got more excited when it was suggested that we cast it with young people, we work with young creative associates in all the different departments on the show alongside all my usual worldclass team that I work with, and it was all about nurturing them while telling the story. That is what got me excited about it.” Set a few years in the future when society frowns at young people for having too much feeling and emotion, it zones in on that harnessing that same excitement in the cast. Matthew explained: “Dance is very good at extreme emotions, and Romeo and Juliet as a story is certainly full of those. It is full of passion, love against the odds, and several extremes of murder and violence. It is all those big emotions. “One thing I have tried to bring out is that when young people first fall in love and they feel that passion, they really go overboard in many ways. I often think about how classical ballet handles this and how the young girl gets very excited by a kiss on the cheek. Young people today, if they are into each other, are kissing until their mouths are sore, and I have tried to
capture a bit of that.” Joining his professional company at each venue will be six up-and-coming talented young dancers who were chosen after a series of auditions. The three male and three female performers will appear alongside the professional company in every performance. Matthew explained: “They are an integral part of the show. They are not token appearances and are definitely part of the main company.” In addition, each area of the creative process including lighting, sound and orchestration have a specially-appointed Associate Artist working hands-on with Matthew’s team. He enjoys a close professional relationship with Young Associate Choreographer Arielle Smith. “She is wonderful. Not only is she a great up and coming talent but I get on with her very well as well. We have a laugh,” said Matthew. “With such an enormous age difference between us of 30 years or something, she is like a mate and is incredibly mature in the way she has handled the whole process and there is a lot of her and her work in it. She is not standing by my side watching me. She is taking rehearsals, creating movement, and she has been great.” The show also boasts a brand new arrangement of Prokofiev’s music which will be performed live by an orchestra at each performance. Matthew said: “While Prokofiev’s music is wonderful and big and lush for big opera house productions and it suits that style of production, I wanted something a bit more earthy and quirky. We nervously went to the Prokofiev Estate and asked them if we could do a new arrangement. It is sounding wonderful and I hope the estate are happy.” For Matthew, Romeo and Juliet is the latest project in a busy 2019 which also saw his iconic production of Swan Lake go back on tour and he was presented with a Special Award
for services to dance. He recalled: “Swan Lake coming back is always a thrill because it does introduce so many more people to dance and to our company. In the middle of all that, getting the Olivier Special Award right in the middle of creating a new show was rather good. Getting an award like that can feel a bit like it is the end of your career and people are saying ‘Thank you, please stop.’ It felt great to be in the middle of a new creation when I got it. It was about the past and the future at the same time.” Matthew admits when he started on Romeo and Juliet, he was daunted but that creative fear has been replaced by excitement with this brand-new addition to his 30 year creative portfolio which includes work in theatre, dance and film. As far as Romeo and Juliet is concerned, he feels it has something to offer everyone. He said: “I don’t think dance needs to be scary. People do get worried because they think they are not going to get it. I don’t want people to feel that way. “Equally I want people to have something to get their teeth into as you do when you see a great movie or play, or you are trying to follow the plot of Line of Duty on TV. You can’t just sit back so it is all easy, easy. It is challenging for our audiences in some ways but they have grown to love that in our work. They want twists and there are some in this version, but it is all very clear and very easy to follow. Bitter Wheat
OUT of Town
John Malkovich is quite something to share a room with for two hours, and it’s a topical riposte to the major socio-cultural movement of the decade. And it’s not as bad as the critics indicated. Even so, in the context of Mamet’s mighty career, Bitter Wheat is a bit of chaff. We sent Benet Catty, our West End Critic, to see for himself the show everyone is talking about.
A
new play by arguably the greatest living American playwright featuring a famous American actor currently has the unenviable distinction of being the worst-reviewed play in London. The playwright is David Mamet, author of Glengarry Glen Ross, American Buffalo and Speed-the-Plow (all revived in recent times), as well as Oleanna, one of the most controversial plays of the 90s for which the slogan was “Whatever Side You’re On, You’re Wrong”. Bitter Wheat, his new play premiering in London, seems to aim to do for the #metoo era what Oleanna did for political correctness. The actor is John Malkovich, star of Dangerous Liaisons, Burn After Reading and Empire of the Sun and seventy others, here returning to the London stage for the first time in thirty-three years to play Barney Fein, a fat and predatory movie monster magnification of Harvey Weinstein. The billing calls it a farce. We’ll get to that. While opinions may vary about Bitter Wheat (some people hate it, others just dislike it intensely) one thing is unarguable. This is the most unpleasant show in London. Barney Fein is rich (buying awards), threatening (owns everyone and everything), fat (getting out of a chair is problematic), narcissistic (no sense of empathy) and misogynistic (he expects a Korean actress to engage in sexual acts in exchange for a career). His long-standing PA (Doon Mackichan) clearly knows what’s going on and chooses to ignore it. Others just take the money and run. And then there’s the actress (an impressive debut by Ionna Kimbook), who confuses Fein by knowing nothing of Korean culture having been brought up in Kent. This being Mamet there’s plenty of
swearing and macho posturing. Malkovich impressively (perhaps) doesn’t attempt to get laughs. Malkovich takes the more daring route of allowing Mamet’s monstrous creation to be as unpleasant as the writer has written. It’s to the credit of the actor, but not to the benefit of the audience. The tension and discomfort on the night I saw it, particularly during the last two scenes of the first half, was unmistakable.

Mamet’s play has more to it than meets the eye. Fein defends himself by noting how much money he gives to the Democratic Party, as if to suggest that because he’s one of the good guys he can get away with being bad. He also has a recurring defense of his behaviour: his weight. Some of the critics have taken this as the writer seeking to generate support for Fein’s plight but I disagree: to me it’s more evidence of his narcissism and deflection, reminiscent of the moment when the title character in Edmond, Mamet’s 1982 masterpiece about a man who self-destructs in one night and kills a prostitute, says “I think I just had too much coffee”. The play is also striking, and uncomfortable, for how most other characters bow to his will and, in
so-doing, encourage his behaviour to its pathological extremes. In all these respects, Mamet has written a play about Donald Trump. Fein uses various Trumpian terms (“fake”,“losers” etc), perhaps to suggest that Weinstein and Trump are of a piece: rich, fat, entitled men who believe in their invincibility so much that others believe it too. But hubris comes before a fall. (We can only hope.) David Mamet’s play is badly served by the person chosen to direct it: David Mamet. Famous for his near-spiritual belief in the “just speak the words, don’t interpret them” school of acting and directing, it is notable that the more Mamet-like the stagings of his work the more lifeless they often are. So it is here. As played on a two-wall set, with scenes divided by darkness and silence, the production is cold and – more surprisingly – slow. Mamet’s trademark rapid-fire dialogue, which has inspired generations of stage and television writers for decades – here fails to find a Mamet pace. In the first half this adds to the creepiness of the scenes between Fein and the actress; silences feel louder than they would in a normal production with background sounds and life. But in the second act, in which the plot is largely farce, the naturalistic tone sits uneasily with the unlikely twists and turns which farces thrive on. A different director would have given Bitter Wheat more life, maybe, but not much more heart. Bitter Wheat, starring John Malkovich is on at the Garrick Theatre in London’s West End until the 14th September with tickets on sale now. Sainsbury Centre For Visual Arts Magdalene Odundo OBE is one of the world’s most esteemed artists working in ceramics. This major exhibition will bring together more than 50 of Odundo’s works, shown alongside a selection of objects chosen by the artist from across the globe and spanning 3,000 years. The Sainsbury Centre will showcase Transition II, Odundo’s largest work, made up of 1,001 individual suspended glass pieces. your picnic
Where will the busiest month of summer take you for an al fresco experience? Asks Melanie Cook of VisitNorwich.
W
hat is it about eating al fresco? Is it the cheap thrill of catching our unpredictable weather just right? Is it the otherworldly combination of a freshly made sandwich and the sound of birds in the trees? Or is it that food just tastes nicer in the sun - in the fresh air? Whatever the reason, where should we be heading and where can we pick up some of the best picnic food possible without visiting a supermarket? The obvious choice for me has to be Norwich Market (Mon – Sat). In recent years the food stands available on the market have grown considerably and whilst the old favourites of fish and chips, hog roast and mushy peas are still there and remain as popular as ever, there is an abundance of stands selling street food from around the world. Maybe once upon a time a visit to the market for lunch happened every weekend, on a Saturday or even less frequently than that; now you can get something different 6 days a week – for several weeks. The gardens above the market are the perfect place to take your food – great for people watching and soaking up the sun. One of the latest food and drink offerings is from Sir Toby’s Beers. Toby’s Beers is located on the side of the market facing the Guildhall taxi rank. I was jubilant at Christmas when they opened one of the tiniest alpine chalets you’ve ever seen, in the market unit neighbouring theirs. Complete with a Christmas tree, decs and a comfortable armchair it was the place to be catching up with friends over an aromatic mulled wine – it proved extremely popular. So popular, in fact, that Toby and his business partner now have a licence to sell alcohol all year and with that we have possibly one of the smallest bars in England. Go and check them out, they even offer suggestions for beer pairing with take-away food from the market; they encourage you to buy your lunch, bring it to the bar and enjoy it with a great beer. Of course, you can also make up your own picnic from the market. Pick up artisan breads (Bread Source), local cheeses, meats, local fish (and dressed crab), chutneys, chocolates and incredible cakes, as well - of course - fresh summer fruits and veg. All you need is a selection of cutlery and a sense of adventure and you’re good to go! It was last August that The Ivy Norwich Brasserie opened in the Norwich Lanes. It
was glorious to see this well-known George Skipper building begin a new journey as a restaurant, bringing with it a touch of decadence and Parisian glamour. Sitting outside with a glass of wine and a bite to eat really is rather lovely. For their first birthday, The Ivy is celebrating in style with an exclusive City of Stories themed cocktail available throughout August. The Iceni Raspberry Gin & Tonic is made with local tipple Boadicea Gin and fresh raspberries. The Ivy team have also been

Also new this year, relax in specially designed Norwich, the City of Stories deckchairs at the Westlegate/Ber Street site. Full details are on the VisitNorwich website. Why not bring along food and drink and sit down to enjoy the show? Norwich’s secret garden, Plantation Garden, offers a traditional afternoon treat for all ages to enjoy every Sunday until 3rd September (and you are supporting a wonderful local charity too). Sunday Teas take place on the upper lawn terrace between 2pm – 4pm with tea, coffee and home-made cake. Most Sundays there’s live music too. Entrance to the garden is £2.

Located on St George’s Street and run by Fabrizio Fiaschi from Tuscany, the deli won Runner-up Best Deli in the English Italian Awards in 2018. From here, take your picnic to the Cathedral Green, where city meets countryside tranquillity. Jarrolds have made big changes to their deli over the years. You can find a large range of locally made produce stocking favourite brands such as Candi’s, BoojaBooja and Bullards Gin. At the counter for an instant picnic, pick up cheeses, pates, quiches, pies, tarts and cakes. Take your tasty delights around the corner to St Gregory’s Alley seating area, or to one of my favourite ancient hidden gems: the courtyard at The Museum of Norwich at the Bridewell (Bridewell Alley, Tue – Sat). Both venues are located in The Norwich Lanes. In fact, why not have a picnic and a visit to the museum during its Free Days event (funded by the Freemen of Norwich)? The Free Days give everyone complimentary entry to the Museum of Norwich and Strangers’ Hall between 30 Jul to 11 Aug. The event is aimed at encouraging people to be curious, to investigate or re visit these incredible gems embedded in the heart of Norwich. It’s also worth noting Strangers’ Hall has a beautiful medieval walled garden; a perfect place to relax and eat. Finally - and really worthy of a mention though not outdoors - The Cosy Club is working with charity Independent Age to offer free teas for everyone between 10am and 11am each Wednesday. This is aimed at perhaps a first-time mum struggling with her new adventure, or an elderly person looking for a chat. Blakeney Gramborough Hill Walk, Salthouse This circular walk, featuring a stroll along the coastal ridge, is one to make the most out of in warmer months before it gets gusty in the colder ones. Blakeney is a beautifully maintained coastal Nature Reserve featuring pristine salt marshes. The walk is suitable for all nature-loving families, especially as it is both pushchair and wheelchair accessible. For the bird-lover, this is a particularly fun walk as they might be able to lay their eyes on a Redshank before they make themselves scarce for the winter, so bring along the binoculars. Blakeney National Nature Reserve is internationally famous for all sorts of wildlife, too, so expect the kids to enjoy spotting furry friends along the way. Blickling Estate Walk, Blickling Another National Trust-approved walk, this is a great option for families with slightly older children, ones with dogs in tow, or history buffs looking for an unguided walking alternative. Schedule your walk on a Saturday morning to enjoy a 15-minute briefing on the original owner of Blickling, the former Earl of Buckinghamshire, outside
the Estate Barn visitor reception at 11am. Along the way, you can expect to see the Blickling Estate Mausoleum, an ominous stone pyramid at the edge of the property. If you time your visit right, you can enter the Mausoleum and take a look at its ornate stonework on the 9th or 25th of August. Finish up your trip with a meal at the Buckinghamshire Arms, a pub nestled right in the estate that boasts a beautiful outdoor area, perfect for sunny August days. Roman Camp, West Runton If you’re looking for a challenging walk, summiting Beacon Hill and enjoying the views from the highest point in East Anglia will certainly be a great reward at the end of it. You’ll also be able to spot earthworks dating back to the Napoleonic Wars along the way. Given that the walk is a difficult one, it is best tackled in the summer when the ground is as dry as possible. The walk is 9 miles long, so pack a picnic and tuck in when you reach the top. On the way back down, be sure to make a well-deserved pit stop at the ice cream van on West Runton beach. Melford Hall, Long Melford Melford Hall is a gorgeous stately home in Suffolk, rich with natural beauty that is said to be the inspiration for works by Beatrix Potter. Thanks to the inspired efforts of National Trust volunteers, the home’s grounds have been restored and offer a whole host of activities for both children and adults to enjoy. In the summer, the woods turn into a haven for bees and butterflies that enjoy the smell of the honeysuckle in the flowerbeds and the opportunity to cool off in the butterfly puddle. Spend a few hours walking around the 20 acres of grounds solo, or book onto Melford Hall’s Railway Walk on 3rd August for a guided tour that offers history about the local village and railway. Discover a taste of Our Bury FOODIES looking for what some of the best chefs in Suffolk have to offer are in for a treat at the Our Bury St Edmunds Food & Drink Festival, a free entry two-day event in the town centre. In The Barn at The Dabbling Duck FOLLOWING the success over the last few years with the outside area at The Dabbling Duck, serving street food and pizza through the summer months, owners Mark and Sally wanted to make the area more ‘usable’ throughout the year... and so the idea of ‘The Barn’ was hatched. Places&Faces asked Sally about how they had decided to develop this side of the business, “Mark and I have always loved the idea of alfresco dining particularly when visiting France or Italy, where outside dining is a relaxed space for everyone to enjoy, but obviously they have the weather on their side! We wanted to create an area that was a grown up and a cool place to be, but at the same time where families could relax. The Barn is a
fantastic space, with a wood burning stove and heaters for the colder months, it allows us to serve street food and pizza through the year, we have also held our Christmas market and Mussel Festival in the area as well as live music, it’s worked better than any of us could of hoped. On Friday nights, the atmosphere is great with people spilling out from the barn on to the garden area in the sunshine, eating wood fired pizza and street food cooked on the outside bar. Children playing together on the play area and plenty of cold drinks... it is a great relaxed informal space. In fact we have outgrown our currant pizza oven, and a new double one is being built to keep up with demand!”

Quick & Easy SUMMER SALAD Summer
is all about alfresco dining. At the Bainbridge residence we have every meal in the garden at this time of year from BBQs to cooking on our fire pit, think toasting marshmallows and big hearty salads bursting with fresh Norfolk produce. This is a simple recipe to get the most out of the summer, get your friends and family around, put this delightful salad in the middle of the table and get stuck in. Delicious ingredients include samphire, new potatoes, mackerel or Hake and organic beautiful leaves grown locally at Thornage Hall or Wiveton Hall Farm.

Start by finding a nice big serving dish/bowl. Then I like to crush a garlic clove and rub it around the bowl before building the salad it just helps give a great hidden depth to the dish. Now start to layer your salad, first being the base layer of salad leaves (don’t worry about seasoning anything yet as we will over season the dressing to accommodate this later). Then add the slices of cucumber, tomatoes and radishes, sprinkle the herbs (all this can be done before and put in the fridge for later). Turn your grill on high and allow to warm-up, meanwhile rub a tray lightly with oil and lay the seasoned fish, flesh side down and place the 20g knobs of butter onto each fish. Now place
the fish under the grill on the lowest shelf and gently let the fish cook, after three minutes spoon over the melted butter all over the fish and return to the grill cook for a further three minutes. Remove from the grill and season with white pepper and lemon juice. Allow the fish to rest for two minutes. Now we are ready to serve. Flake the fish over the salad including all the skin. Finish with the edible flowers and pour over all the cooking juices left on the tray that the fish was cooked on as this becomes your dressing. Toss the salad lightly and serve with warm sour dough and a chilled glass of Norfolk’s Flint wine. Happy Summer Everyone!

An enduring classic, this cocktail mixes tart citrus flavours with the smoothness of bourbon. The egg white is optional, but it won’t be as silky without it. Top with a little full-bodied red wine to turn it into a New York sour.
Feel yourself flagging mid-party or need a decadent post-dinner digestif? Boost your energy levels with this sophisticated and indulgent coffee-flavoured cocktail. Vodka and espresso – a match made in heaven.

Method Put all of the ingredients into a cocktail shaker with some ice and shake hard for about 20 seconds to thoroughly mix and chill the liquid. Strain into a glass filled with ice and garnish with the cherry and orange slice.

Fill a Martini glass with ice, to chill. Pour the vodka, coffee liqueur and espresso into a cocktail shaker and fill this with ice too. Vigorously shake to create that signature frothy top. Once shaken, empty the ice out of the Martini glass, then slowly strain the contents through a sieve directly into the glass. Garnish with a few coffee beans.

• 100g dark • 50ml coconut brown milk muscovado sugar • 25ml lime juice • A few strips of pineapple skin • Ice • 5 black • Pineapple, to peppercorns garnish • 5 cloves • 1 cinnamon stick

Blueberry ‘mojito’ This refreshing and fruity nonalcoholic mojito is perfect for a summer BBQ. Skip the blueberries for a more traditional mock mojito, or try with ginger ale instead of soda water for more of a punchy flavour.
Go the extra mile with this tropical alcohol-free piña colada, complete with mock rum syrup that will have even the most enthusiastic boozer convinced.
Put the muscovado sugar and 200ml water in a saucepan, stir well and heat gently until the sugar has dissolved. Add a few strips of pineapple skin, the black peppercorns, cloves and a cinnamon stick, then bring to the boil. Take off the heat and leave to infuse until cold. Strain into a jug and keep in the fridge for up to three days until needed. Pour the pineapple juice, coconut milk and lime juice into a tall glass. Stir, add ice and then slowly add 25ml of the syrup so it sinks to the bottom. Garnish with a pineapple chunk.

General Manger at The Ivy Norwich Brasserie What do you like about living in Norfolk? I was born in Norfolk so this is my home. Ever since I was a child, I have been blessed with the luxury of a beautiful coastline on my doorstep. I am truly proud to be from Norfolk and to be continuing my career here in Norwich. You can never get bored, there is something for everyone. What do you most enjoy about working with people and businesses in our region? I have worked in this region most of my life and find that people from the area have a huge passion for food and drink. Over recent years, Norfolk has hugely developed in this category, with many new restaurants and bars coming to the area. It’s very exciting to see. How is your business contributing to the growth of the region? We employ around 70 staff, most of whom are local to the area. Our team members are very important to us and we invest a lot of time in to training and development to help take them further in this industry. We love being part of the local Norwich community and it’s been great getting to

know many of our regular guests over the past year since we opened our doors. There are lots of exciting plans and events in the pipeline throughout the city over the next 12 months and we’re looking forward to supporting and getting involved wherever possible. Tell us something that people don’t know about you... I have recently moved into a new house with my partner Jess. It has a little garden and we spend a lot of time doing it up and planting bulbs and shrubs, especially in the summer. I have to say I actually really enjoy it but don’t tell my friends!
What is your proudest achievement? It would have to be my career. I began working in the industry aged 18 as a barman and am now General Manager which is something I’m very proud of. My journey has been a constant learning curve and I will always look to continue pushing myself. Run us through a typical day for you... My day starts at 5am when my alarm goes off. I aim to be up and out for work at 6am. Upon arrival I set up the restaurant for the day ahead. I like to get fully involved in service, working alongside my team and ensuring all our guests enjoy their experience with us. When I arrive home, I have a catch up with Jess over dinner and maybe a glass of wine, before bed time and repeat. What do you like to do when you’re not working? When I’m not working, Jess and I love to travel. We have been very lucky to be able to explore many cities in Europe over the past few years, most recently Krakow in Poland. Where do you like to eat and drink? I am not a hugely fussy eater and am often happy to go where my friends or family want to go. Spending time with them is very important to me. Ingredients - SERVES 4 For the crème brulee • 11 egg yolks
• 1 pint cream
• Sprig of mint
• 100g sugar
For the acompanyments • Puff pastry
• Icing sugar
• Raspberries
• Raspberry coulis
• Lemon curd
• Baby basil
METHOD
METHOD
In a pan boil the cream and mint together. In a bowl whisk the egg yolks and sugar. Pour the cream in to the egg mixture and whisk, then let steep for 10 minutes, then strain. Pour into ramekins and cook at 120˚c until set (approx 15 minutes).
Dust the puff pastry generously with icing sugar and roll out until thin. Cook as a whole piece between two baking sheets. Once cooked let it cool and then cut into circles. Mix the raspberries and raspberry coulis together and reserve in the fridge until needed.
For the lemon parfait
TO SERVE
• 4 egg yolks
• 125g sugar
• 2tbsp lemon curd
• ½ pint cream
METHOD Whisk the egg yolks and sugar over boiling water until thick. Mix in the lemon curd, then whisk mix until cold. Whisk the cream to form soft peaks and then fold together with the egg mixture. Pour into moulds and freeze.
Turn out the crème brulee and dust the top with sugar then caramelize with a blowtourch. Put the crème brulee on a plate, cut pastry disc in half, then place parfait on to plate. Dot the raspberries around and lay on the pastry. Lastly pipe on the curd and decorate with some basil.

ur destination
for a sunny Saturday afternoon lunch was the Plough and Sail in Snape, Suffolk. It had been a fair few years since my wife and I had visited Snape Maltings with its eclectic mix of art and artisan wares. The Plough and Sail is run by Alex and Oliver Burnside, a twin brother team, who opened the doors in April 2012. Chef Oliver runs the kitchen, whilst Alex looks after all things front of house. The older original part of the building consists of a spacious restaurant including a cosy snug, and an intimate balcony area. All of which are perfect for events and parties of all kinds. There is also seating outside including a courtyard area at the back, perfect for those summer G&Ts. We arrived in glorious sunshine and parked at the rear in the plentiful Snape Maltings car park. We headed in and a warm welcome awaited us from Alex and his team. Part of the restaurant was closed as they were preparing for a wedding later that afternoon. Being the inquisitive type Lorraine and I couldn’t help but take a look at the room where the wedding breakfast would take place. A beautiful space which had a rustic chic which any bride would be happy to listen to the risqué musings of the best man’s speech. We were seated in the other part of the building which once again had a rustic country interior. Bright and airy in the summer sun, yet I felt the urge that I had 56
to return in the winter months as I could imagine the cosy glow of the wood burners to accompany a pint of a local ale. The menu was strong, featuring local produce and lots of favourites including an ‘Adnams’ beer battered fish ‘N’ Chips with crushed minted peas. We chose quickly and after the hard work was done we sat back and enjoyed an Adnams Copper House G&T and took in the atmosphere. There was a happy lunchtime buzz with lots of contented diners. To kick things off we had a small platter of granary bread with oil, balsamic vinegar and two types of butter. The star of this was the homemade cajun spiced butter, extremely moreish and lighter than expected on this fine bread and something I will attempt to replicate at home.

The starters arrived promptly and both looked equally delicious. I had opted for the tempura of tiger prawns and cod with sweet chilli mayonnaise and rocket, which was light and summery, although I did lose a prawn to my wife’s fork, it was just the right amount for a starter. Lorraine had opted for the warm salad of courgette, spring onion, edamme beans, mint and taleggio cheese, which although I am not a massive fan of courgette looked very inviting. I managed to plunder a small amount and thoroughly enjoyed it. A subtleness of the mint did not over power the rest of the dish and the warmed cheese had a melt in the mouth quality. After short break we welcomed our mains. I have a weakness for crab, which may have a link to being born on the coast, so it was no surprise I had selected the dressed crab with paprika mayonnaise, leaf salad and potato salad. The crab
was fresh, the potato salad light and the paprika mayonnaise was a triumph. No other mayonnaise will be the same again, this would be amazing on chips. Lorraine’s pan fried sea bass with a tomato and Mediterranean vegetable risotto and pesto dressing was, once again, perfect for a summers day lunch. After enjoying two courses immensely we both agreed to skip dessert... until we read the menu. Elderflower and lime cheesecake with strawberries was far too tempting to turn down, and it didn’t disappoint. We opted for one dessert and two spoons. I would normally do the gentlemanly thing and would let my wife have the lionesses share of the dessert, but today it was a battle of the spoons. The Plough and Sail describes it’s self as a country dinning pub, but lets be honest, this is more than pub grub. It is a testament to the best of contemporary British cuisine.
Good honest food cooked with great skill. You can tell that the local ingredients have been selected with great care and thought, showcasing the seasonality and location to perfection. It has a gloriously relaxed atmosphere where you feel at home straight away, but nothing is lost with its high level of service. Attentive, but not overly so. The Plough and Sail is an excellent benchmark; so often are we placated with mediocrity, however here the Burnside brothers have set their stall out well. Other establishments and diners alike, take note... this is how it is done. Warm, professional and accessible, mixed with a skill of service and a kitchen to be revered. All of the ingredients to deliver excellence. Alex, Oliver and their team should be proud of what they have achieved here. To say that the proof is in the pudding, just think elderflower and lime cheesecake and you won’t go far wrong. Places&Faces caught up with General Manager Sian De Waal to find out a little more... You are celebrating 35 years of awardwinning catering and events this year. What has made you so successful? I put it down to our genuine enthusiasm for being able to produce the best food and award-winning service, along with the immense pleasure we get from creating the most incredible experience for all our guests no matter what the event - private parties or weddings to corporate events for over 4000 people! We really all honestly love what we do and love the industry that we are in.
As tastes and fashions have changed over the years how have you changed to stay so relevant? Our team bounce off each other. No idea is ever shot down. We all encourage each other to discover new trends and recipes or come up with some crazy ideas for what they would like to create. Then as a team we figure it out! We are lucky inasmuch as we are all very well-travelled and this helps keep us relevant as we are exposed to new influences. Saying that, we also adore traditional, home-made recipes that have been passed down through generations which are lovingly shared with us. We use all these ideas to create the perfect dish for each event! What excites you the most about Brasted’s, what do you foresee for the next 35 years? The Brasted’s creative ethos when it comes to food and service is what excites me the most, along with the encouragement we give each of our team members. Admittedly, we have some old-fashioned quirks but we feel we have filtered out the best traditions to keep alive and then moved forward embracing

Outside of Brasted’s what is the best meal that you have eaten and why? I have narrowed it down to 2! I can’t just pick one… It was at a little restaurant called Dry Martini in Barcelona. A quick 2-night last minute flight with my best bud (who is also in this wonderful trade). We strolled in to be greeted by bar tenders immaculately dressed with long crisp white aprons, a glass fronted kitchen and a long bar with the most stunning collection of cocktail shakers I have ever seen! We decided to sample each dish on the menu. After 6 starters the kitchen team became more inquisitive and enthused to hear our thoughts on the food/the industry and life in general. We had every main and every dessert along with all the cocktails they wanted to create for us. The food was simply stunning, unfussy but beautifully presented, everything complimented each other. The service and enthusiasm is what made it for me. Finding like-minded souls who genuinely love the industry and are so proud of what they do that they are willing to engage out of their comfort zones with complete strangers. A little gem! The 2nd place is with my Papa in Namibia. He would cook on an open fire in the middle of a reserve for 25 guests. The menu – whatever he could purchase that day from the local markets. He
Do you have a favourite dish from your own menus, please can you tell us why? My current favourite dish that Chef George Powles has created is the Gressingham Duck Breast, Potato Caviar, Charred Oyster Mushrooms, Wild Nettle Barley, Orange Gel & Spiced Grapes. Every component part of this dish effortlessly compliments the other. Traditional flavours presented with a modern twist but not over complicated – perfection! What is the most enjoyable element of your job? That’s an easy one! Creating lasting memories for guests and our team. Encouraging everyone to step outside their comfort zone and not to be afraid to voice ideas! Outside of work how do you relax? I have 2 horses that I spend a lot of time with but they get roped into strolling down to my local pub, The Burston Crown. They join me for a pint of Aspalls, theirs in a dog bowl! Otherwise, I’m out sampling what the East Coast of England has to offer! Busman’s holiday most of the time but I love it. Finally tell us something about yourself or Brasted’s that we might not know. laugh the first time I heard this. Jimmy Butler AKA ‘the hog father’ as he is lovingly referred to by his sons Stuart and Alastair Butler. They have been setting the standard for excellence in Suffolk for pig farming for many years. The families vision for Blythburgh Free Range Pork is to be to be considered synonymous with pork excellence throughout the UK. If I’ve said it once I’ll say it a hundred times, “Providence is key to sourcing great food”. A superior product will always make a better dish and the Butler family has a very simple pigs first ethos that achieves that with a science based approach to quality feeding, combined with a high welfare free range system. However, I think the approach to the creatures happiness is key. To quote Alastair “It’s not just about improving animal welfare, it’s about giving a pig a life worth living”. We have exclusively been serving Blythburgh Free Range Pork at The Boarding House Dining Rooms since we opened, and with great costumer satisfaction. I personally feel our guests can taste the difference. A key issue that the pig industry is facing at the moment is carcass balance. As a whole the UK retail trade is consuming 23 million pigs worth of loins; when we only produce 10 million pigs. Also the UK only use around 7 million pigs worth of shoulders. This is only exasperated by the restaurants need for specific cuts. Blythburgh Free Range Pork have slightly different carcass balance challenges; with the belly in great 60
demand, the loin and shoulders in good demand. However the legs have quite a poor demand. Changing our approach to consumption is key to achieving a higher welfare product in the UK market. The fact that only 3% of the UK pork market is truly free range is just not where I believe we want to be as a nation. It has never been more meaningful to know where your meat has come from. To truly understand just how special Blythburgh Free Range Pork is comes with the realisation that if it doesn’t say free range... its NOT. As a business we choose to make our statement with our spend. But what would happen if we all do this together. The result would be a greater use of the lesser used cuts, moving towards a whole animal approach to cooking. See you at your local butcher shop; or at ours tonight if you don’t feel like cooking! with home-made pancetta, peas & lemon grass broth
Ingredients - SERVES 4 For the Blythburgh free range pork tortellini filling • 500g pork leg mince • 100g home made pancetta • 100g bread crumbs • 50g shaved parmesan • 2 eggs • 1 small diced onion • 1 clove of garlic (minced) • 1 teaspoon of nutmeg • Maldon sea salt to taste
METHOD Trim the leg meat so the meat is free of any sinew and then mince the pork finely. Do the same for the pancetta; the finer the better for both. Sautee the onions and garlic until translucent, then allow to cool when cooked. Mix all the ingredients together; then mix again to emulsify.
For the pasta dough • 500g 00 Pasta flour
• 15 egg yolks
• 1 whole egg
• Sea salt to taste
METHOD Make a well in the flour, then slowly incorporate the eggs and the salt. When the eggs are incorporated kneed the dough like you would if you were making bread; once the dough is smooth and developed allow to it rest which will relax the glutens.
Shaping the tortellini
This recipe will make extras, but they freeze fantastically. Just place them on a tray so they don’t touch each other when they freeze. Roll your pasta out in to sheets with a pasta maker, then cut the sheets of dough to three inch diameter circles. Place one teaspoon of filling in the middle of each circle, brush the edge of the pasta lightly with egg wash then fold in together in a half moon shape, then join the corners together creating the typical shape of the tortellini. Remember to work fast to avoid the pasta drying out too much. When ready to serve simply cook in boiling water, being mindful not to over cook.

ENGLISH GARDEN A modern garden cocktail by Zsóphia Molnár Food & beverage manager at The Boarding House Dining Rooms. INGREDIENTS • 50ml Hendricks gin
• 75ml Apple juice
• 25ml St Germain elderflower Liqueur
• Mint
• Cucumber • Garden Berries
PREPARATION
For the Home-made Pancetta • 2k pork jowl or belly
• 6 garlic cloves
• 100g black pepper
• 3g nutmeg
• 40g juniper berries
• 36g pink salt
• 150g mascavado sugar • 6 bay leaves • 36g bacon salt (available from you butcher) • Small bunch rosemary & thyme stems off
METHOD This is my go to bacon recipe. A simple cure that will reward you in such a way that only bacon can. Pork belly takes about seven days, pork jowl about five days, whilst pork loin about 14 days. So you will have to work ahead. Pork jowl is the fattest of the three, but has oh so much flavour, and is my personal favourite. In a food processor combine the all of the ingredients, except the jowl and pulse to a well blended rub. You want to the spices to have broken down nicely. Rub the curing mixture liberally on your chosen pork cut and allow to cure in an appropriate sized container. Mix occasionally for a even cure. Once cured you have home made pancetta. Yup... its that easy. Cut a nice piece and grill when ready to serve.
For the lemon grass Blythburgh free range pork broth • 2 pork hocks
•1 large onion
• 2 carrots
• 2 stalks celery
• 1 garlic bulb
• Thyme
• 2 star anise
• Sea salt to taste
This is a simple build drink that punches well above its weight. Simply add plenty of ice to a gin glass then pour in the elderflower and gin, then the apple juice and garnish with the your garden berries, mint and cucumber. This has all ready become one of our house favourites.
METHOD Combine all ingredients in an adequate sized stock pot then cover with water and allow to simmer for three to four hours. Strain and reserve. You should have a wonderfully clear broth full of amazing flavour. I chill the broth over night allowing any of the fat to set for easy removal. Warm and season when ready to serve.
TO SERVE • Peas pea puree & shoots for garnish
In a nice bowl place a dollop of pea puree, then place grilled piece of pancetta. Then place three of your cooked tortellini artfully in the bowl. Garnish with peas and shoots. At the Boarding House Dining Rooms we serve this with a pot of the lemon grass broth on the side, pouring the broth at the table. 61

METHOD Peel and slice the bananas then blitz in a food blender until smooth. Whisk the cream until has soft peaks. Prepair the gelatine by soaking in water. Whisk the whole eggs, yolks, sugar and glucose over a bain-marie until thick and fluffy. Then remove from the heat and mix in the banana puree and soaked gelatine until fully incorporated. Continue to whisk until the mixture has cooled, then add the smashed caramel and transfer onto a plastic tray and freeze.
For the caramel sauce • 300ml double cream • 85g Butter • 100g muscavardo sugar • 2 pinches of malden sea salt
METHOD Add all the ingredients, apart from the sea salt, to a heavy bottomed pan. Bring to the boil, stirring continuously, until a toffee sauce consistency has been achieved (be careful not to burn the sugar). Remove from heat and add sea salt (adjust to taste) and store in an airtight container until needed.

These super easy cupcakes are a fun treat to make with the kids and a great recipe to adapt and experiment with.
Ingredients - makes 6

• 500g pack brown bread mix
• 25g butter
• Plain flour, for dusting
• 12 raisins
• 6 flaked almonds
METHOD Using a packet of brown bread mixture follow the instructions adding in the butter. It’s easiest to use a stand mixer but not difficult to do by hand; you just need to use a little bit of elbow grease, but this is all part of the fun! Leave the dough to rest for five minutes, then knead for five minutes. Cut the dough into six pieces. Dust the surface with a little flour and shape each piece into a ball by rolling it between your hands. Now make it hedgehog-shaped by pulling one side out a little and squeezing it gently into a nose. Be quite firm or it will bounce back. Put the hedgehogs on a baking sheet. Cover them with a damp tea towel and leave to rise for one hour. Heat your oven to 200oC/180oC fan/gas 6. Using kitchen scissors (help younger children as the scissors will be sharp), carefully snip into the dough to make spikes on the backs of the hedgehogs. Push a raisin in each side of the head to make the eyes and then push in a flaked almond into the end of each nose. Bake for 15 minutes or until the rolls are risen and golden. These will keep for a couple of days in an airtight container, but our tip is to eat them whilst they are still warm... delicious!

• 275g icing sugar
• 1 egg
• 1-2 tbsp milk
• 1 tsp vanilla extract
• A few drops of food colouring
• 120g self-raising flour
METHOD Heat your oven to 180oC/160oC fan/gas 4. Prepare the 12-hole muffin tin with paper cases. Add the butter and sugar together in a bowl, and mix until you achieve a pale cream consistency. In a separate bowl beat the eggs; then add to the butter mixture along with the vanilla extract. Fold in the flour, adding a little milk until the mixture is of a dropping consistency. Spoon the mixture into the paper cases until they are three quarters full. Bake in the oven for 10-15 minutes, or until golden-brown on top and a skewer inserted into one of the cakes comes out clean. Cool on a rack for 5-10 minutes. For the buttercream icing, beat the butter until soft. Add half the icing sugar and beat until smooth. Add the remaining icing sugar with 1 tbsp milk, adding more milk if necessary, until the mixture is smooth and creamy. Add food colouring and mix well. Spoon the buttercream into a piping bag and add a nozzle of your choice. To decorate be creative... unleash your creative side.

David Wakefield takes a look at the Scala, the latest model from Skoda a brand that suffered in the 70s and 80s from bad jokes, but has now recovered to become a popular and respected marque in the UK market.
I
t doesn’t seem that long ago that the Skoda marque was the butt of various jokes going the rounds, and formed the bulk of the material for various unfunny comedians. It wasn’t that cars such as the Favorit were particularly bad; but by western European standards they were seen as a bit old-fashioned, and “clunky” to drive. This, added to occasional bizarre choices for exterior and interior colour schemes fed the insatiable appetites of the motorised jesters. But all that changed in early 1991 when Skoda – after all, a long and well-established Czech car builder – began a process that would see it finish as part of the German Volkswagen company, a brand justly noted for its build quality and excellence. And, despite a possible hangover in GermanCzech relations after the Second World War the new partnership flourished. Today, the Skoda marque is highly respected and has turned out some outstanding models. Latest of these is the new Scala range, which arrives in the UK this summer. It is available to order with three trim grades and three engine options, plus a raft of top standard equipment, including LED headlights, alloy wheels and air-conditioning on

all models in the range. Prices begin at £16,595. The Scala is one of the most advanced compact hatchbacks in the sector, and features technologies, infotainment and safety systems that have traditionally been the preserve of premium sector models. It has best-in-class rear headroom and a vast 467 litre boot (extendable to
1,410 litres with the rear seats folded) – also the best in sector. Customers can choose from three engine options (two petrol and one diesel) with power outputs ranging from 115PS to 150PS. The petrol range consists of one 1.0 TSI unit with 115PS and a 1.5 TSI engine with 150PS. A third petrol unit developing 95PS will be added to the line-up later this year.

The Scala’s diesel option is a 1.6 TDI unit that generates 115PS. All engines, with the exception of the 1.0 TSI 95PS, which is available later this year, are available with an optional seven-speed DSG transmission. All three Scala trim grades offer high levels of standard specification. The S model, which starts from £16,595, comes with 16-inch alloy wheels, LED headlamps, leather steering wheel, gear and handbrake lever and a height adjustable driver’s seat. Customers opting for S model also get air-conditioning, DAB digital radio, front and rear electric windows and Swing infotainment system with 6.5-inch screen. In terms of safety equipment, the S model, which joins the range later in the summer, features front head and side airbags, front assist, lane assist, Speed limiter and Emergency call with proactive services.

cannot quite believe that it is 30 years since Mazda launched its original MX-5 – but, as I test-drove one soon afterwards, then it must be true! The MX-5 was a big hit mainly because it was a proper sports car without a silly price-tag. In a way it can be compared to “fun” cars like the Austin Healey Sprite, MG Midget and Triumph Spitfire – which would never compete, performance-wise, with the likes of Ferrari and Porsche, but gave a feeling of freedom on the road that could never be achieved in a staid saloon or hatchback. Just as the original was launched at
the Chicago Motor Show in 1989, so has the 30th Anniversary Edition taken to the stage in all its unique orange splendour. But the launch will be limited to just 3000 cars globally, of which the UK market will get 550 – 370 convertibles, and 180 in RF (retractable fastback) configuration. Marked out by its black two-tone roof, the RF is £29,895, while the convertible is £28,095. First UK deliveries begin this summer, so best to contact your local dealer about availability. Ferns Fabulous
E asy to grow,
and requiring minimal or no maintenance, these ancient plant forms have been around since before the Dinosaurs walked the earth. Fabulous foliage combined with preJurassic toughness means that ferns offer a great way of dealing with those difficult shady locations. From miniature fronds clinging tenaciously to the edges of rocks and crevices, right up to the stately big tree ferns- Dickinsonia antartica, there is a fern to suit almost everyone’s taste. Long-lived, mostly hardy and usually classed as either deciduous, semi or totally evergreen these plants are even said to be both deer and rabbit proof; that is certainly a bonus in our beautiful Norfolk countryside. No garden, don’t worry. Choose non-hardy fern varieties and grow them as houseplants! Most like part to full-shade, whilst a select few will cope with full sun. Moisture or boggy soil which is humus rich tends to be their preference, but some are both shade and drought tolerant once established. Look for the Award of Garden Merit as a marker of great performance and good plant qualities and tested varieities. Choose from the Dryopteris genus where there are hundreds of cultivars available. For example, Dryopteris affinis AGMThe Golden shield fern. This is a tough semi-evergreen type with long uncurling fronds, dusted on the underside with golden

russet spore forming apparatus and it is just stunning to see. Tough, drought tolerant when established and reaching a good 75cm in height and spread they make ideal container plants or garden specimens. No better statement than the Tree Fern from the Dickinsonia genus. Watering is achieved by spraying the trunk like stem. In spring you will see the huge fronds gently arch and unfurl out from the top of the trunk. With a little winter protection and water protection of the crown, they can make it through most winters of reasonable weather, in Norfolk particularly if positioned in a sheltered location Combine your ferny foliage with other herbaceous shade loving perennials, such as Hostas and Epimediums. Add in depth of texture, colour, shape, form and even flowers to all your shady places. Recycle old root stumps and branches and create a wildlife wonderland combined with planted ferns- give it a whirl and create your own ancient landscape.

HOLLY LODGE Thursford, Norfolk Thursford bed and breakfast offering rustic living with modern touches It’s rather fitting that Holly Lodge, a quaint bed and breakfast located 15 minutes from Wells and Holkham, was taken over by the Thursford group last March. “There’s something of a lack of beds for holiday makers in Norfolk, and we’re always looking to expand into new territories, so taking over Holly Lodge seemed the perfect fit,” explains George Cushing, the group’s marketing manager. The bed and breakfast largely dates back to the early 18th century, but parts of the building can be traced all the way back to the 13th. Guests are accommodated in the converted stable blocks, which have been repurposed into individual cottages. The first half of this year has also seen the main house refurbished from top to bottom to create three new luxury ensuite rooms, bringing the total number of rooms to six. Each room is modernised but with its own unique design: “We didn’t want every room to look the same, so each has a different style that will appeal to different people,” says George. Backed by vertiginous cliffs, few people know there’s a great beach below and yet it’s just a mile away from the hustle and bustle of Cromer. In fact, there’s a cliff-top path from Cromer you can take if you fancy stretching your legs too.
Not so much for its beach but because of what it stands for. This is Deep History Coast, where the earliest evidence of man in the UK has been found, a family of four people from 850,000 years ago. And, would you believe it, scientists think they were rockpooling. This was in the days when this was the last stretch of land connected to the Continent.

Situated between the busier beaches of Hemsby and Caister, Scratby is an altogether quieter proposition, ideal for fishing and swimming. Dogs are allowed year-round too, so it’s a great place to stretch your legs with your four-legged pals.

Now, this really IS a desert island! Only accessible at low tide and a lot of mud (unless you have a boat) Scolt Head National Nature Reserve has a beach of pure white sand backed by marram-tufted dunes. Walk to it from Burnham Overy Staithe. More people have seen Brigadoon than this beach! 106

Holme-nextthe-Sea
Situated in a National Nature Reserve between Titchwell and Old Hunstanton this is where Seahenge, a 4000 year old Bronze Age timber circle, was discovered in 1998. It was removed for conservation reasons (see a replica in King’s Lynn Museum) so few people now come to this delightful stretch of sand.

O
k, so at the time of going to
press we haven’t quite had the summer weather we’d like. But thoughts of summer holidays, barbeques and warmer weather are definitely forming in my mind, and alcohol does seem to go hand-in-hand with those thoughts. The summer generates far more opportunities for people to over-indulge and consume more than the recommended daily alcohol limits. With the summer heat creating an already dehydrated body, the consequences of excessive alcohol consumption may be greater. So it is essential to enjoy alcohol in moderation. Remember too that it’s not just a hangover you should worry about after drinking; the long-term affects on your health can be significant. Dr Martin Phillips begins, “There is no doubt we have a major problem with alcohol in this country. An NHS Digital report in 2017 showed that 1 in 14 inpatient admissions to hospital were alcohol-related. And that alcohol-related deaths are the highest since records began. Patients are younger than before and more commonly female. Sadly, within the recent past I have treated a 24 year old woman who died from alcohol-related health problems and a 19 year old woman with advanced liver disease”. Fortunately, the vast majority of us are able to drink both in moderation and a socially acceptable manner. New national guidelines recommend no more than 14 units of alcohol per week for men and women (one unit is equivalent to one third of a pint of ordinary strength beer, or one half a standard-sized glass of red wine). However the many people who drink more than these guidelines suggest are potentially putting their health at risk. This can result in a wide range of health problems such as high blood pressure, depression and anxiety disorders, through
to heart, pancreas or liver disease. There’s also an increased risk of cancer, including breast, stomach and bowel. For many of our European counterparts alcohol is taken in small amounts throughout the day. Indeed, alcohol consumption in conjunction with high intakes of fruit and vegetables, may well explain the so-called ‘French paradox’. The French diet is considered to be very high in fat, especially saturated fat, yet the death rate from coronary heart disease remains relatively low. This is thought to be partly due to people’s consumption of red wine. Sadly, in the UK binge drinking is more common. Binge drinking is a concept largely created by the popular press and is difficult to define, but is usually taken to mean very heavy drinking sessions on a Friday and Saturday night by young men and women. Dr Phillips continues, “The level of alcohol consumption in a population is closely linked to its availability and affordability. In this country, alcohol is now more widely available than ever before with 24 hour shopping and extended licensing hours. Although the price of alcohol increases with each year, our incomes are generally rising faster, meaning alcohol is relatively cheaper and more affordable than ever. As a result alcohol consumption is increasing rapidly in Britain”. “Drinking brings with it special problems associated with acute severe intoxication. Most of us will recognise the various stages of drunkenness – from happy and talkative, to slurred speech, poor co-ordination and vomiting. At higher blood alcohol levels the usual self-protective reflexes (such as the gag reflex) are lost and a person can drifts into unconsciousness. At this point the individual is at risk of death, particularly 109
from inhaling their own vomit, or hypothermia if they are outside. There are many other hazards including heart palpitations, head injuries and broken bones due to accidents or fighting. Question: In order to keep myself as safe and as independent possible in my own home I have been given and purchased several pieces of equipment and smaller domestic aids. On many occasions I have been given professional advice or have taken advice from friends and family. However, no one I have spoken to has heard of a bedside mat that might save me from a broken bone should I fall out of bed or stumble when I get up in the morning, have you? Question: What is a Community Matron and why have they been introduced? Answer: In the UK there are over 17 million people living with one or more long term health conditions. The majority of these people are over the age of 65 years. In order to try to care for and manage these conditions in a better way for the patients, Community Matrons have been introduced. They work in a community and home setting and support people who for example, are trying to self manage their care. They are on hand to assist with end of life care and are active in promoting health and prevention of ill health. As they are local, they know and understand the local health provision. Community Matrons can carry out physical examinations, diagnoses and plan treatment, manage and prescribe medication and treatment and co-ordinate an individual’s package of care. It is expected that each Community Matron will have a case load of about fifty patients at any one time. Question: I am not very mobile because of arthritis and I tend to buy many of my friends and relatives presents by mail order. I have an old friend who has Coeliac Disease and I would like to send her an edible present, any ideas? Question: I live in a rural part of the county and feel it cannot be long before I have to stop driving my adapted car. I am concerned as to how I will shop; get to the doctors, etc. I live alone, have mobility problems and have no close relatives. Are there car schemes that can help me? Answer: Different councils offer varying facilities to people who are unable to use conventional transport. For example, some councils offer a Ring and Ride minibus service which travel along flexible routes allowing passengers to be picked up away from the conventional bus stops. For people who are wheelchair dependent, there is a wheelchair lift whereby you can put your own wheelchair in for your own use at the other end of your journey. It is possible that there is a voluntary car scheme in your area whereby volunteers allow you to pre-book their car to a destination and the charge is a specified mileage rate. Other local schemes may be in place. Give your local council a call and check what they are offering or are aware of.

just a case of picking the right investment elements for your portfolio and then letting it sit there. In today’s markets, values do go up and down and your best chances of a successful investment strategy will come from being pro-active. However, most of us lack the skills and the time to monitor and adjust our own portfolios. Discretionary portfolio management is a service where investment specialists do the job for you. They constantly watch market indicators so are then able to make informed decisions about the future performance of the content of your portfolio and change its elements accordingly. At what age did you �irst start to cook? I guess I first started to cook fairly early on, I would say around age 10 with my Grandma who was a classic farmers wife. Skinning rabbits and plucking pheasants that Grandad had shot. I remember there being lots of fresh vegetables growing in their garden. It was always a pleasure cooking with her. Where did you train? I attended King’s Lynn Catering College for two years, gaining a Level 2 NVQ in Catering and Hospitality. This is a good base for anyone thinking of getting into profession (but every day is a school day). I continue learning and extending my knowledge all the time, you are never done training. Who is your food hero? That’s a tricky question, there are so many people who have influenced my career and I have massive respect for them all. I think Andrew McPherson had a massive influence on me whilst I was working at

The Hoste Arms in Burnham Market, as did Steven David. Ben Handley helped me a lot when I worked with him at the Kings Head in Great Bircham. I have also worked alongside Emma Boubaker of Bayfield Catering, cooking food in other people’s kitchens and holiday homes, where you can find the kitchen isn’t exactly designed for large catering functions. This helps you think about things differently, which is really good for a chef. Also the guys here at Heacham Manor have helped me gain confidence in my ability and drive me forward to be the best I can be. What’s the best meal you have eaten, and where was this? This would have to be El Builli in 2002 when it was the best restaurant in the world. It was 23 courses of spectacular dishes. What are your favourite dishes for the restaurant and home? In the restaurant we currently have a curried monkfish dish which is really, really good. At home I eat much more simple food, there is not much better than beautiful cottage pie with a pint of beer, sat by the fire, with a little snooze afterwards.
What led you to the Heacham Manor kitchen? In 2009 I was given the opportunity to start the kitchen here at Heacham Manor with my own styles and values which really appealed to me. I then left Heacham Manor in 2015 to start my own restaurant, which sadly didn’t work out. I returned to Heacham Manor as Food Operations Manager in February of this year to help it move forwards and to expand my knowledge of the management of the hotel as well as keeping my hand in the kitchen. What plans to you have for The Mulberry Restaurant? There are some big plans on the horizon, as planning has been granted for a new conference and function centre here at Heacham Manor, along with a new golfers bar/restaurant with a completely new kitchen. It’s a very exciting time with lots going on. What’s the best thing you enjoy about your job? At the moment it’s the variety that I enjoy, no two days are the same and there’s always a new challenge and that’s great for me. How do you relax? Music, running and golf, in that order.
