LAST CHRISTMAS, I gave you my heart, but the very next day I realised I hadn’t booked anywhere for Christmas lunch. This year, to save me from tears I’ll book up early with someone special. I know, I know it’s only September, but in the mad rush to get the festivities organised the more efficient among us are hitting the phones and getting the best venues booked. So Places&Faces has looked around the area and come up with some great suggestions for you starting on page 97. When we have got Christmas lunch organised, why not get out and enjoy the final throws of sunshine and walk through the beautiful autumn landscape that East Anglia has in abundance. We have a round up of some of the best places to go; everything from woodland walks to National Trust properties and even a few ideas for some alternative autumnal activities to get you inspired. After all of this exercise you will have worked up a healthy appetite. So why not try one of our great recipes this month. The Imperial Hotel’s wood pigeon on page 42 is a particularly tasty treat. Don’t forget the cocktails! Turn to page 45 for four of the best seasonal tipples around; the sloe gin royale was voted the office favourite and has been created at home by many of the Places&Faces team. Add to this all of our usual features and you have another packed issue, perfect to ease yourself out of the summer sun and into the Autumn month’s to come.

NOR-CON Any fans of sci-fi will be heading to a galaxy far, far away (well, Norfolk Showground) at the end of the month for Nor-Con – a celebration of all things superhero and science fiction, from TV, film, and comic book. These events have boomed in recent years as sci-fi has dominated the box office thanks to the Marvel franchise and Disney breathing new life into the Star Wars story. Once the realm of selfproclaimed geeks wandering around with their sonic screwdrivers, global Cons are a magnet for fans of film and fancy dress. Nor-Con is no different, with a host of screen stars on hand for autographs and the all-important selfie. There are also exhibitors selling all your sci-fi needs, from light sabres to rare comics. ‘Out There’ Festival THE ‘Out There’ international festival of circus and street arts is returning to the streets of Great Yarmouth for the 12th year on 14 and 15 September 2019. Known to be weird, wonderful, outrageous and outstanding, the Out There Festival will bring the people of Norfolk some of the world’s finest circus and street art performers. T

here’s no book on How

to Be Famous for Dummies,” says Cyndi Lauper, who at 65 has not lost her New York drawl. “So you just do what you can. All of a sudden you get to the top of the mountain and everybody around is like, ‘You can’t do that! Don’t do this! You’ll be ruined!’” Above all, the eighties’ punkiest pop queen, who was catapulted to stardom with Girls Just Wanna Have Fun and Time After Time, was warned off musical theatre. “I was always being beckoned, ‘Come this way’,” she remembers. “And I was like, ‘I can’t because if I do my career is over.’ I would lose my credibility in pop. It was really a big divide. After a while you get to a point where you’re ‘Well, I think I’ve been ruined enough, it doesn’t matter now, I can do whatever the hell I want.’” The result is Kinky Boots, the musical mega-hit that conquered Broadway and the West End and is now on a UK and Ireland tour. The songs were written by Lauper, and in New York they won her a Tony Award for best original composition. In 2016 the show went on to win three Olivier Awards for Best New Musical, Best Costume Design and Best Actor in a Musical – as well as the London Evening Standard BBC Radio 2 Audience Award for Best Musical and three WhatsOnStage Awards (Best New Musical, Best Actor in a Musical and Best Choreography). She had never written for theatre before, and became the first woman ever to win the Tony in the best score category on her own. “What I was really taken with was that community accepted me,” she says five years later. “To have these people, that are literally in my own backyard on Broadway, take you in was what kinda got me.” Aptly enough, acceptance is the takehome message of Kinky Boots. “Accepting yourself, you’ll accept others,” says Lauper. “It’s a very important show at this time in the world.” The show is loosely inspired by the story

of an old family firm of Northampton shoe manufacturers that was about to go under, only to discover a new niche in the market ladies’ footwear worn by men who like to dress up. The BBC told the story of the firm’s rebirth in the series Trouble at the Top. In 2005 that eventually became a charming independent British movie which starred Chiwetel Ejiofor as Lola, a fictional crossdressing diva demanding sturdy stilettos. But the ultimate destiny for such a fabulous story was always the stage. Kinky Boots the Musical, which explored the unlikely friendship between Lola and straight-laced factory owner Charlie,

So you just do what you can. All of a sudden you get to the top of the mountain and everybody around is like, ‘You can’t do that! Don’t do this! You’ll be ruined!’ opened in Chicago in 2012, moved to Broadway the following year, and made its way to the West End in 2015. It’s also gone all around the world to territories including Canada, Australia, Germany and Japan. But now it’s come home the tour opened at the Royal & Derngate in Northampton, the quiet town in Middle England where it began. “It’s a story about a really great friendship and two very, very opposite people and there’s a great redemption in the end. I’m a sucker for redemption” says Lauper. Perhaps there has been some redemption for Lauper too. She was a huge star in the eighties but, as happened to all her contemporaries bar Madonna, gradually slipped from the top of the chart. She was thinking of creating a musical about her upbringing in Queens when she got a call from her friend Harvey Fierstein. Fierstein is theatre royalty; the writer of the hit play Torch Song Trilogy, about a gay drag performer, and the cross-dressing star

of the musical Hairspray. “He said: ‘I’m doing a show called Kinky Boots. Would you like to write the music for me?’ I thought, wow. He told me I had to watch the film. I loved it. I thought, oh I get it. He wants me to write 12 good pop songs with a good hook. I figured I could do that. Then I realised, oh, you have to move the story along.” The product of four years in development is a string of catchy numbers from wig-out dance anthems to heartstopping ballads, among them The Most Beautiful Thing in The World and Not My Father’s Son. Ideas came from surprising sources. She thought of the shoe factory workers as Monty Python’s knights of the round table. The History of Wrong Guys, a comic scene-stealer about a woman who has bad luck with men, was inspired by a line from Kung Fu Panda. She didn’t really think about writing for specifically English characters. “It wasn’t like Harvey asked me to write some foreign stuff. You’re not going to ask me to write an opera. I don’t study opera.” What she did study as a child was her mother’s record collection, which was full of musicals such as My Fair Lady, another study of the English written by Americans. “I did what kids do, I would play each character. I sang Stanley Holloway’s part, Rex Harrison’s part and Julie Andrews’ part.” At the Tony Awards in 2013, Kinky Boots was up against Matilda the Musical, with music and lyrics by Tim Minchin, which was considered the favourite to win. “I was constantly asking Harvey if it was a hit and he was saying, ‘I don’t know yet, Cyn. We have to win best musical.’ So when it won best musical I said, ‘Is it a hit now?’” See it and judge for yourself. You’ll never think about shoes in the same way again. ndrew Scott, riding high on the impact of his ‘sexy vicar’ in Fleabag and only two years after his Olivier-nominated (and BBC-filmed) Hamlet, is absolutely fantastic as leading man Garry Essendine. Essendine (an anagram of ‘neediness’) is a not-quite-asbrilliant-as-he-thinks actor on the brink of doing an international tour. He’s been having sex with people of both genders while being pursued by a demented fan and being monitored by his ex-wife and cajoled by his secretary, valet and housekeeper. It’s a farce (five doors and all) but in this revelatory production from Matthew Warchus, the depth and emotion of Coward’s play is beautifully and movingly displayed, as befits a play whose original title was Sweet Sorrow. With farce, the action typically begins gently as the characters and situations are introduced before picking up pace as people start falling through doors or out of clothes. But here Warchus makes a different choice. Things start affected and artificial – just like the main character – and then, fascinatingly, actually become more real the more farcical the action gets. This is the point of the play: Garry’s persona is an affectation which disguises a more vulnerable, less ordered, less impressive figure. The play is about his mask slipping; likewise, the farcical artifice imperceptibly slips throughout the show until the final ten minutes, in which Garry says goodbye to his assistant and then a renewed hello to his wife, are incredibly moving. I can’t remember ever having tears on my face at a farce before. None of this detracts from the huge and constant laughs that dominate the evening. Warchus – easily the best British director of stage comedies – directs the funniest show since his own Boeing Boeing in 2007, and with a cast the equal of his London/ Broadway triumph with Ayckbourn’s The Norman Conquests at the Old Vic in 2008. Every performance is played for truth rather

has the strength that Garry badly needs, the authority that he resists and the beauty that he is so constantly (and rapaciously) attracted to. There’s great work too from Luke Thallon as Garry’s obsessive fan Roland Maule. But the evening belongs to Andrew Scott. The funniest scene I have ever seen in any show ever was in the Old Vic’s 2010 revival of another Coward play, Design for Living, in which the two male leads got progressively drunker before finally collapsing. One of those actors was Tom Burke (recently thrilling in Ibsen’s Rosmersholm); the other was Andrew Scott. Here, scene after scene is in that league. Noel Coward can sometimes be dismissed – not least by me – as a poor man’s Oscar Wilde, a dusty relic of a bygone era. In this wonderful evening, Warchus achieves something very unusual: he sets the play in its time but simultaneously allows it to ripple into other eras. Before and after the show and during the interval he plays a medley of pop songs (from Four Seasons to Robbie Williams) about love and sex, which provides us a contemporary frame through which we can view the play. Adjusting one of the characters’ genders, allowing Coward’s intention to become explicit rather than hinted, more deeply connects us to who Coward was. The gay kiss which now appears at the end of act one generates no shock whatsoever in the capacity audience. Coward would never have been able to imagine that in his time. Now, here, Warchus has completed the work. Present Laughter is most obviously Andrew Scott’s and Matthew Warchus’ triumph. But, really, it’s a revelatory reminder of the greatness of Coward, whose play is the biggest star of all. He’d have approved of that. Castle Culture in NORWICH

Autumn has arrived, and so has a spectacular season of arts and history, says Melanie Cook of VisitNorwich.

may be closed ahead of its hugely exciting reveal in 2021, however the wonderful museum and art gallery remain open! Spend this autumn making the most of a great programme of events and exhibitions here, including a free entry day on 21 September as part of Heritage Open Days. September, specifically 8 September, is your last chance to see Vikings: Rediscover the Legend before it closes. And on the 7th September, this popular exhibition has one last special themed event for grown-ups: it’s time to go a-Viking with Plunder Wonder, free with museum entry. Seek out clues, discover stories and get stuck into this immersive Nordic scavenger hunt which includes performance by Collisions Theatre between 10.30am – 3.30pm. Three art exhibitions (free with entry to the museum) run simultaneously in September: John Sell-Cotman in Norwich and London runs until 29 September; Lines of Sight: WG Sebald’s East Anglia until 5 January, and finally Tor Falcon: Rivers of Norfolk is on display until 12 January 2020. John Sell-Cotman (1782-1842) is one of the most iconic watercolourists of the nineteenth century. Born in Norwich in 1782, he moved to London where he was reasonably successful. Unfortunately, in his native Norfolk he never reached the dizzy heights of fame he deserved, until after his death in the twentieth century. This exhibition focuses on the last two decades of his life. WG Sebald was a German writer and lecturer at the University of East Anglia from 1970. A much-celebrated author, he was cited as being a possible future winner of the Nobel Prize in Literature before his untimely death at the age of 57 in 2001. This year would have been his 75th birthday year and in commemoration of this, see Lines of Sight: WG Sebald’s East Anglia. This is an extraordinary exhibition of artworks, unusual objects, archive material and the author’s own unseen photography, telling the story of one of this region’s most famous literary masterpieces, The Rings of Saturn (1995), first published in Germany in 1995 as Die Ringe des Saturn. Alongside Lines of Sight: WG Sebald’s East Anglia, is a series of talks at the Castle, two taking place during September:

Thomas Browne’s Retreat to Earth (10 September, 2.30 - 3.30pm) by Professor Claire Preston of Queen Mary University (London), and ‘The Burning of the Royal James at the Battle of Solebay’ by Willem van de Velde the Younger (24 September, 2.30 - 3.30pm), by Dr Sarah Monks of the University of East Anglia.

Take your time, and wander galleries dedicated to Boudica and the Romans, Anglo Saxons and Vikings, The Egyptians, Natural History, Decorative Arts and finally the Royal Norfolk Regiment. Open until 12 January 2020, Tor Falcon: Rivers of Norfolk is exhibited in two successive installations. The first until October, and the second from October to January 2020. Tor Falcon is a Norfolkbased artist who in 2017 began a series of drawings documenting all the rivers in Norfolk from a list she found on Wikipedia. Also at the Castle in September is Walton Bridges by JMW Turner. This

important early Turner painting is thought to be the first oil by Turner to be painted in the open air. Walton Bridges was saved for the nation following major support from The National Lottery Heritage Fund and Art Fund, with fundraising led by Norfolk Museums Service (NMS). Now, the painting is to be exhibited to the public, alongside an exciting four-year programme of learning and public engagement across the region, in partnership with Colchester and Ipswich Museums. Walton Bridges will be displayed first at Norwich Castle from September 2019, then will tour the region with exhibitions planned at Kings Lynn, Ipswich, Colchester and Great Yarmouth. It will come back on permanent display at Norwich Castle in 2023. Every year, Norwich always delivers an unprecedented programme of Heritage Open Days free events each September, organised by the wonderful team at The Forum. The event is, in fact, the largest of its kind outside London. On Saturday 21 September, make the most of this years’ programme, by visiting Norwich Castle for free. Take in John Sell-Cotman in Norwich and London, Lines of Sight: WG Sebald’s East Anglia and Tor Falcon: Rivers of Norfolk, but also enjoy the magnificent permanent displays found here. Take your time, and wander galleries dedicated to Boudica and the Romans, Anglo Saxons and Vikings, the Egyptians, natural history, decorative arts and finally the Royal Norfolk Regiment. Finally, the cafe area and Rotunda have recently been updated with new furnishings and decoration. Visiting over lunch? Their kitchen quiche is legendary, so make time for a bite to eat too. Alternatively, take a picnic and eat at the tables outside the Castle, it’s a real suntrap. You’ll be in the company of centuries of history, and some of the most spectacular views of the city centre. Norfolk Museum Service has 10 museums across the county. If you love history, learning, art, meeting people and days out with ever changing things to see, consider an annual pass. Passes for individuals start at £43, joint adult £78 and families £91. woodland walks Fairhaven Woodland and Water Garden With almost 4 miles of paths and 130 acres of ancient woodland to explore – home to the magnificent 950-year-old King Oak – this is a wildlife haven in the heart of the Norfolk Broads. Easily accessible from Norwich, autumn brings golden hues, migrant birds and a wide variety of fungi and toadstools to the garden. With a children’s nature trail, bird hides, a tearoom and boat trips until the end of October, this is the perfect place for a family ramble.

Rendlesham Forest If you’re a fan of tales from outer space, a walk through Rendlesham provides more than your average nature trail. This 1,500-acre area of woodland is synonymous with a UFO sighting in 1980, earning it recognition as ‘the UK’s Roswell’. Visit on a crisp autumn day for an added air of mystery and stroll the 3-mile UFO trail, complete with information boards, sculptures and play areas for little ones.

Sheringham Park If you prefer landscaped parkland to wild woodland, this National Trust owned garden is the place for you. The personal favourite of its designer Humphry Repton, Sheringham Park is famous for its colourful collection of rhododendrons and azaleas. Offering woodland, parkland and cliff top walks that boast stunning North Norfolk coastal views, be sure to keep your eyes peeled for the resident birds, butterflies and three species of deer. Bacton Wood

Thetford Forest Stretching across both Norfolk and Suffolk, Thetford is the UK’s largest man-made lowland forest, so is one of the best places to don your walking shoes (or grab your bike) and escape the hustle and bustle. Head into the peace of the pines and heathland and you’ll find a vast number of walking trails for all abilities – from the unmissable autumn colours of Lynford Arboretum to the beauty of St Helen’s picnic site alongside the Little Ouse river.

Bacton Wood There’s an unspoilt feel to the gorgeous woodland here, which is no surprise, as tree cover in the area dates back to Saxon times. Home to ancient Sessile Oaks as well as some 30 other species of tree, the foliage in autumn is truly spectacular. Whether on foot, by bike or even horseback, there

are orienteering and walking trails aplenty. Bring your four-legged friend here to enjoy the crunch of leaves under-paw, or if our pages on Fairs, Festivals and Foraging have inspired you, see if you can find some chestnuts to roast over the fire later.

Priestley Wood Considered to be both one of the finest examples of ancient woodland in East Anglia, and one of the best woods in Suffolk for plant life, Priestley Wood is well worth a visit. Known for its bluebells in spring, come September its diverse and rare collection of trees (including the native wild pear tree), start to provide a riot of colour. With over 130 flowering plants and several species of orchid, there’s plenty to admire on this 9-mile trek, which also takes in Needham Lake and Barking Church.

The Walks, King’s Lynn Who said you have to go deep into the countryside to find natural beauty? The Walks is a fantastic place to enjoy autumn’s splendour in the heart of King’s Lynn. With 800 mature trees and plenty of leaf piles to run through, this is the only surviving 18th century town walk in Norfolk. A recent restoration project has preserved the Grade II listed historic landscape, with its unique 15th century chapel and medieval pilgrims trail, and added modern amenities such as a café, toilets and a children’s play area.

Built by the Bedingfeld family in 1482 as a statement of power and prestige, it remains their family home today. Inside, the Victorian Gothic decor and a range of exhibits tell the story of the Hall’s turbulent past – don’t miss the needlework by Mary Queen of Scots and the priest’s hiding hole in the library.

With a walled garden that is said to be one of the finest in East Anglia, this elegant country house is a hidden gem well worth uncovering. Cherished for its homeliness and charm, Felbrigg reflects the personal stories of four families and their fondness for the estate. In autumn, the Hall is transformed to celebrate the harvest, with displays of fruit, vegetables and flowers. Melford Hall Although unassuming, this mansion in Sudbury has certainly seen its fair share of drama: visited by Queen Elizabeth I in 1578, it survived civil unrest only to be devastated by fire during the Second World War. In later years, the Hyde Parkers were gifted an original Jemima Puddleduck toy by their cousin Beatrix Potter, and the hall was filled with the family’s naval artefacts – the eclectic mix is sure to interest visitors of all ages. Outside, stretch your legs on the mile-long Park Walk and enjoy the views back towards the house.

Sutton Hoo This hauntingly beautiful estate is home to one of the greatest accidental archaeological discoveries of all time, two 6th- and early 7th-century cemeteries. One cemetery contained an undisturbed ship burial of an Anglo-Saxon king, along with a wealth of his treasured possessions, including a ceremonial helmet, shield and sword. autumnal activities Go bird watching Norfolk and Suffolk are two of the best counties for birdwatching in the UK, and there’s plenty to see at this time of year if you point your binoculars skywards, particularly from groups of migratory birds both leaving and arriving on our shores. Head to the renowned NWT Cley Marshes reserve and keep your eyes peeled for wildfowl and waders, as well as speciality birds such as marsh harriers, bittern and bearded tits. Down at RSPB Minsmere in Suffolk, wading birds may include curlew sandpipers, little stints or ruffs and perhaps a rare visitor from North America. If you’re really lucky (and patient) you might even see an otter around the reedbed pools too.

Try clay pigeon shooting at High Lodge Nothing feels more apt for the season than donning your wellies (and some tweed, if we’re really getting into the country spirit) and trying your hand at a traditional sport. If shooting game isn’t your thing, why not give clay pigeon shooting a go? High Lodge’s shooting range near Darsham allows both beginners and experienced licence holders to indulge their inner marksman, with Have A Go Days run on the second Saturday of every month as well as one-on-one coaching to improve your technique. Archery sessions are also offered once a month for those that prefer their targets to remain stationary. 28

Watch the deer rut at Holkham Hall They may be there all year-round, but there’s something magical about seeing Holkham Hall’s resident herds of Fallow and red deer against the parkland’s misty autumn backdrop (it also makes for some excellent photographs). September and October are important months, when the deer rut – stags will use their antlers to fight rival males, a spectacular sight. Opportunities to see the deer are also available on organised walks and deer safaris run by the estate. If you’d rather watch the drama from a distance, get a window seat at the Gunton Arms, a gastropub in nearby Thorpe Market, which is also situated in a deer park.

Take a Heritage railway ride All aboard! Appreciate the county’s gorgeous countryside and quaint towns from the comfort of a cosy train carriage on one of the area’s excellent heritage railways. The North Norfolk Railway, also known as the Poppy Line, is a firm favourite and offers a spectacularly scenic ride along the coast from Sheringham to Holt. Look out for special events such as Murder Mysteries and dining trains for a night out with a difference. Or pay a visit to the Mid-Suffolk Light Railway, Suffolk’s only standard gauge heritage railway, which hosts steam open days and events, such as the upcoming Country Railway Gala on the 7-8 September.

Stargazing at Kelling Heath One of the benefits of the nights drawing in, plus our general lack of light pollution here on the east coast, is we are treated to some unrivalled celestial displays. From well-known constellations (Orion’s belt, anyone?) and jaw-droppingly clear views of the Milky Way, through to rare sightings of the aurora borealis, autumn’s cool, clear nights provide the optimum conditions for stargazing. Thanks to our uncommonly dark skies, there are six official Dark Sky Discovery Sites in Norfolk and Suffolk, including Kelling Heath Holiday Park and Haw Wood Farm Caravan Park. This year will see the first Norfolk Coast Dark Skies Festival celebrated from 6-22 September with a number of informative events.

The CAMRA Champion Beer of Britain Awards is one of the most prestigious beer competitions in the world and a huge event in the cask ale calendar. This year saw 71 breweries competing for the coveted title of the Champion Beer of Britain Award, after months of tasting panels and regional heats across the country judged beers on appearance, aroma, taste and aftertaste across 10 categories.

Brewed at Lacons’ Falcon Brewery in Great Yarmouth, Audit Ale was re-introduced to the Lacons range in 2014 and is a resurrection of the worldfamous Audit Ale of the 20th Century, originally brewed for Cambridge University colleges. Bedford Lodge Hotel & Spa SEAN MELVILLE Executive Head Chef of Bedford Lodge Hotel & Spa answers a few questions for Places&Faces... At what age did you �irst start to cook? I developed a passion for cooking from a young age and was inspired by my mum, who let me take on the duties as head chef at home, meaning I started to cook the evening meal. This was something that I’d look forward to every day, enjoying the artistic side of being the chef – I was always exploring and experimenting with unusual ingredients. Where did you train? I trained at Colchester institute on the City & Guilds course. During this time, I was put on a six-week placement, working in the kitchen at the Sheraton Skyline Hotel, near Heathrow, for Chef Uwe Zander. He was a big, brash German chef who worked all members of the team extremely hard, but taught me a great deal and gave me a true taste for working in a professional kitchen. The six-week placement turned into two years and eventually I finished the course with a Diploma in cookery. Who is your food hero? A chef that inspires me, and who I would call my food hero, is Thomas Keller at The French Laundry, but it’s very close as I also really like Tom Kerridge. The simplicity of his food and cooking style is right up my street. What are your favourite dishes for the restaurant and at home? The menu at Squires restaurant is constantly changing and adapting, but dishes that stand out to me are ones that use the wonderful produce that Suffolk has to offer. A recent favourite that I created was the summer Suffolk lamb salad. A modest dish and so full of flavour! At home, I tend to keep it simple, I love to start the day with a bacon sarnie topped with brown sauce. What led you to the Bedford Lodge Hotel & Spa? I always knew that when I left London, having worked in huge kitchens at The Dorchester and The Ritz, I wanted to work

somewhere that I felt at home. The Hotel has such a beautiful and peaceful ambience, it felt like a great next step. I also wanted to go to somewhere that followed a similar ethos to my own. The Hotel has a great reputation for customer service and its commitment to using fresh, local produce aligns with my own beliefs about what works well in a kitchen. Now this little beauty!

What an amazing idea that melon would work with cured meats, something of a marvel to people of England in the 60s and 70s! Especially when it was placed next to orange juice as a starter in almost every restaurant in the country. I love that! Also I remember going to the hotel Norwich for a Christmas treat, (letting nanny have the year off!) and the starters being just that! We all sat there eating our slice of melon with, as I remember it, a slice of tinned ham as none of us knew any different, or what the hell parma ham was anyways! Anyway, here is a really easy recipe to bring this classic right back up to date. Enjoy, and if you have any vegetarians or non meat eaters you can always go back to the fridge and get the orange juice!

To Dress Place a slice of the crisp parma on the bottom of the plate then scoop a ball of the melon sorbet on top. repeat this twice. Then you should have a small tower of melon and ham. Garnish with your dressed prawns and serve and memories of the 70s will come flashing back!

• 850g of the ripest melon you can find

• 2 slices per person of good quality parma ham

• 10 peeled prawns per person

• 250g stock syrup

Pre-heat oven to 160oc. Lay the slices of parma ham onto a grease proof paper lined baking tray. Place in the oven and bake for 20mins or until golden and crisp. Remove from the oven and rest until needed.

• 1tbs glucose syrup

Place all ingredients into a blender and blend on full speed until smooth, remove and place in an ice cream machine (or into a container and place in the freezer) stirring every half an hour until it has formed a sorbet. Remove from the freezer a couple of minutes before using. 38

Ingredients SERVES 4 • 8 pigeon breasts • 1 x celeriac • 200ml double cream • 100ml milk • 2 sprigs thyme • 3 smoked bacon rashers • 1 punnet blackberries • ½ teaspoon white wine vinegar • 1 teaspoon London dry gin

METHOD Firstly to make the celeriac puree peel and cube the celeriac. Add half to a saucepan with the cream, milk and one sprig of thyme. Bring to the boil and simmer until the celeriac is soft. Then blitz in a food processor until smooth. Season to taste. Dice the other half of the celeriac into small cubes. Place in a saucepan and add water until covered. Boil until just cooked, about 2-3 minutes. Drain and set to one side to cool. To make the vinaigrette, add 10 blackberries to a food processor, with the gin and white wine vinegar. Blitz and add sugar to taste. Pass through a fine sieve, to remove any seeds. Then add the remaining blackberries and coat in the vinaigrette. Next, prepare the pigeon breasts. Heat a tablespoon of vegetable oil in a frying pan over a medium to high heat. Season both sides of the breasts with salt. Once the pan is hot, add the breasts skin-side down, and cook until golden brown. This will take about 2 minutes each side. Remove from the pan and rest for 5 minutes. Add the remaining cubes of celeriac and fry until

golden (1-2 minutes), tossing occasionally. Add a small knob of butter, salt and pepper halfway through. Remove from the pan and drain on some kitchen paper. Leave to rest for 5 minutes. Whilst the pigeon is resting, place the bacon on a baking sheet, and grill until the fat is golden brown. Drain off any excess fat and slice into thin strips.

To finish

Take a spoonful of the celeriac puree and create two lines on the plate. Slice the pigeon breasts in two, across the breast, pink side up. Place these along one of the lines of puree. Place the blackberries around the pigeon and drizzle with the vinaigrette around. Finally, Scatter the celeriac cubes and a few of the bacon strips around the plate, and garnish with a few red chard leaves. Serve and enjoy!

This slightly sweet, slightly sharp cocktail is a sophisticated start to any party and incorporates two autumnal fruit flavours – sloe berries and cherries.

When autumn gives you apples in abundance, put them in this devilishly delicious drink. Whether you call it an apple martini or an appletini, this sweet, tart and boozy cocktail is always a crowd-pleaser.

• 25ml sloe gin • 25ml cherry brandy

• 15ml apple schnapps or Apple Sours

Method

Method

Fill a glass with crushed ice and pour over the prosecco. Hold the rosemary sprig in the palm of your hand and clap the other hand sharply over it to lightly bruise the leaves before dropping it into the glass. Slowly pour the sloe gin and cherry brandy into the glass so that they sink to the bottom. Serve immediately.

Fill a cocktail shaker with ice and add all the ingredients. Shake and strain into a chilled martini glass. Garnish with a slice of apple. If you prefer sour drinks then try swapping the Cointreau for fresh lime juice for a zestier flavour.

Method Squeeze lime juice into a Moscow Mule mug and drop in the spent shell. A Moscow Mule mug is made of copper and used to retain the frosty temperature of the liquid. However, a Collins glass or similar will do if you don’t have one. Add some ice cubes, then pour in the pear vodka and fill with cold ginger beer (or ginger ale if this is all you have). Serve with a stirring rod. Traditionally garnished with a lime wheel and a sprig of mint.

Ingredients • 40ml pear vodka • 25ml lime juice • 150ml premium ginger beer • Ice cubes • Lime wheel and mint leaves, to garnish

Place the gin, lemon juice and sugar syrup into a cocktail shaker with a handful of ice cubes, shake and then strain into a rocks glass full of crushed ice. Drizzle the crème de mure over the top so it ‘bleeds’ into the drink. Garnish with blackberries and a lemon slice. For even more blackberry flavour, try muddling several blackberries in a glass before adding the rest of the mixed ingredients, and topping with the ice and garnish.

his young age, at 22 George Powles already boasts 6 years’ experience in a professional kitchen. When he is not on duty at Brasted’s he can be found either spending time with his family or out on the golf course. Do you have any food heroes? My Norfolk heroes have to be Galton Blackiston and Delia Smith – they are both fantastic ambassadors when it comes to putting Norfolk on the nation’s culinary map. I am also a big fan of Nigel Ramsbottom, who is of course Head Chef at Delia’s and who does a great job using local produce. What’s the best meal you have eaten and where was this? That would have to be at l’atelier de Joel Robuchon in London. I had a 28 day aged peppercorn steak with baby vegetables which was simply divine. I think every chef aspires to be producing dishes of that quality every day.

Run us through a typical day for you. Mornings begin with a cup of coffee and taking my dog, Rolo (a beagle), for a walk. It’s then off to work and the days then fly by in a maelstrom of prepping ready for a busy restaurant service. Ordering and kitchen management is also important and of course, we are often found in creative meetings, as we plan menus for the future and brainstorm ideas for keeping Brasted’s fresh and contemporary.

What are your favourite dishes at Brasted’s and at home? Gosh! That changes all the time but my favourite dishes at the moment are the rack of lamb, polenta, Jerusalem artichoke puree and bean fricassee with pickled beets, followed by our sumptuous and indulgent banana mousse, banana ice cream and whipped ganache, with coconut tuile and almond doughnut for dessert. What is your favourite tipple & what food would you pair with this? My favourite drink is a nice cold Peroni! Paired with a simple juicy fillet steak and chips… If you were having guests round what would you impress them with? I think sometimes less is more – I would aim to do a three course dinner using the finest local ingredients prepared in such a way that they can really savour each of the flavours. Perhaps a Thai fish cakes with a nice spring onion salad, followed by a simple roast with the best of seasonal and local meat and all the trimmings with an indulgent crème brulee for dessert. Simple classics… food does not need to be over complicated to be good. I would also finish with a Norfolk cheese board – we are spoilt for choice in this

county when it comes to incredible awardwinning cheeses, so it’s guaranteed to impress even the most tricky guest! What’s The best thing you enjoy about your job? I love being involved with writing the menu and then watching the dishes develop from an idea to the finished dish, which obviously has to be mouthwateringly delicious and beautifully presented. How do you relax? Golf! It is the polar opposite of working in a busy kitchen, as you have all the time in the world to take your shot!

What is your proudest achievement? I have two! Winning student of the year in 2015 from City College Norwich was amazing. I was also really proud to get this coveted role at Brasted’s, who have been at the pinnacle of fine dining here in Norfolk for over 35 years. I consider myself lucky to be a part of that. Wild mushroom Ingredients

SERVES 4

• 375g block all-butter puff pastry • 25g butter • 300g wild mushrooms, cleaned and sliced • 25g parmesan (or vegetarian alternative), finely grated • Small handful parsley leaves, chopped • 1 garlic clove, finely chopped • 1 egg, beaten • Flour, for dusting

Not sure what to do with

the fungi you’ve foraged? These delicious tartlets are the answer.

Method Roll the pastry out onto a floured surface and cut out 4 circles (around 15cm wide). Place on a lined baking tray and chill in the fridge. Heat oven to 200oC/fan 180oC/ gas 6. Heat a large frying pan, add the butter and fry the mushrooms until there is no liquid left in the pan (around 5 mins). Season, then take off the heat and mix the mushrooms with the Parmesan, parsley and garlic. Score a 1cm border around the edge of each pastry circle, then spoon the mushroom mix into the centre circle. Brush the edge with beaten egg, then bake the tarts for 20 mins until puffed up and golden. Serve immediately.

overnight oats

Ingredients • 45g rolled porridge oats • 100ml milk (any type – we like using coconut or almond milk) • ½ chopped apple • Pinch ground cinnamon • 1 tsp honey (optional)

A healthy breakfast has never been so quick. Place in a jar or Tupperware pot the night before and eat on the go the next day.

Method Combine the oats, milk, cinnamon and honey (if using) together in a jar or Tupperware pot and top with the chopped apple. Cover and chill in the fridge overnight. Eat cold the next day, or simply warm in the microwave. Experiment with other topping combinations (banana and TRY IT WITH peanut butter, norwichporridge.com chocolate and chia seed, mixed berries) and make in batches for the ultimate easy breakfast meal prep.

Blackberry jam Ingredients • 1kg blackberries • Finely grated zest and juice of 3 lemons or limes • 1kg jam sugar (with added pectin to help it set)

What better use

for a glut of late summer fruit than jam that you can enjoy throughout the rest of the year?

Method If the berries are wild picked, rinse them with cold water. If you don’t have a cooking thermometer, put a saucer in the fridge ready to test if the jam has set. Put the berries, lime/ lemon zest and juice into a large stainless steel pan and cook over a low heat, stirring occasionally, until the berries have softened. Press gently with a potato masher to release even more juice and break up some of the fruit. Add the sugar, then stir for about 10 minutes until the sugar has fully dissolved. Increase the heat and boil steadily for around 7 minutes until setting point is reached (105°C).

For those without a cooking thermometer, test for setting point by spooning a little jam onto the cold saucer from your fridge. After a couple of minutes gently push your finger through the jam – if the surface wrinkles, it’s ready. If not, return to the boil for 2 minutes, then re-test. Remove the pan from the heat, skim any scum off the surface, then leave for 5 minutes for the fruit to settle down into the syrup. Stir well, pour the hot jam into warm sterilised jars and place the lids on immediately. Store in a cool, dark place and refrigerate once opened.

ord’s latest Ranger pickup, launched earlier this year, delivers more power, greater fuel-efficiency, enhanced refinement and advanced driver assistance technologies for customers. This new version of Europe’s bestselling pick-up introduces Ford’s sophisticated 2.0-litre EcoBlue diesel engine with selective catalytic reduction (SCR) for optimised emissions, delivering up to a nine per cent fuel-efficiency improvement when combined with an advanced new 10-speed automatic transmission. The new Ranger engine line-up will be led by the powerful Bi-turbo version of the 2.0-litre EcoBlue engine, delivering 213 PS and 500 Nm of torque – up by 13 PS and 30 Nm compared with the current 3.2-litre TDCi diesel – for greater loadhauling capability.

Available in regular cab, super cab, and double cab body styles, the new Ranger features four-wheel drive as standard, and offers business and leisure users new tools to boost convenience and productivity, including Ford’s SYNC 3 connectivity and FordPass Connect on-board modem technology. New premium colour options include Diffused Silver and Blue Lightning, and higher-series versions feature premium xenon headlamps and LED daytime running lights. Ranger is the first vehicle in its class to offer Pre-Collision Assist with Pedestrian Detection and Intelligent Speed Limiter as standard. This

technology uses forward-facing camera and radar to detect people in the road, and automatically applies the brakes if the driver does not respond to warnings. If the system detects a pedestrian and determines that a collision has become imminent, the driver will first receive an audible alarm and visual warning in the instrument cluster. Should the driver fail to respond, the system then shortens the time required to apply the brakes by reducing the gap between brake pads and discs. If there is still no response from the driver, the brakes are applied automatically and the vehicle speed is reduced. Active Park Assist is now also available, in addition to the existing range of advanced driving technologies designed to make driving less stressful. Double cab, high-power new Ranger variants now feature Active Noise Control technology for improved refinement. Flagship Ranger Wildtrak models and luxurious Ranger Limited both also offer new premium features, including an easy-lift tailgate. This month, our resident interior design expert Julie Handforth-Doidge gives us some useful advice on how the introduction of pelmets can add that finishing touch to your curtains.

W

E ARE following on from last month’s article on blinds for your home by this month talking about curtain pelmets. A pelmet, also known as a cornice board or lath, is a framework that fits above your curtains and is used to conceal your curtain fixings. They can be used decoratively and help insulate the window by preventing convection currents. Pelmets are similar in appearance to a valance and perform the same function, but are made of fabric. Pelmets come in all shapes and sizes, from no-nonsense box pelmets to softer valances and swags; they can provide a contrast to curtain fabric or blend in for a subtler look. Pelmets are typically made from plywood or specialty adhesive board and covered with fabric that coordinates with the rest of the room. These days a pelmet does a lot more than that and are used by interior designers to compliment all window treatments, bringing a touch of luxury to your home. Pelmets too often attract bad publicity and are only associated with the grandeur of the country house estate with swags and tails adorned and although there is some truth in this the addition of a pelmet can add a luxurious feel in most modern homes With the correct colour and style choice a pelmet will really compliment your curtains or blind systems, they are useful for creating a blackout situation when fitted against the wall and can assist with heat retention which will help with window demisting during the winter months.

Standard hard pelmets are backed with board to make them rigid, and are available in both flat and upholstered options. Buckram pelmets come in the same styles but are flexible so they can be used in bay windows. All are suitable for use with a track and board. is synonymous with ‘harvest time’ as we earnestly reap and celebrate the bountiful fruits of our horticultural labours. Now is the time to start planning. What do you fancy? Plums, apples, pears, peaches, apricots or cherries: there really is no limit to what can be grown these days, in even the smallest of spaces. New tree stocks of both edible and ornamental types are at their peak of availability in the autumn, which tends to coincide with more favourable planting conditions. Seasonality of weather can mean near perfect conditions: with more rain, less heat and shorter day length, whilst still maintaining a good soil temperature - perfect planting time with less maintenance - and also a perfect recipe for a great pie or two! Fruit trees consist of a suitable rootstock (which conveys both vigour and ultimate tree height) combined with a named cultivar (or variety). Choose a variety of fruit that matches your likes, don’t just select a supermarket variety. Think about the appearance (skin and flesh), the texture, taste, storing qualities. What will you use the fruit for? Cooking or eating or for both uses? Great taste must be top of the list. Now is the time to get out and try some of our locally grown fruits. Ornamental trees also come in all shapes and sizes - some are grafted (top-worked) to reduce size and create weeping and upright forms of common varieties. Tree size is important to know before purchasing. Normally height is classified in 4 height categories for simplicity: very small (up to 1.25m/4ft), small (up to 4m/13ft), medium (6m/20ft) and large (bigger than 6m/20ft). Trying to fit a quart into a pint pot won’t work, so select a tree that will grow into rather than out of your space. I then moved to Tonbridge School; teaching Geography, coaching rugby and hockey and also a boarding housemaster to 65 boys - sixteen years there flew by. I have spent the past 3 years as the Senior Deputy Head at Christ’s Hospital, West Sussex. What attracted you to Langley School? The opportunity to lead a really good school and try and make it better. You are a keen sportsman, what do you play and watch? I enjoy keeping fit and I hope to resurrect my latent hockey career at Harleston Magpies – if the vets will have me! I watch rugby, supporting my team, the Exeter Chiefs. What do you like about living in the region, and how does it compare to other places? This area is a gem. My wife is from here, so reconnecting with friends and family makes being here particularly special. To have Norwich (the city has exploded with growth and quality in the 19 years I have been away) on your doorstep in one direction and the Broads on the other is a delight. Hard to compare, but as a proud Devonian, the South Hams will always be hard to beat. What is a typical weekend for you and the family? I will be supporting the Langley pupils on a Saturday afternoon and then spending time with my girls. A dog walk on Southwold beach on Sunday followed by a pub lunch sounds pretty perfect. What is your favourite restaurant? Having not lived here for that long, it would be incautious of me to name one. Anywhere that serves good local food with decent ale ticks my box. Ask me again in six months. When you have guests, where do you take them? What is the best site and attraction near where you live? We would go to Old Hall Café and walks on the edge of Southwold. It is run by good friends of ours, so lunch there and a walk to Walberswick for some fresh air and exercise the dog. 83

Inspiring Females: GAME CHANGERS

In the latest big survey of girls’

attitudes in the UK, conducted by Girlguiding, the 76,000 girls aged 4-25 responded that their biggest concerns include gender stereotypes and a pressure to look a certain way. This very much has a dispiriting ‘Groundhog Day’ feel about it. From this sample, we can say that over half of our young population feel that the current culture in which they are growing up has the potential to hold them back. The lack of shift on this only makes more urgent the question ‘how can we change this, so that girls and young women can make a difference and be their best?’ Whilst many of us engage in worthy International Women’s Day activities, highlighting the achievements of unsung women and launching new initiatives, it is a shame that so much effort is focused on one day a year, with the takeaway, say, a new female-led brand campaign or a new hashtag dominating social media channels, which sometimes feels like a tick-box exercise not aimed at where change is going to count most. We clearly need a deeper, richer approach which addresses the culture at its roots and which affects young girls. To make this work, we need women to create ongoing platforms for other women and also for girls, to not only make their voices heard, but to be empowered to create change. An approach perhaps such as Dr Jess Wade’s, whose campaign to give women scientists recognition by building their Wikipedia pages, is working to change the culture within the field of science. Or lawyer and political rights activist Dr Shola Mos-Shogbamimu’s approach with her founding WIL Publication to inspire personal leadership journeys for women. We need to empower women to create change whenever they want, not just on one day or via the tried, tested and evidently toothless methods. In 2016, the Inspiring Females programme was created at Norwich High School for Girls, by a small team of staff and by a group of girls, with this mission in mind – to inspire girls, educating them as to what new movements are available in the world of careers as well as to help them access the traditional routes, and empower them to make wise and confident decisions about their futures.

Launching with a professional conference-style event for girls aged 13 to 15, momentum has grown significantly with ambitious events taking place throughout each academic year, all shaped and developed by the young women who attend. Previous summits (our biggest annual events), have tackled themes such as ‘Dream it! Dare it! Do it!’, ‘Building Confidence and Taking Risks’ and ‘Compassion’. As well as this annual event, there have been several bespoke events created by demand. Examples have included a take-over of insurance, savings and investment firm Aviva, contrasting events focussing on STEM and the Arts, as well whole days focussed on enterprise and wellbeing. Central to the programme’s success has been our partnership with state schools across Norfolk, who have not only been invited to attend several events, but who have actively helped shape the programme. If we are looking to inspire the future generation to become change-makers, we must be bold in our approaches. With this in mind, we held our most ambitious event by far on Friday 21st June 2019. Over 700 girls aged 10-15 from across the country gathered at Chelsea Football

Club for the most recent Summit, aptly entitled ‘Game Changers’. The girls had a dynamic day of keynotes, panel sessions and intimate workshops with over 40 high profile guests, including Jess and Shola as mentioned earlier, plus many Norfolk guests too, including Kate Tansley, the CEO of Start-Rite Shoes, Genevieve Raghu, Founder of Into Opera, and Zoe Ward, Business and Project Director for Norwich City Football Club. From each event there are so many rich quotes which resonate with the girls. This year was no exception with sound bites such as; “Keep collaborating, you’re always more powerful as a collective”, “Keep talking about your passions, the world needs different people because different is incredible” and “You are not created to go with the flow. You are created to create the flow.” If there were a tagline to the IF programme it would definitely be ‘I wish I had had something like this when I was at school!’, as this is what we repeatedly hear from our guests and educators in attendance. This is a recognition that young girls need mentors who pay scant regard to stereotypes, and who manifest leadership, authenticity and self-efficacy. I believe that programmes such as Inspiring Females are so important for young people, to empower them to become game changers in their own right. The IF programme, created with limited resources by one school’s dedicated team of enterprising young women and staff (all with many other significant day-to-day remits), has now been accessed by well over 3,000 individual girls with nearly 400 guests from all walks of life volunteering their time since its launch less than three years ago. The power to create real change lies within our schools. It lies within the girls themselves, if they are given half the chance. So, here’s my challenge: What can you do in your local school or in your place of work to create opportunities for young girls - and boys - that help them learn what you wish you had also learnt at school? Consultant Plastic Surgeon Professor Marc Moncrieff talks to Debbie Thorpe of Spire Norwich Hospital about how to minimise your chance of getting skin cancer.

A

s the peak

of the summer holiday season begins to fade along with our golden tans, I would guess the first thought of many holiday-makers may not be to consider the serious danger that can be caused to our health by the sun’s powerful rays? Between 2014 and 2016 163,415 cases of skin cancer were diagnosed, claiming nearly 2,000 lives*. Surprisingly the figures are double what they were twenty years ago and are said to be rising faster than for any other form of cancer. In fact the rate of diagnosis for men since the 1990s has almost tripled. So it’s a real concern for everyone. Prof Marc Moncrieff Consultant Plastic Surgeon at Spire Norwich Hospital explains, “There are two main types of skin cancer, melanoma and non-melanoma. “Melanoma is the most serious type of skin cancer, with the ability to spread to other parts of the body. It affects around 14,500 people in the UK each year and can affect young people as well as old. In fact, melanoma is one of the most common forms of cancer in women under 50 years old. “There are two types of non-melanoma skin cancer. One is called Squamous Cell Carcinoma and the other is Basal Cell Carcinoma often referred to as ‘rodent ulcer’. “Squamous Cell Carcinoma is the second most common form of skin cancer. It commonly appears on sun-exposed areas of the body such as the face, ears, neck, lips, and back of the hands. Unlike other types of skin cancer, this one can spread to internal areas of the body, making it harder to treat. “Basal Cell Carcinoma (BCC) is the most common form of skin cancer. It is highly unusual for a BCC to spread, but if left untreated, it will usually continue to grow, and can grow down below the skin into underlying structures. Prof Moncrieff continues, “The good news is, if caught early all skin cancer can be

treated and patients cured. Any adult who notices a new mole or changes to an existing mole should report this to their GP. Changes to look for are: • moles that are irregular in shape • have an irregular outline • are uneven in colour • are wider than 6mm • appear raised above the skin’s surface • are getting bigger • become irritated or itchy • start bleeding “The main risk factor for any type of skin cancer is the intense UV light from the sun. These UV rays are at their strongest between 11am and 3pm, so avoiding the sun during these hours, wearing a high-factor sunscreen, protective clothing and sunglasses, and sitting in the shade are all recommended. Those most at risk tend to have fair skin and blue eyes, freckles, skin that burns easily, has lots of moles, or those with a family history of skin cancer. People who use sunbeds are at much higher risk, and the safest advice is not to use sunbeds at all. No matter what your skin type or how high your risk, everyone should take care in the sun and be vigilant about their moles.

Sunscreen is important. Even if you’re holidaying in Blightly, the sun will still be able to penetrate through the clouds. You should choose a sunscreen with both UVA and UVB protection, a minimum of Sun Protection Factor (SPF) of 30 and a minimum rating of four stars. The level of SPF tells how well your chosen sunscreen will protect you from UVB rays. It’s the UVB rays that cause sun ‘burn’ rather than tanning. The level of protection against UVA will be measured by the star rating – the more stars, the safer you are. UVA causes accelerated ageing and will bring about wrinkles, brown marks and liver spots. Remember that sunscreen only give partial protection against the sun and should be used in conjunction with suitable clothing. Swimming and towel drying will wash off sunscreen, even if the bottle says it’s waterproof. It will still need to be reapplied after going in the water. All sunscreen should be reapplied every two hours. Prof Moncrieff reminds us that, “Most of our exposure to sun occurs in childhood. So it is very important to remember that a child’s skin is far more delicate and prone to the dangerous side effects of sun exposure. Question: My elderly, disabled mother is coming to stay with me for a holiday this summer. At home she has various pieces of equipment to assist her and she is looked after by carers coming in twice a day. When she is staying with me, I am happy to provide the care but would welcome some ideas about where I could obtain some of her aids as we will not be able to get all of them in the car. Answer: The Red Cross, which has over 1000 outlets in the UK, will probably be able to help. You can borrow wheelchairs, backrests, bath seats, commodes, walking sticks and frames, crutches and other smaller items on a short term loan. In an emergency situation equipment can be provided within 24 hours but it is better to give them as much notice as is possible. The loan of the equipment is free but a donation would be welcome. Question: My sisters and I are taking our mother to Germany for a holiday this year. Mum is disabled and when we take her out in the UK we use her Blue Badge to park in disabled spaces, etc. Is there something similar we can apply for to use in Germany on a temporary basis? Answer: The Blue Badge Scheme entitles you to concessionary parking in towns and cities, allowing you to use disabled parking schemes across Europe. Therefore, just make sure you take it with you. Question: I am eighty years old and gardening has been my lifetime hobby. I am still able to work in my garden but not as much as I used to or as quickly as I could, but I still enjoy it. Do you know of any social organisation that I could join to meet similar “older gardeners” for mutual support and interest? Answer: I do not know of one in your locality but there is a Gardening for the Disabled Trust which is a membership organisation formed to offer advice, information and financial help to disabled gardeners living in their own homes. They encourage the exchange of gardening experiences, tips, seeds and plants and publish a newsletter three times a year. They may be able to put you in touch with local members for a more personal exchange. Question: I receive Direct Payments from my local council and I would like to use some of this money to buy a piece of equipment that I think will help me. Can I do this? 93

Answer: Direct Payments are given to you to arrange and pay for your care needs. Prior to receiving the payments you will have been assessed by Social Services as to the care you require. You can use the payments in any way you choose as long as it is used to meet your assessed needs. Therefore you can use the money to buy or hire disability equipment which will assist in your care. The funding can also be used to maintain or repair such equipment. However, before purchasing or hiring disability equipment I would advise that you contact your local Social Services (number in your local telephone directory) to make sure that they are in agreement with you, that the particular piece of equipment is appropriate for your needs. Question: My sister is terminally ill and wishes to be cared for at home. To help her remain at home her family is considering buying her an electrically adjusting bed with a special invalid mattress, a commode chair and possibly a stair lift. Will we have to pay VAT on these items? Answer: All the items you mention can be zero rated for VAT purposes because a person who is suffering from a terminal illness is defined as “chronically sick or disabled” and therefore can qualify for zero rating on the above items. around between different pension schemes is something that should only be done if you have explored all the facts and ensured that you understand the consequences of what you are looking to do. In many cases, members of Defined Benefit (DB) Pension Schemes – also known as Final Salary Schemes – choose to move their DB benefits, based on length of service and salary, into a Defined Contribution (DC) Scheme where

Transferring pension benefits from one type of scheme to another can be fraught with perils. Carl Lamb, Chartered Financial Planner with Smith & Pinching, explains how to find a safe path in the pension landscape quicksand growth is dependent on investment performance. They do this in the pursuit of better returns and to allow different use of the fund. The main risk of transferring, especially with DB to DC transfers, is that existing schemes may have guaranteed benefits (known as “safeguarded” benefits) that can’t be replicated under a new arrangement. It’s critical to understand what is being given up and to take this into account when considering an alternative pension arrangement. The pension saver who doesn’t understand what a transfer entails is in danger of losing valuable guaranteed benefits or incurring future unwanted responsibilities and costs. It’s a minefield and advice is critical. Indeed, getting financial advice for transferring is compulsory for anyone with safeguarded benefits worth over £30,000. But where should you go to ensure you get the right advice? In a recent move to signpost pension savers to suitable advisers, the Personal Finance Society – the professional body for financial advisers – has set up a new standard for firms offering pension transfer advice to those with safeguarded benefits. The Pension Transfer Gold Standard lays down nine core principles for firms that determine the structure of our processes as well as the quality of advice and transparency of the information we provide to you. CHRISTMAS Mulled festive cider

We caught up with General Manager at Brasted’s, Sian de Waal to �ind out her top tips for party perfection this Christmas. What is your secret recipe for hosting the perfect dinner party this Christmas? Preparation! Preparation! Preparation! You can never have too much time to prepare so if you haven’t already started – get planning! The sooner the better! It is so often the for the hosts at Christmas to find they spend half the evening in the kitchen but a bit of additional organisation and attention to detail when planning your event, will ensure you have more time with your guests when you are entertaining. Can you share any industry secrets for getting ahead in the kitchen? I love a shortcut! It can make your life so much easier when you are playing host. For example, instead of preparing individual drinks when guests arrive why not create a welcome drink for everyone and at Christmas and New Year what about a festive punch or mulled wine.

Ingredients Serves 10 to 12 generous cups • 500g dried cranberries • 1 cup Cointreau • 2 litres Aspalls cider • 1 litre cranberry juice • Cinnamon sticks (to your taste) • 2 Oranges sliced

What about decoration and themeing for a party? Any tips for how we can make our parties look dazzling? I always think Christmas is a time when we can get really indulgent with our table decorations and themeing but it doesn’t have to cost a fortune. Just get creative! Swathes of opulent material are ideal as table cloths, runners or place mats and of course, Norfolk and its abundance of nature, is the perfect place to create a stunning centrepiece, with ivy, holly, pine cones and mistletoe. And of course, candles are the perfect option for your lighting but battery powered fairy lights also look great intermingled with your decorations. Any last words on how to wow our guests? Attention to detail! It is our motto here at Brasted’s.

Method Steep the dried cranberries in the Cointreau over night (booz y fruit...yum!). Heat the cider over a medium heat, but do not boil. Once simmering add the orange slices, cinnamon sticks, steeped cranberries and cranberry juice. Then simmer for a further 10 minutes. Serve in warmed glasses with large orange wheels and a cinnamon stick, then slurp away in front of an open fire...

Run us through a typical day for you Living on a farm means we’re up early most days, which suits me well as eating together as a family is hugely important to me. Breakfast can be quite a feast! It’s then off to school for the children and work for my husband and I. A day at Holkham is always exciting – be it meetings, hosting visiting journalists or working on a campaign, there’s never a dull moment. Evenings are either spent cooking or ferrying the kids to their various sporting or dancing hobbies.

A true Norfolk born and bred girl, we discover more about Lucy and why Norfolk and Holkham are so incredibly special to her. What do you like about living in Norfolk? It’s rare to live so close to such a beautiful coastline, but also find yourself surrounded by rich, rural landscape and within touching distance of a cultural and historical city such as Norwich. Oh, and our local food and drink aren’t bad either! How does Holkham make a difference to people’s lives? What’s rare about a working estate such as Holkham is it touches so many people in such a vast array of ways. No matter whether people are working at, or visiting, the Palladian Hall, National Nature Reserve, The Victoria Inn, Ropes Course, Pinewoods Holiday Park or a one-off event, they will be touched by nature, a sense of heritage and an unadulterated passion for everything Holkham stands for and believes in.

What do you most enjoy about working with people and businesses in our region? Norfolk is often misconceived as being slow, unsophisticated and isolated, which couldn’t be further from the truth. Having worked with most Norfolk tourism businesses during my years with Visit East of England, I can confidently say our county has some of the bravest, most committed, driven, sector-leading and compassionate people in the UK. How is your business contributing to the growth of the region? Holkham has expanded its offering significantly in recent years and, in doing so, has become one of the largest employers in North Norfolk. Not only this, but in my first few months in post I am heartened by the organisation’s belief and investment in staff training and development, broadening the offering for visitors and also leading the way in land management and conservation. Tell us something that people don’t know about you I am a trained silversmith and can also shake some moves on the dance floor. You should see me do the moonwalk! What is your proudest achievement? Ignoring my fear of sounding gushing, I

What do you like to do when you’re not working? Although I’m not one to sit down much, I am fond of the theatre and cinema when time allows. We’re so fortunate to have the Norwich Theatre Royal on our doorstep – one of the best regional theatres in the country. As a family we love walking, and I am confident our new addition (a cocker spaniel puppy called Monty) will only add to the pleasure. Cooking with the best local ingredients is also a great passion, with autumn’s bounty of squash, game and orchard fruit marking a favourite time of year. Where do you like to eat and drink? As keen cooks, we tend to gather round our own table or those of our closest friends and family for sociable lunches and suppers. When heading out, my favourite haunts are The White Horse at Brancaster Staithe (I could soak-up the view out over Scolt Head Island for hours), The Crown in Wells-next-the-Sea (I celebrated my 40th there enjoying Chris Coubrough’s tasty dishes), Socius in Burnham Market (offering a unique British approach to tapas), Benedicts in Norwich (Richard Bainbridge is incredibly talented) and, of course, The Victoria Inn where our head chef, Michael Chamberlain, brings local ingredients to the fore. I’m also a big fan of Richard Hughes at The Assembly House and his passion for spreading the joy of cooking. Can you sum up Holkham in �ive words? Conserving. Diverse. Iconic. Passionate. Visionary.
