Patrick Ness’s critically-acclaimed novel A Monster Calls has been brought vividly to life in an Olivier Award-winning stage show. Performances to be rescheduled for later in the year.

dazzling insight into love, life and healing, and garnered critical and audience approval when it ran at the Old Vic in London in July 2018, following a brief run at the Bristol Old Vic. It won the 2019 Olivier for Best Entertainment and Family. A Monster Calls is about Conor, a 13-year-old boy who knows his mother is seriously ill – and whose fear grows when no-one will really talk to him about it. Then late one night, a monster pays him a visit: the enormous, ancient yew tree in
his garden comes ferociously to life and begins to tell Conor a series of harsh fables that ultimately help him face the truth of his situation. As a meditation on our fear of loss, our inability to discuss death, and on the power of storytelling to help us make sense of the world, Ness’s 2011 bestselling story struck an almighty chord and quickly became a favourite with readers far beyond the young adult bracket it was aimed at. Beautifully illustrated by Jim Kay, it won huge critical acclaim and was awarded
both the Carnegie and Greenaway Medals for outstanding children’s literature and illustration. The story was inspired by a set of notes left by another writer for Young Adults, Siobhan Dowd, who died in 2007 from breast cancer. In addition to four awardwinning novels, Siobhan left the roots of a fifth short novel which became A Monster Calls as Patrick Ness took up the challenge of bringing her idea to life. The book was taken up by Hollywood and made into a movie starring Liam Neeson in 2017, and then adapted for the stage by director Sally Cookson, whose memorable National Theatre production of Jane Eyre came to Norwich in July 2017. She describes A Monster Calls as packing “an emotional punch”. “It’s a story that celebrates stories, but it also gets under the skin of what we do as a society when it comes to talking about important stuff. And it’s also such a beautiful, fantastical, magical story as well - it’s got all the elements I love.” Ness said: “Siobhan wrote all her books knowing that her breast cancer was terminal; this was going to be her next book, but she passed away sooner than expected. My editor, Denise JohnstoneBurt, didn’t want the idea to disappear.” Still, when she approached Ness, his initial reaction was to say ‘no’. He didn’t want to write a memorial. But then a central image of the book – the moment when Conor comes out of a

“I like a book that’s got a hundred challenges,” she admits. “I think you can put anything onstage if you’ve got an imaginative team around you – and that’s what audiences go to the theatre to do, to engage their imaginations.” Ness sat in on some rehearsals and he and Cookson both agreed that it was important that the tree wasn’t just a supernatural thing but had to function as a stand-in father figure for Conor. “I didn’t want a realistic tree being trundled in and out, and I didn’t want a puppet,” recalls Cookson. They’d been playing around in the rehearsal room with paper, cardboard, chairs, but it wasn’t clicking. Then someone hung up some ropes – and the monster walked. It’s a thrilling bit of stagecraft, and has captivated audiences – not least A Monster Calls’ own creator. “It’s amazing to me that so much can be created and given to an audience with just ropes and chairs. I found that magic,” Ness said. The material has proved powerfully intense on stage; the show is a tearjerker, but it’s never sentimental, rather unleashing the same sort of elemental emotions as the book, but held in a collective environment. “I think it was cathartic for the audience, watching this story all together,” Cookson said. And she noticed that the London audiences would stay in their seats after the show had finished, sitting with it and talking about it. “That happened every night of the run – and it was a very special thing.” “We realised that the audience didn’t want to leave the auditorium straight after,

dream to discover he’s smashed up his grandmother’s living room – came to Ness, fully-formed. It was as if Dowd had passed a baton to him – “and my job was to go run with it and make trouble. Because that’s what her books were like, so smart and mischievous and unexpected.” He considers it a collaborative venture, even in book form, insisting on the importance of Kay’s original illustrations too: “there were three of us in the book.” So it’s not surprising Ness was also willing to pass the baton again to Cookson. He was a fan of her theatre work, which often takes a resourceful, highly imaginative devised approach to adapting literary works, and he felt a collective approach would suit A Monster Calls. “A collaborative novel is rare,” acknowledges Ness. “But the idea that in A Monster Calls, we created something bigger than the three of us made it feel like the kind of story that could keep being collaborated on.” Cookson had quite the personal journey with the book herself. A friend recommended it, and she’d devoured it over a weekend. “I instantly knew that I wanted to turn it into a piece theatre,” she said. So she was heartbroken to discover that the theatre rights were not available – so much so, that she struggled to let go, and continued to carry her copy of Ness’s book around with her. About a year and a half later, the artistic director of the Old Vic, Matthew Warchus, invited her in to discuss making a show. He showed her a list of potential books to adapt and at the top of the list was A Monster Calls. Cookson reached into her bag, and pulled out her by now dog-eared copy, and the decision was made. Not that it is an entirely obvious choice for the stage – one of the main characters is a monstrous walking yew tree, after all. But that’s just the sort of challenge that appeals to Cookson.
and so we kept the house open. And we’ll do that on tour as well, so people can just collect their thoughts or discuss it with the people they’ve come with, or even with people they don’t know. “Despite packing an emotional punch, it is ultimately a show that brings together audience and actors to explore some of the harder aspects of being human, and find comfort collectively as the story unfolds.”

Easter isn’t just about chocolate eggs and indulgence, says Melanie Cook of VisitNorwich
W
e love to talk about the
weather and whilst writing this the weather seems to have taken a bit of a turn for the better at last. It’s still cold but it’s welcoming to see blue sky and sunshine. February 2020 was the wettest on record, beating a slightly less wet February back in 1990! I always think there is something quite magical about spring. The air smells fresh, you feel more optimistic – because generally the weather is getting better – and of course, the days are so much longer than we’ve had to endure through the winter. Easter is traditionally the time when our major visitor attractions open for business. It’s not only the first long holiday of the year for schools, it’s also the first long bank holiday. With glee many of us eagerly anticipate a 4-day weekend. You can get so much done in 4 days; meet friends, cook a special meal, get out and about and still have time to fit in some DIY.
Time off for all ages to enjoy Norwich is a wonderful city, full of green spaces. And we have some truly beautiful parks. I’m definitely going to make a bigger effort this year to enjoy our city parks more often. Eaton Park is a firm favourite, not just for walking but also for their weekly Park Run, tennis courts and 18-hole Crazy Golf. And it’s such a great meeting place. There’s plenty of seating for a chat, a café for coffee and good food and also a place to be a spectator. Parks are such good allround places to spend time too. They’re multi-generational, you can even take the family dog. But I think one of the most appealing aspects of a park visit – or indeed any big outdoor space – is the opportunity for conversation without interruption. Strolling and talking, meeting new people, enjoying simple pleasures – and it’s free. A day out at one of our big attractions is always a win. Again, every generation can enjoy time together doing this. Holkham Hall has its annual Easter Food Fair (11-12 April) as well as a packed agenda of Easter themed activities including trails, crafts, and games. Over the long weekend itself they have The Velveteen Rabbit storytelling in the walled garden, and a special cuddle corner where children can meet rabbits, skinny pigs, and other lovable creatures. Over at Pensthorpe Natural Park (2-19 April) there’s a wildlife-inspired treasure hunt around the reserve. Each day find the
championing the written word by offering two workshops in April for young people. The first takes place on 15 April for ages 13 to 17 and the second is 16 April for ages 11 to 13 years. Both cost just £5 and provide the time for the exploration of writing skills through fun and engaging activities with experienced tutors.

And if you’ve a child that can’t class a day out a success without getting filthy dirty then also have a go at pond dipping where everyone has explicit permission to get mucky and wet! Pensthorpe is all about the natural world. Running around, playing, spending time with nature, enjoying a safe and clean air environment. What’s not to like? Roarr! Dinosaur Adventure is another fabulous day out with loads of activities planned for the school holidays but this Easter it gets a bit more fabulous because as part of World Autism Week they will be hosting another Accessibility Weekend (4-5 April). Roarrr! will be reducing the music volume and dinosaur sounds across the park and there will be a quiet room available. Some of their Easter characters, who will be based in the Dinosaur Trail, will interact with guests through sign language too. They’ll also have a Mobiloo on site – a mobile accessible toilet with adult-sized changing bench and a hoist.
What to offer older school children?
There’s always a packed agenda of things to do with little ones but often less so for older children, an age group that can be hard to please. This Easter in Norwich there are some interesting activities which are reasonably priced too which might pique their interest.
More bookworm than wild child?

If you have or look after older children who are not so keen on writing there is another option. Over the same weekend for £10 there is a 2-day Easter Techathon aimed at 8 to 18-year olds. This is a tech challenge in teams, trying out ideas, discovering what does and doesn’t work, meeting like minded people and experts in their field. It sounds like really great fun.
More tarzan than techie?
Other suggestions to get children off their screens and into physical activities are at OPEN and UEA Sports Park where there are climbing walls to challenge all abilities as well as a host of other activities. Whitlingham Country Park offers an exciting programme of outdoor things to do every school holiday including a Wildlings Club (8-16 years). These range from adventures on the water to archery and survival. The prices are pretty reasonable too.
Just more creative in general?
Magination (6-7 April, £70) is a 2-day workshop at Norwich Puppet Theatre where children will create their own short animation. In control of their own project, they will work from making a story, to designing the characters, and creating the models or drawings. Then they bring their creations to life with animation. This is a perfect workshop for kids who like drawing cartoons or making plasticine models. Finally, for those with young families there’s a really long list of things to do at Easter. What extraordinary times we �ind ourselves in. Social distancing... pubs, restaurants, cafés and other entertainment places are closed. A time of great uncertainty. A great deal of change, some say a new normal for a period of time. Therefore, when I thought about the books to review and I wanted to give you something to get your teeth into with these great must reads.

I read this book when I
I brought this book many moons ago when I was absolutely fascinated and intrigued by China, and it has stayed with me as one of my all-time favourite books. The story of three daughters of China, Chang’s Grandmother, mother and then Chang herself. This is a beautifully written novel and gives many an insight into what it was like being a woman in Chinese history, from foot binding to the passing of Chairman Mao. The Cultural Revolution started when Chang was a teenager and Chang willingly joined the Red Guards, though she recoiled from some of their brutal actions. As Mao’s personality cult grew, life became more difficult and dangerous. Chang’s father became a target for the Red Guards when he mildly but openly criticised Mao Tse Tung. Like thousands of other young people, Chang was sent down to the countryside for education and thought reform by the peasants; a difficult, harsh and pointless experience. At the end of the Cultural Revolution Chang returned home and worked hard to gain a place at university. Not long after she succeeded, Mao died. The whole nation was shocked in mourning, though Chang writes that: “People had been acting for so long they confused it with their true feelings. I wondered how many of the tears were genuine”. A truly emotional read that will last a life time.

was on a trip to Verona, Italy. Sadly, I had finished it before the end of the trip and had to find a bookshop that sold English books and ended up reading a classic. Classics are just not my thing! Particularly after reading such an amazing, insightful, although sometimes harrowing book, as Roots. This novel had me gripped the whole way through which explains why a book of over 600 pages was finished in less than a week. At the age of seventeen, Kunta Kinte is taken from the Gambia, a region in West Africa, and sold as a slave. Roots is the tale of Kunta Kinte and seven generations that follow him in the United States. He lived a difficult childhood in the farming village of Juffure. In the village, the people are aware of the new white skinned arrivals, referred to as toubob. Kunta wants to explore, but it is not until there are problems in his village that his father allows him to leave. As Kunta gets older, he learns about the slavery and he himself is attacked and taken. Kunta is sold several times as part of the slave trade and has part of his right foot cut off by slave hunters. Roots is an emotive story of the slave trade and a family’s life in that tragic and most difficult of times.

This book was
recommended to me by a friend of a friend at a party in a cottage in the middle of the countryside. This lovely lady also recommended Perfume by Patrick Süskind, which although interesting and extremely well written, was not one of my all-time favourites. I think I remember this book for all of the wrong reasons! The Crimson Petal and the White I remember for all of the right I reasons. I absolutely loved this book, and although I do not tend to reread books, I think in current times, I may well be tempted to reread this. The story is beautifully written with an amazing use of language. We meet Sugar, a nineteenyear-old prostitute in nineteenthcentury London who yearns to escape to a better life. From the brothel of the terrifying Mrs. Castaway, she begins her ascent through society, meeting a host of lovable, maddening, unforgettable characters on the way. They begin with William Rackham, an egotistical perfume magnate whose empire is fuelled by his lust for Sugar; his unhinged, child-like wife Agnes; his mysteriously hiddenaway daughter, Sophie; and his pious brother Henry, foiled in his devotional calling by a persistently less-than-chaste love for the Widow Fox.

My husband knows how much I love a series. Characters to become completely involved with and very familiar with their personalities like an old friend. I am so looking forward to learning about David Raker, a missing person’s investigator. These are described as crime thrillers, which is right up my street. Tim Weaver has said that he decided to write about a missing person’s investigator as he finds it interesting that in this day and age with all of the cameras on the street and all of the news reports that people still go missing.

What if, after the moment of death, the
human mind continues to work for a few more precious minutes? Ten minutes, thirty eight seconds exactly... I am looking forward to reading this, a one-woman story about a sex worker in Istanbul. The reviews for this book are amazing. The Independent claims that Elif Shafak is one of the most important writers today.

I imagine that once read I would do as I always do and buy the first four books and read them in order.

Tofoo with pineapple salsa & coconut rice SERVES: 2
Ingredients 1 pack Smoked Tofoo 1 tbsp olive oil 2 tsp jerk seasoning 120g uncooked basmati rice 1 can coconut milk 200g fresh pineapple 1 red pepper 4 spring onions Zest and juice of 1 lime Handful of fresh mint leaves
Method: Place rice in a saucepan and add the coconut milk and 50ml of cold water. Put the pan of rice on the heat and bring to the boil, stirring every now and then so that the rice doesn’t stick to the bottom. Once the rice is boiling, cover and reduce the heat to the lowest setting and steam for 15 mins until all the liquid has evaporated and the rice is cooked through. To make the salsa, finely chop the pineapple, red pepper, mint and spring onions then mix together with the zest and juice of the lime. For the Tofoo – cut into 6 slices then sprinkle with the jerk seasoning and rub in. Serve the Jerk Tofoo with the pineapple salsa and coconut rice.

Elmtree Brewery has received the coveted Champion Bottled Beer of Norfolk 2020 award from CAMRA for its Terra Firma ale. Amidst all the doom and gloom news there’s Equal Brewkery, a not-for-profit combined brewery and bakery in Norwich which teaches people with learning disabilities how to make bread and beer. Owner Bill Russell, who used to run his own microbrewery called Black Friar, came up with the idea for the venture after suffering a stroke. As an endurance athlete, people often
don’t believe me when I tell them I follow a primarily plant-based diet. I find myself fielding questions and comments on a regular basis.
“Where do you get your protein?” “You must be hungry all the time.” “But what about bacon?” I laugh it off — food is fuel and I have boundless energy. With each small change I made to my diet, I found myself more interested in nutrition and what diet would work for me. I enjoy cooking more and I take more interest in what I should eat, when and why.
Meal prep can extend to your snacks as well, keeping vegan snacks on hand at all times will help keep you on track.
There are several important factors in my diet; I consider what will fuel my triathlon endeavours, I refuse to compromise on flavour (I have a wicked sweet tooth) and I try to keep things local and environmentally friendly. I haven’t eaten meat for the last 10 years, I eat fish very rarely and I keep my dairy intake very low. Balancing work, athletics, a personal life and healthy eating is an extreme sport in and of itself. For me, the most important first step is planning and meal prep. This can ➤

➤ have such a positive ripple effect. Having delicious, healthy food ready to go keeps your nutrition on track which will keep you happy, healthy and more productive. Living alone makes things slightly easier for me because there is no bickering over what to eat, but I compromise on freezer space. However, cooking in advance and saving portions in the fridge or freezer can work for families of all sizes. When working full-time, I like to cook a large dish on both of my days off; the leftovers are perfect for lunches and dinners throughout the week. Vegetarian and vegan food freezes well — I always keep a pot of chilli ready to go in the freezer. Meal prep can extend to your snacks as well, keeping vegan snacks on hand at all times can help keep you on track. I try to keep something on hand that can bust any craving, sweet or savoury. My current favourite is any kind of baked kale crisp. Toss with a very light drizzle of olive oil, season with whatever you fancy, my favourites are honey-cinnamon or smoked paprika, then bake slowly on a low heat until crispy. If you have delicious, healthy stuff on hand at all times, you can indulge in a snack without feeling guilty. Healthy fuelling, be it as a vegan, veggie or omnivore is all about balance. Outright denying yourself something when you are desperately craving it can be harmful — your body may need it, listen to your body. Just because you are trying to make a change, doesn’t mean you have to compromise on flavour or give up some of your favourite dishes. Pancake day has always been a favourite of mine, and I knew I would be fighting a losing battle against my appetite this year. Rather than skip the day, I decided to make a vegan, healthy alternative. I combined almond flour with oats, a sprinkling of wheat flour and some baking soda. Then I added mashed bananas, vanilla essence, almond milk and blueberries. This was a healthy, delicious alternative that I have been eating ever since (hence the blue stain on my favourite trousers from eating one in the car).

e�a� VShepherd’s Pie The Filling: Roughly chop an onion, a courgette, an aubergine and a few carrots. Sweat these off in a medium sized pan. Add salt, pepper, a touch of cumin, a sprinkle of smoked paprika and (don’t judge — this is a twist on my mother’s recipe and somehow it works) a healthy squeeze of brown sauce. Add lentils and chopped tomatoes, let simmer.
The topping: Peel your sweet potatoes and bake in foil until soft. Mash in a medium pan with some sun butter, salt and pepper.
To finish: Layer the mixture in a medium, oven-proof dish with the sweet potatoes on top. Gently rake with a fork to create slight ridges. Bake in the oven at 180 degrees until the top starts to go brown and crispy, approx. 30 minutes.
Making the change to being vegan or vegetarian doesn’t mean having to compromise on flavour. Even if you start by cutting out meat one night a week, you are still reducing your carbon footprint. Fuelling for sports with plant-based food can make a huge difference to your results.

Finding a balance If you are an athlete thinking of experimenting with a plant-based diet, it is all about balance. It is very important to consume a healthy amount of protein, healthy fats and complex carbohydrates. Everybody is different so it may take some time to figure out what ratio works best for you.

Every vegetable contains protein, but consider leafy greens, legumes, lentils and pulses to add an extra boost of protein. Tempeh is a love/hate product (I’m on team tempeh!) but is also a great source of protein.

Method: Complex carbs: This is a tricky one because not all carbs are created equal. Quinoa, oats, millet, buckwheat and brown rice will fuel you more efficiently than simple carbohydrates like white pasta or rice.
Endurance Fuel If you are an endurance athlete thinking of giving a plant-based diet a go, there are many options to choose from when looking at gels and sports drinks. SiS, Torq and Gu Energy Labs are all vegan-friendly brands and have always been kind on my stomach. However, where possible, I prefer to consume real food when racing. Some favourites are boiled potatoes, chunks of vegan banana bread and matcha/date energy balls. The real food will be kinder on your digestive system as it is a more natural energy boost. If triathlon is your game, maybe save the gels and chews for the run portion when eating is a challenge.
Preheat your oven to 180°C. Spread out the oats, pumpkin seeds and almonds evenly on a large greaseproof paper lined baking tray and roast for 10 minutes. When ready allow to cool. Put the apricots, maple syrup and water in a blender and blend until completely smooth, then transfer to a large mixing bowl. Add in the buckwheat, raisins and dried mixed fruit and combine together. Then mix in the roasted oats, pumpkin seeds and almonds and mix together thoroughly. Line a seven inch square cake tin with greaseproof paper then pour in the mix. Smooth over the top using a piece of greaseproof paper, pushing down to make sure the mixture is compact. Push down as firmly as possible to prevent any falling apart when you slice them into bars. Bake in the oven for 20 minutes. When ready remove from oven and allow to cool. Wait until cold before slicing in to bars to avoid crumbling. 43

Is this recipe a tenuous link
to Easter? Yes. Is it absolutely delicious and does it negate the need for dinnerware? Also yes. Hailing from Durban in South Africa, Bunny Chow is a fast food dish which consists of a hollowedout chunk of bread filled with tender, spicy lamb curry. If you’re catering for vegetarians, simply substitute the meat with kidney beans, lentils or chickpeas.
Ingredients: 2 tbsp vegetable oil ½ tsp cumin seeds

Garlic bread
Heat the oil in a pan and sauté the spices and bay leaf for around 1-2 minutes until they sizzle. Add the onion and cook until translucent. Stir in the curry powder and sauté for one minute, then stir in the tomatoes. Cook on a medium heat, stirring often, until you get a sauce-like consistency. Add the meat (or vegetarian substitute), ginger, garlic and curry leaves along with 300ml of water. Bring to the boil then reduce the heat and simmer, stirring occasionally, for 40-50 minutes or until the meat is tender. Add the potatoes, salt to taste and a further 200ml of water. Continue simmering for around 15 minutes until the meat and potatoes are cooked. Stir in the chopped coriander and lime juice.
Don’t waste the beautiful soft inners you have hollowed out of the crusty white loaves... why not make garlic bread to accompany your bunny chow. Simply melt some butter in a pan then add a generous helping of chopped garlic. Lay your surplus bread on a baking tray and coat with the lovely garlic buttery goodness. Bake in the oven on a medium heat for about ten minutes, make sure you keep an eye on them as you don’t want them to burn. This is a real crowd pleaser.

While waiting until the potatoes are cool enough to handle, sauté the shallots in a little butter until translucent. Add the spinach and cook down for 2-3 minutes. Half the sweet potatoes and scoop out the filling. Combine with the mayonnaise or sour cream. Stir in the shallots, spinach and the drained chickpeas, season, then place the mixture back into the skins. Top with grated cheddar cheese and pop back into the oven for 10-15 minutes until the cheese has melted. 46

Method: Preheat the oven to 170°C (150°C for fan assisted ovens)/Gas Mark 3. Grease a loaf tin with vegetable oil. Open the Jus-Rol™ can and cut each of the dough rolls into four equal pieces. Place half the pieces in the base of the tin. Scatter over 30g of the cheese, then top with the rest of the dough pieces. Scatter over another 30g of the cheese. Spoon the garlic spread into a microwaveable bowl. Add the butter and microwave on high for 25-30 seconds or until melted. Stir, then drizzle the liquid all over the dough pieces. Bake for 25 minutes until risen, crisp and just golden brown. Remove from the oven and scatter over the remaining cheese. Bake for a further 4-5 minutes until just melted. Leave to cool, carefully remove from the tin and top with dollops of pesto, the quartered tomatoes and basil leaves.

Method: Wet the rim of a Martini glass and dip in salt. Pour the tequila, Cointreau and lime juice into a cocktail shaker with a good handful of ice. Shake vigorously for 10-15 seconds, then strain into the Martini glass. Add a lime wedge on the rim to garnish. Blend with ice for a summer-weatherfriendly frozen version.

Method: Muddle the lime juice, sugar and mint leaves in a jug, crushing the mint as you do – we like to use the end of a rolling pin for this. Pour into a tall glass and add ice. If you’re after a more interesting soft drink for the designated driver, simply omit the rum for a virgin Mojito. 47

cook briskly for a few minutes until the mussels are just open. Tip into a colander reserving the cooking liquor and allow to cool. Remove half the mussels from the shell, leaving the rest attached and set aside. Strain the liquor through a muslin to remove any grit.
The bacon
Cut the bacon into chunky lardons, place in a saucepan of cold water and bring to the boil. Drain and refresh under cold running water. Pat dry and set aside.
The potatoes
Peel the potato and cut into neat 1cm cubes and blanch in boiling salted water until just tender, drain and set aside.

This is a dish that first featured at The Hog Hotel for St David’s day, and is currently on our March and April a la carte menu. Although the dish is inspired by the Welsh coast, with its rugged shoreline and clear fast flowing waters, we try to use as many local ingredients as possible.
The mussels
Sweat the shallot in the butter until soft. Increase the heat to high and add the thyme, mussels and white wine, cover and

Mix the chicken stock and mussel liquor, bring to the boil and reduce by one third. Over a medium heat whisk in the butter and flour paste a little at a time until slightly thickened; you may not need all the butter and flour, the sauce just needs to be slightly thickened. Add the bacon and potatoes and keep warm.
To finish
Heat the vegetable oil in a non stick pan over a medium heat and add the trout fillets skin side down and cook for a few minutes until the skin just begins to colour. Add 25g of butter and the thyme and place in a 180˚C oven for approx five minutes. Remove from the oven, baste with the butter and keep warm. Reheat the broth then add the mussels and heat gently (don’t boil or the the mussels will toughen). Heat the remaining 25g of butter in a small pan and add the samphire to heat through. To serve pour the broth into serving bowls, top with the trout skin side up and garnish with the samphire.

The mascarpone sorbet 500g mascarpone cheese (room temperature) 300ml syrup* 60ml lemon juice *for the syrup combine 300ml of water and 300g of caster sugar in a small pan and bring slowly to the boil to dissolve the sugar. Remove from the heat and cool. The walnut crumble 125ml dark muscovado sugar 125ml oats 125ml chopped walnuts 63ml plain flour 63ml butter ½ tsp ground cinnamon ½ tsp nutmeg
mascarpone sorbet & walnut crumble With this pudding we (or Head Chef
Steve Duffield) have simply taken a classic carrot cake that you would serve for elevenses or afternoon tea and separated some of the components. The traditional cream cheese frosting is served on the side and we have removed some of the walnuts to make a crumble. This works beautifully alongside the mascarpone sorbet.
The carrot cake
Line a 25cm x 10cm loaf tin with baking parchment (this recipe is enough to make two cakes as its not practical to reduce the recipe further, but they do freeze very well). In a mixing bowl whisk together the eggs and sugar until light and fluffy, then gradually add the oil as if making mayonnaise. Sift together the flour, bicarb, baking powder and cinnamon and gently fold into the egg mixture. When the flour has been incorporated add the carrots and walnuts. Divide the mixture between the two tins and level the surface. Place in a pre-heated oven at 170˚C and bake for approximately 40 minutes or until a small knife inserted into the centre of the cake comes out clean. Place on a wire rack to cool.
The mascarpone sorbet
Mix the mascarpone, syrup and lemon juice together until smooth and chill in the fridge, then churn in an ice cream maker following the manufacturer’s instructions.
The walnut crumble
Rub all ingredients together to form a fairly coarse crumb. Spread out on a baking sheet and cook at 180˚C turning regularly until evenly coloured, then set aside.
The cream cheese
Simply mix all the ingredients together and place in the fridge to chill.
To garnish
At The Hog Hotel we garnish with carrots cooked in a fermented honey syrup and carrot tops.
To serve
Place a slice of the cake in the centre of a plate. Place a scoop of sorbet on top with a quenelle of cream cheese to the side and sprinkle with the crumble.

very season has its stars, and what would spring be without lamb. As the days
lengthen this season begs us to lighten our touch with our cooking. From the moment I see the first spring shoots my thoughts for our menu turn towards lamb. Everything from a simple leg for a Sunday roast, with a wild garlic rub; to a collar for a classic lamb navarin... one of my favourite French classics. This year my first lamb dish is a lovely shoulder of lamb with roasted potatoes, broccoli and burnt almond. The burnt almonds are a fun twist on a traditional Egyptian dukkah recipe, and you may notice I have hinted at the spicing in my recipe. I source my lamb though my partnership with our traditional butcher K.W. Clarkes, perfect seasonality that pays homage to Suffolk’s strong farming traditions.
INGREDIENTS - SERVES 4
Slow cooked Suffolk lamb shoulder 1 shoulder of lamb 2 diced onions 2 diced carrots 1 head of garlic 1tbsp cumin 5 star anise 1.5lt light stock 1tbsp ras el hanout Maldon sea salt to taste Broccoli & broccoli puree 500g tender stem broccoli 2 heads of broccoli in florets 100g butter Maldon sea salt to taste Burnt almond 500g almond flakes 1tbsp cumin 1tbsp coriander 1tbsp black onion seeds 1tbsp Maldon sea salt
METHOD Slow cooked Suffolk lamb shoulder
Place the lamb shoulder in an oven proof dish with all the ingredients. Make sure the shoulder is covered with the stock. Bring this up to a slow simmer then cover and place in a moderately hot oven, 180˚C, for approximately three hours until the meat is fork tender. Remove the shoulder from the braising liquor, pull the meat and mix in the cooked fat as you would for a rillette. Add a little bit of braising stock and do a final seasoning with the ras el hanout and sea salt. Roll the picked shoulder in cling film to shape in to a nice roll and cool. Once cooled, cut into uniform pieces and reserve. When ready to serve pan-fry to a nice golden colour, ensuring the meat is warmed through. Baste with butter and reserve ready for plating. Strain the braising liquor, then reduce this down for a fantastic accompanying sauce.
Broccoli & broccoli puree
In rapidly boiling water boil the broccoli florets until tender; strain the broccoli then whilst hot place in a high powered blender and puree with the butter. When smooth pass through a sieve, cool quickly and reserve. Steam the tender stem broccoli when ready to serve.
Burnt almond
This is a variation of a traditional Egyptian dukkah, a wonderful accompaniment in its own right. I have swapped hazelnuts for almonds and roasted quite heavily. In a heavy bottomed pan dry toast all the ingredients together then blitz in a food processor. Store in an air tight container.
Roasted potatoes
We are in England… I’m not telling you how to make roast potatoes!
To serve
On a nice sized plate place a pull of broccoli puree, then the slow cooked lamb shoulder, roasted potatoes and broccoli. Sauce with the braising juices then spoon the burnt almond over the lamb shoulder.
Minted Suffolk Gin Ricky 2oz suffolk dry gin 1/2oz lime juice Garnish with mint leaves & lime wheels
Classic hi-ball with a twist for the warm spring evenings. Simply mix all of the ingredients together in a glass and garnish. Try it with Suffolk Distillery Dry Gin, just fabulous.

PRING SEEMS to have finally sprung with milder weather. Daffodils are everywhere and now it’s time to start thinking about skincare and beauty updates to take us into the sunnier months. Central heating and the harsh winter winds plus too much indulgence at Christmas has definitely taken its toll. Spring is a great time to give your home a makeover and enjoy your surroundings, and the best place to start with all of this is creating a mood board.

I am a self-confessed, serial plant killer... I have run over daffodils, starved lilies and drowned orchids. Then, last year, my father suggested a small herb garden as a project. What I really wanted was a dog, I was struggling with my mental health and really wanted a friend at home. So, after weeks of trawling the adoption sites we compromised, and Dad set me up with a range of “plant children.” He went through the basics with me — how to feed, dead-head and raise them to be excellent bases for spaghetti sauce — and then he left me to care for a succulent, a range of herbs and a hydrangea. I now consider myself to have green �ingers, and I have genuinely saved money on fresh herbs for delicious meals.
My first few weeks of
parenthood were a little rocky, to say the least. I forgot to water them, I didn’t use the herbs or prune the flowers, and I kind of forgot they existed. I so wanted to make my father proud, I wasn’t just being negligent, so I parked my trusty watering can in the front porch and watered them twice a day. During the hot summer, it was just the trick, and soon I had a group of healthy, colourful pots. If you are thinking of starting your own herb garden, it doesn’t need to be hard, and I promise it is easier than you would think. A lot of plants can be very lowmaintenance, useful in the kitchen and build your confidence in the garden. The herbs I started with were mint, thyme, oregano, rosemary and chives. This is a diverse bunch in terms of kitchen use, and thrive in all kinds of weather. I had slightly different varieties of oregano (spicy) and thyme (lemon), this was lovely for a change in gin garnish or in a lasagne sauce. Start with some plants that you think you will use in the kitchen; this will make your garden more fun and sustainable. The more I use my plants, the more I want to take care of them and the healthier they get. When your plants are healthy, you reap the benefits in the kitchen. My personal favourites are mint and rosemary, they are easy keepers and extremely useful. Mint grows so quickly it might as well be a weed and when it is
healthy, my whole courtyard has a fresh scent to it. It is perfect in salads, drinks and even a fresh cup of mint tea. Rosemary is another great option for beginners — mine has stayed reasonably healthy throughout this winter and apocalyptic weather. Nothing beats a tray of roast potatoes coated in rosemary, or bread with a sprig on top. If cooking isn’t quite your thing, flowers are another great option, all of mine are potted and lived very well last summer. My favourite flower is the lily so I had to have two pots. I understand flowers less than herbs, but I managed to keep them blooming yellow and purple all summer. The most important thing to remember with flowers is to water regularly, checking the soil for dampness. Make sure you don’t flood the pot either, the leaves of the plant are a good indicator of health. They should be sturdy and a bright green, if they are fading, your plant may be underfed. Find them a spot with lots of natural light and keep an eye on them! Gardening doesn’t have to be difficult; anyone can do it. Just choose plants you will enjoy and use, if it isn’t fun, why bother? It is a challenge, but if you start small with something you will actually care for, you may tap into your secret green fingers!

If you don’t trim your herbs, they won’t stay strong! If leaves are looking dry or faded, it is best to trim the whole stalk. I like to trim mine when they are strong with a light, waxy coating on them before they harden or dry up. If you don’t have a use for them, consider a food donation app like Olio, or offer them up to friends. Water your plant children before the sun hits them directly. If you water them in the middle of the day, this can scorch the leaves and damage the plant. When watering your plants, aim for the base and the surrounding soil. Water is absorbed through the roots and most plants will benefit from damp soil. Dry soil can be an indicator of a hungry plant!

They are one of the most successful podiatry practices in the country and their team of clinicians aim to provide the latest in podiatry techniques, including a specialist biomechanics service. In our final interview Karen talks about another very common foot problem – ingrowing toenails. Karen, what is happening to make the nail grow this way? An ingrowing toenail is where a piece of the nail begins to grow into the skin, rather than over the top of or along the side of the toe. It mainly occurs on the big toes and particularly with thick and/or curved nails. Why do ingrowing toenails occur? Well, really there are can be several causes. We do see a lot of sporty people with this problem due to having hot and sweaty feet and the likelihood of injury and trauma to the nails. Cutting your nails incorrectly can also be a cause, as can wearing inappropriate footwear which can cause toes to be squashed together. Your posture or the way you walk can put pressure on the nail to grow inwardly. Unfortunately, you could just be unlucky enough to have inherited nails that are particularly curly and thick and are prone to grow this way. I’ve heard they can be very painful, why is this? Once the nail breaks the skin, infection can get in, causing the toe to become painful, swollen and reddened. We recommend you bathe the affected toe in warm salty water to deter infection. However, if the pain and swelling increases or it produces
pus or bleeds, then you may need to see your GP for a course of antibiotics prior to treatment of the nail. How would you treat an ingrowing nail in your clinics? Most ingrowing nails can be treated conservatively during a routine appointment at our clinics. The podiatrist will remove the offending spike of nail that is causing the problem and will trim your nails to promote normal growth. This will relieve the pressure and the pain will subside almost instantly. However, some will reoccur and need a more permanent solution. So, what happens if it does regrow? Yes, there are certainly ways to reduce the likelihood of ingrowing nails, but as I said before some people will just be unlucky in that their nails tend to grow this way. First and foremost, cut your nails properly. It is best to cut them after a bath or
shower when the nails are softer. The best implement to use would be one of the larger nail-cutting tools that you can buy at the chemists. Cut your nails straight across and avoid cutting them too short or down the side. The corner of the nail should be visible above the skin. If you have difficulty seeing or reaching your toes, then it’s worth visiting a podiatrist to have them cut professionally. Wearing shoes with a roomy toe box will be beneficial. Also, keeping your feet in healthy condition by washing, thoroughly drying and changing into clean, breathable socks regularly prevents the likelihood of infection. If you do suspect you have an ingrowing nail, then seek treatment as soon as possible. Not only can they be excruciatingly painful, but they can lead to nasty infections if not caught early on. Don’t delay or even worse, be tempted to self-treat. I would always recommend seeking help from a qualified podiatrist and avoid the trauma of an ingrowing nail infection.

Having any form of cosmetic surgery is a big decision. So Shahnaz Fraser spoke to Miss Elaine Sassoon and Mr Guido Kohler, Consultant Plastic Surgeons at Spire Norwich Hospital, to gain some valuable advice for patients considering going under the knife.

iss Sassoon explains:
“All surgery carries risks, and these risks must be discussed and evaluated at consultation and through reading information sheets and relevant literature. The risks associated with surgical procedures can be considerably reduced when patients choose properly trained and qualified practitioners. In the UK, this means plastic surgeons on the Specialist Register of Plastic Surgery as opposed to just General Surgery, who have passed specialist exams in plastic surgery. They should be members of the British Association of Plastic and Reconstructive Surgeons (BAPRAS) or the British Association of Aesthetic Plastic Surgeons (BAAPS). “The most important thing is not to rush into breast surgery. Think carefully about why you want surgery and what you realistically expect it to do for you. Having your breasts altered may make you feel great, but it is unlikely to get you the job of your dreams or solve a relationship problem. Patients who are better informed are much more likely to be happy with the outcome of their surgery. This is why it is vital for patients to meet with an expert plastic surgeon to discuss realistic options and outcomes. Take your time and find a surgeon with whom you feel comfortable”. Breast enlargement Mr Kohler explains: “A patient who is not happy with the natural size of their breasts may think that an enlargement is the way forward. The surgeon should help the patient choose the right size implants for their body shape. Or on consultation, the surgeon may suggest that a ‘lift’ is more suitable and will achieve the desired results. This is why a consultation is so important. I often encourage my patients to have more than one consultation in advance of any cosmetic surgery as it’s important they feel entirely informed and prepared”. Miss Sassoon adds: “There are also different types of implants available too. So with the surgeon’s help, the patient should have the option to choose which will be the most suitable for them. Sometimes
it is possible to give the illusion of breast enlargement by moving tissue from the lower part of the breast into the upper part without the need for implants”. Breast implant removal Miss Sassoon explains: “The best breast implants are guaranteed against rupture for 10 years and typically last up to 15 years so at this point they may need to be removed if they cause problems. One must expect that implants at some stage will need to be removed. The decision then lies in whether to remove the implants entirely and sometimes have a breast lift, or to just replace the implants. This is a common procedure, particularly in recent years as patients are wishing for a more natural look compared to several years ago when the ‘fashion’ was for the patient to opt for much larger implants”. Breast reduction Mr Kohler says: “The removal of breast tissue to reduce their natural size is also a popular cosmetic procedure and I see many women
who have suffered years of misery due to the size of their breasts. They’ve experienced back and shoulder pain, and been generally embarrassed by their large breasts. Men can also have breast tissue reductions.” Miss Sassoon and Mr Kohler conclude by providing the following ‘checklist’ of advice to prospective patients: Check your surgeon’s credentials All reputable UK surgeons are registered with the General Medical Council (GMC) and undergo thorough screening, which is annually audited. Plastic surgeons should be members of BAPRAS or BAAPS as well. Continuity of care Gold standard aftercare is essential following any procedure. The costs of surgery should include follow-up visits with the surgeon. The importance of consultation The consultation process is vital in helping the surgeon to moderate patient expectation to ensure a successful outcome. The patient should be able to see their surgeon as many times as they need to prior to surgery, to decide if it’s the right choice. Can you afford it? The consultation period is also vital for determining if it’s within your financial means. How many? Has the surgeon performed many of this particular type of surgery before? Don’t feel shy about asking your consultant this question directly. can make major inroads into a family’s wealth: local authority help is only available to those with assets worth below a meagre threshold of just £23,250 (2019/20 figure in England) but there is a serious risk that anyone in long term care could erode their estate so significantly that this threshold might be reached. It’s a worrying thought for families: not only is there a threat to what family wealth can be passed down the generations, there is also a real danger that when the money runs out the person in care may need to move to a different care home that falls within the local authority support budget. However, it’s not all doom and gloom: there are planning measures that you can take at the point of needing care that will ringfence the amount that you need to spend. The average cost of staying in a residential care home in Norfolk (according to the Which? Later Life Care calculator) in 2019 was £762 per week, which is £39,624 per year. If nursing care is required, the cost increases to £921 per week, which is £47,892 per year. If care is being provided at home, costs will vary depending on the level of care needed. Rates for care at home in Norfolk are an average of £21 per hour. We are sometimes asked what can be done to avoid paying care fees. My response is that you shouldn’t attempt to avoid them if at all possible. Paying for care yourself gives you the widest choice and flexibility in terms of the care package you engage. Local authority support will only provide a basic package. It’s important to bear in mind that you cannot give away assets specifically to avoid paying care fees: this would be considered deliberate deprivation of assets. If the local authority deemed you to be guilty of this type of action, they could count the assets given away as part of your wealth, so you could be stuck with paying full fees without the resources to pay them. However, it is possible to manage the size of your estate through a long-term strategy of gifts and other measures that will, for example, help to mitigate
For many people, the prospect of having to pay for care for long periods is a genuine concern. Carl Lamb explores the facts and �igures involved. any Inheritance Tax (IHT) that might be payable on death. You should also remember that you will still have your normal pensions and other sources of income if you need care, so these need to go into the calculation too. What you will need to find is a top-up to your normal income. This might be achieved in a number of different ways. You could, for example, convert investments that are invested for growth into those providing income. Alternatively, if you are in a pension drawdown arrangement it might be possible for you to increase the amount of pension you take each month. This might potentially be suitable if you are in poor health and have a limited life expectancy once in care.
We are sometimes asked what can be done to avoid paying care fees. My response is that you shouldn’t attempt to avoid them if at all possible. Paying for care yourself gives you the widest choice and flexibility in terms of the care package you engage. Another solution would be to purchase a special Care Fees annuity – also known as an Immediate Care Plan. This would involve spending a significant lump sum to buy the plan but the arrangement would provide a top-up to your income for life. The plan can be set up to increase with inflation and is tax-efficient for you, if paid directly to the care home. These are just examples of how planning might help you manage the cost of care. An independent financial adviser will be able to support you and your family both to understand the options available and to put in place any plans or strategies you adopt.
