Welcome This October we are definitely thinking pink as we help raise awareness for local charity Keeping Abreast. Started with a single Norwich-based unit the charity has now grown to a nationwide concern, with support groups throughout Norfolk, as well as in Bristol, Cheltenham, Leicester, Liverpool, Sheffield, Hertfordshire and Bedfordshire. OctoBRA is breast cancer awareness month and Wednesday 21 October is BRA Day, see page 11 to find out more and learn how you can get involved. This time of year we start to see some of our much anticipated TV programmes return to our screens. One of our much loved favourites is the Great British Bake Off, which has now been back on our screens for a couple of weeks. If the time in lockdown didn’t give you the baking bug then the new series most definitely will. So, for some alternative recipes with an ingredient with a difference head to page 34; a sure-fire way to impress family and friends. Not a baker? Head along to our home improvements section starting on page 50 for a few tips and tricks, and a whole load of inspiration to give your home the love that it needs. With plenty of ideas of places to go and recipes to try your hand at we are certain you won’t be bored this OctoBRA, whatever the weather.

T
his summer saw Norfolk full to the brim as staycations became the safest and most popular choice for a break. The county has long been a favourite with holidaymakers far and wide yet because of the situation we’ve all found ourselves in, it suddenly became a real choice for locals too. For many years I’ve been an advocate of looking at where you live through the eyes of a visitor, and this summer it seems many people have done just that. From talking to friends and neighbours, family and colleagues, people have been actively planning exciting days out and overnight stays locally and not just to the obvious places either. Many of us too have finally visited somewhere that’s been on the ‘to do’ list

for ages. Up at 3am, I got out to watch the sunrise from Cromer beach. Sat on my picnic rug with steaming coffee from a flask and fresh croissants, it was a beautiful, peaceful experience and well worth the effort. And, I’ve promised myself I’ll do it again next year. Sunset from Mousehold Heath will be my next venture. But now the summer crowds have dispersed, and things are a bit quieter, where can we head to that won’t break the bank but still gives us something different from the normal at home? As they say - a change is as good as a rest. Pinewoods at Wells-Next-The-Sea in North Norfolk is in a fabulous location just minutes from the beach – rates start at around £240 for 3 nights self-catering. taking in the sounds and smells of the coast can be followed with a visit into Wells for a seafood meal at the award-winning Wells Crab House or a take-away to dive into at your accommodation if you prefer. For a bit of luxury, yet still in the area, look at The Victoria on the Holkham Estate. The Vic (as it’s known locally) has 20 bedrooms – 10 at The Victoria and 10 across the road at Ancient House – and dogs are welcome. There are family rooms as well as doubles and suites and a double ground floor room with wet room for those with accessibility requirements. There’s 08

also a restaurant and bar. Again, the beach is close by and there are plenty of places to walk and drive along the coast. For days out head to Holkham Hall, or go a bit further inland to Pensthorpe Natural Park, both have acres of wideopen space bursting with wildlife to explore and enjoy the outdoors. Ever been to Houghton Hall? Houghton is one of our less well-known country houses but it’s an absolute gem. And for the first-time visitor, Houghton promises a day out which won’t disappoint. Houghton is a rare blend of classic architecture, history and acres of gardens and grounds that are also home to incredible contemporary permanent outdoor art from names such as Richard Long and James Turrell. Annually the Hall presents a special exhibition, this year experience Anish Kapoor at Houghton Hall. Kapoor’s works includes the incredible Sky Mirror which is set in front of the house and looks so good you can be forgiven for thinking it was created to be there for always. And because it should have opened in March the exhibition has been extended until 1 November. Don’t miss the opportunity to see Sky Mirror up-close and personal as well as Kapoor’s other works which include large marble sculptures. There are also smaller versions of Sky Mirror in rich, mesmerising colours inside Stone Hall itself. Tickets must be pre-booked online and cost £16 (including parking) with children under 18 free. Houghton is open Wednesday to Sunday. If the Broads are where you’ve been hankering to discover or re-discover, The Norfolk Mead in Coltishall makes a great base. Rooms start at a very reasonable £135 a night including breakfast, plus there are suites and cottages in the grounds for larger groups/families and some rooms are dog friendly too. Their 2 AA restaurant showcases local produce and is popular – dinner will set you back £28 for 2-courses and £36 for 3-courses. Sunday lunch starts at £23 for 2-courses and £30 for 3-courses and afternoon tea is £17.50. The hotel is welcoming and unassuming – a place where you can be yourself to comfortably relax. The Broads is again another area of the county with outstanding beauty bursting with wildlife. Take a circular walk around Coltishall starting at the Kings Head pub by Cotishall Common (5.72 miles - easy and Pensthorpe Natural Park

smooth). This walk will take you along the banks of the river Bure and alongside the Bure Valley narrow gauge railway line. If you jump into the car, a short drive takes you to Barton Broad (there are two free car parks) to experience the boardwalk which is also wheelchair accessible. Barton Broad was bought by Norfolk Wildlife Trust in 1945 and is the second largest Broad in Norfolk. Watch out for kingfishers, otters and herons as well as rare plants. On the way perhaps stop off at How Hill National Nature Reserve which is close by. How Hill remains open for visitors to their garden and secret gardens and entrance and parking is free. With the cancellation of school stays in 2020 they’ve sadly had no income this year so if you can spare a small donation it would be gratefully received. Cathedral Quarter, close to charming landmarks like Elm Hill and The Britons Arms (for delicious coffee, cake and lunch), it’s easy on your legs to stroll, browse and enjoy this historic area of Norwich. Gothic House is a small 2-bedroomed B&B located in Kings Head Yard just off Magdalen Street which currently is only booking one household at a time so you can have it all to yourself. Rooms cost £105 for a twin or a double which includes breakfast. Magdalen Street is great for shopping for collectables, vintage and second hand whilst the Cathedral Quarter hits just the right spot if you love quaint old buildings and sights. Include as you wander: The Great Hospital; ancient Bishop Bridge; Cow Tower; Jarrold Bridge and Fye Bridge (there are a lot of bridges) where women were once forced into the ducking stool! Finish with a drink at The Ribs of Beef. If you’re up to something a bit more taxing, consider a walking tour with Paul Dickson Tours. Shardlake’s Norwich takes you from The Maids Head up to Kett’s Heights on Mousehold Heath where you will learn all about Robert Kett and his infamous rebel army. Norwich-based charity Keeping Abreast is encouraging everyone to think pink this autumn to raise awareness of breast reconstruction along with much-needed funds…

eeping Abreast is asking people to think pink this month in support of those facing breast reconstruction after a breast cancer diagnosis or the discovery of a hereditary breast cancer gene. October – or ‘OctoBRA’ – as the charity calls it, is breast cancer awareness month and on Wednesday 21st October Keeping Abreast will also be celebrating Breast Reconstruction Awareness Day or ‘BRA Day’. Over the past few months, charities across the country have been affected by the coronavirus pandemic, with traditional fundraising activities, such as bake sales, balls and, in the case of Keeping Abreast, their well-known ‘More Than Just Fashion’ Shows, having to be cancelled or postponed. Consequently, the charity is urging people to think of new ways to offer support this October by devising fundraising activities with a pink twist. There are all kinds of ways to get involved, whether dressing in pink, dyeing hair or beards pink or by holding a pink afternoon tea, dinner party or girls’ pamper night in perhaps. All of these will have to be socially-distanced, of course, and in line with current Government coronavirus guidelines. In fact, the options for some pink fun are endless – if you’re back in the office, you could arrange a “wear it pink” day at work, or perhaps take on a sporting challenge such as a run, walk or swim, wearing – you guessed it – pink! The

charity even sells fuchsia pink face masks, which are £5 each plus P&P and which can be ordered at: info@keepingabreast.org.uk. And now that we’re all having to adjust to the “New Normal”, other ideas include holding a virtual quiz or bingo night on Zoom, FaceTime, Skype or another platform, and asking people to dress in pink, make pink drinks or have pink prizes, while making a donation to the charity – see: www.keepingabreast.org.uk for ways to donate. Keeping Abreast – which offers support to those going through or considering breast reconstruction – was the brainchild of patients Anna Beckingham and Beverley Birritteri and breast reconstruction nurse Ruth Harcourt from the Norfolk & Norwich University Hospital, who founded the charity in 2007. They recognised a need for women, both newly diagnosed with breast cancer and facing the possibility of mastectomy, and also women further down the line who are also considering reconstructive surgery, to be able to meet and talk to others who have been through

The charity has a wealth of supporters, including well-known actress Kim Cattrall, of Sex And The City fame, whose character, Samantha, was diagnosed with breast cancer at the height of the series. Lisa Becker, fundraising manager for Keeping Abreast, said: “It’s been an incredibly difficult year for everyone so far and our traditional methods of support, such as face-to-face meetings, have all had to be cancelled. We have adapted as well as we can, however, by continuing to offer support to ladies with breast reconstruction concerns by phone or email and our support groups around the country have also devised a number of other methods of keeping in touch, from ‘Garden Gatherings’ of up to six people to Zoom Speaker Sessions, organised by KA HQ in Norwich, where we have a different speaker each time and people can join in from across the country.” “Pink Octobra and BRA Day are very important dates in our calendar, as they help us raise much-needed money for those facing breast reconstruction as well as promoting public education, awareness and research.” 11

An historic market town nestled in the beautiful Derbyshire Dales
T
his picturesque market town in the Derbyshire Dales is best known for the local confection Bakewell pudding. Love it or loath it there is no denying the pudding’s popularity brings plenty of visitors to the town, which lies on the River Wye, about 13 miles south-west of Sheffield. Bakewell is the biggest town in the Peak District National Parks and with its mellow stone buildings, medieval five-arched stone bridge and quaint courtyards it is a magnet for artists, photographers and sightseers alike. Thinly disguised as ‘Lambton’ in Jane Austen’s literary classic Pride and Prejudice, the town is the ideal place for a town walk, or relax whilst feeding the ducks during a riverside stroll. Every Monday sees the outdoor market which has an eclectic mix of stalls which adds to the interesting selection of local shops in the town.
What to see Bakewell Bridge is definitely worth a visit. Not much of medieval Bakewell has made it to the 21st century, which only makes this solemn five-arched bridge over the Wye even more interesting. Built from ashlar sandstone, this Grade I-listed monument dates from around the beginning of the 14th century and has Gothic pointed arches and triangular cutwaters that extend up the side of the bridge to form retreats for pedestrians. Set off from this point for a walk south next to the Wye, which has some of the most beautiful scenery in Bakewell.
Lunch You can’t go to Bakewell without visiting the Old Original Bakewell Pudding Shop on The Square and trying a Bakewell pudding. Several different establishments claim to own the original recipe, however the Places&Faces team voted this shop to have their favourite. The Bakewell pudding, which has a pastry base, a layer of jam and a sumptuous sweet egg and almond paste filling, has been around since the first decades of the 19th century and, according to tradition, was invented by accident at the White Horse Inn. Supposedly, the landlady ordered her cook to bake a jam tart, but rather than add the egg and almond to the pastry, it was poured on top and set like a custard in the oven. Can’t get to Bakewell? Don’t fret as the Old Original Bakewell Pudding Shop has a postal service so you can still get hold of your favourite sweet treat. www.bakewellpuddingshop.co.uk
Drinks Thornbridge Brewery produces a top notch selection of local ales. Established in the grounds of Thornbridge Hall in 2005, this brewery moved to a new, modern facility on Bakewell’s outskirts in 2009. Thornbridge has been described as the UK’s first craft brewery and has garnered scores of awards over the last 15 years. You can get to this riverside brewery on foot in ten minutes from the centre of Bakewell where you can visit their tap room to buy the range of Thornbridge beers for both take-out and drinking in. www.thornbridgebrewery.co.uk
Bolehill Farm Offering cosy, dog-friendly selfcatering cottages which are set in 20 acres of grounds within the heart of the Peak District and surrounded by fields, yet only two miles from the centre of Bakewell. The cottages have been lovingly converted from traditional style farm buildings, preserving the original character whilst being fitted out for today’s lifestyle. With eight cottages in total each is unique in its design and layout. The four smaller cottages sleep two whilst the larger cottages sleeps between four to five. There is a minimum two night stay which will just give you an excuse to go back to the centre of Bakewell to buy another pudding.

A Suffolk town steeped in maritime history
A
short trip along the A47 from Places&Faces HQ is the historic town of Ipswich. Set on the River Orwell, its waterfront is lined with cafes, galleries and shops, and the 19th-century Old Custom House, which recalls the city’s maritime history. The town is split into various quarters, with the central and the waterfront areas drawing the most footfall. Central is home to most of the town’s retail shopping and the historical town square, the Cornhill. The waterfront is located south of the town centre on the bend of the River Orwell and is a picturesque setting housing the town’s impressive marina. The waterfront was historically an industrial port but has since been transformed into a trendy area lined with high-rise apartment buildings, restaurants, bars and cafés. The waterfront is also home to one of the UK’s newest universities, the University of Suffolk, which was formed in 2016.
What to see Definitely worth a visit is Christchurch Park which is an historical area of rolling lawns, wooded areas, and delicately created arboreta close to the town centre. The park hosts various facilities such as a children’s play area, tennis courts, table tennis, bowling greens and outdoor gym equipment. The park was officially ‘re-opened’ in May 2008, after the completion of a £4.5 million restoration project funded by the Heritage Lottery Fund and Ipswich Borough Council.
Lunch Mariners restaurant is at Neptune Quay and is one of Ipswich’s most original restaurants – being aboard a converted antique Dutch customs gunboat. You can enjoy wonderful food in a relaxed atmosphere whilst soaking up the views of the waterfront. Owned and run by husband and wife team Julien and Karine you are sure to have a memorable lunch. I got to work with some great musicians on all these tracks. (I borrowed this great American horn section from the Travis Haddix Band. Sadly, Norman Tischler is no longer with us. It was a joy to know him and perform with him in the USA.)

I do all the guitar work, harmonica and vocals on the first four tracks. The next three tracks were recorded and mixed in Ireland by Declan Sinnott who plays all the instruments. The songs were written by my great friend Tony Henderson. I sing (and play harmonica). The last three tracks were recorded in Bristol with Ken Pustelnik’s Groundhogs and I completed by recording vocals and mastering in Norfolk. I hope you enjoy the contrast of styles! What an adventure this is.

Headersandvolleys.co.uk is the creation of football-mad designer Scott and writer Paul, both from Norfolk. Featuring blogs, vlogs and articles about football from the Premier League to Non-League and beyond, the site takes an irreverent, sideways look at the beautiful game. Since its April inception due to “furlough and lockdown boredom” according to Paul, the site has grown, securing interviews with former Norwich City stars Cedric Anselin and Iwan Roberts. The site has also added a shop, selling a range of exclusively designed t-shirts by Scott, and uniquely the chance to have your own ‘fanatar’ designed for you. Fortnightly, the creators host an online football Speedquiz via Zoom, where they give out cash and merchandise prizes. From nothing, the site is now generating hundreds of hits a day, with barely any outlay. At the heart of the site, though, is their passion for all things football - with superbly, often humorously, written articles, great design and image creation and the ability to see past the big clubs and take a leftfield look at football. From a whimsical look down memory lane at the Championship manager series, to an intricate piece on fans designing their own

Dave Thomas is considered to be one of this region’s most versatile blues musicians and is also well-known in the USA – birthplace of the blues. He’s a performer and coorganiser of the Fine City Blues Club and Festivals in Norwich. When lockdown put a stop to all live performance, Dave transformed the Fine City Blues Club into a live streaming event with international artists appearing every Thursday on the FCB Facebook page, which now reaches thousands of blues enthusiasts worldwide. Lockdown also allowed Dave to complete several new albums – the first of these, “One More Mile”, was released in July and is getting outstanding critical reviews. It also went straight to number 9 in the Independent Blues Broadcasters Association chart. Dave is now working on a combination of live performance and live streaming from a secret venue in the heart of the Norfolk countryside.

Working from her spare room, Blundestonbased Fran Alderton recently started Francesandfox, creating bespoke gifts and taking on commissions for personalisation. Taking inspiration from the surrounding Suffolk countryside, Fran upcycles vintage pieces to give them new life and uses natural materials such as wood slices and clay. Following her first craft fair last November, Fran says that despite the demands of motherhood, lockdown gave her the time to open an Etsy shop, which resulted in her first online sale. “Finding inspiration to be creative in such uncertain times was hard, however I’ve spent the time looking towards… (dare I say it) Christmas!” she says.

HIS MONTH we’re shining a light on this little-known pocket of East Anglia. Often overlooked in favour of the coast, the Brecks’ distinctive landscape is characterised by its vibrant purple heathland and the gnarled scots pines of Thetford Forest. Spanning an area of nearly 400 sq. miles and encompassing pre-historic towns and chocolate-box villages, home to an array of rare wildlife and as one of the driest places in the country, it’s an ideal place for a day out this autumn half term.

Brandon Country Park
Go Ape, Thetford
Home to The English Whisky Co., St George’s Distillery has become part of Norfolk’s heritage, being the oldest whisky distiller in England. Founded by the Nelstrop family in 2006, the site is perfectly suited to its purpose of creating fine whiskies: the surrounding countryside produces some of the world’s best barley, coupled with the Breckland aquifer, found 50ft beneath the distillery, which provides plenty of crystal-clear water. The distillery matures all its casks and bottles its whisky on site, and has won a multitude of awards in recent years. Take a guided tour round the gleaming copper stills to learn more about the distilling process – culminating in a tasting of course! – or simply have a browse round the shop to stock up your alcohol cupboard ahead of the festive season.
Open heathland, vast forests and heaps of fresh air, Brandon Country Park is the heart of the Brecks. Located within Thetford Forest and boasting over 30 acres of parkland, there’s plenty for the whole family to discover here. From seasonal trails, lawns and lakes to a ‘haunted’ mausoleum, historic walled garden and tearoom, as well as miles of nature trails and cycling routes, there’s no better reason to pop on your walking boots and pack a picnic. For active early risers, the park also plays host to Parkrun every Saturday at 9am – this 5km trot is a great way of kickstarting your weekend in beautiful surroundings, and, in less socially-distanced times, often ends with a post-run coffee at the The Copper Beech Tearooms.
Where the Go Ape story first began, it’s easy to see why this is the country’s favourite forest attraction. Get your adventure fix in a variety of ways: either swinging through the trees, tackling wobbly crossings and whizzing down enormous zip wires – all up to 40ft off the forest floor – or, for those not keen on ascending to those heights, hop on an all-terrain electric Segway for a unique way to explore the forest off the beaten track. Alternatively, simply watch others playing Tarzan and enjoy the sights and sounds among the pine trees on one of the walking or cycling routes – there is also a café, renowned play area and even an archery course on site.

Bury St Edmunds Abbey
West Stow Anglo Saxon Village One of England’s great archaeological sites, this carefully reconstructed Anglo-Saxon Village has indoor galleries and houses to explore, and, on special exhibition days, the chance to meet Saxon characters and their livestock. West Stow is the site of an early AngloSaxon village, occupied from roughly AD 420-650. The reconstructed village consists of eight fascinating buildings – visitors can wander the houses and workshop, watch a film to learn more, play dress up and say hello to the rare breed pigs and chickens. There is also a surrounding country park holding 125 acres of unspoilt trails, heath and woodland walks. Head to the bird hides or bird feeding area to see the wildlife this area is home to, or take a stroll around the lake, soaking in the peace and quiet before heading back to the madness of modern times.
Lavenham Widely acknowledged as one of the best examples of a medieval wool town and one of Suffolk’s most idyllic Breckland villages, Lavenham is home to a collection of delightfully crooked 15th-century, half-timbered houses. Once the fourteenth wealthiest town in England, the quaint village has a chequered history and many stories to tell. Visit the old Guildhall overlooking the market square, now maintained by the National Trust, marvel at the spectacularly large St Peter & St Paul Church, built in the village’s hey-day, and stop for a browse in one of the twee art galleries. Harry Potter fans will of course make a beeline for the De Vere House, which was used as the location for Harry’s birthplace in the films.
Once one of the richest and most powerful Benedictine monasteries in England, the abbey was founded in 1020 and steadily grew in wealth and power until its suppression in 1539. Unfortunately, the Covid-19 lockdown put a halt to many of the planned celebrations of its 1,000-year birthday this summer. Throughout the abbey’s history, pilgrims came from around the world to see the shrine of martyred East Anglian king St Edmund, whose remains were moved to this site in 903. Ironically, St Edmund became the patron saint of pandemic – fitting, eh! The abbey’s remains, impressive despite being mostly in ruins, are extensive and well worth a stroll around – look out for the imposing 14th century Great Gate and Norman Tower.
Wyken Vineyard Shopping, eating and wine – is there a better combo? Venture through Wyken’s seven acre, south-facing vineyard, the surrounding woodland and formal garden to work up an appetite before sitting down at its renowned restaurant, The Leaping Hare. As you would expect, it offers a fabulous selection of wines, fresh from the vine. The vineyard produces an average of 12,000 bottles of wine a year, including a number of award-winners – Moonshine, a sparkling wine, won ‘The East Anglian Wine of the Year’ in 2017. For the shopping segment, the onsite country store offers a delightful selection of carefully curated products – the book room boasts a selection from small, specialist publishers, and elsewhere you’ll find everything from log baskets and dog beds to chic clothing.
Banham Zoo During October half term there’ll be some spooky goings-on at Banham, with all the usual fun of the zoo plus a few additional Halloween-themed activities. This is a perfect day out for animal lovers of all ages – whether you visit for a sighting of the tigers, leopards, giraffes, monkeys or our personal favourite – the meerkats. Travel the world in an afternoon: in the South America themed subtropical house you’ll find sloths, birds and reptiles; while the black-footed penguin colony offer a taste of Africa’s coast. Daily animal feeding talks and ‘Amazing Animals!’ presentations are fun and informative, while the free Safari Road Train provides an easy way of getting around if little feet get tired.
Dad’s Army Museum A must-visit for fans of the popular BBC comedy series, this quirky museum is located in Cage Lane in Thetford; many of the outdoor scenes for the show were filmed in the surrounding local area. Housed in the old fire station at the rear of Thetford Guildhall, which itself featured in several episodes, the museum was opened in 2007 and is run by dedicated volunteers. Inside you’ll find a reconstruction of Captain Mainwaring’s church hall office, several display areas, a shop and the Marigold Tea Room. The museum’s displays include many unique photographs (many from the collection of the Dad’s Army Appreciation Society) along with other memorabilia and even replica uniforms from the beloved series. 23

This atmospheric, 15th-century red-brick house is uniquely encircled by a wide moat that it’s hard not to be impressed by. Built by the Bedingfeld family in 1482 as a statement of power and prestige, it remains their family home today. Inside, the Victorian Gothic decor and a range of exhibits tell the story of the Hall’s turbulent past – don’t miss the needlework by Mary Queen of Scots and the priest’s hiding hole in the library. Outside the more formal walled garden and the Parterre (or French Garden) are offset with wilderness areas and an estate walk through woodland and along the River Gadder – keep your eyes peeled for the resident otters. Thetford Forest

The UK’s largest man-made lowland forest, Thetford offers 18,730 hectares to walk, cycle and explore. Head into the quiet patchwork of pines, firs and heathland and leave the outside world behind. The park provides a refuge for a rich variety of animal and plant life and can be explored from any of the picnic sites scattered across the forest. High Lodge Forest Centre and its ever-expanding range of recreation facilities is a great base to start from. There is a selection of walking routes that start and finish here, including the Nature Trail, which leads you on a flat path through the woods to a wildlife spotting hide; and an accessible Heritage Trail which explores the hidden history of the area.
A wholesome family-friendly day out, Gressenhall combines a historic Victorian workhouse, museum and traditional farm. Find out about the tools, trades and lives of generations of Norfolk residents, meet the distinctive Suffolk Punch heavy horse, take a cart ride around the real working farm and see a recreation of a 1930s cottage and old village shops from days gone by. Relax in the delightful gardens and orchards while the kids let off steam in the adventure playground. If you’re feeling peckish, head to The Mardlers’ Rest café, which serves tempting homemade meals and snacks.
Mid Norfolk Railway This 15-mile preserved heritage railway is one of the longest in the UK and regular steam and diesel services run through the centre of Norfolk between the market towns of Wymondham and Dereham via Yaxham, Thuxton, Kimberley Park and Worthing. Although a wonderful day out in its own right, the Mid Norfolk Railway also hosts special events – including festive favourite, The Polar Express. Following the popularity of this magical event in previous years, the railway hopes to be able to run this experience again in December. The magic of the 2004 film is theatrically re-created during the journey, so you and your family can be immersed in the sights, sounds and intrigue of this classic children’s tale, including a special visit from Santa himself.
Gooderstone Water Gardens A favourite attraction among garden lovers and the green-fingered, as well as those wanting a peaceful escape into nature. In 1970, retired farmer Billy Knights began designing and creating the gardens at the ripe old age of 70. The enchanting six-acre garden has since been open for the public to enjoy for 20 years, and consists of a natural trout stream, ponds and flowing waterways spanned by thirteen numbered bridges. There are also mature trees and shrubs, colourful borders, a Kingfisher hide where there are regular sightings, a nature trail and a tearoom in the grounds. A variety of plants are available for sale to inspire visitors to create their own horticultural masterpiece back home in their own garden. 25

Food trails The diverse landscape of the Brecks provides a natural larder of incredible local produce, including root crops, fresh fish, traditional breeds of livestock such as Redpoll cattle and Norfolk Horn sheep, and most significantly, bountiful game. The annual Brecks Food & Drink Festival takes place every September and aims to educate and re-connect us to the area’s rural food and drink offering – providing plenty of delicious samples of course! There are a huge number of producers within the Brecks that use these local ingredients to make everything from ice cream and cider to cakes, fudge and even spice kits – not to mention the countless fresh fruit and vegetables that are picked, packed and sold within a few miles of your dinner table. Cycling routes With a handy mix of easy-going routes for the whole family, to daredevil off-road routes for thrill seekers, the Brecks is in the heart of cycling country. With the benefit of mainly flat roads with little traffic, there’s a trail for every ability. If you don’t have your own wheels or struggle transporting them, there are a number of cycle hire companies dotted around that can provide you with everything you need for a day in the saddle. National Cycle Network Route 13 Sustrans - Route 13 passes through The Brecks between Watton and Thetford connecting to cycle route 1. The Brecks Cycling Discovery Route – This 20-mile circular route takes in the Georgian market town of Swaffham and Oxburgh Hall. There is a 10-mile shortcut if you’re shorter on time. Thetford Forest – There are three trails from High Lodge Visitor Centre. Brandon Country Park and High Lodge loops are both 6.5 miles long; the Black Route is 8 miles one way. Swaffham Bridle Route - This 21-mile route passes through the rolling farmland around Swaffham. It is mainly on tracks and minor roads.

Brecks Appeal
F ALL THE GREAT
landscapes of Norfolk, Sydney Long, founder of what is now Norfolk Wildlife Trust, loved the Brecks best. Long before it was a nature reserve, he would visit East Wretham Heath in March each year to record the return of the wheatears which then bred there. Since then, in Sydney Long’s honour, Norfolk Wildlife Trust has known many successes in the conservation of Brecks wildlife. Shortly after his death in 1939 we began to acquire East Wretham Heath, with its precious fluctuating meres. In 1942 and 1945 we purchased Weeting Heath for its priceless Breckland flora and nesting stone curlews, known then as Norfolk plovers, and in 1970 a unique arable weeds reserve was established there. We have since worked with partners including The Forestry Commission and Natural England to restore numerous sites from conifer plantation to Brecks grassland of nature reserve quality. One of the most remarkable nature reserves in the Brecks – for its landscape history, its many rare species and its sheer diversity of habitat – is Norfolk Wildlife Trust’s Thompson Common. The reserve features more than 400 pingos, which are periglacial natural ponds, formed during the retreat of the last glaciation. No fewer than 58 threatened species, most of them invertebrates, are known to inhabit Thompson’s pingos, while pollen and beetle wing cases from pingo silt have given academics and reserve managers a priceless insight into Breckland landscape history, which informs how we care for our reserves today. The greatest threat to Thompson Common, both to its rare wildlife and its resilience to climate change, is its isolation in a landscape largely now devoted to intensive agriculture. Today Norfolk Wildlife Trust is set to take the next bold step in Thompson Common’s restoration and its protection from future stresses, including climate change. We have an exceptional opportunity to acquire 53.5 hectares of land adjacent to our Thompson Common reserve. This includes 11.5 hectares of semi-natural woodland with shaded pingos, which are a Site of Special Scientific Interest and the only known East Anglian home of the pond mud snail. Next door, at Mere Farm, we can acquire a further 42 hectares
of farmland, where we can build on our recent success in restoring arable land to Breck grassland. Even more excitingly, Mere Farm has a number of ghost pingos, which with expert help we can restore. These actions will recreate lost habitat for the rare wildlife of Thompson Common and better connect the reserve to a network of protected Brecks sites, to increase its future resilience.

Such ambitious projects do not come without a cost. We must raise £625,625 by spring next year to secure these two precious pieces of land and fit them into the jigsaw of sites across which we protect wildlife in the Brecks. Thanks to a humbling and remarkable legacy, the figure we still need to raise is just £200,000. With your help, even at this time of global crisis, we can increase our coverage of protected wildlife habitat in the Brecks, recreate rare habitats which have been lost, allow wildlife to move across a more coherent Brecks landscape, and insure Thompson Common, one of Norfolk’s most exceptional natural sites, against future vulnerability. Roasted Butternut Squash & Apple Soup with Spiced Pumpkin Seeds This vibrant soup is jam packed with goodness. The pumpkin seed topping adds a great source of plant based protein, and also make a delicious snack on their own.
Ingredients: SERVES 8
Method:
SOUP 2 tbsp olive oil
Heat the oil in a large pot over a medium heat. Add the chopped onion, apple, cinnamon, ginger, chilli powder and salt. Cook, whilst stirring occasionally, for around 5 minutes. Add the butternut squash to the pot, and stir to coat for another 5 minutes. Add the stock, bring to a boil, lower the heat and simmer, with the pot covered, for around 40-50 minutes, until the squash is soft. Allow the soup to cool and blend in a blender or with a hand-held immersion blender until completely smooth. To make the spiced pumpkin seeds – combine the oil, cinnamon, chilli powder, salt and pepper together in a small bowl. Add the pumpkin seeds and stir to coat. Heat a pan over a medium heat. Add the pumpkin seeds, and allow to toast in the pan, whilst stirring to ensure they don’t burn, for around 3-5 minutes. Remove from heat and allow to cool fully. Serve the soup heated, with a generous sprinkling of spiced pumpkin seeds on top.

CAKE 3 large eggs
First make the cake. Preheat the oven to 160 °C/Gas 3. Beat the eggs, sugar, vanilla and oil until light and well combined. Add the ground almonds, coconut, cinnamon and nutmeg, and stir until just combined. Then add the grated carrot and chopped nuts, and mix until well combined. Line a 23cm spring-form tin with baking paper and spray the sides with non-stick baking spray or oil. Spoon the batter into the prepared pan. Bake for 45 minutes to 1 hour, until a toothpick inserted in the cake comes out clean. Allow the cake to cool in the tin for about 10 minutes, then loosen the edges with a knife and remove from the tin to cool. When totally cool, prepare the icing (see below) and spread thickly all over the cake. To make the icing, drain and rinse the soaked cashew nuts. Combine all the ingredients in a highspeed blender or food processor, and blend until smooth and creamy. You may need to scrape the mixture down and pulse a few times to achieve the desired consistency. Remove from the blender and set aside. Spread over the carrot cake once it has completely cooled.
200g xylitol sugar alternative 2 tsp vanilla essence 120ml melted coconut oil 200g ground almonds 100g desiccated coconut 2 tsp cinnamon ½ tsp nutmeg 50g grated carrot 100g pecan nuts or walnuts, roughly chopped DAIRY-FREE ICING (optional) 150g unsalted cashew nuts, soaked in boiling water for 30 minutes, or overnight in cold water 60ml agave or maple syrup 2 tbsp coconut oil 1 tsp vanilla extract Pinch of sea salt
¼–½ tsp cayenne pepper 10g fresh parsley, chopped
Method: Bring a large pot of water to the boil. Add a generous pinch of salt and stir. Add the spaghetti and cook according to the packet instructions. In the meantime, heat the olive oil in a saucepan. Add the chopped onion and fry over a low heat for 3–5 minutes, until softened and translucent but not browned. Add the carrots, celery and green beans. Stir in the chopped tomatoes, tomato puree, mushrooms and cayenne pepper. Add a generous pinch of salt and pepper to taste. Allow to simmer for 10 minutes. Stir through the fresh parsley. Drain the spaghetti when cooked, and divide between serving plates. Top each serving with a quarter of the bolognaise sauce. Top with some freshly ground black pepper. Serve hot.

OCKDOWN has been a taxing time, but one of the positives that has come out of it is the increase in home baking, with many of us dusting off our aprons and heading back into the kitchen. Bread, cake and pudding making is booming in popularity, and it’s not just white and multi grain loaves or a classic Victoria Sponge coming out of ovens. If you’ve already added pesto to your dough or chia seeds to your cake mix and are wondering ‘what’s next?’, then you might be intrigued by an ingredient called chlorella… For those not in the know, chlorella is a type of green algae, which can be harvested and turned into a powder. It has become renowned for having a host of health benefits, with studies showing it could help with everything from boosting energy levels to keeping wrinkles at bay. Whilst adding algae to your food might sound a little odd, it’s a popular ingredient in Japan, where it’s used in a host of dishes. One of the easiest things to use it in is baking, where it adds a splash of colour and extra nutrition.
Chlorella bread Ingredients:
Chlorella cake Ingredients: 1g Sun Chlorella powder
400g bread �lour
100g cake �lour (or plain �lour)
4g Sun Chlorella powder
3g baking powder
20g sugar
1g salt
8g dry yeast
1g pepper
200ml water
2g sugar
80ml milk
2 eggs
10g salt
20ml olive oil
20g unsalted butter
25ml milk
Method:
25ml whip cream
Mix the water and milk together and warm to 40°c. Mix half the bread flour in a bowl with salt. In a separate bowl, mix together the Sun Chlorella Powder, sugar, dry yeast, water, milk and the other half of the bread flour for about 3 minutes. Gently add the bread flour and salt mix to the chlorella powder mix and then knead on a board with the butter for approximately 10 minutes. Once kneaded, put the dough mixture back in the bowl and cover with clingfilm for approximately 35 minutes, or until the dough has swollen to twice the original size. Once risen split in to 3 separate balls adding each ball to a separate mould. Cover each in cling film for approximately 20 minutes. When ready remove the cling film and bake for approximately 25 minutes at 220°c. Once baked allow to cool before serving.
5g unsalted butter (for mould) 20g dried tomatoes 15 (roughly) olives 5g fresh basil
Method: Rehydrate the dried tomatoes in hot water and cut them down to 1cm cubes. Cut the olives in to slices and remove the stems from the basil. Add the Sun Chlorella powder, cake flour and baking powder to a bowl and mix together. Then add in the salt, pepper and sugar and mix. In a separate bowl mix together the eggs, olive oil and milk. Add the liquid mixture to the chlorella powder mixture and mix together. Rub a bread mould with butter and put one third of the mixture into the mould. Then add a layer of the olives, tomatoes and basil (approximately half of the ingredients). Then add another third of the dough mixture on top and then repeat until you have three layers of dough and two layers of olives, tomatoes and basil in the middle. Bake at 170°c for 10 minutes. Take out of the oven, make a cut in the middle and then bake for a further 25 minutes. Once baked allow to cool before serving.

Chlorella banana cake Ingredients: SERVES 6 27g Sun Chlorella powder 200ml soy (or coconut milk) 3 bananas 100ml rapeseed oil 6tbsp coconut sugar pinch of salt 250g cake �lour 2tsp baking powder
Method: Mash up the bananas to a paste. Add Sun Chlorella powder, soy (or coconut) milk, banana paste, rapeseed oil, coconut sugar and salt to a bowl and mix well. Combine the cake flour and baking powder together, sift into the mixture and mix together. Pour the cake mixture into a baking tin and cook for 35 minutes at 170°c. Once cooked allow to cool on a cake rack.
Chlorella blancmange Ingredients: SERVES 4
Gluten-free Chlorella cupcakes Ingredients: SERVES 6 3g Sun Chlorella powder 100g rice �lour
300ml almond milk (soy milk or milk)
20g �ine coconut
1tbsp tepid water
5g roasted soybean �lour
5g of powder gelatin
5g baking powder
20g of sugar
2g baking soda
Small drop vanilla extract
110ml soy milk
Chocolate for decoration
60ml canola oil
3g Sun Chlorella powder
35g beet sugar
Method: Dissolve Sun Chlorella powder in tepid water and mix. Add the powder gelatin to the Chlorella mixture. Add the almond milk (soy milk or milk) to a pan with the sugar and heat. When the sugar has melted mix in the Chlorella and gelatin mixture. Once the gelatin has dissolved add in the vanilla extract. Pour the mixture in a cool bowl and mix it whilst allowing it to cool in a iced water bath. Pour into individual glasses and cool in the refrigerator for one hour. Decorate with crushed chocolate.

Method: Add the Sun Chlorella powder, rice flour, fine coconut, roasted soybean flour, baking powder and baking soda to a bowl and mix together. In another bowl mix the soy milk, canola oil, beet sugar, vanilla extract, salt and rum together until the beet sugar has melted. Add the two mixes together and once combined, add in the lemon juice, raisins and chopped walnuts. Split the mix evenly into 6 cupcake cases and bake at 170°c for 10-12 minutes or until cooked. Once baked allow to cool.

Method:
Method: Pre-heat your oven to 180°c. In a large mixing bowl, mix the sugar, flours, bicarbonate of soda, mixed spice and orange zest. Whisk together the eggs and oil, then stir into the dry ingredients with the grated carrot. Place your cases in your 12 hole muffin tin and divide the mixture between cases. Bake for 20-22 mins or until a knife comes out clean. Cool on a wire rack. For the first icing, beat the butter until really soft. Squeeze
in some fresh orange then beat in the cream cheese, icing sugar, orange food colouring, orange zest and vanilla. For the choclate icing beat the butter until really soft, then beat in the icing sugar, cocoa powder, double cream and vanilla. Use a piping bag to swirl on to the top of the cupcakes. If you want to add a little more wow factor you can decorate with chocolate shavings, sprinkles and some Halloween themed novelties... let your imagination run wild.
Place your serving glasses into the freezer to chill while you make the chocolate drips. Bring a couple of inches of water to a boil in a small saucepan, then reduce to a low heat. Place a heat-proof bowl on top of the water, making sure it doesn’t touch the water, and add the chocolate, stirring until it has melted. Take the bowl off the heat and leave to cool slightly for 10 minutes. Take one chilled glass at a time, and pour the melted chocolate down the inside of the glass. If the chocolate starts dripping too fast, then hold the glass horizontally to stop it running. Return the glass to the freezer to set, and repeat the process with the other glass. Once the chocolate has set in the freezer, dip the rim of the glasses in the chocolate and scatter the chocolate ball sprinkles over the top. Add 2 tbsp of cherry compote to each glass, then pour in Shaken Udder’s Chocolush! Belgian chocolate milkshake. Top the freakshakes with whipped cream, then decorate with your favourite chocolate bars. Push a straw through the middle of the mini doughnuts and rest on the edge of the glass. Top with a cherry and chocolate sprinkles! 37

UTUMN IS upon us and after the last few months there’s a sense of relishing the new season ahead despite the COVID-19 circumstances. This time of year means nourishing your summer skin to continue that glow and embrace new products to get us not only through the elements of winter months but to ward off the dehydration of central heating. The way we currently buy skincare and make up has changed so much, it feels so long ago that we could walk into a shop and test a product, 4 have a complimentary makeover, experience a facial or even get a hair cut without a mask. Curtains and blinds have a huge impact on the overall look and feel of a room. As an interior designer the question I seem to get asked the most is, “what will enhance my room to its fullest potential?”. The first part of my answer is to talk about the windows and how they are dressed. Most of the time people get it ‘almost right’, and with a little tweak to our customers’ ideas we can make their vision work beautifully. Here at JHD we have a huge selection and as we manufacture the window dressing in our own workshops it allows us to offer many different styles, such as wave, triple pleat, pencil pleat, goblet, swag’n’tails and much more. The choice is very comprehensive and with our guidance our clients are not disappointed with the finished results. We achieve this by listening to our clients, who often draw inspiration from their travels in places such as hotels or cruise ships. We have even been presented with their holiday snaps which helps us to interpret what they are trying to achieve. When making your choice you need to give consideration to how you want the interior to feel; a sense of cosiness or space for example. What colours will work the best, and which patterns and textures will blend with the rest of the room. Our expertise helps to channel all of this into the dream finish.

A smarter home
If you are new to smart devices around your home it is always best to start small to avoid being overwhelmed with all of the new technology. A good place to start is to choose an Amazon Echo or Google Home. Once you have these installed you can add a few smart switches to lamps. Think about where you would position the bed when planning this new room as it may be a romantic notion to lay in bed and gaze at the stars but you may find that you are blinded by the sun the next morning. When converting a loft, you will need Building Regulations approval. A building control surveyor will inspect your conversion at various stages and will be responsible for issuing a completion certificate upon final inspection. If your home is semi-detached or terraced, then you will need to notify your neighbours of your planned work if it falls under the requirements of the Party Wall Act. When it comes to a loft conversion, you are most likely to be concerned with Parts L, K, B and P of the Building Regulations, so it is best to seek advice before you commission any work. 63

will be remembered as one where our lives were turned upside down. It’s been one where a slower pace of life has been forced on most of us and this has had more than one positive outcome as families rebond and kindness becomes a priority. Another outcome of the time we’ve had to think and reflect on our role on this planet has been an increased interest in ensuring that our actions have a positive influence on the world around us. From an investment perspective, this has meant an increased engagement with what we call ESG investing. ESG encompasses a broad range of ethical investing assets. It stands for Environmental, Social and Governance and has developed out of principles set down by the UN in terms of the accountability of organisations and sustainable development goals. Environmental considerations are easy for the lay person to understand. They include a commitment to avoiding anything that contributes to climate change, resource scarcity – water in particular – and pollution or waste. Social considerations are a little more complex. The ESG investor would be looking to invest in organisations that have a good record on health and safety and as an employer as well as having a positive attitude to human rights. This group will actively exclude anything involving weapons or tobacco, for example. Governance issues that might be identified in a company would include the lack of an effective and responsible Board who take diversity and ethical management seriously and have a good history of financial compliance and reporting. Accountability to shareholders and stakeholders is another important factor, along with fairness in all their dealings.

Investing ethically doesn’t mean that you have to compromise on growth. There are ethically acceptable investment assets to suit most investor types and risk profiles. The investment market has responded to these pressures with a range of four different investment types that conform to high standards and transparency. Firstly, we have Socially Responsible Investments where specific sectors and companies may be excluded, or investments are only selected where the assets are from sectors or companies that meet set criteria. Secondly, there is a group of investments under the heading of Ethical or Value Driven Investments, in which the criteria for selection is driven by the views and beliefs of the individual investor or institution. The third group encompasses Thematic Investments, in which investment assets are associated with specific outcomes or activities such as digitisation or the needs of an aging population. The final group are Impact Investments where the target investments look to create positive environmental or
social impacts alongside the potential for a financial return. Investing ethically doesn’t mean that you have to compromise on growth. In fact, those companies who embrace ethical values and sustainability could be said to be more likely to succeed in the long term than those whose values are less robust, as we all become more focused on the impact we make on the world. However, picking your own investment elements may be challenging.
