SULLIVANS COVE DISTILLERY

In 1994, on an island at the far end of the world, a distillery was born from humble beginnings. Away from the hard stare of the whisky establishment, we were free to explore and perfect our process. We were informed by the past, but also inspired by the possible. Bringing a distinctly Tasmanian twist to a whisky craft, shaped by centuries of practice.

20 years later, this commitment to carefully crafting exceptional whisky, inspired by nature and patiently aged, was rewarded when Sullivans Cove was named the World’s Best Whisky. Overnight the secret was out. Special things were quietly happening on this small island, and whisky lovers globally were intrigued.

At the opposite end of the globe to whisky’s original birthplace, Sullivans Cove was turning the whisky world on its head. Obsessively and slowly handcrafting single cask whisky, with no two batches the same. Each, an opportunity for exploration.

At our distillery in Hobart, we use our human senses to nurture each cask to its natural peak. A thousand tiny decisions go into helping each batch of whisky reach its full potential.

In a world of instant gratification and impatient consumption, we offer an alternative. Genuinely rare whisky which can’t be rushed, and which can never be replicated.

Sullivans Cove Double Cask epitomises the art of blending, masterfully created by Distillery Manager, Heather Tillott and the Sullivans Cove Distillery Sensory Team. This exceptional single malt whisky marries the distinctive qualities of French and American oak casks in every small batch.

Adorned with both tropical and stone fruits, sweet notes of caramel and vanilla, spices such as cinnamon and nutmeg, plus nutty, floral and herbal nuances that all contribute to the intricate flavour profile. Double Cask offers unparalleled complexity and length, a testament to its meticulous craftsmanship.

Nose: Vanilla, soft malt and orchard fruits

Palate: Honey, boiled lollies and buttered scones

Finish: Mild spices and soft oak with lingering creamy sweetness

Our American Oak ex-Bourbon single casks are some of our most awarded and esteemed expressions. Aged in 200L American Oak ex-Bourbon casks, this oak varietal beautifully enhances our distinctive and fruity spirit. With a robust malt base, it unfolds layers of vanilla, caramel, coconut, fruit, and delicate hints of white floral and herbal notes. As single cask bottlings, every batch presents distinct nuances, reflecting the character of each barrel

Nose: Malt, vanilla, white flowers and wood shop

Palate: Caramel, pound cake and apricots

Finish: Lingering malt texture and powerful oak

Sullivans Cove French Oak has become a legend. One of the most sought-after whiskies in the world, and the style that put the Australian whisky industry on the map after winning World’s Best at the World Whiskies Awards in 2014, and again in 2019.

Aged in French Oak ex-Tawny barrels, this whisky embodies the coming together of Sullivans Cove Distillery and our powerhouse Australian fortified wine industry with rich flavours of Christmas spice, chocolate, and dark dried fruits. As a single cask bottling, every tiny batch is different, expressing the unique characteristics of each barrel.

Nose: Dark Chocolate, cinnamon, raisins

Palate: Fruit cake, dark toffee, orange peel

Finish: Lingering herbal oak and Christmas pudding

Highly acclaimed and awarded, Old & Rare bottlings from Sullivans Cove Distillery are reserved for casks aged at least sixteen years. Our philosophy prioritises bottling whiskies at their peak of flavour and character, regardless of age. Though most reach this point at around 10-12 years, occasionally, our skilled distillers identify casks suitable for extended maturation, resulting in some of Australia’s oldest and rarest whiskies.

These single casks boast remarkable palate depth, richness, and texture while preserving the distinct brightness of Sullivans Cove’s spirit. Each bottle is presented in a unique hand-made solid wood box and includes a letter of authenticity signed by our Head Distiller, Heather Tillott.

BELGROVE DISTILLERY

TASMANIA AUSTRALIA

Pete Bignell, the driving force behind Belgrove Distillery, stands out as a true innovator in the distillation world, with his methods as unique as they are eco-friendly. Operating from his farm, Bignell has honed the craft of whisky making through an impressive path of self-reliance and sustainability.

A key hallmark of Belgrove Distillery is its focus on utilising locally grown and home-sourced ingredients. Taking the “farm-to-table” philosophy to another level, the distillery grows its own rye on-site. This hands-on approach ensures they have complete control over the grain’s quality, guaranteeing that only the best rye is used in whisky production.

However, the innovation at Belgrove doesn’t end with the ingredients. Their distillation process is where their true creativity shines. Bignell and his team have taken the extraordinary step of constructing their own stills, exemplifying their commitment to craftsmanship and sustainability.

What’s even more remarkable is that these stills are powered by used chip fryer oil, recycling cooking oil in a way that not only cuts down on waste but also introduces subtle flavours into the distillation that conventional methods can’t replicate.

At the heart of Belgrove’s output is the whisky that results from this remarkable process. Each bottle reflects their dedication to quality, environmental consciousness, and creativity. It embodies the essence of the farm’s land, the homegrown rye, and Bignell’s boundless passion.

Oat Whisky Batch 7 54%. This whisky is homage to Batch 5; the only thing that I believe it came out better!!

The focus of this oat whisky is on the ‘1st fill’ style. Blend of 2 barrels:

Nose: Sweet, elegant, and tart fruity almost like freshly baked apple tart! The oak notes come out beautifully sign of the ex single malt barrel.

Palate: Complex. The nose translates beautifully to the palate; sweet and creamy.

Notes of caramel shards, lingering oak, and rounded dark stone fruits. The warmth this whisky provides will make you want to light the fireplace and have a bowl of marshmallow to go with it!

Peated Rye Whisky.

Nose: slightly meaty, cold smoke, quite sweet with some vanilla and honey fudge

Palate: Smoky and fruity, quite sweet with some cold ash aromas, caramel, earthy like a campfire in a warm summer rain, burned apricot,

Finish: more warm smoke towards the end, slightly meaty, still earthy like a warm summer night with some rain drops falling on a paved road.

CAT’S EYE DISTILLERY

IOWA USA

Cat’s Eye Distillery is a small family-owned micro-distillery whose mission is to create truly EPIC tasting products and truly unique sourced products made from high-quality barrels from around the globe that provide higher value than their competitors.

John Baker, one of the owners, previously worked at Honey Creek Distillery in Van Buren County. There, he gained his initial experience distilling products. Since then, he has done considerable research and met with owners of 22 different micro-distilleries in Colorado. In 2016, he founded the Cats Eye Distillery in Bettendorf, Iowa after previous experience owning another distillery.

A lover of outer space and a member of the Quad Cities Astronomical Society, Baker was inspired by a photo of a cat’s eye nebula taken by the Hubble Telescope. Not sure that his audience would quite make the connection, he chose to photograph his daughter’s cat for the logo, and the name just stuck.

Nassif Family Reserve was first developed whiskey by lawyer and co-founder Gene Nassif as a whiskey he could enjoy with his family and friends for his wedding. The whiskey was enjoyed so much that he decided to bottle it as a permanent, entry-level whiskey for the Obtainium brand. Nassif Family Reserve is a blend of 50% 14-year light whiskey from MGP and 50% 3-year 10-month bourye (a blend of 36 rye bourbon and 95 rye distillate aged together in new oak). The blend is bottled at 107 proof. The result is a whiskey that is both approachable for a novice, great in cocktails, yet complex enough to be enjoyed neat by a whiskey enthusiast.

HOLYROOD DISTILLERY

EDINBURGH SCOTLAND

Located in the heart of Edinburgh, Holyrood Distillery is where tradition meets innovation in the world of whisky. Opened in 2019, this modern distillery is inspired by Scotland’s rich distilling heritage while embracing a forward-thinking approach to whisky making.

At Holyrood, whisky is more than just a drink - it’s an experience. With a focus on flavour experimentation, the distillery explores different malt, yeast, and fermentation techniques, creating unique and exciting whiskies that challenge conventional norms. Whether you’re a whisky enthusiast or new to the spirit, Holyrood’s creations are crafted to intrigue the palate.

Visitors to the distillery can immerse themselves in the whisky-making process, gaining insight into how their bold and distinctive flavours come to life. Guided tours, tastings, and masterclasses offer an up-close look at the craftsmanship behind each bottle.

Holyrood Distillery is not only a celebration of Edinburgh’s distilling legacy but also a showcase for what’s next in whisky innovation. For those attending this year’s whisky event, Holyrood offers a chance to discover a brand that’s breaking new ground while honouring time-honoured traditions.

Single Cask Series #89 has been matured in PX Hogshead casks, a choice that infuses the spirit with luxurious sweetness and depth.

After distillation, we had a bright, fruity, and tongue tingling spirit. The decision to mature it in PX casks was driven by curiosity—to see how this vibrant spirit would interact with the rich, dark, and sweet, spicy flavours of the PX. The Pedro Ximénez sherry influence brings out classic dried fruit and spice notes, while rounding some of the brightest characteristics of the original new make. The floral, vegetal notes present before maturation have evolved into distinct flavours of peach, coconut, and creamy yoghurt. Additionally, the effervescence imparted by the Bollicine Wine Yeast has found a perfect complement in the sweet, rich spices introduced by the PX cask.

Nose: Citrus zing, sweet pear, lychee and coconut, alongside refreshing notes of green peppers.

Palate: Peach yoghurt, tart bramble berry, sweet red berries, and rich Medjool Dates.

Finish: sharp spicy tang, sweet finish, fizzy sweets.

Embra, a well-rounded malt with vibrant fruity notes and a smooth finish, perfect for both sipping and cocktails.

Nose: Lemon zest, horse chestnut pith, hints of peppermint and light hickory smoke.

Palate: Wafer biscuits, dark chocolate mousse and notes of earthy highland peat smoke.

Finish: Well rounded and clean with light notes of stewed pears.

For those who appreciate sherry cask finishes, Elizabeth Yard Rum Sherry Cask Edition brings forth a delightful mix of flavourful surporises.

Nose: A delightful mixture of bananas and syrup with hints of creamy boiled sweets and pineapple.

Palate: Treacle and marzipan mingle with a strong note of demerara sugar and a hint of candy floss. Punctuated with classic sherry flavours of raisin and sticky desert and topped off with hints of savoury spice.

Finish: Lingering creamy caramel fudge and biscuits with a hint of chocolate.

From the scots for ‘amber’ The Scottish vernacular blends old and new language almost seamlessly. The name AMBIR was chosen to reflect this relationship between old and new, symbolising how Holyrood incorporates traditional practices with modern thinking.

Nose: Caramel, creamy fudge, Demerara sugar, Scottish tablet

Palate: Red fruits, vanilla and cornflakes

Finish: Biscuit velvet texture, mouth watering, hint of savoury at the end

JAMES BAY DISTILLERY

WASHINGTON USA

James Bay Distillers, based in the Pacific Northwest (specifically within the perimeters of Paine Field airport!) has rapidly gained a reputation for producing worldclass whiskies that marry tradition with craftsmanship. Known for their dedication to quality, the distillery focuses on creating spirits that capture the essence of their unique location, blending innovation with classic whisky-making techniques.

At the forefront of their impressive portfolio are two standout releases: Everett Liquor Co. Bourbon and Galloping Goose Canadian Whisky.

James Bay Distillers continues to push the boundaries of whisky-making, offering a range of premium releases that are sure to captivate whisky enthusiasts at this year’s event. With their commitment to quality and innovation, their Everett Liquor Co. Bourbon and Galloping Goose Canadian Whisky are must-try selections that showcase the best of what the distillery has to offer.

Galloping Goose Canadian Whisky is made to a bourbon recipe and process, and has been aged 3-years in medium char new oak barrels. “The Red Goose,” as we call her, has been available for sale at our U.S. distillery tasting room in Everett, WA since September 2019. It now has six gold medals, a 97-point double-gold medal from Las Vegas’ PR%F Competition and was named “Canadian Whisky of the Year” in 2020 at the Asia International Spirits competition. This whisky opens with notes of caramel and vanilla, then moves to baked chocolate with a lingering honey finish. We proudly feature the Canada Goose on the front label. We also offer a blue-label cognac-cask finished version of the Galloping Goose with 36-months of finishing in a cognac cask, for exceptional notes of plum, dark cherry and dark chocolate.

Everett Liquor Co. Bourbon is a rich, well-balanced spirit that embodies the classic characteristics of American bourbon. Aged to perfection, this bourbon showcases deep notes of caramel, vanilla, and oak, with a smooth finish that lingers on the palate. Whether sipped neat or in a crafted cocktail, it’s a versatile and elegant bourbon that’s perfect for any whisky lover.

Israel’s first whisky distillery, Milk & Honey has earned international acclaim for its innovative approach to whisky-making. Combining tradition with the warm Mediterranean climate, Milk & Honey produces bold, distinct whiskies that mature rapidly and develop rich, complex flavours.

They pursue perfection in every aspect, from their custom-made traditional copper pot stills to quality control throughout the process. On top of this, they have built an outstanding team of enthusiastic people who make everything possible.

Classic Single Malt is a well-balanced, easy-drinking whisky with notes of vanilla, honey, and oak, ideal for both newcomers and seasoned whisky fans.

Aroma: Gentle vanilla sweetness followed by light oak and floral notes.

Palate: Light body, vanilla, caramel, and honey sweetness, balanced by oaky notes

Finish: Short but delicate. The oak notes linger in the palate for a while with a nice light spiciness.

The Elements Sherry 46% is a deeper expression, offering rich flavours of dried fruits, dark chocolate, and spices from its aging in sherry casks.

Aroma: Dominant rich red fruit notes, covered by gentle oak, caramel scent and lemon freshness.

Palate: Medium bodied. Light fruity sherry sweetness, rich fruits and dark chocolate, followed by gentle oaky notes.

Finish Long: The dark chocolate notes linger in the palate for a while, followed by tobacco and oak notes.

For a wine-infused twist, the Elements Red Wine features fruity, spicy notes, with a finish softened by casks previously used for Israeli red wines.

Aroma: ried fruit, ginger, oak, and floral coconut. Some also note strawberry, dry barley, waxy orange peel, crunchy brown sugar, cherries, almonds, ocean breeze, and citrus.

Palate: A slightly floral taste with citrus blossom, redcurrant, raisin, cinnamon sticks, honeysuckle, citrus peel, subtle almond notes, and oceanside air.

Finish: Plum, oak, poached pear, floral, cinnamon, subtle honey notes, and delicate notes of salt.

Lastly, the Elements Peated 46% is a smoky delight, balanced by the distillery’s signature Mediterranean sweetness.

Aroma: Fresh, smoky, earthy scent with notes of vanilla, oak, and lemon

Palate: Medium body with vanilla sweetness, a delicate peat touch, and flavors of ginger and lemon

Finish: Long, with the peat coating the mouth and oak and lemon flavors lingering on the tongue

HIGHWAYMAN WHISKY BYRON BAY AUSTRALIA

Dan Woolley, founder of Highwayman Whisky, has brought the adventurous spirit of whisky-making to Byron Bay, Australia. A veteran of the whisky world, Woolley’s extensive experience spans iconic whisky regions such as Scotland, Kentucky, and Japan, which has shaped his vision for Highwayman. Known for small-batch releases, Highwayman Whisky reflects a dedication to craftsmanship, exploration, and bold flavours.

From Cove to Bay offers a rich profile with marzipan and hazelnut on the nose, followed by a palate filled with oak spice, raspberries, and a touch of salty peat. It finishes with a cinnamon spiced blueberry crumble, perfect for those seeking depth and complexity.

Indiana Gentleman, with its blend of Tipo Jerez Mexican sherry and bourbon casks, brings intense butter menthol and campfire smokiness to the forefront, alongside sweet vanilla and brown sugar. Its long, savoury finish will appeal to lovers of robust whiskies.

San Patong’s spirits are a testament to its commitment to sustainability, using handpicked organic ingredients from local farms to create natural, additive-free products. The distillery’s flagship offerings include the “Rebel” series of Rhum Agricole, made from freshly pressed sugarcane, and its artisanal fruit-based Eau-de-Vies like Mango and Coconut Flower Brandy. These spirits deliver a vibrant and exotic taste, reflecting the tropical abundance of Thailand.

Founded in 2000, Compass Box is on a mission to make the world of Scotch whisky a more interesting place. From our Blending Room in London, we continue to explore the limitless possibilities of flavour. Different to a distiller, more than a blender, we are Scotch Whiskymakers.

‘Whiskymaker’ is a word we invented – you won’t find it in any dictionary. To us, a Whiskymaker is someone who feels compelled to make things better - to ask questions, to challenge, to experiment. When it comes to whisky and the joy it brings, we keep our minds open to new possibilities. We are excited by new production processes, new combinations of flavours, new ways of sharing and enjoying great whisky. There is so much there to discover.

Hedonism. The first whisky created by Compass Box in 2000, and a signature whisky for our company. A unique and award-winning Blended Grain Scotch Whisky. Rare and old this is a whisky that will appeal to both the ardent whisky enthusiast and newcomers alike.

FLAVOUR PROFILE Notes of vanilla cream, toffee and coconut on a supple frame.

SERVING RECOMMENDATIONS Ideal enjoyed neat and slightly chilled. Alternatively, add an ice cube or splash of water and serve in a large wine glass. Works both before or following a meal.

Orchard House. All-malt, and quite the all-rounder, Orchard House features some of Scotland’s fruitiest whiskies. A lively and fragrant sipper with a light oak influence, perfect for the home bar.

FLAVOUR PROFILE Aromas of apple and pear dominate, with hints of pineapple, lemon and lime zest, and Earl Grey tea. Take a sip and note the malty and gingery f lavours. These are soon joined by honey, wild strawberries and vanilla shortbread.

SERVING RECOMMENDATIONS Vibrant when neat, syrupy when enjoyed on the rocks. Enjoy as a boilermaker alongside a crisp pale ale or pilsner for a delightful pairing.

Nectarosity. Great pastry chefs are fuelled by creativity and generosity, constantly enhancing life’s sweet pleasures. So are we. We wanted a new word for that irresistible urge that word is ‘Nectarosity’.

FLAVOUR PROFILE Zesty with honey, poached pears, nectarine and lychee, then juicy apricot and pineapple excite the palate. Toffee, vanilla and butterscotch sauce follow, with a lasting flavour of cinnamon bun.

SERVING RECOMMENDATIONS

Nectarosity will bring an irresistible dynamism everywhere it goes, from classic cocktails to boilermakers. Partner with a dry pilsner to create a soft centre of fruity caramel notes.

Crimson Casks. We honour the spirit of these casks, and the transformative influence wood has over our realm of flavour. It brings the magic of metamorphosis to our blending table.

FLAVOUR PROFILE Chocolate fudge cake undercut with clove and cardamom, with hints of plum jam and redcurrant jelly, then rich cherry, toffee and oak, finished with raisin, honey and brown sugar.

SERVING RECOMMENDATIONS Focused on power, abundance and intensity,

Crimson Casks rewards curiosity with layers of richness, brightness and spiciness. Drizzle over ice cream to reveal flavours of fig and cinnamon. TECHNICAL DE -

TAILS Bottled at 46% ABV. Natural colour. Not chill-filtered. Blended Scotch Whisky.

The Peat Monster. A whisky that layers peaty and smoky elements. The recipe in 2019 has evolved to include older and more elegant Islay malts.

FLAVOUR PROFILE Peaty and smoky, with a creamy and fruity character on the palate.

SERVING RECOMMENDATIONS A fantastic late-night whisky that also works beautifully in a classic Scotch whisky Highball.

KILCHOMAN WHISKY

ISLAY SCOTLAND

The parish of Kilchoman is home to some of Islay’s most fertile ground. It is here, in the fields surrounding the distillery, where we can grow up to 440 tonnes of barley each year. Sown each Spring, once Islay’s 50,000 geese have migrated, our farm team care for the barley over the summer months before harvesting in early September. Harvest time represents the start of the whisky-making process which sees our Kilchoman grown barley malted, distilled, matured and bottled here at the distillery, eventually becoming Islay’s only Single Farm Single Malt Scotch Whisky.

We farm a variety of landscapes covering an area of 2,300 acres surrounding the ruined Kilchoman Church. The craggy hill ground to our south is grazed by our flock of blackface sheep. To the west, our herd of Aberdeen Angus cattle feed on a combination of machair grasses and draff; barley husks discarded during the whisky-making process.

Our most fertile ground, 400 acres of rich soil surrounding the distillery, is reserved for our annual barley crop. Sown each spring, once Islay’s 50,000 migratory geese have departed, the barley ripens over the summer months before being harvested in early autumn.

Batch Strength. Matured in a combination of re-charred red wine casks, oloroso sherry butts and bourbon barrels, a few drops of water were added post maturation to produce a Batch Strength of 57% abv. The result is a colossal dram combining the natural peat smoke and citrus character of Kilchoman with dark fruits, rich spices and salted caramel sweetness.

NOSE: Red fruits, fresh cherries, heather blossom, and intense peat smoke.

PALATE: Toffee, rich spices, vanilla, and lasting peat smoke.

FINISH: Silky viscosity with fresh crumpets, butter and honey

Loch Gorm is the name given to our annual sherry matured limited edition. Named after Islay’s largest freshwater loch neighbouring the distillery, the dark murky colour of the loch’s water is reflected in the rich coppery tones of our sherry matured Loch Gorm release.The 2024 edition was distilled in 2014 and matured in 23 oloroso sherry butts previously used by Bodega José y Miguel Martín.

NOSE: Waves of sweet BBQ smoke and cooked fruits with dark chocolate and dried figs.

PALATE: Delicate peat smoke combined with honey roasted nuts, cinnamon and malted barley.

FINISH: Fresh notes of citrus and rich toffee.

Named after an inlet on Islay’s rugged Atlantic coast, Sanaig is a vatting of both sherry and bourbon casks. The high proportion of Oloroso sherry influence adding a balance of dried fruits and spices to classic Kilchoman citrus sweetness and peat smoke character.

Machir Bay, our signature peated single malt, is a vatting of Kilchoman matured in both bourbon and sherry casks. Named after Islay’s most spectacular beach, the high proportion of bourbon barrels create a distinct balance of classic Islay character and fresh floral complexity.

NOSE: Lemon zest, vanilla and distinct coastal influence give way to floral intensity, juicy peaches, pears, and wafts of rich spices

PALATE: Bursts of tropical fruit and dried sultanas, warming smoke and waves of honey, malt, butterscotch and rich sweetness

GLENFARCLAS WHISKY

SPEYSIDE SCOTLAND

Glenfarclas translates as meaning valley of the green grass. The distillery is owned and run by the Grant family. The distillery has six stills which are the largest on Speyside and are heated directly by gas burners.

The distillery has a production capacity of around 4 million litres of spirit per year. Normally four stills are used for production with two kept in reserve.

The distillery has approximately 68,000 casks maturing on site, in traditional dunnage warehouses, with stock from every year from 1953 to the current year. Glenfarclas produce a traditional Highland malt with a heavy sherry influence.

Lots of sherry and fruit in this, Glenfarclas 12 was originally bottled for export and travel retail markets. In 2006, it was named the “Best Sherried Whisky” in the Single Malt World Cup, and in 2007 and 2008 it won Gold at the Stockholm Beer and Whisky Festival.

Nose: Light and creamy with a mix of supple, soft sherry and Manuka honey. Gentle and well-balanced, there are hints of smoke, rich oak, and a little pine resin.

Palate: Medium-bodied, with notes of date and walnut cake, Oloroso sherry and hints of earthy forest floor. A beautiful note of malt, with toffee apple and a touch of smoke.

Finish: Spicy and long, notes of allspice, cinnamon and cloves, with orange zest and sherry.

A wonderfully sherried 15 year old dram from Glenfarclas, boasting oodles of dried fruit notes. It’s bottled at 46% ABV simply because this was the strength that George Grant’s grandfather preferred it at. Happily, this also results in the Speysider boasting a big, juicy, Christmas cake profile. A fabulously complex Scotch while also being easily drinkable.

Nose: Intense, powerful sherry. Cream sherry, certainly – Pedro Ximenez? almost… a touch of peppermint? An almost rancio quality to this. Smells older than 15.

Palate: Raisins, more sherry, orange peel, walnuts, dates.

Finish: Incredibly long, complex, more of the walnuts again.

Overall: Water draws out sweetness. This is Christmas cake, not whisky. Simply astonishing.

Here we have an absolute classic Speysider from a long-time family-owned distillery.

This 25 year old single malt from Glenfarclas spent its days in 100% Oloroso sherry casks. It’s complex and delicately sherried, a whisky that’s sure not to disappoint. It won gold at the 2019 International Spirits Challenge and makes a great after dinner treat. Awesome.

Nose A touch of menthol. Classic Sherry notes, less pronounced than the 15 year old perhaps, but the complexity is greater.

Palate: Incredibly clean central palate, but amazingly tangy. Really zingy top notes. Sherry and creamy barley, hints of gingerbread and nutty chocolate.

Finish: Very, very long and complex finish, oak-rich, hints of smoke, cocoa, buttery...

Overall: One of our all-time favourite Speyside malts.

Glenfarclas 105 is a superb cask strength whisky, with a history that can be traced to 1968. When the original incarnation was released that year, Glenfarclas became the first distillery to release a barrel proof single malt whisky.

The bottling was eventually re-named to 105, referring to its alcohol content in British Proof, which equates now to 60% ABV.

The 105 doesn’t carry an age statement presently, making it rare among Glenfarclas bottlings. Although, there are suggestions that it is matured for 8-10 years in a combination of both ex-sherry and ex-bourbon barrels.

Nose: Great depth, Sherry. Creamy and nutty. Honey on toast, touch of smoky coffee.

Palate: Silken, spicy and peppery oak. Almond, praline, hazelnut, dried peels, fruity.

Touch of Armagnac, hint of rancio perhaps?

Finish: Long, peppery and nutty.

Arran has soaring hills and rugged coasts, rich farmland and dense forests, all concentrated into a compact parcel floating in the Firth of Clyde between the Ayrshire coast and the Kintyre peninsula. It’s known as ‘Scotland in miniature’, as it shares some of the characteristics of the Highlands and Lowlands, the mainland and the Western Isles.

Great malt whisky is a distillation of the place it’s made. The local water, microclimate and air quality all influence the spirit as it’s distilled and matured. Isle of Arran whisky couldn’t come from anywhere else but this wee rock, of twenty miles by ten. Our whisky is the island, bottled. This geography is key to the character of our whisky. On this island, we make a spirit that reflects a range of regional influences, yet achieves a rare and unique personality all its own. Rather like the island itself.

With the arrival of our sister distillery in Lagg at the south end of the island in 2019, we are proud to be able to show visitors to our island the two very different sides to our island home. From the impressive peaks of the north end where our un-peated Arran Single Malt is distilled, to the vast agricultural landscapes of the south where our heavily peated Lagg Single Malt awaits us in a few years time, we have a lot to offer our visitors. Nose: Luscious citrus fruits

Finish: Sweetness, Apple, Citrus, Cinnamon.

Our Quarter Cask expression is a complex, rich and intensely fruity Single Malt, a cask strength delight and the perfect partner to our Sherry Cask Single Malt!

The Arran Single Malt selected for this cask strength expression was initially matured in first-fill ex-Bourbon barrels before being transferred for secondary maturation into smaller Quarter casks also made of the finest American oak. The process of transferring our whisky into the smaller 125 litre sized casks produces far greater contact between the whisky & oak and a faster, more intense maturation.

Nose: Apple tart, pineapple brioche

Palate: The citrus hallmarks of Arran welcome you, and the sweet spice of cinnamon and vanilla promises a memorable dram.

Finish: Sweetness, Honey, Pineapple, Vanilla, Coconut.

The classic fresh Arran Single Malt character with a puff of peat smoke. This Single Malt produced at Lochranza Distillery is some of the original, very first peated Single Malt that we produced on the island.

Bottled at 56.2% Vol without chill filtration or added colouring, this peated Arran Single Malt displays all the freshness of our island house style, with an added puff of smoke and earthiness. Since 2019, all peated production of whisky on the island is being done by our sister distillery at Lagg. This is your chance to buy and taste some of the original peated whisky from Arran, produced in Lochranza, before it is all gone!

Our 21 year-old is a real treat for the senses in every possible way. Fully matured in Sherry casks, this dram is bottled at 46% without chill-filtration and embodies Arran fully mature at 21 year-old. Definitely one to savour and enjoy with like minded Arran appreciators!

Arran 25yo Tasting Notes

Nose – Rich oak with a gentle nutmeg note. Sweeter aromas of baked ripe figs, sultanas and black cherries.

Palate – Fruit cake with toasted almonds and cinnamon. The juicy zestiness of oranges and mandarins mellows perfectly with manuka honey, muscovado sugar, baked apricots and an interesting white pepper note that provides even more complexity.

Finish – Creamy and spicy with dark chocolate, walnuts and dark fruits compote.

Handcrafted at our distillery on the edge of Princess Royal Harbour, this whisky was first aged in ex-bourbon American oak before maturing further in a Port cask. Prior to bottling we hydrate this whisky with pure water to bring it to an approachable 43%.

As each barrel will exhibit its own unique characteristics, creating slight variation from barrel to barrel, we utilise a solera system whereby several casks are emptied to a large holding tank and left to marry. Half of the blended batch is then sent for filtering and bottling, and the remaining half is retained and the blending tank is topped up with new barrels. Adopting this approach ensures there is a consistency of our products from batch to batch.

The average age of this product is 5 to 8 years.

Elegant and smooth, Sherry Cask 43% is a core range Limeburners expression representing the brilliance of Australian Sherry barrels.

This single malt was first matured in ex-bourbon American oak barrels for 3 to 5 years before being finished in an aged Sherry cask, imparting flavours of honeycomb, burnt orange and maple sweetness.

As each barrel will exhibit its own unique characteristics, creating slight variation from barrel to barrel, we utilise a blending system whereby several casks are emptied to a large holding tank and left to marry. Half of the blended batch is then sent for filtering and bottling, and the remaining half is retained and the blending tank is topped up with new barrels. Adopting this approach ensures there is a consistency of our products from batch to batch.

The average age of this product is 5 to 8 years.

Bold yet approachable with strong malted barley characteristics, our classic American Oak 43% expresses the essence of the Limeburners range.

Handcrafted at our distillery on the edge of Princess Royal Harbour in Albany, it has been distilled with care in our traditional small-batch copper pot stills from premium local barley and pristine local water. Our water is sourced from limestone aquifers deep below our distillery.

As each barrel will exhibit its own unique characteristics, creating slight variation from barrel to barrel, we utilise a solera system whereby several casks are emptied to a large holding tank and left to marry. Half of the blended batch is then sent for filtering and bottling, and the remaining half is retained and the blending tank is topped up with new barrels. Matured in ex-bourbon American oak barrels, Darkest Winter exudes aromas of toasted maple and freshly cut straw, with a silky sweetness, notes of crushed almond and a warming smokiness developing on the palate.

Hellyers Road Distillery is known for continually producing some of Australia’s best single malt whiskies and being a leader in peated whisky expressions. Revered around the world, but always remaining true to our sense of place.

It all began near a town called Burnie - a breath-taking landscape on Tasmania’s northwest coast - a corner of the world more accustomed to building things, growing things and milking things. Winding up and above from this town is a road. This road was once a trail.

MACALLAN DISTILLERY

The Macallan distillery was founded by Alexander Reid, a barley farmer and school teacher. The original name of the area was “Maghellan”, taken from the Gaelic word “magh”, meaning fertile ground and “Ellan”, from the Monk St.Fillan - who held a close association with the church that stood in the grounds of The Macallan Estate until 1400. Farmers had been making whisky on their Speyside farms in the area for centuries, using their surplus barley during the quieter winter months.

The reputation of The Macallan is built on a product of outstanding quality and distinctive character, founded upon a set of guiding principles. From place to process, people and passion, the Six Pillars are the backdrop to The Macallan’s unique spirit.

A rare and special discovery, this single malt is created from rare casks of The Macallan to have an entirely natural deep ruby mahogany colour, an intense sweet raisin flavour and a rich velvety mouthfeel.

The Rare Cask 2024 Release is released with limited availability worldwide.

The Macallan Classic Cut - 2024 Edition has been bottled at 52.4% ABV and features notes of vanilla, tropical fruit and lemon.

A multisensory myriad of dynamic and evolving flavours are unveiled with the addition of water, unlocking the doors within the Classic Cut universe. This whisky is anything but classic Each edition in the Classic Cut series is bottled at the Whisky Maker’s preferred strength to reveal a unique character and flavour.

In the 2024 Edition, the prominent character of the whisky is rich vanilla at full strength of 52.4%.

When water is added and the strength is reduced to 40%, tropical fruit and lemon flavours step forward. .

The Macallan Double Cask 12 Years Old forms part of our Double Cask range which marries the classic Macallan style and the unmistakable sweetness of American oak. This is a fully rounded single malt in perfect balance, with flavours of fudge, citrus and soft spice. Notes of candied lemon citrus and smooth fudge are just two of the defining flavours of The Macallan Double Cask 12 Years Old.

Looking closely, subtle hints of vanilla can be seen in the still life, with the two-tone purple chiffon fabric a nod to the marriage of American and European oak sherry seasoned casks, the defining feature of the Double Cask collection.

Lambay Irish Whiskey Company (LIWC) made its market debut in 2018 as an independent whiskey company based in Dublin, Ireland. So who makes Lambay whiskey? The company is borne from a collaboration between Camus (Cyril Camus) the world’s leading family-owned cognac producer, and the Baring Family’s Revelstoke Trust (Alexander Baring) of Lambay Island.

Both founders have ancestral lineages and shared history and came together to create a unique Irish whiskey with a difference.

This collaboration between Camus and the Baring Revelstoke Trust is inspired by and named after the island of Lambay, Ireland, a private wildlife sanctuary owned by the Baring Family since 1904.

The largest independent family-owned house since 1863, when the brand was founded by Jean-Baptiste CAMUS, these five elements have come together to form one entity: passion, ambition, determination, perfectionism, sincerity. Inseparable, complementary, together they epitomize the uniqueness of the greatest of cognac Houses.

Since 1863, “CAMUS ” has been the name of five generations of men who have handed on the reins from father to son. First was Jean-Baptiste CAMUS, the founder, then his two sons, Edmond and Gaston, the famous “CAMUS Frères,” whose name can still be seen on the labels of venerable bottles in museums and private collections.

After them came Michel, son of Gaston, succeeded by Jean-Paul, then Cyril. Each of them in turn shaped the fate of the company, following the twists and turns of the world’s progress, its geopolitical developments, economic revolutions, technical inventions… as well as the tastes of the times.

Since 1863, “CAMUS” has been the name of a family of French winegrowers enterprising enough to take their place as a cognac House alongside the established English and Irish dynasties who had settled on the lands of Cognac a hundred years earlier.

The VSOP with the deepest floral aromas in the category. Featuring in its blend some of the best eaux-de-vie from the Borderies Cru, our VSOP distinguishes itself for the high level of Terpenols, resulting into unmatched scents of fine flowers.

CAMUS VSOP is an intensely aromatic cognac, whose floral and fruity profile with notes of oak, spice and vanilla derive from a careful selection of the eaux-de-vie reflecting the quintessential flavours of the Terroir, some of which coming from the renowned Cru of Borderies. All the barrels used for the ageing are exclusively “fine grain” and low in tannins, thanks to the peculiar ‘French Light Toasting’ process, allowing to balance oakiness with fresh flavors.

This VSOP Cognac shows an elegant golden tint with amber undertones. On the nose, it reveals a perfect balance between precious tannins and fresh notes of tropical fruits, followed by generous floral tones. On the palate, it resonates with lavish fruity notes accompanied by accents of spices and vanilla.

CAMUS BORDERIES VSOP is a Single-Estate Cognac produced exclusively from CAMUS’ own magnificent vineyards in the very heart of the prestigious Borderies Appellation.

Borderies is the oldest and smallest cru in the appellation, representing less than 5% of the cognac AOC. With its 188 hectares (464 acres), CAMUS owns the largest extension of vineyards belonging to one single producer within the Cru. Thanks to their unique clay-limestone soil rich in flints, our parcels in the Borderies Cru give origin to a very distinctive Single Estate VSOP, with deep floral notes.

CAMUS COGNAC XO TASTING NOTES

On the nose the CAMUS XO cognac contains savoury aromas of bitter apricot and oranges, as well as notes of exotic fruit and a dash of deep cacao.

On the palate, it is first silky with a honey-like texture and an intense florality, a direct result of the Instensity process. Its character then gradually evolves towards spiced and toasted flavors, which come from the finishing process inside re-toasted cognac barrels. Lastly, it leaves with a long and intense finish, full of dark aromas of vanilla and cinnamon, drawn from the cognac’s long maturation inside the oak casks.

CAMUS Ile de Ré Fine Island is a Cognac like no other from the westernmost vineyards of France, with a uniquely distinctive, marine taste profile, deeply linked to its island provenance.

The calcareous and sandy soils of the Island contribute the vigor of the vines while the natural abundance of seaweed (kelp) and the sea spray wind-swept over the vineyards give a typically marine composition to the grapes, richer in iodine.

The unique island climate, windy but warmer than the continent creates also the perfect environment for a steady and consistent maturation in barrels. The result is a smooth and balanced Cognac, with marine notes that make it entirely unique in the category, best served neat, on ice or in cocktails.

Kavalan Distillery has been pioneering the art of single malt whisky in Yilan County, Taiwan, since 2005. Kavalan sources the mineral-rich meltwaters of Snow Mountain and is aged in a unique combination of intense heat and humidity together with sea and mountain breezes. All this combines to create the quality, smoothness, and fruity character for which Kavalan is known.

Kavalan takes Yilan County’s old name. A land of blessings, it was here that entrepreneur Mr. Tien-Tsai Lee dreamed of a new whisky homeland and a ‘century-old’ distillery to last generations.

Mr. T.T. Lee’s ambition to create Taiwan’s first whisky took him across the old world to the sacred distilleries of Scotland and Japan. He knew to compete, Taiwan must be world-class, and this tested every sinew of his resolve.

Kavalan brings together a highly skilled R&D team which takes on the legacy of renowned whisky specialist, the late Dr. Jim Swan. It is backed by King Car Group and its more than 40 years of beverage experience and knowledge.

Kavalan Triple Sherry Cask Single Malt Whisky is a rare combination of three exquisite sherry-aged casks — Oloroso, Pedro Ximénez, and Moscatel — with the dried fruits of Oloroso as its main character. Rich caramel and the sweetness of maltose are layered with the distillery’s unique tropical fruits to create a delicate but distinct sherried whisky that can be enjoyed on easy-drinking occasions with friends.

Flavour: Ripe, mature berries and dried fruits fill the nose, with fresh scents of grapes and citrus interlaced with chocolate brownie and toffee sweetness. Hints of cinnamon, clover and spiciness, blending into pleasant oakiness and fragrant rosemary.

The second whisky in the Kavalan Concertmaster series is aged in the distillery’s own special reserve of refill casks, then finished in the finest hand-picked Spanish Sherry casks. Flavour: Begins with a soft bouquet of sweet vanilla and toffee accompanied in the background by subtle, silky chocolate and layers of crème brûlée, made satisfyingly complex with rich, ripe dark fruits and walnut and almond nuttiness continuing onto the tongue.

Using Portuguese ruby Port wine casks as the main flavour, Kavalan Concertmaster Port Cask Finish single malt whisky is first matured in specially selected American oak casks and then finished in port barriques. The ageing in barriques mellows the flavours and adds indefinable smoothness to the whisky. It is rich bodied with natural sweetness and complexity.

Kavalan Port Oak delicately tempers the Solist Port with pure Kavalan spring water, reducing its alcoholic strength to a harmonious 43%. NIKKA WHISKY

TOKYO JAPAN

In 1918, a young Japanese man with an ambition to make genuine whisky went alone to Scotland to unveil the secret of whisky making. He is Masataka Taketsuru, the founder of Nikka Whisky. Masataka became the first Japanese ever to master how to make whisky. He enrolled at the University of Glasgow, took chemistry courses and then apprenticed at three Scotch distilleries. The two notebooks filled with every detail later became Japan’s very first guide in whisky production.

In 1920 Masataka returned to Japan with his Scottish wife Jessie Roberta (Rita). After returning to Japan, the company which invested in Masataka to learn in Scotland, had to abandon its plan to produce genuine whisky in Japan due to recessions after World War I. Kotobukiya Limited (Suntory), was in search for someone who could conduct whisky production. Being the only Japanese who knew how to produce whisky at that time, Masataka was hired by Kotobukiya in 1923. After his ten year contract with Kotobukiya, Masataka decided to become independent to make his own ideal whisky. In 1934 he went north and built his first distillery in Yoichi, Hokkaido, a place he had always considered to be the ideal site for him to make whisky. The environmental conditions of Yoichi were in many ways similar to those of Scotland.

In 1936 the first pot still designed by Masataka and made in Japan was installed and started distillation. Finally in 1940 the first whisky from Nikka was launched. The brand name of this whisky was “NIKKA WHISKY”, short for “Nippon Kaju”, which later became the name of the company itself.

A delicate balance is achieved by the skillful blending of mellow grain whiskies and slightly peated malts. With impressive floral aromas, this expression offers an extremely silky mouthfeel and fruity flavors that rise and expand, leaving behind a delightful aftertaste.

Nikka From The Barrel is a blended whisky which was released in 1985. The development of this expression started with an aim to deliver full flavors and richness of whisky like “from the barrel”, which only blenders can sniff and taste. The secret behind its gorgeous flavor is the unique combination of complex blending, higher ABV 51.4% and “marriage” process.

The iconic square bottle reflects its concept “a small block of whisky” and embodies the intense and rich flavors of the whisky inside. Long after its launch, this bottle is still timeless and recognized for its ultimate simplicity.

The complex formula is created by blending more than 100 different batches of malt and grain whiskies. After blending, the whisky is filled into used barrels and matured for another few months. This “marriage” process harmonizes all components in the formula, resulting in a mellow taste. Bottling is controlled at 51.4% ABV, almost equivalent to 90 British proof, that Nikka blenders determined through repeated experiments to achieve the ideal taste profile.

Super Nikka is a blended whisky born in 1962. Masataka devoted himself into creating this whisky soon after his wife Rita’s death to represent his deep love for her. He could never have accomplished his dream to make genuine whisky in Japan without the support from Rita.

Super Nikka is a classic style of blended whisky with gentle peatiness and hints of vanilla and sherry. These beautiful flavors are rounded and well-balanced with a smooth texture and mellow mouthfeel.

This is a signature label in honor of Nikka’s founder Masataka Taketsuru, the first Japanese who mastered whisky-making in Scotland and brought this expertise back to Japan. While being a disciplined craftsman, he was also a person of curiosity and open-mindedness. This is a tribute to Masataka from his successors, highlighting a perfect balance with complexity achieved by precise blending inherited from the founder.

A “pure malt” is a blend of malt whiskies from various distilleries, whereas a “single malt” is a whisky made exclusively from one distillery. A “pure malt” is also known as a “blended malt”.

This is an expression launched in 2020, with a refined formula and a new label design to represent the brand. While remaining a smooth and well-balanced blended malt, the formula further showcases an exquisite balance between elegant softness and deep complexity along with rich mouthfeel and smokiness.

The Coffey still is the world’s first patented continuous still invented by Aeneas Coffey in 1830. While Masataka Taketsuru was staying in Scotland, he had an opportunity to learn how to distill grain whisky in a Coffey still firsthand from craftsmen at James Calder in Bo’ness in 1919. Masataka valued the feature of this type of still and installed two sets of Coffey stills after he established Nikka Whisky. The first still was imported from Scotland to Japan in 1963, followed by the second still in 1966. These traditional Coffey stills are not easy to operate and not efficient to obtain spirits. However, they retain flavors originating from ingredients and deliver a distinctive creamy texture.

This is a signature grain whisky which was released in 2012. Predominantly made from corn, whisky distilled in a Coffey still is matured in old casks such as re-filled, remade and re-charred casks originally made from American oak to deliver the sweet and mellow flavors of Coffey distillates.

Coffey Malt

This unique expression was developed in 2013 as a result of Nikka’s continuous experiments to widen the variety and offer more excitements to aficionados. Made from 100% malted barley, whisky distilled in a Coffey still is matured in old casks to enhance the rich maltiness, complexity and a silky texture. This expression is not categorized as “malt whisky” but as “grain whisky” since it is not distilled in a pot still.

Miyagikyo Single Malt is a range of single malt expressions from the Miyagikyo Distillery. Nikka’s founder Masataka Taketsuru chose a valley in the Miyagi prefecture as the site for his second distillery, and started its operation in 1969. He aimed to make a complete contrast between the two distilleries, Miyagikyo and Yoichi, with different natural environments and production methods.

Miyagikyo malts are described as elegant and fruity. Made from light peated and non-peated malted barley, whiskies distilled in pot stills heated by indirect steam express a signature fruitiness and delicate mouthfeel.

Miyagikyo Single Malt

This no-age-statement version was released in 2016 as a permanent product that showcases the elegant style of Miyagikyo malts, when all age-statements were discontinued. This bottling has estery aromas generated by carefully selected yeast strains along with distinctive Sherry cask influence.

Coffey Gin’s complexity is achieved through the perfect balance between 11 selected botanicals and the silky texture of Coffey distillates. The bright and zesty aroma originating from four kinds of Japanese citruses, Yuzu, Kabosu, Amanatsu and Shequasar, compliments the traditional gin botanicals of juniper berries, angelica, coriander seeds, lemon and orange peels.

There is also a touch of apples, a fruit deeply related to the history of Nikka, followed by pleasantly tangy hints of green Japanese Sansho pepper on the finish.

Coffey Vodka is a vodka with flavor and texture. The secret behind this extremely smooth mouthfeel and delicate taste is the quality of Coffey distillates and the preciseness in blending.

Corn and barley are separately distilled into various batches with slight difference in ABV and taste profile. These batches are carefully blended by experts and then refined with white birch charcoal. This vodka with zesty notes, rich sweetness and milky mouthfeel perfectly captures the exquisite fullness brought by the Coffey stills.

The Nikka was first introduced in 2014, when a limited edition The Nikka 40 Years Old was unveiled to commemorate Nikka Whisky’s 80th anniversary. At just eight weeks old, he began his lifelong connection with malt whisky at Nant Distillery before moving home to Launceston four years later. The Westie Double Malt whisky is a marriage of single malts distilled at Launceston Distillery and Nant Distillery. It has been matured in French oak tawny casks and non-chill filtered to create its unique taste and depth of character. It features complex, tawny-influenced flavours of fruit and spice, a hint of peat with fragrant aromas, and a smooth finish.

Absinthe La Valote Martin

SWITZERLAND

The secret of absinthe La Valote Martin, which is handcrafted in Boveresse, Valde-Travers (Switzerland), lies in the love for the product , to its history and to its region. The “Bleue” owes its pleasant bitter taste to ten different herbs (including wormwood and Pontic wormwood, lemon balm, hyssop and peppermint), most of which are grown in the region where the “Green Fairy” provided an economic boom. This was in 1760.

The various stages of absinthe production, from the cultivation of the herbs, their processing to the distillation, contributed to the economic boom of the region at. In 1910, a ban on absinthe, which had been decided two years earlier by a popular initiative, put a drastic end to production. Absinthe was banned from illegality.

A myth was born, which was caused by the existence of numerous moonshiners throughout the 20th century . Francis Martin was one of them. Following the legalization of absinthe on March 1st, 2005, he decided to distil absinthe legally, passing on his passion for the “Green Fairy” and guaranteeing that the distillation takes place where it originates. The original recipe has remained unchanged to this day. Absinthe still enjoys the same popularity among its customers. The older generation particularly appreciates that its taste reminds them of the absinthe of their youth. In 2014 his son Philippe has taken over the distillery and continues the family tradition.

As far as Scotch distilleries go, the home of Glen Scotia has a story (and a single malt whisky) for everyone. The Glen Scotia scotch whisky distillery in Campbeltown is one with an illustrious past and irresistible present. The Glen Scotia distillery is one of the smallest Scotch whisky distilleries but one of the big names in Campbeltown, the former whisky capital of the world.

Our historical distillery still maintains much of its original design dating from the 1830s — including the mash tun, stillroom and dunnage warehouse — so our celebrated heritage and history influence the award winning whisky produced here.

At Loch Lomond Distillery we are proud to operate a whisky distilling process unique among Scottish distilleries. Not just for the sake of standing alone, but for the quality and variety of the whisky it allows us to craft. Our mashing process itself lasts 6 hours, cleaning included. This steady rhythm allows us to go through the process of mashing four times a day, each step echoing our dedication to craft and time.

But what exactly is mashing? Well, imagine a cosy bath for our grist, where hot waters beginning at 70°C and gradually rising to just under 90°C, gently tease out the starches within. This delicate dance transforms starches into sugars, an alchemical process unfolding in the heart of our mashtun. The result? A sugary concoction that we lovingly escort to the washbacks, while the solids, known as draff, embark on a different journey to serve as animal feed. We don’t believe in waste.

Hailing from Loch Lomond and headed up by none other than Rod Stewart, an impressive blended Scotch steps into the spotlight. Highland Park was founded as a side-hustle, by Magnus “Mansie” Eunson, a local church beadle and part-time whisky smuggler, who, after years of hiding bottles under his pulpit, obtained his first whisky making license in 1798. Over 200 years later, we’re still following Mansie’s lead and making whisky to our own rules, maintaining and reimagining craft traditions that have been left behind on the mainland, while embracing and celebrating the unique, subtly smoky flavour of his secret ingredient: Orkney heathered peat.

Orkney has always been a world apart. Sitting in the North Sea, at roughly the same latitude as the southern tip of Greenland, it’s a place defined not just by its awesome natural beauty, but also the creative, resourceful spirit of the people who live there.

At Highland Park, everything we do stems from this unique environment and community—which inspires us, every day, to follow our own path, both in whisky and in life.

When you come to Orkney, the first thing you’ll notice is the wind, which is, let’s say, rather bracing. In fact, it’s so strong that trees find it difficult to grow here—instead, every summer, the landscape becomes dotted with heather. On Hobbister moor, where we sustainably source the peat for our whisky, the heather has been growing for millennia, imparting its own, aromatic character to the peat itself. Highland Park is the only distillery in the world to use this Orkney heathered peat, and you can taste it in every bottle—as a subtle hint of smoke that delicately offsets, but never overwhelms the complex flavours of our whisky.

SAKE HUNDRED JAPAN

Ryuji Ikoma is one of the greatest sake influencers and innovators on the planet and the owner of one of the industry’s most exciting and forward-thinking brands, Sake Hundred.

But, at just 37, he’s much younger than your average sake brew master or businessman. He speaks with youthful energy and his round glasses make him look studious and younger than his years. He wasn’t born into the industry like so many others, either, who often find themselves reluctantly taking the reins of crumbling family breweries as their elders age out of the workforce.

In fact, the man didn’t even like sake at first.

“I was born in a suburb of Tokyo. There were no sake makers in the area and sake had no part in my life,” Ikoma recalls. “Sake frankly scared me. All I knew about it at the time was that it’s strong and not very good.”

It’s certainly a curious origin story for a man who would go on to launch Sake Times, Japan’s go-to sake information resource with thousands of articles, and Sake Hundred, a luxury sake brand that’s garnered awards worldwide and landed Ikoma in the pages of Forbes magazine as a leading sake innovator.

Our ambition is to create in our distillery New Zealand’s most celebrated craft spirits. Quality food and beverages are always best enjoyed when there’s a story behind what you’re eating and drinking. We wondered what would it take to deliver our taste of New Zealand to the spirits world?

Yoyo, the original 50 litre pot still was our initial step and for the first three years it produced the first four Curiosity Gins in the range. Yoyo is still in action and in 2019 we acquired a 500 litre still which currently produces all our gin and whisky.

Antony is our Chief Gin Officer, Master Distiller and Managing Director. Stepping out of the corporate world after more than 20 years, he was able to combine his skills in chemistry, engineering and strategy to lead The Spirits Workshop on its journey.

CHURCHILL’S

PHUKET THAILAND

Located very conveniently in the lively heart of Phuket Old Town you will find Churchill’s. This cigar bar opened in 2021 when Whisgars, a famous cigar and whisky bar in Bangkok, decided to close its outlet in Phuket. The franchisee, the British expat Richard Valentine, decided to open a new place and that’s Churchill’s.

The small bar is well stocked with high-end whiskies, great rums including Thai rum (a must try with the Chesa Veglia cigars which are blended especially for Thai businessmen. When in Thailand, try some Thai combinations pairings). The walk-in humidor has a good selection of both Cuban and non-Cuban brands and the approximately 20 seats are comfortable. Nan, the shop manager, is an excellent mixologist so don’t be afraid to ask her for a cocktail.

Sit down, enjoy a cigar, order a cocktail and watch the crowd in front of the original Phuketique, a holy grail for all tourist from the Middle East, while listening to a nice playlist of Cuban music. Churchills is Open daily from 16:00 till midnight except on Monday when the bar remains closed.

AMARIS COCKTAIL BAR BANGKOK THAILAND

Amaris Cocktail Bar in Bangkok, located in the trendy Ekamai district, is an Asian-inspired bar that combines creative mixology with a nostalgic, vintage lounge vibe. Set on the second floor of a 1960s teakwood house, the bar exudes retro charm with plush carpets, cushioned seating, and red and magenta neon lights. The cocktail menu at Amaris takes inspiration from Asian flavors, featuring signature drinks crafted with regional ingredients. Examples include the Don Mot Daeng, a chili and lemongrass-infused rum inspired by a district in Thailand, and the Hanoi, which channels Vietnamese egg coffee with a foamy coconut-torched top. The Jeollabuk-Do, a Korean-inspired cocktail, incorporates yogurt and gochujang paste for a savory, BBQ-inspired twist. Every few months, Amaris updates its menu with new seasonal cocktails, making it a dynamic spot for cocktail enthusiasts SOTRAVELER

Amaris Cocktail Bar is open daily from 5 p.m. until late, and hosts a DJ set on weekends from 9 p.m., offering an energetic backdrop for its creative drink offerings and cozy, stylish atmosphere.

MURRAY MCDAVID WHISKY SPEYSIDE

Over the past three decades, our Whisky Creations Team have been pioneers of whisky maturation. Using the finest oak casks, we have crafted thousands of unique drams, challenging the status quo in the world of Scotch whisky. Murray McDavid was established by London wine merchants Mark Reynier, Simon Coughlin and Springbank Distillery’s Gordon Wright. They quickly gained a reputation for maturing whisky in interesting casks, especially in fine wine casks.

In 2000, the Murray McDavid team set about reopening the closed Bruichladdich Distillery on Islay, engaging the services of Jim McEwan, Islay’s most celebrated Master Distiller.

In 2012, spirits giant Remy Cointreau purchased Bruichladdich Distillery and Murray McDavid. Later, Murray McDavid was sold to its current owners, leading Scotch whisky broker, Aceo Ltd.

Today, the home of Murray McDavid is Coleburn Distillery in Speyside, where we continue the tradition of bottling artfully-matured Scotch whisky.
