A moment with Polo Player Juan Bollini

‘’Realize you’re living

your life right now; not then, but now’’.

Juan is one of the youngest top players in polo and a proud brand ambassador for U.S Polo Assn.

Juan Bollini was born and raised in Buenos Aires, Argentina. His father is a professional polo player and introduced him to the sport of polo when he was 12 years old. At age 15, Juan moved to the U.S. where he continued playing polo, turning pro after one year. “Juancito has very good back shots and is very effective going to goal,” says Melissa Ganzi Female Polo Player and owner of Grand Champions Polo Club and Aspen Valley Polo Club. How did you get started in polo? Did you always wanted to become a professional polo player?

What do you enjoy about polo?

I enjoy the outdoors lifestyle and the horses.

I started playing polo when I was young because my dad was a professional. I always thought I would be a professional although I have other interests.

You’ve partnered with U.S. Polo Assn and are the Ambassador for the clothing brand, what does it mean to you?

What sort of physical training do you go through?

It means a great deal to me to be the one representing the sport of polo in the United States. Wether it be by promoting the USPoloASSN brand through photos and events or on the field, I think it's a great honor and a privilege.

I do 30 min of cardio with 30/45 of weight training How do you prepare before a match?

The preparation I do is mainly focused on the horses. Once that is organized I relax. What is your personal insider’s tip for striking the perfect hit?

What advice do you have for the next generation, particularly for those hoping to follow in your footsteps as a polo player?

Open your mind to other things that will help achieve your goals within the sport.

Strike as if you were hitting an iron in golf: straight down, the rest will follow.

Exclusive Interview

USPA Global Licensing Please introduce yourself and how did you start your career?

As President & CEO of USPA Global Licensing Inc. (or USPAGL), the for-profit subsidiary of the United States Polo Association (USPA), I oversee our entire brand’s global operations and marketing. USPAGL is the exclusive worldwide licensor of U.S. Polo Assn. apparel and accessory brand, a nearly $2 billion brand with more than 1,100 stores across 180 countries. My career started in financial services with PriceWaterhouse and has evolved over the years into senior leadership roles with global sports and lifestyle brands such as Nike, Converse, Cole Haan and Guess? I was fortunate to join USPAGL in 2017 and to begin working with the U.S. Polo Assn. brand and the amazing sport of polo. I am originally from Oklahoma, but I have lived all over the United States including Boston, Los Angeles, and New York, prior to moving to West Palm Beach, Florida where our USPAGL Global Headquarters & Creative Center are based.

What has been the biggest turning point in your career? I’d say the biggest turning point for me was being part of the Global Financial Crisis & Recession in 2008 as a new CFO while working at Nike & Converse. I learned a variety of leadership and communication skills during that time – how to maintain calm under fire, how to refocus and redirect on critical issues and how to best communicate both internally and externally during crisis. In fact, this time period in my career made me more prepared for the challenging situation we are all going through now with the coronavirus pandemic while managing a global business. Also, evolving from a finance background early in my career to driving a business from all commercial aspects including marketing, operations, business development and sales was a huge turning point. This experience is what led me to my President & CEO role at USPAGL to oversee our global brand, U.S. Polo Assn.

What are the key differences between U.S. Polo Assn. brand and other brands in the polo sport area? Most importantly, we are an authentic, sport-inspired brand and the official brand of the United States Polo Association (USPA). We are involved with polo events around the world that range from the high-goal Gauntlet of Polo to collegiate polo as well as philanthropic polo with Prince William’s & Prince Harry’s Royal Charity Cup to working with women’s and youth events. Also, we work closely with selected U.S. Polo Assn. global brand ambassadors, all polo players, to really make the brand come to life authentically in photo shoots, appearances and promotions.

U.S. Polo Assn. is known globally for its vibrant, youthful, on-trend apparel and accessories like bright polos, white denim, casual button downs, soft cottons, Americana-inspired stars and stripes and denim.

This is our niche. Amid the coronavirus pandemic, we have pivoted slightly to focus more on core apparel like polos and denim, but we are always giving our customers great looking, comfortable and approachable style that can be worn at home or out day or night. Also, we have also taken the lead in experiential shopping by opening “High Goal Energy” stores in select markets that will bring the polo experience “on the field” to consumers and fans “off the field.” Using technology like click and collect, no hassle buying, magic mirror, etc. and a smaller store footprint, this store will serve as a model for new stores to come. We also know that great brands are made available in many channels of distribution (web, social, print and in-store), delivered to consumers how and where they want it, with each channel supporting the other. We sell where the customer is, and work to make every experience, whether it’s in person or online, a great one. Finally, social responsibility is at the core of our business. U.S. Polo Assn. is one of the largest caused-based brands in the world as a large portion of our proceeds are distributed back to the United States Polo Association which is a nonprofit organization. These critical distributions help support daily operations, training programs, tournaments, polo clubs, equine welfare, and much more.

Who or what is your biggest inspiration? I have been fortunate that throughout my career, I have had wonderful mentors that have taught me not only business, but life lessons along the way. I have also had the privilege to learn from “best in class” organizations, such as Nike, on the never-ending pursuit of excellence. Finally, I believe that my rural roots growing-up on a cattle ranch in Oklahoma gave me a strong foundation that included hard work, honesty, and supporting others.

What's one thing you've achieved that you're incredibly proud of? I am very proud of my family. I have two beautiful sons, Coleman and Benjamin, and a great partner in life, Amanda. On the business side, U.S. Polo Assn. was recently recognized as the 4th largest global licensor in the world only trailing Major League Baseball, National Football League and National Basketball Association. That was a cool accomplishment that caught many by surprise, as not everyone knows our brand’s global size or outreach.

What's the biggest lesson you've learned in your career? I’ve learned to be both fact-based and instinctual and to utilize both types of decision-making regardless of the situation. I also believe battle-tested experience is extremely valuable in dealing with challenging times. At Converse during the financial crisis in 2008 I had the daunting task of leading a large organization through that crisis. While others failed, Converse became even stronger and eventually one of the most recognized global sport-inspired brands in the world. That critical experience has been of tremendous value during the covid pandemic and has enabled USPAGL/U.S.Polo Assn. to navigate these challenging times much better than most. if not all, of our competitors.

What advice you can give to others out there trying to cultivate a successful business? Be a positive and optimistic figure. Being optimistic while realistic is important as it helps to keep your team and partners motivated, grounded and focused. Also show your teams internally and your partners externally that you have their backs and that you are going to lead the business down the right path. Communicate, with your teams, your vendors, your suppliers, everyone, when times are good and even more so when times are bad. Don’t go radio silent if you don’t know the next steps yet. Communicate that you are working to solve issues and that you will update staff, partners, etc. when you have more information.

Be able to pivot and be flexible. Flex with the times, shift resources were needed and make loyal employees a priority, as they are your best resource.

I believe it is important to lead by example. Particularly during challenging times, it’s critical to use common sense and keep your wits about you. Every day presents new challenges that you could have never imagined before. Directly facing the reality and challenges ahead demonstrates leadership to your teams and to your partners. Also, as I’ve gotten older, I realize I have become a better listener. I believe it’s important to listen with the intent of understanding, not with the intent to reply. Not only is this meaningful in business, but I work to teach my boys this every day.

What is one motto you live by?

In 1978, hotelier Reto Gaudenzi formed the first Swiss polo team; in 1983, a Swiss team played an international match for the first time. 1985 saw the world premiere of a polo tournament on snow on the frozen lake of St. Moritz. In 1993 St Moritz hosted the FIP European Championship and in 1995 the FIP World Championship (on grass).

PhotoCredit: ReinhardtUndSommer_

Since the very first tournament, admission to the St. Moritz Snow Polo World Cup St. Moritz has always been free—and this includes access to the stands. Local chefs offer a wide range of culinary delights to the public. In 2020, more than 15'000 spectators attended the three days of the tournament.

THE WORLD'S ONLY HIGH GOAL TOURNAMENT ON SNOW – ESTABLISHED 1985

29–30–31 JANUARY 2021

on the frozen lake of St. Moritz What began on the snow of St. Moritz 36 years ago started a worldwide trend—nowadays, polo on snow is played across the globe from Aspen in the US and Cortina in Italy to Tianjin in China. Still, the St. Moritz original remains the most prestigious polo tournament on snow fetching the highest prize money. On the frozen lake of St. Moritz, four «high goal» teams compete for the highly coveted Snow Polo World Cup St. Moritz Trophy.

In 2020, more than 15,000 spectators experienced a world of sports, marked by elegance, speed, and the traditional British sporting spirit. Put simply: tradition – class – hospitality – emotions! The tournament culminates with the small and the grand finale on Sunday. During all matches, total concentration, dexterity, courage and endurance are required from the world’s elite players as much as from their horses. The challenge of playing on snow, the unique location at 1850 metres above sea level and the sophistication of St. Moritz combine to make the tournament one of its kind.

Text By Rebecca Baldridge Photos by ChukkerTV The World Polo League announced today that Gaston Dorignac has accepted the position of head umpire, beginning with the 2021 Florida season. Dorignac, who lives in Madrid, is president of the Spanish Polo Referees Association, holds a category A designation from the Asociación Argentina de Polo (AAP), and is qualified to officiate at a maximum handicap level of 40 goals. A native of Argentina, Dorignac comes from a family with a rich polo tradition, being the son of legendary 10-goaler and Argentine Open winner Gaston Dorignac. Prior to becoming an umpire, Gaston played polo professionally for 20 years, reaching a handicap of 6 goals. Gaston's umpiring began in 1996, officiating at up to 28 goals, and by 1999 he was umpiring in Argentina's Triple Crown of Polo at Tortugas, Hurlingham, and Palermo. By the end of 1999, he had officiated at 7 of the 8 games played in the Argentine Open in Palermo, including the final. Today he has umpired more than 20 finals in the Triple Crown, including 6 in Palermo, as well as 8 King's Cup finals in Madrid, 8 finals in the Puerta de Hierro, 5 Sotogrande Gold Cups and numerous international tournaments including matches in St. Tropez, Barcelona, Columbia and the Dominican Republic.

World Polo League founder Melissa Ganzi says, "We are thrilled to have an umpire of Gaston's standing joining us as head umpire for the World Polo League. Our aim is to offer the very best in high goal polo outside of Argentina, and Gaston brings tremendous experience to the table. With his involvement, we can continue to enhance an already incredible level of play in the league."

Says Dorignac,

"After Argentina, the WPL offers the highest handicap matches in the world. Play at the 26-goal handicap is very challenging and if you take into account players like Cambiaso, Nero, McDonough, Andrade, Ulloa and the Castognola brothers, we're talking about an epic level. This wouldn't be possible without the organization and effort from the WPL and I am very proud to be a part of this. It was a great feeling to participate in the WPL in 2019 and 2020, and I am honored to have been appointed Chief Umpire."

Co-founded by Grand Champions and Aspen Valley Polo Club owner and president Melissa Ganzi and Valiente Polo Farm owner Bob Jornayvaz, the successful World Polo League is the only 26-goal polo in the world outside of Argentina. The WPL is preserving the highest level of polo and its rich, hallowed tradition in the U.S. The World Polo League attracts a large international field of players from all corners of the world including Australia, Chile, India, Mexico, New Zealand, Costa Rica, Argentina, Canada, Ecuador, Brazil, Switzerland, France, Germany, Uruguay, Venezuela, Azerbaijan, South Africa, Nigeria and England. High glamour in Germany from Sol Angelann with love The Russian fashion brand Sol Angelann has been from the beginning highly loved by all fashionistas in the world and no one red carpet high-class event is held without celebrities wearing sparkling Swarovski crystals dresses, lovely named #diamonddress. The brand is heavily spreading out through the world, and we cannot be more than happy to finally welcome Sol Angelann in Germany. Wonderful news! Due to close friendship with the co-owners and fashion designers of the Parent company Maison D´Angelann Anna Chibisova and Angelika Svytash, and Irena Soprano - the owner of the Russian Luxury dressmaker´s Solo Atelier in the heart of Moscow city, Marina Baroness von Lison in Jan 2020 started to officially represent in Germany and Switzerland the Russian Luxury Fashion Brand Sol Angelann which creates unique fabulous dresses and readyto-wear using real Swarowski crystals in every possible color and design.

“We aim to open further boutiques in Berlin, Düsseldorf and the Swiss Zurich and Geneva as perfectly located and very well known among fashionistas from all over the world as these countries have lots of beautiful refined ladies who ideally look in sparkling diamond dresses from us. I had first several appearances in Diamond Dresses on some international events and simply fell in love with beautiful design, high quality and feminine silhouettes. Afterwards my good friend and one of 2 brand`s owners Anna Chibisova asked me if I would like to represent a brand in Germany and I was like why not? Fashion has always been one of my passions” - Marina Baroness von Lison.

Sol Angelann uses couture’s key color statements— ruby red, violet, and English green—as a springboard for velvet down-filled gala dresses, crystal-buttoned blazers and mini black dresses with epaulets, and with swarowski crystals embroidered stiletto shoes. These fleshed-out tonal groupings offered a nicely conceptual twist to the usual approach. For all their faithful customers Sol Angelann works only with trustful strong partners around the world and have now boutiques in Moscow, Kiev, Dubai, Katar, Paris and we are thrilled to announce that they offer since End 2020 sparkling dresses also in Munich, Germany.

“Why these countries you ask? The answer is very

Femininity, Elegance, Style and Glamour- it is all about Sol Angelann. @sol_angelann_germany

simple: historically the German speaking area has been always a hub for all high-class gala dinners, royal noble balls like the traditional Viennese Opera Ball, the famous Spring Ball in the German Wiesbaden with architecture from the Wilhelminian Era, charity auctions with lots of famous high society and the most beautiful and elegant ladies wearing the best haute couture dresses.”

DINH VAN PARIS PRESENTS THE PULSE COLLECTION: A BLEND OF RHYTHM AND MODERNITY ‘Le Rythme du Quotidien/The Tempo of Today’

Bracelets

A balance of minimalist lines and elusive diamonds, French jewellery house, dinh van Paris presents its elegant and latest aesthetic, the Pulse line. A blend of rhythm and modernity in a radiant tribute to light, the finely chiseled dinh van Pulse creations are reminiscent of the notes that punctuate a graceful music score. On the skin, the jewels reflecting the pulses of modern music mirror the daily pace of life for the discerning and independent women of this world. Soft yet indulgent monochromes of white and rose gold echo the philosophy that elegance is simplicity of the highest standard. Rings, bracelets, earrings, and long chains paired with slender rectangle pendants stand as the staple pieces of the Pulse collection. Sporadic hollow lines, encrusted with diamonds illuminate each shape, giving the pieces an erratic rhythm.

A CONTEMPORARY JEWELRY Since its origins, Maison Messika has succeeded in combining the timelessness of the diamond with a modern touch. Diamond jewelry in a contemporary style to be worn every day. From its very first collections, the jewels that took shape in Valérie’s imagination and in the skilled hands of her artisans, goldsmiths, stone cutters and setters were exciting and exuberant, revolutionary yet underpinned with a deep reverence for her legacy, and driven by her personal passion for the king of gems. Much of Valérie’s inspiration comes from art, playing with a Calder sculpture in her father's office, absorbing from his collection various details of line, movement, colour, composition, which have shaped her overall sense of form and proportion. Inspiration clearly also comes from street style, imbuing Messika Jewelry with a dynamic urban beat. She draws inspiration too from fashion, haute couture, and from the great classical themes of jewellery history, which are contemporised and rejuvenated through her vision.

From the unconditional purity of the diamond, to the clean designs that enhance it, Messika is always in search of the essential.

PURITY OF THE DIAMOND

Since its creation, Messika’s passion has always been to adorn women and their sensitivity. By combining these colourful stones with a mantra linked to modern femininity, the Messika Maison lays the foundation of a personalityrevealing vocabulary. This year, the Lucky Move MM diamond necklace, inspired by lucky medallions, is embellished with coloured stones.

This diamond talisman featuring a variable geometry is now available in a palette of nine nuances to shine light on these fine and organic stones: from onyx to lapis lazuli, passing through malachite, mother-of-pearl, white or grey, turquoise, and carnelian. Or even the essence of subtly marbled ziricote wood. Meticulously selected, each coloured stone embodies a unique energy, a positive expression or a mantra to adopt according to your personality: “Tell me who you are, I’ll tell you which Lucky Move Color necklace is for you”. For the first time in its history, the Messika Jewelry and High Jewelry Maison makes an exception to its exclusive use of diamonds in its jewelry collections. Enigmatic, free, daring... What kind of woman are you? It’s up to you to choose the Lucky Move Color diamond necklace that symbolises what you are or who you want to become.

The Birth Place of Modern Polo

MANIPUR

Having been born and brought up in India’s North Eastern state of Assam, from my childhood I heard stories from my uncle and aunts on the game of Polo and how it originated in India’s remote North Eastern state of Manipur. I never gave much importance then. But today on the hindsight, the manner in which Polo has evolved as a sport of the rich and the famous, I feel fortunate enough to belong to that region from where Polo originated and to be able to offer a glimpse of this exciting game to the discerning global Polo aficionados. Far removed from mainland India, Manipur is located in the northeast India and is bordered by Nagaland to the north, Assam to the west and Mizoram to the southwest. On the south and east, Manipur is surrounded by Myanmar. The capital of Manipur is Imphal, a city with a rich virile past and a vibrant cultural melting pot. Manipur is often referred to as “The Jewel of India” because of being encircled by nine hills with an oval shaped valley right at the center. The Guinness Book of Records in its 1991 edition on page 288 writes "Polo: Origins: Origins of Polo can be traced to origins in Manipur State c. 3100 B.C. when it was played as Sagol Kangjei". In fact the Manipuri Pony is one of five rare equine breeds in India and equestrian experts are of the opinion that the Manipuri Pony is a descendant of the renowned Mongolian Pony - a combat horse that is steeped in legends, mythologies and folklore. Legend has it that King Kangba invented the game way back in 14th century BC, and in 33 AD., the first ever polo match was organized by King Nongda Pakhangba. In popular Manipuri folklore, there is mention of this unique game and the fact that even celestial gods of the Hindu pantheon were delighted by the foundation of this game, which they regarded as the victory to the erstwhile Meitei kingdom of Manipur. Today, as it was the precedence centuries back, people of Manipur have the belief that the Manipuri Polo rules were crafted by none other than “Marjing - The God of Polo”.

A Traditional Game of Polo

Sunil Kumar’s polo mallets

In the 1850s, when India was ruled by the British East India Company, British soldiers and tea planters, on their way to Silchar came across a motely crew of Manipuri princes’ indulge themselves in a game that looked like playing hockey on horseback. They were stupefied by the sight of men wearing turbans and clad in traditional “pheijom”, shin-guards and brandishing mallets engrossed in an exciting sport. In the modern times the British who are so enamoured by this great game, first took the lead role and brought the game out in the open, albeit a Polo Game in the year 1853 under the watchful guidance of Capt. Robert Stewart, who then was an integral part of the British Cavalry. This is recorded in the anals of Polo as the first official game – British East India Cavalry, Vs Manipuris! And the spirit of enterprise shown by the Britishers meant that in a span of just six years, in the year 1859, Col. Joseph Sherer, set up the world’s first polo club - The Silchar Kangjei Club.

And the rest as they say is history – the game of polo began to spread its tentacles in the rest of India. Needless to say, UK was the first nation in the Western world where the first game of Polo was played, courtesy Edward “Chicken” Hartopp at London’s renowned Hounslow Heath in 1869.

International polo match at the Mapal Kangjeibung ground

Polo historians are of the opinion that it was after 1869 that connoisseurs of the game came together to formulate the rules under the stewardship of London’s Hurlingham Club that would go on to govern this great game. Today, thanks to the pioneering spirit of sportsmanship shown by many nations, the game that originated in one little speck of paradise in India’s remote North East – Manipur, is today played in more than 70 countries! What is more, in spite of being one of the hardest equestrian sport, Polo has evolved so beautifully over the past century and more that today this game which grew from its humble origins in the Indian state of Manipur is today associated with the rich and the famous. The modern day Polo game ambience is best summed up by Polo enthusiast Jeannine Clark thus – “Finely-dressed men drink vintage champagne from tall flutes, while women in designer hats nibble on fresh fruit and croisant sandwiches from tables covered with white linens. As they sit and sip, they while away the afternoon watching one of the oldest and fastest team-sports in world history. A scene from a Merchant Ivory film, perhaps? No it's just another summer Sunday at the San Diego Polo Club in Rancho Santa Fe, California” . That’s the kind of excitement that prevails in high profile Polo matches. One the one side you have the glitz and glamour of the audiences under the tent and on the other hand you have players dressed in colourful attires pummelling the field on horseback.

According to Bill Askins, an experienced Polo player with years of experience under his belt –

“It certainly helps your polo career if you have a lot of money to spend on the sport! To play top polo takes courage, athletic ability, real riding skills and a lot of time to devote to the sport! Very few people have these prerequisites so it limits the number of participants in this magnificent sport. In the USA there are now about 3,000 people that play on a regular basis”.

Today, as a much published travel writer and born in India’s Marlboro Land – The North East, it is a matter of pride when I see great strides being undertaken, particularly by women folks in the birthplace of Polo! Huntre! Equine – a social welfare organization credited with linking women Manipuri Polo players with the Western world, US to be precise, is the stuff of legends. Polo linkages aren’t all that easy, even more so when it involves a Third World country. The costing part is especially tough and not many are eager to sponsor. But, beating all odds, Huntre!Equine has managed a miracle – organizing Polo matches by inviting American Polo players to participate in games involving Manipuri women Polo players. Needless to say – Its a marriage made in heavens!

A warm-up before the game

As the astonishing success of Manipur’s Huntre! Equine’s landmark effort spread worldwide to the discerning Polo audience, the unsung stories of M an ip u r ’s w o men p o lo p lay er s h av e n o w metamorphosed in the form of a movie – “Daughters of the Polo God.” This 33-minute inspiring documentary by Roopa Barua, won the highest honour at the New York Equus Film Festival - the Festival Director’s Award as well as the Best Documentary Short Award at the prestigious Film Festival in 2018. If all goes well, the film is listed to be screened across the U.S. this year.

Manipur isn’t just about Ponies & Polo. In fact, its a multi-ethnic state and the hills are inhabited by fascinating tribals - the Nagas, Kukis, Rongmei (Kabui), Simte, Suhte, Tangkhul, Tarao, Thadou, Thangal, Vaiphei, Zeme .......A veritable Anthropological hotspot to say the least! Consider for instance the Ao Nagas. After marriage the bride and the groom leave their family of orientation and establish a new family. The Ao Nagas do not practice polygamy. As a family unit they live in complete harmony. If a younger member of the family quarrels with a senior person of the family, it is believed to be ominous not only to the family but also to the village as such.

Ao Nagas also have clans and they are patriarchal and exogamous. The ‘Morung’ or Bachelor’s Dormitory plays a vital role in the social life of the Ao Naga village. Most ‘Morungs’ are fine work of craftsmanship. It serves both as a guardhouse as well as a clubhouse. The women are forbidden to enter inside a ‘Morung’. The young boys are admitted into the ‘Morung’ every three years to get trained practically in order to become a perfect man in all spheres. Visitors intending to visit Manipur would do well to coincide their trip during the annual Naga Hornbill Festival http://hornbillfestival.com/ , which is a weeklong celebration showcasing the very best of Naga tribal culture and heritage. The Festival is held in the month of December at the charming village of Kisama in the neighboring state of Nagaland. The theme of the festival is very apt – “Window to Nagaland”. Apart from the Hornbill Festival, Manipur has numerous other ethnic festivals that are held with great pomp and grandeur. Check out with the Tourism Department for exact dates.

There is a sense of mysticism associated with Manipur, which has been further heightened by its remoteness and geographical isolation. One can not only savour the ancient animist practices, but if for instance, one were to embark on a jungle expedition, the lure of bonding with some of the most fascinating tribes on planet earth would invigorate even the most jaded of travellers. As Manipur is emerges as a centre of polo in India, here is wishing the discerning global traveller a journey of stupendous dimensions. Are you up for the RIDE?

Landscapes & Country-lifestyle

ine Dining in the

Lake District Text by Laura Pearson-Smith

The Lake District is already a top tourist spot in the UK, for its enviable landscapes and country-life vibes. It’s where Peter Rabbit runs through the fields and Jemima Puddle-Duck takes a dip in Lake Windermere. It’s gentile and traditional, and it’s no surprise why Beatrix Potter got such inspiration from her surroundings. Despite its vast population of tea rooms and country pubs, there are also some incredible luxurious fine-dining spots; making it truly a vacation spot for all. If you want to taste some of the finest and most innovative dishes in the country, these Lake District establishments are where to head to.

Lunch Henrock at Linthwaite House, Bowness-on-Windermere BBC 2 Great British Menu chef Tom Barnes, born and raised on Cumbria’s Furness Peninsula, oversees the stoves at Henrock. He began his culinary journey straight out of school aged 15, when he became a chef apprentice. In 2019 he was appointed as Simon’s Rogan’s Executive Chef for the North-West, looking after the entire portfolio of restaurants in the Lake District to include L’Enclume, Rogan & Co, Aulis Cartmel and most recently Henrock, which opened in 2019 within Linthwaite House Hotel. At Henrock, he has been crafting a selection of new dishes to include an all-day menu centred around seasonal snacks, small plates and sharing plates. Many of the dishes that feature have been influenced by the techniques and produce discovered on the team’s travels around the globe, but inevitably Tom’s passion for seasonality and Lake District produce is ever present.

Forest Side, Grasmere

This is also true of the Henrock afternoon tea and accompanying array of seasonal cocktails, which make full use of the ingredients grown and harvested at Our Farm, Simon Rogan’s 12-acre farm located just a few miles away in the Cartmel Valley.

This is every foodie’s heaven and as boujie as breakfast can get. At the heart of the menu here is its focus on fine local produce and foraging for ingredients. It’s overseen by local Cumbrian chef Kevin Tickle, so the menus are a love letter to the nature that surrounded him as he grew up. Tickle picks and forages a lot of the ingredients in his dishes himself and most come from within 10 miles of the restaurant. Forest Side is where local really means local.

Henrock’s elegant Lounge, Bar and Conservatory sit in an enviable position perched at the top of Longtail Hill. Surrounded by landscaped gardens with stunning views looking out over Windermere and the distant Coniston fells, it provides the perfect setting in which to relax and unwind, take in the stunning vistas and delight in the delicious array of dishes crafted by Tom Barnes and his team.

Breakfast

The restaurant only opened in 2016 but was awarded a Michelin star after just one year. Not surprising when Kevin learnt his craft at Michelin starred Sharrow Bay Hotel by Ullswater. When having your first meal of the day at Forest Side, their homemade granola is a must-try. However, for those who like a traditional cooked breakfast, it’s given that luxe spin with foraged wild mushrooms, Bannerigg Farm duck eggs, Slack’s Farm bacon and Cartmel Valley smoked salmon.

Afternoon Tea HRiSHi at The Gilpin, Windermere Afternoon Tea at Michelin starred HRiSHi is a real experience and an enjoyable assault on the palate. Priced very reasonably at just £45 for two, their Afternoon Tea is one that guests remember for a long-time to come. Incredible bite-sized savoury tartlets, gourmet sausage rolls and sandwiches sit alongside the freshest miniature scones and sweet patisserie delights. HRiSHi is named after its chef Hrishikesh Desai, who mixes local Lake District produce with Asian spices from his Indian heritage, to create British food with a twist. Desai was the winner of Alex Polizzi’s BBC2 Chefs on Trial and is one of the few chefs to have won both the Roux Scholarship and the Craft Guild of Chef’s National Chef of the Year award.

Dinner Burlington’s at Beech Hill Hotel & Spa, Windermere The hotel itself is in need of a refurbishment; but the restaurant is the diamond in the rough. Burlington’s has spectacular views over Lake Windermere and waiters deliver fresh canapes to diners in the lounge, while they peruse the menu and make their choices. Chef Lukasz Zebryk overseas the menu, which changes daily according to local produce availability. Lukasz Zebryk trained in his home country Poland, but his influences are very much Mediterranean. He has worked in many award-winning kitchens across the North of England and has a real passion for fresh, locally sourced British produce. Burlington’s prides itself on his expertly presented, aesthetically exquisite dishes and although menu options change daily, one selection that’s always present is their grill – steaks made with the finest British beef and served with proper hand-cut chips and a choice of delicately flavoured sauces. It’s as gourmet as this classic British dish can get.

@gilpinhotel

Burlington’s also has an extensive 5-page wine list, full of choices that sit perfectly with all their creations. When dinner is over, guests can move outside to the terrace to enjoy the sun setting over the lake with a glass of red.

Reimagining Cambodia Astonishingly exotic and graced with some of the finest temples on the planet, the Kingdom of Cambodia is a mysterious place with rich history and a huge heart. With luxurious boutique hotels opening all over the country, Cambodia is rapidly blossoming into a jetset destination, dazzling its guests with awe-inspiring nature, rich cultural offerings and enchanting architecture.

Uncharted - Shinta Mani Wild

The adventure begins as soon as you land in Cambodia. Fast-tracked through immigration to a waiting helicopter, you will be whisked up and over the jaw-dropping landscape to the entrance of the camp.

Imagine yourself on the private deck of an opulent tent draped in flamboyant style and surrounded by one of the least explored rainforests in Asia. This is Shinta Mani Wild, an exclusive wildlife tented camp nestled in the heart of the Cardamom Mountains. The whimsical brainchild of hotel designer Bill Bensley, it tells a bewitching story of the golden age of exploration by using wooden sculptures, refurbished vintage sofas, ornately framed mirrors and vintage leather suitcases. The interiors have been meticulously crafted to evoke Bensley’s vision of what it might have been like to be on luxury safari in the jungles of Cambodia with Jacky O’, who travelled throughout the Kingdom with King Sihanouk in 1967. When it comes to dramatic arrivals, nothing quite beats the 400m zip-line entry into Shinta Mani Wild. As soon you step into the air, you are entering a magical world of Bill Bensley where nothing is impossible and everything is already included in the rate. Upon arriving “Indiana Jones style” in the aptly named Landing Zone Bar you will be greeted by the your personal Bensley Butler, an elite hospitality professional, who will ensure a flawless stay where everything is exactly as it should be. There is no such thing as a typical day at the camp. The tented retreat is a giant kaleidoscope reflecting your lifestyle and personality and turning it into a bespoke experience. Wake up to the sound of the river and start your day in style with a floating breakfast served by a waterfall. Nothing says “good morning” like lemon soufflé pancakes topped with blueberries and paired with a butterfly pea macchiato.

Bensley Collection – Shinta Mani Wild Room rates start at £1500++ and include all food and beverages, private guided activities and excursions, personal butler, unlimited spa treatments, laundry and land transfers from Phnom Penh or Sihanoukville airports. All helicopter transfers are additional. A minimum 3-night stay is required. The minimum age for check-in is 10. Rates and inclusions vary depending on the room type and package. Please inquire directly www.bensleycollection.com

Spend your morning traversing rivers and waterfalls aboard a custom designed expedition boat, foraging with the chef for your dinner ingredients or join the Wildlife Alliance rangers on their daily anti-poaching patrol. Back at the camp, the all-natural Khmer Tonics SPA will be waiting to spoil you with unlimited treatments, enhancing the wild experience even further. Massage rooms are set high up in the tree canopy amid dramatic natural boulders but you can have your moment of relaxation anywhere you desire. Treat your inner escapist to a riverstone foot massage by a waterfall or experience traditional Khmer art of healing in the privacy of your tent. A Cambodian take on tenkara, a meditative form of Japanese catch and release fly fishing, is just another way to unwind and get ready for the most exotic golden hour experience.

Once you arrive at a surprise sundowner location, which is different every day, you will find a vintage Land Rover ingeniously transformed into a pop-up cocktail bar and manned by attentive Bensley Butlers. Shinta Mani Wild's General Manager, Sangjay Choegyal, makes a dashing host. Having grown up at Tim Edward’s Tiger Tops Lodge in Chitwan, Sangjay is the thrice world elephant polo champion and a cofounder of The Mutton Cup, an exclusive “invitation only” annual polo tournament held at the the luxury Genghis Khan Riding and Adventure Camp in Mongolia. It’s hard to imagine a better companion to share your love for the art of polo, and perhaps a few cocktails, while watching the sun set over the jungle of Cambodia. In the evening, change into something a little more Jackie O and join fellow adventurers for the dinner extravaganza at the open-air Waterfall restaurant. A team of young homegrown chefs will serve a local and international set of rotating menus offering a modern twist on classic Khmer dishes. Be it elevated scallop amok or humble Phnom Penh noodles, every meal at the camp is carefully curated to introduce you to something unknown.

A day of adventure deserves the perfect closing scene, ask your butler for a romantic turndown service: a decadent outdoor bath under the Khmer stars. While the wildlife retreat offers a unique camping experience with an ultra-luxurious edge, it’s true purpose is to save one of the greatest wilderness areas in Southeast Asia. As a new leader in responsible tourism, the camp is paving the way for the next generation of jetset travel, proving that luxury and sustainability are synonymous concepts. Shinta Mani Foundation strives to empower local people with disadvantaged backgrounds by offering them training and long-term employment. The camp is working to rehabilitate loggers and poachers by educating them on the importance of conservation, and offering a purposeful alternative for their skills: two-thirds of staff come from the surrounding villages. Wildlife Alliance daily patrols, commissioned to release animals from snares and prevent poaching and logging, are funded by the guests stays at the hotel. Shinta Mani Wild is the place where the words “travel with purpose” are most heartfelt, you will fall in love with the camp and the Cardamom rainforest, and the passion that's saving it. A visit to Cambodia would be incomplete without exploring Siem Reap, the charming gateway into the crumbling world of the lost Khmer empire. You will find it hard to leave the great wilderness but there is good news: your Bensley Collection – Shinta Mani Siem Reap private pool villa is already set up for you!

The ten exquisite two-storey pool villas are located in the heart of Siem Reap’s old French quarter, and are the perfect place to base yourself for a visit to the Angkor temples. Should you wish to watch the sunrise over the sacred temples or enjoy an Apsara performance while having dinner on the rooftop sky lounge, or to sleep under the stars, your Bensley Butler will take care of it.

Don’t miss a chance to receive a traditional blessing by a Buddhist monk in Angkor Wat temple.

Temples of Angkor The Big Three Dating back to the 7th century, the crumbling stones of Angkor temples keep the ancient secrets hidden beneath the layers of history. The enigmatic tales of the Khmer empire we might never know. Angkor Wat, Bayon and Ta Prohm temples are the famous “Big Three” but, swallowed by the jungle, there stand many more obscure temples, and visiting the sprawling ancient city with a knowledgeable guide can keep you busy for as many days as you can spare. Though just one of hundreds of surviving temples and structures, Angkor Wat is undoubtedly the jewel in the Khmer archaeological crown. Originally built in the early 12th century as a Hindu temple dedicated to the god Vishnu, it was converted into a Buddhist temple in the 14th century, and statues of Buddha were added to its already rich artwork. This is a place where the teachings of Hinduism and Buddhism exist in a unique spiritual balance. As the sun rises over the horizon, the silhouettes of Angkor, shrouded in the ever-changing hues of the rising sun, become increasingly visible. Capture the iconic sight on camera or simply meditate in the moment whilst taking in the view of the world's largest religious structure.

Bayon, the second most popular temple in the Angkor complex, epitomises the creative genius of Cambodia’s most celebrated king, Jayavarman VII. It was built at the end of the 12th century as a replica of the Khmer empire, with its 54 towers representing the 54 provinces of the kingdom. The smiling statues of Bayon temple are something extraordinary. With all 216 faces having individual expressions, ranging from calm to happiness, their eyes seem to follow you around as you explore. Known for representing the intersection of heaven and earth, Bayon is the most mysterious temple of Cambodia.

Built in the late 12th and early 13th centuries at the height of the Khmer empire, Ta Prohm is undoubtedly the most atmospheric ruin of Angkor. The temple captured international attention when scenes of the ancient city were screened across the world in Lara Croft: Tomb Raider. The giant roots of fig and banyan trees holding the temple with a mighty grasp, create a beautiful illusion of how Angkor would have appeared when first rediscovered by French explorers in 1860. A perfect balance between order and chaos. So much more than just its temples, Cambodia has a lot to offer to those who are willing to dig deeper. Find your own roots of adventure in the great wilderness of the Cardamom Mountains, the maze-like corridors of ancient temples or intricate moves of dancing Apsaras. It seems that time goes by slower in Cambodia, giving you a chance to contemplate experience and transforming your trip into a life-changing adventure: authentic, immersive and deep.
