POLO News PALM BEACH OPEN Casablanca defeated Richard Mille 12-9 to capture the title in the Palm Beach Open. Richard Mille (Marc Ganzi, Jeta Castagnola, Pablo Mac Donough, and Paco de Narvaez) met Casablanca (Grant Ganzi, Juancito Bollini, Barto Castagnola and Juan Martin Nero) hoping to continue their 2021 WPL season winning streak. Richard Mille took command of the field in the first chukker, with Paco de Narvaez scoring the first goal of the day just under a minute into play. Barto Castagnola converted a Penalty 2 to even things up, but Pablo Mac Donough put Richard Mille back in the lead. With just over two minutes on the clock, Jeta Castagnola took the ball out in front and ran to the posts, tacking on another goal. Leave it to a ten-goaler though, to spoil dreams of glory - at the 30-second horn, Juan Martin Nero put Casablanca back up by two goals. As the last chukker began, Paco de Narvaez passed the ball to Jeta Castagnola to finish, putting Richard Mille in striking distance once again as Casablanca's lead was cut to one goal. Barto Castagnola took control of the ball and ran it downfield, passing it to Grant Ganzi to finish. A final shot by Barto Castagnola ended the match 12-9 for Casablanca to claim victory. Said Juan Martin Nero after the match,

Exclusive Interview with luxury expert

Alyne Hansen-Damm Tell us a bit about yourself, how did you start your career and entered the luxury sector? Client service and luxury have been running through my blood from birth, as I come from two generations of hoteliers and restaurateurs. My grandparents owned a charming alpine hotel perched on top of a snowy mountain in a small ski resort near Grenoble in France. And my parents had a well renowned local gastronomic restaurant, where my dad was the head chef whilst my mum was running the front of house. I started my career working in several five-star hotels around Europe, including the renowned Hôtel de Crillon in Paris where I was then the youngest manager the hotel had ever had. Place de la Concorde made way to Place Vendôme where Van Cleef & Arpels and later Boucheron on Bond Street opened their safes and the secrets of high jewellery and precious stones to me. I spent nearly 15 years surrounded by the most stunning creations and spectacular gems, managing stores and leading teams, organising exceptional events throughout the world, guiding clients in creating magnificent and unique special orders, and helping them curate one-off private collections. Then came Haute Couture, where creativity meets tradition with innovation. I joined Ralph & Russo in their Mayfair townhouse and lead the Haute Couture Sales Team with incredible passion for five years.

I felt immediately at ease with the intricacy of the hand embroideries, the amazing colours of the fabrics, the stunning one-off designs and the perfectly constructed pieces, which were sculpted by the atelier team to the client’s exact measurements and requirements. At every fitting, the relationship with the client was taken to a whole new level. Lockdown made me re-evaluate my work/life balance, and I decided to set up my own company, as a freelance luxury brand consultant and style advisor, which allowed me to spend quality time with my husband and children. I now work on strategic and operational projects with incredible brands, such as Haute Couture Maison Schiaparelli, Fashion Brand Safiyaa and contemporary Fine Jewellery Collective Auverture, whilst advising my clients on luxury and lifestyle.

How has the luxury sector changed over the years you are working in these field? When I started working in luxury, the values were around exclusivity, elitism, rarity and opulence. These were far from my own values and I decided to always stay true to my original principles. I strove to bring warmth, friendliness, humility and genuineness to the companies I worked for. I found that in my 25 years in luxury the focus had mostly been on the product, its attributes and the marketing campaigns. But I don’t think brands appreciated the importance of the client experience, nor the salespersons’ value in building and maintaining durable and meaningful client relationships. I think that this mentality is now changing, as clients care more about transparency and sustainability. Luxury today has moved towards craftsmanship, authenticity, meaningful experiences and individualisation. And luxury brands, who were always quite reluctant to embrace digital channels, now have to make rapid changes to accelerate the e-commerce route.

The most interesting people you’ve met through work and interesting places your job has taken you? I’ve met thousands of incredible people in my career, celebrities, billionaires, royals, politicians.... I’ve done fittings and held client appointments in the world’s most beautiful palaces, homes, 5-star hotels, and even onboard super yachts... One of the highlights was probably speaking to Aretha Franklin on the phone one evening about a dress she wanted my help in creating and which she was going to wear at an event to honour Barack Obama.

When I asked if she could travel to London for her fittings, she laughed and said “I am afraid of flying, but I am working on regaining my wings, so I can come and see you lady!” She made me feel so special. But the most interesting and amazing people I’ve met and those who shaped my career were artisans, couturières, stone setters, embroiderers, chefs, gold polishers, pattern cutters... who bring the designs to life and serve the client, with so much passion and love for their art and craft. What does luxury mean to you? Luxury is not about the price tag, opulence, excess and servitude. For me luxury is about emotions and relationships whilst delivering a unique and beautiful product and experience. I believe clients seek to understand and relate to a brand’s craft and expertise, as well as their essential values, especially around social and environmental responsibility. They want transparency, authenticity, to feel an emotional connection, and intellectual investment in the pieces they purchase. Luxury brands that want to retain their status in the luxury market need to evolve to keep up with this growing trend towards ethical and sustainable luxury, in an honest way. What is one motto you live by?

“Smile, and the world smiles with you.” I always try to radiate happiness and positivity around me and make it a daily challenge to get a smile out of everyone I meet. And for me, receiving a genuine smile back is the greatest luxury of all. @alyne.hansen-damm

JEWELLERY & WATCHES

Keeping time on the world of fine jewellery and luxury watches, from interviews to the most wanted and exclusive timepieces and jewellery

Garrard’s new Fanfare Symphony jewels bring a bold new look to a much-loved collection

Injecting bold colour into the new year, Garrard has expanded its popular Fanfare collection with a new range of refreshingly contemporary Fanfare Symphony jewels. Each piece contrasts the vibrancy of the House’s signature coloured gemstones with the unique beauty of ornamental hardstones.

Garrard_Fanfare Symphony pink tourmaline, diamond and pink opal earrings in 18 carat white gold

Garrard_Fanfare Symphony sapphire, diamond and lapis lazuli ring in 18 carat white gold

The original Fanfare collection was inspired by the precious fans carried by guests at the opera masquerades that were the height of fashion in London’s theatre district when Garrard opened its first boutique there in 1735. For the new Fanfare Symphony jewels, Garrard’s designers revisited these spirited masquerades, interpreting instead the symphony of colour unleashed as ladies swirled around the ballrooms in their extravagant gowns. Looking to expand the theme of colour that infused the original Fanfare collection, Garrard’s designers turned to the diverse world of hardstones for an exciting new palette with which to work. Creating mood boards featuring different combinations of gemstones and hardstones, they narrowed them down until they were left with the most harmonious pairings.

Garrard_Fanfare Symphony aquamarine, diamond and turquoise pendant in 18 carat white gold

Next, they set to work designing the jewels – more than 40 in total – finessing their sketches until they had achieved the perfect balance between the opacity and tonal variations of the hardstones and the fire and translucency of the coloured precious and semi-precious gemstones. Only then could Garrard’s craftspeople begin their task of bringing them to vivid life.

The gemstone and hardstone pairings in the Fanfare Symphony collection are a captivating reminder of this fun-loving period in Garrard’s history. Designed to accentuate the primary hue of each jewel, pink tourmaline is combined with pink opal; emerald with malachite; sapphire with lapis lazuli; aquamarine with turquoise; yellow sapphire with cachalong; ruby with hematite; and white diamond with motherof-pearl. Retaining the generous size and strong silhouettes of the original Fanfare Classic jewels, these creative combinations trace the outline of each Fanfare motif, with the carved hardstones set alongside faceted pavé gemstones. A more stylised Fanfare silhouette has been introduced into these new jewels, which have been created to be worn anytime, anywhere. Distinguished by bold flashes of hardstones set to mimic the pleats of a fan, it appears on stylish Fanfare Symphony stud earrings and delicate pendants, together with asymmetric rings featuring two delicately angled fans that sit side by side upon the finger for double impact (image left). The Fanfare Symphony jewels are a beautiful evolution of the Fanfare collection, which launched in 2018 and quickly became one of Garrard’s strongest-performing collections.

“The Fanfare Symphony collection celebrates the wonderful diversity of ornamental hardstones, which have such a different look and feel to traditional gemstones,” explains Sara Prentice, Creative Director at Garrard. “The array of new designs brings an exciting dimension to the collection.”

Camilla expresses her passion for horses through her jewellery design

The British Stable With Global Recognition Camilla Cottle is the talented designer behind the British contemporary jewellery brand, The Silver Stable. Despite being an emerging brand name, they already have clients worldwide including Toyoko and New York and have been featured in numerous luxury titles including Tatler Magazine. I caught up with Camilla to find out more about the entrepreneur behind this exciting new brand. What drew you to become a jewellery designer and inspired you to start with your own brand? "Design has always been a strong pull for me creatively speaking. My former career was in food research and development, which took a product from concept right the way through to design to the finished product and on to the shelf. Whilst on maternity leave, I wanted to challenge myself and learn a new skill. By chance, I came across a silversmith jewellery workshop, and it was there and then that I realised I had found my mantra. I instantly fell in love and knew jewellery design was for me. To begin with, I made pieces for myself. However, soon I was making pieces for friends, then friends of friends and the business just evolved from there. I never looked back. I set up The Silver Stable in March '20, and we have grown steadily ever since."

Sterling Silver MINI Disc Necklace with Gold stirrup charm

What are some of the materials you use in your jewellery collection? "We only use pure sterling silver and solid 9ct yellow gold. I am a perfectionist in every respect, so the same naturally goes for the materials I use. We don't use gold plated or gold filled or cheap foreign silver." "We want our pieces to stand the test of time and to be able to be worn time and time again. Poor materials tarnish, lose lustre and their allure over time." "As a forward-thinking business, sustainability is paramount in the business model. We only use recycled sterling silver and 9ct gold to create our collection, and each piece is handmade and made to order for clients, so there is no wastage. Even our luxury gift packaging is FSC certified, which means that all the materials come from an FSC forest, where no more wood is cut down than the forest can reproduce. These eco aspects are incredibly important to me, not only as an ethical business but also as a young child's mother." "Just as my jewellery design is created with thought and longevity in mind, so are the practical and physical aspects of my business."

Who or what is your biggest inspiration? "Any female entrepreneurs that have built successful businesses are inspirational to me. One, in particular, is Jade Holland Cooper. Jade built her business from nothing into a multimillion clothing brand finding and still maintaining a niche in the market." "My lifelong love of horses is evident throughout my designs. I am inspired by classical equestrian themes translated into elegant contemporary design without being overt 'horsey'. My clients are not necessarily riders, but all are purveyors of luxury designer brands, many of these brands have a strong equestrian heritage. For these clients, our jewellery embodies everyday luxury and enduring style."

You turned your hobby and passion into a business, what advice can you share? "Don't doubt yourself or your ability. It takes a lot of courage to take the plunge, make a career move or just to start a business." "Make sure you remain true to yourself and always believe in the business you are running. Be involved with every level of the business, regardless of how big you grow. While my team has grown, I am still very much hands-on across the business, not just in the jewellery design and handcrafting process. Turning my hobby and passion into a business means I wake up every day looking forward to going to work, sitting at my workbench, creating beautiful jewellery for our clients."

www.thesilverstable.co.uk

"You didn't come this far, to only come this far- just keep going."

What's the biggest lesson you've learnt in your career? "That things aren't always going to go right. You will make mistakes in the beginning; its only natural. Try to learn from them and not dwell on them. Remain true to yourself and believe in the products you are creating; If I wouldn't wear it, then I wouldn't want to create it."

Winch Design realises its first ever commercial project: an ultra-luxe boutique spa resort in the Seychelles The Architecture Studio has completed its first ever commercial project, an exclusive boutique resort on the island of Mahe, Seychelles. The hotel features a private marina that will allow guests to moor a yacht up to 100m in size. Once there, guests will immerse themselves in the ultimate holistic wellness escape surrounded by beautiful interiors and architecture from the hand of a globally leading design studio. The boutique resort is set to a backdrop of the lush green mountains of Mahe; from which textural references are lifted into the interior. The base palette is light and layered with a selection of soft and heavy weave fabrics, both neutral and printed with the colours of the island. The team sourced bespoke furniture from across South East Asia and the interior structures were fitted using a locally sourced tropical hardwood called 'Nayatoh', ensuring that the spirit of the island is abundant in every space. The hotel is the quintessential tropical retreat; offering an excursion for the senses and the promise of complete tranquillity. The interior feels organic, fresh and alive with the spirit of the island and materials found on land and at sea are crafted into works of art by specially selected artisans. Woven raffia veneers, drift oak joinery and rope-wrapped columns bring a soft warmth to the spaces and renewable rattan adds delicate textural depth to the areas. All images credited to Elsa Young

Inspiration from the ocean is seen in turquoise, deep-sea blues, corals and bright yellows that are matched with beautiful teak wood from Indonesia. Winch Design wanted to not just celebrate the natural beauty of Mahe through the interior schemes but also invite the outside in, and large retractable glass walling found throughout the spaces mean that the ocean is never far from reach. The spirit of tranquil wellness is epitomised in the spa villas which are set towards the rear of the hotel. Guests follow a network of walkways over a Japanese inspired water garden to arrive at the hotel's wellness centre and on the way encounter water features, lush green palms and native plants that enhance the feeling of barefoot luxury. Raw, untreated stone is softened by a candle-lit, tunnelled walkway to the main reception and two treatment rooms connect to the main spa and relaxation space. Following a treatment, guests can wind down in the peaceful outdoor yoga studio overlooking a Zen garden and then, following a class, take a short walk to the openair sunken juice bar which benefits from beautiful ocean views. The statement onyx bar is set in front of petrified wood artworks and suspended above it, a striking bamboo fish float. At night, the hotel is transformed into a secluded tropical oasis. Low level lighting creates a soft ambient paradise, mature palms are softly lit by illuminated water features and by the underwater lighting which makes the marina glow at night.

The Architecture team began with a site of two identities; half, the blueprint of an existing hotel and the other, raw and untouched forest terrain. Taking a widelensed view of the project in situ, they penned and specified every aspect of the design and alongside the local architects, maintained the momentum and ensured the best quality on site. The architects worked with traditional inspiration but were accompanied by a contemporary mindset. They visualised a structure sympathetic to the traditional Seychellois vernacular; the roof of the main building features traditional 'double-hip' detailing, rendering the lines of the resort in keeping with local silhouettes. Much of the design centres around water and spaces flow into one another in an intuitive, tranquil way, much like the element that guided the design.

A central philosophy underpinning the hotel was the symbiotic relationship between ocean and mountain and this is illustrated perfectly by the architect's decision to create a clear visual line from the ocean directly through the centre of the resort to the spa area, set to the backdrop of the mountain-scape. A visual pathway that links both spirits of the resort; right to the ocean, and left to the mountains behind. Images credited to Elsa Young

A moment with Interior Designer

Ana Engelhorn Tell us a bit about yourself, how did you start your career? I started my interiors career as a side gig. Alongside my work in event management and business, I was developing my own property company: buying homes, improving them – often while living in them myself – and selling them on. I took the step to formalise this interest in homes and interiors when I was pregnant with my second child.

At that time, I felt ready to make the career shift, to study and learn how to design interiors professionally – to do for other people what I was already doing for myself. After completing my training, I moved to the UK from Barcelona and set up my own interiors business – wanting the freedom and flexibility to manage my projects and time.

How can you characterize your style? I am a soup – half-German, half-Spanish, born in Switzerland with my life spent between Switzerland, Spain and England. This international upbringing is evident in my style – an eclectic mix of textures, colours, fabrics and pieces from all periods. Combining antiques with more modern pieces adds a richness to any scheme and I especially love working with natural materials whose imperfections highlight their uniqueness and ability to adapt to new surroundings. Preferring authenticity to perfection, historic buildings are a dream to me – I enjoy working around an old building and making its imperfections or historic elements shine.

What do you think are the main design elements to consider when it comes to interior design? Time: Everything always takes much longer than you envision. Budget: If there is a figure you do not want to go over, communicate it at the start. Scope: Be clear about what you want to do. While acknowledging there will always be little add-ons, the clearer your vision, the better. Personality: a truly well-designed a room reflects the person living there – whether in its art or ornaments or in its overall design.

Are there any interior designers from the past that you appreciate a lot? I very much like Jamie Drake. He is a bit nuts but has flair, and mixes styles to suit his design.

What is your definition of success? Being happy to go to work, having a financially viable business and adding something positive to people’s lives. In the end, when you feel a real sense of accomplishment and joy about something is also when others feel that benefit.

Could you share some decorating tips? I recently did a blog on things not to do when designing your home. The pointers sum up my design philosophy: infusing a place with character and charm by mixing the new with the old and adding carefully considered colour and lighting schemes to complement the furnishings and pieces – all while letting the owner’s personality shine through. Flipping that piece around, here are my top tips for decorating your home:

• • • • • • • • •

Mix styles Use a range of colours and textures Get the lighting right – layering where necessary Hang art where it can be clearly seen Include exact dimensions in your planning Account for delivery times Use a variety of suppliers Consider how a space works as well as how it looks Decorate the space with pieces or ornaments personal to you

TASTE

Discover culinary trips, wines & spirits, restaurants and recipes across the world.

Tenuta di Arceno Tenuta di Arceno has been a center for winemaking since the 16th century. Located near the fork of two rivers – the Ambra, which flows to Florence; and the Ombrone, which flows to the Mediterranean – this area was formerly the nexus of the Etruscan civilization. In honor of its history, the reference to “Arceno” comes from the Etruscan word archè, meaning "point of origin.” Tenuta di Arceno is an ancient Tuscan estate with a diverse portfolio of the highest quality wines across two classification levels – three wines centered on the native Sangiovese grape in the Chianti Classico DOCG range; and three wines celebrating the estate’s international varieties under the Toscana IGT designation.

___________________________________________________ ’’In Italy it took us 15 years to invest. I fell in love with this region, but we could not find anything interesting for us. That is, something big enough to create the right critical mass. In Arceno we are working on two fronts. An expansion of the vineyards around the current estate and an extension of the cellar.’’ Barbara Banke Owner ___________________________________________________

The estate is situated at the southernmost edge of Chianti Classico in the butterflyshaped commune of Castelnuovo Berardenga, closest in proximity to Siena and rightfully referred to as ‘the most Senese Chianti Classico.’ It’s home to other world-renowned producers and stylistically distinct from counterparts to the north. The estate is 1,000 total hectares (2,500 acres) of which 92 hectares (220 acres) are planted to vines – the remaining land is preserved for native vegetation including 50 hectares (125 acres) of olive orchards. Separated into 63 distinct vineyard blocks, the vineyards are planted to 50% Sangiovese and 50% international varieties. The ancient walled town of San Gusmè, provides a breathtaking backdrop for the vineyards of Tenuta di Arceno. Tenuta di Arceno produces six wines from the estate. Three Chianti Classico DOCG wines (Chianti Classico, Chianti Classico Riserva, and Gran Selezione Strada al Sasso); and three Toscana IGT wines (Il Fauno, Valadorna, and Arcanum). All are 100% estate grown and bottled. tenutadiarceno.com

Top Restaurants in Moscow "We are particularly enthusiastic about introducing Moscow to foodies! This mysterious and timeless capital city is a culinary gem that showcases not only local Russian products, but also the wonderful diversity of world cuisine.”

On the Menu: Russian (R)evolution From mounds of Beluga caviar to decadent $500 breakfasts at Hotel National, the Russian capital is in the midst of a foodie revolution. Long gone are Soviet-style cafeterias serving uninspiring dishes. Over the last decade the city has positioned itself as an exciting culinary destination worth talking about.

Image Grand Cafe Dr. Zhivago

Gwendal Poullennec, International Director of the Michelin Guides.

At the beginning of 2014, Moscow’s restaurant market was still playing by the book until infamous government resolution No. 778 imposed an embargo on almost all food from the west, outlawing foie gras, parmesan, oysters and pretty much everything else in between. This breaking news took everyone by surprise and the biggest question was: “How will restaurants handle it?” Damaging at first sight, an import ban sparked an explosive interest in sourcing domestically and focusing on the best of the “new Russia”. The chefs, formerly preoccupied with international cuisine, had now fallen back on a rediscovery of long-forgotten culinary traditions, setting themselves apart by highlighting the country's local ingredients. And it didn’t go unnoticed. Just a few months ago the prestigious Michelin Guide announced that it will launch the first ratings of Moscow restaurants in 2021. Expect to see new stars on the world’s culinary map very soon! Armed with a little research, a fair amount of cash and sense of adventure, let’s get a quick snapshot of what Mother Russia puts on a plate these days.

You can get a pretty accurate insight into another culture by simply eating your meal. Autarchy turned into a gastronomic manifesto, this alone speaks volumes about the Russian mindset. If you enjoy exploring cities with burgeoning culinary scenes, then I highly recommend a trip to Russia. There is perhaps no dining scene in Europe as flamboyant, dynamic and exciting as Moscow’s.

Caviar for Breakfast

Café Pushkin Breakfast, lunch and dinner each represents an opportunity for a dining experience which will go down in history. A reference point on Moscow’s dining atlas, the legendary Café Pushkin is the first stop on our gastronomic adventure. Step into the shoes of a 19th century Russian aristocrat by ordering a breakfast of champagne and caviar served with classic Russian crepes.

A date with history: it's not just another themed restaurant but rather a story telling time capsule.

The name pays homage to Alexander Pushkin, famed Russian poet and novelist, who frequented the neighbourhood. Although the restaurant was opened in 1999 many people are sure it has always been occupying a splendid pink mansion on Tverskoy Boulevard. With a wonderfully extravagant sense of theatre, guests are welcomed through the large double doors of this Moscow institution into an unapologetically flamboyant dining room where art meets indulgent elegance on a grand scale. Reenacting the nostalgia of the opulent aristocratic lifestyle, Café Pushkin with its liveried waiters, vintage furniture and glamorous baroque touches is a colourful testament to imperial Russia. For the authentic and sophisticated Moscow experience, head to the Library or the Mezzanine, two baroque-style halls embellished with precious antiques and floor-to-ceiling bookcases.

Renowned Chef Andrei Makhov has been with Café Pushkin since 1999.

Inspired by the ideas and customs of Pushkin’s times, resident Head Chef Andrei Makhov recreates historic recipes with contemporary flair. The menu provides the big hitters you would expect, from herring “a la naturelle” and classic beef stroganoff to a Gzhel-inspired desert. Pushkin would probably have ordered all three. All images courtesy of Café Pushkin

Café Pushkin is especially famous for its deserts, vanilla eclair is always a good idea!

Soviet-Era Nostalgia for Lunch

Grand Cafe Dr. Zhivago Named after an epic dissident novel by Boris Pasternak, Grand Cafe Dr. Zhivago serves up Soviet chic cuisine at affordable prices and, although this dazzling neo-classical establishment is welcoming guests around the clock, it is almost always fully booked. Offering a coveted view of the Kremlin through the double-height windows of the landmark Hotel National, Grand Cafe Dr. Zhivago is a glamorous take on Soviet nostalgia. The brazen decor draws inspiration from the vivid colours and shapes of the revolutionary posters. Flanked by statues of blindfolded pioneers and peppered with the artwork reproductions of Malevich and Petrov-Vodkin, the snow white dining room provides a perfect backdrop for the aesthetic gourmet journey back to Soviet Russia. The newly appointed Chef Alyona Solodovichenko has upgraded the menu of a standard pioneer camp’s canteen by giving each dish an unexpected twist of playful luxury. Experience a real adventure through the gastronomic references to the different stages of Russian history, try the hearty Siberian dumplings, classic navy-style macaroni or creamy buckwheat noodles with red caviar and salmon.

A female Executive Chef in Russia? Yes, this is a real (r)evolution!

Food that looks pretty: green avocado salad with a feminine touch.

If you are not ready to leave quite yet wrap things up with a quintessential Russian treat, glorious Napoleon cake. Just imagine a whopping layered treat filled with creamy custard and topped with crumbled pastry melting into one perfect bite. This traditional dessert commemorates the country's sweet taste of victory over the French emperor in 1812. Baking it is a bit of a battle itself. All images courtesy of Grand Cafe Dr. Zhivago

The interior breaks away from the limits and modesty of the Soviet times.

#13 for Dinner

White Rabbit It’s not everyday that you get to eat at one of the 50 best restaurants in the world. Slotted at number 13, White Rabbit is the first restaurant in Russia to receive such international acclaim for 5 years in a row, a true testament to the constant innovation and improvement of this everevolving hub of creativity. Follow the white rabbit to the giant glass dome perched atop glitzy Smolensky Plaza where bright young Chef Vladimir Mukhin is stirring up a revolution. For fans of the Emmy-nominated Netflix series Chef’s Table, the charismatic fifthgeneration cook needs no introduction. Featured in Season 3, Chef Vladimir Mukhin is on his own quest to bring the cuisine of Russia’s glorious past into the 21st century. Pushing the boundaries of what we know about Russian cuisine, Chef Vladimir Mukhin is giving a futuristic twist to obsessively researched sixteenth-century recipes and archaic Slavic ingredients most locals know only from fairy tales. It goes without saying that all the ingredients are fresh, seasonal and come from the best sources throughout Russia. You will be spoilt for choice with offerings of highly instagrammable sea urchins, deceptive cocolardo or elevated borscht, but one thing is for certain: there’s no “wrong answer” here. If it is your first time, you have to try the degustation set. Reflecting Chef Vladimir Mukhin’s cooking path at White Rabbit, the tasting menu “Metamorphoses” is based on an allegory of the mayfly’s life cycle and split into 4 stages: egg, nymph, subimago and imago. Retrospective dishes follow the evolution of the chef, the growth of awareness and deepening of his ideas. All images courtesy of White Rabbit

Chef Vladimir Mukhin is balancing one foot in the future and one in the past, but he is standing strong.

The menu features the best dishes created by Chef Vladimir Mukhin since the restaurant was opened in 2012 but the real surprise is saved for later. “Food as medicine”, a final accord on the menu, is an intuitive dish individually crafted for each guest based on personality and childhood memories. The restaurant has an unparalleled reputation for a reason, and there is only one way to find out why. To secure a spot under the giant glass dome overlooking nothing less that the Ministry of Foreign Affairs, make sure to book a table a few weeks in advance.
