Crafting the Future of Food with Plant-based Cuisine

f you love food, we hope that this issue truly inspires you to try some new things. Using fresh herbs grown locally along with edible flowers to make delicious plant-based recipes…um, yes please! We are obsessed with Brianna Beard, featured on page 42. Follow her @seed.love.life and check out all of her artistic dishes. Not only are the recipes beautiful, they’re also super healthy for you. There’s nothing better than growing your own or getting vegetables directly from the farmer. You can just taste the difference. Choosing to buy produce from a farm not only supports the locals, but a healthier option nutritionally. We’re fortunate to have some really great farms west of town. One of my favorites is Osceola Organics. Originally started by Kevin O’Dare, the farm is now owned and operated by Blake Goodwyn and his family. I love to stop by and grab just picked lettuces and microgreens. This little farm was one of the first to be certified organic. Did you know you can pick strawberries out west? Countryside offers daily options to pick your own or purchase freshly harvested ones. Peterson’s is also a great stop for local produce. Schacht Groves is one of our oldest local groves and farm stands dating back to the 1940s! Be sure to visit any of these local produce stands. Supporting the local farmer has less of an environmental impact. Choosing to eat healthier takes a little more effort but you’ll taste and feel the difference. Special thanks goes to Blake at Osceola Organics and Inna at Zesty Fox for supplying us with the beautiful edible flowers, fresh herbs, microgreens and lettuces for our feature story on page 24. Plant-based nutrition can be defined as a diet consisting mostly of fruits, vegetables, nuts, seeds, herbs, grains, seaweeds, flowers, sprouts and legumes. The plant-based diet is becoming popular in the home, restaurants, grocery stores, online blogs and cookbooks. It’s clear a more natural and less processed diet delivers better health, but eating more plants and less meat offers benefits that go far beyond the individual. Eating a plant-based diet is also beneficial for the environment, animal welfare, world hunger, water scarcity and more. Here are some of the most enticing reasons to consider a plant-based diet.

Açaí with Orange Ginger Granola Antioxidant rich açaí berries (pronounced ah-sigh-EE) come from the açaí palm tree, native to Central and South America. This superfood is high in fiber, calcium and heart-healthy fats.
Granola 1 cup sunflower seeds 1 cup pumpkin seeds 1 cup oats 1 cup almonds 1 cup shredded coconut 1/3 cup ground flax 3 tablespoons chia seeds 1 tablespoon ground cinnamon 2 teaspoons ground ginger Zest of 1 orange 1/4 teaspoon sea salt 1/3 cup coconut oil 1/3 cup maple syrup Preheat oven to 300°F. Line a baking sheet with parchment. Add the pumpkin seeds, almonds and oats to food processor and pulse to roughly chop. Add sunflower seeds and pulse to chop, until everything is about the same size. If you don’t have a food processor, this step can be done by hand. Place chopped nuts and seeds in a large mixing bowl. Combine the coconut, flax, chia seeds, cinnamon, ginger, orange zest and salt. Pour in the coconut oil and maple syrup. Mix well to coat. Divide the mixture in half and spread out evenly onto lined baking sheet. Bake for 30-35 minutes, stirring a couple times after the 15-minute mark. The granola is ready when it is golden and fragrant. It will crisp up outside the oven as it cools. Açaí 2 packs açaí (grocer’s freezer section) 2 bananas, frozen 1 cup oat, almond or coconut milk The frozen banana will make it lusciously thick like ice cream. Use a powerful blender to blend this into a thick consistency. For the assembly Blackberry Blueberry Kiwi Drizzle of honey Viola flowers (Osceola Organic Farms) In a stemless wine glass or bowl, dish a portion of the açaí, top with granola, blackberries, blueberries, kiwi, honey and viola flowers.

Gold 1 small golden beet, chopped small 1/2 cup cauliflower, chopped 1/3 cup water
Green 1 avocado 1/2 cup spinach 1/3 cup water
Orange 1 sweet potato 1/4 cup coconut milk 1/4 cup water
Steam the beet and cauliflower for 20 minutes until soft. Blend with 1/3 cup water until pureed.
Steam the spinach for 3 minutes until tender. Blend with avocado and enough water to help it combine, start with a tablespoon of water at a time.
Roast the sweet potato for 45 minutes until tender. Blend 1 cup of inner sweet potato (no skin) with coconut milk and water.

The food I create is an exploration of the unlimited potential of nature; preparing foods with seeds, nuts, fruits, herbs, roots, leaves, pollens, seaweed, fungi, flowers and sprouts. After many years of exploring different cooking roles on boats, restaurants, eco-lodges, and yoga retreats, my deep appreciation for plant-based cuisine is a cornerstone of my lifestyle. By merging my degree in art with my love for healthy food, I’ve found a passion for plating and food styling. It’s my hope that people feel nourished by their food from the moment they see it! When Portfolio asked me to do a plant-based food issue, I was so excited. Creating all the recipes and preparing the dishes for the photo shoots was so much fun. The recipes are pretty easy to create and all the ingredients are sourced locally. Being a new mom to my son, Stone, has inspired me to only offer him the purest ingredients as he starts experimenting with new foods. I hope you enjoy sharing these meals with your family as well. Golden Toast
Glowing Green Pizza
Golden Hummus 1 can garbanzo beans 1 small golden beet, chopped 1/4 cup lemon juice 1/4 cup tahini 1/4 cup olive oil 1/2 teaspoon sea salt 1/2 teaspoon turmeric 1 clove garlic 2-3 tablespoons hot water
Dandelion Pesto 1 cup toasted almonds 1 cup raw pumpkin seeds 1/2 cup parsley, loosely packed 15 stems dandelion greens 2 small cloves garlic 1/2 cup olive oil 1/2 teaspoon sea salt Juice of 1 small lemon 1 cup water
Begin by heating the garbanzo beans in 3 cups water, bring to a simmer for 3 minutes. Blending the beans hot will give you a lovely creamy texture. Strain the beans and immediately place them in a blender with the rest of the ingredients. Blend thoroughly adding hot water one tablespoon at a time as needed.
Place the above ingredients into a blender. If too thick, add a tablespoon of water at a time until mixture blends easily.
Pickled Golden Beet 1 small golden beet, shaved 1/4 cup red wine vinegar 1 teaspoon olive oil 1 small shallot, sliced thin 1/4 teaspoon sea salt Use a mandolin to shave the beet into thin sheets. Combine with remaining ingredients and let it pickle for 30 minutes. Curried Sunflower Seeds 1 cup raw sunflower seeds 1 teaspoon curry powder 1/4 teaspoon sea salt Drizzle of olive oil In a small pan, lightly coat the sunflower seeds in a drizzle of olive oil, add curry and salt, stir to combine flavors. Over medium heat, begin to toast the seeds for a few minutes, keep stirring and don’t walk away. Once fragrant, 3 minutes or so, they are done. For the assembly -toasted sourdough bread -golden cherry tomatoes, halved -micro greens (Osceola Organic Farms) Spread the toasted sourdough with the golden hummus first, and then arrange the pickled beet and golden tomatoes, top with curried sunflower seeds and garnish with micro greens.
For the assembly -roasted broccolini and fennel -sprouted flatbread by Angelic Bake House (available at Fresh Market) -nasturtium and viola flowers (Osceola Organic Farms) Preheat oven to 350°F. Layer 3 generous tablespoons of pesto on the flatbread, top with roasted broccolini and fennel, and bake for 10 minutes. Garnish with edible nasturtium leaves and viola flowers.
Jicama Tostada Cilantro Pesto 1 cup toasted almonds 1 cup raw pumpkin seeds 1 1/2 cup cilantro, loosely packed (stems ok) 2 small cloves garlic 1/2 cup olive oil 1/2 teaspoon sea salt Juice of 1 small lemon 1 cup water Place all of the ingredients into a blender. If too thick, add a tablespoon of water at a time until mixture blends easily. Herbed Tempeh 1 package of tempeh, cut in cubes 1/2 cup combined herbs parsley, cilantro, oregano and chives (chopped fine) 2 tablespoons olive oil 1 tablespoon tamari or soy sauce 1 tablespoon honey Marinate the tempeh in a bowl with all of the ingredients for 15 minutes. Sauté in a pan over medium heat until golden brown. Roasted Tomatillo Salsa 10 tomatillos, halved 3 cloves garlic 1 tablespoon olive oil 1 cup cilantro Juice of 2 limes Zest of 1 lime 1 shallot chopped 1/2 teaspoon sea salt Preheat oven to 500°F, place the garlic and tomatillos face down and coat with olive oil. Broil for 5 minutes and then transfer to a blender with remaining ingredients and puree.
Calming Chamomile Soup Soup 1 head of cauliflower, chopped 1 red bell pepper, chopped Drizzle of olive oil 1/4 cup water 1/2 teaspoon sea salt 2 tablespoons olive oil 1 small yellow onion, chopped 2 cloves garlic, minced 3 carrots, chopped 1 can of diced tomatoes 1 cup strong chamomile brew (3 tea bags or 1/4 cup loose leaf) 2 cups vegetable broth 1/2 teaspoon sea salt Preheat oven to 400°F. Place the cauliflower and bell pepper on a baking sheet lined with parchment paper. Season with salt and drizzle with enough olive oil to lightly coat. Add 1/4 cup water to the pan (the water will help the veggies steam). Bake for 20-30 minutes, until lightly brown on top. Remove from oven and set aside. Place 2 tablespoons olive oil in a large pot with onions and garlic, sauté over medium heat until translucent. Add the carrot and can of tomatoes and cook for 10 minutes. Add the chamomile, broth and remaining salt, simmer for 15 minutes. In small batches place equal amounts of roasted veggies and stewed carrots into a blender, puree until silky smooth and transfer to a large soup pot. Giant Crouton 1 large loaf sourdough 2 tablespoons coconut oil Sea salt Cut the bread into 2 ½” slices and then cut off the ends to make a cube. Spread a little coconut oil on each side and season with sea salt. Heat remaining coconut oil in a skillet over medium heat. Cook bread on each of the six sides for a couple of minutes until golden brown. For the assembly Dish the soup into a bowl and place the giant crouton in the middle. Garnish with mooring flowers and dill flowers from Osceola Organic Farms.

Place the walnuts and almonds in a food processor and process until finely ground. Add the cacao powder, lavender, sea salt and pulse to combine. Transfer to bowl. Add the dates and maple syrup to the food processor and process until it turns to a paste. Transfer this mix to a separate bowl.
Borage
Add nut and cocoa mixture back into food processor and while processing, drop small handfuls of the date pieces down into the food processor. Process until a dough consistency is achieved. Finally, add in the cacao nibs for one last pulse.
Buzz Buttons
Spread dough on parchment paper and refrigerate for an hour. Using a small ring mold or cookie cutter, punch out rounds of brownie and top with your favorite things! We used hemp seeds, bee pollen, goji berries, lavender, chamomile and rose petals. 46

A Rainbow Mix Microgreens While microgreens are tiny and adorable, they pack a major nutrient punch. For example, radish microgreens contain up to 40 times higher levels of vital nutrients than its mature counterpart. She was born and raised in Florida and grew up in Vero Beach, then went on to major in creative photography at the University of Florida with a minor in art history. Emily loves to let her subjects speak to her and allow the image to form from this connection. She believes in capturing pure human moments that people want to look at time and time again. She thrives in the stunning beauty of our tiny slice of heaven. She specializes in lifestyle photography, focusing on families, weddings, maternity and newborns. “For me, photography is all about capturing a moment that speaks to us as humans. I love to connect in the moment, find a pleasurable and unique way to utilize light or angles in order to bring interest in my photographs,” Emily says. “I often find myself lying on the ground, getting up on a step (I’m 5’1”), or framing in a distinct way to capture the image I visualize in my head. In the end, I’ll be covered in sand, grass and sweat, but it’s all worth it.” After leaving a full-time job almost two years ago, Emily spends a lot of time really focusing on her craft, and working on her small business, Ella J Photography LLC, which has been going strong since 2017. She has acquired some loyal clients, and finds herself truly immersed in their lives in a more personal way, because she captures some of the most important milestones for them. “My clients are like family. I’m truly privileged to capture intimate and beautiful moments in their lives. Because I know just how special some of these moments are, it makes me want to work to make each session better than the last.” Emily and her husband, Tim, have an exciting year ahead, as they’re expecting a baby girl in August! “Life has just been falling into place and I’m beyond thankful,” Emily says. “I’m equally excited to capture every little moment of my baby girl!” She also loves having the time to work with other creative friends and colleagues, like the team at Portfolio Magazine. “I feel so fortunate to be able to create my own schedule, which allows time to get creative with friends. nce a dining room manager at a local golf and tennis club, Inna Basanets was first introduced to microgreens by a chef. Her interest stemmed from growing up in Sumy, Ukraine where families garden together in community farms and share the harvest. Initially, she began growing microgreens part-time. She spent this time learning and perfecting her growing techniques. Ultimately, she decided to utilize organic products only, including organic soil and seeds to provide high quality microgreens grown using only organic methods. As the popularity of her microgreens grew, she decided to focus on the operation full time and opened Zesty Fox Farm in Vero Beach. Currently, Zesty Fox Farm provides microgreens, edible flowers and specialty mixes for various restaurants in Vero Beach and Melbourne, as well as providing weekly home delivery options for Vero Beach and Sebastian. Her greens can be found at local farm stands, Farm Girls produce boxes, and at the Vero Beach Oceanside Farmer’s Market on Saturdays. Microgreens are vegetable seedlings harvested at around 10 days. Typically a few inches in length, they are harvested during a stage in which they are very nutrient dense, containing vitamins, minerals and beneficial plant compounds. Microgreens are said to contain greater amounts of these nutrients than mature greens. Many choose microgreens based on the flavor and the nutrients they provide. Restaurants typically choose microgreens based on flavor and color for presentation. Microgreens provide intense flavors ranging from mild to spicy. Zesty Fox Farm grows 25 different types including sunflower shoots, broccoli, kale, kohlrabi, radish, pea shoots and some wheatgrass. Microgreens can be used in many different ways including salads, sandwiches, pizzas, omelettes, smoothies and wraps. Wheatgrass is typically used in juicing. I have developed tea workshops where I show people how professional tea tasters evaluate tea. I love to see the difference it makes when people understand and fully experience all that premium tea has to offer. While oolong tea remains our specialty, Wang and Dickerson has expanded to offer a variety of fine teas and premium herbal infusions. With herbs, as with tea, I focus on the growers. I use herbs from a small, carefully selected group of artisan organic growers in the U.S. My herbal blends are both delicious and full of health benefits. When I’m blending herbal tea for my customers, I feel like I’m writing a love letter to each of them. In that magical moment, I embed my heart and feelings of joy into every batch of tea. Food Matters You Are What You Eat
A
t age 6, my life changed forever. I was diagnosed with Type 1 Diabetes. It was a blessing in disguise. Having to completely learn how my body works, nutritionist visits to teach me all about food, paying attention to everything I consumed, and mainly learning how to comprehend everything my body tells me by being present in each moment. I could not be more thankful for having such supportive family and friends. I was raised knowing that yes, I could eat anything I want; however, I had to learn through experience that if I didn’t do what I was supposed to by counting my carbohydrates and giving myself the proper amount of insulin needed, there was always going to be a price to pay. It’s a psychological and physical roller coaster ride. I had so many questions of “why?” Type 1 Diabetes isolated me in many ways, which taught me to listen to my instincts and gave me the confidence to know that I was blessed to be different. My parents repeatedly told me if I took care of diabetes then diabetes would take care of me and that goes for everything. If you take care of something and give it what it needs, then it will take care of itself. I was able to apply this theory in farming. If I’m able to grow great food for everyone, I can hopefully preach this theory into people’s daily nutrition. I earned an athletic scholarship to the University of Texas at the Permian Basin to play baseball. This is where my life’s trials and tribulations answered all of my “why’s?” I was a 24-hour car ride away from “home,” my family and friends who were my lifeline, knowing my symptoms if something wasn’t right and knowing what I needed. I was in study hall alone when I didn’t feel low blood sugar coming on and fell into a diabetic seizure. About 45 minutes later, a lady whom I would say was an angel, walked by the room and found me. This was my awakening moment. Coming back to life, I instantly became appreciative of every minute detail the human experience has to offer. My perspective changed to every day above ground is heaven on earth. I gave up my scholarship and came home to be close to my support system. That’s when Osceola Organic Farm became a dream.
Kevin O’Dare, the founder/creator of Osceola Organic Farm, and the O’Dare family have known me ever since I can remember. My brother, Trae, is the same age as Kevin and Wendy’s son, Shawn. We all attended St. Helen’s Catholic School and grew up playing all kinds of sports together. I was talking to Shawn one day after coming home, looking for something to do for work. He told me “the farm always has work to do.” The next day I went out and spoke to Kevin. Explaining how important it is to me that I eat as healthy as possible, the troubles I faced by not eating the way I should, and the understanding of what you put in is truly what you get out. Kevin took me under his wing and blessed me with all of the natural plant/nutritional wisdom he has gained through organic farming. I became a son of farming and he became one of the greatest mentors I could be blessed to have. After working and becoming connected to everything we grew, I came to realize this was the healthiest lifestyle for me. My instincts told me this is a calling and my faith matches the faith of the great mustard seed. This natural lifestyle has unquestionably moved mountains to provide a clear vision and enabled me to see that the sky is the limit when you pursue your dreams for a better world. I can eat all the greens I want without having to take any insulin! It transformed my diet into vegetarian and I’ve never felt better. Knowing how great, extremely fresh and local makes my overall body feel, I’m inspired to spread my knowledge to everyone interested in getting in tune with the best version they can be. As Kevin always preached, “Our way of farming is the way God intended food to be grown. It may be the hard way of doing it, but it’s every bit worth it in the end.” My older brother Trae is my best friend. He’s always paid attention to my actions and symptoms, knowing when my blood sugar may be off. After I switched to a vegetarian diet and worked on the farm for a few years, my brother was able to see a night and day difference in my overall health. He became very interested in this lifestyle of farming and truly living it. I told him to come work on the farm with us. Growing up so close, this was truly a dream job for both of us. He adapted a vegetarian diet as well and began to see the best version of himself. The more we learned, the more we grew. In January 2019, Kevin gave us the opportunity to purchase the farm which has been a true blessing in many ways. Our plans are to continue and grow the farm with the same process we were taught. We believe the results of organic farming can provide a healthier lifestyle, mentally and physically. Osceola Organic Farm is a dream come true. Understanding how it has benefited my life and has given me a platform to grow quality food to impact peoples lives for the best leads me to this: I see the soil as I see my stomach. Both contain microbes. If we feed our soil the materials needed for the microbes to feast on, the quality of food produced will be best. If we feed our stomach the food needed for microbes to feast on, the quality of our overall health will be best. After all, we are what we eat. A
Turtle Talk What’s for Dinner?
A
s an underwater photographer, one of my favorite moments happened in 2017 while working in the Bahamas on a research expedition. It was one of those perfectly calm days when the ocean was as flat as glass. As I slowly snorkeled over the shallow seagrass meadow, I stumbled upon a large loggerhead sea turtle. She was chomping on a spiny lobster carcass, crunching so loudly I wondered if it would attract the attention of predators, like tiger sharks. South Florida is home to five of the seven sea turtles found around the world: the hawksbill, green, leatherback, loggerhead and Kemp’s ridley. As marine reptiles, they share common characteristics, such as laying eggs and breathing air. However, where they live and what they eat depends on the species.
The most common sea turtle in Florida is the loggerhead, averaging 275 pounds with shells up to 3-feet. They’re named for their large heads, equipped with powerful jaws, which allow them to crunch through the hard shells of prey like conch, clams and horseshoe crabs. The green sea turtle is actually named because their body fat is green, due to their diet. These turtles are mostly vegetarian, eating seagrasses and algae. There are several snorkel spots close to shore in South Florida where juvenile green sea turtles frequent to chow down on algae. Hawksbills, named for their bird-like beaks, are one of the smaller, quicker turtles. They play a vital role in the health of coral reefs. They feed almost exclusively on sponges, which if not kept in check, would overgrow corals and suffocate reefs. It’s estimated that one turtle can consume more than 1,000 pounds of sponges a year. The Kemp’s ridley is the world’s smallest sea turtle, maxing out around 100 pounds. It’s also the most endangered turtle species. They have a wide palate and eat everything from crabs and shrimp, fish, jellyfish and seaweed. They’re also the only turtle that nests during the day. I have yet to meet a Kemp’s ridley in the wild. The leatherback is the largest of all the sea turtles, weighing between 500 and 2,000 pounds. What’s amazing is that they reach such large sizes while consisting on a diet of jellyfish! They can also dive up to 4,000 feet and hold their breath for more than one hour. In order to thrive while subsisting on animals made of jelly, leatherbacks have a couple of unique adaptations. First, the inside of their throat is lined with spines made of keratin — the same stuff our fingernails are made of— to help prevent the jellyfish from slipping away. The spines, called papillae, also protect the turtle from getting stung. There’s not much nutrition in a jellyfish, as they’re mostly water with a little protein and some vitamins and minerals, so the leatherback has an extra-long esophagus that stretches from their mouth to stomach and acts as a holding pouch. Sea turtles face threats around the world, from pollution and poaching, to coastal development. I’ve personally watched juvenile green turtles devour jellyfish with a floating plastic bag nearby. Had I not been there to pick it up, I wonder if the turtle would’ve tried to eat it. Whether they eat sponges, clams or jellies, all have their place in marine ecosystems.
fter the nesting season, sea turtles return to distant places in the ocean to feed and regain energy for the next season. For local turtles that nest on the shores of Indian River County, they often migrate to the waters near the Bahamas, Cuba, North Carolina, and the Southwest coast of Florida. During March and April, hundreds of these sea turtles will use the Earth’s geomagnetic fields to locate the beach they hatched from and return home. These migrations can be anywhere from 500 to 800 miles, sometimes more! Once sea turtles return to their original natal beaches, they crawl out of the sea to deposit 4-6 clutches of eggs on the beach during the summer months. This is known as sea turtle nesting season, which officially starts March 1 and lasts until October 31. It’s during this season that beachgoers will notice the colored stakes and flagging tape go up around select nests on the beaches. These selected nests will be watched carefully by county staff, consultants with Ecological Associates, Inc., and volunteers. Sea turtles face many challenges like natural predators, artificial lights on beaches, and mistakenly consuming marine debris since it smells like food. We encourage everyone to pitch in to preserve and protect these endangered species. • Beachside residents: Close drapes and curtains at night so artificial light doesn’t spill onto the beach. This will help hatchlings find the ocean. • Beachgoers: Bring a bucket or bag to the beach to remove any trash you find and dispose of it properly, along with bringing home all your plastic toys.
• Hotels and resorts: Be sure to responsibly remove and store beach furniture off the beach so there are fewer obstacles for nesting females. • Everybody on planet earth: Become more informed about conservation initiatives and make conscious decisions, like reducing single-use plastics and eating sustainably sourced seafood. Since the inception of FAU Harbor Branch Oceanographic Institute, our scientific researchers have dedicated their efforts to intimately understanding the function of fragile ecosystems along the coast and in the ocean. They examine environmental responses to pressures like coastal land development, nutrient and plastics pollution, ocean acidification, warming temperatures and overfishing. Study results are essential for policy makers as they develop sound conservation, management and restoration strategies.
Matt Ajemian Science Leads to Sustainability
O
riginally, Matt Ajemian thought he wanted to study medicine like his dad, despite a love for the ocean. As an undergraduate, however, he continued to undertake internships related to marine biology. Now, he spends his time on the water catching grouper and tagging sharks as an assistant professor of research at Florida Atlantic University’s Harbor Branch Oceanographic Institute. As a fisheries ecologist, Matt studies how fish, like sharks, rays and groupers, interact with each other, their environment and how they respond to stress. He joined FAU’s Harbor Branch team in 2016 and currently has a variety of projects ranging from eagle ray ecology and bonefish reproduction, to grouper communication. As a scientist, Matt’s goals are to further our knowledge of the ocean and provide sound science for managers, the scientific community and the public. “We are connected with the marine environment, particularly in Florida where most of the coastal population is right against the shoreline,” Matt says. “We better know what we are doing to it, so its gems are still left for the future.” Growing up on Long Island, New York, Matt started fishing at a young age, intrigued by the sea and its creatures. He was fortunate, he says, to have supportive parents who would take him into the city to visit the American Museum of Natural History once a year, as well as various aquariums during their travels. After earning an undergraduate degree in biology and hispanic studies from Boston College, he went on to earn a master’s in marine science at Hofstra University, just 20 minutes from his hometown. Eventually, he 58

earned his PhD in marine science at the University of South Alabama and Dauphin Island Sea Lab in 2011. At FAU Harbor Branch, Matt has the chance to study the marine life in his own backyard, the Indian River Lagoon, a 156-mile “Estuary of National Significance” with an economic value estimated at $8 billion. In recent years, the IRL has made headlines due to large blooms of toxic algae from coastal development and changing environmental conditions, such as warming temperatures. Matt’s goal is to understand how these toxins impact wildlife, including how it accumulates in their tissues. “We don’t really know how any of those toxins move through the food web,” Matt says. To answer that question, among others, Matt is examining the toxic load in bull sharks, eagle rays and sea turtles. By studying those three species in particular, they can cover the food web. Sharks eat fish, sea turtles eat seagrass and algae, and rays eat all the bottom-dwelling shelled critters like crabs and clams. Overall, Matt’s work combines conservation, vulnerable species and fisheries. Bonefish, for example—the subject of one project—are listed as near threatened due to habitat loss, according to the International Union for the Conservation of Nature. However, they are also part of a multibillion-dollar flats fishery. “The more we know about fish and their behavior, the better we can manage and support their populations,” Matt adds. “Science leads to sustainability.”

Weekending in Key West Catch a Spectacular Sunset at the Southernmost Point of Florida
R
oad-tripping to the Keys is a must-do from the Treasure Coast. To reach Key Largo by car, it roughly takes less than three hours. Of course, that’s just the beginning of the Keys. To get all the way to Key West, it takes about five hours total. Key West is iconic, from fiery sunsets to raucous bars, it will leave a lasting impression and you’ll want to return again and again. Upon arrival, we checked into the Pier House Resort & Spa which is located on Duval Street and offers gorgeous views of sunsets on the Gulf of Mexico. The water in the Keys is so blue with white sandy beaches and lots of palm trees. The hotel has its own private beach, so grab your piña colada and a lounge chair and watch all the boats go by, or go for a swim in the well-appointed pool to cool off. Live music at the pool bar will really get you in vacay mode. We dined outside on the veranda at One Duval and as we indulged in a delicious meal of fresh island fish. One Duval overlooks the Gulf, so we were able to catch a blazing sunset while we enjoyed cocktails and dinner. Grab a drink at the hotel’s iconic Chart Room Bar, it’s where Jimmy Buffet and Bob Marley first started their musical careers. Other notorious guests throughout the years include British Prime Minister Edward Heath, various Rockefellers, Mellons and Vanderbilts. Truman Capote, who wrote “Answered Prayers,” resided here in the winters, along with Tennessee Williams. Staying in the heart of Key West offers so many options for things to do. You can basically walk everywhere from the hotel. Sunset at Mallory Square is a must. Here, you’ll see random funky entertainment. Less than two blocks away from the hotel is the marina where you can grab lunch overlooking the water. It’s also the place to hop on one of many chartered booze cruises, sunset sails, or dive charters. You can rent jet skis and paddleboards as well. Just a few blocks away is great shopping and the hotel’s sister property, La Concha. Both hotels are unique and offer renowned spa services. No trip to Key West is complete without visiting Sloppy Joe’s, Mel Fisher’s Maritime Museum or the Hemingway House. Strolling through town you’ll likely see the famous Conch Republic chickens, too. Treat yourself to a cheeseburger in paradise and some local homemade key lime pie—it’s my absolute favorite! I’m always sad to leave the Keys, parting from paradise is such sweet sorrow. Conscious Discipline not only focuses on directing the attention to the root of the child’s discontentment, but also empowers both adults and children to manage emotions and behaviors in healthy ways so they can recover, learn from their experience, and heal any damage from their actions. Blue Angels!
I
f you see people with their eyes on the sky and not on their phones, there’s a good chance that it’s time for the Vero Beach Air Show. That means that the United State’s Navy Blue Angels and the Air Force F-16 Viper Demonstration Team will be winging through the skies above Vero Beach April 25-26. They are joined by many other exceptional professional pilots and static displays on the ground. It’s unique, grassroots fun and you shouldn’t miss it. What’s even more fantastic about this event is that it’s headed by a board of 10 volunteers and one advisor who will unite for countless hours to make this bi-annual event come to life. They recruit between 800-1,000 volunteers who will not only sell T-shirts but also cook the delicious food at the many concession stands. There’s a waiting list of volunteer groups who will help at the show as their organization will receive funds for their efforts. The Vero Beach Air Show, Inc. is a group that believes in keeping it local. The money raised at the show will be divided between three local Exchange Clubs and the Indian River Veteran’s Council. All funds raised stay here locally. It’s an amazing event undertaken by a fabulous group of people who care about their community. Even today, nine years after it all started, they are still enthused, excited, and honored to be a part of it. This level of enthusiasm permeates the event and has helped create lasting partnerships with the Vero Beach Airport, the City of Vero Beach, the airport tenants who give up their ramp space, CJ Cannons, Piper Aircraft, who has been the presenting sponsor since day one, and the list goes on. There are many moving parts including 75+ golf carts, countless tents and the 25-30,000 people who attend each day. It’s an event that makes the old feel young and the young reach for the skies. It’s a way to honor our country, our military and our veterans. The Blue Angels’ liaison for the airshow said, “Of all the airshows the Blues do, they are closest to the audience in Vero Beach.” And judging by the support here in Vero Beach, that’s how we like it. Family Stories Evoking Emotion in Your Characters
A
fter a career teaching literature, composition, and creative writing to thousands of high school and college students, Susan Beckham Zurenda turned to writing a novel she had carried in her heart for years, its genesis a short story that won the South Carolina Fiction Prize some time ago. Chosen a Winter 2020 Okra Pick by the Southern Independent Booksellers Alliance, Bells for Eli (Mercer University Press, March 2020), is inspired by a real-life cousin’s tragic childhood accident in the late 1950s when he drank Red Devil Lye from a Coca-Cola bottle. The author’s uncle had used the chemical to inflate balloons for his son’s birthday party. Like her character Eli Winfield in the novel, Susan’s first cousin survived the accident, but his life was forever changed. Unlike Eli’s cousin Delia Green, the protagonist of the novel, the author didn’t grow up with her cousin; most of what she knows of his challenging childhood came to her secondhand in adulthood. Susan’s distinctive coming of age novel is a tender and engaging imagining of Eli and Delia growing up across the street from each other during a time and place of supposed innocence, the small-town South of the 1960s and 70s. In the novel, the cousins develop a deep and uncommon love during a powerfully transitional period of American history. When Eli encounters the bullying and shunning by schoolmates who don’t understand and mock his disfigurement and frailty, achieving acceptance is torturous both for him and for Delia who becomes her cousin’s protector. Later, in adolescence, Eli also guards Delia’s vulnerability when she ventures into a destructive romantic relationship. Inevitably, these strong-willed cousins’ love blossoms into an intimacy that cannot be, for they know to love one’s cousin in that way is forbidden. The novel concludes with Delia’s discovery of a shocking secret revealing truths about Eli she has never known. Susan will discuss “Family Stories: Evoking Emotion in Your Characters” at the Indian River Library (7510 Red Grange Boulevard, Indian Lake Estates) on March 8 at 3:30 p.m., followed by a reception and book signing. ost people believe they struggle with weight loss due to lack of willpower, when in fact, limiting subconscious beliefs are to blame. To her subconscious mind, “quitting sugar” meant “giving up grandma’s unconditional love.” As a result, every previous attempt to remove the sweet stuff from her life had failed miserably. ou’ve probably seen this quote floating around: “Your diet is not only what you eat. It’s what you watch, what you listen to, what you read, the people you hang around…be mindful of the things you put into your body emotionally, spiritually and physically.” Basically, drinking all the green juice in the world won’t work if we’re not consciously monitoring the other aspects of our lives. The food we eat is only one part in a whole system. The thoughts we think, the information we consume, the people we interact with are equally important factors for our health and overall wellness. The process of curating our life will take knowing ourselves, questioning ourselves and letting go of the old as much as integrating the new. Being mindful of the choices we make, and most of all, actually making the right choices, will not only empower us but also bring a new sense of meaning and depth to our experience. With the season upon us, a little “spring cleaning” in our lives only seems appropriate. Here are some basic guidelines: First, the rule of thumb. If it’s draining your energy then it should probably be out, by default. Things, people, places that are meant for you will energize you, bring you joy, fill you up not deplete your “battery.” Focus on spending time on what and with whom recharges you. Second, ask yourself how does this make me feel? Let that be your guide. Is it a case of instant gratification? Instead, seek consistency. Focus on what contributes to your life in a long-term sense, the meaningful things, the real stuff. Cultivate that which brings a long-lasting sense of wellbeing, joy and contentment. Third, ask yourself, is it in alignment with the person I am and who I want to be? This is crucial to the process. Often, by saying ‘yes’ to someone or something, we say ‘no’ to ourselves and what we truly want and need. Turn it around. Start saying ‘yes’ to yourself. My hope is that you are inspired to experience life more fully and authentically. May you be sparked to choose those things that genuinely speak to you and thrive on that while releasing what no longer serves you. Let the decluttering begin!

lants have been used for medicinal purposes dating back to ancient times and still today, herbal medicine is the mainstay of many traditional healing systems like Oriental medicine, Ayurveda and African medicine. Plants contain alkaloids, which are biologically active chemical compounds found in the leaves, flowers, roots, stems and seeds. Morphine was the first individual alkaloid ever isolated and was derived from the opium poppy in 1804. Since then, plant alkaloids have been used to develop many pharmaceuticals because of their wide range of medicinal activity. These compounds can relieve pain, kill bacteria, dilate blood vessels, regulate heart rhythm, lower blood sugar and fight cancer. Examples of pharmaceuticals containing plant alkaloids include the blood thinner Warfarin, which is derived from sweet clover and the anti-cancer drugs Vincristine and Vinblastine, which are derived from the Madagascar periwinkle. Terpenes are another type of chemical compound produced by plants. Terpenes typically have a strong odor and are the main component of essential oils. Essential oils are commonly used to invoke relaxation (lavender, rose, yang ylang), aid digestion (peppermint, ginger, fennel) and boost the immune system (lemon, tea tree, eucalyptus). Terpenes are active constituents in both natural remedies and pharmaceuticals. Full-spectrum CBD oil, made from the Cannabis plant, contains terpenes as well as phytocannabinoids which help produce its pain-relieving, immune boosting, calming and relaxing effects. Taxadiene is a terpene that comes from the yew tree and is used in the synthesis of the chemotherapy agent Taxol. Herbal medicine is increasingly being used to treat illness by those seeking a more natural approach to healthcare, either as a stand-alone treatment for specific health problems or in conjunction with modern medicine. Often, plant-based medicine is capable of producing a similar effect to a pharmaceutical, often without the unwanted side effects. Mouth Maintenance Common Myths
W
ith spring coming to an end and summer fast approaching, many of us have plans to enjoy a vacation. Many will be driving for those summer vacations. We’ll go through the common maintenance required for our vehicles: oil change, transmission fluid exchange, break pad wear, etc. What about the maintenance of our mouth? For this installment, I hope to clarify some of the most common myths I hear in our office from patients.
Myth #1: Sugar will rot your teeth. Although we’ve all heard this common tale, its simply not true that sugar rots your teeth. However, all mouths have bacteria which live on our teeth. When we eat sugar and carbohydrates, the bacteria feeds on these sugars. Finally, the byproduct of the bacteria eating those sugars is acid. It’s acid that ultimately breaks down tooth structure and forms cavities.

hen designing a kitchen, countertops can be one of the most difficult materials to select. Not only do they make one of the biggest aesthetic statements in the kitchen, they’re also the most used surface. Every client’s taste varies based on what they think is the most attractive countertop, and how the space will be used. Some cook in their kitchen every day, while others see it as a place to store their coffee mugs and wine glasses. Below, I’ll explain some of the pros and cons of three of the most popular countertop materials. Marble is one of the most beautiful selections one can make for a kitchen. This is what most of my clients see in the pictures they bring me of their “dream kitchen.” However, I have to be honest with them and tell them that it comes with a cost. Marble is both expensive and difficult to maintain. It requires special care as it can chip, scratch and etch easily. Etching is caused when something acidic like wine or lemon juice is left on the counter without cleaning. This can take the finish off, causing a dull spot. If you don’t mind this and like the more aged look that marble is really intended to have, it can be a great product. If you’re like me and want things pristine, but don’t trust yourself or your family to keep them that way, you might want to look at other options. Granite has long been one of the most popular countertop selections. Anyone who has ever watched HGTV House Hunters knows that granite countertops were a must for many homebuyers, especially in the early 2000s. Unfortunately, because of its popularity at that time, granite is now often thought of as overdone and dated. However, I’d like to note that because it is a natural product, there are infinite patterns and colors available. Some of the more “exotic” granites can give you the drama of marble without the maintenance. Granite is a hard, dense material that is resistant to scratching, heat and the aforementioned etching. This material should be sealed every year for best results, but overall is relatively maintenance free. Manmade quartz is one material I find people are most confused by. Much of the confusion lies in the fact that there are so many manufacturers of this product. Many don’t realize that they’re virtually the same product, other than the different colors and patterns each company has come up with. Silestone, Pompeii, Ceasarstone and Cambria are just a few of the companies who produce this product. There’s also some confusion between quartz and quartzite. Quartz is an engineered product that is made by mixing pieces of natural quartz with a resin or polymer. Whereas quartzite is another natural product that is in between marble and granite on the scale of maintenance difficulty. Quartz is extremely dense, which makes it very resistant to chipping or scratching. However, its density makes it less resistant to heat. If you were to place a pan straight from the oven directly onto the counter, it could cause discoloration. It comes in a variety of patterns, and because many are meant to mimic natural stone, it can be a good option if you are wanting that look without the worry.

Outsourcing For a More Simple, Stress-Free Life
O
utsourcing has been around forever. But how many people actually use it to simplify their lives? I’ll be honest with you, I’ve always been the “do it yourself ” type of person. I believe my mother referred to me as stubborn, but I prefer being called a perpetual DIY’er. My attitude was “Why should I pay someone to do something that I’m perfectly capable doing myself?” along with an extremely forceful arm fold (maybe stubborn is the right word). The fact of the matter is, I’m usually able to figure out the project I’m working on, but sometimes at the expense of my own sanity and those closest to me. When I look back at some of the projects I’ve taken on, how much time they consumed and the anxiety I felt while dealing with them, it seems almost silly that I never sought out help. How many of you can relate? Have you considered the time and money lost while struggling through something you’re really not qualified to do? My moment of awakening came when I started my business. I did everything myself (again with the stubbornness). I researched, designed, and started over at least a dozen times. It wasn’t easy, but I struggled through it all and started my business. Now, looking back, I wish I would have paid someone to do all of it for me. The amount of time I spent and frustration I endured was not worth it. There were long, sleepless nights and so much stress. And the real kicker is that when I finished, it wasn’t even that great. It was a hard lesson to learn. So now I outsource all the things that I’m not qualified to do, or don’t have time to do. It was sort of a kick to the ego to admit I needed help, but the ego will always heal, and my world became a calmer, more simplified version of itself. Yours can be, too! I challenge you to take a look at your life and find one thing that consumes too much of your time or causes too much stress and outsource it. Once you outsource that one thing, put all that saved time and energy into doing something you truly love! As always, I’m here to help when you need me.

he cat is out of the bag. Evidence increasingly shows that plant-based diets are superior to the overconsumption of meat that has become the new normal in the United States. Research indicates plant-based diets lower the chances of heart disease, help with weight management and leave a much smaller environmental footprint on our natural habitat. Having grown up eating traditional Italian fare, this news has been hard for me to swallow. However, the message is not that meat should never be consumed. In a study published in the Journal of the American College of Cardiology July 25, 2017, researchers found that simply reducing consumption of animal products would only be effective if the right kind of plant foods are then consumed. This means unprocessed, wholesome foods. Technically cold pressed juices and açaí bowls are “processed,” but in this case, the processing is not eliminating the vitamins and minerals that are the foundation of what makes a plant-based diet ultimately better than the alternatives. Dillard’s Vero Beach Going Above and Beyond for the Customer
I
moved to America from England in 2004 and have been in retail for 16 years. I began my career with Dillard’s in 2009 in one of our Nashville locations as a men’s area sales manager. Since then, I’ve had the opportunity to live and work in Kentucky, Tennessee, Indiana and Tampa, Florida. Each move brought a new promotion and a new way to serve as a contributing team member to the Dillard’s team. I’m currently the Assistant District Manager for the state of Florida. In our district, we have 29 stores and 2,500 employees. One of the most important and critical reasons I chose Dillard’s and aim to excel year after year is due to the company’s mission statement: “The Company focuses on delivering maximum fashion and value to its shoppers by offering compelling apparel and home selections complemented by exceptional customer care.” In my opinion, there’s currently a resurgence in customers looking for exceptional hands-on, high-touch service. It’s important that our teams go above and beyond to provide this type of customer service to every client they come in contact with. An analogy I like to use to convey this to our teams is: I think I could be very successful now with a chain of gas stations that are full service where you pull up and we pump the gas and clean the windshield for you, making the experience as effortless as possible for the paying patron. We want to be looked at as the retail store that goes above and beyond to give exceptional service with minimal effort for the clients we are working with. There are many services offered in store that many, if not most, don’t even realize are readily available to them. Some of these services include, but are not limited to, custom monogramming, tailoring, gift-wrapping (and not just at the holidays), gift baskets, as well as wedding registry and custom suits. One of my favorite principles that Dillard’s prides itself on as a company is having strong family ties and values. I love being able to work for such a large corporation that values its employees as well as their families. One of the ways we show appreciation to our team is that we still have never opened on Thanksgiving. As a corporation, we believe in treating our employees as assets and allowing them to have that time with their families rather than focusing on a making a profit. It has never been the goal of Dillard’s to be a big box retailer, but rather be your local go-to department store and an active contributing part to our communities. I appreciate the opportunity to share a bit about myself as well as Dillard’s and look forward to seeing you and your families in the stores in the future. My team and I are always here to help. The Garden and the Bee Keeper
A
few years after the 2009 housing crash and recession, my wife and I bought a 10-acre farm west of town. She had two rescue horses, and before long, we built a small barn and added to her collection. Once the horses were settled in, I started on my next weekend project: building a garden. The first year I planted lettuce, kale, a variety of peppers, tomatoes, cucumbers, mint, squash and various vegetables. Next door was a development project that died with the housing market and someone parked a flatbed with 50 bee boxes on it. A few months later, my trips to Publix became less and less. We were stocked up with fresh vegetables and everything grew. I was learning to pickle cucumbers, make kale chips, and create salads galore. Even my chickens were benefiting from the garden’s output. It was quite rewarding to eat an entire vegetarian meal all from our very own backyard. I noticed bees were everywhere that year, in every cucumber flower pollinating and doing their thing. They spoiled me and made me think my thumb was quite green. The next year, new homes were constructed on the once abandoned subdivision and the bees disappeared. Sadly, the garden did not flourish. There were no dinners from the backyard. It’s quite possible the weather and other elements were to blame, but I convinced myself the lack of bees were part of the equation. Around that time, a video went viral about the Flow Hive. I immediately purchased one. Assembly wasn’t too challenging and after a meeting with Nick, the local owner and operator of No Kill Bees, we installed the bees into their new home. It’s been one of my favorite hobbies ever since. We currently have two hives and they provide 10-15 gallons of honey annually. It’s plenty for 84

my wife and I, and really anyone else who says they like honey. The different seasons come with different flavors and colors. It’s amazing to sit and watch them work. I don’t claim to be a bee hive expert, but I’ve become pretty comfortable working with them. During the hurricanes, I strapped them down into cement pilings and they thanked me with 3-4 gallons of honey a few months later. The garden is now my parents’ responsibility, who live here locally. My job is to make sure the bees are happy. It’s important to stay safe, wear protection, educate yourself, watch videos and consult with an expert to get started. Bees and other pollinators are important not only for humans, but for the entire ecosystem. They are our friends. And, ever since the bees returned, my garden has continued to produce. pring is in the air and the fishing is about as good as it gets. The inshore fishing has been really good with the Indian River Lagoon getting cleaner. With new turtle grass and good filtration, the water has been as clear as I can remember. The flats and spoil islands are rich with speckled trout, big snook, and more redfish than most of us have ever witnessed. Let’s all do our part and help support all the great efforts that the local community is working on to help keep our estuary healthy. Bring on the spring weather! V
ero Beach is “the gateway to the tropics,” an assertion backed up by the myriads of swaying palm trees that line our boulevards, beaches and gardens. There are approximately 2,600 species of palms, and because of our climate, many of them can grow here. The most common varieties, such as Cabbage or Sabal, Coconut, Foxtail, Christmas (Adonidia merrilli), and Sylvester (Phoenix sylvestris) are practically household names. Indoor plant enthusiasts know Cat (Chamaedorea cataractarum) and Bamboo (Chamaedorea seifrizeii) palms, and homeowners seeking privacy know the Areca (Dypsis lutescens), which is used for its instant “hedge” effect. These palms might be most abundant, but that doesn’t mean they’re the only options for your garden. When we design landscape projects, we rely on plants that we know are suitable to the environment and will be successful, but we also like to introduce new ideas to our clients. Palms are a great way to do this. Three palms that do very well in our area but are not seen as much include the Florida Thatch, Foxy Lady, and Elegant palms. Florida Thatch (Thrinax radiata) is a durable palm that is salt and drought resistant. It will thrive if given regular fertilizer and water in extreme drought conditions. It doesn’t have any regular pest issues or nutrient deficiencies. It’s a solitary palm that can perform well in sandy soils. For some, the Thatch palm is the essence of Florida. The Florida Thatch palm is a close cousin of the Key Thatch palm. The Foxy Lady (Wodyetia X Veitchia bifurcatum x arecina) is a hybrid palm that is proving to be quite durable and aesthetically pleasing. It’s a cross between a Foxtail and a Montgomery palm. It can grow rather tall, providing an elegant option for larger homes. It’s very tropical in appearance but can tolerate colder weather. The Elegant (Carpoxylon macrspermum) pictured— is a majestic palm. It’s an excellent choice for any palm enthusiast. It has a solitary trunk and is best showcased or highlighted when planted by itself. It does require full sun and consistent water. As spring arrives in the tropics, add the iconic palm tree to your garden. It only takes one palm to transform your garden and transport you deeper into a tropical paradise.

W hat’s for Dinner?
he pet food industry has exploded with so many choices. These days, turning food bags around to read all the labels can be overwhelming. Checking protein levels, omega fatty acids, antioxidants, where the food is produced and ingredients sourced while considering other qualities such as texture, palatability and freshness are important. It’s a good idea to stick to true and tested brands that have had no or very few recalls over the years. In general, feeding a kibble-based food from a reputable food company will ensure a balanced nutrient level and a reliable source of food for your pet anytime, anywhere, especially during times such as travel or hurricanes. BEACH SAFETY BE AWARE OF TIDES: Always be aware of the tides when you are at the beach. Respect the ocean and stay safe.
BE AWARE OF DANGEROUS RIP TIDES: Rip tides are strong currents that can pull a person away from the shore. If you get caught in a rip current, do not panic or struggle. Swim parallel to the beach and call for help. Never swim alone. Don’t swim out farther than you can swim back. It’s always best to swim near a lifeguard station.

REPORT VIOLATIONS OR INJURED WILDLIFE: If you discover injured wildlife or suspect a fish, wildlife, boating, or environmental law violation, report it to the Florida Fish and Wildlife Conservation Commission, (888) 404-FWCC (3922). Cell phone users can dial *FWC or #FWC, depending on service provider. RESPECT THE WILDLIFE: Remember to do the “Stingray Shuffle” when entering shallow water to warn any stingrays that you’re coming into their territory! It’s always a good idea to keep a small bottle of vinegar in your beach bag to quickly treat jellyfish stings. If snorkeling, be sure not to stand on or touch any reefs or wrecks. Respecting the wildlife helps ensure a successful beach day. LIFEGUARDS: Several places throughout the county offer lifeguarded beaches. At each station, signs are available to notify beach goers of current surf conditions along with appropriate beach flag warnings.
