editor’s note t’s that time of year again. The lazy, dog days of summer are winding down. School has resumed and our late summer evenings begin to grow darker earlier. Fortunately, we don’t lose our summertime weather for many more months, which means fresh fruits and vegetables directly from our local farms will still be available for our tables. In this

issue, you will discover the earthy deliciousness that is grown right here in our area. We have found some amazing local farms where fresh veggies, farm-fresh eggs, and poultry can be purchased. In addition to our area’s farms, we are fortunate to have wonderful farmers’ markets where produce can be purchased directly from our local farmers on Fridays downtown, and every Saturday morning on

Ocean Drive and in downtown Ft. Pierce. If cooking isn’t your thing, we have highlighted a few of our local restaurants that prepare the freshest entrees using organic, local, and small farm goodness. I have met some amazing people who are cultivating beautiful gardens and who are donating their time to teach others how to do the same. As a mom, the issue of our nation’s children with unhealthy eating

home grown Today, we are squeezed in every direction. We race through life to doctors’ appointments, meetings, errands, and kids’ activities. We tend to grab food quickly without considering its nutritional value because it is fast, easy, and convenient. The status of our current health reflects these poor choices. Obesity, high blood pressure, cancer, and diabetes are just a few of the “common” ailments that daily threaten our health. Luckily, Indian River County has several local farming operations, from the small farmer like Osceola Organic Farms to the large expansive farm of B&W Quality Growers in Fellsmere. Discover our farmer’s markets and locally grown fresh produce. You’ll be glad you did! Gardens are showing up everywhere! Plant a seed and see what takes root! You don’t even have to have a yard. Gardens can be grown out of containers on a concrete patio. Gardening is a skill and hobby for some, but to the upcoming generation, if there isn’t an “App” that can be downloaded on a Smartphone, they are clueless. Isn’t it time we go back to the basics of small farm operations and teach our children the lifelong skill of being self-sufficient? If our children don’t have these skills, how will their children learn them? Community gardens, school gardens, and neighborhood gardeners, like the Shining Light and Heathcote Botanical Gardens, are growing crops for local food banks. Gardening brings people together and the perennial quest to grow things reveals an inherent human need to connect to the earth—it is our home after all! No matter how much we are governed by technology, we may always need to bond with our Mother Earth.

Osceola Organic Farms

Organic.

Meet Kevin O’Dare, local gardener extraordinaire. He produces organic veggies and edible flowers on his USDA certified, organic ten-acre farm on the west side of town. He has been cultivating his love for organic gardening for the past 19 years and he has been certified organic for the past 16. Kevin is passionate about his love for gardening and is best known for his organic greens and tomatoes. He believes sea water helps him grow the best, sweetest tomatoes possible and heads down to the beach early each morning to collect jugs of sea water for them. He personally delivers his product in addition to meeting with local chefs. This gives him true insight as to what his clients want. As a result, he has developed fond friendships and respect for all of them. Kevin’s outlook is simple. He believes in growing only the best produce in the simplest way. When speaking with him, his love for Mother Earth shines through and he hopes to inspire and cultivate a new generation of farmers. You can find Kevin at the Oceanside Farmer’s Market every Saturday. Osceola Organic Farms opens the first of September and runs through May. For more information, please call Kevin at (772) 567-1530, 6980 33rd Street, Vero Beach, FL, www.osceolaorganicfarm.com. www.portfolio-verobeach.com

CRAZY HART RANCH Linda Hart has a “heart” for poultry. She raises chickens and turkeys and is fully licensed with the USDA and Department of Agriculture. Her farm, Crazy Hart Ranch, produces pastured poultry that is free from antibiotics, hormones, and animal byproducts. Linda uses sustainable farming methods so that the environment is not polluted and the earth’s resources are not depleted. Her animals are raised humanely in a natural environment. The end result is a product unmatched in quality and taste. Linda’s farm is located in Fellsmere where she starts with chicks that are about three to eight weeks of age. She feeds them a specific high protein diet and they also get to roam her farm and eat bugs and grasses like nature intended. At three to four weeks of age, she produces a Cornish hen. At around six weeks, she can produce a chicken and at eight weeks, a roaster. Although each comes from the same species of bird, the specific breed is produced through different growing cycles. Linda breeds and hatches her own turkeys in order to maintain consistent quality every year. She raises her young turkeys in a similar process to growing her chickens. If you are looking for a fresh turkey for the upcoming holidays, be sure to reserve your bird early! Crazy Hart’s poultry can be found on the local menu at Chef Chris Bireley’s Osceola Bistro and occasionally at private clubs. Crazy Hart’s Cornish Game hens are a popular fare at The Moorings Club, where Executive Chef Michael Lander is a tremendous supporter of local farms. Many of the chefs from our local restaurants and private clubs support our local farmers and local agribusinesses. You too can show your support by visiting the farmer’s markets, local farms, and by requesting locally grown products at your favorite grocers. Your local support not only provides your family with healthier eating choices, it also supports our local economy. Linda sells her poultry at the farmer’s markets here in Vero Beach and Ft. Pierce. To contact Linda directly, please call (772) 913-0036, or check out her website at www.crazyhartranch.com.

SHINING LIGHT GARDEN Joel Bray is a shining example of cultivating a labor of love. He founded the Shining Light Garden, just west of 66th Avenue on 49th Street. Joel not only has a passion for the earth, but he has a passion for helping the homeless, the hungry, and the forgotten. His mission is feeding the hungry, one garden at a time. Every single plant harvested at the farm is donated to local food banks. This summer, Joel planted rows and rows of zinnias, sunflowers, and cosmos. He donated these fresh cut flowers to the VNA Hospice program where they were sure to brighten someone’s day! Shining Light Garden is seeking volunteers. There is something for everyone at the garden, even for those without a green thumb. Other ways to show your support are by sponsoring a fundraiser to help raise money to purchase seeds and equipment, direct donations, and to help spread the word throughout our community about the work done to feed nutritious and wholesome locally grown produce to those in need. You can also invite the folks from Shining Light to speak at your civic or religious organizations, or service clubs. To find more information on these local farms and more, visit www.localharvest.org. For a complete list of all our local farms and local agribusinesses, please check out our new Buy Local listing in our Eat Shop Play section. For more information, please contact Joel Bray at (772) 539-3752, or Greg Vafiades at (772) 532-8777, www.shininglightgardenfoundation.com or find them on Facebook.

Composting 101 C

ompost is the result of the decomposition of organic materials and long before people began making compost piles, it was happening organically. Everything that comes from the Earth goes back to the Earth, and this is the natural rule that has kept the Earth clean for as long as it has hosted life. Without the agents of decomposition, the Earth would be overrun with plant and animal waste. Imagine if every leaf that fell to the ground never changed, or every creature that perished, simply stayed where it fell? Through all the changes the Earth has experienced, everything that has come from it has returned to it. Curious? What may sound like science fiction is nothing more than nature’s fascinating universe of creatures that makes up the work force of an everyday compost pile and in turn, makes the earth’s finest soil. The average homeowner can make compost happen in a backyard without understanding the science behind it. However, if you want to be the master organism in charge of the compost, and you have never made a compost before, it is important to know how your kitchen garbage and yard waste can become the finest soil a plant could want. Some of the smallest organisms responsible for the decomposition of organic material are bacteria. What are they doing there? They are eating, reproducing, and dying at a furious rate. They are also being eaten. Slightly more visible diners in the compost are fungi, mold, and yeasts. One organism that cannot be seen can be recognized by its signature odor. It is called Actinomycetes (Ak-tin-o-my-seats) which lends compost and soil that desirable, earthy fragrance. There are also many insects in the compost café.

It is like a giant, “all you can eat,” 24/7 buffet! So, we now know decomposition happens because organisms eat organic matter, but how do we know which organic materials to put into our compost? You can use kitchen vegetable garbage and old plant debris like dead leaves. Eventually, with the combination of dead leaves and kitchen garbage, the pile will develop a pleasant, earthy scent. Kitchen wastes are called nitrogen, (green wastes), whereas dead leaves are called carbon (brown wastes). For every bucket of nitrogen (green wastes), you will want to add 4 to 5 buckets of carbon (brown wastes). In addition to kitchen vegetables, green wastes are manures, grass clippings, green hay, fresh seaweed, and green leaf clippings. Dead leaves are brown wastes and so are straw, tea bags, coffee grounds and coffee filters, fine cut wood mulches, sticks and twigs, sawdust, shredded newspaper, and torn cardboard. At first, you may need to mix or turn the nitrogen and carbon wastes in your compost pile. Once decomposition starts, and even if you add more wastes, as long as you add layers of greens and browns (nitrogen and carbons), your little cafeteria workers will mix and aerate your compost for you. If you place your compost in a shady location you will not have to water it very often, and if it is beneath a shade tree, you will get the benefit of fallen leaves for your compost as well. In order to work properly, a compost pile needs a certain mass or density. The space for composting wastes should be at least 3 feet, by 3 feet, by 3 feet, before moving on to a new pile. As the pile breaks down, the volume of the compost will diminish by more than half. I have never met anyone who made too much compost. Every season, we all wish we had made more. The organisms we desire in our compost will come from the organic material we put into it. If there is enough mass, air, and moisture the organisms in it will begin eating, and in a few months your compost pile will begin to resemble the Earth’s finest soil.

Adina coordinates the activities of the volunteers at Heathcote’s No Till Organic Garden where vegetables are grown year round and donated to the In The Image Of Christ food pantry for distribution to needy Fort Pierce residents. She is passionate about helping others take a more holistic approach to home agriculture, and offers a variety of consulting services for her clients’ gardens. Adina helps her clients take the guess work and difficulty out of organic gardening by offering a more natural and efficient approach to growing food. To this end, she is available for one-on-one consults in her clients’ gardens, offering garden construction or the delivery of garden amendments for gardeners who can’t do it themselves. She is also available for group classes in your garden. These garden parties offer small groups a way to share the cost while learning hands-on, how to construct an instant vegetable garden or compost pile, with the host getting the finished product. You can meet Adina most Saturday mornings, 8 a.m. to noon at the Downtown Fort Pierce Farmer›s Market, or at Heathcote Botanical Gardens on those Saturdays classes are offered there. the Egg-scellent Challenge

R

aising chickens is not difficult and they provide many garden benefits, such as control of pests and some weeds. Of course, the major benefit is the continuous supply of organic free range eggs. Farm fresh eggs or store bought? That is my question these days, among others. As a mom, I strive to make healthier choices for my family. Recently, a friend gave me a dozen farm fresh eggs. I swear I made the best egg salad on the planet with them! Now I am hooked and I only want fresh eggs. Eggs from a local farmer can be bought for about $4.00 a dozen. Yes, the cost is a little bit higher than what you pay at your grocery store but these eggs are from cage-free birds that

spend their lives eating mostly grass and bugs (which is what they are supposed to be doing!). They are happy and loved pets for the most part and are not stressed by living in overcrowded cages. (Note: The USDA requires all farm fresh eggs to be labeled for pet consumption only, you will see this label at the farmers’ markets. None of our local farmers are USDA-certified for egg production— a long and lengthy process that is usually not worth the hassle for the small, local farmer.) In Vero Beach, outside city limits, a household can have up to three hens as long as the home is not within a Home Owner’s Association neighborhood. In rural areas, as many chickens as wanted is permitted.

Sauté for 4 minutes and add the spinach. Season with salt and pepper. Remove from heat and cool. De-bone the game hen or buy a boneless game hen. Place the stuffing (1.5oz) in the thighs and center of the breast and roll up. Using butcher twine, tie the game hen to seal the stuffing. If you don’t have butcher twine, roll the game hen up in plastic wrap and let sit in refrigerator for at least 2 hours. This helps hold its shape when cooking.

Now it’s time to put it all together. Heat a tablespoon of olive oil in a sauté pan over medium heat. Remove the plastic wrap from the game hen and season with salt and pepper. Place in hot pan and sear the game hen until lightly brown. Place the sauté pan with the game hen in the oven at 350 for 7 minutes. While that is in the oven, put your fresh angel hair pasta in boiling water. When pasta is done cooking (4 minutes), toss with pesto. The pesto should lightly coat the pasta. Place the pasta on a plate (optional over a small bed of Arugula). Remove the game hen from the oven and slice. Place the game hen over pasta and garnish with pesto, for color add diced bell peppers. Enjoy!

Southern Red Velvet at Its Finest

L

Love it, hate it, or just don’t get it. . .Red Velvet cake is here to stay! In fact, Red Velvet is one of the top-selling cupcakes at Frosting, known at our shop for its moist texture and unparalleled flavor. This popular cake commonly consists of buttermilk, flour, butter, cocoa, and red food coloring. Cream cheese frosting is the traditional Southern accompaniment to Red Velvet cake and butter cream is also a common pairing. Named after its bright red color, this Southern staple originated in the 1940s when foods were rationed during World War II and bakers resorted to using boiled or grated beets as a moistener in their recipes. This, accompanied by the chemical reaction between vinegar and cocoa powder, resulted in a deep, red-colored cake. Over the years, the look caught on and rather than the purple tones of beets, red food coloring replaced them for a truer red color. Eventually, the cake was made famous by the New York City Waldorf-Astoria Hotel and received a second wave of popularity after its appearance in the 1989 film, Steel Magnolias, where the cake was seen inside an armadillo-shaped Groom’s Cake. Red Velvet cake has been surging in popularity ever since. For Red Velvet lovers out there: if the cake is done right, it tastes “like the holidays” or simply and perfectly put, “like home.” Recently, the cake’s concept has been altered to suit events or holidays, such as Green Velvet for St. Patrick’s Day or Pink Velvet for a baby shower, although traditionalists always prefer a red cake with a generous topping of cream cheese frosting. In addition to this combination, Frosting has a unique spin with its signature “Dirty Velvet” cupcake. Be sure to stop by Frosting to get hooked on the Red Velvet craze! Mindful Eating Tips • Be picky. Know where your food comes from. Buy organic whenever possible. Visit some of our amazing local organic farms for fresh, healthy options. • Empower yourself with knowledge of what your (and your family’s) nutritional needs are. There are many online resources, to choose from— myplate.gov is a good place to start. • Prepare your food. Take time to make 3 or 4 healthy meals you can enjoy throughout the week. • Shop along the outside aisles of the store; this is where the fresh foods are housed. • Don’t eat mindlessly. Pay attention to how much you are eating. Stop eating when you are full. • Don’t buy fried foods or those that are high in fat, sugar, or sodium. Simple, unprocessed foods are best. • Allow your palate to adjust to a diet that is full of nourishing foods and void of processed, overly salty, sugary and fatty foods. You’ll soon find that everything has more flavor and that artificially enhanced foods taste like exactly that—fake.

Eating Mindfully in the Age of Mindlessness

A

n integral part of any yoga practice is cultivating awareness, learning to “be present.” By shutting out the world around us, we draw our attention inward and focus on the present moment with our bodies and our minds. This takes our yoga practice to a deeper level, but the ability to let go of distractions and be focused only on the present moment takes time and patience to develop. Being mindful, however, goes a step beyond being merely present. Where being present asks that we be in the moment, being mindful requires us to process the information we receive by being present and then move intelligently from that place. For regular practitioners of yoga the concept of being mindful is often first experienced on the mat, but it soon becomes a part of their overall approach to life. After all, isn’t it more pleasant and productive to live in the present and appreciate what’s around you, rather than

24 September-October 2012

go through life in a fog, dwelling on the past or worrying about the future? Unfortunately, we live at a time when the opposite of mindfulness tends to prevail. We are so accustomed to running through life at full speed we have little time to notice, or enjoy, what’s going on around us. Hectic schedules leave no time for being present, let alone acting mindfully. As a result, our minds and bodies become exhausted and are improperly nourished; thus, the spike in a variety of illnesses including anxiety disorders, diabetes, heart disease, and obesity. The importance of maintaining a healthy, well-balanced diet cannot be overstated. How you think, feel, and act are all directly affected by what you eat. Being mindful of the type, quantity, and quality of food you put into your body will positively impact your life. Eating mindfully entails adopting a proac-

tive, enthusiastic and intelligent approach to food and eating habits. View food as fuel for your body, as well as pleasure. Take joy in the adventure of discovering new flavors and acquiring healthy recipes. Listen to your body and identify what it craves and what gives it energy. Give family members a chance to create their own healthy meals. It’s your body and your health; take charge of it by developing a mindful approach to eating and all you do. An Insight to Breast Cancer Care Options

O

ctober is Breast Cancer Awareness Month. According to the American Cancer Society’s most recent estimates for breast cancer in the United States, over 225,000 women will be diagnosed with new cases of invasive breast cancer in 2012. This equates to one in eight women to be diagnosed with breast cancer during their life times. Early detection, however, has led to better survival from this disease. Early detection methods consist of monthly self-exams, yearly exams by your physician, and routine mammograms. Early detection is your best chance for cure in breast cancer. Since 1998, health plans that offer breast cancer care coverage have been required to also provide coverage for breast reconstruction and prostheses. And yet, only 33 percent of eligible women with breast cancer undergo breast reconstruction. Published research shows that nearly 70 percent of women with these plans are not informed of their health care options. In fact, recent studies by ASPS Member Surgeon Amy Alderman M.D., has determined that the two dominant reasons women do not undergo breast reconstruction is that they are not informed of their options nor are they referred to a plastic surgeon for breast reconstruction. Reconstructive breast surgery has improved over the years and many patients elect to begin breast reconstruction immediately after mastectomy. Breast reconstruction can also be done after the mastectomy has healed. This is called delayed breast reconstruction. Patients that require aggressive chemotherapy and radiation therapy often opt for delayed reconstruction. Over time, some patients with breast reconstruction may experience changes in their reconstructed breast. These changes affect the appearance and softness of the reconstruction. If this happens, revision of a reconstructed breast may be necessary and often can be done as an outpatient procedure. It is important to know that these secondary procedures are also covered by the patient’s medical insurance. The American Society of Plastic Surgery is a great reference for breast reconstruction options. Visit www.plasticsurgery.org for more information. Ralph M. D

estination Tango’s goal is simple: to see Argentine Tango dancers from around the state converge in Vero Beach for a mix of sand, sun, art, dinner, dancing and then awaken to the smell of the sea wafting on the cool breeze in the morning. Marianela Tobar and Chris Runge, who together teach Argentine Tango every Sunday evening at Swingsation’s 14th Avenue Dance Studio located in downtown Vero Beach, host the series of events. On the fourth Saturday of each month, they will present instructors from South Florida, Columbia, and Buenos Aires with a series of Argentine Tango workshops followed by “La Milonga Para ti’,” a social tango dance that lasts until one o’clock in the morning. So it is said again, “The dancers becoming as one, as the music of the bandoneón intertwines them into a graceful, smooth and romantic motion, lost in the shadows on the dance floor and in each other’s arms…”—all right here in Vero Beach! weddings

E

Every bride wants her wedding celebration to be special. After all, this moment symbolizes a milestone for the beginning of a lifelong journey together. The event should be filled with personal reflections of each decision and every detail. Guests should also feel the excitement as the bride and groom’s stories unfold. The most cherished memories are the result of tiny, subtle details executed with precision. Check out these stemless champagne glasses available at Elegance by the Sea, in The Village Shops.

Special thanks to the bride, Holly Puff and the groom, John Kennedy.

I recommend that each couple approaches that special day with serious thought and focus about “who they are”! This translates into the style and experience created for the ceremony and celebration. My role as a planner is to edit and guide all the options available to ensure that the couple’s taste is a genuine reflection of who they are and is implemented with passion and grace.

Wedding Tips 1. Think about where your photography will take place and consider spending a little more on the floral arrangements for these locations. Suggestion: The cake table and the bridal table are key focal settings. 2. On a budget? Consider choosing a Friday for your ceremony; it will save thousands of dollars in your budget since venues and vendors are less pricey for a weekday commitment. 3. Entertainment can be diversified. Several musicians as opposed to one high-cost band not only will save money but can provide a unique and personal evening for guests instead of the usual gala. 30 September-October 2012

4. The possibility of redesigning your flowers to be enjoyed at rehearsal, ceremony, and reception can be explored. This money-wise idea is often implemented but guests never realize the flowers are rearrangements. Main florals are simply changed up with minimal modifications and addition of color to deliver a totally different artistic look. 5. Usually, an enormous concern is bar costs, but they can be lowered by serving only wine and beer. The addition of a “signature” drink for guests offers a personal touch as well as enhances what might be considered a limited bar. 6. Planners are hired either for full service or for limited service. A good planner will save clients thousands of dollars by offering expertise in handling details and making excellent use of vendor relationships to acquire great pricing. When planning an event as important as your wedding, entrust one person and place that person in charge to ensure the flow of the many aspects of your special day unfold with perfection. An event planner can coordinate and orchestrate the occasion’s timeline, obtain and oversee vendors, and guarantee that the stressful components that may take away from the enjoyment of your celebration are avoided. StyleYour Space It’s your home…

How many times have you left someone’s home for the first time and said “Who was their decorator, and what were they thinking?” Unfortunately, this is the norm. There is so much pedestrian, cookie cutter, matchy-matchy interior design work that is boring and uninspiring. The secret is to find a designer who has passion for their work, “taste” and the vision to see what YOU want. You either have an eye for color and shape or you don’t. It can’t be taught! Your home represents YOU! It should reflect your lifestyle and the things that you love; things that inspire you. Selecting the right designer is like trying on the perfect shoe. It should be comfortable, durable and look great! When you find the right designer, all they want is to magnify your dream of having a beautiful home with things that you love. If you don’t believe a piece is beautiful AND useful, why have anything at all? Interview your designers carefully and make sure they don’t force their decisions on you. Ask to see at least one home they have done, especially if it is a large project. Try not to choose someone that is a friend or a relative to help you. Your home is not their home and you don’t want your home to look like theirs. If you are a seasonal family, you need to decide if you want your Florida home to be an extension of your northern home or to have a tropical getaway feeling. The choice is yours and you should stick to it. Let your home be stylish not fashionable. Chanel said, “Style lasts, fashion fades.” Be eclectic, buy furniture and objects that speak to you not because it matches something or fills a space. Let your home be filled with things that make you smile every time you look at it. Be sure and join us next issue, where we’ll talk about the steps to begin your design project! The Art of Color H ave you wondered why someone would hire a designer? Or, when and at what times a designer should be hired? The appearance of the space we inhabit makes a difference in our homes and in our lives, so seeking expert experience and advice in interior design can make all the difference in the decorating process. Design and style choices are endless. The benefits of hiring a designer at any stage of your design project will ensure that color, style, and function are in perfect balance with you and your home. Billy Baldwin, Dean of Decorators, said, “Interior design is the art of arranging beautiful things, comfortably. No matter how taste may change, the basics of good decorating remain the same.” However, acquiring the right look requires some knowledge and the ability to combine certain materials, color, and form that work together in concert. Decorating freshens up a space and this can begin with color. Color is light and energy. Scientists have found that changes occur in humans when exposed to certain colors. There are true benefits!

www.portfolio-verobeach.com

Reds and oranges revive, energize, and stimulate. Blues, greens, and violets calm and soothe. Colors have a great effect on our lives, from what we wear to the colors we choose for our homes and surroundings. Through color, we express our moods and desires. Pantone Inc. is the global authority and provider of professional color

standards and is world-renowned as the standard language for color communication. The 2012 Color of the Year is Tangerine Tango, a spirited reddish-orange that provides the energy boost we need to recharge and move forward. “Tangerine Tango is sophisticated, but at the same time, dramatic and seductive,” says Leatrice Eisemane, Executive Director for the Pantone Color Institute. Interior spaces can be easily energized with Tangerine Tango by adding patterned home décor such as pillows, tabletop accessories, and throws. Want to add a pop of color to a room? Paint a hallway, entry, or kitchen for an inexpensive burst of energy! “Listening to our clients while meeting at their homes is ideal. We can offer ‘fresh eyes.’ Sometimes the simplest thing like a paint color can totally transform a room or even an entire house,” says Vickie Lautenbach, owner of Elegance By The Sea. Refresh your space. Decorate with color and make a difference where you live! Vickie Lautenbach Owner, Elegance by the Sea

Eighteen long years of hard work and it was the day I was supposed to be excited about celebrating my accomplishments. My family and friends had been arriving from all over the country for two days to commemorate my achievement of graduating from high school. The house was the typical graduation-day house, filled with tons of food, balloons, cheesy Dollar Store décor and presents. I was very excited to see everyone and to finally make high school a thing of the past, but in the back of my mind, while all of these graduation festivities were unveiling, all I could think about was going fishing. For the past few weeks the snook bite had been incredible. I had memorized the Sebastian Inlet tide table for the upcoming month, and I stocked plenty of tackle and liter. I was obsessed. The Inlet had become my second home and I couldn’t have been happier. And then, reality started to kick in; I was just hours from being a high school graduate and a flock of family and friends had arrived, ready to celebrate. Throughout the day, however, my obsession haunted me and I didn’t think I would be able to get my inlet fix that night. Since my graduation ceremony started at five o’clock that evening, and the tide changed into an outgoing tide around eight o’clock, I knew finding a way to the inlet would not be easy, but I was determined to fish the tide change. The graduation ceremony was a breeze. I remember thinking if I avoided the millions of pictures I was expected to take with family and friends, I would have

a better chance of getting to the inlet on time. I managed to ditch the ceremony by 7:00, rush home before my family arrived, grab my rod, and head east to my favorite place on earth. Leaving my family stranded did not make me feel good, but I knew what I had to do; I needed to catch snook. Not a minute past eight o’clock and I wasted no time to get down to business, launching bucktail jigs as far as I could into the current. Less than ten casts in and I already hooked up; man did it feel good! With my rod nearly doubled over and my reel screaming drag, after about five minutes of adrenaline packed action the beaut was in sight. I reeled the fish to the jetty, snapped a quick pic, and rushed home. I somehow made it back to the house in time and thoroughly enjoyed my graduation party. My mom, however, had noticed my brief absence. She pulled me aside to ask where I had gone. I simply replied, “ I had business to take care of.” I am her son, and of course she knew exactly where I had been, mainly because I reeked of fish. She left the disappearance alone though and we I managed to have a stellar graduation party. Thanks to great friends, loving family, and hungry snook, my graduation party will always be one of the finest nights of my life. Darren Brown, age 21 2009 SRHS alumni, Current Student at IRSC

TAKE YOUR TRASH OFF THE BEACH: Remove all your trash from the beach and find a trash can. Plastic bags can kill birds, turtles, and other sea creatures that can mistake the bag for food. Bring extra trash bags with you and do your part to help keep the beach beautiful. Love your ocean! SUPERVISE CHILDREN: Stay near your children and keep your eye on them. Never let children play in the water unsupervised. Play close to a lifeguard station. Teach your child to respect the ocean too. BE AWARE OF DANGEROUS RIP TIDES: Rip tides are strong currents that can pull a person away from the shore. If you get caught in a rip current, do not panic or struggle. Swim parallel to the beach and call for help. Never swim alone. Don’t swim out farther than you can swim back. It’s always best to swim near a lifeguard station. REPORT INJURED BIRDS OR MAMMALS: If you find an injured bird or mammal, do not touch it. Call 911 (non-emergency) and they will notify the proper authorities.

LIFEGUARDS: Several places throughout the county offer lifeguarded beaches. At each station, signs are available to notify beach goers of current surf conditions along with appropriate beach flag warnings.
