I
Ain’t no cure for the summertime blues… It’s hard to believe that fall is almost here. As excited as I am to return to regular routines, I am saddened to lose the playful, unscheduled days of summer. Luckily, we live in such a beautiful place that we don’t have to give up summer entirely! We can still play in the evenings and on the weekends! This issue we decided to showcase a different side of the Treasure Coast. A side that is just as beautiful as our beaches, if you know where to look. In celebration of Florida’s 500th Birthday, we focused on Old Florida and our state’s very diverse wilderness. Life out west boasts this diverse wildlife and a natural beauty. We’re celebrating the hunt, even if you aren’t a hunter. To some, it is a family ritual, a passing of the torch. Vero has had many generations of skilled hunters. There are several members-only hunting organizations, along with state property and even private land that has been hunted for generations and generations. I loved visiting South Florida Shooting Club and watching grandfathers shoot skeet with their grandsons. There were dads practicing with their sons and an impressive female turnout at the club too! So no matter what your age, you can take up a new sport, or hobby, or just brush up on old skills. October brings us the beginning of hunting season, at least for our waterfowl. In this issue, you’ll also read about the vital role of man’s best friend and how a pet can also be your best hunting buddy. Mike Sommers shows us how he trains dogs in obedience and to properly retrieve on a hunt. So this fall, we hope you take a walk in the woods, stay in a cabin at Quail Creek Plantation, sit by a campfire and tell a ghost story or two, and listen to the quiet side of our Treasure Coast. You just might enjoy being one with nature; I know I do.

hen you think of things to do in Vero Beach, you might think all there is to do here is surf, fish and play at the beach. But did you know that our Treasure Coast offers a variety of hunting options too? Our harvested wildlife consists of deer, gator, waterfowl, turkey, quail, dove and even wild boar. Of course, there are permits required and restrictions that hunters must abide by but overall, it’s a sportsman’s paradise. Florida is known as a thriving hunting destination. Whether at a private hunt camp, your own family land or a member’s only hunting facility, the tradition is alive and well. Our forefathers hunted for survival and to live off the land, and now the ritual and sport of hunting has been passed down for many generations. As a child, your early days as a hunter probably started out with shooting targets or even empty cans. Hunting requires patience, listening skills and quietness; life skills that we all need, even if we aren’t hunters. It’s about respect for a weapon, not a toy. Hunting is more than just shooting a gun in the woods. It’s about survival skills. It’s about walking into the woods and knowing how to walk back out…without getting lost while each movement is carefully thought out in order to walk in silence. You have to think constantly about each step you take so you don’t step on a branch or a leaf that crackles and scares away your prey. Hunting is a life lesson, one that is surely to disappear if we don’t pay attention. Sure, hunting is a big part of the whole experience, but there is really so much more an adult needs to instill into future hunters before they ever pick up a weapon and march off into the woods. Things like gun safety should be a first priority, hunting ethics and dealing with the death of an animal are all things we as adults need to help young sportsmen and women understand. Without the hunt, our wildlife population would be out of control. Similar to the farmer who must harvest his fields, our woods and forests need to be harvested as well to control our wildlife populations. You can enjoy the sport of hunting without interacting with a real animal. Clay and skeet shooting are ways that you can still participate and get out on the range. As a nation, we’ve lost the ability to turn the world off. To take a quiet walk in the woods to study a rare species of bird, a flower, or even an animal. To learn to love a different kind of noise, perhaps the sound of an owl, or a quail calling to its mate, or a duck announcing its incoming flight to the pond. These are all things that most are not fortunate enough to experience in their lifetime, yet they are available to us any day of the week. Hunting isn’t so much about the end result, but about the journey. Sitting in the woods, listening to all the sounds around you, a quiet peace and solitude comes over you.

ast the beaches, shopping malls and gated subdivisions is a special place where Florida still exists as nature intended. Located about an hour or so from Indian River County, these guided photographic trips emphasize a total wildlife experience. The reserve occupies over 4,000 acres of the most picturesque and game-rich land in Florida. It is the largest wild game preserve east of the Mississippi. Nestled among age-old cabbage palm and oak hammocks, pristine piney woods and open prairies, a variety of nature calls this land home, including white-tailed deer, alligators, wild hogs, quail, turkey, ducks, dove and snipe. There are also six species of exotic deer and four species of antelope, as well as the largest herds of Asian and European water buffalo in the United States. See Florida as it used to be from your seat aboard the swamp buggy. It’ll be an experience to remember!
Fort Drum (featured top and right), is a multi-recreational park for primitive camping, fishing, hunting (with permit) and birding. There is approximately 18,000 acres of a mix of wetlands, woods and fields. It is located west of I-95 off Highway 60.

SPECIES Dove – private land or by knowing someone that has an established field, sometimes pasture land or an old crop. Hunting License is required. Know your hunting seasons (phases). Waterfowl – private land (or knowing someone), state management areas (permits required), public lakes such Lake Okeechobee, Blue Cypress, Lake Toho, even certain areas of the Indian River Intracoastal Waterway (always verify this information with FWC, visit www.myfwc.com to learn more). Hunting license and Federal Duck Stamp is required. Turkey – private land and state management areas (FWC gives list). Eastern and Osceola species are in Florida. Hunting license is required. Quail – private land, state management areas (Three Lakes of 60 –west of Vero) and hunting preserves like Quail Creek Plantation. Quail hunting is the most common type of wing shooting on the Treasure Coast. Many people have fully trained pointers, retrievers, flushers and even tracker dogs which they hunt with. Wing shooting can be done without a dog, but if you are hunting for quail, you’ll need the assistance of a pointer to locate or find your game. Hunting license required. Always know your hunting seasons.

Deer, Hog and Alligator – All of these are traditional hunts for Floridians. When you mention hunting, most people think you are referring to these types of hunts. Always check with FWC for specific seasons. Alligator hunting requires hunting license and a special permit. Deer and hog hunts can be done with just a hunting license during their specific hunting season.

Keeping the Tradition Alive
B
y teaching our youth hunting and shooting skills; we are able to introduce the next generation to the great outdoors! A father or mentor can pass on knowledge, sportsmanship, conservation and even survival. It is important for our youth to respect the outdoors, understand the cycle of life, and preserve Mother Nature’s beauty. Take a hunting safety course with your child, even if you’ve already completed it yourself. Be involved. Teach our youth to preserve our land, and to respect it and the wildlife that calls it home. Young Guns of Quail Creek are a group of kids 3rd grade through 12th grade that are in a scholastic clay target shooting program. This non-profit group promotes
& teaches gun safety, clay target shooting and good sportsmanship. Kyle Kauffmann, a recent graduate of John Carroll High School, received a scholarship for Bethel University in Tennessee for his superb marksmanship. Kyle has been addicted to shooting for the past seven years. He feels that this sport has taught him responsibility, leadership and commitment. Way to go Kyle! ccording to Wikipedia, a shooting sport is a competitive sport involving tests of proficiency (accuracy and speed) using various types of guns. The shooting sports are categorized by the type of firearm, target and distances at which targets are shot at. Most people don’t consider shooting as a sport. South Florida Shooting Club is challenging that perception as it becomes Florida’s premier shooting sport destination. Leader of the Pack raining dogs is second nature to Mike Sommers. He’s the second generation to do so. Since his college graduation in 1974, Mike has trained all breeds of dogs for hunting and obedience as a professional dog trainer. His clients come from all over the nation.
Mike’s training and experience includes all phases of upland and
waterfowl hunting, obedience of all breeds, and participation in the
American Kennel Club (AKC) Hunt Tests. Mike is an expert at developing a dog’s natural assets and trains not only the dog, but also the owner/ handler. At the 2012 AKC Master National Hunt Test in Alabama, a black Labrador Retriever, Bynum’s Magnum Goose, Master Hunter, qualified and was awarded the Pewter Plate Trophy under Mike’s training and handling. As a breeder of Labradors and English field bred Cocker Spaniels, Mike evaluates dogs for breeding with an experienced, unbiased eye. Previously from Wisconsin where he owned and operated an all-inclusive sporting facility that included training, breeding, hunting and sporting clays, he now operates out of Jupiter, Florida. Have you ever been to Spook Hill in Lake Wales?
W
e decided to explore this historic little town west of Vero in search of a far more interesting tale. What we stumbled upon was a forgotten piece of Florida history that stole our hearts. Located in the historic downtown, we noticed an 11-story, art-deco style building that was boarded up and surrounded by chain link fence. We stood in awe. The top of the building is perhaps the most beautiful, decorated with strikingly colorful tiles arranged in beautiful patterns. As if the building could hear our silent pleas to see inside her, a man wearing a white hard hat walked out from the arched entryway. His name was Ray Brown, the current Project Manager. What luck, right? Ray invited us to take a tour of the old hotel, educating us on the history, architectural design, original fixtures and his hopes and dreams for returning the hotel to its original grandeur. He told us that we were standing in the once famous and world renowned, Dixie Walesbilt Hotel, built in 1926. Upon entering the lobby, we were immediately transported back in time. Stored inside this expanse of space were period pieces from the 1920’s. Sinks, faucets, chairs, tables, trunks, and chandeliers. Not only was Ray restoring the old building to its original façade, 24 September-October 2013
he was also making sure each faucet and fixture were original as well. Large, classically designed windows allowed light to pour into the room. Corinthian columns stretched from the marble floor to the fantastically designed ceiling. Ray plans to match everything from original paint colors to exit signs. What he can’t purchase, he intends to build.
Ray has worked on the project for over four years without any compensation or income due to the downed economy. His passion and commitment to this lost piece of Florida history is truly admirable. ccording to the American Urological Association, more than 50% of men over the of age of 60 will experience symptoms of BPH. Common symptoms of an enlarged prostate include: dribbling after urination, weak urinary stream, urgency, leakage, nocturia, and the feeling of being unable to completely eliminate urine. These symptoms may be a minimal discomfort or an intense pain, which is predicted to worsen with age. BPH is the most common benign tumor in men and as the prostate enlarges, the tissue stops it from expanding and applies direct pressure to the urethra. This irritates the lining of the bladder, which may mimic ailments of a urinary tract infection, prostate, kidney or bladder cancer. For appropriate diagnosing of BPH, four main tests may be utilized: Digital Rectal Exam, Prostate Specific Antigen (PSA) Blood Test, a Cystoscopy, and the AUA Symptom Index. These methods are used to determine the size of the prostate, rule out prostate cancer, and evaluate any obstructions. Recent research and studies have shown the benefits of acupuncture and Chinese herbal formulas in the treatment of elimination struggles associated with the prostate. Traditional Chinese Medicine treats BPH by focusing on clinical patterns of the urinary symptoms. Acupuncture can be used to improve the frequency of nocturia (urinating during the night) and relieve pain or pressure upon urination. Because Chinese Medicine is a preventative form of healthcare, treatments may vary depending on if the symptoms are a result of an acute flare-up or a chronic disorder. Bangkok Makes a Come Back Successful Restaurateur Introduces a Thai Tapas, Sushi and Wine Bar
P
ittsburgh restaurateur and awardwinning Thai chef, Norraset Nareedokmai, took over his second Treasure Coast area restaurant in June, Bangkok located in historic downtown Vero, now known as Bangkok14. He also owns Bangkok In Downtown, the Fort Pierce location. Norraset first entered the restaurant business in 2004 in Pittsburgh, where he had two restaurants. While in Pittsburgh, Nareedokmai won awards year after year and brought Thai food to an unmatched level in the restaurant scene. In the summer of 2012, Norraset was contacted by Sarah Tipfun, the original owner 28 September-October 2013
of both Bangkok restaurants. As circumstances would have it, Norraset was running a program in Pittsburgh to help recent graduates in the hospitality industry work abroad and then return to Thailand with American restaurant experience. Norraset liked what he saw in terms of opportunity and location, and decided to enter the Treasure Coast area’s restaurant market. Norraset’s dream was altered when the Vero Beach location caught fire and then again in October, with Ms. Tipfun’s legal difficulties. It was not until June of this year that he was finally able to make his vision a reality by acquiring both locations of Bangkok.
Norraset takes the craftsmanship and appreciation of Florida’s fresh seafood and compliments that with the bright zesty sauces of Thai food. Roasted Venison Loin CHELSEA’S ON CARDINAL 2-3 lb. Venison Loin Marinade 1 cup red wine 1/2 cup olive oil 3-6 crushed cloves of garlic Fresh rosemary and thyme Salt and pepper (to taste) 1. Trim all fat and silver skin from the venison. Whisk together marinade with red wine, olive oil, garlic, rosemary, thyme, salt and pepper. Place the loin in the bag with the marinade and let marinate in the fridge for at least 8 hours. 2. Fire up the grill and pre-heat oven to 425 degrees. Sear the loin on hot grill, at least 2 minutes on each side. Then place in oven for 6-8 minutes. Remove and let rest for 10 minutes. Chef Patrick Festa, Chef at Chelsea’s since 2007. Wild Boar Italian Sausage OSCEOLA BISTRO 4 lbs. Wild Boar (brined, see recipe below) 1 Tablespoon kosher salt 2 1/2 teaspoons ground black pepper 4 teaspoons fennel seed 2 teaspoons nutmeg 3 1/4 teaspoons red chili flakes 1/2 cup chopped parsley 1/4 cup champagne vinegar 12 cloves garlic (finely chopped/micro plane) 1/4 cup sherry (sweet) 2 jalapeños finely chopped 1. Take all ingredients and mix together. Marinate for 2 hours. Blend all ingredients through a meat grinder. Use the largest die first; repeat process with the smaller die. You can opt to put meat in sausage casing to form links, form patties or ground. 2. Chef Birely prefers to grill wild boar links and serve over stone ground grits with roasted bell peppers and onions. Freeze any leftover meat in one pound packs.
Wild Boar Brine 3 cups kosher salt 1 1/2 cups brown sugar 4 bay leaves 6 Tablespoons black peppercorn 4 Tablespoons juniper berries 1.5 gallons water 1 gallon ice Bring all ingredients (except ice) to a boil. Simmer for 10 minutes. Take off from heat and add ice. When brine is chilled it is ready to use. Brine the boar for 4 hours, if pieces are larger than 2 lbs. each. You can also dice the meat in small pieces and brine for 1 hour.
Note: Chef Birely suggests using the meat from a smaller boar, 80 lbs. and under, as it is less gamey. 30 September-October 2013

Seared Duck & Pickled Blackberry MICHAEL’S TABLE Seared Duck 2 locally sourced Duckling Breasts from Cheese and Quacker Farm Salt & Pepper (to taste) 1 tablespoon of oil (preferably Grapeseed Oil) Pickled Blackberries (make one week in advance of meal; see recipe below) Salad Mix Frisee, Raddichio, Bibb lettuces, and Garden Mint Blackberry Vinaigrette 2 tablespoons minced shallot 2 teaspoons Dijon mustard 1/2 cup blackberry pickling Jus 1 1/4 cup salad oil Prepare Salad Dressing: Whisk shallot, Dijon mustard and pickling jus until combined, while whisking slowly add salad oil. Season with salt and pepper to taste. Season duck breast with salt and pepper. Place in hot pan (high temperature) with Grapeseed oil, skin side down. Sear breast until excess fat is rendered and skin is crisp (3-5 minutes). Turn over and place in oven at 350 degrees for about 15 minutes or until desired internal temperature is attained (125-130 for suggested medium rare). Allow duck to rest for 10-15 minutes before slicing. Dress greens with salad dressing arrange slightly off center on your plate. Place sliced duck breast beside the dressed greens. Top salad with pickled blackberries. Chef Michael serves 5 per person. Enjoy! Pickled Blackberry Pickling Spice Bouquet: 1 Bay Leaf Shaved Ginger Thyme Black Peppercorn 1 lb. Blackberries 2 cups Red Wine Vinegar 2 cups water 6 tablespoons Sugar 3 tablespoons salt 1 shallot julienne Bring the spice bouquet, red wine vinegar, water, sugar, and salt to a boil. Reduce heat and simmer for 10 minutes. Place blackberries and shallots in a mixing bowl and pour liquid over them, cover tightly with plastic wrap and let sit on counter until cool. Place in cooler for 5-7 days to pickle.

Under the company name, Knees on Leaves, she hand makes every micro-ecosystem. When Katie is not in her garden, she is most likely at Full Sail University studying Digital Arts and Design, particularly 3-D modeling and motion graphics. She also enjoys stop motion photography and print design. Her studies and passion for mid-century modern design introduced her to the art of collaging nature. Katie’s consultant and business partner is her beagle named, Tucker. He is her little terrarium assistant and best friend. They go on long walks through local forests to gather air plants and clippings from fascinating succulents. It is here that she gets her inspiration for each handmade terrarium. Let me walk you through the remaking of the piece you see featured. This table was one of the saddest pieces we’ve had to work with. We discussed with the client what their vision was for the piece, for example,

their preferred colors and stains. Next, we consulted with Frank and Carolyn, our amazing and talented refinishers, to ensure we achieved the ultimate look for the client. When the client decides on a final finish, a quote for the project and estimated dates of completion are given. We take out all scratches and can replace and/or repair broken parts. During the refinishing, we confirm the absolute color choices with the client before the refurbishing begins. There were many steps that went into refinishing this project, from stripping, sanding, staining and the final finish. We take great pride in our finished product and
the end result is a beautiful piece of furniture. However, the very best part is enjoying the gasps and smiles on the clients’ faces when they see their old junk reborn into a fabulous new piece! Let’s go boating!
F
rom a family vacation on a cruise ship, to an offshore fishing trip, to the serenity of a solo paddle on the river in a kayak, people are drawn to the water. Only boating has the universal appeal that crosses and encompasses all ages and interests. Boating satisfies the soul and the mind, providing a true means of escape and “getting away from it all.” The water soothes, heals, brings us together and makes us smile. It makes for the best memories. A raft-up on the Fourth of July becomes a family tradition for generations. A weekend gathering on an island can be a social rejuvenation for friends and family. The best two days of a boater’s life? Saturday and Sunday of course! We live in a boater’s paradise; a seaside town with great inshore and offshore waters to satisfy every kind of boater. Not long after Ernest Hemmingway wrote The Old Man And The Sea, Vero Beach’s first “boat store” opened at the foot of the old Barber Bridge on what was then Route 60 and the only access to the barrier island in Indian River County. The boats and boaters that had come to Vero Beach from other locales now had a homeport. Vero Marine Center was born from a passion for the water, one that is still alive and well today. The crew at Vero Marine Center shares this passion. We too have “saltwater in our veins” and look forward to our time spent on the water with our family and friends. Surfing is also a popular recreation and several major competitions are held here every year. There are two museums within the park. The McLarty Museum features the history of the 1715 Spanish treasure fleet, and the Sebastian Fishing Museum tells the history of the areas fishing industry. Three miles of beautiful beaches provide swimming, scuba diving, snorkeling, shelling, and sunbathing. Canoeing
and kayaking in the Indian River Lagoon are also favorite pastimes. You will find the mile long hammock train, waterfront pavilions and picnic areas full-facility campsites and a boat ramp. SOUTH BEACH PARK Ocean Drive and East Causeway Vero Beach, FL Located over the 17th Street Bridge, past A1A, South Beach Park provides an ocean beach, lifeguard, boardwalk, dress and shower facilities, playground, picnic area, and dune crossover for catamarans. This is a popular beach due to its amenities, as well as easy access for both mainland and the barrier island. beach safety BE AWARE OF TIDES: Always be aware of the tides when you are at the beach. Respect the ocean and stay safe.

TAKE YOUR TRASH OFF THE BEACH: Remove all your trash from the beach and find a trash can. Plastic bags can kill birds, turtles, and other sea creatures that can mistake the bag for food. Bring extra trash bags with you and do your part to help keep the beach beautiful. Love your ocean! SUPERVISE CHILDREN: Stay near your children and keep your eye on them. Never let children play in the water unsupervised. Play close to a lifeguard station. Teach your child to respect the ocean too. BE AWARE OF DANGEROUS RIP TIDES: Rip tides are strong currents that can pull a person away from the shore. If you get caught in a rip current, do not panic or struggle. Swim parallel to the beach and call for help. Never swim alone. Don’t swim out farther than you can swim back. It’s always best to swim near a lifeguard station. REPORT INJURED BIRDS OR MAMMALS: If you find an injured bird or mammal, do not touch it. Call 911 (non-emergency) and they will notify the proper authorities. RESPECT THE WILDLIFE: Remember to do the “Stingray Shuffle” when entering shallow water to warn any stingrays that you’re coming
into their territory! It’s always a good idea to keep a small bottle of vinegar in your beach bag to quickly treat jellyfish stings. If snorkeling, be sure not to stand on or touch any reefs or wrecks. Respecting the wildlife helps ensure a successful beach day. LIFEGUARDS: Several places throughout the county offer lifeguarded beaches. At each station, signs are available to notify beach goers of current surf conditions along with appropriate beach flag warnings.
