hen is the first day of summer? Apparently, it depends on whether you are referring to the astronomical or meteorological summer. There isn’t enough space for me to go into the astronomical explanation here in this column, so I suggest you Google it! The meteorological summer begins on 1 June 2017 and ends on 31 August. As the longest day has also now passed, basically the message is we had better all get going and enjoy this one quickly. We can help in this issue: we have advice on wine from expert Jilly Goolden and, on page 94, a selection of the best summer cocktail recipes from the heart of London’s trendy bars and hot spots. Our visit to the Benguela Brasserie at the Mannings Heath Golf Club & Wine Estate was a lovely surprise, and you can read our review on page 90. In 2020 we will also be able to sample wines from the Estate, so let’s drink to another great Sussex vineyard. On the subject of glamorous venues, on page 10 you can learn about the proposed transformation of the city’s Tower Point building through the construction of a new landmark rooftop restaurant and four penthouse apartments by ZST architects, which also features on our front cover this month. For your regular Celebrity Homes fix, turn to page 17 and take a look at the amazing home of Ellen DeGeneres in California. If all this talk of glitz and glamour is a little too overwhelming in this issue, then you’ll love our more down-to-earth features on adding Lego to your home, and the practical but necessary business of attracting bees into your garden in our Air bee ‘n’ bee article on page 66. So, follow our tips and let’s all do our bit for the bumblebee community! Cheers!

THE HILL HOUSE
I
’m writing this month as we come to terms with yet another bewildering outcome from a national vote. By the time you read this, the dust will have settled on whatever configuration of government emerges, and things will go back to feeling normal. The last 12 months have brought an unprecedented amount of political and social change. I find I’m somewhat traumatised by yet another very late night in which the will of the people moved further and further away from pundit predictions. This column, though, is not about politics. Its just as well, because I can bore for England (and possibly Europe too) on the subject. I write instead about houses, builders and planners, which today seems a much safer subject. Things are finally moving on the Hill House. Building control sign-off has been achieved (put out the bunting!). The bare bricks in the kitchen have been covered in plaster, a new toilet has been acquired (if not fitted) – even the old roll-top bath has been re-enamelled, transforming it from gnarled and discoloured into shiny, white and inviting. I’ve managed to swap my rubbish car for a Mummy estate that
fits the whole family, bulldog included, and even – much to the dismay of Mr Hill House, who has had to do all the assembly, filling and testing – purchased the inflatable hot-tub to sit outside the studio at the end of the garden. I’ve used it once, in all its glorious vulgarity, accompanied by my two teenagers. It wasn’t very restful. I’ve not had a look in since, because the teenagers seem to have multiplied. Build it and they will come, I’ve discovered, where teenagers are concerned.
“Things are finally moving on the Hill House. Building control sign-off has been achieved (put out the bunting!)” One thing is currently eluding me, though – I need to find a decorator. It’s not a difficult job for someone to do: Paint three bedrooms, paint the exterior windows, paint the rear wall. We have the paint – it’s been sitting in our shed for over
GIVE ME THE REMOTE BACK - I NEED TO WATCH JUST ONE MORE EPISODE.... Its past 2am – that’s enough Game of Thrones for one night! Sleep is for sissies. Like a certain iron lady, I can get by on three or four hours a night, easy… Sleeping well brings significant health benefits, including improved mood and athletic performance, making it easier to maintain a healthy weight, and it increases your ability to pay attention. You can’t get by on a few hours a night. Not for long, and not very well. The National Sleep Foundation recently convened a panel of experts to review its sleep guidelines, who agreed that - based on good evidence – adults need between seven to nine hours of sleep a night. Oh, until you get to 65 or older, when you can make do on seven to eight hours. Failing to get enough sleep on a regular basis can leave you with a ‘sleep debt’ on top of your body’s ‘basal sleep need’ (the amount of sleep it needs for optimal performance), which could take a long time to repay.
a year whilst I pretended I would do it myself. Then I remembered that I hate painting, and I have a 7-month-old baby, either of which is sufficient reason for hiring a decorator. Despite multiple calls, we’ve managed to summon just one lone decorator, who turned up to quote for us driving a brand new BMW, and was never heard from again. In times of stress and change there is comfort to be had in simple, repetitive tasks. Sanding and painting, I tell myself, would soothe my anxiety about the economy, the NHS and the future. I can do it when the baby sleeps (between 2am and 4am is about the only reliable slot, but no matter). Living with my own poor handiwork, though (or worse, Mr Hill House’s painting, in which he never quite gets around to tidying up his cutting in) could drive me and my chronic electionitis over the edge. Won’t someone take pity, and pick up a paintbrush? I’ll take any colour you like, so long as its not blue, yellow, purple, red or green…
Kate Hill
Nonsense. I can manage on far less. I just need coffee… and more coffee… Caffeine can give a burst of energy, but research suggests that this short-lived boost can leave you feeling just as bad (if not worse) later. Lack of sleep has other effects on the body: Sleep deprivation impacts heavily on our mood and can trigger mood swings, impulsive behaviour, depression and even hallucinations. It has an impact on your body as well – according to NHS Choices, regular poor sleep – and shift-work - puts you at risk of serious health problems, including obesity, type-2 diabetes, and heart disease. A recent review of 16 research studies found that sleeping for less than six to eight hours a night increases the risk of early death by about 12 per cent – and there is some emerging evidence to suggest that poor sleep may be related to an increased risk of dementia in later life. Get to bed! Oh no – now I want to go to sleep, but I can’t – you’ve scared me so much I’m wide awake! There are lots of things you can do to get back into the swing of a good night’s sleep. The Sleep Foundation recommend establishing regular bed/sleep and wake times and sticking to them, even at weekends, to get body and mind into a rhythm. Starting bedtime with a soak in a warm bath, or listening to soothing music, can help you to nod off later. Switch the phones and devices off when in the bedroom, though. Taking regular exercise is also likely to help you sleep significantly better – which is why those stairs are such a good idea. Get off the sofa, and step upstairs to bed!

TOWER POINT ZST architects talk us through the proposed transformation of the appearance and function of Brighton’s Brutalist Tower Point building
Z
ST architects were appointed to transform the appearance and function of the Tower Point building through the construction of a new landmark rooftop restaurant and four penthouse apartments. The proposal is currently in planning with a decision due in July. The existing Tower Point is a large Brutalist building which is conspicuous within the city, but not engaging with its local environment. The brutalist façade dominates the setting, yet it remains mute and uninspiring. ZSTa believe that the individuality of the building could be more of an asset within the townscape, providing a point of intrigue within the backdrop of Brighton’s central valley. The site was originally occupied by the
10 PORTFOLIO
Hippodrome Circus in 1891, later best known as the ‘Grand Theatre,’ which was eventually destroyed by fire in 1961. The replacement building which now stands on the site, Gresham House, had its name changed in early 2000 to Tower Point. Whilst the existing building does not make a positive contribution to the visual impact of the town’s landscape, ZSTa believe there is opportunity to offer a more visually engaging experience to the onlooker, allowing the building to draw attention to itself and, in this way, to positively engage with its context as a confident representation of Brighton as a city destination. The design approach taken here is to respond to, transform and build upon (literally and figuratively) the existing architecture of the
building rather than replicate any particular style which may be discovered in this eclectic setting. A single-storey rooftop extension of the lower Spring Gardens block will balance the composition of the existing building elements and create a distinct and tangible new element, the restaurant. An overhanging roof plane, conceived as a halo of gold-coloured material, will play with the light and add visual intrigue. The restaurant will have 88 internal covers and 84 further covers to external terraces. The central bar will create a focal point within the space and all facilities are kept to one end, obscuring the view of the existing building and keeping the unrivalled panoramic view of the sea open to the diners. The proposal serves as
ARCHITECTURE
a distinctive beacon at the top of Tower Point, creating a strong identity within the city. Additionally, ZSTa also propose the extension of the existing ‘tower’ element to create four new penthouse apartments. The extension will sit symmetrically on the geometry of the building to cap the current flat roof more elegantly. The proposed rooftop extension will be
"A single-storey rooftop extension of the lower Spring Gardens block will balance the composition of the existing building elements and create a distinct and tangible new element, the restaurant" minimalist in design with metallic panelling punctuated by picture windows and terraces with far-reaching views over the city. The penthouses will be set well back from the building edge to prevent any feeling of additional overbearing to the surrounding streets. The composition of these distinct new elements will transform the presentation of Tower Point within its setting and engage the building more effectively within its immediate and macro contexts.

llen DeGeneres has been at the top of her profession for years and has won multiples of almost every entertainment award on the planet. She’s made us laugh with her stand-up comedy, glued us to the television watching her sitcom “Ellen,” surprised the world as the first person to come out on national television and has entertained us since 2003 in her long-running talk show, “The Ellen DeGeneres Show”. In 1986, when Johnny Carson not only had her appear on his show but also pulled her over for a conversation on the couch, it was obvious that her fame would soar. Carson was a star-maker, and an appearance on his show, along with a summons to the “Tonight Show” couch, were the jackpots. For over 30 years, Ellen has been one of America’s favourite performers, winning more People’s Choice Awards than anyone else (20) and the Presidential Medal of Freedom from President Obama in 2016.
"Ellen and Portia purchased The Villa in 2013 and expanded the estate to16.88 acres through the acquisition of two adjacent properties" Ellen is well-known for her endless energy, dancing up and down the aisles of her TV show studios, headlining numerous Hollywood award shows and her extensive charity work and performances. In her spare time, Ellen is by far the No.1 celebrity home flipper, leaving competitors such as Jennifer Aniston, Meg Ryan and Diane Keaton in the leftover construction dust. The latest real estate offering (and a predominant subject in Ellen’s book, “Home,”) from Ellen and her wife, Australian– American actress Portia de Rossi is an expansive house and grounds on a Montecito, California hill overlooking the ocean and mountains. Known as “The Villa,” it was designed by noted architect Wallace Frost following his return from Italy. Entranced by 17th-century Italian villas, he incorporated many of their architectural features when designing and building the home he envisioned for himself and his family. Decades later, acclaimed architectural designer John Saladino fell in love with its “mix of grandeur and modesty” and commenced a five-year, meticulous restoration of the property for his personal use. Ellen and Portia purchased The Villa in 2013 and expanded the estate to16.88 acres through the acquisition of two adjacent properties. They spared no expense in modernising the historic property for a relaxed California lifestyle. The 10,500-square-foot home includes six bedrooms, eight baths, nine fireplaces, multiple libraries, a marble-wrapped chef’s kitchen and formal rooms. An indoor-outdoor entertaining pavilion was built from stone excavated on site with handmade iron windows. The couple also added a lap pool, sunken championship tennis court and installed state-of-the-art irrigation, mechanical, electronic and security systems. The listing agent is Suzanne Perkins of Sotheby’s International Realty. Ellen and Portia have recently placed their villa on the market, priced at $45 million. PROPERTY NEWS COMMUNITY PARTNERSHIP The Oyster Project have recently teamed up with Oakley Property to form their first Community Partnership, following a donation from the Lewes-and Brighton-based property agents. The award-winning UK disability charity will be working with Oakley Property throughout the year to promote each other in a community partnership which will help to raise the profile of fundraising events. Based in Lewes, in the atmospheric Westgate Chapel, The Oyster Project encourages volunteering in the community. The project engages groups of disabled, elderly and young people in creative and meaningful ways through drama, dance, film and radio. The charity also offers practical help in the form of their Crises Food Aid work. Soraya Cotwal from The Oyster Project says, “Oakley’s generous donation to The Oyster Project will help in allowing the vital and important work we do to continue and for the charity to thrive in what is a challenging time for organisations like ours. We look forward to creating and developing this exciting Community Partnership with Oakley in the coming year.” www.oysterproject.org.uk
CONVEYANCERS WANT ‘LOG BOOK’ AND ‘HOME REPORT’ FOR EACH PROPERTY The Conveyancing Association wants the creation of a ‘log book’ and ‘Home Reports’ for each home on sale - reminiscent in principle of the ill-fated Home Information Packs. The CA has in recent months issued a discussion document containing suggestions for streamlining the house-moving process. These have now been turned into what the association describes as a ‘strategic plan’ with three objectives - to create certainty for the house mover, to prevent fraud, and to create more effective communications between all parties in a house move. One of its suggestions is the creation of a “secure communications platform” for each home on sale, which would contain a log book. The CA says it anticipates many (albeit unspecified) challenges that would have to be overcome to achieve this. Another suggestion is the creation of “E-Home Reports,” which would be “providing a comprehensive collection of information up-front prior to the property being marketed.” www.conveyancingassociation.org.uk

THE CLOCK TOWER SANCTUARY RECIEVES CHEQUE FOR £4,500 Paul Taggart, Director of Hamptons International and President of the Brighton & Hove Estate Agents Association, was delighted to hand over a cheque for £4,500 to The Clock Tower Sanctuary alongside Vice President Tina Templeman from Mishon Mackay and Sam Kinloch, Treasurer, from Clive Emson. The money was raised at the annual dinner earlier this year. Paul hopes to raise a total of £10,000 during the year, and this year’s amount goes a fair way to reaching this goal. As Paul commented, “We are delighted to support this fabulous local charity, which is supported by over 40 local volunteers dedicated to helping the young people in this area who, for one reason or another, have fallen on hard times.” The Clock Tower Sanctuary is open six days a week and is the only drop-in service providing all-round information, advice and support to homeless young people (aged 16-25) in Brighton & Hove. They provide a friendly, bright and, most importantly, a safe space for young people to engage with their peers and visiting agencies. www.bheaa.co.uk, www.thects.org.uk
BABY BOOMERS SEEK DOWNSIZING PROPERTIES
GLEN MISHON MEMORIAL GOLF DAY The annual Glen Mishon Memorial golf day was held in June at The Dyke Golf Club, Brighton. Organised by Mishon Mackay, it was well supported by staff and business associates throughout the region. Despite the extremely challenging, windy conditions, everyone had a fabulous time and raised over £2,400 on the day for the Sussex Macmillan Cancer Support team. www.mishonmackay.com
A research report compiled by Strutt & Parker, in partnership with Octopus Healthcare, has revealed what the baby-boomer generation expects from retirement housing. A survey of 2,200 adults aged 65 or over found that 42% believe there is currently a lack of suitable properties to downsize into. Almost half of respondents said they would like to trial a retirement community before moving in permanently, and less than a fifth said they would consider living in build-to-rent-style accommodation. “There is a clear need for a fresh approach to retirement communities in the UK,” says Stephanie McMahon, Strutt & Parker’s head of research. She says that retirees want to live where they can continue to enjoy their established way of life, minus the day job. The research study has identified a solution to the retirement housing problem and named it ‘Platinum Places.’ “These are mixed-use and mixed-age, urban or edge-ofcommunity developments in towns, cities or large amenity-rich villages,” explains McMahon.
TOP 20 FEATURES THAT SELL HOMES New research has identified homebuyers’ top 20 ‘must-have’ features that would encourage them to purchase a seller’s property. According to the survey of 2,000 people, commissioned by Gocompare.com, central heating is the top must-have feature for buyers. This is followed by double glazing, a garden, secure doors and windows and a driveway or dedicated parking space. Other notable features included in the top 20 are a reliable broadband connection that is strong enough to stream TV, friendly neighbours, a bath and a good energy efficiency rating. The study notes that several ‘must-haves’ of the past, including period features and conservatories, didn’t make the list. Read more about these and other stories at www.estateagenttoday.co.uk

10 - 15 July, All or Nothing In 1964, a new phenomenon exploded onto British streets. It was the essence of all that was cool. It was Mod. Mods stuck two fingers up at the class-ridden society and its dull redundant culture. They were working-class free spirits who rode sexy streamlined Italian Vespas or Lambrettas. The sharpest Mod of all was a ‘Face’. The Small Faces encapsulated all that is Mod, a blend of taste and testosterone, neat, clothes obsessed and street-wise. But these cult sophisticates shared another passion, their dedication to Rhythm ‘n’ Blues. Featuring the music of the Small Faces, including an arsenal of brilliant hits like Whatcha Gonna Do About It, Lazy Sunday, Tin Soldier, Sha La La La Lee, Itchycoo Park and of course All Or Nothing. TALK money
THE FUNCTION OF MONEY Claire Cook from Independent Financial Advisors Talk Money asks: what does your money mean to you?
A
rticles about financial planning often speak about the functionality of your money; your budget, your savings, your investments and financial organisation. But what does this all boil down to? Why do we concern ourselves? The real question is what does your money mean to you?
“Often the people with money as they get older are not the biggest earners, they have thought about their future, organised themselves and saved from an early age” For some people, whether young or old, money is a means to buy physical goods, cars, clothes - the current must have. It’s about looking good in front of their peers, making sure they keep up with the Jones’. People are finding short term happiness by buying “stuff”. The person who treats their money in this way can feed the credit industry with their
impulsive purchases and can lead themselves into financial trouble as time moves on. The question to ask yourself, are you living within your means? Are you borrowing and creating a future financial problem? In fact, even if you are living within your means, are you actually saving anything for your future? When you are young, retirement can seem like a distant prospect, but the years roll by very quickly. At the other end of the scale are the savers. For these, the function of their money is often about creating a sense of security themselves and their families. For some this may come from a fear of not being secure, for others it comes from a desire to live a comfortable life, both now and later on. A roof over their head, savings, a good pension and perhaps early retirement. These people are often very aware of their future, they are thinking ahead. It’s not about the must haves of the moment, it’s not about how good they look in front of their friends; it’s about peace of mind. You may be thinking about starting to save and even if it just a small amount each month, it’s possible you will get into a savings habit and your funds can soon build up. From experience, often the people with money as they get older are not the biggest

earners, they have thought about their future, organised themselves and saved from an early age. I understand that life has financial pressures and this is not always possible, but whatever stage of your life you are at, you may want to think about your financial attitude and, if needed, put some changes in place.

OFF THE DRAWING BOARD AND WINNING AWARDS Baobab Developments have won the RIBA South East Award 2017, for ‘The Traffic Lights’, aptly named for their colour scheme, and designed by John Pardey Architects. These three large, detached houses are situated on a wooded hillside on the northern edge of Brighton, with views of the vibrant city and further to the sea stretching out to the south, and the gorgeous South Downs stretching out to the east. Skilful manipulation of plan and section maximises those views while retaining privacy. ’The Traffic Lights’ were founded upon the concept to create high-quality, contemporary homes without recourse to the rather clichéd zinc roof and white rendered modernist designs common in Brighton. Stained in autumnal variations of red, yellow and green, a family of houses emerges that also asserts a subtle individuality, and while the properties are clearly a development of three, each house is afforded its own identity by the subtle changes to the street-front fenestration. The interiors have a sense of stillness. The quality of detailing is rigorous: every connection, line, joint is perfect. The overall composition has proved strong enough to withstand the pressures of delivering good architecture commercially for the open market. www.baobabdevelopments.com
REGENT STREET STUDIOS NORTH & SOUTH Following the successful construction and letting of their own offices, Domain have been progressing the planning permission for the last two remaining unbuilt sites from the Jubilee Library development in Regent Street, central Brighton. Piling has been installed and construction is expected to start in earnest later in the year. This high-quality project will include commercial ground-floor studio units, with spacious self-contained two-bedroom maisonettes above. Each of these will have its own street entrance, roof terraces, large open-plan kitchen/living rooms with French doors, separate utility spaces and other built-in storage. Anthracite zinc, black engineering brick and specialist metalwork picks up on the library design and will enhance the architects’ own studio building between the two sites. The site is a lesson in inner city development typical of the projects Domain deliver, with complex planning and legal issues, site conditions, rights of light and party walls to resolve. With 100% site coverage, the scheme demonstrates that with tenacity the most difficult sites can produce the best results.
BRIGHTON LITTLE THEATRE A Planning Application has been submitted by Deacon and Richardson Architects for works at Brighton Little Theatre, a not-for-profit theatre company located in the heart of Brighton. The proposals include improvements to the main auditorium, improving sightlines to the stage and additional seats, increasing the capacity of the venue to 75. Extensions to accommodate a new production box, changing rooms and toilets are also proposed. These alterations aim to improve the audience experience and attract additional visitors to the already popular venue. www.brightonlittletheatre.com

ARCHITECTURE
WHO KNEW HE HAD A CAFÉ? e
Fresh from updating the interior of the historic Duke’s Café, Grant Shepherd from Alter & Company Architects on the challenge of contemporary conservation design
W
ith the recent completion of the Institute of Directors’ Duke’s Café in Pall Mall London, Alter & Company undertakes another complex contemporary conservation design, and implementation of a sympathetically contrasting project. Who knew the ‘Grand Old Duke of York’ had a café, located on the original site of the home of the Duke himself, and Alter & Company are highly placed to work on such a prestigious project. Working alongside the restaurant company Benugo, a high-quality London-based catering company, our intention has been to carefully understand parts of the existing fabric of the building to determine an approach for a new café. Steeped in lavish decoration, large proportions and splendour, the current building, situated on Pall Mall, houses the Institute of Directors. The building is owned by the Crown Estate, along with the large collection of artwork that decorates the rooms throughout the building. Until 1978, the building was run by the United Services Club, and was the former home to the Grand Old Duke of York (who had ten thousand men). The building was designed by John Nash, the prolific 19thCentury architect, and constructed in 1828. Nash was responsible for the design of the Brighton Pavilion and Marble Arch with a royal presence; his architecture marks a significant period of design and architecture. The internal
environments are dressed in stone and ceramic tiling, Victorian bath tiling covering room edges, featured with flat and pressed handmade tiles. The café is positioned in the lower ground floor, the space is somewhat divided by pillars supporting beautiful vaulted ceilings across a large expanding space.
"Designing in such historically and culturally significant places must be guided partly by the existing building fabric" Understanding the rich history of the space and aiming to ensure its original features were respected, Alter & Company designed a series of insertions, contrasting whilst relating to composition and proportion of the existing interior. The design takes cues from the existing material palette of marble, brass and glass. The new counter has a patina to the brass surface, which softens the metal exterior and allows the contemporary choice and amount of material to blend into its context. The design brings about new crafted brass, glass and white marble counters, bars and seating areas. The design of the furniture restores a simple and clean composition, connecting the large
brass panels forming the front surface of the counters to the existing floor tiling. Designer brass light fittings above the counter echo the simple materials and shape-making used elsewhere in the cafe, and metallic pendants illuminate the counter areas. Guests sit at white marble and dark teak topped tables, with upholstered banquette seating, while colours set in shades of putter velvet soften the edges of the ceramic space. Alter & Company have designed other prestigious projects with Benugo, such as the prolific London Science Museum café and the National History Museum winter café and pop-ups. Designing in such historically and culturally significant places must be guided partly by the existing building fabric in determining a proposed design strategy. The new café is part of a larger project to renovate and restore several cafes and bars being undertaken in the Institute of Directors. Alter & Company are in conversations with several high-end retail brands that are altering listed buildings throughout London, Brighton, Eastbourne and Hastings, and we look to unearth new possibilities with such highly constrained historical buildings and interiors. BEE FRIENDLY Gardens have become important refuges for bumblebees, and you can encourage them to visit your garden by following these simple tips Bumblebees are dependent on flowers for nectar (sugary liquid) and pollen (protein and minerals for developing larvae). They also need a place to shelter and build their nests to maintain a successful colony throughout its life-cycle. Here are a few tips to bear in mind when creating a bumblebee-friendly garden: •
• •
• •
•
They need a continuous succession of flowers from spring to autumn so there is always a food supply. Queens may appear even in January during warm spells, their disrupted hibernation making them hungry for nectar. Most bumblebees prefer perennial flowers that flower year-to-year. Herbs and traditional cottage-garden plants are ideal. Flowers are best planted in large groups or patches (‘drifts’) of the same kind, so that the bees have good foraging sites. Bumblebees like to stick to one type of flower while foraging, and can waste energy scouting around for more forage. A selection of flowers of different shapes (bowl-shaped, bell-shaped, ‘lipped’ and tubular) will appeal to different species, as they have different tongue lengths. If possible, a part of the garden should be left less intensively cultivated and more informal to provide suitable nesting sites. Carder bumblebees will make their nests in long, tussocky grass. Bumblebees will also create nests in undisturbed compost heaps or underneath hedgerows. You can also improvise by creating an underground nest site by digging a hole, putting a ball of moss or dry grass in the bottom and covering with a slab so as to leave a small entrance. Bumblebees will also use the smell of an abandoned, old rodent’s or bird’s nest as a cue to the presence of a suitable nesting site.
FLOWERING PLANTS FROM THESE FAMILIES PARTICULARLY APPEAL TO BUMBLEBEES: • Lamiaceae (Oregano, Lavender, Rosemary, Catmints, Deadnettle, etc) – mainly as a source of nectar. White deadnettle (Lamium album) is an essential early source of nectar. • Boraginaceae (Lungwort, Comfrey, Cynoglossum, Cerinthe, etc) • Scrophulariaceae (Foxgloves, Veronica, Hebe, etc) • Dipsacaceae (Teasels, Scabiouses) • Asteraceae (Thistle-like flowers, Cardoon, Knapweeds, Asters, Solidago, etc) • Fabaceae (Vetches, Clovers, Broom, Trefoils, Runner Beans, etc) – mainly as a source of pollen. Red Clover (Trifolium pratense) and Birds foot Trefoil (Lotus corniculatus) are important bumblebee flowers. • Rosaceae (Single- flowered Roses, Brambles, Raspberries) • Ericaceae (Heathers, Blueberries, Bilberries, Strawberry Tree) WHAT BUMBLEBEES DON’T LIKE: • Insecticides (including organic ones!) • Most bedding plants (such as those sold in polystyrene strips in garden centres and DIY stores): Petunias, Begonias, Busy Lizzies, French Marigolds, Pelargoniums, Pansies, and similar • ‘Double’ flowers (that is, flowers where stamens are replaced by extra rows of petals) • Other highly-hybridized horticultural novelties Thanks to www.buglife.org.uk

GARDENING
INTO THE GARDEN Mid-summer has arrived and the garden is at its best with so much more colour. Tara de la Motte, on what to do in the garden this month
Things to do in the garden this month… •
Feed and water summer bedding
•
Remove faded flowers on lupins and delphiniums to encourage fresh growth
•
Summer prune fruit trees
•
Lift spring bulbs and store for planting in the autumn
•
Finally, relax and enjoy the July garden
Plants to buy right now for autumn colour...
T
his is the time to enjoy the richness of the borders and all the scents of summer. Now is the season for sitting out, impromptu gatherings, to sip a glass of wine and absorb the beauty of your midsummer garden. As summer slowly rolls into autumn there is still time to buy a few more plants to pep up your garden and keep your borders looking vibrant for some time yet. At this time of the year it is important to keep watering your borders as well as your pots so that all the flowers keep blooming right through to autumn. Hanging baskets, too, will need plenty of water.
Feed your pots and baskets with a highpotash fertiliser and this will encourage lots of healthy new blooms. Summer is a time to enjoy looking through the garden for flowers that have produced seed heads and to take pleasure in collecting these to dry and store. The seeds can be sown next year so that you can enjoy all your favourite flowers all over again. Save seeds from foxgloves, lupins, honesty allium and many more. With everything growing so rapidly now, this is a good time to clip hedges and topiary. Cut back any new growth and shape using shears, but remember to keep stepping back to check the shape.

THE HOUSE THAT LEGO BUILT Push the boundaries. How Lego can be used for home decoration and furniture creation
E
stablished in 1949, Lego has gone from strength to strength, becoming one of the world’s most well-known brands. With Lego construction sets, blockbuster films, theme parks and now a growing community of artists and designers, Lego has established itself as much more than a mere child’s toy. When it comes to home decor, many homeowners like to think outside the box, exploring some rather unusual and creative ideas. Lego is a versatile and dynamic design tool which can be used to create some amazing home additions. With quirky property designs emerging as a new trend, Lego decor has been seen popping up in more and more homes, adding colour and
unique style to properties. Spokesperson for Plentific, Stephen Jury, commented: “People are always looking for new and exciting ways to revamp their homes, and Lego has provided just the tool for homeowners to design their own unique decorations around the house. With hundreds of different colours and shapes, carrying out decoration work using Lego bricks provides unlimited options and ensures each design is customised to the homeowner’s taste. There are plenty of designs out there from creative individuals who have pushed the boundaries of what these bricks can be used for. Here we have listed few examples we love:

Home tips
LEGO STAIRCASE It’s not just home accessories that are getting the Lego makeover. This loft in Chelsea, New York, had its own bespoke staircase banister made entirely out of Lego pieces, nearly 20,000 to be exact. The creative design even features custom windows, inspired by Mondrian, which double up both as handy shelves for extra storage and as a funky play space to create mini Lego scenes. For anyone looking for ideas to spruce up their staircase or banister, you can’t get much more unique than using Lego. This simple, but effective idea comes with hundreds of design possibilities. Not a fan of the multiple colours? No problem. Create a solid block of colour, or experiment with different shades to complement your home color scheme. LEGO WALL When it comes to large-scale Lego home decoration, not much compares to this Lego wall partition. Using over 55,000 colourful Lego bricks, and featuring a customised star detail, this nifty room divider took the builders a whole year to construct. But with an end result like this, it was definitely worth it. A closer look of this wall reveals little secrets including a window block, smiley-face bricks and a skull-and-crossbones design, all of which prove that with Lego anything is possible.
LEGO KEYHOLDER As well as furniture, Lego bricks can be used for practical purposes around the home, like this functional key holder. Always misplacing your keys? This clever idea works by clipping Lego blocks looped onto your keyring to a Lego backboard. The design of these Lego bricks means they can also click together if you have more than one key, as well as looking fun and quirky. Customisation of this handy holder can include changing the words, the colours used, or even the size of the backboard to accommodate as many keys as you desire. LEGO UTENSIL POT Add a splash of colour to your kitchen with this bright utensils pot. Ideal for storing your salad servers, spatula, ladles and whisks, this Lego pot is guaranteed to liven up any kitchen. By experimenting with Lego brick sizes and colours, it’s possible to produce a truly bespoke kitchen accessory to display in pride of place in your home. LEGO LAMP A Lego lamp is a great addition to any home. The sleek style is clean and crisp, with the use of solid colour proving how diverse Lego home accessories can be. If you’re feeling adventurous, you could experiment with your own shape designs and size to suit your preferences and create a talking point within any room.
LEGO SPLASHBACK This Lego kitchen splashback is a great way to inject colour into the room in a fun and unique way. The use of different-sized bricks means adding little details, such as functioning windows and doors is easy, and due to the structure of the bricks, keeping features like wall sockets exposed for that all important coffee maker is simple. You could take this one step further by designing a food-themed pattern to decorate your walls, or even use the basic idea to add a touch of colour to your living room by running a line of Lego bricks along the skirting board. LEGO HOUSE This is the one that everyone was waiting for: life-sized Lego buildings! What kid didn’t dream about living in a Lego house? It seems that TV host James May certainly did, since he went out of his way to build this 3.3-million-brick dwelling, which even features fully functioning Lego plumbing! The disadvantage is, naturally, that living in a house made of plastic bricks is not the most appealing concept in the world to adults. However, a Lego outbuilding, or even a playhouse, is far more plausible, and has been done a number of times. For more information and ideas visit: www.plentific.com

BONNES VACANCES Buying property in France as a base for family holidays is a very affordable way to bring people together
T
here have been several reports that Brad Pitt and Angelina Jolie are to use their French chateau as a base for family members to come together during and after their divorce rather than sell it, as was believed to have been intended.
“France is an ideal place for family holidays and a perfect place to bring people together” This could be due to the fact that under French law, even if the couple go on to marry other people, the children will maintain their inheritance rights to the French home. The popular Jolie-Pitt-branded Rose wine is also produced at the chateau and it is rumoured that Brad Pitt would like this to form part of the six children’s potential future inheritance.
Trevor Leggett, Chairman of Leggett Immobilier says, “It’s understandable that the Jolie-Pitts would want to hold onto their French property. France is an ideal place for family holidays and a perfect place to bring people together. Although the Jolie-Pitts may have paid around €50million for their chateau, property in France is still extremely well-priced compared to the UK, and buying a French home for two households to use can be an ideal solution for many of us. The property pictured is a magnificent Provençal Mas (Stone Farmhouse) nearby, restored to the highest standards using traditional materials, including reclaimed terracotta floors, high ceilings and exposed beams and many more original features. Beautiful heated pool, caretakers’/guest cottage and garage are within the one-hectare grounds. Exceptional views, and only 1km to the village, for sale for €1,695,000. ARE YOU SITTING COMFORTABLY Are you sitting comfortably? Sofa trends are starting to get exciting. We look at some of the best
S
ofas are an indispensable part of our home décor, bridging a space between utility and art. A beautifully crafted sofa is more than just somewhere to sit: In the right space, it becomes a statement piece, integral to the look of our home. This month we review exciting new trends in shape, fabric and function that come to the fore this season. Pull up a seat. SEASONAL TRENDS After many seasons of neutral, minimal schemes, blue, green, purple and scarlet jewel tones are back in style, bringing statement colour back to sofas and daybeds. Pattern tends to be restricted to scatter cushions and throws: The trend in sofa covers is for texture and opulence. Soft velvets, brushed linens, wool and tweed, leather and even suede bring contrasting texture and light with them. Our need to nest in soft, comfortable spaces combines at home with our drive to socialise – sunken conversation pits or areas lined by sofas, outdoor sofas, reading chairs placed invitingly close to fireplaces and oversized floor lamps help us to be at home with friends. Pay attention to what happens in the space around a statement sofa. Where you’ve chosen a big, bold colour and shape, it will work better set against something simple. Equally, stuffing a large sofa into a small room will make everything feel cramped. Better to opt for a style that suits the scale of your living space, and ensure that it will fit through the door (or window). If you have pets, children, or entertain in any way likely to cause a mess, select a sofa with machine washable or wipe-clean covers.

SOFA STYLE Sofas fall into three main categories: traditional, contemporary and multi-function – although the first and second of these increasingly include technology to bring them into the 21st century. Chesterfields and other period styles fall into the first of these groups. Traditional sofas often have wooden legs, fixed, upholstered back cushions and loose seat cushions filled with feathers or foam. Beaten-up leather, soft silk velvet, flock covers and silky scatter cushions enhance traditional styles, inviting us to sit down. Contemporary sofas are currently inspired by early and mid-20th Century design: the combined influences of Art Deco and Modernism bring clean, functional lines. Sectional or modular sofas can help you to define and flex space: keep your modular sofa together when you want to spread out, break it up to seat friends and make space. The contemporary colour palette is a little more muted than the traditional: charcoal
grey, duck egg blue, sage green and neutrals enhance the appeal of mid-century design classics.
“Contemporary sofas are currently inspired by early and mid-20th Century design: the combined influences of Art Deco and Modernism bring clean, functional lines” Many contemporary and some traditional sofas have become modern, multi-function marvels that can perform tricks. Modular sofas transform the humble sofa bed into something a little more stylish, complete with hidden under-seat storage and fold-out
bed. If you really want to make a statement, choose an L-shaped multi-function sofa unit that expands to cover two walls and includes a sofa bed, recliner and storage. But that’s nothing. It’s perfectly possible to include wireless connectivity, a charger, speakers and a subwoofer into your sofa, and maybe even a massage function. ALL IN THE CONSTRUCTION A sofa is only as good as its heart, which for the best of them contains a strong wooden frame that has been dowelled, screwed and glued together to give it strength. Where horsehair and feathers once filled cushions, arms and backs, new materials like memory foam and use of sprung seats will help to extend the life of your sofa, making it comfortable for longer. The construction of a sofa is absolutely key, so ask before buying, try it out, and be prepared to pay a little more for quality. A sofa is a big investment, so spend time shopping around. Once you’ve decided on a style, think about size, covers, and quality of construction.

CYCLE
ESCAPE TO THE COUNTRY This month we take a look at one of the many fantastic cycle routes you can take across the South Downs, starting in Lewes...
L
ewes, the county town of East Sussex, is famed for its many historic buildings and vibrant community. The Norman castle still dominates the town that also saw the Battle of Lewes between King Henry III and Simon de Montford in 1264, the burning of 17 martyrs during the reign of Queen Mary and the Great Avalanche of 1836. On the route from Kingston to Lewes you will pass the recently built Ashcombe windmill, this is a replica located on the original site of this unusual mill which had six sweeps. The foundations of the original mill can still be seen under the new building. Blackcap was an important bronze age burial site and later was used by Simon de Montford’s army to gather prior to the Battle of Lewes Today the area is an important wildlife site that’s owned and managed by the National Trust. On Mount Harry to the east of Blackcap you can see the replica Beacon erected to commemorate the Millennium. 80 PORTFOLIO

HEALTH
‘I am powerless over the voice in my head that tells me that I don’t deserve to eat.’ (Lilly, 16)
What is Anorexia Nervosa? With body image and eating disorders on the increase in both sexes, Sonja Anthony, Eating Disorder Therapist, looks at common themes in Anorexia Nervosa
T
he term Anorexia Nervosa was first used in 1856 to define an illness characterized by self-starvation. To date, anorexia is shrouded in myth and it may be helpful to dispel some of the more common beliefs and assumptions surrounding the illness. Anorexia is not rooted in vanity, it is not a ‘teenage phase’ or a lifestyle choice. Moreover, perhaps surprisingly, it is not about food. Anorexia is a serious mental health condition, responsible for more loss of life than any other psychiatric illness. Anorexia is believed to affect 1 in 100 young people aged between 10 and 20 years old. Although women are 10 times more likely than men to develop anorexia in adolescence, the illness can affect anyone, regardless of age, gender or social group. It is characterised by a terror of gaining weight, a distorted view of one’s body weight/shape and an inability to maintain a minimally normal weight, through refusal of food, vomiting, laxative abuse and/or over exercising. Current research suggests that the causes for the development of the illness are multi-faceted and idiosyncratic, a result of the complex interplay between a person’s personality traits and genetics, alongside
socio-cultural and environmental factors. It is frequently co-morbid with other mental health conditions such as depression, anxiety, and Obsessive-Compulsive Disorder (OCD), and it is associated with feelings of inadequacy, low self-esteem, anger or loneliness.
"During times of stress or trauma, the pre-occupation with food, weight and appearance can become a welcome distraction from difficult feelings and everyday life pressures" Common triggers include a simple diet, bullying, pressures in school or work environments, a fall–out with friends/family or the loss of someone special. During times of stress or trauma, the preoccupation with food, weight and appearance can become a welcome distraction from difficult feelings and everyday life pressures. Being able to control one’s food or body provides a sense of power and control that serves as a coping mechanism for feeling
scared and overwhelmed. Sufferers, as well as those close to them, are often in denial about the illness and reluctant to confront it. Furthermore, despite increased efforts to raise awareness, anorexia is still subject to stigma, provoking intense feelings of guilt and shame, contributing to delays in seeking treatment. However, research shows a positive correlation between time left untreated and long term complications such as osteoporosis, infertility, gastrointestinal problems and heart conditions. It can take several years to fully recover from anorexia and, unfortunately, relapses are common. However, the earlier treatment is sought the better the prognosis of making a full and positive recovery. Treatment involves psychotherapy, together with nutrition support and behaviour modification techniques. The Ginger Pig gastropub in Hove has finally launched their muchanticipated bedrooms. Each of the 11 en-suites follows the Ginger philosophy of simple and understated, designed with maximum comfort and enjoyment in mind. Every room features an oversized shower or stand-alone bath tub, indulgent bathroom products, luxury Royal Warrant ‘Hypnos’ mattresses, high-thread-count linen, Nespresso-style coffee machines, and premixed ‘Ginger’ cocktails. And, of course, you can expect one of the best breakfasts in town in the morning.
With my Brighton & Hove Food and Drink Festival hat on, I’ve been busy showcasing the best of Brighton around the world during June. Boho Gelato’s Seb Cole is heading back to the Nivarata festival of Granita in Acireale in Sicily for his third appearance at one of the world’s premier gelato festivals. Seb created two frozen delights, including a cardamom crema (a rich gelato with cream, milk and eggs) and a granita made with a local beer produced by Marco at the Etimue pub in Acireale. I also headed to the Cap Maison resort in St Lucia with chef Michael Bremner of 64 Degrees for a chef exchange with Caribbean hotel chef of the year Craig Jones. Michael presented a six-course tasting menu based on some of his most popular dishes, including dorado with Ridgeview wine emulsion, almond and brown butter crumb. Chef Craig will be creating a St Lucian fine dining menu with Michael during our second food festival of the year in the Dome Room at Hotel du Vin on Thursday 24 August.

THE BENGUELA BRASSERIE Having donated his fair share of golf balls to the forests, thickets and rough at Mannings Heath’s golf courses over the years, Daniel Frickelton was keen to check out their new, recently launched, concept – wine, golf and food...
O
ur first peek at all the exciting changes happening at Mannings Heath was late last April, when we joined a group of invited food-and-drink journalists to mark the official launch of the newest vineyard in Sussex, located on land that used to comprise nine of the holes on one of the two courses at Mannings Heath. The event was staged on what used to be the tee for the fourth hole of the Kingfisher Course, and it was clear why they had chosen this particular piece of land for the vineyard. The surrounding forest provides natural protection from the prevailing south-westerly winds, the steep slope encourages good drainage and maximal exposure to what sun and warmth is available and the natural contours of the landscape will help the breeze to clear icy fog and mist down into the valley below. We each planted a vine with our names on them, bid a fond farewell to our former back nine and bid the exciting future at Mannings Heath a warm welcome with a glass of sparkling wine from the wineries of Benguela Cove vineyard, located at the edge of South Africa’s Cape southern coast. The new vineyard at Mannings Heath 90 PORTFOLIO
will be ready to make sparkling wine in 2020, with the first bottles available in 2023. Besides the many improvements planned for the golf courses, the new owners have upgraded the off-course facilities. The spike bar, for instance, has had a makeover and has now been re-opened as a wine tasting and spike bar facility, hosting wine-themed events, including food pairings with chocolate and cheese, and is open to the public all year round. The culinary jewel in the crown, however, is the new restaurant, Benguela Brasserie.
“The view stretches out over the first fairway and beyond into a verdant, leafy pastoral paradise” The dining room is located at the back of the main building and overlooks the spacious outdoor dining area, the practice putting green and the first tee of the iconic Waterfall Course.
The view stretches out over the first fairway and beyond into a verdant, leafy pastoral paradise. The room itself is reminiscent of so many good French restaurants we have visited over the years. Colours are muted and calming, furnishings and tableware are of high quality, yet suitably functional. The Benguela is a comfortable, relaxing space, conducive to adult conversation in a normal tone of voice. That’s a great start. Gabriel, our waiter, arrived with the menus and some treacle bread rolls with a dish of good creamery butter. I love dark, earthy flavours like treacle, but I would never have thought to put it in bread dough, which is probably just one of the many reasons I am not a star chef. My companion and I stared at one another in wide-eyed wonder and delight as we silently demolished these little beauties. The treacle lends the bread a distinctive background taste with the merest whisper of sweetness. We went straight to the South African section of the wine list in search of a suitable white to accompany our starters. Under Gabriel’s expert tutelage we settled on glasses of a 2015 vintage Benguela
RESTAURANT review
Cove Chardonnay, a mildly buttery mouthful of lingering lushness with a fine balance of oak and citrussy acidity and a wonderful, long finish. No surprise that this one has just been awarded the International Wine and Spirits Silver Medal. The Lady tucked into her very seasonal asparagus, dressed with egg purée and roasted pine nuts, one of her most admired food items. There was not much sound coming from her side of the table, except for the odd lady-like slurp or swallow, punctuated with a dreamy roll of the eyes. Her verdict: very yummy. My own choice of Springs’ smoked salmon was admittedly unimaginative, but it had been ages since I’d had any, and I craved it. It was perfectly dressed with capers and dill, elegantly presented and fulfilled my every expectation. Both starters paired beautifully with the Chardonnay. My companion’s John Dory main course was the next surprise of the evening. The succulent, perfectly cooked fish in oriental/ Thai-style sauce was served with mushrooms, generous shavings of black truffle and some small dumplings. The Lady has never liked dumplings, so she approached these with a modicum of scepticism. I was silently marvelling at the miraculous Sussex lamb before me when she said, “I didn’t think I liked
dumplings, but these are gorgeous. You have to try one.” I had to be quick at the rate they were disappearing off her plate. They were moist, soft and sensual, stuffed with mushrooms and lemon grass and an example of clever, clever cooking. My lamb, although less surprising than the dumplings, was perfectly pink, juicy and toothsome. Who wants surprises with meat and potatoes? They got it right.
“The dumplings were moist, soft and sensual, stuffed with mushrooms and lemon grass” We were vacillating between Pinot Noir and the Merlot, both from the Benguela Estate, to go with our main dishes, so Gabriel brought us both and let us experiment. Gotta love that boy. The Pinot Noir had a dash of roasted coffee (or burnt cherries) and reminded me of the bar scene in the film Casablanca. Smoky, dark and sexy. The Merlot was softer, full of ripe fruit, with a deep, satisfying richness. Both were fine companions to our food. Both very reasonable in price.
Our desserts – chocolate mousse for her and rhubarb crumble for me – were creatively constructed and artfully presented. Gabriel insisted that we taste the dessert wine, Noble Late Harvest 2015. This abundance of raisins, honey, apricots and orange blossoms was a surprise (yet again) and reminded me vaguely of Tokay. You must also try it. You must... Just when we thought there could not possibly be any more surprises, Gabriel arrived with a small woven tree on whose branches a selection of home-made fudges were impaled. Rum/raisin, poached rhubarb, white chocolate and vanilla fudge... all my favourite things. I confess that I managed to chuck most of them down the old pie-hole between sips of Blue Mountain Jamaican coffee (from Brighton-based Roasted). When Exec Head Chef Nick McAlister and Head Chef Ed Wright – the “A” team in every sense of the term - popped by to say hello, I told them what I’m telling you: nobody does it better. FOOD & drink
A WINE OLD TIME Jilly Goolden’s status in the world of wine is legendary, having-along with contemporaries Oz Clarke and Keith Floyd-transformed the way the UK thinks about drinking wine. More than a decade after the original Food and Drink left our screens, she’s as devoted as ever, even hosting wine-tasting events at her own East Sussex home
“P
eople always ask me if I ever get sick of wine, but you must recognise that wine tasting is not the same as wine drinking, and the large numbers of wines that I taste is quite a way removed from actually drinking them. The idea is to merely taste and not ingest, or at the very least get away with ingesting as little as you can. I am not a big drinker, in truth. I will have the odd glass of wine or maybe beer most days but never too much. I think I would be an alcoholic otherwise!
“I feel we were part of that really formative stage where people were just discovering that wine was about so much more than just a flavour” 92 PORTFOLIO
“On Food and Drink I would offer a very detailed description of each wine to give the people watching at home a chance to imagine what it was like. You have to remember that viewers did not have glasses in their hands and were relying on you to accurately describe each one. But I examine wine in such minute detail that I can recall everyday scents and flavours, which in turn create a taste picture which can help people appreciate the complex bouquet and palate of the wine. “I do think the programme made a difference to how people see wine, and I am incredibly proud of that. I feel we were part of that really formative stage where people were just discovering that wine was about so much more than just a flavour. We introduced the whole notion of provenance, where it came from, how it was produced, how much it cost, how you should drink it. They were fantastic times, and I think I’ll always look back on them and consider how lucky I was to be a part of it all. “You would never have got wine in pubs 50 years ago, but now you’ll find yourself offered an extensive selection. The way we eat and drink
FOOD & drink
“To call it a wine school makes it sound quite formal, and it isn’t like that at all, really. They are more like parties”
and what we eat and drink have changed so much and I think wine has been at the forefront of that. I remember the first Australian wine being imported in 1983; I remember when South African wine started to become readily available after Nelson Mandela’s release – these are all real landmarks and all relatively recent. “But there have been bigger social changes. Travel is obviously one. It is cheaper to get to different parts of the world, and when you visit somewhere you will always try the local wine, which exposes people to different tastes. But making wine available in the supermarket has been the biggest factor. It made it so much easier for women to put wine in the trolley with the bread and butter, and as women do the majority of the shopping it was women who started the wine revolution, and since then it has continued to appeal to a wider and wider palate. “In fact, at the wine-tasting events I host at my home in the Ashdown Forest, East Sussex, we usually get an array of people attending. There are, of course, those who know a lot about wine. Some groups come in and are very knowledgeable, but some people just like the idea of it. It can be whatever you want it to be, it is not elitist. “To call it a wine school makes it sound quite formal, and it isn’t like that at all, really. They are more like parties. And it is fabulous. We have 12 different types of wine to taste, plus canapés and champagne and a spot of lunch and they are really, really terrific days.”
JILLY GOOLDEN’S GUIDE TO BUYING GOOD, AFFORDABLE WINE: ONE: Don’t confuse price with quality A lot of high prices are bumped up by the renown and pedigree of the region or producer - Bordeaux is a good example of this. Unless you know your stuff, your £30 may as well be poured down the drain. TWO: Buy from a supermarket that prides itself on good prices They usually have deals when you buy a case or more. THREE: Avoid the well-known big brands They are often lacklustre in taste and overly sweet. FOUR: It’s all in the serving A budget white will always taste best when perfectly chilled, and if serving cheap red, open the bottle and pour a glass, then leave both to air for an hour, as this will soften the flavour.

THE FULL CATASTROPHE There’s little more upsetting in this vale of tears than seeing a grown man nearly reduced to tears. What is going on when our golfing skills, patiently honed through decades of practice and play, incomprehensibly desert us in competitive play? GolfGuy asks the expert...
W
hen the naïve young Englishman (Alan Bates) asks Zorba (Anthony Quinn) if he has ever been married, Zorba boisterously assures him that he has a wife, children, house... the full catastrophe. The analogy to golf, although not exact, bears certain similarities. Catastrophes seem to be composed of particular elements, smaller events which occur in a kind of chain reaction. You shank a simple approach shot → your confidence erodes slightly → you try to “fix” it on your next attempt → you shank it again → your confidence disappears altogether → you play poorly for the remainder of the tournament. We’ve all been there. My society meets for overnighters – tworound competitions for prizes and a shield – several times a year. “Axeman” (our Zorba) is a very steady mid-handicapper whose name figures on more than one trophy, largely due to his ability to just play very consistently to his handicap. The rest of us have flashes of pure brilliance, followed by the seemingly inevitable

disasters. At the end of the two-round session Axeman is, often as not, at the top of the leader board, or thereabouts. But not on this occasion...
"Someone suggested that maybe he should get a lesson. Another thought he might benefit from taking a break from golf. Is there any way to help this truly good golfer?" My four ball had putted out on the eighteenth and, as is our custom, we waited nearby for Axeman’s group to finish behind us. We knew something was amiss when we saw Axe playing his second shot from the area near the water hazard about 150 yards forward of the tee box. A duffed drive, then. When he eventually putted out for a seven on this par-
four hole, he was a picture of pure dejection as he shuffled off the green, shoulders sagging, eyes fixed on the ground before him, his putter dragging along behind him like a dead puppy on a leash. No one even had to ask him how he had done. In a barely audible voice struggling to choke back the tears, he said it had been a total disaster. Everything was going straight left, even off his driver, normally the most reliable weapon in his impressive arsenal. His total Stableford points amounted to a paltry 19, nine on the front and 10 on the back. It had all started with pulling the ball straight left. He tried to “fix” this by “keeping his legs and hips quiet throughout the swing,” which only made things worse. Someone suggested that maybe he should get a lesson. Another thought he might benefit from taking a break from golf. Is there any way to help this truly good golfer? I hate to see a grown man cry.

GOLF
The Golf Pro responds: I have heard this story many times from clients coming in for their first golf lesson with me. The main issue is knowing what you have done wrong to be able to correct it. This is when the job of a PGA professional is not just to tell you what to do but WHY! The vast majority of the people I teach reduce their handicaps because they are aware of why they are making the swing change and are therefore LEARNING.
"At the conclusion of a successful session, when my client is striking the ball much better, I love it when they say ‘Is that all I have to do?’”
“What if my job as a coach isn’t so much to force or coerce performance as it is to create situations where players develop confidence, set their talents free and pursue their potential to its full extent. What if my job as a coach is to prove how good they already are, how good they could possibly become and that they are truly capable of a higher level of performance.” Pete Carroll – Physical Education Major and Head coach of the Seattle Seahawks. If we take ‘Axe’ as the example, would keeping his legs and hips quieter through the swing work? Does this make sense? Wouldn’t the hands work faster and therefore make him more likely to pull the club across the body? Work back to basics: the straight left shot is caused by the club face pointing there at impact or the path travelling that way through impact. The club is still king and dictates where the ball will fly. Let’s work this reason out first and work back from there. On the course the answer must be this simple: aim right or open the clubface, try to do the opposite – deliberately try to miss the fairway on the right-hand side. The great news for me as a coach is he knows the problem and it is consistent; the bad news is he has no idea of the solution. In a lesson we can show ‘Axe’ whether it was his grip, for instance, that was closing the clubface at impact (left),
or if he is coming over the top of the ball with the clubface square to the path (left). Through analysis the problem is identified and we take the appropriate action to change this. None of the options he was considering will provide the cure: quieter body means hands work faster. Does this make sense to anyone? Take a break from golf? Does this make sense to anyone? As a coach I need the best player I coach to understand what he/she is trying to do to get the best from their game. What do you want to achieve? Are we working on the correct area to do this? I always ask players at the end of a lesson whether it makes sense in terms of why they are making a particular swing. At the conclusion of a successful session, when my client is striking the ball much better, I love it when they say “Is that all I have to do?” Golf only becomes complicated when we let it. BALE ON THE JOB Christian Bale has experienced some of the highest of highs in his career as an actor but nothing, he explains, guarantees prolonged success
H
aving won an Oscar for his physically committed role in The Fighter, and garnering critical acclaim for his pitch-perfect performance in Christopher Nolan’s Dark Knight trilogy, one might assume that British actor Christian Bale would consider his career as bulletproof as the suit his alterego wears. The star, however, doesn’t appear to agree, and at the suggestion that an Academy nod translates into a confirmation of greatness, he replies with a weary smile: “Awards are a funny one. Filmmaking – it’s all very subjective, isn’t it? It’s all opinion; it’s all conjecture. To say a performance is the best of that year, it’s tricky. How can you really say that? It’s not like being the fastest, or the longest jumper. It’s not the Olympics!” Despite his reputation for being cantankerous and having a fiery temper – as displayed during that blow-up on the set of Terminator Salvation – the 43-yearold gives the impression of being a sincere and warm artist who simply wants to fulfil his obligations without the press intrusion into his personal life. “I’ll always support whatever film it is I’m working on,” he says. “I think that is important – to do what I can. I just don’t love when it’s about me.” Ironically, Bale’s latest film sees him playing someone on the other side of the camera, portraying famous American photojournalist Chris Myers in The Promise. A colourful sweeping romance set against the backdrop of the Armenian genocide at the hands of the Ottoman Empire, the film offers an epic, Dr Zhivagoesque flourish to an horrific and violent period which saw 1.5 million Armenians systematically slaughtered. Alongside the allure of working with Terry George – the celebrated writer of In the Name of the Father and Mother’s Son – Bale ardently believes that these are the kinds of stories that need so desperately to be told through the medium of film. “The lack of justice for these crimes means it keeps happening – the holocaust in Cambodia, in Rwanda, now what is happening in Syria and Aleppo, in what is the same region,” he says emphatically. “Films like this, like Hotel Rwanda, The Killing Fields and Schindler’s List, are so important in telling and spreading the word of these harrowing, unfathomable tragedies. And these films must survive and thrive and be heard above the noise because we need them. We need these stories; we need to know.” Visually and emotionally thrilling, The Promise – which also stars Charlotte Le Bon and Oscar Isaac – is a huge departure for Bale, more recently delivering Oscar-nominated performances in American Hustle and The Big Short. Famed for his devotion to the art of method acting – for The Machinist his weight plummeted to 121lb, even more than his loss for The Fighter – his career has maintained an

impressive upward thrust. Naturally there has been the odd misstep, causing him to pause and reflect, but ultimately he believes that must be accepted as the nature of “any actor’s career”. “I put my hands up – I made some bad choices. Some I thought had legs before I went in and others I thought, ‘I’m an actor and I need a job!’” he says. “Now I’m at a stage in my career, very gratefully, where I can decide when and where and be very methodical in my thinking. But I still remember very vividly needing a job: needing a job to survive, needing a job so my house isn’t repossessed, and needing to pay the bills for my family.” Bale recalls a period when he was younger and hated ‘the job’, describing how he felt trapped and wanted to ‘shut down’. Having found enormous success quite early on for his performance as young Jim in Empire of the Sun, he admits to struggling with the pressure of fame, describing interviews he did aged 13 as feeling like “a caged animal at a zoo”. “I’m talking about when I was starting out,” he clarifies. “Acting was a passion of mine. I enjoyed it, but then it turned into a responsibility where I could provide for my family, and in cases where I had to provide for them. It was an unfathomable amount of cash, but when I didn’t want to do it, I had to do it; 106 PORTFOLIO
you couldn’t turn that down. And that made me hate it. I felt like I couldn’t break away.” Though never a child star per se, there was always a chance he would burn too bright too early, and certainly many of the roles that followed his breakout could be considered promising but ultimately unremarkable. It took his terrifying turn as the unhinged but sophisticated serial killer Patrick Bateman in the adaptation of Bret Easton Ellis’ controversial novel American Psycho to properly mark him as a serious contender, and it was a role which hinted at his brilliance in films to come, like in The Machinist, The Prestige and, of course, the Dark Knight films. Bringing the topic around to the caped crusader, when asked if a fourth turn as Batman was ever on the table, he says firmly that “the discussion never happened” and that, while it was a great chapter in his life, he was “happy to move on.” Pressed further on whether there is anything he misses about playing one of the world’s most celebrated comic book heroes, Bale lights up: “I miss that euphoric feeling, each and every time I took off the cowl. It had this vice grip around my head and neck and it was releasing this beast of happiness any time it came off.” And did he get to keep the suit? “I kept the cowl,” he says, before adding with a laugh, “just to remind me of that!”
