ast week I sat down to draw up a to-do list for every part of house and garden. More than just snagging, it was the stuff that - despite 18 months of work and thousands of pounds spent - still needs to be done. The list quickly became daunting, and I felt overwhelmed. How on earth would we get it all done before October, when the newest Hill family member arrives? It was all too much; I wanted to crawl into bed and hide. I think I can blame my mini-meltdown on hormones (oh, and living in a building site for nearly two years). I was due a bit of a tantrum; the sheer scale of work - and frustration - tipped me over the edge. And then I heard that a close friend had lost his daughter. Barely an adult, she'd lived with mental illness that at times was crippling for most of her young life. Over the bank holiday, she had enough. I put my self-pity back where it belonged, and wept for my friend and his daughter instead.

Sun tan lotion, flip flops, towel… What are you doing? It’s only June! Perfect time for an early summer break. I’m off to spend some time in the Aegean.. if only I could close this suitcase… Suitcase won’t close? You’ll have packed it wrong.. what method did you use?

Well that’s where you’re going wrong, then. With the majority of European airlines charging for hold luggage, the struggle to fit everything into a small cabin bag is ever more important. And, needless to say, there is some science to help you pack it all in.

Adding a bit of shoving and brute force? Not at all. Lifestyle science blogging site lifehacker.com carried out a controlled comparison of five different packing methods: simple folding; the ‘filing’ method (folding clothes and stacking them along the suitcase on their sides, like DVDs); bundling (exactly what it sounds like: small items in the middle, bigger items rolled around the outside); rolling and using compression (vacuum) packs. Rolling items for packing allowed the testers to fit an impressive 15 extra T-shirts into the case compared to simple folding: if you can’t close your suitcase, that’s the method to choose.

We don't like to talk about mental illness. We can sit in the pub and compare broken bones, man flu, scars and war wounds, but the stigma of mental illness persists. Yet it can be as - if not more - terrifying as a serious physical illness, just as life-threatening. The shock and grief of losing someone so young, with so much potential, puts everything else into perspective. I am fortunate to be well, to be able to get up and get on without fear or pain. This week, the paint fund is being put to better use. Farrow and Ball don't need our money. It's being donated to the ward that cared for my friend’s daughter.

hen I visited the engaging Alan Margetts and his team at the prominent new kitchen showroom in central Horsham, I thought I was immune from temptation. Having done my own ‘kitchen project’ six years ago, I was very happy with the design and our own cabinet choices. However, within five minutes of entering this domestic heaven I had kitchen envy, which I’m here to tell you is a very common, mostly female, ailment! The array of new designs, materials and colours is absolutely inspiring; clearly, kitchens are continuing to evolve, and Horsham and Kitchen Store’s other two showrooms in Hove and Lancing are the perfect spaces in which to showcase the new technology available. The eye-catching moulded Corian and concrete work stations on display are perfect for the large kitchen/breakfast rooms we are incorporating into our homes these days, and the cabinet colours and finishes available give you the

opportunity to stamp your own personality on this most important room. Any estate agent will confirm that the kitchen is often the deal maker (or breaker) when selling your home, and the investment required is therefore entirely justified. OAKLEY HELP RAISE OVER £30,000 FOR MAYOR’S CHARITY Oakley were proud to be the main sponsors for Brighton & Hove Property Consortium's Brighton i360 to the Paris Eiffel Tower sponsored bike ride. 4 June Rufus Wainright Rufus Wainright has collaborated with artists ranging from Elton John, David Byrne, Mark Ronson, Joni Mitchell to Burt Bacharach. At the age of 14 he was named Canada’s best young musician and later received the Juno Award for Best Alternative Album. In 2013 he sang for Billy Joel at the Kennedy Center Honors in Washington, and October 2nd, 2015 saw the Deutsche Grammophon release of a double CD/vinyl recording of Prima Donna with the BBC Symphony Orchestra. 14 June Television Television were one of the most innovative bands to emerge from New York’s underground scene of the mid-70s, creating an influential new guitar vocabulary. In the early ’70s, Television began as the Neon Boys, a group featuring guitarist/ vocalist Tom Verlaine, drummer Billy Ficca, and bassist Richard Hell. At the end of 1973 in New York City, New York, the group became Television, adding guitarist Richard Lloyd. 1 June - 4 September Vivien Leigh: Public Faces, Private Lives A new exhibition that explores the life of one of Britain’s most iconic actresses, Vivien Leigh, is unveiled this summer in the family home of her favourite costume designer. Vivien Leigh: Public Faces, Private Lives, includes items by set and costume designer Oliver Messel, and is set in his former home – the National Trust’s Nymans in West Sussex. Organised by the V & A, the exhibition includes over 100 pieces from Leigh’s personal archive - from costumes and sketches to photographs and scripts. Amongst the exhibits on show are letters from husband Laurence Olivier, Leigh’s own diaries, and 3D stereoscopic slides that offer behind-the-scenes glimpses into the life of Britain’s first international film star. One of the highlights of the exhibition is the magnificent headdress Messel made for Leigh’s performance as Cleopatra in the film Caesar and Cleopatra. The headdress will be shown alongside Leigh’s Cleopatra costume, together with Messel’s original costume sketch and stills from the film. 10 June Don Giovanni Heritage Opera returns to Brighton Open Air Theatre (BOAT) after last year's success with Madame Butterfly. Don Giovanni is the compelling tale of one man's rampage through the hearts and minds of every woman he meets. This period production features 19th-century costumes, is sung in Italian by a professional company of nine, with the story supported live by sub-titles in English. Brighton Open Air Theatre is an amphitheatre formed of eight terraces leading down to a sunken stage. A bespoke acoustic wall retains sound, improving the experience for the audience and prevents noise pollution. BIG HEART AUCTION 2016 The inaugural Big Heart charity auction raised an impressive £30,000 in March 2015. Men’s magazine ShortList has the highest combined print and digital circulation of any men's magazine in the UK and Ireland at 505,562, according to recent figures from the Audit Bureau of Circulations. Interestingly, the top two spots in the ABC's table measuring the combined print and digital circulations of magazines, which covers the second half of 2015, were taken by free publications. This freemium market and the boutique market for high-end niche publications which may be monthly, quarterly, biannual or annual is a growing area for print and proving quietly

and beautifully that print is very much alive and relevant. The paid-for magazines sector has certainly faced a challenging time over the last decade - as have local and daily newspapers - with many becoming free or ending print publication

For example, women's monthly titles have shown a steady six per cent growth in their printed products in the past year. Of course, digital offerings have acquired themselves a foothold in the industry and the popularity of digital

media is unquestionable; but it is projected that 2.5bn will be spent this year on just print advertising in the UK alone, and last year the majority of people still read the news in printed papers. There is such a great need for brands to communicate with their markets on many levels, whenever and wherever they can that simply visiting a website, sending an email or building up a social media presence is not enough. The most successful of the recent magazine launches in the past decade have been in the high-end niche market and, generally, lifestylefocussed. It’s a subject most of us don’t like to think about. What if we died? What if we weren’t around? How would this affect our families and loved ones? Not only would people be impacted emotionally, but how would they cope financially? Of course, it wouldn’t be the first thing on their minds, but leaving your family secure in their home and with no work pressure would certainly help, whatever anyone says! It is quite rare that people have the right amount of cover to achieve this. So, what is the right level of cover? Firstly, think about having enough cover to pay any outstanding debts, such as mortgages, credit cards and loans. A simple life policy can cover this, and it is often surprisingly affordable. Then, you could think about the outgoings that need to be covered: utility bills, food, running a car and possible childcare costs. Literally take yourself and your income out of the equation and see what would need to be paid. A calculation often used is 10 times the annual amount, but if you have a large family to support or young children, this could be increased to 15 or 20 times.

How do the plans work? The plans pay out a lump sum in the event of your death during an agreed term. The most simple type of policy is Term Assurance, which gives you a level amount of cover for a number of years. You decide the cover level and term when the plan starts. You can cover just yourself or take the policy in joint names to cover both yourself and your partner. Another version

owlett Clarke are proud to announce that May 31st saw the Brighton office move to 96 Church Street, Brighton, BN1 1UJ, just a short walk away from the previous Ship Street office. The building has been recently renovated and the move brings a fresher, more modern feel to the practice. With an open-plan office scaling over four floors, there is much more space for clients and the staff, which will allow the firm to expand into new areas of law. Our old office on Ship Street served the firm well over the past 243 years. In fact, the practice had been in the same building since establishment in 1773. A BRIEF HISTORY OF HOWLETT CLARKE: Not only is Howlett Clarke the oldest law firm in Brighton, but we are the only ones who can actually be traced back to the 18th century. William Attree is the known founder of Howlett Clarke. Back in 1773 he purchased 8 & 9 Ship Street and used one site for the office and the other for his personal home. Work boomed for William in the 1800s; as he was one of the only solicitors in the town, he soon acquired many loyal clients. William Attree was instructed

multiple times by the Prince of Wales to expand his home (the Royal Pavilion) after the Prince was sworn in as Prince Regent. A portrait of the Prince, donated by him to the firm, still hangs in the office today. Following William’s death, one of his sons, Thomas Attree, became more involved with the firm, and his partners were James Howlett and Somers Clarke. The firm became known as Attree & Clarke. Following Thomas’s death in 1863, the firm became more commonly known as Clarke & Howlett. Fast forward 130 years or so, to when I first approached the firm for work experience: little did I know that I would be fortunate enough to be one of the first to undertake the firm’s training contract before qualifying as a solicitor in 2002. Now in the role of managing partner of the company, continuing on the hard work of my predecessors is of upmost importance. The firm celebrated the move by hosting an open evening to welcome people to the new offices, followed by entertainment, drinks and networking at The Dome, Brighton. MAKE THE MOST OF YOUR SPARE ROOM If you are lucky enough to have spare room, make sure it is being used to its best advantage

s your spare room somewhere which is unused most of the time and subsequently becomes a dumping ground for the various items that you never found a place for? Making the most of your spare room won’t just benefit you personally, it can also potentially increase the value of your property. If you’re selling your home it can be useful to dress a room for a purpose, even if you hadn’t used it for that purpose yourself. If someone can see the potential in a room, it will make it easier for them to picture themselves living in your property, increasing your chance of selling it. Whatever its size, there are any number of ways that you can transform your spare room. Here are just a few:

Adding to the fun this year was the chance to win a fabulous” Kia Soul Caribbean” from Tates of Pycombe, sponsored by local insurance broker Bishops and Calway. Even the weather could not ruin the day! The event was made even more successful by many local businesses sponsoring holes and entering teams. The Charity was delighted by the response “We would like to say a huge thank you for everyone’s support. As a result of today we raised a massive £4054! Singing Hills Golf Course provided staff for the day, and dinner afterwards and with their professional manner ensured the day was a huge success.” The annual golfing event was also a great opportunity for local businesses to network and enjoy a relaxing and fun day of golf whilst helping a really good cause. WELCOME TO OUR WORLD Sussex Blinds and Shutters in Woodingdean has been established for nearly 30 years, and has recently undergone a transformation. We went to visit Gill Clamp, Natasha and their team to see for ourselves Gill, this new showroom looks fabulous. The high counter and bar stools area is now a great place to discuss customers’ needs and look at the cornucopia of fabric choices available. Presumably, client consultations and advice are a big part of the service you offer? G. Yes, it’s now a fantastically relaxing space for customers to sit and look through swatches and books for design inspiration. We can go through all the options available and offer advice to clients, without them feeling rushed or pressured. There are so many wonderful choices of fabrics available and people are amazed when they come in and see the range available here, so we felt it was important to design a space where we can showcase these. Tell us a bit about the types of curtains and blinds you offer? N. We still offer hand-made curtains, but more often now, popular choices are Venetian and pleated blinds, and roller and Roman blinds. They offer practical window solutions in most homes and are extremely reasonably priced, due to the economical use of fabric. So you can have beautiful silk Roman blinds for a fraction of the cost of traditional curtains. The modern Venetian and pleated blinds can also be installed within the window frames, maximising light. Most blinds are also available in motorised versions, too!

Shutters is a big part of the array of products you recommend. Why do you think they have become so popular? N. We have seen a huge growth in the demand for shutters over recent years. We offer both wooden and faux wood shutters in a huge range of colours and frames/fittings, and all bespoke. So they are suitable for the wonderful Victorian homes in the area, whilst at the same time look great in a new home. Contrary to popular belief, they allow a lot of light to enter a home, due to the tilt louvres, whilst also offering great sound proofing if you live on a noisy road. The faux wood versions are ideal for bathrooms and kitchens due to their moisture-resistant properties. Your business is family-owned and has been going for nearly 30 years. What’s the secret of your success? G. We have lovely, loyal staff, most of whom have been with us for many years, and we also have very loyal, long-standing customers, who happily also recommend us to friends and family. We pride ourselves on customer care, and I think people appreciate that personal touch. You’re well-known locally for residential customers, but presumably, some of your business is also for the commercial market?

N. Yes, we have worked with the Nuffield Hospital here in Woodingdean, fitting their rooms with Roman blinds – interestingly, using fabric with special properties to resist MRSA. Also, we have recently been involved in a project at the Sussex University, delivering special wide-width blinds to their lecture rooms. We travel throughout Sussex offering solutions for a variety of companies and organizations. We can’t let you go without finding out where you live, and if your home is adorned with gorgeous fabrics and blinds throughout. Or are you shutters girls? N. I love our wooden shutters, and, as I’m on a busy road with south-facing aspect, they offer shade and also reduce the outside noise. G. I have a new home in Rottingdean, and have probably used every type of blind and shutters available across our range, so I am practically an advert for Sussex Blinds and Shutters!

une is the month of the quintessential English flower - the beautiful rose. The rose is surely the floral emblem of England with its beauty and fragrance. It is unique and is definitely the queen of our gardens. The rose is not only admired for its beauty and fragrance, it is one of the oldest plants known to mankind and England happens to be its home. The rose also symbolises love and romance. Even William Shakespeare mentioned the rose in ‘Romeo and Juliet’. Older rose varieties like Gallica, Damask, Alba and Centifolia were highly perfumed and beautiful but were limited in variety and would only flower just the once. However, today, hybridisation has given us thousands of new rose varieties which have inherited the very

best characteristics from the parent plants and will flower repeatedly while being resistant to disease. We now have many modern rose cultivars in various colours and forms. Rosa ‘Gertrude Jekyll’ is a heavily scented, modern shrub rose suitable for the cutting garden, with lots of fragrant blooms. Rosa ‘Harlow Carr’ has a real old-fashioned scent, and rosa ‘Evelyn’ has an apricot aroma. For a hint of tea and bananas, try ‘summer song.’ Climbing and rambling roses bring charm and grace to the garden. An ordinary structure can be transformed by a climbing rose. An outdoor dining space can be made special by training a scented climbing rose over a pergola or a gazebo near the seating area. Thornless rosa ‘Zephirine Drouhin’ has flushes of large, deep-pink and scented double flowers – ideal

Check roses for pests and diseases, spray if necessary. Stake tall-growing perennials, like delphiniums. Caring for roses ensures wonderful summer blooms. The time to prune roses is over Christmas up until the end of February. To prune roses, simply remove any old or weak stems to encourage new growth and to reduce the height of the plant by about half. Feed the roses well with some bone meal in spring and summer to help promote better blooms. Finally, take time out to visit the wonderful RHS Hampton Court Palace Flower Show (5th to 10th July) to see amazing varieties of roses as well as beautifully designed gardens. This truly is a spectacular flower show with its unique setting.

Principal Designer at Denniston Architects, Jean-Michel Gathy, has been responsible for many of the most iconic hotel swimming pools and water features in the world, From Marina Bay Sands to The Chedi Muscat and The Setai in Miami MARINA BAY SANDS, SINGAPORE Dominating the city’s skyline is the world’s largest rooftop pool, designed by Jean-Michel Gathy. It offers a spectacular oasis, with the 150 metre-long infinity pool, which is one of the best spots from which to look out over Marina Bay Sands itself. The gorgeous infinity pool is built on a 650-foot platform above three buildings, and it is the largest outdoor pool in the world at this height. POINT YAMU RESORT BY COMO, PHUKET The contemporary design of Point Yamu by Como makes use of a simple white and turquoise colour palette, inspired by the surrounding waters and emphasises texture and tiles. Point Yamu offers a breathtaking 100-meter infinity pool overlooking the panoramic views of Phang Nga Bay. PARK HYATT SUNNY BAY RESORT SANYA, CHINA Park Hyatt Sanya Sunny Bay evokes the feel of a private mansion by the sea, comprising five

swimming pools, including a 115-metre outdoor pool, a 25-metre indoor pool, a children’s pool, a family pool and a pool within the Spa. The Sunny Bay lap pool is, at 115-meters, one of the longest lap pools in all of China, while the 25-meter indoor pool is the only indoor pool in the entire Hainan province. CHEVAL BLANC RANDHELI, MALDIVES Cheval Blanc Randheli offers stylish design and a relaxed, friendly atmosphere in the serene and intimate setting of the Maldivian archipelago. Jean-Michel Gathy designed each villa with a pool that is a quarter of the length of an Olympic swimming pool, overlooking the turquoise waters of Randheli. THE CHEDI ANDERMATT, SWITZERLAND The design of the Chedi Andermatt is respectful, quirky, energetic and creative, yet beautifully integrated into a small village. The hotel offers a 12-meter temperature-controlled outdoor lap pool and a 35-meter indoor pool covered by a

glass roof, where guests can relax and enjoy the scenery. THE SETAI, MIAMI The Setai is an intimate oceanfront resort in South Beach, Miami, with design features that combine the rich architectural history of the neighbourhood and its cultural diversity with the sleek Art Deco style. There are three swimming pools at the resort, including the 75-degree lap pool, 85-degree enter pool and the 90-degree family pool. THE CHEDI MUSCAT, OMAN The Chedi Muscat is an award-winning hotel in Oman situated amidst an elegantly landscaped twenty-one acre garden oasis with 158 Omaniinfluenced guestrooms and villas. VIEW FROM THE TOP In recent months, Paul Nicholson from Chalk Architecture has discussed in this column the importance of office space in the City. Lynne Edwards took up his invitation to visit him at their new office in the commercial heart of Brighton Paul, we are here at the very top of Lees House

in Dyke Road with panoramic views across the city to the sea. It must be an inspiring place to work for a firm of architects? The natural light we get in the studio is really wonderful, so we rarely have the lights on during the day. Apart from a bit of screen glare, the space is as good as we could possibly hope for – and as you say, the views are amazing. As with any creative business that relies on digital media, we spend an awful lot of time staring at the computer, so being able to lift one’s eyes away from the screen and gaze out to sea or back over Brighton has a massive impact on one’s sense of wellbeing. Creating a great working environment has a direct effect on the quality of the output from the studio. This would be the same for any office-based business, from creative agencies to call centres. We recently completed the office space for Net Natives here in the same building (we’re actually in their old unit); our brief was explicit in the sense that we needed to make the

working conditions as good as possible. We do feel a bit guilty that we’ve now got the view! As a company, you’ve had rather a nomadic journey to this location, haven’t you…? Since we founded Chalk back in 2007 we have moved around a fair bit, primarily because we wanted to keep our operations flexible to suit what was previously an unstable macroeconomic situation. These days the commercial environment is buoyant and our order book is expanding with some really exciting work. Most, if not all, of our projects are design-led, and we have a clear need for a high-quality studio space that gives us room to set out and explore creative solutions. Hence, we need to stay put for a while. We had previously been in the new Cycle Hub building next to Brighton Station, sharing the space with the Small Batch Coffee Roasters management and admin team. They’re a major client, and it made sense on a number of levels to borrow some space from them. This was

supposed to have been a longer-term home for us as well, but back in December a fire gutted the whole unit and we suffered a total loss of our gear – literally everything, apart from the data. What could have been a catastrophic event for the business actually turned into a humbling experience from which we felt the support and generosity of the Brighton business community. If there is one piece of advice to come out of the process, it is to review your data back-up procedures. Have multiple back-ups, one of which should be cloud-based. It’s interesting that social media played such a part in helping you out of a bad situation and that the business community was so generous. Can you elaborate? These days the output of our service is nearly 100% digital. Once I knew that our data was safe, which wasn’t clear for a good few hours, the critical issue was finding somewhere to base the team and maintain the service. Everyone had their own laptops, so the team were able

After an initial tweet from me appealing for help, the business community leapt into action and, dozens of re-tweets later, we had various offers of emergency studio space . I’d like to personally thank Wired Sussex, RLF Quantity Surveyors, Yelo Architects and The Learning People for their offers of assistance. We ended up staying with Wilbury Stratton in Nile House, on Nile Street in the Lanes, until we moved across to Lees House. Opening their doors to us meant our clients didn’t experience any drop-off in the quality of service we provided. Anecdotally, it is noted that 70% of businesses that suffer a major fire fail. If anything, we’re now stronger. So… now you seem to be in a very good place, metaphorically and literally. Presumably, some valuable lessons were learnt, but it seems it may also have given you some ideas about your future business direction? Having had to go through an extensive process of searching for a high-quality office space in Brighton made it very obvious that Brighton doesn’t have very much of it. I think part of this is a legacy of the recession, in that developers haven’t invested in the base level of the office fit-out (usually referred to in the trade a Cat-A fit-out) and business operators have been watching their pennies, so very little has been done in the way of their installation (Cat-B fitout). This is slowly changing, though. Demand is increasing, rents are going up and Brighton’s burgeoning tech entrepreneurs are becoming more aware that they need to provide better working conditions to keep their staff. Chalk Architecture Ltd and our sister business CODE Contractor Management Ltd are well placed

to provide our experience and expertise to the sector. Do you think the Council and other bodies could and should do more to create effective office space in the City, and, going further, do we have enough? Definitely, but, realistically, the Council has very limited funds to do this. They do have access to land, though, and there is a precedent for the council entering into joint venture relationships with developers who specialise in the provision of commercial space. We’re working with one such provider, looking at how to improve the stock across the city. What the Council can

I imagine that this sort of project will be on the radar of the big national players and would expect them to make the most of it.

Over the last few years we carried out some really nice residential work across Brighton and Hove: a major refurbishment to Atelier (a large modernist house) on the Droveway next to Lancing Prep School; we have been working our way up and down Westbourne Villas in Hove extending and remodelling a number of large detached and semi detached Victorian Villas. Currently we are assisting a number of expat clients who have bought property in Brighton as their bolt hole when returning from overseas. In conclusion, Chalk Architecture seems to be very forward-thinking and ‘connected’ to this area. Where do you see yourselves in five or ten years’ time? It’s funny, when you operate a creative business how, as soon as you complete your business plan re-write, you basically have to start re-writing it again. We’ve grown organically since we started in 2007, rather than taking aggressive steps at expansion. The trick is judging when to make the next step up with investment and growth. We are certainly starting to flex our design muscles into the wider architectural market, with new hotel projects and mixed-use development schemes on the drawing board. We’ll always offer our unique specialist interior architecture service, but our evolution will naturally take us into delivering solutions for both the inside and the outside of the building. Eco flooring has come a long way to be smart, functional and stylish. Portfolio looks at some of the options available

nvironmental sustainability used to be a fringe interest – perfectly acceptable somewhere like Brighton, of course, where we’re all a bit bohemian and where we remember to put our recycling out. Over the last decade, though, eco-friendly has become big business – in work, play and in our homes. Eco-friendly floor finishes have come a long way: some of the most stylish homes include serious flooring with a low environmental impact and minimal carbon footprint. Cork and bamboo flooring have both been around a while, and both have excellent environmental credentials. Cork is harvested from the cork oak tree (a Mediterranean tree), and only the bark is removed; it grows back in 3-4 years and can be harvested again. It has anti-microbial properties and can be stained in many different colours, making it very versatile. Good-quality cork flooring could last as long as 30 years, too – no replacement needed. Bamboo is another sustainable crop. Hardwearing and water-resistant, it has the look and feel of hardwood, and comes in many different finishes.

Linoleum - or lino - made from natural materials (including linseed oil and cork dust), is another water-resistant and hard-wearing floor finish. Although you can still get designs that mirror the lurid lino of the 60’s and 70’s, you can also get lino in contemporary designs and textures. If you’d like a recycled floor, the choice is vast. Recycled glass floor tiles, PET (recycled polyester) berber carpet, and recycled (from old tyres) rubber flooring are all super-hardwearing and very stylish. Leather is only really suitable for non-vegetarians, and dry, lowtraffic areas (any spills will stain), but if its well looked after, it will tone and soften with age, improving its appearance. he month-long festival of European football will see three home nations (England, Wales and Northern Ireland) compete in a major tournament for the first time since 1958, with the BBC bringing you every step of their journeys along with Europe’s elite. With a highly acclaimed talent line-up, including a raft of former international players bringing first-hand experience on the European stage, the BBC will bring the very best live action, commentary, news and reports, highlights and analysis across all platforms. LIGHT AND BRIGHT The Hairy Bikers may be turbo-charged and full of aggression on the roads, but this summer they’re slimming down again with a light salad that’s perfect for long evenings

I

n the last few years we’ve really been looking at trying to maximise flavour whilst stripping out the fat and nasties from food, and this roasted carrot, pepper and chickpea salad might just be the best we’ve ever discovered. I think the perception with good food is that it lacks flavour and substance, but not this one. The carrots and peppers intertwine to add crunch and texture, the chickpeas offer a software, and by surrounding the dish with greens as an optional extra, you have everything to hold it all together. We like a dressing to go with it as well, and you can make something really zingy with orange or lemon. Alternatively, if you’re feeling a little bit more ambitious, then why not add a pinch of caster sugar or a little drizzle of honey if using lemon. With orange, add a tiny squeeze of lemon juice. The salad can be served on its own with some leaves or to accompany some plain grilled meat. This is a great salad that is filling, tasty and healthy, and we think that should be the goto summer sizzler this year.

ROASTED CARROT, PEPPER AND CHICKPEA SALAD Serves 4 - 136 calories per portion Prep: 20 minutes Cooking time: 35 minutes Salad • • • • • • • • • •

2 large carrots, peeled and cut into 2cm chunks 1 tsp ground cumin 1 tsp olive oil 2 red peppers, de-seeded and cut in half, lengthways 400g can of chickpeas, drained and rinsed 2 tbsp chopped dill 2 tbsp chopped mint 2 tbsp chopped parsley or coriander flaked sea salt freshly ground black pepper

1 tsp tahini 1 tsp olive oil freshly squeezed juice of 1 orange or lemon 1 garlic clove, crushed ¼ tsp allspice ½ tsp cumin pinch of caster sugar or small drizzle of honey (optional)

Preheat the oven to 220°C/Fan 200°C/Gas 7. Line a roasting dish with baking parchment.

Bring a saucepan of water to the boil. Add a pinch of salt and the carrots and simmer for 15 minutes until they’re almost tender. Drain the carrots and tip them into the roasting dish, then season with salt, pepper and cumin. Drizzle with the olive oil.

Push the carrots into one half of the roasting dish and put the peppers in the other half, cut side down. Roast for 20 minutes until the carrots have taken on some colour and the peppers are starting to soften and look slightly charred. Remove the dish from the oven and put the peppers in a bag or a covered bowl and leave them to steam until they are cool enough to handle. Peel off the skin – it should come off easily – and cut or tear the peppers into thin strips.

To make the dressing, whisk all the ingredients together and season with salt and pepper. If using lemon juice, you might like to add a pinch of caster sugar or a little drizzle of honey.

To assemble the salad, put the carrots, peppers and chickpeas in a large bowl. Add all the herbs, then pour over the dressing. Mix everything together, then leave to stand at room temperature for a while to let the flavours develop before serving.

QUELLE SURPRISE Ever on the look-out for authentic French cooking in Brighton & Hove, Daniel Frickelton, samples the francophile delights of the latest offering from hotelier and restaurateur Hervé Guyat

C

onsidering the physical proximity of France to southern England, with Normandy merely a long spit into a prevailing sou'wester from Brighton Pier, you would think diners in our City would be spoilt for choice when looking for a bit of French grub. I can nevertheless count on two fingers the number of restaurants offering genuine French cooking in this area during the 20 years I have lived here. I'm sure there must be some I have missed out, but it is a remarkable fact that you have to actually do an internet search to find a French eatery. You want Indian or Italian? Just mogate yourself into town and have a stroll in any direction but south (for France). You will have the same problem I have when entering a car park with loads of empty spaces: which 96  PORTFOLIO

one to choose? Tough decision, especially when they are all so similar.

“I can't think of a better place to take your hunger and thirst" Regular readers of food reviews in the British press will have noticed the decline in critical interest in French cuisine in recent years. Some insist that standards have slipped in French kitchens, that they don't seem to care any longer. Others blame the ascendancy of fast food and the eat-on-the-go culture. Personally, I think critics just got bored with writing about the glories of French food for so many decades.

The demand for things French nevertheless appears unabated. After all, millions of us still make our very necessary regular pilgrimages across or beneath la Manche to get our fix of food, drink, golf and culture at French destinations. I was therefore delighted to be offered the opportunity to review Hervé Guyat's recently renovated (2007) bar and bistro in the New Steine. Hervé rolled up in Brighton in 2000, following successful careers in fashion and then in the hotel business. The experience gained from working with the likes of fashion houses Valentino and Cacharel in Sloane St and Bond St would inform his passion for quality and getting the right mix of colour and décor, skills that served him well when he moved over to the

hotel trade. Hervé's first hotel was the Abbey Court Hotel in Pembridge Gardens, part of the trendy Notting Hill Gate. “The hotel was mainly used by fashionistas and designers such as John Galliano,” he says, “who felt at home with our English charm and modern décor. This was my first inspiration. Looking around me at what the owner had done by mixing Laura Ashley and new England with original oil paintings, Villeroy & Boch china, antique furniture and bibelots displayed in different areas, including bedrooms, creating an exclusive home from home (my emphasis).” Which accurately describes my first impression of Hervé's bistro in the New Steine. The dining space resembles nothing if not the informal elegance of a Georgian living room, decorated by someone who has mastered the difficult art of blending the old with the new – polished Georgian marble fireplacecum-surround with quirky, modern crystal chandeliers – and graced the whole with modern furniture, colourful table linen and zany, “fringie” original artwork, presumably from Hervé's private collection. The net effect is one of cultivated, classy intimacy and relaxation, a room in which guests converse in a normal tone of voice, as they do in French restaurants. Betty met us at the door, was clearly expecting us, and made us feel that our arrival had made her day. As she led us to our table by the windows, I felt like the prodigal son returning to the

warm embrace of an adoring family. Hervé's experience in London hotels was clearly not going to waste. A quick glance at the menu resolved the white-or-red issue faster than a French chef can crack an egg. My eyes went no further down the wine list than to the Bourgogne, Pinot Noir 2013 from Maison Louis Latour. Very French in style, its dry astringency laced with strawberries, cherries and a whiff of smoke, this Bourgogne was the perfect partner to our classic bistro meals, and at £24.95 was a real steal.

“You are looking for robust, well-turned classics of French cooking, and the menu at the New Steine is bursting with them” The menu card with its plastic cover and rustic, slightly tatty, appearance transported me straight to the family restaurant in the Dordogne, where, years ago, I ordered trois fois canard for lunch. Having found, identified and annihilated the three kinds of duck in the enormous warm salad placed before me, I was shocked when the second substantial course of ducky delights arrived, and quacking by the time

the third, a plateful of confit, was presented. Trois fois canard, after all. But that's just one of the things I have always loved about dining in other countries – the chance of a Forrest Gump moment. But you're not looking for surprises when you head off to M&S to buy underpants, nor are you seeking quelle surprise moments when you take your hunger to a bistro. You are looking for robust, well-turned classics of French cooking, and the modest menu at the New Steine is bursting with them. Our starters, duck rillettes and salmon tartare with avocado (£6.50 each) were faultlessly prepared in the traditional way. Crucially, the salmon was very fresh. Our mains, duck confit with lentils and lardons (£13.95) and Sussex braised pork cheeks with mash (£13.75), were but two among many bistro classics available at New Steine. My dining companion left nothing but duck bones on her plate. I swapped the mash for some potato dauphinoise and tucked into the cheeks. They came with a generous amount of red wine and shallot gravy, which I would have greedily mopped up with a piece of bread, had there been any. The pork cheeks were cut-with-a-fork tender and chock-full of meaty, piggy flavour. They truly have a cheek at the New Steine, and I can't think of a better place to take your hunger and thirst. PRIVATE LANDOWNERS FACE FINES AS FLY-TIPPING REACHES ONE MILLION CASES A YEAR Record levels of illegal fly-tipping reported this week are likely to lead to an increased burden of costs to private landowners in removing the waste, claims property management specialist VPS. A government report just issued estimates that the private sector already pays up to three times more than local authorities to dispose of illegally dumped rubbish. The cost of fly-tipping on private land is estimated to cost up to £150 million a year, in comparison to the cost of clearance of fly-tipping to local authorities in England at nearly £50 million. New fixed-penalty fines will be introduced this week to help tackle the growing issue of fly-tipping in England and Wales, so that local authorities now have the powers to issue fines of between £150 to £400 for small-scale fly-tipping cases. "Private landowners may not realise it, but it is their responsibility to remove fly-tipped waste and dispose of it legally, and at their expense. They can be fined £5,000 and a further £500 per day if they don't," warns Gavin Pringle from VPS. "It makes economic and environmental sense to implement measures that prevent fly-tipping in the first place and introduce stronger perimeter security, which might include CCTV."

SHOPS COULD MOVE INTO KING'S ROAD ARCHES IN LESS THAN A YEAR

CHARITY CALENDAR RETURNS FOR SECOND YEAR Following the success of last year’s campaign, Evonprint is reprising the ‘Love Sussex’ calendar again for 2017. The 2016 calendar featured 13 of the county’s top beauty spots, captured by budding photographers and voted for by the Sussex community. Businesses could be moving into the second phase of a £5 million seafront regeneration in less than a year as restoration work nears completion. Brighton and Hove City Council will begin the hunt for tenants to move into new shops, cafes and bars in the repaired and renovated King’s Road Arches later this year. Work is being done to strengthen the road, and the second half of the project is in its final stages after a significant restoration of the city's seafront. The council is now applying to change the use of the newly created arch units for shops, cafes, bars and a West Pier Museum.

UNIVERSITY OF BRIGHTON FIRST IN UK TO SIGN UP TO JAMIE OLIVER'S SUGAR-SMART CAMPAIGN Jamie Oliver has praised the University of Brighton for becoming the first in the country to join his campaign to cut sugar consumption. The star chef sent staff and students a message of support as the university joins with Brighton and Hove City Council in its Sugar-Smart City campaign. The institution intends to introduce a range of awareness schemes over the next year, including a 10p levy on the price of sugary drinks. Money raised will be used to fund food education schemes for the university’s students, with cooking lessons, education and nutrition information events. Jamie said: “It's brilliant to hear you are introducing a levy on sugary drinks to help raise awareness about the long-term damage too much sugar can have on our health, and empowering us all to reduce it in our diets. It's not about banning sugar altogether – a piece of cake for a special treat is totally fine, but we need to understand that, by reducing the way we eat and drink sugar, we can have a huge impact on improving our health. With reduced sugar consumption, paired with regular exercise and a healthy, balanced diet, we can all lead healthier, happier lives.” In March, Chancellor George Osborne announced a tax, to be introduced in 2018.

GET A GRIP! The start of a glorious Spring on our Sussex courses has GolfGuy wondering if it’s time to renew and refresh some basics...

R

ory is doing it. Jordan Spieth has been doing it for years. Jim Furyk has been doing it since he was a lad and claims his father taught him how to do it. Adam Scott tried it and returned to the more conventional method. It’s a practice which, like many other cherished human activities, has many names. You’ve probably guessed by now that I’m talking about the putter grip variously known as the cross-handed, lead-hand low, or lefthand low grip. Rory recently adopted this style to address a problem with right-hand dominance in his stroke, which was causing him to pull the ball left. The change appears to be benefiting him. Jordan says that older pros tell him all the time that if they could have changed one thing earlier in their careers, it would have been to adopt the cross-handed putter grip.

Not sure about the notion of letting your left hand do all the work, assuming you are righthanded? There are other options. Sergio Garcia, Justin Rose and Phil Mickelson are currently using a so-called ‘claw’ grip, in which the right hand remains low, but in an unusual claw-like position which some compare to the way you would hold a pencil. Others are constantly toying with new putter grips, with varying degrees of success. The one thing all of these tinkerers have in common with the rest of us is an overarching concern with pace and line on the putting greens. All it takes is a couple of missed three-footers in two consecutive rounds to set the wheels of change in motion. Unlike the average golfer, professionals instinctively turn to short-game experts such as Dave Pelz and Dave Stockton for guidance, with the result that their madness is informed

with method. The rest of us tend to pick things up from golf magazines or from watching our mates on the greens. Although this occasionally leads to some improvement, it’s not exactly an example of the scientific method in practice, is it? It is evident that adopting a new putting grip will help some, but not all, golfers. The question is, who should be considering a new grip? And which one? Some pull their putts, others push them. Some have problems with shoulder alignment, while others – Jack Nicklaus comes to mind - deliberately use an open stance. The array of choices and options is mind-boggling. How do we know when it’s time to get a grip?

GOLF A great question, and the only golfers who are needing or wanting to try a new grip are the ones who are missing their short putts. These will be missed, generally, left and with the feeling of a wristy, handsy action. The idea behind all new putting methods is to reduce/ eliminate the right hand working too quickly through impact, rather than the arms and shoulders rocking through smoothly. THE REVERSE OVERLAP In order of the most commonly used, the first grip, where we change the interlocking or overlapping finger of the normal golfing grip to the outside, is the most conventional. This makes the stroke feel more stable and has the feeling of reducing a flick. LEFT BELOW RIGHT... ...or cross-handed putting squares up the shoulders along the golfer’s line, giving the shorter putts more consistency. It also keeps the left hand lower through impact and avoids not coming up too early, creating a good ‘roll out.’ It is also the least uncomfortable and most affordable change compared to the next two. BELLY PUTTER (COUNTER-WEIGHTED) Hugely popular until banned, if anchored. The idea, once again, was to avoid a ‘flicky’ movement, and if everything is locked together, this cannot happen. Now you cannot anchor the counterweighted putter, which, being longer and heavier at the top end, feels like an extension, to encourage a pendulum motion.

THE CLAW Looks the most awkward, and certainly is, until practiced! The right hand wrist-hinge is completely eliminated as it has moved 90 degrees. COMMENTS FROM RORY: “I felt like, over the past few weeks, my right hand was becoming a little bit too dominant.” This was before the Cadillac got going. “I practised over the weekend, just with left below right, and it felt really, really good. “I missed a couple of putts on Friday at Honda that I felt, even before I made contact with the ball, that my right hand had taken over, and I missed them left. I was sort of playing around with a few different grips. This one felt more natural to me because I’ve done it before and I do it quite a lot when I’m just practising, in drills.”

THE MINI CENSUS The world’s first ‘Mini Census’ is taking place ahead of Mini World Live, which takes place on Sunday, July 10 at Rockingham Motor Speedway

A

ccording to the iconic TV advert, Minis have feelings too… but then, that’s hardly surprising, as the Mini, be it modern or classic, has one of the biggest personalities on the road. And to find out just how much character owners attribute to their four-wheeled friends, the organisers of the UK’s biggest and best Mini shows are carrying out the world’s first ‘Mini Census’ ahead of Mini World Live, which takes place on Sunday, July 10 at Rockingham Motor Speedway, Northants. The census aims to discover the gender split between Minis – whether they’re male or female - where they live, the average age of their owners, and, most importantly, what the top 10 names for Britain’s Minis are. So, whether yours is Mickey or Minnie, old or new, Mini World Live is calling for you to help build up a bigger picture of the UK’s Mini population. Event Manager Kat Chappell said: “Minis and the people who drive them always have plenty of character, and we know that a lot of them are much more than just a car to their owners. We want to celebrate this by finding the most

The show will feature attractions catering for fans of both classic and modern Minis, including a concours competition, individual entries, a huge retail village, show and shine areas, club displays and on-track action, the details of which will be confirmed nearer to the date. Visitors will also be able to enter a competition to win a Mini, sponsored by specialist insurers Carole Nash. The classic is currently being restored by the magazine teams, and will be on display at the Show. Modified Mini owners will also be able to enter a ‘Best Wheels’ competition, in association with Wheel Whores. BECKER’S BRITISH LOVE AFFAIR Boris Becker made his name as the seventeen-year-old Wimbledon champion. Thirty-one years later, he’s the driving force behind the current tennis Number One

U

nlike the reaction to many of his fellow countrymen’s sporting victories on British soil, Boris Becker’s 1985 Wimbledon victory was celebrated across the nation as a marvel – a surprising inversion of traditional Anglo-German relationships pertaining mostly to Becker being just seventeen years old at the time. Since then, Wimbledon has become synonymous with the blonde Bavarian. Not only did he notch up three wins and seven final appearances as a player, but during his recent time as current World Number One Novak Djokovic’s head coach, Becker has guided the Serbian to another two Wimbledon titles. Nowadays, Wimbledon is also Becker’s preferred home, which he shares with his wife

at the Wimbledon Centre Court in the players’ box, I feel like I’m playing,” he says, “I feel like I’m 17 or 18 again, with the same enthusiasm, same fire and the same will to win, but at the same time I’m thankful that I don’t have to do it again, because I’m too old for it. So I’m happy I can put my faith into my player, but the emotions are unbelievable. You know, for me, winning Wimbledon as a player and as a coach, it’s just the ultimate thrill.” In Djokovic, Becker’s faith is rarely misplaced. The big-serving Serb already has eleven Grand Slam titles to his name, and appears to be hot on the heels of long-time rival Roger Federer’s record of seventeen. After former head coach Marian Vajda sought to take some time away from the stressful

“When I’m coaching and when I’m sitting at the Wimbledon Centre Court in the players’ box, I feel like I’m playing” Lilly and young son Amadeus, and as Djokovic sought for the mental strength to get himself over the final hurdle in major tournaments, the appointment of Becker was sure to bring with it an improved performance on the hallowed green of the All-England Lawn Tennis Club. “Wimbledon is home for me, and one of my favourite sayings is ‘never underestimate the importance of local knowledge’,” explains the 48-year-old former champ, “I know everything here, from the Centre Court to the village to the quickest way to get into Chelsea or Kensington. I’ve played on every practice court; I know the locker room, I know the player’s lounge. I’ve been there for 32 years, so I think that gives us a head start.” Becker even preserved his fondest memories of the Club in the book he released in 2015, Boris Becker’s Wimbledon. Of course, despite his playing days long being over, Becker’s return to the venue where his teenage self began an illustrious career marks it out as his favourite place to win, be it as a player or a coach. “When I’m coaching and when I’m sitting

world of coaching, the implementation of Becker resonated as yet another major statement from the World Number One. “I hope I make a difference to every single practice I do with him, but obviously he is judged by how long he’s Number One since I came to the team, how many Grand Slams he’s won, and a few times he’s lost,” says Becker of his newest career move, “Being a coach of a tennis player is a very personal relationship. In tennis it’s a one-to-one situation and in order to help him, I have to understand what he’s going through. So he has to tell me about his feelings. A tennis match is often decided by your mental attitude and your ability to concentrate and rise to the occasion. “For me to give him the right tips and strategy, I need to know where he’s at. So he has to trust me 100 per cent with everything. You have to be friends from the first day, I mean you have to be very comfortable. After a couple of months, we both realised that this is a great match and we can really benefit from each other if we are open.”

Interestingly for a man who was prone to the odd on-court outburst or two in his day – although he was overshadowed at the time by his contemporary, John McEnroe – Becker has, over time, developed a calmer persona which he believes has been crucial to Djokovic’s ability to finish tournaments as strongly as he, invariably, begins them. “Do we scream ‘let’s go’ and ‘stay strong’ and everything?” Becker says, “Of course, but I don’t think that’s coaching in the real sense. You know in the middle of the storm, when everybody goes crazy, I think he looks for us as a place of peacefulness, of serenity, of quietness. If I would go and jump and scream all the time, I think it could make him more nervous than anything.”

“They have to be comfortable with the baggage that comes with it: the more you win, the more people have expectations” Even though Becker’s assertion that whilst winning a Grand Slam only appears easy “on paper”, as someone who won his first whilst still of school-age, the words appear a little hollow – but he maintains that the 1985 triumph was as much a shock to him as it was to the tennis world at large. “The plan from my parents for me was to finish school, go to university, get a proper degree and learn something respectful. The last thing on everyone’s mind was me becoming a tennis professional,” he told the Cambridge Student in 2012. “I decided to give it a try for two years at sixteen, and take a break from school. Nobody could have imagined that I would win my first Wimbledon the first time I played.” As someone who had won titles all over the world by his 20th birthday, in Britain, USA, Australia, France and Japan, Becker is wellplaced to cast a knowledgeable eye over the future of tennis – including those aiming, within a few years, to knock Djokovic off the coveted top spot. What he sees, however, are talented individuals let down by “character and maturity problems.” “They have to be comfortable with the baggage that comes with it: the more you win, the more people have expectations…it’s difficult for these younger players to cope.” Whilst his off-field infidelities have been well publicised, one thing’s certain: it’ll take some player to match Becker’s decades-long legacy on-court.
