LA little out of the way, but worth the extra drive!

akeview Wine Cellars is an eco-friendly, boutique-style winery situated in a picturesque country setting with stunning views of Lake Erie. The facility was a retirement dream turned reality for owners, Sam and Becky Best, who have more than 30 years of experience in making wine. All of their wines are made using grapes from local vineyards. Their premium wine varieties are fermented in Pennsylvania oak barrels.

In May 2008, Sam and Becky decided to build a new winery that was inviting, eco-friendly and handicap accessible. The pond located on the grounds is used for storm water management, irrigation and fire control. No harsh chemicals are used in the process.

Enter their spacious and attractive tasting room with large windows that enable you to take in the spectacular views of Lake Erie as you sip your wine.

The tasting bar features a display of sand, stones and shells from beaches around the world.

Come and enjoy our award-winning red and white wines as well as our blush and specialty wines.

We are located on 8440 Singer Road in North East, PA 16428. For more information contact us at 814.725.4440, online at www.lakeviewwinecellars.com and Like us on Facebook.

CCIDA AND CCPEG LAUNCH ‘LIVE CHQ’ Marketing Campaign

New Website and Advertising Effort to Focus on Talent Attraction and Retention in Chautauqua County

The Chautauqua County Partnership for Economic Growth (CCPEG), along with the County of Chautauqua Industrial Development Agency (CCIDA), is announcing the launch of a new, multi-year marketing campaign. The effort, called ‘Live CHQ’, will focus on talent attraction and retention by highlighting quality of life aspects and career opportunities available in Chautauqua County.

“Live CHQ is primarily intended to market our county to people living outside of our county in order to attract new and professionally talented residents by focusing on the best our county has to offer – including affordability, job opportunities, our cultural and entertainment attractions, and a wide variety of outdoor recreation options,” said Mark Geise, Deputy County Executive for Economic Development and CCIDA CEO. “As part of the talent retention effort, we will also remind current residents of the benefits of living in Chautauqua County.”

The campaign is modeled after a similar talent attraction and retention marketing effort in Buffalo, known as the “Be in Buffalo” campaign. That effort was spearheaded by Invest Buffalo Niagara, which also provided assistance with initial planning of the Live CHQ campaign.

A major component of Live CHQ is a new website – LiveCHQ. org - that will inform the public about the various quality of life aspects the county has to offer, along with employment resources and business development opportunities found across the county. The campaign is also intended to assist local companies, businesses, and nonprofits across all sectors by helping to inform their prospective employees about what the county has to offer.

“Many of our local businesses and nonprofits need more skilled, talented, and experienced employees to fill vacant jobs. But it can also be challenging to recruit individuals to fill those

positions, due to a high demand for skilled workers, compared to the number of candidates currently living in our county. We are encouraging the business community to use the website to assist with their recruitment efforts, especially for talent located outside of the area who may be unfamiliar with what Chautauqua County has to offer,” explained Nate Aldrich, Chautauqua County Economic Development Coordinator and CCPEG Manager.

CCIDA and CCPEG contracted with Buffalo-based Block Club to develop the Live CHQ campaign following an RFP process in late 2022. Throughout 2023, Block Club then worked to develop Live CHQ by visiting the county and meeting with key stakeholders during the “discover phase” of the campaign, to determine its focus – young families, active adults, and professionals with a passion for outdoor recreation and cultural/community experiences who currently reside outside of Chautauqua County. Current county residents are a secondary target audience. Block Club also designed a “choose your adventure” theme, incorporating “CHQ” into the messaging of each ad. The company also designed specific digital ad assets for the campaign, along with a promotional video advertisement.

The website was designed by Clevermethod, also based in Buffalo. In addition to designing LiveCHQ.org, Clevermethod also developed ChooseCHQ.com, the new website for CCIDA and CCPEG, along with the other affiliation agencies –the Chautauqua Region Economic Development Corporation (CREDC) and the Chautauqua County Capital Resource Corporation (CRC).

Funding for the Live CHQ campaign was derived from American Rescue Plan Act funding provided to CCPEG by Chautauqua County, a multi-year grant from the Ralph C. Wilson, Jr. Foundation, and from the CCIDA’s general marketing budget. Assistance in developing the campaign was also provided by Chautauqua County Government and the Chautauqua County Visitors Bureau, along with a variety of organizations and attractions found across Chautauqua County.

“We want to emphasize that this is not a panacea that will suddenly reverse decades of population decline experienced in our county and across the Western New York region. Our hope is that it will be a valuable tool that, when combined with other efforts, will help to move the population needle in a positive direction,” explained Geise. “The launch of Live CHQ is the culmination of a year’s worth of planning and development, and we’re excited to see it rolled out and implemented.”

More information about the Live CHQ marketing campaign will be announced in the coming weeks.

Try one of our original recipe favorites • Treat your guests to a homemade BBQ Dinner!

Weidner

BBQ IS FAMILY OWNED AND OPERATED

In 1956, Bert Weidner and his two brothers set up a small stand at the Erie County Fair and began serving BBQ Chicken. They slow cooked fresh chicken over an open flame all the while basting it with their own special recipe BBQ sauce until it was cooked to perfection – tender and juicy on the inside, crispy and golden brown on the outside.

Three generations later, we are cooking it the exact same way and using the sauce as Bert and his broth-

ers did over 60 years ago. Today we are still at the Erie County Fair, the Eden Corn Festival and hundreds of fundraisers, events and private parties all over Western NY.

Now, not only can you order our signature chicken, but you can also try our wood smoked pork and ribs, tender roast beef or any of our delicious homemade sides.

If you are planning a party or event, give us a call! We will take care of all the food, so you can relax and enjoy yourself. You and your guests will be happy you did!

Next, you pass our authentic ticket office, where the ticket master will be glad to sell you tickets for the day’s train trip. Tour our small gift shop and snack bar while waiting to board your train. With an “all aboard,” the whistle blows, and the whoosh of the air brakes releasing can be heard. Very soon, the engineer gets the train up to speed and you are on your way, enjoying your 90-plus-minute ride through history. Along the way, you will see a few glimpses of the modern day; for the most part, though, the trip is through the countryside and farmlands that have remained virtually unchanged since the line was originally laid in the 1880s.

Throughout the year, we offer special excursions, by our vintage World War II-era diesel engine. Our regular excursions run every weekend from Memorial Day Weekend until the last full weekend of October. Mid-November and December will be our Christmas excursions.

Please check our schedules on www.aarailroad.com for additional excursions.

THE VIEW

Noble Winery

Noble Winery is known for its fantastic view of vast acres of grapes framed by Lake Erie. On clear days you can watch freighters on the lake and make out buildings, land and wind mills on the Canadian shore line. During the summer months it is a great place to watch the sunset. Also, you can follow a storm form and move down the lake. If lucky, you will even spot a waterspout or two.

THE WINE

Noble Winery has a wine for every palate, all made at the winery with locally grown grapes. You have choices of dry crisp whites, savory dry reds, semi-sweet and sweet white, pink or red wines. All of the wines are flavorful and clean tasting with some varieties that very few people have tried. Customer favorites include Rock Candy, Sexy Sangrias and our house made slushies.

GLASS GROWERS GALLERY IS CELEBRATING 50 YEARS

Glass Growers Gallery (GGG), located in downtown Erie, PA, is proudly celebrating 50 years in business. The gallery and gift shop represents over 90 regional artists and features another 100 artisans from across the country, creating a diverse and ever-changing selection of unique artwork and artisan goods. GGG offers paintings, photographs, pottery, glass, mosaics, jewelry, sculpture, and more. This milestone signifies a five decade legacy of cultural enrichment and artistic contributions to the Erie community.

In 1974, Glass Growers Gallery (GGG) opened its doors at 2nd and Plum to showcase the work of John and Deborah Vahanian. They took flat sheets of glass and made 3D objects: geodesic domes and quartz crystal shapes that became part of kinetic sculpture, terrariums, light fixtures, and windows. The name “Glass Growers” has its roots in that process. After learning they were dealing with toxic materials, the founders stopped “growing glass” and expanded the gallery’s representation of regional fine art and professional American crafts in their bright, welcoming, plant-filled space.

In 1982, GGG relocated to a renovated church building at 701 Holland St. In the spacious 2 ½ story building, Deb Vahanian took the lead and began curating annual shows: Quilt, Watercolor, Kaleidoscope as well as other unique shows like the History of the Bicycle, the Carousel, Joseph Plavcan Student continued on page 26

Retrospective, International Images, Women in Transition, and Judy Chicago’s “The Birth Project” to name a few. GGG thrived while providing artistic encounters for the community and encouraging people to find their creative selves.

In 1999, the Erie Art Museum planned to expand. GGG chose to be its neighbor by moving to its current location in the heart of downtown Erie, 10 E. 5th St. In September of 2020, Deborah Vahanian retired and GGG was purchased by its current owner, Emily Ernes. Two staff members, Noreen Finn and Susan Martin, stayed on and helped ensure a seamless transition with their combined 30 years of experience. The team continues to focus their attention on celebrating art and imagination and creating an inspiring space for the community. Prioritizing art experiences, GGG features rotating art exhibits in the main gallery every 6-8 weeks, hosts a variety of artist workshops, participates in seasonal gallery nights through the Erie Art Museum, and hosts boutique nights and other events with its shopping district neighbors.

GGG believes there is a special inherent quality found in original artwork and handcrafted artisan goods. These pieces are imbued with a sense of purpose and meaning from the careful attention provided during the artistic creation process, making them acquisitions to be treasured for years to come. GGG’s art and gift offerings and event calendars can be found online at https://www.glassgrowersgallery.com. Nationwide shipping is available (free on jewelry-only orders) and the staff is readily available for personalized shopping consultations at staff@glassgrowersgallery.com or 814-453-3758.

If you haven’t visited downtown Erie recently, you’re in for a treat. The blocks surrounding GGG have been experiencing a renaissance. Only a short walk from the beautiful bayfront and filled with historical buildings and architecture, downtown Erie provides a special, multi-faceted experience for visitors to shop, dine, learn, and play. The team at Glass Growers Gallery hopes you will stop by and find joy and inspiration from our rich history, unique art offerings, and enthusiasm for the vibrant Erie community and its bright future.

mead, distillery tastings, delicious food truck offerings, live music, and big cat training demonstrations. Many Erie community members don’t find themselves at the zoo beyond the years their children or grandchildren are exploring it. To bridge this gap, the Erie Zoo event team has been working to find new and creative ways for adults to experience the zoo.

Beyond Felines and Wines, the Erie Zoo offers two other adult-only fundraisers throughout the year. The Mane Event kicks off the zoo’s adult-only fundraising events on June 29th, 2024, with a high-end event full of live entertainment, animal encounters, grazing stations loaded with food samples provided by local establishments, watering holes with unlimited beverages, and bountiful silent auction. In October, the zoo also hosts an annual beer fest fundraiser; Lions, Tigers, and Beers, where attendees can enjoy live music, local food trucks, beer tastings, and animal encounters. This year, Lions, Tigers, and Beers will be held on October 5th, 2024.

From energetic ball players and running companions to happy go lucky dog pals to slow and steady couch potatoes, NCCR has them all. The shelter can be reached at adoptions@caninerescue.org or 716-326-7297.

NCCR can always use volunteers, foster homes, donations and financial support. Volunteer applications, foster home applications and a donation list can be found online. NCCR created the Sampson Fund named after a dog found freezing in the snow a number of years ago. The Sampson Fund helps with the veterinary bills for the most urgent and sick cases that come into the shelter. Sampson’s story is also online.

Word of mouth is our best free advertising medium. Tell your friends about us and share our FB posts to let everyone know what great dogs are available. Every dog that finds a home opens a spot for another to be rescued. Thank you for helping out!

“Nature has always been the subject of my pieces; whether it is symbolized or implied, natural components will always be present. I believe nature provides the most intriguing element of design through form, structure and color. I try to interpret what I see and feel in this most captivating medium of glass. A stained glass window can be a wall of light that changes throughout the hours of the day following the strength and direction of the sun. As light changes so does the character of the stained glass. The effect of light on and through glass has no parallel. Glass is thrilling to work with and at my Living Glass Studio I rely on one fact when designing; The interaction of light, color and texture produce an energy that seem to enhance ones imagination and so anything is possible!”

Stained Glass Basics

It is true that stained glass measures its true power against the lighted sky. But this is not a limiting factor. During the day, stained glass windows come alive with brilliant colors, but as daylight changes so does the character of the stained glass. Everyone has their favorite time of day to view a particular window.

Frank Lloyd Wright used the term “organic architecture” in which he designed his structures – as if they emerged from their surroundings. His windows also framed nature using the natural scenery outside along with his geometric window design.

One of the best fundraisers for the shelter is coming up in July - the 12th Annual Dog-Gone Good Yard Sale is happening July 26, 27 and 28 from 9am-4pm at the shelter. Donations are accepted July 7-21 during open hours 1-3pm. This event just keeps getting bigger and bigger. Watch the website or the Northern Chautauqua Canine Rescue, Inc. The Living Glass Studio has adopted a similar theory behind its designs. Living Glass windows not only use nature outside their windows but incorporate nature into their windows as well. Shells, Stones flowers, fibers and beach glass are used to accent designs. Lead lines are not just to support the glass but are incorporated as part of the design as well. The harmony between line and light is evident in every Living Glass piece.

Once the sun goes down, the Living Glass window displays a different aspect. Special features with glass texture, attention to glass color, finishing details to the lead and solder, transform the window into an art form in itself.

Although I have worked in several mediums, glass has become my favorite and I have stuck with it faithfully for over 30 years. Through my business Living Glass, I offer personalized designs for windows in the kitchen, bathroom, living room, entrance way or any other area of the home. My work is an unusual technique of combining contemporary art with traditional glass concepts.

I invite you to stop into the Living Glass Gallery to enjoy the work produced in my studio as well as the work of several other local artists. It truly is the most charming shop in Chautauqua County! Also inquire about my classes, they are personal, fun and rewarding! I can’t wait to see you! Living Glass Gallery, 50 Main Street, Westfield, NY. 716-269-8977.

TThe Red House SERVES AS BARN WEDDING VENUE WITH A STEP BACK IN TIME

he RED (Retreat Event Destination) House in Cassadaga is a living piece of Chautauqua County’s past.

“I always feel shear relaxation and comfort when I come onto the property. The area I get the most internal feeling is when I cross the threshold into the kitchen,” says Nancy, the current owner. “I just wish the building could talk and I could learn more.”

She thinks about the women and their families who lived in the beautiful home and worked their farms with no indoor plumbing or electricity and wonders what their lives were like.

The elegant 19th century Victorian manor, with seven fireplaces, was built by the Denny Family in 1860. It is a very well preserved example of the detailed structures of the time with transom windows, bay windows and crafted hardwood floors.

Over the years, the house has been mentioned in several books and publications, such as Nineteenth Century Houses in Western New York, In The Rear Window and The Sittin’ Stone. These books, as well as articles, letters, and old photos are on display in the parlor for visitors to peruse.

Over the years the house has served many purposes. At one time it was the Homecroft Inn and at another it was connected to the Lily Dale Sanitarium. Also in it’s past it served as a reflection room and played an important

role in the Freemason’s initiation ceremonies. Another interesting feature that used to exist at the house was a tunnel leading to Cassadaga Lake.

An open staircase decorated with dental crown molding work, is located inside the double front doors. Several bedrooms with fireplaces are found on the second level. A third-floor ballroom is often used to take pictures because of lighting and unique windows. Guests who climb the stairs to the cupola see the grounds from a very different perspective and may see the deer and turkey that sometimes roam below.

The most popular use of the manor today is for the bride and groom to get ready on their big day, with the bride and her attendants using the front of the house and the groom and groomsmen using two rooms in the rear of the house that used to be the quarters for the hired help. There is a front and back staircase, so the groom doesn’t accidentally see his bride before the ceremony. Since 2022 the manor is also available for overnight stays for those visiting the area

The barn is the reception hot spot and if inclement weather brings the ceremony indoors if is a beautiful back drop for the ceremony. It is the perfect setting for formal or informal celebrations. The current barn was built in 1910, after the first one burned. It was built from blocks made by the Cassadaga Block Company which were made from gravel from Cassadaga Lake. The beams are built with peg construction and give a cathedral like feeling to the second floor.

The original elevator which utilizes a pulley system is a carryover from the old barn. Chandeliers light both floors. A covered open loft in the back brings in the outdoors through the big swing doors that mirror those in the front of the barn.

With the amazing manor and rustic barn the property is a great mix of the eloquence and casual comfort to the setting that is nestled on six parklike acres framed by deep woods. They have been the magical backdrop for a decade of wedding ceremonies and receptions.

The RED House which is located at 91 Frisbee Road in Cassadaga, is truly an area treasure to be experienced and enjoyed. For more information visit the website www.the-red-house.org, email Nancy@the-red-house.org, or call (716) 595-2450.

Johnson

High-Quality Wines

Estate’s Tasting Room, located in a 1920s apple cold-storage building built by the first generation of Johnsons; was renovated to provide a special view, through a ceiling-high glass wall, to some of the stainless-steel tanks used in our wine production. That glass wall provides the framework for the story of Johnson Estate which includes a rich authentic heritage, starting with the first generation, to the current innovative and consistently high-quality wines (and service) by the third generation of Johnsons and their team.

The History of Johnson Estate, Remember the Number Three

The history of Johnson Estate Winery is a story of threes; three generations, three buildings and three types of grapes. In the late 1800s, an English orphan named Frederick Johnson immigrated to Western Canada from England as a teenager. In 1896 he found his way to Cornell University to study entomology and later worked for the Department of Agriculture. In 1911, Johnson purchased a 1820s home and farm in Westfield, New York

and planted fruit orchards as well as Concord and Niagara vineyards. According to family lore, Johnson started making wine in the basement of the farmhouse during Prohibition. In 1920, he built an apple cold storage facility that now houses the winery’s tasting room.

Second-generation family member, Frederick Spencer Johnson, grew up on the farm and served in World War II as a naval aviator, graduated from Cornell University in 1946, and then raised his family overseas while working for the Rockefellers’ agricultural endeavors in Latin America. He returned to the farm in 1960 after his father died, removed the aging fruit orchards, and planted the first wine grapes in Western New York. Like Dr. Frank in the Finger Lakes, Frederick Johnson was the pioneer in WNY who understood that its special Germanic microclimate was excellent for wine grapes. He opened the winery in 1961 in his father’s apple cold storage building becoming the state’s oldest estate winery, supported NYS’s Farm Winery Act passed in 1976, and built a new tank building in the early ‘80s. Upon his death in 1998, the third generation of Johnsons, Frederick Jr., Elizabeth and Anthony, all Cornell graduates, inherited the farm. They planted new Riesling vineyards and constructed a finished goods warehouse. In early 2011, Frederick Johnson Jr., with his wife Jennifer, purchased his siblings’ interests in the farm and winery. They completed a renovation of the tasting room later than year, just in time for the celebration of the winery’s 50th anniversary. The farm, owned by the same family for over one-hundred years, was awarded a Century Farm designation from the New York State Agricultural Society in 2018.

From Bud to Bottle – Estate-Grown

Grapes to Award-Winning Wines

The team at Johnson Estate, led by Owners Fred and Jennifer Johnson and Winemaker Jeff Murphy, pays attention to all of the right details, from “bud to bottle”. The winery, celebrating its 62nd year in 2023, produces, innovative, and high-quality award-winning wines - over forty vintages, from dry to sweet, made from the thirteen varieties of grapes grown on 110 acres of Estate vineyards. These include European Classics such as Riesling, Pinot Noir, and Chardonnay, now grown on the Estate, as well as dry rosés, fortified and ice wines.

May Wine – A Creative Example

– New Vintage This Week

Jeff Murphy has been Johnson Estate’s Winemaker for over twenty years during which time he has introduced over a dozen award-winning wines to the Estate’s portfolio. He has a degree from Pennsylvania State University in Food Science and Enology and prior to joining Johnson Estate, had worked at Glenora

Wine Cellars and two other New York wineries. In a terroir which excels in growing Germanic varieties, Jeff has a palate and preference for making wines which accentuate the estate-grown grapes’ best attributes. He is inspired by German food and wine culture to the produce European and Germanic style wines which best express our “terroir”. There is no better example that our sparkling Vidal Blanc May Wine , which is infused with dried sweet woodruff. This wine, inspired by Germany’s May Day celebrations, mimics their white wine punches, as a German friend said once – it’s “Mai Wein in a bottle”. The 2022 vintage will be released this week!

Hospitality - Indoors & Out: Have You Been to FLIGHT?

At Johnson Estate, the hospitality of our staff matches the quality of our wines. The Tasting Room at Johnson Estate is opened every day, year-round, except for the four major holidays. In addition, the winery opened a new outdoor tasting venue in 2021, which we call FLIGHT. It is open from Memorial Day to Columbus Day and is named FLIGHT to honor of the founder’s love of planes AND to remind you that we serve “flights of wine” as well as cheese and charcuterie boards – large enough to be your lunch. To take advantage of the Estate’s vineyards and natural beauty, we also offer a number of “experiences” to be enjoyed –including vineyard walks (guided or self-guided), winemakers’ dinners, and harvest happenings. We hope that you can join us. More information is available on our website, www. JohnsonWinery.com.

Simple Pairing Pointers FOR WINE NOVICES

Pairing a delicious meal with the perfect wine can be a match made in heaven. Wine novices may be intimidated by the challenge of making the perfect pairing, but they need not put themselves under such pressure. Just because a certain wine might make for a perfect pairing, that doesn’t mean others cannot step in and serve an equally flavorful function.

People who appreciate a great meal accompanied by an equally great wine need not have an encyclopedic knowledge of food or wine to successfully pair the two together. In fact, some basic pairing knowledge might be all that’s truly necessary to make a meal more memorable.

• White and light: White wine fans should know that such wines tend to pair best with light meat, such as chicken or fish. According to Backbar, a platform designed to help bars and restaurants manage their inventory more effectively, white wines pair well with fish because the acidity in these wines enhances the taste of the fish. Chicken dishes vary greatly, and the online wine resource Wine Folly (www.winefolly.com) notes that the sauce will greatly affect the flavor of the meat. That

means a wine that pairs well with a certain chicken dish may not necessarily pair as well with a different one. Representatives at local liquor stores or wineries can help people choose which wine to pair with chicken dishes.

• Reds and reds: Red meats tend to match up best with red wines. Though they can be found in white wines, tannins are predominantly found in red wines. According to Backbar, the tannins in red wines soften the proteins in the meat, thereby helping enhance the flavors of the fat. That makes for a more flavorful meal.

• No need to spice things up: Spicy foods are beloved across the globe. Such foods can be among the more intimidating to pair with wine, as spicy foods have bold flavors that no one wants to detract from. In a 2016 interview with Eater.com, professional chef Sean Pharr advised against pairing high alcohol wines with spicy foods, noting that the alcohol can intensify the heat and spice of the food. That can prove disastrous for anyone trying to impress a date or show off their skills with spice. Many people prefer a Riesling with spicy food, as the sweetness of this white wine can help offset the spice, making for a satisfying, flavorful meal.

Pairing wines may seem intimidating. But a few simple strategies can help novices find a wine that makes a homemade meal that much more delicious.

OPopping Bottles: WINE TRAIL SEES RECENT DEVELOPMENT

ne of the biggest draws of the area is the Lake Erie Wine Trail. Thanks to major renovations at two of the most established wineries in the region, Liberty Vineyards & Winery in Sheridan and 21 Brix Winery in Portland, the Wine Trail will soon have even more to offer than it ever has before.

“The Lake Erie Wine Trail has really grown and matured over the last few years,” Sen. George Borrello said at a groundbreaking event at 21 Brix this past October. “To see our wine region mature and develop, this is a result of that.”

The 21 Brix expansion is a 6,400-square-foot project that includes a multi-purpose space for additional seating of approximately 100 enclosed seats during nice weather. It will also serve as a private space for events, which allows the winery to continue to operate during events such as weddings, parties or ceremonies, rather than closing the winery to accommodate the needs of an event.

Chris Cooke, the architect of the expansion, stated, “We are honored and very excited to be working with 21 Brix on the 6,400-square-foot expansion of this already fantastic winery. The design goal was to ensure that the charm of the winery remained intact while growing the space and allowing even more people to enjoy the winery’s fabulous year-round offerings and get a taste of what makes this place so special.”

Also part of the 21 Brix expansion is the addition of a full-scale kitchen, which will allow the winery to implement a full food program for events and catering. An ice rink was also planned as part of the renovation, located within the grape vines to serve as the winery’s own twist on a “Field of Dreams.” Kane said the rink will feature open skate hours, along with opportunities

Kris Kane, Owner of 21 Brix, began his career as a winemaker before he opened the winery on his parents’ land in Portland in 2011. Kane’s parents, Mike and Marion Jordan, own Olde Chautauqua Farms, a third-generation farm that has grown grapes since the 1950s.

“When I first started 21 Brix 12 years ago, we never thought that we would have to get any bigger than what we did,” Kane said at the groundbreaking ceremony. “Here we are 12 years later working on finally starting an addition that is probably five years overdue.”

Kane also spoke of being a leader on the wine trail at the groundbreaking ceremony and thanked all who have helped his business grow to the point that an expansion was called for.

“The Wine Trail, collectively with 23 wineries on the trail, brings 35,000-40,000 visitors through my door a year. Without them and this region being a grape region, I couldn’t do what I’m doing. There’s a lot of thanks to everybody,” Kane said.

The expansion is underway and construction is ongoing. The winery has remained operational throughout the process.

21 Brix is located on Route 20 in Portland, between the village of Brocton and the village of Westfield - known for the oldest Welch’s grape juice factory. Just a short drive down Route 20 from 21 Brix to Sheridan is Liberty Vineyards & Winery.

Liberty Vineyards & Winery began a renovation of its pavilion in early March. The renovation showed significant progress over the first few days.

Liberty Vineyards & Winery is a family-owned business that has

operated as a winery since 2008. The grape-growing history of the site, however, dates back nearly 150 years.

In other efforts to engage with customers, Liberty Vineyards & Winery offers workshops for beginners to prepare charcuterie boards to take home and share with friends and family. Liberty also has a Wine Club for customers to receive shipments of Liberty wines.

According to the Chautauqua County Visitors Bureau, the Lake Erie Grape Belt features more than 30,000 vineyard acres along a 50-mile Lake Erie Wine Trail. The trail includes 23 wineries spanning throughout Chautauqua County and neighboring Pennsylvania, collectively referred to as Lake Erie Wine Country.

Chautauqua County is the largest U.S. grape-cultivating region east of the Rockies and the largest global Concord grape growing region. Concord grapes are often used to produce jelly, jams and juices, along with wines.

Both of Senator Borrello’s grandfathers were grape farmers at one point, which is one of the reasons he has stressed the importance of the region’s agriculture. At the 21 Brix groundbreaking event, Borrello said, “I really appreciate what they’ve done to bring more economic activity and more attention to this region.”

WHow to Pair Wine WITH DIFFERENT CUTS OF

MEAT

ine enthusiasts insist that nothing can make a meal more flavorful than a good wine. A great pairing of wine and food can make for a memorable meal that people can savor long after the last dish has made its way into the dishwasher.

It’s easy for novice wine drinkers to become intimidated when tasked with pairing wines. That’s especially the case when pairing wine with meat. No two cuts of meat are the same, which means a wine that pairs well with one cut may not pair as well with another.

The wine experts at Wine Folly (winefolly.com) note that leaner cuts of meat tend to pair well with lighter wines. For fans of richer, fattier cuts of meat, high tannin wines can cut through the fat and make for a flavorful pairing. If that isn’t specific enough to make pairing wine and meat less confusing, individuals can consider these pairing suggestions for popular cuts of meat.

Filet mignon

Filet mignon is among the most popular and expensive cuts of meat. The cost of filet mignon can make pairing it with wine even more intimidating. Wine Folly recommends pairing filet mignon with a Merlot or Merlot-based red blend, a Touriga Nacional or a Mencía. Each of these wines capably complements the subtle flavor of filet mignon and bring out its natural flavor.

New York strip steak

New York strip steak, sometimes referred to as shell steak or Kansas City strip, should come out tender when cooked correctly. The meat experts at Massachusetts-based Butcher Boy Market note that a Cabernet Sauvignon-New York strip pairing is a classic combination. Though red wines are often the recommended pairing with meat, Butcher Boy Market notes that white wine, and champagne in particular, pairs well with New York strip steak. Wine Folly also notes that reds like Blaufränkish, an Austrian red, and a blend of Grenache Syrah Mourvèdre (GSM) also pair very well with New York strips.

Rib-eye

An especially flavorful cut of steak, the rib-eye is favored by people who like a big cut of meat. Wine Folly notes that a Sonoma or Napa Valley Zinfandel pairs very well with grilled ribeyes. High tannin wines can cut through the fat of ribeyes, but Wine Folly also notes that wines such as an Amarone della Valpolicella or Valpolicella Superiore Ripasso that have a strong fruit flavor can pair well because they contrast the natural flavor of the ribeye.

Sirloin

Sirloin is a leaner cut of meat that can still taste great when grilled. Wine Folly recommends a range of reds and cooks can choose one based on how they’re seasoning the meat or which sauce they’re using. For example, a French Syrah pairs well with butter sauces. Wine Folly also notes that Spanish Tempranillo or Montepulciano d’Abruzzo pair well with sirloin.

The right wine can make cuts of meat like filet mignon, ribeye and sirloin taste even better.

Pairings WINE & DESSERT

Loveis in the air come February, when plenty of sweethearts enjoy romantic evenings together. When the Valentine’s Day meal is through, it is prime time for something sweet. Often individuals feel they have to put away the wine from dinner and switch over to coffee or tea at this point in the meal. However, with a little knowledge of how to pair wine with dessert, Valentine’s revelers can continue the celebration through this final course.

According to Wine Folly, when pairing wine with dessert or other foods, the secret is to think of wine as an ingredient that will add a new flavor profile. Generally speaking, when it comes to choosing the best wines for desserts, a sweet wine is preferable as the sweetness in the wine will match the sugar in the dessert, suggests the wine resource Vin Yang. Here are some additional pairing pointers.

• A darker dessert usually requires a darker wine, as the wine should have a similar intensity to the dessert.

• The wine should be sweeter than the food in most cases.

• The flavors in the wine should match the flavors in the food.

• Chocolate and caramel are best paired with a sweet or fruity red wine, as dry wines may taste too bitter against chocolate due to the tannins found in both the wine and chocolate. Port, Sherry, Marsala, and Zinfandel are good options.

• Mild, buttery or sweet vanilla desserts work best with white wines, including sparkling wines. Muscat, off-dry Rieslings, and Prosecco are some ideas.

• Keep in mind that very sweet desserts or those with fruits, like cobblers or shortcakes, may benefit from a burst of acidity. A drier Riesling may work or a Vouvray Brut. Those who may be unsure of how to pair their desserts with wine can always speak with a wine retailer or a trusted restaurant sommelier for suggestions on wines for an extra-special Valentine’s Day.

Local Wineries

SPROUTING UP IN A TOWN NEAR YO U

Rosé from wineries outside of Washington, D.C? Specific vintages from the Finger Lakes region? Reislings from Ontario? Chambourcin from central New Jersey? California may still be the hub of commercial domestic wine production, but vineyards across North America are showing that they, too, can produce quality, flavorful wines for their communities. Winemaking businesses are taking root all over Canada and the

United States. In 1999, there were just six wineries in Loudoun Valley, Va., a region near the nation’s capital. By 2013, there were 40 wineries in that same region, and the number keeps growing — so much so that the region has been dubbed “D.C.’s Wine Country.”

Loudoun Valley is just one area of North America that has seen a boom in local vineyards, wine tastings and direct-to-consumer resale of products produced on their estates. The Wine Business Monthly database indicated that the total number of wineries in the United States reached 9,091 in 2017, which was a 4.5 percent increase from the previous year. Wines of Canada points out there are now more than 800 licensed wineries in Canada and more are in the planning stages. The most popular areas for producing Canadian wines are southern Ontario by the Great Lakes and the Okanagan Valley of British Columbia.

The regions known for producing American wines are more diverse. While California, Washington and Oregon clock in with the most wineries, Texas, New York, Michigan, Pennsylvania, Virginia, Ohio, and Missouri make up the top 10, according to the American Association of Wine Economists. All 50 states and the District of Columbia now have their own wineries.

With so many star-spangled and maple-leaf loving wine enthusiasts, one never has to travel far to sample a local vintage. What makes many local vineyards so appealing is their backstories. Consumers have long been interested in the origin tales behind products, as taste and appearance alone often do not move niche items. Local wineries appeal to the public because they connect consumers to the wines and the vineyards on an emotional level. Who doesn’t want to see a local vintner succeed in an industry dominated by big names from Europe and elsewhere? In addition, serving and enjoying a wine from one’s own state or province can be a talking point at any gathering, helping to inspire even more local wine fans.

Local vineyards and wineries are branching out across North America, providing perfect places to relax and enjoy locally produced products with meals.

Characteristics OF 4 POPULAR WINE VARIETALS

Small businesses suffered considerable losses when stay-athome measures were implemented to prevent the spread of COVID-19. The food and beverage industry was hit especially hard, with one report from the National Restaurant Association estimating that industrywide losses in sales would be as high as $240 billion by the end of 2020.

While restaurant owners and their employees bore the brunt of those losses, local beverage providers, including craft breweries and wineries, suffered as well. Many consumers resolved to support local businesses as best they could, placing orders for delivery and curbside pickup. Consumers who are unaccustomed to ordering wine to enjoy at home can benefit from a rundown of the characteristics of these four popular varietals, each of which is no doubt available for purchase at a local winery.

1. Cabernet Sauvignon

Widely available and incredibly popular, Cabernet Sauvignons are typically bold wines that are rich in flavor. Cabernet Sauvignons are derived from a full-bodied red grape, which is why they are often described as “full-bodied.” Tannins are a naturally occurring polyphenol found in plants and seeds that are predominantly in red wines, and those in Cabernet Sauvignons are bold. Some Cabernet Sauvignons elicit tastes similar to baking spices, while others may taste more like black cherry or black currant.

2. Pinot Noir

Another popular, widely available varietal, Pinot Noirs boast a low tannin finish that gives them a fruity taste reminiscent of cherry or cranberry. Pinot Noirs are light-bodied and smooth. The alcohol content in Pinot Noirs tends to be lower than that of a typical Cabernet Sauvignon.

3. Riesling

Rieslings are white wines that are popular thanks in large part to their sweetness and floral, citrus taste. Rieslings are a go-to option when pairing wines with certain ethnic cuisine, including Indian, Thai and Vietnamese dishes. Some Rieslings can be dry, so wine enthusiasts looking for Rieslings for their sweetness may want to speak with a representative at the winery to ensure they’re getting the wine they want.

4. Merlot

Another wildly popular red wine, Merlots have an extensive flavor profile. Some Merlots may produce a taste reminiscent of black cherries, while others may provide strong hints of cocoa. Merlots are typically made in a dry style, and they are easily mistaken for Cabernet Sauvignons.

Wine tastings are great ways for novices to get a feel for certain varietals. While in-person tastings may not be possible in areas where stay-at-home measures are still in place, consumers are urged to contact their local wineries to determine if they provide sample bottles to customers looking to get a feel for wine.

TClassic WINE AND FOOD PAIRINGS

he renowned writer Ernest Hemingway is credited with saying, “My only regret in life is that I didn’t drink more wine.” Perhaps if the author had a better understanding of pairing wine with food, he would have enjoyed his wine a bit more often?

Unless you’re spending time with a master sommelier or a seasoned oenophile, you’re unlikely to be given a hard time if your wine and food pairings are not perfect. Although there is no need to always pair a bottle with food like an expert — and it’s certainly alright to break the rules if you’re particularly passionate about a specific type of wine — a general knowledge of classic food-and-wine parings can help anyone expand their knowledge and please their palate. And yes, it goes beyond white is for fish and red is for beef. These pairing pointers, courtesy of the experts at Food & Wine, Tasting Table and Wine Folly, can help anyone find the right combination for their dinner table.

Basic methodologies

As you grow more familiar with wine, you’ll learn why these tried-and-true suggestions often work.

• Red wines pair best with bold flavored meats (red meat).

• White wines pair best with light-intensity meats (fish and chicken).

• The wine should have the same flavor intensity of the food.

• The wine should be sweeter than the food.

• The wine should be more acidic than the food.

• It is better to match the wine with the sauce than with the meat.

• Think about whether you want contrasting or congruent pairings. Red wines often create congruent pairings while white,

sparkling and Rosé will create contrasting pairings.

Congruent versus contrasting Congruent pairings, according to Wine Folly, create balance in the mouth by amplifying shared flavor compounds. For example, earth wines paired with earthy mushrooms. Contrasting pairings create balance through contrasting flavors. Therefore, a salad with acidity and bitterness may be complemented with a wine that is sweeter and not so acidic, or so may be the case with a fatty, salty food like foie gras.

Common pairings to try

• Mushrooms, lentils and even salmon go great with reds like Pinot Noir or Dolcetto. These wines are light-bodied but also full of savory appeal.

• Champagne and oysters work because Champagne has a touch of fruity sweetness. This helps it cut through salty foods like oysters or even chips.

• Cabernet, and Bordeaux are ideal with steaks and lamb dishes. The tannins in cabernet will cut through the protein and fat in these red meats, while the fat balances out the rich tannins.

• You’ll need a wine that pops like Sauvignon Blanc, to go with tangy foods, such as grapefruit or scallops. This white wine also can work with various vinaigrettes or tangy cheeses.

• Chianti is a prized Italian wine made from Sangiovese grapes. High acidity and noticeable tannins will help chianti pair well with high acid foods like those featuring tomato sauces, such as a rich pasta dish.

It may take some time to gain experience pairing wine and foods. However, with a little practice, individuals can perfect their wine pairing skills.

STHE DIFFERENT TYPES OF Experiential Gifts

easoned holiday shoppers know it’s not always so easy to find the perfect gift. When shoppers find it especially difficult to pick the right present, it can help to consider what recipients may want. And recent surveys have found that more and more individuals are interested in experiences rather than physical gifts.

A 2022 survey from the travel booking platform GetYourGuide found that 77 percent of individuals surveyed preferred to receive experiences over more traditional physical gifts during the holiday season. Such gifts are now categorized as experiential gifts, and there’s seemingly no end to the possibilities when holiday shoppers choose to give experiences to their loved ones.

Travel

Experiential gifts related to travel are wildly popular. In fact, 63 percent of respondents to the GetYourGuide survey indicated they would most enjoy surprise travel as a gift, making it the most popular category among participants. Travel-related experiential gifts include everything from airline miles to unique activities at a loved one’s eventual destination, such as a parasailing adventure at an island resort.

Outdoor adventures

Outdoor adventures need not be exclusive to vacations in parts unknown. Holiday shoppers can examine local attractions that will ensure their loved one enjoys an adventurous day

close to home. Such experiences are popular, as 43 percent of respondents to the GetYourGuide survey indicated they would most enjoy outdoor activities like skiing, boating or hiking. An adventure with a local company that offers hot air balloon rides or a guided hiking tour through scenic local mountains are just a couple of ways to gift an outdoor experience loved ones won’t soon forget.

Food

Food-based experiences were the fourth most desirable experiential gift among GetYourGuide survey participants. Such experiences can include food tours, cooking classes, a night out at a local hotspot known for its appetizing menu, or even a meal at home prepared and cooked by a private chef. Beverage-related experiences also merit consideration, as many a food fanatic would undoubtedly love a course on wine tasting or even home brewing lessons from the brewmaster at a local brewery.

Entertainment

Exactly half of the GetYourGuide survey respondents indicated they would enjoy tickets to a concert or show. Shoppers can scour the websites of a loved one’s favorite musicians to see when they’re in town. Live theater fans may appreciate a night out to enjoy dinner and a show at their local theater.

There’s no end to the experiences holiday shoppers can gift to their loved ones. And such gifts have become wildly popular in recent years.

Unique Locations TO HOST A WEDDING

When tying the knot, couples continue to do so in familiar venues. Houses of worship, hotels and country clubs remain wildly popular wedding venues. Couples who want to stray from that norm often look for unique locations to say “I do,” and there’s no shortage of special spots to do just that.

Rooftop venues

Few backdrops inspire the awe of city skylines, especially when couples wait to get hitched until night has fallen and buildings have lit up. Rooftop restaurants and bars have undergone a resurgence in recent years, and these facilities are tailor-made for city-dwelling couples who want an enviable backdrop for their nuptials. Many such establishments are even affiliated with hotels, which can simplify wedding planning.

Museums

Vineyard/winery

Oenophiles will no doubt love the idea of getting hitched at a vineyard or winery, but even people without a taste for wine can appreciate such locales. Sprawling fields and expansive skies make vineyards and wineries an ideal place to tie the knot, and guests will no doubt enjoy the unique surroundings.

A vineyard can provide an idyllic backdrop for a wedding.

Couples who want their guests to take a stroll through history before they watch the happy couple stroll down the aisle can consider tying the knot at a local museum. Many museums offer a variety of ceremony and reception options. The vaulted

Stadiums

Couples who first bonded over their love of a particular sport and/or favorite team can incorporate that into their nuptials by getting married at a stadium. Professional and collegiate teams typically offer wedding and reception packages, and guests may appreciate the once-in-a-lifetime opportunity to hang out on the field where their favorite athletes play.

Historic homes

Another go-to option for history buffs, historic homes and mansions can make for memorable places to get married. Such homes tend to have a classic appeal, making them ideal for couples who want traditional weddings that call to mind the grandiose ceremonies of bygone eras.
