A Note from The Editors With the worst winter weather I can remember behind us, it’s hard to believe that spring is finally here. I’m thrilled to report about the sunny skies and beautiful spring melt off. I’m even more thrilled to report that the 2015 Real Estate Market is definitely looking bright and sunny! 2015 brought a quick start for us at Cayman Marshall International with sales tracking six times over last year (January-April) and I’m expecting only more of the same to continue through to year’s end. A strong American dollar, low interest rates mixed with a splash of pent-up demand has filled in some gaps for the Muskoka real estate market. So that’s the good news! The only bad news is that the balance between supply and demand will likely tighten in Muskoka. I’m betting that supply relative to demand will result in average price gains that will surpass inflation this year. That’s my two cents on the market! As for this spring/summer issue: expect more interesting editorials, some very thoughtful ads and, of course, some of the most beautiful Muskoka properties to peruse. Adventure in Outdoor Grilling

The snow is melting, the temperature is rising and creatures large and small are coming out of hibernation, including The Griller. You know who I mean. Every family has one.
T
he Griller is the expert whose obsession with open flame and outdoor cooking takes over once the warmer weather finally appears. If you or someone you know thinks grilling is the ultimate in haute cuisine, read on. The centrepiece of any grilled meal is the meat. Beef, chicken, pork, fish, seafood – a grill is the perfect complement to that amazing cut or filet. However, to truly make your next meal stand out, consider turning your attention away from the protein and focus on creating truly unique and amazing side dishes. I’d like to spend some time discussing the potatoes you grill beside your steak and the corn you serve with your chicken. There are many vegetables and even fruit that, with an adventurous spirit, will amaze even your most refined dinner guests. The following grilling ideas are not merely recipes, they represent a combination of foods, preparation and cooking methods that can become the jumping off point for your own recipes; the ideas I share with you today become future recipes you will be proud to hand down through generations.

Is there a more natural seeming complement to grilled steak than the classic baked potato?
Easy and tasty straight off the grill and smothered in butter or sour cream with salt and pepper – we rarely think of eating one without our favourite toppings. However, to change things up, let’s try adding the flavour prior to cooking instead of after. Where does this idea originate? Imagine yourself walking down the potato chip aisle at your local grocery store. Sour cream and onion, dill pickle, mesquite, lime – the possibilities are endless. How about a new take on an old classic – salt and vinegar baked potatoes. Marinate your potatoes overnight in cider vinegar. Give it a pinch of salt, wrap it in foil and place on the grill. Cook until tender, open and season with salt and you end up with delicious baked potatoes that taste better than the potato chips that inspired them. We avoided adding all the fat to that “baker,” but created even greater flavour. It’s time to turn that steak on your grill, but be careful – everyone might be talking about those potatoes!
Corn on the cob soaked in butter is truly mouth watering and hard to beat. Continue to challenge yourself. Let’s marinate that corn first. Leave the husk on and immerse overnight in tequila and lime juice. Place directly on your grill and cook until tender. Pull back the husk, add a touch of salt and what a meal! Grilled chicken with tequila and lime corn? Sounds delicious to me. There are so many other vegetables that are great for grilling, like cauliflower and asparagus. Let’s get creative with our flavour combinations. Imagine pairing exotic Thai flavour with a classic Canadian tradition – maple syrup. Slice your cauliflower into layers. Mix Sriracha sauce from Thailand with your favourite Canadian maple syrup. Remember that Sriracha is a very hot chili paste and maple syrup is sweet. Experimenting with the amounts creates a hotter or sweeter experience. Rub the mixture on your cauliflower and allow to marinate. Place on the grill and cook until tender. Imagine your next honey and garlic pork ribs complemented with srirachi and maple cauliflower . Asparagus is Ontario’s first crop of the season. It is delicate, tender and fresh in June and perfectly timed for grilling. While asparagus is amazing simply grilled and sprinkled with lemon juice, let’s think outside the box. Try marinating your next batch in hazelnut liqueur, known as Frangelico. Your next grilled fish will be remembered, but your asparagus will steal the show. Remember to season that steak and then join me for some fruit… Peaches, pineapples, bananas and apples are all fantastic grilled, but try them marinated. Grill your next batch of peaches with schnapps, bananas with banana liqueur, pineapple with coconut rum, and apples with sour apple liqueur. Take individual pieces of fruit (leave the skin on bananas) and skewer the fruit on pre-soaked wooden skewers. Grill until charred and you now have the perfect condiment for fish, pork or chicken or simply serve as dessert with vanilla yogurt for dipping. Don’t forget the classics – lemon and lime. Cut them in half and grill them; the juices drizzle out and you are no longer adding the delicious citrus flavour cold over your hot meal. Time to flip that steak one last time. So much time and effort goes into grilling the perfect meat. Surround your culinary masterpiece with vegetables and sides that are worthy of your skill and artistry. As The Griller, it is your duty and responsibility to push your boundaries. Keep grilling and sharing your ideas and experiences. Create new family memories and recipes.

It was perfect timing. The completion of the railway line to Gravenhurst in 1875 meant more vacationers from southern Ontario and the United States had access to the region. Plus, the new locks at Port Carling and canal at Port Sandfield allowed steamships to carry passengers between Lakes Muskoka, Rosseau and Joseph. Thomas began to make improvements to his home to accommodate more guests, with an eye to future expansion. He also built a wharf on the waterfront and convinced the Muskoka Navigation Company to make Windermere House a regular port of call by promising wood for the steamships’ boilers. Journalists raved about their visits to Windermere House in newspaper reviews, calling the resort “quiet and respectable” and praising its “good taste in furnishing and exquisite neatness.” A doctor from Pittsburgh was so impressed by his own stay and the perceived health benefits of Muskoka’s fresh air that he began to prescribe Windermere House vacations to his patients. In 1883, demand had increased to the point that Thomas constructed a large addition, including Windermere House’s first tower. By the 1890s, there was enough space for 220 guests, and the cost to stay at the hotel had risen from $7 to $10.50 per week. Genteel visitors passed the time playing tennis, croquet or lawn bowling if they weren’t swimming in or boating on the beautiful waters of Lake Rosseau. To maintain the peaceful atmosphere expected by guests, “drinking parties, carousing and objectionable noise” were strictly forbidden. Windermere House’s second tower was added in 1902-1903. At the same time, the resort switched from kerosene lamps to acetylene lighting, which was used until the village was hooked up with electricity in the 1930s.
Thomas also built a water tower to provide a consistent source of water for plumbing and washing after years of relying on manpower, windmills and gas-powered pumps.
Windermere House is one of those rare Muskoka gems: a place where you feel immersed in the energy of the past while being pampered in 21st-Century style. Another move that secured Windermere’s popularity among visitors was the 1919 sale of part of Thomas’ original land grant to a group of avid golfers, including Timothy Eaton. The resulting Windermere Golf and Country Club, which began with a 9-hole course and soon expanded to 18 holes, remains a favourite destination for golf enthusiasts. When Thomas died in 1919, his son and daughter took over the management of Windermere House. Under their direction, the resort roared through the 20s and managed to continue operations during the Depression even though the tourism industry across Muskoka suffered. When the war was over, the Aitkens did some extensive renovations to update Windermere House, creating larger rooms with private bathrooms. The next proprietor

magic of Windermere House: it is utterly changed, and yet unchanged. of Windermere House was Thomas’ granddaughter, Mary Elizabeth Aitken, who took over in 1952 at the age of 31. She made some important changes that ensured Windermere House stayed popular despite changing trends and tourist tastes. One of her biggest contributions was to revolutionize the resort’s food and beverage program so that it gained a reputation for fine dining. Mary Elizabeth hired chefs from University of Toronto’s Hart House, who were not needed by the university in the summer. She also arranged for a liquor licence for the first time, enraging many members of the still-dry village of Windermere. Soon, up to 400 people were being served dinner on Friday and Saturday nights. Mary Elizabeth also built some self-contained all-season units to expand the capacity of the resort. When Mary Elizabeth died in 1987, a dynasty of more than 100 years ended. The next decade was the most tenuous in Windermere’s history as a number of owners came and went and the property fell into some disrepair. Finally, in what seemed like a death knell for the resort, the owners announced that Windermere House would be closed for the 1995 season. A group of 17 investors stepped in to ensure the resort would go on, and even flourish. They all had personal connections to Windermere House: some had worked there, some had been longtime guests, and at least one had been married there. The group spent $400,000 to get the property ready and were awarded a Built Heritage Award from the Muskoka Heritage Foundation for preserving this regional treasure. The 1995 season went well, and the new owners were optimistic that Windermere’s fortunes were on the rise. When Hollywood location managers came to them in the fall asking to use the resort as the setting for a film starring Geena Davis and Samuel L. Jackson, it sounded like a terrific opportunity. They could gain exposure for the resort while also bringing in some much-needed cash during the offseason. Unfortunately, in February 1996, soon after filming

began, the entire hotel burned to the ground, leaving only the stone pillars on the veranda. The new owners were devastated, and many Muskokans and visitors were afraid the era of Windermere House was over. Instead, the Lady of the Lakes rose from the ashes. She was rebuilt to the original design and open for business again in 1997. The work is so skillfully done that many people forget the building is not the original. Windermere House just keeps getting better, combining its familiar quaint charm and hominess with world-class food, service and amenities. It is now possible to purchase condos there as well.

The reviewer returned in 2014 with her husband and was not disappointed. “Still the same: the beautiful lake, the gardens and especially the hollyhocks, the comfortable room, the friendly service and the magnificent views,” she wrote. The biggest difference she noticed? Sushi served on the porch. That is the magic of Windermere House: it is utterly changed, and yet unchanged. Those who sail by on a steamship can still see that iconic profile from the water. Yet, if they decide to stop in for a meal or a longer stay, they receive the very best 21st-century service. The Lady of the Lake stands proudly, ready to usher in the next 100 years.

“It was a gorgeous evening.” For some guests, one of the highlights came early in the evening: Porsche Centre Oakville brought a fleet of cars to Windermere, one of which was their “Cayman”, giving guests a chance to go for a test drive. “The winding roads around Windermere are perfect for driving a great car,” said Laura. “Porsche was a natural partner for this event.” After the test drives wrapped up, the cars were put to good use as shuttle vehicles conveying guests between Windermere House and the red carpet at the nearby cottages. “It was a gorgeous evening, and many of our guests chose to walk the short distance, but we wanted to give a luxurious option for those who preferred to ride,” says Todd. “It was also a matter of planning ahead in case of rain: anticipating problems is just part of what we do in our regular job, so naturally we do the same when we’re planning a party.” A wine tasting hosted by Trialto Wines was the next order of business. “Trialto is a team of passionate winelovers who represent small- to medium sized wineries from around the world,” says Megan. “They work hard, play hard, and love what they do. They’re a perfect fit for us.” Glass of wine in hand, guests were invited to walk the red carpet for a photo shoot, tour the cottages at Windermere or enjoy drinks on the historic front porch of Windermere House. The talented chefs from Oliver and Bonacini supplied an endless stream of dining delights, with hot and cold hors d’oeuvres circulating through the crowd. Speeches and words of welcome soon gave way to music, as The Lost Fingers took to the stage. This Juno nominated gypsy-jazz-funk combo from Montreal has delighted audiences around the world – they’ve played in 22 countries and have sold over 400,000 albums. Joined by a team of dancers in their second set, they involved and interacted with the guests providing a thrilling way to end an incredible party.

TODD ADAIR* President/Sales Representative Todd made a name for himself in the tech industry back in 2002 at the ripe old age of 26. That is when he sold his first start-up tech company. His next adventure started in 2004 when he authored, architected and delivered a unique marketing software business for Realtors. Although Todd still owns that business as it continues to grow and serve real estate professionals in 26 countries, Todd took a hiatus from software to get practical experience in the industry. DAVE BEMMANN** Broker Growing up with a family cottage on the lake, David developed a strong passion for the Muskoka area. Inspired by his older siblings, he spent much of his youth out on the water strapped to a wakeboard. His dedication to the sport soon paid off with sponsorships, national level events, and he eventually took home a first place finish at Wakestock. David progressed into an elite level wakeboard coach and judge for World Tour events. After graduating from the University of Guelph in 2006 with a Bachelor of Commerce degree, David’s focus then turned to his professional career as a commercial real estate broker in the GTA with Colliers. David spent eight years servicing clients in the Toronto area with expertise in industrial facilities. In the summer of 2014, David felt drawn back to his Muskoka roots, and finally made the decision to make it his permanent home. ALEXANDRA OCKERSE Office Administration Growing up in Oakville, Alexandra’s passion for Real Estate started at a very young age. With the luxury of cottaging in Muskoka her whole life, she decided there was no other place she would rather be full time. After University, living out on the west coast of Canada and travelling abroad for months at a time, she moved back to Oakville where she spent 3 years working for a Property Management Company. She then moved to Muskoka permanently, to fulfill her passion in real estate, in the place she loves most. GREG KING* Sales Representative Greg King was born in Bracebridge and has had the good fortune of growing up on the lakes of Muskoka. In 1988, he set in motion his desire and passion for building construction, starting his first business as a residential contractor. KRISTIN McCREA Office Administration Kristin was born and raised in Trenton and after marrying her husband and welcoming two sons, they decided to make the move to Huntsville in 2008. Kristin joins us with more than 15 years of enthusiastic client service experience with some of Canada’s most successful companies including Wal-mart Canada, Goodlife Fitness and Toys R Us. She has a keen eye for organization and enjoys the challenge of taking a space and making it perfectly functional! Kristin is also a Fitness Instructor and is FIS Certified with canfitpro. She is extremely passionate about nutrition and fitness! When she’s not busy discovering a new love for cooking you can find her boating with her family or volunteering at her boys’ school with their weekly Breakfast Club program.
