There’s no doubt that the last few months have been a challenge for all of us. But the special feeling that comes with summer in Muskoka is with us again, and we’re ready to get out and enjoy ourselves.

BROUGHT OUT ONE GIRL’S TRU(E) FACE Emilee Schevers really sees herself no differently than any other smart 18-year-old. Sporting a pair of chic sunglasses, kibbitzing with sister Hannah on video for Tru Faces, the social media channel the pair launched for kids with disabilities, it’s clear that sight loss isn’t going to hold her back from doing whatever she sets her mind to. And at least part of that selfconfidence comes from her experience at CNIB Lake Joe.

A
native of Kawartha Lakes, Emilee first came to the camp two years ago as a camper. “I had been going to weekend programs at the W. Ross MacDonald School for the Blind, but this was my first overnight camp experience,” she explains. Away from her family for the first time, she discovered a whole community of kids – and grownups – who were like her, and her confidence blossomed. “Just going there made me feel I could do it. It gave me a real feeling of independence.” CNIB Lake Joe gave her the chance to try things she’d never thought of trying before: sailing, sports, games like slip’n’slide – “they came up with all kinds of crazy games,” she laughs. But the highlight of that first summer came when she competed in, and finished, her first triathlon. “I was in a longer race than some of the others, so when I came down the last part of the course, I was running alone,” she says. “Then some of my friends came out onto the track and started running 14 SUMMER 2020 ■
alongside me, to help me finish the last section. It was a great moment!” She could hardly wait to come back. Last summer, she signed on as an LIT (Leader In Training) and as a participant in SCORE, which helps youth with sight loss learn and develop the skills to pursue post-secondary education. As part of the Arts & Crafts team, she discovered a special talent, and love, for working with young children. “One time, a Deafblind child came in,” she recalls. “I don’t have a lot of knowledge of ASL, but we were able to communicate through tapping and other means, and worked together to make a paper fan. It was a wonderful experience.” Emilee had already been hired to return as a counsellor and Arts & Crafts coordinator at CNIB Lake Joe this spring when the coronavirus put an end to the onsite camp program for 2020. “The lockdown is especially unfortunate, because campers get to do so many things they wouldn’t otherwise have the chance to do, including
seeing friends and making new ones,” she says, knowing that the human connection is one of the most precious things the camp offers its young attendees. But all is not lost: Emilee and the other counsellors will be taking part in CNIB Lake Joe @ Home, an online program that lets campers enjoy camp activities and interact with friends from the comfort and safety of home. It may not be quite the same as real camp, she admits, but it helps them experience at least some of the fun and growth that CNIB Lake Joe offers, from arts and crafts, to music, to fun family events like trivia and virtual campfires. What’s next for Emilee? She’s entering the early childhood education program at Mohawk College this fall. She’ll also continue to host Tru Faces, which she launched last year with 15-year-old Hannah, who also lives with sight loss. “Tru Faces began when we were going to weekend classes at the School for the Blind. In our area there weren’t that many

So we wanted to do something that would help kids with disabilities connect.” Tru Faces began as an Instagram page in 2018 and expanded onto Facebook and YouTube, quickly growing to became a whole community. The channel features profiles of young people with disabilities, games, craft how-tos, Zoom meetups, educational videos, and whatever other fun the two sisters can dream up. Its Instagram reach has grown to 550 followers, with another 150 on Facebook and 170 on YouTube. “But what’s more important is we now have people from all over the place: Canada, the U.S., Australia… it’s become a world-wide connection.” Whatever Emilee’s future holds, camp will figure into it for some time to come. “I’m hoping to definitely be part of the team at CNIB Lake Joe at least for the next few years. And even after that, I’ll be coming back for adult camp!”
CNIB Muskoka VIRTUAL Dock to Dock – Party with a Purpose will take place on Saturday, August 15, 2020 between 3-6 p.m. This is the fourth annual summer event in support of CNIB Lake Joe, organized by a dedicated committee of local volunteers. Chef Unboxed is a new take on a fresh meal delivery service, offering curated, chef-crafted dishes that feature high quality, locally sourced ingredients, delivered to doorsteps across Muskoka and
the GTA. Founder Chef René, one of Muskoka’s top private chefs and caterers, has been building the business for some time but was spurred by the global pandemic to get it off the ground and offer something new: a convenient, contactless way of accessing worry-free, high quality meals on a regular basis.

he concept combines the advantages of a high-end private chef who caters to your lifestyle and tastes, with the convenience and flexibility of a meal delivery service. Each basket from Chef Unboxed will stock the cottage or home with four days of chef-prepared meals that are ready to heat and serve, along with top-quality products like locally sourced, grass-fed meat. The idea is to make meal planning effortless and deliver foods of the highest quality. “Many of my clients are very good cooks themselves and they deeply enjoy food,” says Chef René. “But they don’t necessarily like the stress of menu planning and shopping, especially when they’re at the cottage. So having something delivered that is top quality, chef-made and ready to serve gives them more time to spend with the family, while still enjoying healthy, homemade meals.”
“I’ve never believed in rigid preset menus,” says Chef René. “As a private chef and caterer, what I’ve always done is develop ideas that are fun, fresh, based on an understanding of different cultures and designed specifically to my clients’ lifestyles.” René’s goal is to allow the tastes and experiences of the Chef Unboxed membership to inspire the meals he creates and delivers, just as a private chef would be guided by his clients. Spiced Rhubarb Compote This simple and versatile recipe is a great new take on a treasured springtime ingredient, perfectly timed as leafy rhubarb plants are ready to harvest in backyards across Muskoka. Many flavours come together in this compote–the fresh tartness of rhubarb, natural sweetness from local honey and an unexpected hit of cinnamon.
INGREDIENTS Rhubarb and strawberries: Both are easy to come by this time of year. Whether they’re from your own garden or a farmer’s market, the best bet is always to get them fresh, but you can also enjoy this recipe in every season by using frozen rhubarb and strawberries. Honey: One of my favourite items to buy locally is honey. There are so many nuances to honey; some are sweeter, some are even a bit sour, depending on the flowers the bees have access to. In Muskoka, we have many quality producers who you can find at farmer’s markets or shops. Ask them about their different products and, if you can, try a few different varieties. For this recipe, you’ll want to limit excess flavours, so consider opting for a wildflower honey over a dark buckwheat. Cinnamon: Cinnamon adds a fragrant twist to this compote, but you don’t want it to be overpowering. Use cinnamon sticks instead of powder to bring a more delicate, subtle flavour, which combines magically with the rhubarb and honey. The cinnamon element allows this compote to pair beautifully with a variety of flavours and dishes, both savoury and sweet.
RECIPE Wine Pairing: Les Oliviers Grenache Cinsault Rosé
Chop 3 cups of rhubarb into small pieces and add to a pot with ½ cup of water and 2 tablespoons of honey. Simmer and reduce on medium heat for 35 minutes until the rhubarb has broken down. Add a generous 3 inches of cinnamon stick and 1 cup of chopped strawberries. Cook for no more than 10 minutes, after which much of the liquid will have boiled off. Cover and let rest for half an hour.
MEAL IDEAS Try this spiced rhubarb compote on seared Georgian Bay pickerel, any poultry dish like wild quail or chicken or on top of fresh gelato. It even works as a base for a smoothie or frozen daiquiri.

CM: The new Taycan may be Porsche’s first modern all-electric car, but electricity as a form of motive power is nothing new for the company. MO: Yes, actually, the first electric car was designed and produced by Porsche – not the son, Ferdinand, who created the stock car, but his father. It was presented at the Paris World’s Fair in 1901. At that time, the two other energies that were existing were combustion engines that were really not very clean, with a lot of smoke and soot. And there were even some cars with steam and it was even worse! You had to preheat the water for one hour so you could drive it. So at that time, the first electric attempt was really interesting. It really shows that we’ve got this long tradition of engineering, it’s part of the Porsche DNA.
Porsche’s slick new Taycan sports sedan buries forever the notion of the plug-in electric vehicle as noble but somewhat pedestrian, the Birkenstock sandal of automobiles. (Granted, vegan leather interior is an option.) Along with the Cayenne, Panamera and soon-to-beintroduced Macan hybrids, the Taycan is the latest entry in the automaker’s ambitious goal of having 50% of its vehicles on the road worldwide electrified by 2025, and of reducing its global impact on the environment to zero by 2030. With the Taycan, the granddaddy of luxury sports cars comes full circle, from a dream of clean power first invented by the father of the Porsche some 120 years ago. We recently chatted with Porsche Canada CEO Mark Ouayoun about the Taycan, and how it fits with his company’s vision for the future.

CM: It seems that you took your time to launch the first all-electric Porsche, while some other automakers have had electrics out on the market for a few years. MO: With the Taycan, we first presented the concept car in 2015. So, it looks like an eternity when you talk about electrification, but we [wanted to be] sure that we would be able to create not only an electric car, but an electric Porsche. That means an electric car that drives like a Porsche, that feels
like a Porsche, that looks like a Porsche, and what we can see now is the final product. So a fantastic balance between sportive, dynamic and comfortable ride, very strong design, very modern, but also, with some references to the past and to the Porsche DNA. CM: Some of our readers might say, I really like the idea of an electric car, but will it take me all the way from Toronto to Muskoka? Does it have the power that I want? Because a lot of the first electric vehicles did have certain
limitations and people were skeptical. MO: First, the range of the Taycan is really good. It can certainly drive you to Muskoka. But what’s more important is, we worked a lot on the charging architecture. We are currently establishing a high-speed charging network, working with the brands Volkswagen and Audi. By the end of the year, we will have 32 charging stations across Canada. Every charging station will have minimum three pedestals adapted to the highvoltage charging of a Taycan. The Taycan is able to charge 5 – 80% in 22.5 minutes; you can gain a few hundred kilometres of range, in the time you take for a coffee break. And don’t forget 80% of charging is at home, so we have a program where a qualified technician will come and help you to install a charging station in your home.

CM: I’m also very interested in the Porsche Impact program; how does it work for Canadian Porsche drivers? MO: Porsche owners can offset the annual emissions of their vehicles by visiting our Porsche. ca website. You put in your mileage and then you select a project of your choice that you want to contribute to. We have several projects to choose from: some of them are in Africa, there is one in China, there is one forest protection program in Alaska. And we are very proud to have also a forest protection program in Canada, in British Columbia. This is a project that protects over 100,000 hectares of conservation and endangered wildlife.
But it’s just the tip of the iceberg. From the initial design of the vehicle to the production to the recycling, we are really thinking at every step of not only the vehicle, but the production process and the supply chain. Everything we can reduce in terms of emissions, not only CO2, but all the materials that you need through the production process – we get rid of everything we can get rid of. And if we cannot get rid of it, we reduce, and if we cannot reduce, we offset.

Though SML Contracting’s design for this Canning Lake cottage is perfectly suited for the 21st-century comforts of cottage life, in fact it stands squarely in the footprint – literally – of the history of its site.
The Lucas family has owned the property since the early 1990s, and returned every summer to the wonderful old log house that had stood here since 1898. “ We think it was one of the first structures to be built on the lake, and it’s a wonderful spot,” recalls Mark Lucas. “It was originally a hunting and fishing lodge, with the main lodge as the dining and socializing area, and small sleeping cabins all around for the guests.” The small cabins were long gone by the time Mark and his then-young family came along. Over the decades, the old cottage had been added on to according to need rather than any formal plan, to the point that it was getting impractical to maintain. But it was full of memories, and parents and kids alike had longstanding friendships with other cottagers all around, so selling and moving on was never an option. “My dad loves to fish, and he claims the fishing here is better than Muskoka,” laughs Mark’s son Trevor. “He once caught a 30 lb. muskie off the dock, so he’s probably right!”

The old cottage also left behind a gift: built long before zoning bylaws and building codes, it was set just a few feet above the lake on a point, so water laps around three sides. You’d never be allowed to build so close today, but grandfathering rules meant that as long as they followed the old footprint precisely, they could build on the same spot. Since the old house was quite broad, that gave them plenty of room to work with, and a truly great view. Mark, a fashion industry executive, has a natural eye for detail and texture, and had clear ideas about finishes as well as features. Inside and out, the beauty of local granite and limestone, natural or dark-stained wood (especially in the exposed timber frame structure), and muted colours make the cottage blend well with sky, water, and the surrounding woods.
Once the kids, now in their thirties, grew up and Mark and his wife Debbie had a bit more time to enjoy the cottage, they began to think of tackling a renovation. Unfortunately, the first time SML Contracting principal Bruce Fitter visited, he had bad news – it turned out the house had never had a proper foundation, and was close to unsalvageable. So along with project manager Jay Brubacher, they set about creating a brand-new cottage with the same charm, but thoroughly modern comforts. One aspect of the old place had caught everyone’s imagination: the original hemlock logs, likely harvested right off the property, that had comprised its walls. They wanted to incorporate them into the new design somehow. It made for a very painstaking teardown, Jay recalls: carefully removing plaster and drywall from both the outer and inner sides, numbering each piece (since they had been cut and milled using hand tools in the traditional manner, they would only fit together again in exactly the same order), and cleaning them. As with all old structures, there were interesting discoveries along the way, such as wads of horsehair between the logs, the Victorian version of frontier insulation.
At the side of the house as you approach, one of the first things you notice is a dramatic pergola that curves invitingly around towards the lakeside. This expansive area, set above a patio of flagstone, is perfect for passing long, leisurely days outside, with room for al fresco dining, a place for Mark to play his collection of guitars, and when the sun sets, to warm your toes by a big stone woodburning fireplace.
Most charmingly, they line a little reading perch carved out from the main room, piled with pillows and blessed with its own private leafy view. “Actually, that little nook was a way of using up some of the shorter logs we had left over,” Jay laughs. “But it made for a very nice way to use them up.”
One of the biggest items on the family’s wish list – along with a positively decadent spa area on the lower level – was a large, well-equipped kitchen. Debbie is a dedicated cook, and the whole family loves to entertain. The kitchen forms the heart of the house, part of a sprawling open swath that extends through the dining room (with its custom-built live-edge table, joined in the centre by a ribbon of translucent resin), to another seating area and stone fireplace at the far end – all told, nearly 1,000 sq.ft. of conjoined space. The eye for detail shared by the SML crew and Mark is noticeable in the artistic way that the limestone facing stone was laid above the stove and the fireplace surround at the opposite end. “I wanted it laid in a very precise way, to bring out the colour and grain of the stone, which is beautiful,” observes Mark. “I told the stonemasons exactly what I was looking for, and they did a really excellent job.” (Mark credits interior designer Tary Roosien of Urban Rustic Living as adding the design and finishing touches that helped to give it a real sense of the family’s personality.) The old logs appear in the living room beyond, where they line walls and form part of the staircase that leads to bedrooms above and the spa and games area below.

Ceilings throughout the house were given careful consideration. Vaulted beams in the kitchen-dining area give way to a more intimate coffer-style beamed ceiling in the living area. By contrast, the upstairs hallway features a barrel-vaulted ceiling, lending an almost nautical feeling. And the highest ceiling in the whole house, at fourteen feet, is the principal bedroom. Unlike the rest of the house, the beams in this room are painted pure white, and the room is full of light, thanks to high clerestory windows and a wide walkout to a balcony that overlooks the lake and the full glory of the view. “What I love most about the cottage,” says Mark, “is there’s something interesting to look at from every angle, inside and out. It’s not just one particular feature – although there are a lot of great features and places to just be in the house. But no matter where you sit, there is always something beautiful that catches your eye.”

Back in 1987, Hubert and Terry Lawrence had a dream: to buy some property in the countryside and open a small business, where they could use their creative skills – Hubert was a hobby carpenter, Terry a visual artist – to support their young family. When they came across a beautiful piece of farmland in the Almaguin Highlands near Burk’s Falls, Ontario, that included two old buildings – a workshop and a wonderful centuryold barn – they knew they had found it. They set up shop in the barn and began making handcrafted solid wood furniture and home decor pieces, and selling to locals and tourists. The quality and beauty

of their work quickly earned them a reputation, and the business began to take off. Some three decades later, what started as a small family business has grown into a thriving enterprise, with three showrooms around Ontario and the Lawrences’ now-grown kids in management positions. (Actually, with Hubert and Terry’s young grandkids occasionally helping to pack boxes and generally pitch in, you can reasonably say it’s entering its third generation.) But the principles that the senior Lawrences built their business on – high-quality handcrafted furnishings, highly personal service, and of course a real respect for the beauty of wood and
skilled craftsmanship – will always be central to the work they do. Today, according to Robin Lawrence Wood, Hubert and Terry’s daughter and co-general manager with husband James, The Cutter’s Edge specializes in complete home outfitting, from rugs and artwork, to furniture for every room, to custom cabinetry. “Our solid-wood furniture was historically built by my father and his team in our workshop in Burk’s Falls,” Robin explains. “As we continued to see exponential growth over the years, we expanded to bring in other local craftsmen that build offsite exclusively for us.

“Each piece is carefully handcrafted to our clients’ unique needs,” she continues. “This practice allows us to make true heirloom pieces that can remain in the family for many generations. We also offer a complete line of leather and upholstered seating, from a local manufacturer that we hand-picked for exceptional craftsmanship and quality of materials. When our clients shop our showrooms, it is important to us that the same quality and care is woven through every offering.” A few years ago, The Cutter’s Edge expanded beyond its core product offerings to include complete design services. “There’s nothing we love more than a client coming to us with floor plans, hopes and dreams!” says Robin enthusiastically. “We love to collaborate with our home and cottage owners to fill their space with beautiful, functional and timeless furniture and decor.” When eldest son Adam joined the company starting in his teens,
he came to spearhead what has become another major division: custom kitchens. The company offers styles from rustic to ultra modern, tailored exactly to each client’s interior and preferences. The advantage to working with a company that includes a complete millwork shop, notes Robin, is that their clients have the option of ordering the same millwork style installed throughout the home, for a truly bespoke look. But one of the most exciting developments of the past few years actually wasn’t even on the radar at the beginning of this year. “We decided last year, after opening our most recent showroom in Muskoka, that 2020 would be a year of internal growth and really solidifying our foundation,” she says. “Then came the Covid pandemic. We are extremely invested in our team, and were willing to do whatever it took to keep them employed for as long as we could manage.” That’s when the idea of an e-commerce site dawned. “We had always had e-commerce on our radar, but it is an extremely daunting undertaking to do well, and really ‘takes a village,’” she says. “To open an online shop, especially for custom furniture, isn’t a simple endeavour, and it took our entire team’s combined strengths and capabilities to really make it come to life.

“Now the e-commerce site also serves as our online catalogue, which is a fabulous tool for customers who contact us via e-mail or phone. Our e-com site is ever-evolving, but we are thrilled to have the foundation laid to continue to enhance [the business].” With the e-commerce site well underway, and Ontario finally beginning to open up again as the lockdown gradually eases, the company looks poised for its busiest summer yet. While there are no plans to open more showrooms just yet, there’s plenty of work to continue refining the highly customized work on which The Cutter’s Edge has built its reputation. “Our design team is overflowing with creativity and always looking to release inspiring new designs that resonate with our discerning clientele,” Robin says. “Attention to detail and making each space unique to each homeowner’s needs and style is very important to us.”

MUSKOKA HISTORY The first thing that greets you when your boat lands at the dock at Sly Fox Golf Club, at the southern entrance to the narrows separating the two bodies of Wahwashkesh Lake, is a plaque mounted on MacRae Rock, a sizable chunk of glacier-polished granite located on the shoreline. The plaque tells the story of two boys who lived, played and worked there more than 80 years ago. Their young lives ended tragically in August 1944, at the height of the fighting during World War II, when the two brothers died in action just one day apart.

The younger brother, George Dougald MacRae, had joined the Royal Canadian Air Force, graduating as a pilot with the rank of flying officer. His older brother, Jamie Duncan MacRae, was a lance corporal in the Hamilton-based Argyle and Sutherland Highlanders infantry regiment. The Argyles landed in Normandy just in time to join an
Allied pincer movement, the “Falaise Gap” operation, mounted in mid-August 1944, which was designed to entrap a retreating German army. But in the heat of battle, Jamie MacRae was killed by enemy artillery fire – less than 24 hours after his brother went down in flames over Warsaw, a thousand miles away. Their home, the main lodge of the sportsmen’s resort, has stayed remarkably unchanged since the late 1930s and early 1940s, when as teenagers the two MacRae brothers guided the resort’s clientele to the best hunting in the nearby woods, and fishing in Wahwashkesh Lake, the largest freshwater lake in the Parry Sound district. While the resort still caters to hunting and fishing, the current owner, Herb Schmidt, has built a unique nine-hole executive golf course called the Sly Fox Golf Club. Sly Fox is the third golf course Schmidt has designed and built, and took more than six years to complete. It features two
miles of underground irrigation, capable of pumping 100 gallons per minute to service the sprinkler systems. The property, first developed in 1903, now consists of the 4,000-sq.ft. main lodge with a large wraparound porch, nine individual cottages, eight finger docks, and roughly 2,400 feet of water frontage, encompassing nearly 40 acres on a peninsula, surrounded by Crown land and water. As the plaque says, “This memorial is located at the site of the MacRae Family Hunting and Fishing Lodge, known as ‘The Linger Long Lodge.’” The brothers made the ultimate sacrifice for peace and freedom. And today, we honour their memory. The plaque concludes: “This memorial is placed here by those for whom this lake is a very special place and who enjoy Lake Wahwashkesh Lake ‘in peace and freedom.’”

Last March, when the stock market took a tumble and we first began to realize just how bad this pandemic might get, I assumed we would be looking at a soft summer in the Muskoka real estate market. Boy, was I wrong. In twenty years in the real estate business, I’ve never seen anything like it. Upon reflection, the unprecedented demand here in cottage country actually makes a lot of sense, even (or especially) in the age of coronavirus. I chalk it up to three main factors.
TRAVEL FEARS. With the U.S. border still closed, and likely to remain that way at least through the summer, people are not taking U.S. vacations. But it goes beyond that. They aren’t going to Europe either, or in fact anywhere outside of Canada. Fears about travelling in an airplane or the coronavirus risk in destination countries has driven many of us to opt for a vacation this year in Canada.
NEW WAYS OF LIVING AND WORKING.
THOSE WHO MAY HAVE DREAMED FOR YEARS ABOUT BUYING A COTTAGE ARE NOW PUTTING THAT DREAM INTO PRACTICE.
During the crisis, many people began working from home for the first time – everyone from entrylevel workers to CEOs. And as many as 80% of us are continuing to work at home, even though in some areas restrictions on in-office work are easing. The result is that a sizeable percentage are discovering there are certain advantages to working remotely, and making it a permanent arrangement, whether full or part-time. If you’re spending your days as well as nights at home, why not make it in a beautiful environment like Muskoka?
THE GUT CHECK. For many of us, the pandemic has been a wake-up call for just how short life really is. If we only have a few decades on this earth, spending it in quality ways – with family, appreciating the simple joys like good food, good friends, beautiful surroundings – are what really matters. Those who may have dreamed for years about buying a cottage are now putting that dream into practice.

The surge in demand comes at the same time that the other side of the equation, sellers, are going through a similar form of self-reflection. Some have begun reconsidering their decision to sell, leading to a supply shortage. The net effect of this thinking means that cottages are selling at lightning speed, often within days. (And the demand isn’t limited to any one sector of the market, such as under$1M condos or super-luxury properties. It’s happening in every price range.) What I find surprising is that Muskoka property, unlike Toronto or other urban markets, is not generally considered principal housing. A cottage is a discretionary purchase, a lovely thing to own but not exactly a necessity. But that hasn’t tempered the demand by any means. Moreover, there’s every reason to believe the demand is not going to ease up come September.

In fact, it shows every sign of staying the same, or maybe even increasing. In some areas, schools are unlikely to reopen as usual in the fall, and remote working is still the norm. Some are seeing that as reason enough to buy a more long-term property – perhaps a winterized or yearround cottage. The same is true of renters and hotel guests, even those who have been coming back to the same summer places for years. The bottom line is something I’ve seen year after year, not just in Muskoka real estate but in the stock market, and many other discretionary purchases: you just can’t time the market. If your heart cries out for a cottage in Muskoka, the time is now. Not because you’ll get a better price now than later – although there are still lots of good values out there – but because Muskoka’s fresh air, beautiful land and water, and relaxed lifestyle are the best medicine there is.
