Osman Gurer is infatuated with wine, but not in an oenophile sense. He has an obsessive devotion to the preservation of wine.

From yachts, restaurants and houses, he creates custom wine cellars and wine cabinets through his company Focus Wine Cellars (FWC). Today, FWC counts the luxury fashion house Louis Vuitton as a client: Gurer’s purpose-built refrigerated cabinets are used to store the label’s perfumes, since fancy fragrances, like wine, need to be kept in a controlled environment. “With each project, I’m trying to amaze people,” says the Turkish-born Gurer, who left a career as an engineer to design bespoke wine cellars. His Oakville, Ont.,-based business is a great distance from Istanbul, where it all began in 1993. Back then, he and his wife, Aylin, ran an interior design firm. The duo was asked to create a wine cellar in a home they were building. Then came another request. And another. Ever the engineer, Osman grew fascinated by the exacting nature of wine cellars, eventually abandoning house design to become the only maker of wine cellars in Turkey. However, he says, “From the very beginning the target was not just to be the only wine cellar designer in Turkey, but rather to be the best in the world.” 18 SUMMER 2018 ■

Printemps, the Parisian department store, only trusts its finest wines to FWC . And there’s a long list of hotel clients, too: among them, the Mandarin Oriental, Hilton and the Waldorf Astoria. For the latter, FWC installed a cellar in its Ithaafushi Hotel, the exclusive, yet-to-be-opened villas in the Maldives. Private wine collectors in China, Dubai, UK and India also rely on FWC cellars to cradle their finest bottles. One such dramatic estate in Hong Kong is featured as the cover of Paolo Basso’s 2015 book Sommeliers’ Heaven: The Greatest Wine Cellars of the World.


With each project, I’m trying to amaze people.

Another cellar sits inside a dwelling atop a hill in Uzbekistan. “Osman travels 250,000 km each year to oversee everything,” says Aylin of her perfectionist husband, joking she’s “his shadow supporter.” (She’s actually head of business development.) Osman’s stickler nature is a good fit in the wine world. Stowing bottles in the wrong conditions can spoil a precious collection – a devastating outcome for connoisseurs who wait years, decades even, to sample certain vintages. “The temperature must be very stable,” says Osman, noting his cellars never fluctuate more than 0.3 degrees centigrade. “Other key conditions include a high but not extreme level of humidity, protection from vibration and unwanted odours and the harmful effects of light.”

Wine-nerd details aside, it’s the look of these cabinets that truly amazes. Forget any basic, under-counter wine fridge you’ve seen in the past. Imagine a brass cabinet in the kitchen to match gold hardware. Or a genuine leather-finished fridge. Or another fronted with zebrawood, like the one recently installed in a beautiful home in Lake Simcoe’s Friday Harbour Resort, with brass finishes and an infinity-effect feature. “Walnut and brass are most popular this year,” says Aylin. “At the Interior Design Show in Toronto, we had samples of finishes and everybody gravitated to those.” If you can afford a hot fridge like this, get it out of the kitchen. sees a cabinet elegantly tucked between bookcases in a living room. Bespoke also means no boring handles – the door pulls, too, can be customized. Go with oak and leather for a dapper detail, or flashy with an illuminated neon handle. “As far as we know, there is no company in the world that offers this level of bespoke cabinets,” says Aylin. “Customers can change the size or material to their liking. It’s truly up to them.” (Pricing wildly varies, depending on the size, material and complexity of the job.) This means mansion-living isn’t a prerequisite for a solid cellar. “It can be in the basement, the living room or kitchen,” says Osman. “No matter what your square footage, collection size or location of the cellar, we’ll develop a unique design for it.” Osman is up for the challenge. He recalls a complex project in Istanbul. The wine-loving businessman was intent on a walk-in cellar, but there was no room for it in the existing home. “So to create the space for the wine cellar, we got into this enormous endeavour of digging under the swimming pool, which was sitting on a high rampart next to the mansion,” says Osman , noting professional miners were hired for the job.

Whether you go over-the-top or small and modest, an FWC wine cellar has attitude. During the process, the swimming pool had to be kept intact. And space was limited, which meant a tedious process of digging out the cellar by hand, then carrying out the earth in small sacks. Excavation alone took five months. The total duration of the project was seven months, including wine cellar installation. “At the final stage we connected the mansion and cellar with a nice passage,” says Osman . Whether you go over-the-top or small and modest, an FWC wine cellar has attitude. “It is not merely functional,” says Osman, likening it to artwork. “It can exude prestige, style and luxury.” Now that’s a refreshing thought we can all raise a glass to.

OUR BRAND” When Todd Adair, owner and president of Cayman Marshall, opened a new business on the banks of Port Carling in Muskoka in 2012 – with the promise of a new brokerage model built on teamwork – the critics scoffed. They couldn’t believe this small band of energetic people would last twelve months, let alone build a successful brand and one of the largest independent brokerages in Ontario. “It’s all about quality people, not quantity,” Todd says. “We work together as a team. RENOVATION FINDS A HOME: IMPROVE CANADA 28 SUMMER 2018 â–


One of the most daunting aspects of renovating, no matter if it’s a powder room or your whole house, is the sheer volume of the decisions you have to make. Wallpaper or textured paint treatment? Subway tile or glass mosaics? Hardwood or engineered flooring? And how about financing options? Even if you’re working with a designer, the prospect of running around to all those different stores, and somehow making informed choices on items you’ll have to live with for at least the next ten years – and usually, to accomplish it all within a limited time frame – is hard even for seasoned serial renovators. Well, there’s a new local venture that can make at least part of this process easier. Improve Canada, a full-size shopping mall devoted purely to renovation and home improvement, opened last year in Vaughan in a suburban enclave a short hop from the 407 and 401 highways (it’s even accessible by transit), and brings over 350 purveyors of almost every component of renovation under one roof. Theoretically, you could design, purchase, and organize delivery and installation of an entire project in a single day, without ever venturing beyond the mall’s 320,000 sq.ft. premises.

According to Mary Amini, director of communications (and the proprietor of M Squared Flooring & Design Centre, a flooring specialist in the mall), the enterprise is the brainchild of international developerentrepreneur Oleg Chekhter, following a model that’s been highly successful in Europe and Asia for years, but has never been tried in North America. “Mr. Chekhter selected Vaughan for a number of reasons,”Amini explains. “First, it’s perfectly located within driving distance not only from all over the GTA, but many other southern Ontario communities such as Hamilton, Oshawa, Kingston, and more. And Toronto is really the economic heart of Canada: it’s the most populous region in Canada, and renovation and construction are a major part of the local economy.” From a vendor perspective, it makes sense too, Amini continues. There are other design enclaves in the Toronto area (King Street

East and Castlefield Avenue come to mind), but none come close to the breadth, selection and sheer size of a mall like this. (And, as was clearly demonstrated when we visited on a unseasonably blustery spring day, strolling around an attractive indoor mall beats car-hopping from store to store any day.) “Customers often don’t need just one service, but several,” Amini says, “so for vendors to be able to send customers to each other’s stores in the mall is helpful for all of us, and a real convenience to the consumer.” Improve Canada’s vendors are divided into 32 categories, ranging from real estate and financing to lighting, kitchen and bath, landscaping, windows, roofing, and specialties such as solar panels, home automation, and more. Hallways are laid out geometrically into Manhattan-esque numbered streets and avenues, making it easier to find the store you’re looking for. Space-age touchscreen information towers throughout let you input a given category, and bring up all the vendors in that category and their location in the mall. If that’s still a bit overwhelming, there are also human greeters to help you find which stores you’re looking for, and if needed, actually walk you over there.

Though the bestsellers – kitchen, electronics, windows – are the big draws, what also makes a visit here interesting are the growing number of less expected specialties: to name a few, Vangarde specializes in “customizing” Ikea cabinets and furnishings for a unique look; Harmony for Homes sells a natural wall coating called silk plaster, made from cotton, silk, and other fibres, that mixes with water and can be applied to walls for a textured, stone-like look. And Zenporium offers sculptural furnishings and occasional pieces made from teak tree stumps and other reclaimed or salvaged wood, particularly old fishing boats, still sporting traces of their original paint. One thing you won’t find here is décor stores such as HomeSense or Pottery Barn. “We are not a retail mall, in the normal sense. We are geared to renovation and design, and we offer expertise in that area, rather than retail specialties like décor or furnishings.” In fact, Amini says, expertise is the real draw for Improve Canada, not just for consumers but for professional designers and architects as well. “Every vendor is a specialist in their particular product. I might carry some of the same products

as a box store, but I have the knowledge and the time to explain to you in depth which products suit your particular situation.” This is particularly important to a professional client such as a designer, whose reputation is on the line if they make the wrong choice for their own client. The focus on expertise and information has inspired mall executive to plan a growing roster of special events and seminars over the coming months, for both consumers and professionals. Along with the onsite Vaughan Home Show in early May, planned events include free Lunch and Learn talks (aimed at a professional audience, though consumers will be welcomed) and a variety of other seminars and conferences. Currently open from Wednesday though Sundays, the mall receives the most traffic on weekends, of course; but Amini points out that scheduling a visit during the week, when it’s less busy, has hidden advantages. “With fewer customers, vendors can spend a lot more time with you – it’s like getting a private consultation, without an appointment.”

THE FOCUS ON EXPERTISE AND INFORMATION HAS INSPIRED MALL EXECUTIVE TO PLAN A GROWING ROSTER OF SPECIAL EVENTS AND SEMINARS OVER THE COMING MONTHS, FOR BOTH CONSUMERS AND PROFESSIONALS.

The mall is still growing, and a number of improvements are planned over the next few months. A new food court will be fully operational by summer, but rather than the typical fast food and pizza chain offerings, it will feature delicious, largely multicultural food options prepared with care – each kiosk is privately owned and operated. A Second Cup coffee shop will launch within the next month. And more special events, including appearances by HGTV and other local and national design celebrities, will help to attract visitors to this new way of planning their next renovation. “The idea is that Improve Canada offers a microcosm of the best design in the area,” says Amini, “without you having to drive all over the city to find it.”

WIDE A-WAKE When it comes to sport boats, the higher and wider the wake, the better. Water sports are now less about skiing and more about tubing and boarding. Coasting up and down the side of waves is where it’s at, whether you’re towing kids in a rubber raft or teenagers jumping about on wakeboards. The very latest trend is out-and-out surfing. Instead of being towed, surfers follow behind a low-speed, big-wake boat, travelling along the curl of its waves at the same rate. According to Joe Donoghue, marketing manager for Pride Marine Group, sport boats, which can range in size from 16 feet to a whopping 40 feet, “are great if you want to go out for a day of active fun.”

The most popular brand they sell, says Donoghue, is Nautique. “It has a reputation for having the best wakes and surf waves.” The Nautique is indicative of how technology is bringing boaters a new level of summer enjoyment. Boats are better built, and designed for more specific functions. They often feature digital dashboards and touchscreen controls; some come with a joystick for easier docking capability. Among Nautique’s many options are phone chargers and videocam mounts, tricked-out towing towers with loudspeakers, large rear-view mirrors and swivelling helm seats, and reversible rear seats, so spotters can watch sportsters in action without getting a crick in their necks. TAKE A BOW A bow rider is an inboard/outboard motorboat designed for those with a day-tripper mindset. The idea is to just drive somewhere and anchor, enjoy a different view, explore a new space, maybe do a little swimming, skiing or fishing, and bond with family and friends. The vessel’s open front end, the bow, features a circlet of padded seats – great fun for passengers, especially kids and dogs, who like to ride with the wind and spray in their faces. Other available features include state-of-theart sound systems, a range of variable seating configurations, a small swimming platform off the back, folding towing towers, and snap-on shade tops. Some even offer small kitchenettes and expanded under-seat storage. “They’re great all-round boats, designed to run quieter and handle every type of water,” Donoghue says. They range in size from 19 to 35 feet, and there are many brands and models to choose from. But according to Donoghue, Pride Marine Group’s two most popular brands are SeaRay and Chris-Craft. “The SeaRay offers something for everyone. PLACE OF PRIDE Dave and Carol Pride loved their new cottage on Lake Muskoka. They just weren’t crazy about the level of service being offered by local marinas. So in 1986, they decided to buy an existing business, and rechristened it Pride of Muskoka Marine. Soon afterward, Dave, a master mechanic, sold his Kitchener-Waterloo auto parts business and permanently relocated their lives to cottage country. Pride Marine began selling boats, and the enterprise took off.

The couple sold the thriving business to their daughter Karen and her husband Paul Nickel in 1994. They, in turn, helped it expand to its present-day 13 locations, most of which also house cottage lifestyle stores selling such summer fun adjuncts as wakeboards, casual clothing and ice cream. Tyler Nickel, Karen and Paul’s son, now works for the family business as director of sales and marketing. In October, he will be marrying fiancée Christine Kauk, and says that it’s not too early to be thinking about creating a fourth generation that will happily take Pride in their work.

he exact translation of Il Covo from Italian to English depends on who you ask: most commonly, it means a cave, while others call it a hideaway. According to Ryan Campbell, the chef and co-owner of the new restaurant along College Street in Toronto’s Little Italy that bears the term as its name, the interpretation also carries something inherently more convivial. “In a nutshell, Il Covo is a meeting point, a place for people to gather for a dining experience,” says Campbell, an alum of Toronto’s perennially hot Buca and Buca Yorkville. “The name is kind of up for interpretation, depending on context. My partner Giuseppe [Marchesini, who helmed Buca’s wine program], who’s Italian, takes it a step further and says it’s a meeting place for ones alike; but it’s really a place for people to gather and enjoy and take it easy.” With its long, dim dining room, lined with a tufted banquette hidden behind a bar area, and seating just 45 (there’s room for another 10 guests at the bar), any of these meanings feels apt. Concealed behind a pair of oversized ornate wooden doors –

there’s a small marble nameplate hanging above the adjacent leaded windows, high above eye level and easy to miss; this may very well be the point – the word that comes to my mind on first glimpse is “speakeasy.” But while the pleasure of an illicit bar is in its booze, here it’s about a feast of food. With a dozen and a half or so offerings on Il Covo’s regularly changing menu, plus a thoughtful selection of cheeses and desserts, the concept is based around Venetian cicchetti. Served at Venice’s traditional taverns, or bacari, these bite-sized bar snacks are typically locally influenced eats in a city not often called out for its authentic culinary scene. The Venetian version is Italy’s answer to tapas, more snack than meal and best consumed standing up, at a bar where ideally the party spills onto the street outside. Campbell’s take is more ambitious than any cicchetteria you may have visited, both in substance and style: more substantial than snacks, dishes are about half the size of a full portion; diners are encouraged to order between four and six per person, comprising a leisurely sit-down meal. MEETING “We like to push the boundaries in terms of modernity,” says Campbell. “I think our style is a little more progressive: whether that’s recreating classic, well-known Italian dishes with a very modern twist, or digging deep and finding things people don’t see very often here in North America, or even regional dishes that aren’t well-known in Italy, for that matter. But we also might think of something new off the top of our heads, and take an Italian approach but not necessarily link it to an old classic.”

A plate of pristine West Coast oysters, for example, might come drizzled with Sardinian olive oil, and in place of the usual lemon wedges for zing, pearls of lemon and saffron that burst in your mouth. Vongole, a Campanian dish of clams simmered with white wine, garlic and olive, is virtually unrecognizable – first, because the dish isn’t served hot in its shells or with pasta, and second, because it relies on an ingredient even Campbell had never seen before: the lemonquat. Also known as a sunquat or a lemon drop, the citrus is – as you may have guessed – a hybrid of a lemon and kumquat. It’s tart, but milder on the palate than lemon, with 46 SUMMER 2018 ■

an edible rind. Campbell chops up the whole fruit and serves it like a salsa atop the tiny clams, along with a plate of miniature crostini. Per tradition, there’s garlic, but it’s mild and sweet, making for a light, bright dish that defies the norm. Tramezzini fritto, tiny tea sandwiches stuffed with side-striped shrimp and scallops and smoked lemon mayonnaise, then fried and rolled in chopped chives with more of that lemon mayo on the side for dipping, are Campbell’s take on Italy’s grab-and-go sandwiches. While the basic version is addictive, diners can also up the indulgence factor with an optional addition of 15 grams of Acadian sturgeon caviar.

Il Covo’s strong seafood showing shouldn’t come as a surprise. Buca Yorkville, which Campbell returned from a stint working in Italy to help open, is known for marine-driven dishes such as whole raw branzino that’s carved into crudo tableside and seafood charcuterie. But there are also handmade pastas, such as pockets bursting with Carozzi Gorgonzola and radicchio drizzled with 10-year-old aged balsamic from Modena, and brisket braised in Calabrian liquorice. “It’s just the way we like to eat, and we wanted to share that,” says Campbell. “We like to try many different things, and we designed the menu so that’s what our guests can do. I like to think the best of [any chef] comes out when they get to do what they want to do and there are no boundaries.”

Julia Hacker’s art tells the tale of a woman’s life and loves, but there’s nothing “girly” about it. Indeed, her series of collages, which combine sections of original painting with layers of figures painstakingly scissored out from magazines and glued onto the canvas, explore the issues felt by wives and mothers, but in an edgy, witty, surreal way. During a recent visit to her home and studio in the tony St. Andrew’s-Windfields neighbourhood of North York, in northern Toronto, we were captivated by her slightly sinister collages of dream visions kept barely under rational control, depicting the clash of love, loyalty and doubt.

For instance, Duties of a Housewife combines images of a horse head and tail; a svelte, elegant cocktail waitress; a string of pearls; and an old-fashioned sterling silver knife, in an ornate, curlicue Baroque pattern. “The story goes like this,” the handsome, red-haired native of Minsk, Belarus, explains in her lightly accented voice. “You work like a horse the whole day as a stay-at-home mother with a husband and teen-aged children. At the end of the day you’re

exhausted, but the expectation of society is that because you stayed at home, you did nothing, because you’re not really working. So you should look not just presentable, but lovely and fresh. And you feel that you still want to be elegant, and for your family to have the best of the best.”

As one ponders the painting, subtle components of the main message emerge. For example, that knife, being made of sterling silver as opposed to stainless steel, requires


regular, time-consuming, tedious polishing. In another collage, titled Pump it up, the woman groans under the weight of an enormous headdress bristling with clockwork gears because, Hacker says as she claps her hands slowly and rhythmically, “A woman always feels that time is ticking, and that every minute and second is numbered.”

Lest the reader construe these artworks as Rorschach tests revealing the artist to be a troubled, tortured soul, their creation actually acts as a benign safety valve. “I paint because it’s meditative, soothing and therapeutic,” Hacker says. “My husband Rory [a portfolio manager at National Bank of Canada] says that all my love affairs, my experiments, are here.”

which her own website, artjuliahacker.com, describes as “contemporary impressionism, paintings of nature and feminine mystique,” working “in a variety of contemporary mixed media, acrylic paint, collage and illustration.” There are paintings in which she laid down her brush and collage glue and picked up a palette knife. The resulting thick impasto – Italian for “paste” – creates a highly textured surface with the knife marks clearly evident.

One gallery owner advised that she suffered from “artistic schizophrenia” and needed more consistency in her work. She disagrees. For her, variety is the spice of artistic life. In her studio, there’s a large work, “Sky is the limit,” in progress on the easel, 70 by 45 inches, in yet another style. It portrays birds and swirling clouds, reminiscent of a detail in a Renaissance fresco. “I can see this painting 52 SUMMER 2018 ■

being welcoming in a big, airy environment,” she says. She confesses, with a laugh, that one gallery owner advised that she suffered from “artistic schizophrenia” and needed more consistency in her work. She disagrees. For her, variety is the spice of artistic life. “Do you want the same weather all the time? The same food, the same wine?” After graduating with a master’s degree in fashion design in the Soviet Union, Hacker pursued a wide-ranging career. She was an artiste, creating one-off costumes for opera singers. Yet she also put in time on the factory floor supervising the manufacture of garments,

self-reliant New World. This was not easy: lacking personal contacts in Canada’s fashion industry, she couldn’t find a job. So, building on her drafting skills, she struck out as an artist instead. By participating in the massive Artist Project Contemporary Art Fair, held at Exhibition Place the last weekend every February for the last several years, she’s developed a loyal stable of repeat buyers. Her works, depending on size, range from about $900 to $5,000. One Artist Project visitor, Stephanie Nicolò, program manager, gallery, event and marketing coordinator at

Real estate professionals divide the high-demand cottage sub-markets in Muskoka into two categories: those in which the market absorption rate is good, cottage prices are continuing to rise year after year, and sales are very solid; and a second category, where inventory levels are closer to balanced with good sales inventory. Both of these categories are excellent for both buyers and sellers to consider, depending on needs and investment resources. The absorption rate refers to the percentage of total cottage inventory that’s being sold vs. the number of properties being listed; it’s used to measure the temperature, in a sense, of the market. So, for example, if there are 100 active listings in an area and 60 of those listings are sold in a month, that’s a 60% absorption rate.

Many buyers are shocked to find out that the drive time from Hwy. 400/401 to Huntsville is approximately the same as the drive to Port Carling, and its year-round amenities help drive ongoing demand among baby boomers.

THE SMALLER MUSKOKA LAKES Coming in at a respectable third place is the smaller lakes market. Along with the Big Three, Muskoka abounds in beautiful smaller lakes, such as Skeleton Lake, Kahshe Lake, Muldrew Lake, Three Mile Lake, and many others. Cottages on these lakes are growing in demand not just because they offer prices that are in reach of many typical cottagers, but because they offer the traditional cottage experience that many of us remember from growing up: great swimming, fishing and unspoiled nature, and they are largely free from the jet ski and power-boat traffic that traverses the larger lakes.

LAKE OF BAYS It’s surprising that Lake Of Bays lands in fourth place in terms of sales, since in my opinion, this region is the most undervalued in Muskoka – yes, this lake is in the boundaries of Muskoka. Lake Of Bays is one of the cleanest, clearest lakes in Ontario, and offers excellent

amenities, including world-class golf and dining, along with all the unspoiled nature and views that have made Muskoka famous for generations. Lake Of Bays is my dark-horse pick to be back on top at this time next year.

BORDERING MARKETS Muskoka’s bordering markets also should be included when considering the overall Mukoka regional market, since they are often a consideration for buyers from Toronto and the GTA who want to purchase central Ontario vacation property but are looking for an alternative to Muskoka. These markets include, for example, Georgian Bay, Parry Sound, and the lakes just north of Huntsville. As prices and demand in Muskoka continue to rise, these markets will continue to reflect increasing demand as a wonderful (and often, still affordable) alternative.
