Two nearly identical works

of

Art, created by Toronto artist Jane Roos, hang near the front of the Indian restaurant Pukka, each inscribed with an Atharvavedic mantra. “Do not be led by others; awaken your own mind, amass your own experience and decide for yourself your own path,” they read, one in Sanskrit script over a background of tangerine orange, the other in English. “That’s me,” says Pukka’s owner Derek Valleau, pointing at the English one, which features graceful looping cursive penned over a bright fuchsia background. He points at the second: “That’s Harsh,” he says, in reference to Harsh Chawla, his India-born and -raised business partner. But rather than merely personifying its owners, the words on the two contemporary, abstract pieces could also act as an instruction to diners in the four-year-old bistro, situated on St. Clair West in Toronto’s Hillcrest Village. “Forget what you think you know about Indian food, open your palate to the experience of dining at Pukka, and decide for yourself.” 18 WINTER 2017/2018 ■

“There are a lot of people who have a level of fear when it comes to Indian food – it’s too spicy, too heavy, too oily,” says Valleau, who for a time lived in Toronto’s Little India neighbourhood and first became acquainted with the cuisine in the city’s traditional curry houses. “We’re trying to break away from the stereotype. Our whole goal is to be a great mainstream restaurant that just happens to serve Indian food.” Our first dish, the namesake Pukka chaat, cuts right to his point. A spectacle of shredded carrots, apple and mango, mung beans and sev (an Indian vermicelli noodle made from chickpea flour), dotted with pomegranate seeds and micro-herbs and lashed with yogurt, mint and tamarind chutneys, its plating is as colourful and alive as a Jackson Pollock painting. Each bite is a unique composition of flavours – sweet, savoury, tangy – and crunch. In all, there are more than 20 ingredients on my plate, Valleau tells me. “You eat that and don’t think Indian,” he says. “But it is. Chaat is a general term that refers

to a street food item. There are hundreds of variations on it, but ours is as close as you can get to a savoury, refreshing salad.” Our next dish, the Chicken 65, tastes like a South Indian play on General Tso or Korean fried chicken, with its sweet glaze of tamarind and a subtle – yet persistent – chili burn. The spicing is unmistakably Indian, but the flavours are nuanced and complex, hitting just the right balance of boldness and restraint. Valleau, a sommelier and 30-plus-year veteran of the Toronto restaurant industry, says his eyes were first opened to the mainstream potential of Indian food more than a decade ago, when he and his then-partner at Crush Wine Bar visited Vikram Vij’s restaurant in Vancouver after a ski trip. “I wondered why anyone isn’t doing this in Toronto,” he recalls. “Toronto is totally the place for this. If you go to London and New York, there are a lot of great higher-end modern Indian restaurants.” It was several more years before Valleau reunited with Chawla, a former colleague WINTER 2017/2018 19 ■


at another Toronto-area restaurant, when Valleau made a wine delivery to the venue where Chawla was working and the two began to plot. Pukka opened its doors about a year and a half later. “I shy away from the word fusion,” Valleau says of Pukka’s concept and menu. “Harsh and I work side by side with the kitchen. We take the classical dishes and say this is how we want to modernize it. There’s no magic here. These are just traditional recipes that are executed well, with really careful attention paid to the base ingredients and to the balance of spicing.” Meat comes from an ethical butcher located just two doors down from the restaurant, Valleau says; fish and seafood come from a Portuguese fishmonger. Spices, he says, are sourced raw from a local supplier, and are roasted and ground in-house.

The beverage program, too, is a source of pride. Valleau and Chawla recruited Peter Boyd, the long-time wine director at Toronto’s iconic Scaramouche, to build a list of aromatic whites and light fruity reds that would best complement the notoriously difficult-to-match cuisine. Classic cocktails import a dash of Indian flair: cardamom bitters in the gin-based Mumbai Sour and cinnamon-infused Pimm’s in the Pukka Cup.

“THE FLAVOURS HERE ARE SO TRUE TO INDIAN FOOD. I WAS BORN AND RAISED IN INDIA, I’VE BEEN IN CANADA FOR 16 YEARS, THIS IS VERY GOOD FOOD. BUT WE’RE TRYING TO BREAK STEREOTYPES.”

Chawla, who grew up in the Punjabi city of Chandigarh, balks at the notion that Pukka’s elevated take makes the restaurant anything other than the real deal. “I sometimes get told, ‘you’re not authentic enough,’” he says. “I always think to myself, ‘What’s authentic? How can you say my food’s not authentic?’ The flavours here are so true to Indian food. I was born and raised in India, I’ve been in Canada for 16 years, this is very good food. But we’re trying to break stereotypes. “There’s a review online that I think says it perfectly: when you come in to Pukka, there’s not a big picture of the Taj Mahal. We’re trying to capture the subtle touches of India.”

Toronto architect Lorne Rose laughs that potential clients often say, when they see his own Tudor-style gem in the tony neighbourhood of Lytton Park, “Give me your house!” It’s easy to see why they like it: the house is a perfect demonstration of Rose’s knack for proportion and charming period details. A monumental brick chimney balances the steep roof; there is classic Tudor half-timbering, and the brick inner panels feature contrasting patterns such as checkerboard and herringbone. There’s even a personal pun, of sorts: the carved

limestone entrance has rose motifs in the corners. “The details are pretty authentic,” he says. “It’s rare that anyone does these details anymore; the carved fascia boards on the gables are like those you see on beautiful old Tudor homes in Rosedale and Forest Hill.” Inside, the grandest space in the house is a two-storey family room, panelled in 100-year-old knotty pine with a Juliet balcony and ribbed arches. It is a lofty space that is beautiful yet still cozy. “One of my son’s friends thought it was a chapel.”

Design in general is a passion of his, whether in architecture, art, fashion, photography, cooking or any of the other art forms. “I am always looking at design. I enjoy travelling and learning from the past, and looking forward to the future. Design is everywhere. I often photograph wherever I am to borrow details from what intrigues me. I even find great details locally that can turn up in my architecture: quatrefoil details from a magnificent English manor home, first seen on a beautiful church in midtown Toronto; chimney details from London, England and the Cotswolds.” As a specialist in residential design, Rose likes to put himself in the client’s shoes. During the first interview, he explains, he’ll take notes about their likes and dislikes. “I tell them, ‘I’m not designing your house for you; we’re designing the house for you.’ It’s a collaborative effort, and that energy goes into my first sketch.” Canadian born and bred, Rose studied architecture at the University of Michigan and The Ohio State University. Although his work doesn’t conform to any particular style, his houses all share the same strong design philosophy. “I’m interested in creating great traditional, transitional or modern spaces that have good flow and good focal points, from every vista, inside and out,” he explains. “Wherever you turn, your eye always knows where to go. The eye is always at peace. Nothing seems jarring or overpowering. Everything is balanced.

“I think a lot about function,” he continues. “How would I live in the space? What features am I looking for? I’ll always draw furniture in a floor plan because it forces me to imagine how one would circulate through the rooms. I want to know, when you walk into a room, are people looking at your face or your back? In the bedroom, which wall will the bed be on?” His Spadina Road office, a handsome live-work space in the heart of Forest Hill Village, provides a great showcase for his talent for creating great scale and proportion. The front garden features overlapping boxwoods, tall grasses and broad steps of Quebec black granite, and it’s become an unofficial neighbourhood parkette. “Kids from their daycare classes walk by and sit on the stoop,” he says, adding that elderly passersby often pause for a rest on the corner bench that works into the landscaping. There’s more than a little irony in this: the local BIA’s expensive official parkette across the street, with its bleak and uninviting circular stone bench, looks forlorn and empty by contrast. The receding perspective lines of the granite front steps lead the eye up to a big, glass and metal-grid front door, homage to the circa 1900 stained-glass designs of Frank Lloyd Wright. Rose is passionate about the Prairie architect, as the pile of Wright coffee table books in his office, and even the design of his company logo, attests. The second-storey moulded ceiling, which repeats the front-door pattern, is another Wright reference. “The height is low, and I wanted a ceiling treatment,” he explains. “This gives you a texture, a carpet, on the ceiling.” Pattern on a ceiling is a kind of trompe l’oeil, he adds: it fools the eye into perceiving that the ceiling is higher.

English Manor Home He feels strongly about advocating personally for his clients’ interests, especially when it comes to negotiating during the municipal process. “When I go to the Committee of Adjustment, I fight tooth and nail for them. Some architects don’t represent themselves; they hire people to do it. But who better to present the design to a panel than the guy who designed it?” Most homeowners, Rose points out, whether building anew or renovating, have violated Toronto’s zoning bylaws in one way or another. “It’s almost impossible to build a house in Toronto now without doing so,” he insists. “Sometimes the design is more important than the bylaws. To create a good design, sometimes you have to break the rules. 36 WINTER 2017/2018 ■

People hire me because I’m so good at committee work: ‘You want something approved, go to Lorne Rose.’” Rose characterizes himself as “a chameleon,” architecturally speaking; he avers that he does not adhere to any particular housing style, but starts with the client and the context. “A Toronto Life article labelled me as a transitional architect. I don’t think that’s true. The biggest insult you can give me is to drive by and say, ‘Oh that’s a Lorne Rose house.’ That’s not necessarily a compliment. It means you’re copying the same idea over and over again. I don’t want to be known as the guy who does one style. I’d rather do every style well.”

As our interview winds up, a pair of new clients, Lisa Swimmer and Steven Caplan, arrive in Rose’s front reception area for a preliminary meeting. I ask them what had first attracted them to Rose’s work. “A few houses in our neighbourhood had his sign out front and [we thought] they had beautiful curb appeal,” the couple explains. “From the moment we first met him, he instilled a lot of confidence in us that he would design us a unique and beautiful home, using our list of ‘must-haves’ to guide him.” He gave them the impression, they continue, that he wanted the same standards for his clients that he would expect for himself, and his name had come up repeatedly when asking friends for recommendations. At that moment, Lorne rushes into the reception room, carrying a sheaf of drawings. “I don’t know if this is what you were expecting,” he says eagerly, “but I love this concept so much, I’m excited to show it to you. Do you find yourself craving broader cultural excitement? Is a single art form just not enough for you? If so, there are thousands of like-minded people in this city eager to usher you into their midst. From early October to late May, you’ll find the majority of them mingling in downtown Toronto’s entertainment district. Or, to be more specific, on Queen Street West, in a huge theatrical venue called the Four Seasons Centre for the Performing Arts, which was built specifically for opera and ballet lovers. There, audiences revel in heady symphonic music topped by emotive vocal performances, intertwined with powerful acting, intriguing stage sets and sumptuous costuming. At the end of the night, they walk away completely satisfied, buoyed by an experience some claim is greater than anything else you could name. Newcomers to the scene may well feel slightly daunted, not knowing what to expect. More than a few are scared they’ll be confronted by the cliché of a fat, bellowing woman wearing a horned helmet. Others are not sure of how to dress or when to clap, let alone the finer points of what type of singer the fat woman is, what she’s going on about in that foreign language, and when one yells “Bravo!” at her. We’re here to help, though, with this handy primer for practicing responsible opera-going. It’s designed to get you through that first night and, hopefully, initiate a lifetime love affair with the genre.

It’s “bravo” for the boys, “brava” for the girls; “bravissimo” or “bravissima” if you really, really like what you’ve just heard; and “bravissimi” if more than one singer is involved. Go ahead and join in on all the bravos and the clapping – it can be quite cathartic. Just wait for some other audience members to start before you leap to your feet and scream, to be sure you’re doing it in the right spot.

You will hear clapping before the opera even begins. Take part in this as well: It’s to acknowledge the orchestra’s conductor, who will generally turn and bow to the audience.

Singers, like boxers, have individual weight classes, which involves not their actual weight but the general range of their voice. There are several sub-groups within each category, but here are the main classifications: Soprano – The upper range of the female voice, sprightly and agile in sound. Sopranos almost always play the heroine and get by far the best stuff to sing. Somewhere in every story, her heart will be broken, leading her on to even greater vocal heights. Mezzo-soprano – The middle range, with a strong and imposing presence. A mezzo (pronounced “metzo”) can either be the soprano’s best friend or, more often, her bitterest rival.


Contralto – The low range, rich, powerful and deep, just the voice for a mother, a crazy gypsy, or a crazy gypsy mother. Tenor – The top male range, ringing and theatrical. Heroes are almost always tenors and get the best stuff to sing. Somewhere in every story, his heart will be broken, leading to even greater vocal heights.

Don’t worry about the language barrier. Italian, German, French, even English are nearly impossible to understand when a singer is stretching out a word or phrase to the nth degree while giving his or her upper register a good workout. Thank heaven the Canadian Opera Company developed surtitles back in the early 1980s, wherein the singing script (or “libretto”) is superimposed on the stage’s proscenium.

Baritone – The middle range, warm and smooth, and sometimes menacing. This is good, because the baritone invariably turns out to be the villain. Bass – The lowest range, resonant and powerful, reserved for authority figures and buffoons.

Speaking of super things, extras on the operatic stage are actually called “supers” – or, more informally, “spear-carriers.”

Sure, operas are chockfull of amazing music, with sound so wonderful it will transport you to another plane of existence. Every so often, though, you’re going to hear an aria (a single-voiced song), a duet, trio, quartet, quintet, sextet, or even an orchestral passage that will cause you to exclaim out loud. This is thanks to years of TV commercials using the best operatic bits to underscore their product pitches, and the occasional classic Bugs Bunny parody. Either way, audience members nearest you will understand and forgive your involuntary gasp of recognition.

A great way to begin your operatic adventure is with a tried-and-true masterwork, such as Giuseppe Verdi’s Rigoletto (presented by the COC at the Four Seasons this January 20 to February 23). Don’t worry too much about the plot (best described as “it’s complicated”). Simply sit back and enjoy the amazing music, which includes two OMG moments early on – the soprano’s plaintive Caro nome and the tenor’s raucously sexist Questa o quella. But the best part comes near the end – Bella figlia dell’amore is arguably opera’s ultimate quartet. Danika Lorèn, a Saskatchewan native and soon-to-be-graduate of the Canadian Opera Company’s Ensemble Studio, a prestigious training ground for future divas and divos, will be understudying the starring role of Gilda. Lorèn says her love for opera was born when she appeared in the chorus of Saskatoon Opera’s La Bohème: “The singer playing Mimí did a death scene that brought me to tears – something even The Lion King didn’t do.”

S

te. Anne’s Spa and Retreat, in the rolling drumlin hills of Northumberland County about an hour and a half east of Toronto, bills itself as a friendly, unpretentious place. And from the moment I first arrived at the historic estate that houses the spa, I could see they practice what they preach. Along the gravel road through the woods that leads in to the property, there are yellow caution signs that usually mark things like deer crossings or sharp curves. Only these ones say things like “Prepare to Unwind,” and “Take A Deep Breath.” So by the time I pulled into the parking lot, I was already smiling. Walking up the path, I was greeted like an old friend by one of the spa’s hosts, Richard Robb. Just before being shown to a pretty room in the oldest part of the inn – a treat for a historic-house lover like me – I was given a white fluffy terrycloth robe, and my Ste. Anne’s experience began in earnest. The laid-back atmosphere of Ste. Anne’s isn’t like other spas, which can either be intimidating in their exclusiveness or where

you are rushed out after your appointment ends. Instead, it’s a place where you are actively encouraged to wear your bathrobe throughout the property, even the dining room. (Indeed, you soon realize that almost everyone walking about the inn who isn’t an employee is wearing one.) Ste. Anne’s has a long and fascinating history, related in detail on its website. The main inn was built in 1858 by the Massey farm-equipment family, and passed through several hands until a Texas oil millionaire, Robert Lee Blaffer, and his family bought it in 1939 for use as a summer home. His wife extensively renovated and

enlarged the house in the manner of an English country estate and named it Ste. Anne’s, after the patron saint of Canada – though locals, in reference to its turrets and gables, habitually referred to it as Grafton Castle. Sadly, by the time Carl and Nan Corcoran responded to a newspaper ad advertising a “castle” for sale, the Blaffer family hadn’t occupied it for some fourteen years and it had fallen into serious disrepair. Though the old place would need extensive (and expensive) rehabilitation, they envisioned a place of healing – a way to combine the legacy of Carl’s father, who had run the Clifton Inn in Niagara Falls, and Nan’s father, who had been a doctor. After two years of restoration, Ste. Anne’s opened as a bed-and-breakfast retreat and working farm. Fast forward to 1992, when Carl and Nan retired, passing the now successful family business into son Jim’s hands. Around the same time, Jim’s sister, Cindy, had recently certified as a massage therapist, and with her friend, Nella, a member of the Civello spa products family, began offering massage therapy and facial treatments as a service for guests. Soon spa and wellness treatments became a prime attraction of the inn, along with its first-rate cuisine, comfortable accommodations and gorgeous scenery. The wellness aspect was significantly expanded; today, Ste. Anne’s welcomes as many as 30,000 guests a year for day-spa, overnight and weekend packages, and a wide variety of custom packages. Of course the main attraction of Ste. Anne’s, for many, is the spa and wellness services. Treatments

aim to go beyond just pampering and revitalizing the body to healing and nurturing the soul, from the use of soothing music and therapeutic scents to a wide selection of massage therapies that range from pampering to invigorating. But alongside its pampering spa services and wellness programs, there’s plenty to do and enjoy here all year round. The inn and the gardens surrounding the property feature fitness facilities such as a fully equipped gym, yoga studio, private change rooms and outdoor swimming pool – actually originally installed in the forties by Mrs. Blaffer, who even then knew the health benefits of a daily swim. And the Grotto, housed in one of the older sections of the house, features a hot tub, cold plunge pool, eucalyptus steam room, and current pool. But if you’d rather just relax and put your feet up, there’s a cozy living room with big comfy sofas, bookshelves and board games, and plenty of room to chat with other guests or just read by yourself. The guiding principle, says Ste. Anne’s Director of Sales and Marketing Wanda Hoehn, is to let you feel like you are visiting family in the country, rather than staying at a fancy inn.

UNWIND If you crave a more active getaway, there are marked walking and hiking trails all through the 400-acre property. Manicured gardens surrounding the house include a kitchen garden that provides many of the vegetables and herbs for the inn’s four-star kitchen, as well as the flowers for arrangements throughout the spa. Just down the road is Ste. Anne’s Bakery, which specializes in gluten-free baked goods and breads, and a variety of Ste. Anne’s own signature goodies. The bakery occasionally hosts cooking demonstrations and tastings for guests. (As with many of Ste. Anne’s services, customtailored group demonstrations may be arranged in advance; just ask.) A bit further along, Ste. Anne’s farms and stables are home to several horses and its herd of

Charolais beef cattle, which the Corcoran family has raised for many years. Among the more singular activities you can sign up for a session of grooming the horses or mucking out their stalls; working with horses in this way, Hoehn explains, has well-known therapeutic benefits, especially for stressed-out city dwellers. Another low-stress aspect of the inn is its reasonable rates, especially for spur-of-the-moment one- or two-day getaways. A one-day escape starts at $185 per person, and includes two meals, $120 worth of spa services, and free use of all the inn’s facilities. Overnight stays start at $329 and include four deluxe meals, spa allowance and accommodations either in the inn itself or in one of several private guest cottages dotted around the property. Some of the larger guest cottages accommodate as many as twelve people and feature full kitchens – you can even arrange to have one of Ste. Anne’s chefs come over and cook a private dinner for you and your guests. Whether you’re craving a pampering day at the spa and great food, want to get out of the city and spend time just enjoying the country air, or simply need to decompress for a day or two, those caution signs on the road leading to Ste. Anne’s are well worth heeding: be prepared to unwind.

“I feel proud & privileged to receive this award” edifice towering 28 floors over Front Street. We competed against many outstanding agencies from all across the Americas, but were ultimately delighted— not to mention incredibly humbled—to be selected as the 2017 winner in the Best Real Estate Agency category. The International Property Awards is the largest, and most prestigious, program of its kind in the world. It celebrates the highest levels of achievement by companies that operate in property and real estate, split into regions that cover Africa, Asia, the Americas, Europe, and the UK. Originally founded in 1995, the awards started as a small program, covering ten different residential categories. Over its 26-year run, the awards have grown in size and scope, attracting high levels of publicity and entrants from around the world. The awards are judged by an independent panel of 70 industry experts, as part of a panel chaired by four members of the UK Parliament’s House of Lords— Lord Caithness, Lord Best, the Earl of Liverpool, and Lord Thurso. The panel looks for entrants and projects that demonstrate extensive commitment to a variety of areas, including design, quality, service, innovation, originality, and commitment to sustainability.

We arrived at the Toronto Fairmont Royal York at sunset, fading light casting rich shadows across the 88-year-old hotel. As we wandered through the building to the main mezzanine it was hard not to feel dwarfed by the building’s presence and its place in Toronto and Canadian architecture history. We smiled as we found our table beneath a sparkling chandelier, while colleagues and friends from across the Americas milled around us on all sides. As the presenter for our category took the stage, a palpable excitement rose

from our table. It was a privilege even to be considered, but as the winner was announced a deep pride swelled inside our collective chest. “Cayman Marshall!” the presenter said, and our president, Todd Adair, rose to accept the award. On November 13, 2017, Cayman Marshall was honoured to be the recipient of the Best Real Estate Agency in Canada award; a distinction given by the International Property Awards as part of their Americas 2017 Property Awards ceremony. The event appropriately took place in the historic Royal York hotel, the beautiful

The ceremony was part of an exhibition and networking summit hosted by the Property Awards. We spent the day talking with colleagues from around the world, seeing the amazing work each has done. That evening, we admired the most stellar projects as they were invited to the stage. It was impressive competition, which made our winning all the more exciting—to be counted as a leader amongst these professionals. “I feel proud and privileged to receive this award,” Todd said, “especially when judged among so many worthy competitors. CAYMAN MARSHALL ADVANTAGE “For the strength of the Pack is the Wolf, and the strength of the Wolf is the Pack.” – Rudyard Kipling As owner and president of Cayman Marshall International Realty, allow me to share a bit about where we’ve come from, where we are today and where we are headed. Five years ago, myself and three eager and energetic colleagues opened the doors of Cayman Marshall for the very first time. Some of you may remember that 2012 was a turbulent time in the market and it seemed like every time something went wrong in the world, our buyers would freeze! Many predicted Cayman Marshall wouldn’t last a year, especially in such a competitive market. Our skeptics said we couldn’t start our own brokerage based on a “team model” and many said we certainly couldn’t start our own brand, create our own magazine or succeed in scaling into other markets. Fortunately these people were wrong. Myself and every single person on the team proved them wrong. Together, we have solidified our brand in Ontario and we are now expanding into new markets and looking for new partners. It feels as though it’s been both a long time and a short time. Our achievements are modest and our company is still adolescent in the grand scheme of things. On the other hand, 5 years in a business that is rapidly changing and evolving is an achievement that we can be immensely proud of! It means that we have established ourselves – in fact, what we have done is build one of the largest Independent Brokerages in Ontario and certainly the fastest growing.

From our humble beginnings in 2012, we now trade in excess of $200 Million per annum with our new goal to hit the $300 Million mark for 2017. We are also proud to work with over 400 international partners that help give us the horsepower it takes to dominate with foreign buyers. It is also no small feat, and of great credit to the team we have assembled, that every single year we have almost doubled our sales. Last year while considering this editorial I was watching a children’s movie called “The Jungle Book” and I was inspired by this quote: “For the strength of the Pack is the Wolf, and the strength of the Wolf is the Pack.” This seemed to say what I was feeling perfectly. I could have never accomplished all of this on my own and this business is truly fun and rewarding when you surround yourself with people that have your back and share your victories. Strength really IS in the pack! Looking ahead, my conviction and resolve is to NOT make business decisions based on tradition but rather innovation and creative thinking; to empower my team to do amazing things and to continue being the most successful “Wolf Pack” in luxury real estate. – Todd Adair
