Our brewmaster, Andrew Kohnen, threw away a successful career in logistics to pursue his dream of reconnecting with the brewing roots of his family. This carried him to the UK’s prestigious Brewlab in Sunderland, England, where he procured the alchemy that would drive his signature brewing style. He took what he could from there and ventured to Scotland, Cornwall, and ultimately to Krefeld, Germany, working in the same brewery that had belonged to his ancestors. He came home to Canada for Hockley. You could call it dumb, but we call it destiny.

T
he summer sun is shining on Southern Ontario, filling the neighbourhoods with bustling activity, and vibrant energy. The warmer weather has brought with it noticeable yearover-year growth in the GTA real estate market. Between 2016 and 2017 year-to-date there has been an 18% growth in the number of units sold. The strong market growth can be contributed to the continued interest in the luxury real estate market and to the bank announcing a hold on the bank of Canada 0.05% interest rate and lending rates of 2.5% for a mortgage are still at historic low levels.
The industry has announced some recent changes in foreign tax policy, which may affect the growth in the second half of 2017. A 15% non-resident speculation tax will apply to property purchased in the GTA by individuals that are not Canadian citizens or permanent residents. This tax is meant to curb the 33% month-to-month growth seen in the recent months. The luxury real estate market in Toronto and Oakville is firmly planted in the $3M - $7M range. The impact, if any, of the foreign tax policy, is yet to be seen. A month after the announcement the market is showing signs of slowing down, it’s down 26% in sales volume in the most sought after neighbourhoods in the GTA. As the summer begins, take some time to enjoy the warm rays and outdoor activities. Taking a stroll along the boardwalk, hiking the many trails or enjoying fabulous cuisine is what living in this community is all about, and discover nature in Canada’s great outdoors! All the best,

here is no shortage of advice on how to get ready for the new golf season. The challenge? Competing advice from friends, family and late night Internet searches can do your game more harm than good. So, how do you thin the herd of mentoring voices and lessen the cacophony of opinion that can find you— more often than not—in the rough and far from the greens? MAKING THE CUT:

Most clubs go straight from the course to the trunk to the garage at the end of each season so take the time to clean all your clubs before your first round of the season.
Check your golf bag to ensure you have everything you will need for your round including tees, balls, ball mark fixers... everything you may need to cut a few strokes off your game. There is nothing worse than realizing you are short on supplies on the 3rd hole. Luckily, Crosswinds’ Pro Shop is always stocked with everything you need.
STRETCH Before any round of golf everyone should have a stretch routine. There are a lot of body parts involved in a golf swing and it is very important to stretch them prior to your first shot of the day. Five minutes is plenty of time to get a complete stretch in and it may be done almost anywhere.

Do not try to kill the ball! Slow down your swing and go back to the basics. Slow down your back swing, keep your head down and steady over the ball with a light grip (3 out of 10 on the tightness scale). It is very common for most amateur golfers to look up at the shot before they hit the ball. By keeping your head down a second longer, you will find you will hit the ball with more consistency. ou’ve all heard these calls to action to buy and eat local foods, especially when they are in season, and only dine at restaurants that focus on farm to table cuisine, but what does it all really mean? Why not eat a tomato or strawberry trucked in from hundreds of kilometres away? Doesn’t it mean you can have what you want all year round? Foods transported to our grocery stores from around the world are safe, right? Sure, you can buy fruits and veggies from far, far away, but why not make a decision today to change it up and embrace your inner locavore?

WHAT’S A LOCAVORE YOU ASK?
What’s a locavore you ask? Locavores eat only locallygrown produce and, whenever possible, only buy meat, eggs, fish and other food products from local sources. The term locavore also describes those who make a conscious effort to eat and buy foods that don’t travel great distances from farm to table. Today, the farm to table movement is blooming, with advocates asking us to think long and hard about where our food comes from. And it’s not just about understanding the benefits of buying local in terms of freshness; it’s also about supporting the local economy (our agricultural sector accounts for one-in-eight jobs in Canada) and reaping the health benefits. Studies demonstrate that consuming locally-sourced foods has positive health benefits. One study, published in the Journal of Rural Health in 2011, showed that people who live in areas where locallysourced food is readily available tend to have lower rates of obesity, diabetes, and mortality. When consumers understand and know where their food comes, they’re more likely to eat a diet rich in fruit, vegetables and other foods made from local, healthy ingredients. And let’s face it, local fruit and vegetables just flat out taste the best. They retain valuable nutrients and flavours because they’ve travelled the shortest route from the farm to our table. This does not include the frozen stuff – many
experts and nutritionists extol the virtues of frozen fruit and vegetables because they are usually picked and frozen at peak freshness, so even if they travel long distances to get to our tables, they’re often as fresh if not more so than what we find in the grocery stall. Another benefit of buying local is you’ll join a growing local food network with the focus on relationships between food producers, distributors, retailers, and consumers all working together to increase food safety and ensure the economic and ecological sustainability of our communities. Buying products close to home is good for the environment, since we use less energy for transportation, refrigeration, processing and packaging. So, from the taste to freshness to supporting the economy and environment, being a locavore really is a win, win all around. Back to the economic benefits of buying and eating local: buying local helps keep farms in business. It also creates local jobs. And Canadians are willing to pay a premium for local foods, too. We asked the chefs at Crosswinds Golf & Country Club how they support locally sourced foods and how they prepare their menus to reflect the best our region has to offer: The farm to table movement is growing each year. At Crosswinds, how do you prepare your menus to reflect local, fresh food options? We always like to keep in mind our local suppliers when creating our menus. From the Essex Kent Mushroom Farm and Chudleighs Apple Products to Mill Street Brewery and Niagara VQA Wines (Jackson Triggs), we make every effort to ensure the vast majority of our dishes and our wines and beers are local, local, local. We also rely on producers who are as committed to local ingredients. For example, we buy our buns and dinner rolls from Brick Oven Bakery. We also work with Picard’s Nuts., Champagne Poultry Inc., Woodward Meats and local dessert suppliers such as La Rocca Creative Cakes and Dufflett. How does “local” compare to food that is “in season”? While there is no doubt that there is a lot more selection of local products during the warmer months, it can still sometimes be difficult at the beginning and end of our golf seasons to get local product, so we encourage our local suppliers to do their best to supply us with as much local as they can. we can’t always prepare local in-season dishes so we sometimes have to rely on food grown in hydroponic farms as opposed to grown in rich, Ontario soil. Vendors like St. David Hydroponic Farms are a great local grower who, like our farmers, helps us provide our guests with the freshest food possible. What are some of your signature dining experiences? Whether tied to special events (weddings, banquets, tournaments, etc.) or your daily menu, what can guests expect? For every special event or just our daily dining menu, we like to focus on creating fresh, unique plates that feature the best that our region has to offer. Take our Nine & Dine Menu. We like to feature a mushroom risotto with mushrooms we get from Essex Kent Mushroom Farm on this menu, as well as our signature Steak Sandwich Feature with Ontario, grain fed beef.

INGREDIENTS: Four 5 oz Boneless Skinless Chicken Breasts 6 oz Micro Greens (spring mix or lettuce mix of your choice) 1 med Carrot Julienne 1 Red Pepper Julienne 1 oz Toasted Sesame Seeds for garnish (optional) Crispy Chow Mien Noodles for garnish Salt and Pepper to taste DRESSING: ½ cup Rice Wine Vinegar ½ cup Soya Sauce 1.5 TBSP Garlic 2.5 TBSP Ginger ¼ cup Sesame oil 1 ¼ cups Canola Oil 2 TBSP Sesame Seeds Salt and Pepper to taste
INSTRUCTIONS: Take four 5 oz boneless skinless chicken breasts (Crosswinds buys fresh chicken from their local poultry supplier, Champagne Poultry Inc.). Pat chicken breasts dry and season to taste with salt and pepper. Pan sear each breast until golden on each side. Continuing baking chicken breasts in the oven at 350°F (177˚C) for 25 to 30 minutes. Use a meat thermometer to check that the internal temperature is 165˚F (74˚C). Remove from oven and let the chicken rest. Slice chicken into cubes or strips and serve warm over greens. In a large salad bowl combine the lettuce, carrot, and red pepper. Toss all together with dressing. Separate into four bowls and add one chicken breast per bowl. Drizzle any leftover dressing over the chicken breasts. Garnish with sesame seeds and crispy chow mien noodles. Serve immediately.
